This Holiday Season, Keep it Green and Local

Let’s face it, if there is one single thing about the holidays that we all have in common, it’s that we all tend to spend way more than usual. With all this additional money floating around out there, exactly where it ends up has much more of an impact than usual. We see it everywhere we go: large mega-franchises taking up more and more space, while the smaller independently owned storefronts become increasingly empty. A walk down Broughton St., which is at the very heart of the downtown retail scene, has more empty windows than i’ve seen all year. So, what does it matter if a couple little shops had to close? Everything we need is at Wal-mart anyways, right? Well, let’s look at some statistics. (Oh yes, i’m going there...) If the people of an average American city, like Savannah, were to shift a mere 10% of their spending away from chains to local businesses, it would bring in over 200 million additional dollars to the community’s economy. On average, national chains in the United States reinvest about 33.6% of their revenues back into the community. For companies that are so large, this pales in comparison to the 64.8% that is returned from local businesses. Most food in the U.S. is picked a week in advance and travels an average of nearly 2,000 miles before reaching its final destination. If we were to shift just 10% of our spending to buying locally grown foods, we would save around 310,000 gallons of fuel per year and reduce CO2 by 7.3 million pounds. So, with that said, you can see why we felt the need to bring our readers a different kind of holiday guide! Whether you’re looking at throwing your own holiday gathering or attending someone else’s - whether you’re staying in or going out, we hope that this issue not only shows you how to do it sustainably but also affordably. Our holiday guide covers all the bases and is full of locally owned and operated businesses that our Well FED Family has come to love. Some might say that our selections are a bit biased...well of course they are! But for all the right reasons I assure you. As with virtually every business you will ever see between the covers of Well FED, we choose to support only those businesses that are not only local, but have set a positive example in our community. As we move into the new year, i hope that we can all realize the role we have in building a stonger community and more prosperous Savannah. Let us all “put our money, where our mouth is” and really do something positive for a greater good. Now that is what i would call true holiday spirit.

he urban agriculture movement is certainly not a new idea. Historic records show ancient Egyptian, Babylonian, Roman and Indian terraced or “hanging” gardens feeding these city dwellers. Chickens have always played an integral part in this urban food production. Chickens have been domesticated since 7500 BCE beginning in Southeast Asia and India. Chickens have since gone global. There are approximately 40 billion chickens being raised commercially for meat and eggs worldwide, primarily in the U.S., China and Brazil. If you are not currently aware of the plight of factory farmed animals please search for and watch You Tube videos for “factory farms.” You might change your mind about having a backyard flock after that, or begin supporting a local sustainable farmer at the farmer’s market instead of buying grocery store eggs. Don’t be fooled by the cage-free or free-range labels either, slightly more humane than battery caged birds, but still de-beaked and crowded (they mutilate each other and themselves when distressed.) Free-range means they have a door to an outside area of an unregulated size, a few lucky ones might manage to see the sun. Growing a garden has so many benefits to mind, body and spirit, and so does animal husbandry. It completes the cycle of food production. By cycle, I mean closing the loop in terms of sustainability of your personalfood chain. Adding chickens to the garden does this by having an on-site nitrogen source for boosting nutrient levels of your compost. The compost feeds your garden, and chickens love to eat overgrown, damaged or overly prolific vegetables, weeds and bugs from the garden. Chickens are the missing link in urban agriculture. It’s a perfect match! You get fresh organic vegetables and an affordable, humanely produced protein source. This doesn’t even begin to address the intrinsic values of entertainment and enjoyment that comes with having chickens as a part of your household. No doubt most of you are aware of the citation given to a chicken keeper in the county in response to his neighbor’s complaints. It then came to light that some local high-profile business owners also keep

chickens and they were also cited (with no complaining neighbor.) The County Commission wisely put a stay on these citations and created a task force, headed by Blake Caldwell, to re-write Animal Control Ordinance laws that govern these matters. The issue will no longer be one of zoning regulations, but of compliance with Animal Control ordinances. As I write this, the Animal Ordinance task force is working on changing the intent and wording of the ordinance so that citizens have the right to practice small animal husbandry on one’s own land and in the case of rental property, with the landlord’s permission. There is resistance to this change. Where is the resistance to having backyard food-producing animals coming from? Does the average citizen think that chickens are noisy, stinky and indicative of a low-class status? Is there some stigma of poverty attached to keeping chickens that prevents some people from considering it, or even accepting it in their neighborhoods?

