he opening day of Royal Ascot is always one of the most eagerly awaited days of Flat racing in the calendar. Three Group 1 contests across a variety of distances as well as one of the leading two-year-old races of the season and a brace of competitive handicaps ensure there is something for all racing supporters to enjoy. Starting the Royal Meeting with a bang is the Group 1 Queen Anne Stakes, where the top-milers in Europe go head-to-head on the straight course. Promoted to Group 1 in 2003, some of the sport’s most famous names have landed this race in the past including Goldikova, Canford Cliffs and the mighty Frankel in a golden spell between
2010 and 2012. The Group 2 Coventry Stakes is the first Group contest of the year for two-year-olds and normally produces some exceptional juveniles. Dawn Approach and Caravaggio are just two to have taken this race before developing into genuinely top-class horses and the form is almost always highquality. Pure speed comes next with the Group 1 King’s Stand Stakes over the minimum distance of five furlongs. A thrilling race to watch, the world’s top sprinters will hit upwards of 40mph and it’s an exhilarating sight to see them hurtling towards the finish spread out the width of the track. The final Group 1 of the opening day is
the St James’s Palace Stakes which perfectly completes the threeyear-old only mile programme, bringing together the leading protagonists from the British, French and Irish Guineas. It has been won by some of the greats of the sport including Frankel, Kingman, Shamardal and Rock Of Gibraltar. Concluding the card is the Copper Horse Stakes, a handicap over a mile and three quarters. It was run for the first time in 2020 and now forms part of the permanently expanded Royal Ascot programme. The inaugural running was won by Fujaira Prince who went on to win the Ebor at York and was second in the Irish St Leger.

was perfectly behaved, perfectly balanced and did everything he was asked to do without any hesitation.” From that day on, until he left to go to stud in Newmarket, Brigadier Gerard was in the care of Laurence Williamson. Bred and owned by racing journalist John Hislop and his wife Jean, he didn’t have the best breeding, with his mother described as “an unremarkable

racer”. As Williamson recalls the head lad at West Ilsley telling him: “on breeding Brigadier Gerard wasn't bred to be a topclass racehorse, and we will soon find out whether or not he was born to be a top-class racehorse". It didn’t take long for the Brigadier to begin showing people quite what he was capable of. After a winter of work, he had his first real trial at home in the spring, with
@ascotracecourse |
Jimmy Lindley on board. As Williamson reports, there were conflicting reports from the other jockeys about what happened during that gallop, with “some saying the Brigadier was at least 50 yards clear at halfway, while the others said he was just gone. The fact was, he finished the gallop a couple of lengths clear of the rest and he was hard held at the business end. The result, from

my point of view, was certainly spectacular. The Brigadier had left all of the others for dead and Jimmy, having coasted him home, was as excited as everyone else when he dismounted.” His owners, the Hislops, and Major Hern were equally impressed. “Either we have a very good one here”, Williamson recalls the Major saying, “or the others are not much”. It turned out to be the former. His first run was at Newbury in June; the 5 furlong Berkshire Stakes, which he won impressively by five lengths. A week later he was back on the racetrack, this time at Salisbury, where he won the 6 furlong Champagne Stakes – again by a matter 12
@royalascot |
of lengths. It is still a sore point with Laurence Williamson that he wasn’t there to see ‘his’ horse make his first two racecourse appearances; he had booked his firstever trip abroad – to Italy – over that fortnight. It didn’t happen again: Williamson was by the Brigadier’s side for the remaining 16 races of his career. Laurence Williamson was not the only constant in Brigadier Gerard’s career. For his first two races Brigadier Gerard was ridden by the jockey Joe Mercer: a partnership which continued for the horse’s entire career. When Mercer passed away earlier this year at the age of 86, Brigadier Gerard’s name featured @ascotracecourse |
in all of his obituaries, and horse and rider were very much a ‘duo’.. Many noted that even two days after a plane in which he was flying crashed and the pilot was killed in 1972, Mercer still joined forces with the Brigadier in the Prince of Wales's Stakes at Ascot. While Brigadier Gerard’s two-year old career could only be described as successful – including winning the Middle Park Stakes at Newmarket – his threeyear old career was even more so. After his win in tough ground at the 1971 Royal Ascot meeting, he went on to win the Sussex, Queen Elizabeth II and Champion Stakes. He finished the year on a Timeform rating of 141 –

equal to Mill Reef. In 1972, Brigadier Gerard headed to Royal Ascot for the second year running. If he won The Prince of Wales's Stakes it would be his 13th success on the trot – having won at both Newbury and Sandown already that season. Laurence Williamson says that to describe the days leading up to the race as “sensational would be an understatement”, including as they did Joe Mercer’s plane crash, and the uncertainty over whether he would be fit to ride. The Brigadier once again found it easy, breaking the course record and hacking up to win by five lengths.
“If he won The Prince of Wales's Stakes it would be his 13th success on the trot”
The wins kept coming. The Eclipse Stakes – run on soft ground which the horse disliked, but he won nonetheless – then the King George VI and Queen Elizabeth Stakes at Ascot.

