A Beer that Tastes like Deep-Fried Mars Bar? Vault City’s Latest Release is Stout of this World

AN Edinburgh brewer has produced a

Vault City Brewing – the UK’s best-selling sour beer producer – has reimagined the double deep-fried m*rs bar into an imperial stout, paying homage to the infamous Scottish snack and showcasing the country’s culture in all its glory. The Edinburgh brewery worked with Neon Raptor Brewing Co. to pack the imperial stout to the brim with chocolate malt and cacao nibs, even using real battered Mars Bars during the top-secret production process to guarantee an authentic deep-fried flavour.

The deep-fried Mars Bar is said to have originated at The Haven Chip Bar in Stonehaven, where a cheeky schoolboy asked if his Mars Bar could be laden in fish batter and deep-fried on a dare. The dish is now better known amongst Scottish revellers as a late-night leveller, but its latest incarnation isn’t one for sobering up containing 6.8 units of alcohol.

Double Deep Fried M*rs Bar is the latest in a long line of innovative flavoured beers paying homage to Scottish classics from Vault City. In January the brewery released an Iron Brew flavoured beer, which sold over 10,000 cans in less than 24 hours.

Every two weeks the Portobello based brewery drops new flavours, with DDF M*RS BAR part of May’s Sour Sunday release. Other flavours this month include Raspberry Rocky Road, Tonka White Forest Gateau, and Strawberry Sundae. Earlier this year the company launched its first-ever core range across 200 independent bars, pubs and taprooms across the UK. It is now available in more than 600 Tesco stores nationwide, and recently became the supermarket giant’s best-selling craft beer.

Natural & Organic Products Europe provides a “vavavoom of energy” for the industry

The sustainable industry came together for the 27th edition of Natural & Organic Products Europe. The event held at ExCeL London on 16-17 April, provided a vibrant meeting place for retailers across the globe to expand their offering and provide customers with the best, most environmentally friendly, health-conscious products.

More than 7305 attendees flooded the aisles across the two days. They had the opportunity to explore thousands of innovative brands from exhibitors, ranging from organic foods and beverages, natural health to sustainable skincare, and plant-based products to ecofriendly household products.

Visitors included big name buyers from Tesco, Holland & Barrett, Boots UK, Whole Foods Market UK, Planet Organic, Waitrose, Infinity Foods, John Lewis, plus, important Independents from across the UK and Ireland and 1,105 oversea visitors from 74 countries. The show featured its biggest ever Hosted Buyer Programme with 67 buyers from 19 countries.

Our goal is to provide an exciting platform for our exhibitors to showcase their products to interested retailers and connect with buyers who are committed to promoting healthier and more sustainable lifestyles. The NEW Independent Day initiative –celebrating independent health and food stores – had hundreds of participants from across the UK and Ireland. They received a number of benefits and networking opportunities during their visit including discounted travel, successful retailing talks and networking opportunities.

Debbie from Elixir Health Foods in Wadebridge, Cornwall says: “I was new to the industry four years ago, so coming here on an initiative like this where I feel part of a bigger community is something special. It means that I can get involved with what’s going on in the industry. We got some great products from NOPEX last year, that are now best sellers in our store, so I’m really looking forward to seeing what new things we can stock. Also, there’s some great talks going on, so I can’t wait to listen in on some of those, especially the ones dedicated to retailers.”

Reports, panels and pitches

The show provided an opportunity for visitors to meet with and learn from experts in the natural and organic industry, as well as to take part in informative seminars, on topics such as sustainable agriculture, retailing, sustainable and natural beauty, skincare, marketing, trends and more. Exclusive results from various industry reports were revealed – including the Soil Association Annual Organic Market Report, Viridians Health Store report and Natural Products News Health Check Survey.

The exciting Pitch to the Buyer Live with Holland & Barrett had a standing room only audience for pitches with Caprea Beauty, REFIX – Seawater Hydration, ATTITUDE, Harniman’s, Orange County CBD, and AirSnax. The buying team were thoroughly impressed by the innovation and agreed to have further talks with Harniman’s who presented their range of ‘Feel Good Sprays’.