I submit to you, Dear Reader, that there are currently more than 1000 chickens living in Savannah/Chatham residential neighborhoods based on local sales from Economy Feed & Seed and Victory Feed & Seed stores alone. Many others order their birds from catalogs and online in order to get the specific variety they desire— no telling how many more from that source. What this tells me is that these chicken keepers are keeping their chickens in such a way as to not be a nuisance to neighbors, or else there would have been many, many complaints with this number of city chickens. As it stands now, the new ordinance (draft) will be enforced on a complaint-driven basis to assure protection of both the chicken-keepers and their neighbors. In this version of the ordinance, one is free to complain about any animal nuisance coming from the neighborhood, one’s rights will be protected, and at the same time allow those who want to feed their families from healthy, humanely-treated birds to have the right to do so in a manner that does not inflict hardship on their neighbors. Citizens have a right to use their own land (or with landlord’s permission) to produce food in such a way that does not impact the rights of their neighbors. This draft will come before the County Commissioners and the City Council for approval, and this will be the time you can support the rights to raise your own food on your own land by attending these sessions. Date and time to be announced. Having chickens is certainly not for everyone, yet could be for anyone regardless of where you live. There could be chickens living in your neighborhood right now that you never knew existed because when kept properly, they are neither noisy nor stinky. If renting or living in a condo or apartment with no land associated

with it, one could start a community garden and have chickens there, or even a community coop with shared responsibilities and benefits. It’s been suggested that SUGA sponsor chicken husbandry classes for new comers to this practice, possibly make it a requirement at some level. Perhaps an Animal Control Advisory Board can be created comprised of a veterinarian, public health official, dept of agriculture, extension service, etc, to offer an educated, unbiased hearing of complaints and remediation advice. Many people from all walks of life have jumped on the backyard poultry-keeping wagon. For the past three years on SUGA’s Tour de Coop, there have been coops visited in every conceivable neighborhood from high-priced homes on the islands to modest homes in inner city neighborhoods. You can find articles about urban chickens in News Week,Wall Street Journal, New York Times and all over online—99% of them are prochickens. I actually found relatively few anti-chicken voices out there. There was a quote in the Atlanta journal Constitution from a chicken owner, “Chickens are quiet pets that serve breakfast.” The demographic of modern urban chicken keepers varies by region, but my experience here in Savannah has been mostly with well-educated, middle class, healthoriented individuals, not shiftless backwater hillbilly types that people who don’t know better envision when they hear that there are chickens living in their neighborhood. Whatever the reason for dissent, I’d like to see it dispelled and more people practicing chicken husbandry. The more local food produced by ourselves and our neighbors, the more food security we have to feed ourselves in the event of a natural disaster or a disruption in the transportation system. I’ve said it before, but it bears repeating, the average American city has a three-day supply of food on its store’s shelves. Think about it: How secure is your food supply?

