Savannah is a City Full of Color!

In observance of February being Black History Month, we decided we would share a few stories about some of our favorite local people of color and then a few more stories of folks who are also quite “colorful” in their own regard! Savannah is, without a doubt, a city with quite a bit of color. Starting with the homes that line the streets of the historic district, to the bountiful art displayed everywhere you turn and of course the people. It’s one of the reasons that I fell in love with this city the first time I ever came to visit and decided to plant roots here on that same day.

Regardless of where your roots are, -what matters is that once you become a Savannahian, it usually sticks. Like my own, the stories we share in this issue are about people who have traversed all around this globe, but decided to settle down in this beautiful city of color. These are stories of success and are rooted in the history and the preservation of culture. From cousins Theo and Latoya of Café Florie, keeping their grandmothers recipes alive; to the husband and wife team of Frali Gourmet, who continue to keep alive the old world tradition of making Italian foods from scratch; or Samantha Claar and her preservation of the Gullah culture through artistic mediums; and of Jamaican born bartender and caterer, Marlon Morgan, who is living the American dream and shares with us a bit about himself and some tasty drink recipes too! Black History Month reminds me not only about the struggles and achievements of prominent African Americans like Martin Luther King or Fredrick Douglas, but also of the stories of everyday Americans who add an essential and vibrant color to the quilt that is our collective culture we experience today. It is my desire to continue to shine whatever spotlight our publication can on those people of our community that add vibrancy and value to our conscienceness. Not only during cultural heritage months, but all year long, if there is someone out there that is making a difference – they will always have Well FED as a voice of praise. We are a voice to help those whose speech should be heard and whose story should be told. Won’t you help us in this effort? aybe you went on the Tour de Coop last November, maybe you’ve seen your neighbor’s backyard flock, or read an article in the NY Times, or have seen them in the news. City, suburban, or wherever you live— backyard chickens are all the rage. Now you’re considering having a few of your own for the tastiest eggs in the world from your well fed, humanely cared for flock. What’s next? Deciding the breed that best suits your needs is the first step. Before you buy anything consider your motivation for keeping chickens. This could be for eggs (but what color egg?); an ornamental yet useful pet; or docile birds that allow your kids (and you) to handle them. Meat birds also lay eggs and can be docile too if you have the courage to have a relationship with them first! The coming chart will give you an idea, but I encourage you to research on your own and start with MyPetChicken.com for extremely

good information and resource for supplies and mailorder chicks. But first a word on mail order chicks. Not all—but perhaps most—mail-order hatcheries handle their chicks as a commodity, and some even dump their male chicks into dumpsters still alive. The female chicks (biddies), and occasionally male chicks get shipped out in boxes the same day as hatched, which allows them to survive a one-day shipping time without food or water as they’re still living on a bit of egg yolk inside their bodies. My next batch of spring chicks will be from local sources, which are small-scale breeders who handle their birds with care and kindness. I’ve learned of two such breeders who post on the Savannah Backyard Chicken Facebook group, through which you can easily connect with local chicken keepers and farmers. The chart on the following page lists a few of the breeds available locally. Well FED

Brandy Burns has Silkies, Bantam cochins, Gold and Silver Seabright, Rhode Island Red, Maran and even peacocks and ducks. She hatches eggs year round and can be reached in Statesboro at 912-212-6032 and by email at rbmceel@yahoo.com. Most of these birds can be bought for four to eight dollars each depending on age and breed. The only thing to be concerned about is that these breeders are too small to be able to offer vaccinations at this time. The only problem I’ve had with unvaccinated birds is with Merricks Disease, which is deadly, contagious and incurable. Out of 25 years of keeping chickens, I’ve probably owned over 400 birds, and only a handful of those succumbed to the disease— but it’s no fun to watch them get sick, and have to humanely put them out of misery. One local source for vaccinated chicks is Victory Feed and Seed, but of course they’re ordered from large hatcheries who may or may not have humane practices. Another source of unvaccinated chicks is Economy Feed and Seed; they’ll order vaccinated chicks upon request. Both of these stores offer supplies and feed, as does Hester & Zipperer.