Rachel Chatterton, Head of Product Development - Food and Beverage, Holland & Barrett comments: “I think it’s just such a lovely event that brings together small and big suppliers and we’re definitely in a growth period, particularly on food right now. So, it’s brilliant to start talking to suppliers at that infancy stage, so we can hopefully learn from them, grow with them, hopefully maybe gain them their first mass listing on the UK high street. This show is the centre of excellence for suppliers in this space. So, it’s a brilliant two days for us.”

As well as visitors, praise was shared by participating brands. So much so, that 50% of the exhibitors rebooked by end of play on Monday (closing day) for next year and enquiries for stands next year are coming in fast and furious which shows NOPEX is a

‘must exhibit’ show for anyone in our industry who wants to build their business.

Commenting on his exhibiting experience, Carlo Buckley, Managing Director of CBDfx says: “I think if you’re in the natural products industry, whether it’s on the foods or the supplementation side or the personal care, it’s a show that covers all bases. So, you definitely get exposed to international business if you want to expand overseas and you meet some really great distributors in other countries too. And for the UK, you meet everyone from your independent retailer to your Holland and Barrett’s and everything in between. They come here just because they are purely focused on natural products. If there’s one show to increase your B2B footprint, it’s definitely this one.”

“We had So many positive upbeat conversations from buyer and suppliers alike at Natural & Organic Products Europe. In a world of worry, the vibe and engagement at the show proves things are changing. The Natural & Organic Innovation Award results took place at the end of the first day at the Fox Pub, ExCeL London and presented by Event Director Carol Dunning and Publisher of Natural Products News, Dominic Roberjot. Shortlisted products were voted by visitors, and winners were decided by a range of industry experts including David Morrin (Wholefoods Wholesaler), Rosie Greenaway (Natural Products News), Len Glenville (Co-Chair of Health Stores UK Association), Oliver McCabe (Author & Wholefood Chef), Shona Wilkinson (Nutritionist), Cillian Cook (Wholefoods Market UK), and Paige Tracey (Soil Assocation).

Suma Wholefoods, Rheal, Helen Browning’s Organic, Blooming Blends, AllMatters - among others won accolades on the night - and a tree will be planted on their behalf instead of trophies to reflect the show’s eco ethos. Energy efficiency is the first stepping-stone on the pathway to achieving net-zero. European Rice Launches New Campaign To Build Awareness in Key UK Market

European Rice is launching a campaign to promote the quality, safety, versatility and sustainability of European Rice in the United Kingdom. Launched in March, and working with Nudge PR and social ambassador Bettina Campolucci Bordi from @bettinas_kitchen, the campaign will highlight the many benefits of European rice and showcase its credentials to both consumers and the trade.

With a major objective of the campaign focusing on building awareness of European rice, press office activity alongside Bettina’s social campaign will be around educating consumers. This will include boosting recognition of the two main varieties of European rice, including: Indica, a long grain variety representing around 25% of EU rice production and Japonica, a shorter, medium grain, which dominates with 75% of the production.

The campaign will also make clear the

benefits of rice production, not only from an economic point of view, but also the environmental benefits to the natural eco system. The river deltas of North Greece along the Rivers Axios, Aliakmon and Loudias provide some of the best rice harvesting conditions in the world and in turn, the rice cultivation expands the existing freshwater habitats which then stimulates the growth of local fauna and flora across the region.

New assets, including a series of exciting rice-based recipes, will form a key part of

the consumer campaign which will also highlight the nutritional benefits of rice, a base ingredient to the Mediterranean diet.

Rice is grown on an incredible 416,000 hectares across Europe, producing around 2.6 million tonnes a year, with 10% of this coming from Greece – largely on the deltas of rivers Axios, Loudias and Aliakmon (North Greece).

EU-funded project paves path toward new era of protein sustainability

An ultra-sustainable new protein source made its debut at a meeting of European agrifood industry leaders and researchers in Turin, Italy on Wednesday, April 12, 2023. During the biannual gathering of partners in the EU-funded Plenitude project, consortium members were served mycoprotein-based “chicken style” filets, produced using bioprocess technology developed to address modern challenges of global protein sustainability. The tasting marks a key milestone toward the ingredient’s upcoming launch in European markets.

