busy in the new year Well, the holidays are over and with it another year. I’ll just go ahead and say it, I’m glad to put 2013 to bed. Don’t get me wrong, its not that it was necessarily a bad year or anything, but it was exhausting! Last year started off pretty well - we came out strong with a redesign of the magazine and dining guide (for those of you that remember the old dining guide, you’ll appreciate the degree of change that was implemented). We had alot of help from our friends and tried out several new writers too. Even Tim Rutherford came on board for a while and helped us through some busy times. But it was really all the events that kept us the busiest, as we helped the city with four different “Play Streets” events, all aimed at getting kids active and motivated towards better health. Many of our readers will also remember the Farm Heritage Festival that we helped Hunter Cattle to put on as well. But of course our biggest event of the year was Food Day, bringing in over 15,000 attendees at Daffin Park. Luckily, we were so fortunate to have my very own sister and her husband move here to help us run the company (she is listed to the right as the general manager, although that title doesn’t even begin to encompass all she does here for Well FED!) Over the past several years, we have had many different names listed over there in that little box to the right and each one of them has been like family to me. Many of those names have since moved on to other projects and even other states. One of favorite things to do is offer this publication as a stepping stone to emerging artists, even if only to see them leave us to go on to a bigger job in their field. Although we may lose touch as the days or years go by, everyone who contributes will always be a part of this family. So as we continue to get busier and busier with each passing year, with every new event or endeavor that we decide to take up, our family continues to grow. Who knows what this next year may bring, but what I do know is that as long as you all continue to pick up our little publication and you continue to support those individuals and businesses that make up the body of this magazine - we will continue to stay busy - busy telling the stories of our community and promoting local endeavors.

Having spent most of his life in Seattle and around the Pacific Northwest, he was ready for something different. “What do I do next? What am I passionate about? Where do I go from here?”

A seven-month cross-country RV excursion with his wife Suzanne cleared his mind and eventually led him to the Savannah area, where in 2012 he established Tierra Verde Farm, a new 1600-plant greenhouse tomato operation based in nearby Bloomingdale. -Continued on Next Page wellf edsava nna h. c om | feed 11

“I took some time off, essentially doing some freelance consulting in the technology world, and I was bouncing around a bunch of business ideas,” recalls Connell, who has an MBA from Northwestern University’s prestigious Kellogg School of Business. “At one point, I wanted to start a chain of tattoo removal businesses. At [another] point, frustrated at the amount of money it costs to take our old dogs to the vet, I wanted to start vet clinics. I wanted to do beekeeping for a while, and then I sort of stumbled into controlled environment agriculture (CEA), and it just sort of stuck.” Controlled-environment agriculture refers to any agricultural technology that enables the grower to manipulate a crop’s environment to the desired conditions, especially through the use of hydroponics, greenhouse conditions, and nutrient analysis. 12

“I like controlled environment [growing] because I have a technical background, and it’s a very high-tech way to farm,” says Connell, who has a computer science degree from Western Washington University. “I like the fact that we try to keep the environment consistent. When the plants grow, it’s still sort of ‘the miracle of life’ -- you can’t control all of the variables, but you can try to handle what you can., and try to apply as much automation to the process as possible.” Connell spent about four months putting together a business plan, talking to local banks, consultants and experienced growers. Ideally, he wanted a location with at least a few acres, within 20 miles of Savannah, and that would be available at an affordable price. On a stretch of rural land near the Bloomingdale-Pooler border, he found the right property. “I came to Savannah a couple times, and it was very encouraging in terms of the opportunity here,” says Connell. “Eventually after a lot of ‘no’s’ from the banks, I finally got a ‘yes,’ from a local bank here, from Sea Island Bank, and they’ve been very supportive. And, so, with that, we got started.”

Tierra Verde officially broke ground in mid-June, with Connell building the greenhouse from scratch, including its elaborate plumbing, insulation and irrigation systems. The first planting taking place on August 17th and by the end of 2013, the farm has now been producing for nearly two month. Tierra Verde (Spanish for “green earth”) produces three types of tomatoes -- beefsteaks (or ‘slicers), vine-ripe clusters and cocktails (slightly larger than cherry tomatoes) The market response, especially given the newness of the operation, has been impressive. Tierra Verde is prominently featured at two local farmers’ markets (Thursdays in Bluffton, and Saturdays at Forsyth Park), at which they frequently sell out. Tierra Verde is also

already the tomato provider of choice of several local ‘farm-to-table’-inspired restaurants. And they have recently added their tomatoes to gourmet grocer Whole Foods’ produce bounty on a trial basis (“We hope to have a long-term partnership with them,” he says). “We want customers that want something that is sustainable. We don’t use chemical pesticides. We don’t truck our product 2000 miles. We don’t pick [a tomato] green and gas it to turn it red. We want to sell to people who sell to people that care about that stuff,” says Connell, who hopes to add cucumbers, peppers and greens to the farm’s output in the near future.“And I think we’ve found that here in Savannah.”