Housing

Build it before buying your birds! The coop only has to be big enough to afford about three or four square feet per bird, plus a safe-from-predators exercise area of the same dimensions. If you have five birds they’ll need a total of 30–40 square feet of predatorproof coop plus yard. I surround mine with an electric

wire—works like a charm! Otherwise, if they’re freeranging during the day, they’ll have to be closed up at night and opened back up in the morning to prevent raccoons, opossums, rats, owls and such from feasting on them as they roost—they’re helplessly blind at night. They prefer to roost up high at night on a dowel that fits their feet, about 3/4–1” diameter. They’ll need one nesting box per five birds. Hanging watering and feeding containers are best; this keeps them from spilling and wasting it as much or kicking dirt all in it as they scratch for spilled pieces. I also hang a smaller feeder with ocean-ground sea shells from Tybee for extra calcium they need for strong egg shells. Look for free coop plans online at CityGirlFarming.com.

Feeding

Chickens are omnivores and will eat anything they can swallow if it’s soft (greens, vegetables), crunchy (roaches), juicy (tadpoles, minnows), and tasty (table scraps). They should also be fed a laying crumble or pellet that is nutritionally formulated for egg-layers, or a grower ration for meat birds; the more variety of fresh, whole foods the better. You can save on your feed-store bill if you supplement their diets with these other foods. I even grow a cover crop that I harvest daily for them of chickweed and clover in the winter,

5 chickens + 20 square feet of hen house (or larger) + 20 square feet of yard (or larger) + 21 cups food (per day) + 70 cups water (per day) + sunshine, happiness, health and safety day and night) + a sprinkling of chicken scratch, calcium, corn and misc scraps and bugs and stuff _______________________ = 2-3 dozen eggs per week www.citygirlfarming.com and buckwheat, water hyacinth and garden weeds all summer. See above for a handy formula I found on one of the most informative how-to sites I’ve seen.

Heat

When you first get your chicks, they’ll have to stay in a heated box, cage, bathtub (be creative) for the first two to six weeks depending on the season you buy them. If it’s summertime, two weeks with a heat lamp is more than enough; in February, at least six weeks or until they have their true feathers—they will “feather-out” within about our to six weeks depending on the breed, this is when they can go without the added heat. Tony Varney, a local chicken keeper featured on the coop tour two years ago, recommends using a red-colored bulb for the heat source. It prevents them from pecking at each other in close quarters, and allows them to sleep without a glaring white light that’s on 24/7. Bedding

Pine chips (not cedar, too aromatic), shredded paper, newspaper that’s wrinkled up so they don’t slip and slide—anything that can be easily cleaned as growing chicks poop a LOT! Speaking of which, be sure to monitor their little baby bottoms as sometimes the poop can get caught in their downy feathers and cake up back there which can clog up the works and kill them.You can clean any caked matter off with a warm, damp paper towel.

Chick Food

I like to use the unmedicated starter feed for game birds. It’s recommended to keep them on starter-grower until they start laying eggs at six to nine months of age, then switch to the laying ration. Of course, all the while, giving them free choice of the fresh foods mentioned previously. They’ll need access to sand or soil, crushed sea shells, for their digestive health as well—gotta have some grit in the ol’ gizzard!

Water

The screw-on type of waterer for which you supply your own quart jar works really well. They can’t walk in it. Keep it fresh as food; bedding and poop gets kicked into it and spoils.