Mycoprotein is a highly nutritious food derived from fungi. While mycoproteinbased foods have been available for decades, food ingredient company ENOUGH led the Plenitude project’s development of a new technology that enables minimal-waste production by utilizing renewable feedstock and upcycling its byproducts in a circular fermentation bioprocess. The result is ABUNDA—a B2B mycoprotein ingredient food manufacturers can use to create a broad range of clean label, nutritious, delicious food products.

“Achieving a new level of sustainable and scalable mycoprotein production was only half the battle. We also needed to ensure ABUNDA’s culinary performance and sensory attributes are best in class while making it affordable for consumers,” said Craig Johnston, cofounder and director of strategic partnerships at Enough. “We completed the construction of

the flagship plant and are ready for scalable production. The results of today’s tasting, alongside the incredible products of our project partners, show we are truly entering a new era for protein-rich foods.”

“Getting feedback from highly skilled chefs and foodservice operators—as well as consumers—is critical for validating the product and ensuring it can have the impact the world needs,” commented Michael Kilkie, head of culinary at Enough. “We focus on making Abunda so easy to cook that there is not much learning curve for chefs.”

The technology

The Turin meeting menu additionally featured dishes from global agrifood giants, flavor and fragrance specialists, and leading plant-based food companies, also partners in the Plenitude project committed to developing new-generation meat substitutes using ABUNDA:

All menu items were prepared and served by Van Ver Burger, a traveling Italian food truck specializing in sustainable gastronomy.

“ABUNDA is one of the best plant-based chickens we have tried so far. Its taste and texture are just like real chicken. We love its versatility in applications and we can’t wait to have it on our menu,” said Pasquale Digiglio and Daniele Paradisi, cofounders and chefs at Van Ver Burger.

Unlike plant proteins, mycoprotein utilizes glucose as feedstock to grow fungal proteins in a fermentation process with strong nutritional and sensory profiles for meat substitutes. The Plenitude project’s core technology is centered around a novel integrated bioprocess for making mycoprotein. In Sas van Gent, Netherlands, the world’s first such facility has been built alongside a Cargill biorefinery producing bioethanol. The plant, operated by ENOUGH , utilizes on-site glucose production, then returns its waste streams back to the biorefinery where they become bioethanol.

Sustainability

To assess the project’s sustainability, life cycle assessment consultancy Life Cycle Engineering will be conducting detailed analyses of the technology’s resource usage and potential for improving the environmental footprint of modern protein production. Preliminary results suggest that Abunda has significantly lower environmental impact than animal proteins.

Ensuring Accurate Allergen Labelling to Protect Your Factories

24-30 April was Allergy Awareness Week. Natasha Allergy Research Association has been gearing up to make allergy history. They advocated the appointment of an Allergy Tsar to assist those with allergies, and calling for clearer allergen labelling and mandatory reporting of all fatal and near-fatal allergic reactions.

Professor Sir Stephen Holgate, a trustee of Natasha’s Foundation and one of the world’s leading allergy scientists, said,

“Despite this growing burden of disease, there has been little investment in NHS allergy services for the last 20 years. A shortage of allergy specialists, clinics and inadequate allergy training among GPs means many patients with allergies fail to get the care and support they need.

Appointing an Allergy Tsar to act as a champion for people with allergies would be an important first step in addressing this unmet need.”

In our last article, we talked about some tragic stories caused by food allergies. Food allergies

affect an estimated 26 million people in Europe alone. Extrapolating this proportion to the world’s population of 7 billion, up to 550 million people could be impacted by food allergies, emphasising a major global health risk. Young children are especially vulnerable, with estimates indicating that up to 8% of them suffer from food allergies, which can be fatal in some situations.

It is critical that food manufacturers take steps to ensure that any allergens are clearly labelled on their products. Some manufacturers are actively finding ways to ensure their products are accurately labelled in line with allergen control in food and beverage manufacturing. For example, Kellogg has announced a partnership with The Natasha Allergy Research Foundation in an effort to advance the work towards

eradicating the dangers posed by food allergens. The partnership is expected to benefit up to three million people and their families, making a significant impact on the food allergy community in the UK. Over 50% of Product Recalls are due to Allergens However, many manufacturers still do not pay enough attention to their labelling practices. A recent study discovered that allergens were responsible for a large amount of food recalls in the United Kingdom over a five-year period, highlighting a cause for concern for individuals with severe food allergies. Specifically, over 50% of food recalls were attributed to allergens.