Season Green ings { Tips for an Eco-Friendly Holiday Celebration } by Cari Clark Phelps

The nip in the air is a reminder that the holidays are right around the corner, and that can only mean one thing – its time for celebration! While holiday parties are a great way to bring people together, reminisce about the past year and look to the future of what 2012 brings, they are often fraught with waste and non-environmentally friendly items too. The good news is that throwing a more sustainable holiday party (or any event for that matter) is actually pretty easy in Savannah. Here are some suggestions from the latest edition of the Savannah Green Event Guide and Directory for having a roaring good time while creating only a squeak of an environmental footprint. Food and Beverage Chestnuts roasting on an open fire are often a Christmas tradition, but if those chestnuts had to be shipped in from Italy, their carbon footprint is also scorching! Using locally sourced food is a great way to not only cut down on the environmental impact of getting your salads from the field to your plate, but also keeps money in our local economy. Why pay an international conglomerate when you can support farmers down the road? There are a host of restaurants and caterers in Savannah that focus on using local and organic foods in their meals. You’d be surprised at how much local and organic food is available from within an hour of Savannah. From beef from Hunter Cattle Company in Brooklet to wild Georgia shrimp to all the fruits and veggies you need, your entire meal could be sourced from within Georgia!

Thrive – a Carry Out Café, Earth to Table Catering, The Sentient Bean and Savour Savannah are just a few of the local catering companies that make a dedicated effort to sourcing as much of their food stocks from local sources as possible. Let’s not forget the bar! What’s in your glass is as important as what’s on your plate. Luckily, from beer to wine to vodka, there are options from Georgia and South Carolina that can let you imbibe without environmental concerns about the embodied energy used to ship that Chardonnay from France. Many people don’t realize Georgia produces some world-class wines. Whether you’re looking for Merlot, Cabernet Sauvignon, Chardonnay, Viognier, or sparkling wine, you have fantastic options grown right here in the peach state. Some of the North Georgia vineyards we can personally vouch for include Blackstock Vineyards, Frogtown Cellers, Three Sisters Vineyards, and Wolf Mountain Vineyard (the only GA winery to produce sparkling wine). For beer, look no further than Bay Street where Moon River Brewing Company puts out a fine assortment of craft beers. For liquor, Firefly Distillery outside of Charleston, SC offers a great variety of vodkas.

Location Picking a venue that can accommodate your guests in a comfortable manner at a reasonable price can be a challenge in itself. But to have an ecofabulous holiday bash, why not also pick a venue that is itself environmentally friendly? Green buildings use significantly less energy and water, have higher indoor air quality, and are just more comfortable to be in overall. Plus, green buildings tend to also have green practices and programs that you may want already in place, such as the ability to offer recycling, bike parking, and access to transit. How can you tell which venues are green? The easy way is to look for a building that has achieved Leadership in Energy and Environmental Design (LEED) certification or GreenSeal certification (for hotel venues). -continued on next page


Selecting a venue that is either LEED of GreenSeal certified is an easy way to know you are already reducing your events environmental impacts, as well as supporting those building owners who themselves went the extra mile to create a more sustainable community. In the area, you could consider such LEED certified venues as Ellis Square, the Southwest Library Branch (if you are a nonprofit), or the Richmond Hill City Center. The Westin Savannah Harbor is the area’s only GreenSeal hotel, and offers a range of eco-friendly options such as single-stream recycling, elimination of Styrofoam products, and bulk condiments and water (you’d be amazed how quickly little packets of ketchup and mustard can pile up – and they don’t degrade).

Party Favors What’s a holiday party without gifts? Even better are green gifts – the gifts that keep on giving! If you plan on handing out party favors at your gala, look for options that have a long useful life after the event is over. Start by using tote bags, which can be used for shopping afterwards, and pack them with options such as coffee mugs, pint glasses, or organic t-shirts (all of which can be easily customized and reused over an over!). Companies in the area such as Advertising Specialty Services, Celebritees, and Spectrum Printing can help you find the perfect holiday memento for your guests. 16