Then came the one, single blip in his career. Can you call it a blip? However you refer to it, The Brigadier’s run in the Benson and Hedges Gold Cup at York was the only time he ever suffered a defeat; beaten into second place by Derby winner Roberto. Was it simply a fluke? It was certainly baffling, but it appears that Brigadier Gerard didn’t take it to heart. Back at Ascot he won the Queen Elizabeth II Stakes by six lengths, before heading to Newmarket for the Champion Stakes – the last race of his career. Winning by a length and a half, he finished the season on a rating of 144lb, and winding up his career having won 17 of his 18 starts. That year, he became the first horse to
@ascotracecourse |
be unanimously voted Horse of the year by the Racegoers’ Club.
Was he the best miler in history? People have referred to him as such; others have described him as one of the greatest horses ever to grace the turf. However you think of him, he was certainly a history-maker and a record-breaker; many of those records being broken at Ascot. Honoured with a life-size statue in the pre-parade ring at Newmarket’s Rowley Mile and a race in his name at Sandown, he is not a horse likely to be forgotten any time soon. His grave is at Swynford Paddocks in Newmarket. As Joe Mercer said of him: "He was a freak horse with tremendous enthusiasm and speed and the class to win beyond his distance. He was a horse you never thought about getting beat on."

I started working in racing 13 years ago. I got a job working with the photographer at Newmarket after my grandfather started chatting to him one weekend.
F
irstly I was photographing crowds, editing the course photographers photos and printing for the winning connections. I slowly got more chance to photograph the racing, the first time on the track was intense, all the noise from the crowd, listening out for the commentators and the sound of the horses racing towards you!
Originally this was just a summer job at Newmarket as I was also photographing weddings and studio work. Over time I realised that the racing was the area of photography I wanted to concentrate on. I got more contacts and started working with other photographers at larger meetings, including Royal Ascot. the Royal Ascot Insider

Working at Newmarket as a second photographer allowed me to develop my skills and style of photography. I managed to pick up some courses as course photographer including Chelmsford City when it reopened, which is my local track, and Epsom and Sandown when the course photographer retired. I started as Ascot’s course photographer in 2019. John Hoy and Francesca Altoft work with me, together we capture every moment of a raceday. Runners in the parade ring, the race from multiple angles, those moments of joy after a win between the stable staff and the jockey, owners celebrating in the winner’s enclosure and many other shots. Royal Ascot 2020 was so bizarre but I was very grateful to be one of 4 photographers allowed to be there. It made for some great unexpected photographs. I’m looking forward to this year’s meeting feeling more normal, hearing the crowds and having owners being able to celebrate with their winners. 16

oët & Chandon has enjoyed Royal patronage since the courts of Versailles and is the natural champagne of choice for Royal Ascot. Steeped in history, it is the pinnacle of the summer social season, synonymous with pageantry and style. It was Queen Anne who first saw the potential for a racecourse on the hallowed site, declaring that it looked the perfect place for ‘horses to gallop at full stretch’. This summer, as some of the world’s finest Thoroughbred racehorses thunder past the Grandstand straining every sinew towards the winning post, they will be toasted by thousands of racegoers, raising glasses of Moët’s Grand Vintage 2012. 2012 is the ultimate champagne of celebration, only the 74th Grand Vintage in Moët & Chandon’s long history. Released in 2018, Grand Vintage 2012 is an accomplished champagne, identified as an 20

outstanding vintage of character by Benoit Gouez, Cellar Master at Moët & Chandon.´ He describes 2012 as ‘unprecedented’ in the annals of wine-making, with a cold winter and wet spring giving way to scalding heat in late summer. This vintage’s red grape varieties were particularly good, notably the Meunier, which comes to the fore over the Chardonnay grapes. It is the last year that racegoers will celebrate their winners with this charismatic Champagne. For Benoit Gouez, the Grand Vintage 2012 is ‘a softly fresh and harmonious wine that reveals itself slowly’. @ascotracecourse |