Love

Handle them with care, but handle them frequently if you want tame pet-like birds. They’ll give you years of pleasure in the culinary, entertainment and companionship categories. Just do your homework, source them locally if you can, and use common sense; they’re living beings that will soon cluck, flutter and lay their way into your heart. Well FED

Old World Tradition in the Heart of Savannah

ith the popularity of carbohydrate restricting diets and the increasing numbers of people with gluten allergies or Celiac’s Disease, pasta has developed an undeserved reputation as an unhealthy food option. Lisa and Franco Marra, owners of Frali Gourmet, are working to change pasta’s negative report, with their line of all natural and organic pastas, sauces and marinated vegetables made with antioxidant and cancer fighting ingredients. Frali Gourmet makes products using super foods such as spinach, beets and even chocolate with gluten free options available. I recently had the pleasure to tour the factory and meet Lisa and Franco, along with their oldest son Matteo, the “Pastafarian.” As I talked with the family, I discovered that the Frali Gourmet is not only a combination of Franco and Lisa’s names; it is the crowning achievement of their lifelong culinary journey together.

“I think we were born in this business."

“I think we were born in this business,” says owner Lisa Marra. For her husband Franco, traditional Italian Cooking has been a staple of his family for decades. In fact, his Great Grandfather,Angelo Platoni, immigrated to London by literally walking from Italy. He opened “Platones” Restaurant in London’s Russell Square which is still marked by a historic plaque to this day. Inspired by his family heritage in Italian cuisine, Franco attended culinary school in Sanremo, Italy and upon graduation, worked as a Sous Chef at the prestigious Sasse Café in Monaco, Monte Carlo. Franco’s consistency and light touch became well known amongst the likes of the famous Opera Singer, Pavarotti, as well as The Royal Family of Monaco, who frequented the restaurant often and requested Franco prepare their meals. -Continued on the next page.


Originating from Philadelphia, PA, Lisa’s culinary background originated when she worked for her mother, who owned a successful catering company in the late 1940’s and 1950’s. Lisa fondly remembers this time of her life where she learned the ropes of preparing and serving food for large groups of people. At that time, most hotels did not have their own restaurants and large events were catered by outside businesses. Therefore, Lisa and her mother catered large and small events in such famed hotels as The Waldorf Astoria in New York, serving food to celebrities such as Frank Sinatra and Dean Martin.

The couple met by chance 27 years ago while Lisa was vacationing in Italy. She had hired Franco’s cousin to teach her the Italian language and she insisted that Franco and Lisa meet. The couple married less than a year later and opened their first restaurant in 1984 located on the Italian Riviera and named it “Locanda Amici” or “The Inn of Friends.” Locanda Amici received worldwide acclaim for its authentic Italian cuisine and became an instant favorite of locals. Every restaurant owner knows that winning over the local market can be challenging and Lisa tells me that, “Italians won’t lie; they just won’t eat your food if they don’t like it.We had lines extending out the door just to get a table. That is when we knew, we were doing something right.” Lisa and Franco owned the popular Locanda Amici restaurant for 14 years before Lisa began to desire a change for her family. The couple made the decision to move to New Jersey, where they could be closer to Lisa’s family. In 1997, the couple opened their second restaurant named “Mistral.” in Tomes River, NJ. The restaurant did not flourish as the couple had hoped so they began to explore other opportunities for their family. Although Franco could accept any of the offers he was receiving from around the world, it was a popular Italian Restaurant in Savannah named “Il Pasticcio” that peeked his interest. The restaurant was thrilled to offer him the position of head chef where his challenge would be to revamp the restaurant’s menu and concept and Lisa was also hired to develop the catering side of the business. Within the couples’ first year of working for the restaurant, USA today listed Il Pasticcio as one of the Top 10 Italian Restaurants in the country. After working at the successful restaurant for eleven years, Il Pasticcio closed, forcing the Marras to reinvent themselves once again. At the same time, Lisa was diagnosed with aggressive breast cancer, meaning she needed to focus on beating the disease, and knowing they did not want to build another restaurant, the family began brainstorming for new business ideas. Lisa’s diagnosis inspired her to learn about cancer fighting foods that she could incorporate into her daily diet. She discovered that vegetables such as beets, bell peppers and spinach contain amazing antioxidant properties that combat cancer and she started using them as the ingredients in her homemade pasta.