It’s party season! Stock up on

healthful fun foods

As time dwindles and tasks mount in upcoming weeks, chances are good you’ll find yourself in need of snack or party foods you can put on the table in minutes. It’s smart to have a few festive, good-tasting foods to fall back on. It’s also helpful to make sure those foods are on most people’s eat-right list. A key feature of those I share here is that no recipe is needed. With basic cooking skills and reasonable culinary confidence, you can successfully combine common ingredients in proportions to suit your taste. Start with simple snacks. Here are a few of my favorites: * Unsalted nuts. Really, it’s OK. Dishes of cashews, almonds, Brazil nuts, and pecans are nutritious and filling. For variety, add raisins and other dried fruits such as apple rings, cherries and apricot halves. Leave out the yogurt-covered whatevers. * Crisp apple slices with ground cinnamon, cocoa, and cardamom for dipping. Mix two of three tart varieties such as Granny Smith, Honeycrisp and Jonathan. * Dried fruit arrangements. Include frilly party picks to make handling easier. Serve dried pears, peaches, apricots, figs and plums (aka prunes.)

Salads are another reliable party food. Make them ahead of time and let them chill in the refrigerator. Among my favorites: * Waldorf salad. Put a new twist on a tradition by adding several cups of chopped Romaine lettuce and using a blend of light mayonnaise and plain,nonfat or low fat yogurt in place of regular mayo, whipped cream or sour cream. Add seedless red grapes, halved, diced Granny Smith apples and celery, and chopped walnuts. Add a couple teaspoons of curry powder. * Four bean salad. Vary it by using rice vinegar instead of cider vinegar, and include sliced red onions and chopped red and green bell peppers, too. * Broccoli salad. Another green and red holiday favorite combines broccoli florets, dried cherries, chopped onion, sunflower seeds, light mayonnaise and a couple of tablespoons of red wine vinegar and sugar. -Continued on next page.

* Garbanzo bean salad. Combine equal amounts of rinsed, canned garbanzo beans and cherry tomato halves. Add minced green onions, chopped parsley, diced bell peppers, and vinaigrette dressing. Vary it by adding a scoop of spicy salsa. * Citrus salad. Peel and cut up fresh grapefruit and oranges. Add a handful of shredded coconut and chopped pecans. Toss and chill before serving.* Broccoli salad. Another green and red holiday favorite combines broccoli florets, dried cherries, chopped onion, sunflower seeds, light mayonnaise and a couple of tablespoons of red wine vinegar and sugar.

Need some appetizers? Try these: * Fresh fruit kebobs. Assemble chunks of pineapple, strawberries, oranges, grapes, and kiwi on a kebob stick. Roll each fruity totem in shredded coconut. * Veggie kebobs. Same thing, but use chunks of onion, carrot, potato, mushrooms and bell peppers. Brush with olive oil and sprinkle each kebob with fresh rosemary. Grill or roast in a hot oven. * Flatbread pizza slices. Smear basil pesto over a piece of whole-wheat flatbread. Add your choice of veggies such as tomato slices, chopped onions and bell peppers, and black olives. No need for cheese, but if you want some, sprinkle with grated Parmesan or reduced-fat mozzarella. Bake in a medium-hot oven until golden brown.

Need something sweet? Go for a plate of fresh strawberries and pineapple chunks arranged with cubes of angel food cake dusted with cocoa powder. Rice pudding topped with ground cinnamon and chopped walnuts or 2-inch bites of banana bread are homey for the holidays, too.

Anyone who knows me is aware

that I’m not a big fan of chores any time of the year, but I especially want to avoid feeling like holiday gift giving is an obligation. Sadly, gift giving too easily becomes a chore for many folks these days. It’s understandable. As our families expand and our friends reproduce, our shopping lists become longer and include not only those we have been close to for years, but also the kindergarten teacher, your cousins husbands kid from a previous marriage, your mother in laws third (or fourth) new husband, your “Secret Santa” gift…you know what I’m talking about! If you’re like me, “the list” continues to grow, but the budget stays the same. So I find myself, once again, struggling to anatomize each person on “the list” in order to determine his or her perfect gift that fits within my atom sized budget. I truly want every gift that I give to have meaning, to touch someone, to teach, to excite, to help the recipient in SOME way. In years past, I’ve postponed holiday shopping until panic sinks in and I end up in a mall or a super store the week before Christmas trying to put a personal spin on the nose hair trimmers that I picked up for my dad.