n this cool and crisp Friday afternoon the word “farmer” is repeatedly called out in a singsong way as the students in Ms. Bostic’s pre-K class venture from raised bed to tree to several other interesting activities in the Shuman Elementary school garden. If you were not listening closely, you might think the word “farmer” is part of a word game they are playing; but, if listening carefully to the children, you soon realize that “farmer” is a person. This person -- Farmer, a.k.a. Sandra Cason -- is a local Master Gardener. Every Friday afternoon, Cason comes to the school to assist teachers with the practical part of teaching gardening and nutrition across the curriculum using the school garden. Master Gardner Cason started the Farmer Friday Program as a way to celebrate Farm to School Month this past October. Because it was well received by the teachers at the school, she has continued offering the service. The lessons are geared to the needs of the teacher and the interest of the students. This day’s activities allowed the students to check in on the progress of their snow peas, cabbage, and carrots they had previously planted in their designated class raised bed and to plant sugar-snap peas. The students enjoyed a practical lesson in how seeds are distributed and even participated by pulling the fluffy white butterfly weed seeds from the plant, blowing them, and watching the seeds sail through the air. During a pre-k level talk as to why earthworms live in the compost pile, most of the girls squealed as the students were offered the opportunity to touch the wiggly earthworms. The students picked flowering stems of pineapple sage to take for a “show and tell” at home. very veterinary magazine you pick up these days discusses the decrease in patient visits and the rise in disease. The trend started to become very noticeable during the beginning of the recession so we know that financial constraints do play a role in this trend. The real culprit, however, is the lack of understanding about the importance of preventative care. Pets can’t talk, at least not in a verbal language way, so it is often difficult to know when they are hurting or have something wrong. Clients tend to wait until their pet is symptomatic (limping, vomiting, not eating) before they become worried enough to bring them to a veterinarian. What we as veterinary professionals must convey as the best medicine is one of proactiveness versus reactiveness; one of offense versus defense. Truly the best way to reduce the cost of veterinary care is to invest in preventative care for your pet early on.

Partnering with a veterinarian to monitor your pet for diseases that are common to breed, age groups, and lifestyles can truly add years to your pet’s life. We don’t wait until we see signs of dental disease in our own mouths to see a dentist for a cleaning. We go in to our human dentist every six months for dental cleanings to PREVENT disease because it’s accepted standard of care. We also go in for our annual physical exam to our doctor and have baseline chest x-rays, mammograms, pap smears, prostate exams, and lab work performed based on our gender and age. This gives our human doctors a chance to catch rises in our cholesterol for example so we can make changes that will protect our heart and arteries in the future. Our pets deserve no less and, in fact, need to come in more regularly, as they age so much faster. At Case Veterinary Hospital, we recommend twice a year checkups. We structure the lab work and x-ray recommendations based on the age of the pet. Most importantly, we perform a thorough physical exam. Getting our hands, our eyes, and our ears on your pet lets us see any changes that might be occurring. -Continued on Next Page

As trained professionals, the veterinarian can see a lot more than the average owner might. Listening to the heart, looking in the ears, checking the prostate, etc. can help then uncover problems that even the most diligent owner might miss. Every day, we pick up on heart murmurs, arthritis, early onset of kidney disease, heartworm disease, thyroid disease, etc. from listening to clients tell us about changes they have seen (often not even noticed until they are prompted by the doctor’s directive questioning). Each of these problems can often be controlled through medication, diet, and regular follow ups. Certainly vaccines are an important proponent as well; not only for the pet, but also for the human as many of the diseases are zoonotic, meaning the diseases can affect humans. We recommend vaccinating according to your pet’s lifestyle. This is another reason to see a veterinarian versus going to a vaccine clinic as often the vaccines can be tailored to what is best for your dog or cat. We have what is called “core vaccines” (Rabies, Distemper, Parvo, Parainfluenza for dogs and Rabies & Feline Distemper for cats) There are also “non-core vaccines” for pets who are at risk. These may include Lymes Disease, Kennel Cough, Feline Leukemia, or Leptospirosis. By establishing a partnership with a veterinarian, you 20