Benoit is the latest in a long line of Cellar Masters to marry the excellence and heritage of Moet & Chandon to its ‘savoirfete’ — a term coined by the House to evoke its combination of savoir-faire (knowhow) with the art of the fete, or celebration, associated with its champagne. The story begins in 1716, when Claude Moët, an enterprising young merchant, acquired a wine brokerage charge from the Royal Treasury. He was one of the very first wine négociants, or traders, in Champagne — the fabled patch of land in north-eastern France stretching along the banks of the river Marne. Within these 33,000 hectares, the chalky soil, harsh winters and often temperamental summers combine to create an exquisite alchemy. The grapes are possessed of a rare lightness and finesse, producing the flavours of a golden summer. Soon after founding the House of Moët & Chandon in 1743, the now mature Claude Moet the Royal Ascot Insider

secured his position as supplier of wines to the royal court of Louis XV. With the blessing of Louis, a patron of the arts and connoisseur of fine living, a new era of progress and celebration dawned in France. The sparkling nectars from Champagne were the perfect pairing for the Age of Enlightenment. Madame de Pompadour, the effervescent mistress of Louis XV, famously declared that ‘Champagne is the only wine that leaves a woman more beautiful after drinking it’. Undoubtedly, the Marquise de Pompadour had Moët in mind. Claude Moet began supplying her in 1750 and it was this legendary beauty and wit who helped to establish the sparkling wines of Champagne as the favourite of the elite at Versailles. All the eminent figures of the Enlightenment gathered at her salons; Voltaire, Montesquieu, Diderot and d’Alembert.
@ascotracecourse | #RoyalAscot
21
Claude’s grandson, Jean-Remy Moet, paved the way for Maison Moët’s prosperous future by moving away from still wines and focusing on an exceptional champagne, such was its appeal to the elite. He acquired some 200 hectares of the most prized vineyards in the area, describing it as his ‘Eldorado’; his city of gold. Today, Moët & Chandon is the largest vineyard owner in Champagne, harvesting the Chardonnay, Meunier and Pinot Noir grapes, each contributing its own distinct notes, across the 1,180 hectares of its diverse domain. Through the fermentation and assemblage processes, Moët & Chandon ties three essential elements into the taste of its champagnes, namely 22
@royalascot |
a bright fruitiness, a seductive palate and an elegant maturity. Some 50 per cent of Moët & Chandon’s lands are the coveted Grands Crus, with another 25 per cent designated Premiers Crus. The ‘cru’ designations were bestowed in the early 20th century, when producers and winegrowers of Champagne settled on a fair pricing-system for grapes, based on the quality of a village’s vineyards. Grands crus villages, the highest rated, were deemed to have an optimal terroir that justified higher prices for their grapes. This exclusivity found expression in bricks and mortar in 1793, when JeanRemy Moet ordered the construction of a grand @ascotracecourse |
white-stone residence, Hotel Moët, on the Avenue de Champagne in Epernay, in the heart of Champagne county. Connected to Hotel Moët is the operational heart of the Moët & Chandon champagne house. Across the way are two pavilions, separated by a pool and an elegant Orangerie. Here, the Moët family has, for centuries, received friends and dignitaries in grand style. It was here that Richard Wagner found the inspiration for his opera, Tristan and Isolde, on being handed a champagne flute by his music-loving host, Paul Chandon. (The company was renamed Moët et Chandon in 1833, after Pierre-Gabriel Chandon, Jean-Remy’s son-in-law, joined the company.)

Talleyrand, the eminent French diplomat, declared to his friend, Jean-Remy, that ‘thanks to this glass and its contents, your name will sparkle much longer and much better than ours’. During the 20th century, the name Moët & Chandon continued to sparkle, enjoying unprecedented international expansion under the stewardship of the aristocratic Robert-Jean de V gué. Accompanied by his elegant wife, Ghislaine, he did much to establish Moët & Chandon as a modern luxury brand, clinking champagne flutes with American presidents and the new Hollywood aristocracy. world of horse racing. Moët first became associated with racing in 1908, when two threeyear-old horses, one named ‘Moët’ and one named ‘Chandon’ — belonging to Mr Alfred Simon, the House’s sales representative in London, came first at Epsom and Newbury. The House’s passion for horse racing found its ultimate expression in 2019, when Moët & Chandon Grand Vintage became the Official Champagne of Royal Ascot. During the five days of Royal Ascot this June, many more memories and celebratory moments will be created. Whether enjoyed as the accompaniment to a sumptuous picnic or in one of the many champagne bars around Royal Ascot, Moët & @ascotracecourse |
Chandon creates a very special ambience. The very ‘pop’ of the cork fosters a sensation akin to Proust’s madeleine; anticipation, excitement and fun are evoked as we clink glasses with friends and enjoy the crisp, fresh palate with the rich tastes reminiscent of a basketful of ripe fruit. Moët & Chandon is honoured to bring Moët & Chandon Grand Vintage, a champagne of distinguished character, to Royal Ascot, an occasion like no other. Ascot and Moët & Chandon share a long-standing legacy. ‘We are thrilled to finally be coming together,’ said Benoit Gouez, Cellar Master at Moët & Chandon, ‘and look forward to creating many more memories in the years to come.’

hose horses often came to the fore at Royal Ascot with the likes of Kingman, Byword, Banks Hill, Danehill and of course the incomparable Frankel carrying his colours to victory.
Prince Khalid Abdullah owned 41 Royal Ascot winners in total, starting with Abeer in the 1979 Queen Mary Stakes, his first Group winner. That was just two years after he purchased his first yearlings which kick-started his plans for @ascotracecourse |
what would become an international breeding operation. The Royal Ascot winners flowed fairly regularly from the early 1980s, including a remarkable six at the 1989 Royal Meeting. They included several of the highest profile races with Warning in the Queen Anne Stakes, Two Timing in the Prince of Wales’s Stakes and Danehill in the then Cork and Orrery Stakes (now the Diamond Jubilee Stakes).