“Italians won’t lie; they just won’t eat your food if they don’t like it..." It was then that Lisa realized she had an amazing concept that other busy s could appreciate, and Frali Gourmet was born. The couple got to work making their all natural products and began searching for places to sell them. Stores such as Smith Brother’s Supermarket and Brighter Day Foods were two of the earliest supporters and they also developed a loyal following at the local Farmer’s Market. Almost two years later, Frali Gourmet can be found at many locations throughout Savannah and in 2011, the company partnered with Drew Ambos at Ambos Seafood to work on distributing to even more locations. Lisa reminisces about the day her youngest son; Alessandro called to tell her that his friend’s family used their pastas! “We thought THAT was cool,” she tells me. Soon, Frali Gourmet can be found on the shelves at major retailers such as Trader Joe’s, Whole Foods and Costco. While touring the Frali Gourmet Store, the amazing aromas and fresh vegetables reminded me of my own grandmother’s kitchen. I was treated to my first (but definitely not my last) taste of Franco’s amazing Gourmet

Roasted Pepper Salsa Spread along with Melanzane Sott`olio or eggplant marinated in olive oil. I was impressed by the large collection of available products such as Lobster Ravioli and Spinach Fusilli, and I enjoyed discovering items like Peach Gnocchetti and Chocolate Conchiglie. There are gluten free pastas available along with the variety of fresh sauces and marinated vegetables. Frali Gourmet’s mission is to educate busy parents on the important concepts of eating well and teaching them how to prepare foods naturally. Lisa is proud to announce that she is now completely Cancer free and the couple is enthusiastic about the future of the business; Telling me that the recipe to their success is based on one principle, “Never, Never, Never, Give Up.”

A Look at Southern Black History, in Full Color An Interview with artist, Samantha Claar, and her works on the Gullah Peoples WF: Please tell us more about your history as an artist? SC: My artistic history is a lifelong love of beautiful things. My Mother was a graphic artist with severe rheumatoid arthritis, who continued to paint long after her hands had become twisted and gnarled. My earliest memories include Mother working at her art desk. I consider myself to be 'Mother taught' in that I have never had a formal art education and yet I produce a lot of images with Mother memories of how she painted. She is certainly with me hovering in the background of my art. When I moved to Tybee in 2002 I began to really experience life through a paintbrush‌Color is one of the best things in life and I use it generously and with total disregard for any rules about it. My work announces that its happy before you are close enough to really see what it is.. and "I love the colors that you use" is often the first thing people say.

WF: What was it about the Gullah culture that inspired you to produce this series? SC: I painted fantastical cats and furniture for a long time and was quite happy. Then I started dreaming these people and they just wouldn't leave me alone. I know it sounds hokey, but they came to me and demanded to be put on paper. I had never done any human figure work and kept thinking this is going to be a disaster. But, I bought some artist trading cards and every morning I'd get up and do pen and ink drawings of all my visitors. This was the end of 2008. Following a visit to the Owens-Thomas House, I got up the next morning and started a 5 ft by 6 ft canvas which became my first full length human figures in "Come With Me".These women are saying goodbye on the grounds of the OTH.. the stables and slave quarters are in the background. One is dressed for traveling and one is a domestic. I know their whole story, but everyone who experiences the painting has a definite story they tell them. I cannot tell you how I knew they were Gullah.. I just did. Then I started to educate myself about the culture.