Well…NOT THIS YEAR! I’m doing my homework and I’m getting the perfect gifts for everyone. AND, I’m shopping locally. From the gift for my 4 month old nephew, Wiley, to my gift for the “Secret Santa” at work, to my 3 dogs, Birdie, Josephine and Millie, I’m getting everything I need locally. For my Grandparents, who love to cook, I found The Salt Table at 51 Barnard St.This relatively new store “features free tasting samples of hundreds of different salts, seasonings, sugars, teas, dips, blends, Amish popcorn, and even local honey. Cha Bella first opened its doors to Savannah’s

Downtown Dining Scene in 2007 with the simple idea of using as much locally grown products as possible to create their dishes. The restaurant’s concept of “know your farmer, know your food,” put them at the forefront of the local food movement in Savannah. After four years of success, the popular Organic restaurant is undergoing exciting changes that will take it in a new direction more focused than ever on delivering the highest quality to its diners. I sat down with General Manager,Vikram Bhonsle and newly appointed Executive Chef Michele Jemison in order to learn about the transition and find out what the future holds for Cha Bella’s Vision. Vikram Bhonsle brings vast experience and knowledge to the table with degrees in International Culinary Arts, Hotel and Business Management and a post graduate degree in International Tourism from London. He also attended the National Holland School where he became a certified Sommelier. After moving to Savannah in 2007, Vikram began working at the Landings Club while going to school for his MBA in Finance from South University. He began working at Cha Bella in 2009 as their Banquet Manager and over the years has grown into managing the restaurant operations. He is now General Manager of the restaurant. Michele Jemison graduated from Dubrulle Culinary Institute in Vancouver, Canada and began working in restaurants throughout the US that centered on local, organic food. She moved to Savannah in 2003 and opened Red Door Catering, and a few years later, Swank Restaurant. She is a Certified Holistic Health Counselor and a professor of culinary arts at Virginia College.

“I told him, I thought I was done with the restaurant business.” This power house team will be running the restaurant moving forward. “It’s a good marriage for us,” says Vikram, who will be running operations, while Michele is in charge of the kitchen and purchasing. With co-founder Matt Rohmer stepping away from the restaurant in order to spend more time on outside business ventures, the decision was made that Cha Bella needed a new Chef with experience in local organic food. Vikram tells me, “I needed someone with a fire in their belly who would bring a fresh perspective to help take the concept to the next level.”

“...Now, it’s Like Top Chef every day!” The search didn’t take long when one of the restaurant’s vendors, Jamie Barr from Blue Marlin International Seafood suggested to the owners that they should contact Michele. She laughs as she recounts the day Jamie called her about the opportunity. “I told him, I thought I was done with the restaurant business.” After closing Swank Restaurant, Michele began studying at the Institute for Integrative Nutrition and was also gearing up to teach at Virginia College in the Fall. She wanted to focus more on the health aspect of nutrition with her new career path as a Counselor, but when she met with Vikram, they hit it off immediately and she knew it was the right move. -Continued on the next page. “When you come to eat here, you know what you are getting is pure.” Chef Michele develops the menu and nightly specials at Cha Bella out of the fresh, seasonal ingredients that are available locally. “Now, it’s Like Top Chef every day!” she jokes. She continues to describe how important it is for her to be close with the food that is coming in the door so that she knows exactly what is being delivered to the guest’s table. The team’s goal is to continue to become as green as possible, using as close to 100% local product as they can for every aspect of the business. This is a goal that both Vikram and Michele admit is a huge responsibility requiring a strong commitment to follow through with those sustainable practices. “It’s almost impossible to be 100% local, certain products are not available to us in Georgia, but we are going to strive to be as close to that as we can,Vikram says.