Frankel
Those three races were not run at Group 1 level at the time though and his first top-level success at Royal Ascot came in 2001 when Banks Hill, trained by Andre Fabre, won the Coronation Stakes. Fabre was also responsible for Byword, who won the 2010 Prince of Wales’s Stakes, leading home a memorable 1-2 in the Group 1 feature race on the Wednesday for Prince Khalid with Twice Over second. In 2011 he was Champion Owner for the third and final time helped of course by Frankel in his threeyear-old career under the guidance of Sir Henry Cecil. Having blown the field away in the 2,000 Guineas he arrived at Royal Ascot for the St James’s Palace Stakes as a red-hot favourite to extend his unbeaten run to a perfect seven. All seemed to be going to plan as Tom Queally sent him to the front and he was six lengths clear with two furlongs to run. It turned out to be a dramatic finish though as Zoffany stayed on strongly and got to within three parts of a length of Frankel who just held on.

He returned a year later as a four-year-old to contest the Queen Anne Stakes and produced one of the most jaw-dropping performances ever seen at Royal Ascot. Positioned perfectly behind his pace maker, Bullet Train, Queally edged Frankel to the front from the halfway point before he opened up in stunning style to produce a brilliant 11 length victory. Frankel continues to have an impact on the sport through his progeny and he recorded a first Royal Ascot winner as a sire when Without Parole won the St James’s Palace Stakes in 2018
James Doyle. Retired at three, Kingman has since produced three Royal Ascot winners himself in Palace Pier as well as Sangarius and Calyx in the Juddmonte colours, so his legacy lives on and will continue to grow.

while Monarchs Glen won the Wolferton Stakes that same year in Prince Khalid’s silks. Just two years after Frankel, Prince Khalid had another star on his hands in Kingman. Agonisingly beaten in the 2,000 Guineas, he set the record straight at Royal Ascot when winning the St James’s Palace Stakes in devastating fashion under
In total, Prince Khalid recorded more than 500 Group level victories around the world, including 118 at Group 1 level with five of those coming at Royal Ascot. His colours continue to be carried under the Juddmonte name and no doubt there will be many more Royal Ascot victories to celebrate.

etting all dressed up is back. After a year with seemingly nowhere to go, 2021’s Royal Ascot is set to be summer’s first major style occasion. Whether you're watching in person or at home, the event offers a chance to enjoy experimenting with fashion as we are reunited with our formalwear wardrobes, and this year’s racing fans are expected to go all out. This year’s Royal Ascot will feel particularly celebratory, but of course the event is steeped in tradition and has always been a key date on Britain’s national style calendar. The attendance of Her Majesty The Queen each year has always called for a formal Dress Code, bringing a level of glamour and prestige that is globally acknowledged. Each year, around three months ahead of the fiveday event in June, a new Royal Ascot Style Guide is released, giving racegoers time to carefully plan their outfits – from the meticulously measured hat to the heels that won’t get stuck in the grass. The ultimate fashion authority, the annual guide creates a sense of anticipation and excitement for guests, but the Royal Ascot Insider
@royalascot |
also sets the tone for wider formalwear trends for the year ahead. Any slight adjustments can prompt national newspaper headlines, such is the focus on what’s in and what’s out. Getting one’s Royal Ascot look right is essential and guests place a great sense of importance on shopping for an outfit that meets the codes of the enclosure they will visit. It is an incredibly creative and enjoyable experience too; decoding the signature Dress Code is half the fun. Does your hat base measure up for the Royal Enclosure (diameters of four inches or more are acceptable) and do your dress straps meet the all-important one-inch thickness? These are the sartorial questions that make finding formalwear a unique experience. The modern Royal Ascot Style Guide may now be 10 years old, but of course it is informed by over 300 years of heritage. Royal Ascot has always been a place to get dressed up for and to be seen at. In the 1700s Beau Brummell, a close friend of the Prince Regent, was the one to decree that ‘men of elegance should wear waisted black coats @ascotracecourse |
and white cravats with pantaloons’, a template which still informs the code for men in the Royal Enclosure today. Queen Victoria in the 1830s used her Royal Ascot visits to set trends for lace dresses and shawls, while in the 1950s, the new Queen Elizabeth II and her sister Princess Margaret became the event’s fashion influencers, wearing “New Look” era full skirts. All of this rich fashion history was wrapped into the first modern Royal Ascot Style Guide when it launched in 2012. Specifically focusing on codes for the Royal Enclosure, and Grandstand entrances, it caused a splash in the media as it formalised the new rules for stylish attendees. For the Royal Enclosure, the allowance of dresses on or below knee-length and trouser suits in matching colours for women, as well as the requirement of Morning Dress, with a waistcoat and tie, top hat and black shoes for men have proven to be timeless codes, virtually unchanged for the last decade. With each year since, though, there have been very small updates made to the core Dress Code,
@ascotracecourse | #RoyalAscot
29
made in accordance with the times and following feedback from racegoers. A part of the skill required from Royal Ascot organisers when determining the Dress Code for the year ahead is to forecast which trends might be generally popular in fashion and to assess whether they would or would not be suitably translated into the formal occasionwear sphere come race day. Looking back on 10 years of Style Guides, it is clear to see many occasions where this consideration has been paid. As jumpsuits became a popular formalwear choice at weddings and other occasions, the Royal Ascot style authorities saw fit in 2017 to allow them to be worn to the event, including in the Royal Enclosure. As long as they met the same specifications as dresses in terms of hem and sleeve length, tailored or flowy jumpsuits were added to the green list. Sophie, Countess of Wessex became the first Royal family member to try out the newly permitted style, setting the standard in a pleated turquoise jumpsuit by Emilia Wickstead. In 2018, though, there 30