WF: As February is Black History Month, do you feel that the Gullah culture has been properly represented in this holiday? SC: I think that I am not the only person who has been sent in this direction.The Gullah way of life is completely endangered and everything that we do to preserve any vestige of that culture is a plus. Black History is a huge story and the Gullah peoples are a facet that has been obscured in the big picture. Gullah is indigenous to the Low Country and it is up to us to salvage all we can just as we do for all endangered life when we are made aware of what is going on. The other thing that has become a pressure point to me is the lack of credit that the Gullah have received for so many things that we value in our "Southern Culture". I know that this message is there in my paintings and so it should be. WF: What's next for you as an artist? SC: I am an Officer with the Friends of African American Art (FAAA) at the Telfair Museum. FAAA is planning a huge event for January 2013, Gullah Faces & Gullah Places. It will be themed around "Forty Acres and a Mule" to commemorate the anniversary of General Sherman's Field order which was supposed to launch

the Gullah into ownership of sustainable family farms. I envision Gullah Faces & Gullah Places as being an inclusive opportunity for our huge art community to participate in educating [people] about the importance the Gullah people [continue to play] in our lives and the necessity of preserving that heritage and celebrating it. I have people crammed in line that want out onto canvas, so The Gullah Living series is a long way from over. In fact, I think I'm going to start doing artist trading cards (ATC's) early morning again so I won't feel so clogged up. These are really pushy people I'm dealing with! They have been waiting a long time and now I need to get a move on‌ I will [also] have work at the Savannah Sewing Academy & Fine Art Gallery for 'Sisters Weekend' Feb. 10th and I am the featured artist in February at the Jewish Educational Alliance on Abercorn. I hope to see your Well FED readers at one of these functions and share my Gullah Living world with them. Fitness for Fido? Regular Exercise for Your Dog is an Important Part of Overall Health by Kelly Nelson As we start the new year motivated to make this one better than the last, we should be thoughtful of ways to make our dogs lives better as well. In addition to a healthy diet, exercise is critical for our overall health and the health of our pooches. We know that through regular exercise we can manage our weight, strengthen our heart, improve our agility, and decreases our stress levels. The same can be said for your dog. In addition, most destructive behaviors such as chewing and digging are done out of boredom. The way to curb boredom is activity.

Many people consider letting their dog out in the backyard for a little while adequate activity, but that’s just not true. Most dogs need 30 to 60 minutes of controlled, vigorous activity daily, just like most people do. So why not incorporate your exercise with theirs? For instance, walking, jogging, biking, fetching, and swimming are a great way to provide needed exercise for both you and your dog. Nothing beats the convenience of exercising in your own neighborhood, but travelling the same route on your daily journeys can get a bit dull. Thankfully there are several ways to keep your efforts fresh and fun for you and your dog. Here are some great ideas for you: • Fort Pulaski – This is a favorite spot for my dogs and I. There are three beautiful dog friendly trails that range in length from ¼ mile to 2 miles. Entrance to Ft. Pulaski is $5 per person. Keep your receipt as it allows you entrance for an additional 6 days. Free days are also available: National Park Week (4/21-4/29), Get Outdoors Day (6/09), National Public Lands Day (9/29), and Veteran’s Day Weekend (11/10-11/12).

• Skidaway Island State Park – There’s SO much to do here! In addition to camping and picnicking, there are two great trails to hike with your dog. Great day trip! • Jekyll Island – About an hour and a half south, Jekyll Island is an amazing and beautiful spot that welcomes dogs. Running on the beach is one of my dogs’ favorite activities and also allows them the opportunity to swim a bit. Another great day trip! • Downtown – I live in midtown, but like to get my girls downtown for a walk at least once a week. I park at the south end of Forsythe and walk north. The activity level of downtown Savannah is perfect for stimulating my dogs’ brains while they work out. The sounds, smells and socializing make this a very well rounded workout. Although some of the spots mentioned above are better suited as a planned day trip and not your daily routine, you can still stay in your comfort zone and create newness with a few simple tricks. • Walk different routes in your own neighborhood • Go to a neighboring community for a change of pace • Try different activities with your dog such as walking, jogging and biking