With the tragic stories that we discussed in our last article including victims Natasha Ednan-Laperouse, Celia Marsh and Megan Lee, we could not emphasize more the importance of ensuring the allergen ingredients are clearly labelled on food products to allow consumers to make informed choices about what they eat. Mislabelling or failure to label allergens can result in cross-contamination, unintentional consumption or more seriously, death.

Beyond the immediate physical harm that can be caused, inaccurate labelling can also have a significant impact on a brand’s reputation. A single negative incident can have far-reaching consequences. Natasha Ednan-Laperouse died after eating an unlabelled baguette from a Pret A Manger store in 2016, which contained sesame seed oil, to which she was severely allergic. Following the incident, Pret A Manger faced significant backlash on social media and in the press, with many customers expressing anger and disappointment at the company’s failure to properly label the allergen. The incident received widespread media coverage and resulted in a significant drop in sales for the company. Furthermore, the inquest into Natasha’s death found that the company’s labelling practices were inadequate and contributed to her death. Ingredifind is designed to make the dining

experience easier for both customers and restaurants. Restaurants simply upload the ingredients of each dish, and Ingredifind will map out which ingredients are components of specific diets and allergy groups. Users can select their allergies on the app and input their diet down to the ingredient level.

Once they select a menu, the platform will display unsuitable dishes in grey and suitable dishes in black.

For example, if a restaurant inputs that their omelette contains eggs, butter, and cheese, Ingredifind will automatically flag that the dish includes eggs and dairy and is unsuitable for vegans. Any customer who has specified that they are vegan or do not want eggs or dairy will see the omelette in grey.

The aim is to make restaurant menus transparent to allow customers to make informed decisions.

The two founders stress that Ingredifind can potentially save lives and avoid litigation against restaurants for making simple mistakes with drastic consequences. Restaurants can be liable for food allergy negligence, with claims ranging from thousands to millions of dollars.

According to a study by Food Allergy Research & Education, claims with diagnoses of anaphylactic food reactions rose 377% from 2007 to 2016. Similarly, British hospitals report soaring anaphylaxis admissions. Case Study: Upcycling BSG Waste to Produce Value-Added By-Products

Valorising through disruptive technology that’s faster than the speed of sound to create new income streams for manufacturers

Green Cell Technologies® (GCT®) and RWH Holdings® (RWH®) have worked with several global brewers over a period of 8 years to understand the challenges around what to do with their leftovers – Brewers Spent Grain (BSG) and Brewers Spent Yeast (BSY) – and the answer, as it would happen, is Disrupt it.

Preamble

About 39 million tons of brewer’s spent grain (BSG) is produced annually worldwide. That is the same as approximately 3 900 000 waste removal trucks which, end-to-end will wrap around Earth’s equator 6.8 times. BSG is the residual waste stream that remains after the brewing of beer. BSG is remarkably high in protein and fibre, has some residual energy, and is a healthy food intake for human, animal, and earth - if prepared correctly.

Unfortunately, BSG usually spoils within a day due to its high water, sugar, and protein content.

This brief period makes BSG difficult to transport, and process further into food or other human-grade products. Therefore, it is predominantly used in the feed sector as it is not readily available for human consumption, (Food Valley, 2022).

Molecules found in the cellular structures of meat, fruit, vegetables, berries, nuts, grain, seeds etc. provide sustaining nutrition to achieve good health and wellbeing. Those molecules represent a comprehensive - across the spectrum - variety of all the macro and micronutrients necessary for human beings (including animals and earth) to flourish.

However, current food and beverage processing methods damage many of these ‘molecules of interest’ and nullify their efficacy. With reduced nutrition in processing and a loss of fibre, there is only a sense of satiety but not much nutritional or health benefit. Existing processing methods cannot easily and effectively process skins, seeds, and grains (which contain significant nutritional or valuable properties), or radically reduce the fibre particle size to a level that will not upset the organoleptic sensibilities of the consumer.