was a surge in popularity on the catwalks for camisole and spaghetti strap slip dresses, oneshoulder tops and off-theshoulder Bardot necklines. Organisers had to consider whether the trend was in keeping with centuries of tradition, and whether it would be a step forward, or in the wrong direction for the integrity of the Royal Ascot Dress Code. The conclusion? Strapless dresses, including these variant styles of off-theshoulder, would not form part of the Dress Code in any enclosure apart from the Windsor Enclosure where there are no formalised rules. For the gentlemen, new trends are perhaps slower to filter through. But when a penchant for wearing suits with boater shoes and @ascotracecourse |
no socks became popular at weddings in 2018, an update was applied to add them as a requirement across the board which led to the inception of the term ‘mankles’. Where to shop for the perfect Royal Ascot outfit has long been a subject of great interest. Over the last decade the contributors to the Style Guide have demonstrated that outfits can be sourced from anywhere – high street favourites from Rixo to LK Bennett, as well as London Fashion Week headline designers Simone Rocha, Emilia Wickstead and Victoria Beckham, have all been featured in specially styled poster looks. Millinery masterpieces are showcased annually too in the guide, offering up ideas from Rachel TrevorMorgan, Jane Taylor, Lock & Co., Stephen Jones and many more. For the first time, in 2021, there are also notes on face masks, which were set to feature heavily at the Royal Meeting in 2021 before the event became a government pilot event. ‘It is requested that these are of a tasteful nature and selected with the same considerations in mind as when choosing a hat, waistcoat or tie,’ the

Style Guide decrees. Upholding tradition and standards is of course important, but so is an ability to continuously evolve with new ideas. For 2021, Royal Ascot once again took the measure of the moment before determining the annual Style Guide. As well as the practical addition of face mask guidance, it was noted that sustainability has become the number one talking point in the wider fashion industry . This year, wherever guests are watching from, all are encouraged to embrace wearing pre-loved fashion, either by restyling pieces they may already have in their wardrobe from previous years, or by buying from vintage and charity shops, or even trying one of fashion’s many 32

The new inspirational Style Guide imagery, styled by queen of thrift, fashion editor Bay Garnett, demonstrates the endless possibilities and ways one can create a new Ascotworthy outfit without actually buying something new. ‘This is exactly the sort of event that can change the perception around secondhand clothes,’ Garnett noted. Removing the unspoken expectation that occasionwear should always be new will have a positive impact on the environment, but as Garnett points out 'it is also a way to dress in a fun, individual and stylish way.’ After a challenging

year for the British fashion industry, it will be interesting to see how future editions of the Royal Ascot Style Guide are shaped. Perhaps an all-British Dress Code, where guests are encouraged to wear only homegrown brands, could be suggested to support struggling businesses. Or perhaps we might see a return to full-on glamour, where guests embrace the new ‘roaring 20s’ postpandemic by selecting exaggerated millinery and joy-bringing silhouettes. Either way, you can bet the rest of the fashion industry will be taking notes – and all eyes will be on the best dressed attendees. Caroline Leaper is the senior fashion editor at The Daily Telegraph