Walker and Oaktree Organic Farms supply a fresh variety of the specialty organic produce to the restaurant and wholesome organic chicken and meats come from Ashley Farm Chickens and White Marble Farms. Cha Bella’s Fettuccini Pasta is made from scratch in-house and is one of their trademark dishes. All of the seasonal desserts are also homemade in house, with the exception of their gelato, which is produced by Joel Caplan of Café Gelatohhh in City Market and is completely organic. Due to these close personal relationships, they are able to produce such treats as a Sweet Potato Gelato. Cha Bella provides Joel with the fresh produce, and out of that, he is able to produce the type of seasonal and local dessert that continues to uphold the standards of the restaurant. They are also working hard to increase education of organic and local food practices with their employees, creating an environment for change. “When we receive product in house, we show our employees what it looks like, how to cut it and how to cook it. We want our team to feel invested in the concept that the restaurant stands on, and in doing it will develop their social consciousness. Then they can take their product knowledge and provide education for our guests.”

According to Vikram, the number of local farmers and producers has been steadily increasing over the past few years and the trend to increase production has brought food costs down, making it more affordable and easier than ever to use local growers and producers. Cha Bella selectively works with the very best local food producers within a regional distance where the food can be brought direct to the restaurant from its harvest and used fresh in the kitchen. The menu includes cheeses from Sweet Grass Farms and Flat Creek Lodge where the cows never receive growth hormones or unnecessary antibiotics.

For loyal followers of Cha Bella, there are plenty of long time favorites available to enjoy. Staple menu items such as Shrimp Risotto are traditional cuisine at the restaurant along with their homemade Fettuccini. “The very nature of those dishes makes them easy to come home to. Their flavors can be adapted to suit seasonal ingredients and we want to always include those items.” The current Fall selection includes organic options for Vegetarians, Vegans as well as Gluten Free items. There are fresh salad options and fresh seafood, pork, chicken and more. Vikram and Michele encourage previous guests to return to try their Cha Bella Favorites and experience the new flavors and quality of the food. Promising guests that “When you come to eat here, you know what you are getting is pure.”


sweet potato gnocchi Ingredients: 2 lbs sweet potatoes 1 cup goat cheese 1 tsp salt 1 tsp ground cinnamon 1 tsp ground nutmeg 2 cups all purpose flour 1/2 cup flour (for work surface)

Preheat your oven to 400 degrees Fahrenheit. Pierce sweet potatoes and cook in the oven for 50 minutes. After they have cooked, remove from oven and allow them to cool. Scoop out the sweet potatoes, separating them from the flesh, then mash. Measure exactly 2 cups of flour and mix with mashed sweet potatoes, goat cheese, spices and salt, to form into a dough. Lightly flour your work surface and form the dough into 6 balls. Roll out each ball into about a 12 inch rope. Cut each rope into 1 inch pieces. Press your thumb into each piece to make an indentation. Lay out all the pieces onto a baking sheet. Now, bring a large pot of salted water to boil. Add gnocchi to the pot in batches and cook for about 5 minutes until they are floating and firm to the bite. Remove them with a slotted spoon and set aside.

with sage butter brown sauce Ingredients: 1 stick unsalted butter 1/2 tsp black pepper

15 fresh sage leaves 1 tsp salt

Melt the butter in a sautĂŠ pan over medium heat. Add sage leaves, salt and pepper, then cook the mixture until golden brown. Toss the cooked gnocchi into the butter mixture over a medium heat. Remove from heat, plate, and garnish with sage leaves.