Therefore, a conventional processor ends each day with not only a large pile of waste, which impacts the environment, but also an endproduct that is sold to consumers with a vastly reduced nutritional profile as compared to what it could be. Ironically, the ‘waste’ represents the majority of the raw material molecules that are required for optimal nutrition. The ‘waste’ also represents most of the fibre, which if ingested, would aid other nutritional and health benefits. Instead, consumers are mostly left fibre deficient.

Disrupting BSG Disruptor® technology was used in several trials, to deploy a non-chemical process (Dynamic Cellular Disruption® - DCD®) to open greater than 99% of all cell structures of the BSG ‘waste’ mass. Important to note that DCD and Disruptor technology can be applied to any organic and some inorganic materials.

During the DCD process, other than pipe loss, which is the same volume irrespective of the production size, there is zero waste generated as the plant material can be used in its entirety.

DCD also renders bio-available, all the molecules for the body to utilise, and ensures digestibility of the insoluble material(s). DCD does not manufacture molecules but instead, extracts what is available within the cell structure - more efficiently. This is from the source material and therefore, outcomes are wholly reliant on the source material itself.

DCD also reduces the microbiological contaminants, yeasts and moulds found in source materials – product that is passed through the Disruptor will show improved microbiological cleanliness.

In short, the DCD process and Disruptor technology increases available nutrition per serving and reduces particle size and waste, which has a positive impact in the consumer

as well as the environment. The increased extraction of molecules signifies an increase in yield and nutrition, and with the utilisation of what would normally be considered waste, has a positive economic impact on the processing value chain as well as environmental impact –circular economy.

Conventional Vs DCD/Disruptor Technology Processing – BSG

Conventional manufacturing of BSG typically involves drying and milling into a powder. Analysis of the powder will show that the particle size remains big which influences the taste of end products (comments of “cardboard” and “grittiness” are common).

Conventional drying and milling methods do not guarantee any increase in yield or nutrition, digestibility, or microbial cleanliness.

DCD and Disruptor extract processing allows for particles to be reduced to sub-100 micron, microbially clean, increased available nutrition and bio-available – all in one step.

The resultant emulsion can be dried, then milled into a very fine powder, complete with health benefits ready for further use in manufacturing if required.

This then opens possibilities of extended product lines and additional revenue generation for brewers.

BSG Testing Methodology

Demonstrating that DCD and Disruptor technology adds value to BSG manufacture, 200kg of BSG were processed. Material samples were taken for analysis pre and post DCD and sent for independent laboratory analysis.

1. University of Stellenbosch – pre and post DCD amino acid profile measurement.

2. SGS (SANAS accredited commercial lab) –pre and post DCD microbiological and heavy metal measurement.

3. Hearshaw and Kinnes (H&K) for pre and post DCD pesticide residue measurement.

Results

Phyto-Chemistry: Amino Acids (protein)

The report shows an average protein increase of 29%. This is clinically very significant if one considers that the barley or starch source used for beer manufacture before it became BSG, was subjected to substantial boiling to conduct extraction for the beer manufacturing process of which, much of the protein will have already been solubilised into the beer liquid. This is proven by the step that is required to minimise it to prevent cloudy beer.

Microbiological

The report found that there was a 1600000fold decrease (99.999% improvement) in total plate count from 16000000cfu/g to 10cfu/g between the pre-DCD and post-DCD samples. The DCD process also reduced yeasts and moulds to “not detected” from 16800cfu/g and 28000cfu/g, respectively.

Heavy metals

The test measured for heavy metals typically examined for food and beverage production safety, those being mercury, cadmium, lead, and arsenic. All results are <0.01 mg/kg where normal production (depending on source) will allow <3mg/kg, <1mg/kg, <0.1mg/kg and <3mg/kg, respectively. There is no difference from pre-DCD to post-DCD proving that DCD and Disruptor technology do not increase the prevalence of heavy metals, but rather significantly reduce them.

Pesticide residue

Benzalkonium Chloride at a residue rate of 5.5 mg/kg post-DCD and anomalous amount of Piperonyl Butoxide Pre-DCD to post DCD respectively were found in the test samples.