A History Of
Ascot
Over three centuries Ascot has both set and raised the standard for racecourses. It has evolved from the far-sighted vision of a Queen from a distant era into a byword for horse racing of the highest quality. The palpable sense of glamour, pageantry and history, underpinned by Ascot’s outstanding modern facilities, offers an experience like no other. 34

t all began more than 300 years ago, in 1711, when the first horse races were staged on a piece of heathland that Queen Anne had identified as a suitable place to run horses. On Saturday 11th August of that year, seven horses lined up to compete for the inaugural ‘Her Majesty’s Plate’.
That piece of heathland has evolved into one of the world’s most iconic sporting theatres. Ascot’s first four-day event, from which the formal ‘Royal’ Ascot meeting would eventually spring, took place in 1768. In 1825, King George IV suggested that the reigning monarch could travel in a horse-drawn carriage from the racecourse’s Golden Gates, and down the Straight Mile, to open Royal Ascot each day. And so the Royal Procession – one of Royal Ascot’s most famous and beloved traditions – was born. 1910’s Royal Meeting, which came a few weeks after the death of King Edward VII, became known as ‘Black Ascot’. Racegoers attended in mourning attire as a mark of respect to the late monarch, who occupies a place in Ascot’s history as one of its most passionate supporters.
middle-distance races in Europe, and since 2011 Ascot has hosted QIPCO British Champions Day – the starstudded championship finale to the Flat season. The Queen’s Silver, Golden and Diamond Jubilees have all been celebrated at Royal Ascot. In 2006, Her Majesty opened a new Grandstand, heralding a new era for the racecourse and consolidating its position as one of the finest racing venues in the world. From Frankel to Black Caviar and from Yeats to Brigadier Gerard, Ascot has crowned so many champions across so many eras. It’s been some story so far, and we can’t wait to find out what the next chapters hold. A History Of Ascot

Hats Off! Inspired by Royal Ascot, Michelin-starred chef Raymond Blanc OBE reveals Panoramic Restaurant’s 2021 menu… and a unique design the races also inspired on his first visit as a guest of royalty
“I
can tell you a beautiful story if you have time,” says Raymond Blanc OBE, owner of Oxfordshire’s Le Manoir aux Quat’Saisons and widely recognised as one of the world’s greatest and most respected chefs.
It concerns the first time he visited the Royal Enclosure, back in the Seventies, as the guest of a very important person – Queen Elizabeth The Queen Mother. Blanc used to cook for her at the house of her horse trainer, Captain Charles Radclyffe, and fondly remembers how she would visit him in the kitchen and speak to him in French. “And then she invited me – me! A French Republican! – and I’ve never been, and that’s the very first time I went to Ascot,” he reveals. “I had to buy a suit, no, rent a suit the Royal Ascot Insider

because I couldn’t afford to buy one. I got a nice [top] hat and went to Royal Ascot with great anticipation and a little bit of anxiety – because I was invited [to] the Royal Box. And there, when I arrived, I was mesmerised, completely – so taken by the sheer beauty and magnitude of this celebration.” It was the ladies’ hats that captivated him most – “some were made of straw, some were made of silk, some made of cotton, incredible, ribbons everywhere” – but one design in particular stood out. The hat was reminiscent of the showstopper worn by Audrey Hepburn in the Hollywood classic Breakfast at Tiffany’s, and Blanc remembers turning it upside down in his mind. “I had the most modern plate you could ever think of,” he says, “which was so ahead of its time.” So excited was he, he left the races almost immediately and headed straight to the house of eminent pop artist Richard Hamilton, where the two worked through the night on Blanc’s design. It focused “drama” in the centre of the plate, holding food “like a jewel”, surrounded by a wide rim. But when Blanc presented the finished concept to Villeroy & Boch, while they praised the idea, they said it would not be possible to make; the factory machinery would have had to have been reconstructed to accommodate a plate of its measurements. “Ten years after or 15 years after, a French company did it,” he laughs. “And I didn’t keep the copyright! So I will always be a poor chef!” “That was inspired by Royal Ascot,” he continues. “It is mind-blowing. It is so British.” @ascotracecourse | #RoyalAscot

Raymond Blanc was born near Besançon, eastern France, in 1949. Vegan diners can look forward to a broad bean, pea and marjoram dish, with a little croquette and seared pea shoots. “It’s very crunchy, beautiful to look at,” Blanc says, adding, “and no punishment… light, very light!”
A cheese course will follow, made up of a selection of artisan British cheeses – “maybe I’ll slide in one French one!” he says – and also a “beautiful concoction” made with oat milk for vegan diners; a savoury dish he has personally developed.
For the main course, Blanc has sourced lamb from the Royal Estate, selecting the cannon, “the most tender piece”. It will be accompanied by “fresh herbs such as a bit of rosemary, marjoram, sage and, of course, garlic, the new season garlic,” he explains, “roasted beautifully – slowly, slowly – until absolutely perfect pink, and served, of course, with what? Last, but by no means least, there will be pudding. “That’s going to be so special!” Blanc enthuses. A “study on the first British strawberries” using the best of either Oxfordshire or Devonshire fruit, centred around a parfait and a “beautiful, fat marshmallow – soft and silky...” He describes the cooking technique. After slicing strawberries finely, he will dry them in the oven, crunch them up, and “roll my marshmallow into this beautiful powder, crunchy powder, of strawberries – so it’s completely, absolutely beautiful.” @ascotracecourse | #RoyalAscot