Farro Risotto Farro… one of my all-time favorite superfoods! Looks a lot like barley,sometimes also called spelt, but is in fact an ancient relation to modern wheat and originated in Italy. It is said that it contributed to the rise of the Roman Empire because the soldiers ate it, and it made them so strong. It is still grown there in the Garfagnana mountains of Tuscany. It is also now grown a lot closer to our home, by Anson Mills, in Columbia, SC, who has brought back and produced many other near-extinct grains such as Carolina Gold Rice. They have a very interesting background story of their own. There are many ways to cook and enjoy farro: soups, salads, side grain dishes and cakes,… this risotto is both deliciously hearty, yet elegant enough for a fancy dinner. Perfect for Valentine’s Day! Versatile to go with surf and turf, roasted or grilled poultry, and hearty vegetables (mushrooms would be great!).

Recipe by Chef Wendy Armstrong of Thrive A Carryout Cafe 2 oz olive oil or butter 1 T minced garlic ¼ cup finely diced onion Splash white wine 1 1/2 cups farro 3-4 cups vegetable stock Salt & pepper to taste Optional: greens like spinach or broccoli raab, finishing of cream and cheese Warm oil, garlic, and onions together in a pot until fragrant. Add farro and sauté for a couple minutes, stirring, to toast the grains a bit. Add wine, then vegetable stock, salt, and pepper. Unlike rice risotto, you do not need to stir it constantly while cooking, just simmer, stir once in while, and add more liquid if necessary. Cook for 40-60 minutes, till done. Farro grains will be slightly cracked, but still al dente and chewy. Now, to achieve the “risotto creaminess” you can put ¼ of the farro into a blender and puree it till smooth with more liquid. Mix all together. If desired, add greens, herbs, and finish with a splash or cream and a handful of parmagiana. Yum! Thrive a Carryout Café is Savannah’s only Certified Green Restaurant and Caterer. “Everyone loves fried chicken;” A quintessential Southern comfort food that’s savory, down home flavor makes us all think of our grandma’s cooking. Well, in most cases. For restaurant owner and chef Theo Smith, mama knows best. “When it comes to fried chicken, it’s mom’s only.” Cousin and fellow business partner and chef, Latoya Rivers, wouldn’t disagree. With deep family roots in the culinary industry, it was seemingly destined for the two to carry on the tradition and, not to mention, their delicious family recipes. Latoya spent most of her youth in Hartford, Connecticut, where her parents owned a soul food restaurant for over 30 years.

“We have a long line of cooks in the family. Parents, grandparents, uncles…we’ve been in the restaurant business forever.” Her family decided to move back to their roots in Savannah when Latoya was in high school. She graduated from the University of Georgia with a business degree and worked for a food distributing company for some time after. Theo, born in Savannah, moved to New Jersey when he was young. Inspired by his mother, grandmother, Julia Child and The Galloping Gourmet, he acquired his culinary skills at a young age. “I remember making Baked Alaska for Thanksgiving as a boy.” After traveling the world for years pursuing his modeling and photography careers, Theo went to culinary school near Quebec, where he braved the brutal 50 below winters. After years of running his own restaurant, he traded in his parka and snow mobile to join his cousin in the warm and humid South. The cousins’ soul-filled journey began four years ago when Theo’s taste buds met Latoya’s delectable sweet potato pound cake. “We need to sell this,” he thought. Following the tasty revelation, they met at the heart of their family gatherings and business meetings, the kitchen table, to establish their first culinary endeavor together: Gateaux de la Toya (Gateaux is French for cakes). Today they sell over 30 different kinds of seasonal pound cakes at a number of farmers markets in the Savannah area, including the Forsyth Farmers Market on Saturdays. (You can also order them online anytime of the week at gateauxdelatoya.com.) Their most popular pound cakes flavors include the classic Sour Cream, Organic Sweet Potato and Apple Pie. Each recipe combines their rich Southern heritage, travels and experiences with an unexpected creative twist. The one-of-a-kind cakes were an instant hit in the Low Country.