coffee shops also offer tea, and the most obvious and popular example of this is the popularity of chai, the traditional spiced milk based tea of India. In addition to chai, some coffee shops also use tea in fruit smoothies and often have excellent iced tea selections. Our house made Mango-Berry Iced Tea, for example, outsells regular iced tea by far. On the surface, it may seem that tea is a “new� thing, and certainly the greater variety of tea based beverages and culinary uses of tea is enjoying a big increase acceptance both locally and nationwide. Even so, the history of tea in this country goes back to its founding. Most of us recall learning about the Boston Tea Party and the significance it played in rallying colonial support to break away from England. Many of the teas that were popular in colonial America are still popular today: Earl Grey, Pinhead Gunpowder, Oolong, Bohea, Lapsang Souchong, and Darjeeling. Many of these teas are available in local tea rooms and coffee shops.

fter shopping for groceries recently, I was struck by the number of bottled, ready to drink teas now available. The same is evident when you look at how much space is dedicated to bottled tea in convenience stores and any other place you might purchase a bottled drink. Consider also the number of bottled water options and it is evident that some of the space formerly devoted exclusively to soda is now shared with other beverage options. An increase in teas offered at bars, restaurants and coffee shops is also a trend that continues to expand. I do not know if the greater number of non-carbonated options is result of increased health awareness or a desire to try new things. Either way, the number of tea options is amazing. Bars and restaurants where creative, experienced mixologists are always searching for new taste experiences have embraced tea as an important flavor component. Many of those same restaurants are finding ways to bring new flavors to food by using tea. Most


Ginger-Oolong Simple Syrup Makes about 1 cup

Ingredients 1 cup granulated sugar 1 ¼ cups water A few drops fresh lemon juice 3 quarter sized slices fresh ginger 1 tablespoon loose-leaf Oolong tea leaves

Directions Combine the sugar, water, juice, and ginger in a saucepan. Stir the mixture and bring to a boil over high heat. Reduce the heat and simmer, stirring to dissolve all the sugar and the mixture becomes slightly syrupy. Add the tea leaves and simmer for a minute longer. Remove the pan from the heat and cool completely. Strain and discard the ginger and tea leaves.The syrup can be stored in an airtight container for up to two weeks.

The top 3 producers of tea in the world are China, India, and Sri Lanka. ”Orange Pekoe” usually used for iced tea, is actually not a type, flavor, or color of the tea, it is the grade or the size of the processed tea leaves. About 80% of tea consumed in the U.S. is iced tea.

The holidays are upon us, therefore it is time to eat, drink and be merry!

U

nfortunately many of us may no longer be in the financial situation to indulge in elaborate libations on frequent a basis. A fall back has been to go out and buy your favorite spirit, go home, add a favorite mixer of your choice and call it a night. I’m here to help you create your own institute of drinkology. The internet is a great tool for finding information about whatever recipe, preparation method, or spirit you desire. The downside, to the world wide web, is that there is so much information available that it is tough to know where to begin. Here is a best practices guide to help you begin to become the star of your very own bar. the bartender vs. the drink slinger Understanding the difference between a good bartender and a bad bartender is essential. A good bartender will methodically and conscientiously add the ingredients with precision, stir or shake the mixture with ice while feeling for the right chill

of the metal shaker, taste for proper strength and balance, then strain into a glass with fresh ice. A bad bartender will pour recklessly, shaking the drink with ice too long or not long enough, and carelessly place the drink in front of you while never even giving a second thought to the process.

what is a cocktail? A cocktail can be as complex or simple as you want to make it, but nonetheless requires a specific balance of the basic components. A traditional cocktail includes a base alcohol, a sweetener and an acid. More elaborate libations use infused syrups, cordials, bitters, vermouths, or muddled fruits. If you would like to research the different types of bartending philosophies here are a few phrases that will guide you on your internet search: Pre-Repeal Rivivalists, Neo-Classicists, Farm-toGlass Movement, Liquid Locavores, Minimalists, Molecular Mixologists, and Faux Tropicalists.

home base The base is your choice of spirit (i.e. whisky-scotch, whiskybourbon, vodka, gin, tequila, rum, brandy). Your selection really comes down to your preference. It’s your bar so let it be a reflection of your personality. If you are hosting a party, know your guests preferences. A good host will always have at least one selection of the listed spirits.