The second dessert will centre on the raspberry – a tuile, with juicy fruits and a light sorbet. “Really you have a wonderful flavour, so fresh and again, no punishment!” Blanc says.
“Maybe I’m a romantic…” he continues. “[But] I think people will want to buy much more local food, to embrace local values, and that globalisation may shrink a little bit.”
“The whole idea of this food is that it should be a feast, a joy to enjoy, and after, you feel like more celebration – you almost feel like another piece of cheese!” he laughs. “You don’t fall off the table!”
He also thinks office hours will decline, as the desire to redress the work/life balance grows. “People want more time with their family, that’s what we’ve learned with the pandemic,” he says. “They want to share more with families.”
A fitting return following what has been a very difficult period for the hospitality sector. But far from the feeling things are gradually getting back to normal, Blanc is adamant that big change is afoot. “The pandemic had a profound impact on people’s mind, lifestyle and so on – all will be changed,” he says. With Britons turning to cooking and gardening during lockdown, he thinks the experience has brought us closer to the “big issues which we are facing”, referencing “heavy pollution” and “heavy degradation of seas” as two examples.

on the importance import of pedigrees Pedigree. Defined as the record of descent of an animal, showing it to be pure-bred. A racehorses pedigree showcases its lineage and all racehorses descent from three foundation sire lines – the Byerley Turk, the Darley Arabian and the Godolphin Arabian – as recognised by the General Stud Book, first published in 1791 by James Weatherby. Today the most prominent of the sire lines is the Darley Arabian.

hilst it is not the sole factor, understanding a horse’s pedigree can greatly assist in guiding the actions that will be taken by a breeder, owner or trainer with each individual horse, as TBA trustee Tom Blain, Managing Director of Barton Stud, explains. Pedigree is fundamentally important to any serious breeder. You can’t actively breed thoroughbreds in a commercial or serious way without a decent understanding of pedigrees. There are plenty of people who can give advice, but essentially it is a gene led industry. Other physical attributes come in, but there is no question, pedigree is the single most 48

important factor. You look at some of the greatest racehorses/stallions, they are all from very good families and at the end of the day, and the thoroughbred has been refined by humans into what we see today and will continue to do so. When making decisions for matings, assessing a pedigree is vitally important for what the ultimate aim is, whether that is for the commercial market or the owner-breeder. They are two separate entities. The commercial breeder would think very much about the commercial trends or fashions and try to pre-empt these or use stallions that for example that might produce better looking stock. Or stallions that have an appeal to foreign

markets, such as Hong Kong or Australia. Owner-breeders would be looking far more at matings or pedigrees that have a history of working, and really trying to match a mare with a stallion that has a good record with a broodmare sire or a family. It is hugely important, if not the most important thing when breeding, is to understand your mare’s pedigree. All the little intricacies add to a decision if you are selling commercially or to race. When it comes to the market, pedigree plays an important role there too, no matter what stage of a horse’s life you are buying it. update and then an uplift in value. As a yearling, pedigree defines value, but what helps is when you can allocate the physical attributes to a pedigree. When buying a yearling, you are constrained by the pedigree, its physical appearance and the amount of money available to spend. The pedigree assists in determining the distance what that animal could run over, which can have implications on how long it will be kept in training for, which then leads onto costs to keep it in training. It can also assist in working out a re-sell value as well. With mares, the pedigree is vital, to help assist to see what is happening in the family and also to see family traits. @ascotracecourse | #RoyalAscot

hough he may not have made his way to the winner’s enclosure at the Royal meeting, he lost nothing in defeat - coming third to Frankel in 2012 in what his trainer, Andrew Balding described as “one of the strongest Queen Anne Stakes there has ever been”.
“Sidey” won more than £1.7m in prize money, racing all over the world. His constant companion during those globe-trotting days was Leanne White, Andrew Balding’s travelling head groom. On Sidey’s retirement in 2015, following a leg injury, his owners, Qatar Racing, kindly gifted him to Leanne and her friend Sarah. “Sidey” spent the first part of his retirement recuperating alongside Sarah’s other retired star, Pentecost, winner of the 2002 Britannia Stakes at Royal Ascot. When Sarah decided to hang up her boots
“He has a lot of character, can be incredibly strong and cantankerous, but turns into an angel around children” in 2019, “Sidey” returned to Kingsclere to be with Leanne, where he has turned into the most wonderful family horse. “He has a lot of character, can be incredibly strong and cantankerous, but turns into an angel around children, or anyone he can sense isn’t very confident,” says Leanne. “My 11 year-old stepdaughter has learnt to ride on him; watching the way they have bonded over the past 18 months has been very special.” When Leanne got married last June, “Sidey” carried her to the altar, standing happily to pose for hundreds of photos after the ceremony, enjoying many pats, kisses - and his favourite Polos.