can be assured that your pet will receive the vaccines that will protect him/her but only the ones warranted based on their specific needs. Your veterinarian will send notices when the vaccines are due and, often, will have an online “portal” for you to be able to keep track of the dates as well. At Case Veterinary Hospital, we understand it is often a balance of finances when it comes to choosing what is best for your pet. We like to take the money somewhat out of the equation by providing packages that are paid for with monthly drafts and provide the pet with all that our veterinarians feel is necessary to keep your pet comfortable and happy for a long life. In my 33 years in the veterinary field, I have never seen a doctor or team member recommend something that wasn’t in the best interests of the pet. Where I think we sometimes go wrong is in communicating the importance and value of regular physical exams. We all want our pets to live a long and healthy life and the veterinary healthcare teams have made it their mission to help us achieve that goal as pet owners. or most people who grew up in Savannah, especially those in the over-thirty crowd, there was really only one place to get birthday cakes made the old-fashioned way. For dense, rich, real-butter pound cake (not the fluffy yellow cake-from-a-box that nearly all supermarket bakeries use these days) - you’d just head on over to Gottlieb’s Bakery at 1601 Bull Street and place your order with one of the brothers. While you were there, you might also have picked up some of those incredible Chocolate Chewies (not crispy or crumbly but genuinely chewy and chock full of pecans) or a golden loaf of challah (braided egg bread). Kids knew what to expect as well; that special jar filled with sugar cookies, covered in brightly-colored sprinkles, was reserved as a free treat-fest just for children.

The place was legendary and the enticing scent of baking was only one clue that Savannah folks knew where to get their fresh-baked goodies; after all, Gottlieb’s had been around since Isadore and his wife, Jennie, opened the first store on the corner of York and Jefferson Streets in 1884. Cross the corner to the Gottlieb’s Delicatessen, owned by Isadore’s son Joe (AKA ‘Pappy’), and you’d find a haven of kosher delights like hot pastrami sandwiches or garlicky corned beef, real beef franks or salted herring. Sure, you could pick up a paler version of these in some local markets but here they were served hot and prepared fresh. If you think of this as a minor pleasure then maybe you’ve never tasted genuine hot pastrami, with just the right amount of spicy fat along the edges of each slice (and yes, that tasty fat is necessary and adds to the intense flavor!).

Sliced thin and piled high on fresh Jewish rye, served with a crisp, home-made garlic dill pickle (an old Gottlieb family recipe)—it was truly a culinary treasure. My grandmother could remember the horse and buggy days when Isadore and his horse, Tom, delivered baked goods to the various neighborhoods downtown; you always knew he’d arrived when you heard his brass hand bell. Quickly a crowd of mothers would form ‘round the carriage clambering for Jennie’s famous sour cream rolls, 15 cents for a dozen, and even kids digging into their pockets for a penny to pay for a sugar cookie the size of a saucer.

Alan Gottlieb, grandson of the originator Isadore and son of “Pappy” Gottlieb, had faith in Savannah’s love of the family’s cuisine, and so he opened a kosher restaurant and bakery at Twelve Oaks shopping center in 1978. I was privileged to work as deli manager for Alan Gottlieb in the early 1990s and finally got to observe first-hand, the inner workings of the business as well as the amazing energy and devotion he brought to his job. Alan ran his store like clockwork, arriving pre-dawn to start the dough rising, prepare the catering orders, getting the steam-table ready with its array of delicious entrees like sweet-and-sour stuffed cabbage and tender baked chicken.

In 1928, the bakery moved to its final location on Bull Street, with Isadore’s son, Irving, taking the reins after Isadore’s passing in 1932. The tradition continued even after the main stores closed their doors in 1994 due to competition from large supermarket chains. The family business has definitely had its own ups and downs. Longtime devotees of Gottlieb’s followed Isser, another of Isadore’s sons, to Publix’s bakery to find that wonderful challah and were happy to see Gottlieb’s re-open at the Savannah Mall.

He was a tireless worker, a kind boss who always remembered his customers’ favorites and their children’s names, a pious member of B’nai B’rith Jacob synagogue who never missed the morning and afternoon prayers—I remember well his quiet way of putting aside his apron and folding it up for later so he could walk across the parking lot for half an hour to the prayer services. It seemed to me he always returned calm and energized, ready to continue banging out the orders for party trays, stacks of challah and rye breads, or slicing up mounds of kosher meats for his customers.