how sweet it is The sweet component in any given cocktail can be very simple or extremely dynamic. Simple syrup is essential for any bar, and the mixture is as elementary as the name. Bring a pot of water to a boil and add equal parts sugar, then stir until dissolved. Demerara


Syrup is 2 parts Turbinado Sugar (aka “Sugar in the Raw” ) and 1 part water. During the holidays, I like making a Christmas syrup: add all spice and cinnamon to the boiling simple syrup and let it steep for 30 min. It is delicious in hot tea, with sweet tea vodka, or with a bourbon and an orange bitters. Cordials or liqueurs can also be used as a substitute or complement to the syrup. Just remember that if sweet components are added, there must be a counterbalance of bitter or acid. Usually, equal parts of both will create balance within your drink. Unfortunately cordials can be very expensive. If you want to be economically savvy, buy a bottle and split it with a friend. A glass bottle with a pour spout is ideal for such a purpose, and can be found at your local kitchen supply store.

the bitter truth As a bartender one question I was asked more than any other was, “What are bitters?” Simply put, bitters are pure grain alcohol that has been infused with various herbs, spices, or fruits and diluted with water. During prohibition, bitters were one of the few alcoholic substances allowed to be imported into the United States. It was administered with a prescription because of its medicinal qualities. Perhaps rightly so, a few dashes of bitters with soda seems to be the perfect remedy for an upset stomach, nausea, or a hangover. Angostura, Peychaud’s and Fee Brothers are three common types of bitters that are available at Johnnie Ganem’s or Habersham Beverage. Another bittering agent is Vermouth, a fortified aromatized wine. The practice of aromatized wine dates back to the Ancient Greeks. Historically this was done to mask the taste of poor wine. It also proved to be an effective form of early, homeopathic medicine. Unfortunately, vermouth has fallen out of fashion due to the excessive use of low quality selections. I’m here to tell you there is no substitute for a good vermouth! I highly recommend Dolin, which is a high quality French Vermouth that is available in three types; Dry (used in vodka or gin martinis), Rouge (used in Manhattans), and Blanc (which is perfect as an apertif with soda and an orange wedge).

general rules Use ice only once (i.e. if you shake/stir with ice you should always strain over fresh ice).Do not over muddle fresh herbs or citrus fruits with rinds; doing so will increase the bitterness of the libation. One should also add ice to the shaker or glass last to avoid excess dilution. The shaker should be 2/3 - 3/4 full of ice: If you have too little it will not chill properly, and will over dilute your drink.

hangover prevention Hangovers will cause your friends to curse you

the next morning and will also minimize your productivity in general. So, here are a few guidelines: Begin by drinking plenty of water in order to stay hydrated. Also, drink high quality spirits to avoid excessive impurities. You may think that drinking cheap booze will save you money, but undoubtedly it will cost you in the morning. Finally, minimize the amount of refined sugar you ingest, and always use fresh fruit juice instead of the standard, commercial mixers. A few good substitutions for common, highsugar syrups: Replace triple sec with fresh squeezed oranges and simple syrup. Fresh lime juice and simple syrup can be used in lieu of Rose’s Lime Cordial. Your ‘sweet-and-sour’ mixer (used in margaritas and collins drinks) should always be fresh, as well equal parts lemon and lime juice, simple syrup, and water.

last call Building a bar at home can be fun and inexpensive, just follow a few simple rules: Your bar is a reflection of your identity! Do some research, find a philosophy that you identify with and be innovative. Keep it fresh! Everything from the juices to the ideas. Find a partner in crime. In order to keep the cost at a minimum, split up the cordials, share recipes, ideas, and failures. Finally, have fun and don’t be afraid to make a drink that tastes bad. Every “great” cocktail was preceded by numerous failures. So trial and error is the only way to learn. If you follow these guidelines, you will surely impress your friends while not depressing your bank account.