Race Summary: There was a 150-1 shock in this 12 months ago but it usuall usuallyy pays to trust the market principals and 12 of the last 13 winners had won n tthe he time before. Although Kaufymaker commands the utmost respect when held in such high regard by Wesley Ward, it does go againstt tthe he grain to side wit with h a filly when the last successful one was in 1916. There should be a big effort ffort ff ort in EBRO RIVER, ER,, w ER who ho must be some talent to win in n tthe he manner he did at Sandown, and it will be intriguing to see what he might deli delive ver if smothered up for longer in this bigger field. The Acropolis looked the part at Listowel and is Aidan O’Brien’s chosen one of four entries in his bid for a tenth Co Cove ventry ntry,, w while hile Gisburn and Masseto also need taking seriousl seriously. y. Race Summary: This should be run at a tremendous pace with severall ffas ast ffro ront-runners in the field. The horse with wit h tthe he bestt fform orm is again Bat Battaash taash who wasn’t seriously troubled to win this last year but is returning from an injury and has been in a race against time to get here. It will be fascinating to see what Winter Power comes up with on this much stiffer ffer ff er track than when so impressive sive si ve at York but the free-racing OXTED,, w who ho beat some big names over 6f last summer, is an interesting contender back on a track k tthat hat suits as he has shaped as though he will be full fullyy eff ffecti ective ecti ve at 5f and the return to fast ground is in hiss ffav avour. Liberty Beach, third in n tthis his race last year, ear,, has fair claims ear again, along with the US-trained Ex Extra trava tra vagant Kid. Race Predictor: WINTER PO POWER WER OXTED KEEP BUSY

A batch of strong candidate date da tes ran in the Chester Cup and Chester Plate, including Coeur De Lion who bidss ffor or a repeatt Ascot A Stakes win. El Elysian ysian Flame boosted his reputation in the Plate, while Postileo would probably obablyy have got the vote toda obabl todayy but for his run on hea heavy vy ground since. However, another other ot her chance is gi give ven to o tthe he Chester Cup fifth TRUMPET MAN who got rath ath at her messed around in the closing stages and still has more to offer ffer ff er with this sort of test. He gets the vote aahe head of Coeur De Lion and Postileo, altho ltho lt houg ugh h tthe he Mullins squad is not at all comf comfor ortabl tablyy dismissed and Golden Rules is a most intriguing dark horse for John Gosden and Frankie Dettori.

Ryan Moore may have spent his teenage years riding upsides Sir AP McCoy whilst schooling over hurdles at his father Gary’s training base but he has very much made his mark, both here in the UK and worldwide, as one of the best Flat jockeys of our time.
D
ue to his association with Aidan O’Brien and Coolmore Stud, Ryan is once again set to have a memorable week at Royal Ascot. Here we find out about the horse he would like to ride, the impressive guest list he would like to invite to Royal Ascot and his favourite Royal Ascot memories. What is your favourite Royal Ascot memory so far? I have two favourites that I can't split. Winning The Prince of Wales's Stakes on Highland Reel and my victory on Estimate in the Gold Cup for Her Majesty. Which race would you most like to win this week? The one I'd most like to win is The Prince of Wales's Stakes as it's my favourite race of the meeting. However, I'd love to win the King’s Stand as I've not won it yet. If you could pick one horse to ride that you are not currently booked for, which horse would you choose and why? Palace Pier in the Queen Anne - he's very classy.
I hope he doesn't as I'm travelling with him every day! If you could pick one Royal Ascot winner from the history books which horse would you pick and in which race? It would have to be Frankel in the Queen Anne Stakes of 2012. You can invite five famous guests to Royal Ascot, who would you invite? (past or present) We need new investment in the sport so how about Jeff Bezos, Elon Musk, Bernard Arnault, Bill Gates and Mark Zuckerberg. They're worth a bit! What is the last thing that goes through your mind when the starter is about to drop the flag? I'm concentrating on my horse getting away from the stalls. Do you have any raceday superstitions? None, I'm not superstitious. Cream or jam first on a scone? I don't get to eat many so I'm very happy either way. What makes Royal Ascot special?
Frankie has broken down on the way to Royal Ascot, do you:• Reroute and go and pick him up • Quickly get on the phone to your agent to offer your services for his rides
It's simple. It's the best racehorses running in the best races at Britain's best racecourse and it's been happening for centuries.