H&K also tested for approximately 250 other residual pesticide compounds of which, none were detected above their reporting limits, as can be seen from the lab reports (available on request).

Benzalkonium Chloride is a compound found in SABS approved sanitisers, disinfectants, and detergents that are mandated for use as per ISO 22000:2018 certification requirements to effectively achieve Clean in Place (CiP) in processing spaces. The Material Safety Data Sheets are available on request.

The Lethal Dose Median (LD50) for Benzalkonium Chloride is 240mg/kg, which would mean that a consumer would need to ingest 600kg of the BSG in one sitting for there to be a 0.5 probability of any toxic effect. This is shown to be more improbable if one considers that the BSG flour will be diluted further as a part of a more complex ingredient final product.

Piperonyl Butoxide is a very low toxic effect ingredient found in “pest control” products but in this case was anomalous. Notwithstanding, in a fit for purpose facility this control would be better monitored and reduced.

This proves that DCD and Disruptor technology do not release or increase any additional pesticide residue and the post-DCD BSG is safe for human consumption.

through the Disruptor to affect an immediate extraction of starches, thus negating the need to boil in mash tuns to perform an extraction. Previous trials showed an increase of 8 to 12% of extractable starches from the same starch source increasing the yield of beer manufacture proportionately.

This means more beer from the same raw material, with quicker turn around so that more beer per plant can be produced with little additional Capex, and the removal of the massive costs associated with the purchase of a mash tun.

Dual processing of beer and BSG value added by products - The temperatures needed to facilitate conversion from starch to sugar and sugar to alcohol are a function of the DCD process. The insoluble fibres (BSG) are separated from the liquid by decanter. The liquid can go into the fermenter and the insoluble fibres, which have already been broken to sub-100-microns, can be dried to a stable flour as a food ingredient. This will show circular economy benefits, massive value chain savings and environmental benefits in processing, because there would be no need to process beer first and then BSG, as they would effectively be processed at the same time.

Increased yields and waste reductionConventional processing of food and beverage consumer products does not efficiently extract nutritional compounds, and produces excessive waste, which is usually where the true goodness is found. Conventional methods also reduce fibre in the final product, when compared to DCD and Disruptor technology, which utilises the ‘whole’ product.

DCD and Disruptor technology reduce microbial loading. This means that DCD BSG promotes food security from a waste stream more effectively than conventional means.

Testing of the BSG flour has shown that there is a substantial release in protein, from which can be deduced that other Phyto-chemistry will also increase proportionately. The postDCD BSG is microbially and heavy-metal clean and fit for human consumption. It can also be concluded that DCD and Disruptor technology do not release additional heavy metals and pesticide residues.

Perhaps the most significant consideration is that by deploying DCD and Disruptor technology earlier in the value chain (at beer manufacturing phase), this will result in the entire raw material being used for beer and a food ingredient with no waste with added environmental and economic benefit.

No more need for mash tuns - Disruptor technology has proven that beer can be manufactured by processing the starch source material with some of the processing water,

Ingredion have launched a five-part video series to help food and beverage manufacturers harness the potential of stevia sweeteners and functional build-back (FBB) ingredients in sugar reduction formulations.

The series explores today’s enhanced understanding of the stevia leaf — from its sustainability and versatility — to the identification of new steviol glycosides (stevia leaf molecules), such as Reb M, which contributes to a more balanced, sugar-like sweetness without bitter off-notes. Other topics explored include the natural origin of stevia, and why it is ideal for achieving sugar reduction goals while meeting consumer demands for a healthy lifestyle.

Ad van Kollenburg said, “This growth is great to see, but what I am most proud of is that despite the

growth, the team is still very close with short lines of communication, allowing us to rely on each other.” With great confidence in their team, they look forward to welcoming new employees to keep up with all the work. With the number of auctions organized by the company increasing every year, Industrial Auctions’ future looks bright.

Of course, this growth does not come overnight. The company works hard to achieve this and always strives to stay one step ahead of its competitors. To realize this growth, the company is expanding its network and increasing its brand awareness. At Industrial Auctions, this is more complex because of the two-sided aspect of its platform.