THE BIRTH OF FLORIE Latoya and Theo grew up surrounded by a family that loves nothing more than to entertain and cook for others. “We are a food family.” Theo remembers growing up in the 60s, “My parents would have tons of guests over and my mom would cook stuff like pigs feet for everyone.” Latoya and Theo wanted to be able to share their recipes with even more people. Soon enough, they found themselves back at the kitchen table, brainstorming names for their most newest venture: Café Florie, in honor of their grandmothers Florence and Lurie. Dubbed Savannah’s latest soul food destination, Café Florie’s “New Southern” style differentiates itself from others. Their simple, healthy and organic approach is complemented with an international twist. You’re probably asking yourself, “How can Southern soul food be healthy?” Latoya and Theo have never seen it any other way; always made with the freshest seasonal ingredients. Through generations of family cooks and farmers, they have always been taught to use what is readily available. Theo believes this is how everyone should eat. “It’s how our grandparents and greatgrandparents ate. You ate what you grew. No canned food or freezers.” Latoya’s grandparents, Savannah farmers, sold their produce at what is known today as City Market in the 1950s. She wants to expose people to the Southern cooking she grew up eating. “We were raised to eat real food.” At their restaurant, Latoya and Theo understand the need to be health conscious. They substitute the not-so-healthy ingredients such as butter and sugar with things like soybean and olive oils, stevia and honey to name a few. For example, Café Florie’s uses a homemade avocado puree instead of mayonnaise on their fried chicken club sandwich. They also flavor their chicken salad with currants on homemade bread. For Latoya and Theo, making things in house is not only healthier but tastier too. They are known for their homemade bread, mayonnaises, pesto and hummus. Restaurant-goers especially love the family’s made-from-scratch biscuits and Belgian style Johnnie Fries. Café Florie’s produce is certified organic and locally grown. “We have close relationships with the farmers. We get to see where our produce actually comes from.” Quality ingredients are key in everything on the

menu- from Aunt Tilly’s meatloaf sandwich and potato salad to Granny’s cornbread recipe, which they have yet to offer at the restaurant. Like most family recipes, Latoya and Theo’s were passed down by word of mouth. Since Granny’s passing, they have worked hard to prepare cornbread exactly like hers. “We won’t serve cornbread until we get the recipe perfect.” Latoya and Theo’s hard work and dedication is evident. “It’s a learning experience,” Theo says as he rubs his self-proclaimed “dishpan hands” together. They have put their all into Café Florie; from perfecting the menu to spending months renovating the cozy, vintagechic space. Their goal is to bring people together, “reintroduce” them to Southern cuisine and provide an overall memorable experience. Merely two months in business, they have already achieved this and more.

WHAT’S NEXT? Cafe Florie is branching out- soon their specialty teas, mayonnaises, baked goods and other products will be sold at a store near you. HOW TO MAKE IT:

� 2 tablespoons of extra virgin olive oil (evoo) � 4 cups seasonal vegetables; carrots, zucchini, squash, onions, kale, tomatoes, bell peppers, and spinach � 1 tablespoon dried basil � 1 clove garlic, minced � 1 tablespoon lemon juice or white wine (optional) � salt & pepper to taste � 4-6 house made kaiser rolls, or on your favorite bread

1. Select your vegetables, wash and cut them in a rough chop, cut the kale in ribbons 2. Pre-heat a large sauté pan with the extra virgin olive oil add the onions, peppers, carrots, zucchini, squash, and cook for 2-3 minutes, add garlic, then add the kale and spinach. (add lemon juice or white wine, optional) (add the spinach at the finish) 3. Cook all ingredients until just tender, then add the dried basil 4. Cut your rolls in half; spread them with hummus, avocado puree, a little extra virgin olive oil & balsamic vinegar, or even pesto. Serve with a fresh organic mixed green salad, or even Johnnie Fries. Recipe serves 4 to 6 people. Also works for a cocktail party, with crostini, serving 2030 guests. There are many factors that go into making a great cup of coffee. Quality of bean and roast, proper grind size, water to coffee ratio and brew method are all crucial in making a fantastic brew. However, if you don’t begin with fresh coffee, there’s only so far the rest can take you. Let’s take a look at coffee freshness, how to find the freshest coffee and how to keep it fresh once it’s in your hands.