Isser’s sons, Michael, Richard and Laurence started a new venture on Broughton Street in 2004, producing much nostalgia and eager crowds to savor the family recipes. Alas, the Savannah Mall and Hilton Head locations did not last long, and Gottlieb’s on Broughton closed its doors after a brief blaze of glory after only two years, due in part to crumbling sewer pipes in the basement. But still the family trusted that their recipes that at one time had brought them so much renown and many happy customers could sustain itself if given the chance.

Alan once said, “My family has always been in the food business. My grandfather and grandmother established Gottlieb’s Bakery in Savannah in the 1880s and my mother and grandmothers were both wonderful cooks. It’s in our blood!” His motto was “We’re cooking for YOU!” He was a kind of food genius himself; like a great musician looking over a sheet of music and being able to hear that symphony perfectly in his head, Alan would constantly read through cookbooks, composing the recipes in his mind and being able to taste which ones were good and which should be discarded.

He proved his skills over and over through the years and I was happy to work beside him for a while, watching how he delicately carved a carrot swan to arrange on a tray of meats, or the precision of his memory as he cooked dish after dish in his busy kitchen, never needing to consult a recipe. A few years later, as ill health forced him to shut down his restaurant, he took a brief hiatus before returning to do what he knew best; producing the wonderful recipes in the kosher kitchen at B’nai B’rith Jacob synagogue, catering, baking and serving up delights like marinated mushrooms or chocolate ambrosia cake to hungry congregants during bar mitzvahs and weddings. When Alan passed away in 2003, his son Murray became the heir of the family’s store of beloved recipes. Never fear, though, for the Gottlieb tradition of fine food and catering has been brought forward into the 21st century. For a long time I lamented Alan’s passing and did not know that his son Murray continued his father’s legacy or where I could find those chocolate chewies or golden loaves of challah. Isser died in 2012 and as far as I knew, nobody sold the lost treasures of the Gottlieb family.

After several years of cooking and serving, not only at the huge AT&T cafeteria but in his own version of Gottlieb’s restaurant, Murray decided to follow his own path and formed a niche for great food and skillful catering at the synagogue. Murray’s a hard worker, just like his dad, arriving at 6am and only leaving when he gets the job done. He’s also an excellent baker, mixing all the dough himself, and each Tuesday holds a very good Soup n’ Salad luncheon at the synagogue with 2 homemade soups (the barley is a tummy-warming favorite), fresh salad fixin’s and fresh fruit for only $8. Everyone is welcome and do make sure you check the synagogue website for other weekly events. Murray and his loyal crew of Katina, Wannee, Denise and Samraum will put together any feast or dinner you can dream up – and of course, don’t forget that incredible challah. It is heartening to know that the special Gottlieb touch is still alive and well in Savannah!

A couple of months ago, however, I had an occasion to visit the B’nai B’rith Jacob synagogue to take photos of the 5th Commandment installment, a series of brass plaques engraved with scenes of Jewish life that I had drawn the original images for nearly 20 years ago. As I walked into the long central hallway I was caught by a heartbreakingly familiar and homey scent of freshly baked challah—I swear, it almost brought a tear to my eye! I walked through the social hall to find Murray sliding a pan of hot bread from the big oven in the kitchen, his staff busy with a big party menu, the enticing scent of a feast being prepared. Of course I asked if there were any extras and stayed a while to talk with Murray about the family business.

After the old Saigon turned into Chive, a vacumn was left for fine Asian cuisine that Ruan Thai alone could not fill. Enter the first iteration of Aroy Jung: It had the inklings of something that could have been great, albeit the revolving sushi bar was a bit much. The new owner and manager, Haydar Ezik, brings his front of the house experience from some of Savannah’s finest, like Alligator Soul and Rocks on the River. Ezik takes Asian Fusion a step further, by infusing his own Turkish culture into the SouthEast Asian menu and decor. No joke, as such was the eclectic mix of patrons that frequented The Sparetime on the corner of Congress and MLK Blvd.This location has always been a challenge for any of its tenants, even after the serious renovations and cleanup that this bar was able to acheive. SCAD students returning from winter break are in for a sore surprise, as this place was usually packed solid on weekends and one of the best places in town to get a decent cocktail.