A Bean For Every Season The coffee we drink is the seed of a fruit, and like all crops it has a growing season. Those seasons vary depending on the location. For example, Central American coffees are currently in the middle of harvest; with new coffees rolling into the U.S. around February or March depending on the region the coffee was grown. Green coffee holds up pretty well, but as the new season approaches, this past season’s coffees (the current Centrals you are drinking) will begin to lose some of their freshness. It’s not hugely noticeable, but there is a difference. Some countries like Colombia and Kenya are blessed with optimal equator placement and can enjoy multiple fruiting seasons. Hurray! As long as you’re drinking coffee grown from the most recent crop you should be good. How do you know? Ask your roaster. They will be able to tell you if it’s a current or past crop.

After It’s Roasted, You’re Toasted Once a green coffee has gone through the roasting process its window of freshness is greatly diminished. After coffee is roasted, it continues to give off gasses. As the release of the gasses start to diminish the coffee begins to oxidize. The result is the old coffee smell and taste we’ve all experienced. For the best cup of coffee, you should try to use your beans within two weeks of being roasted. How do you know when it was roasted? A coffee roaster that really cares about the freshness of their product will let their customer know. At Cup to Cup we put the roast date prominently on the front of the bag.

To Grind or Not to Grind Grinding coffee can be a hassle. It’s one more step, and a noisy one at that, between you and your morning happiness. Unfortunately, ground coffee stales so quickly that anything other than grinding right before you brew will have serious effect on the quality of your cup. Remember what we said about oxidation? Grinding coffee exposes an even greater amount of the coffee surface area to oxygen, resulting in a faster staling process. To insure your freshest cup of coffee, invest in a grinder. It’s one of the simplest and most effective ways to guarantee a great cup.


Storage Wars When we store coffee our main goal is to minimize the bean’s exposure to oxygen. There are many different methods and techniques to storing coffee, some more effective than others. First let’s look at packaging. Unfortunately the more ecofriendly coffee storage solutions are the worst at keeping coffee fresh. That’s okay! Just transfer the beans into an airtight container when you get home. Storing in plastic is okay, as long as you keep the container clean, since the coffee oils will absorb into the container if it’s not washed regularly. Glass is also good for storage, but exposure to sunlight and heat is damaging to the bean, so if you store in glass, keep those containers in a cool dark place like a cabinet. Let’s address the refrigerator versus the freezer debate. Here’s my advice: do not store coffee in your refrigerator. Just don’t do it. Since coffee tends to absorb smells and odors, storing it in the refrigerator is simply a bad idea. How about the freezer? Storing your coffee in the freezer has one distinct advantage over the refrigerator; it halts the degassing process in the beans, keeping them fresher longer. However, there are rules to follow when storing in the freezer. You must use an airtight container and you can only do it once! Taking coffee in and out of the freezer negatively impacts the moisture content of the bean which greatly affects the flavor of the coffee. If you are fortunate enough to receive multiple bags of coffee as gifts, freezing may be a good option for you. Simply divide your beans into weekly portions in airtight containers and freeze. When you are ready for more coffee, just take one container out. Genius, I know. In coffee, like many things in life, it’s the little things that make the difference between fantastic and mediocre. Follow these rules and you’ll be well on your way to having some of the best brew around.

ingredients 1 1/2 ounce white rum 2 ounce dark rum 3 ounce pineapple juice 1 ounce orange juice 1 ounce mango juice 1 ounce peach juice 1/2 ounce sweet and sour mix 1/4 ounce of Meyers rum
