publisher’s dish We are in love with Local Food! This February I am reminded of how much I love Savannah and its local food scene. The Forsyth Farmer’s Market reopens this month and our friends at Local Farm Bag have already started including strawberries in their deliveries to people’s door steps. By the time you read this, Restaurant Week will have come to a close and most restaurants in the Historic District are already preparing for the upcoming tourist season. My friend Joel at Café Gelatohhh is planning his expansion into a fresh market and café. The guys at Form are deep in negotiations for a new second business location and just down the street, Green Truck still has a regular line all the way down the sidewalk. A bit further up Habersham, The Foundry should be opening up any day now, serving up some locally roasted Cup to Cup Coffee; while Jen Jenkins of Foxy Loxy is tearing it up at her recently opened second coffee shop called The Coffee Fox. Speaking of coffee, every time I stop by Perc, it seems like there are always more and more bags of beans than I ever saw before and roaster Philip Brown still can’t seem to rest, even with the help of more employees! Everywhere I turn, local business is thriving – contrary to the recent rash of local businesses closing. I remember just a few years ago, when we were all starting our businesses and would venture to say that we were all also wondering if we would make it. Well here we are and not only are we growing, but we are setting the example for the types of businesses that I believe Savannah not only wants, but needs. Local food is the future and local food is what is happening right now – in virtually every major city across the nation, local food is on the rise. So what exactly is local food? Well, it can mean a great many things; aside from the obvious definition of food that is produced locally; to me, local food also encompasses locally owned independent establishments. Without them, what we would be left with is the same few dozen restaurants and Starbucks that we find in city after city - shopping center after shopping center, etc. It is the local restaurants and shops that not only give a city its character, but in terms of local food, they are the primary supporters of locally produced food as well. By supporting our local food producers, purveyors and the establishments that use their products, we are not only ensuring the vibrancy of our city but also contributing more to our local economy. So this February, when you are thinking of the things you love, don’t forget to think about the local businesses you love as well. Its up to all of us to show some love for that which we cherish. I for one, love our local food scene and look forward to sharing it with you as often as I can.

ust along the outskirts of the city of Savannah, adjacent to what some of us may know as the old State Farmersâ&#x20AC;&#x2122; Market in Garden City, is where partners (in life and work), Andrew Morris and Julie Markey, planted their business roots more than four years ago. As residents of the Lowcountry for quite a few years and gardening enthusiasts, they sensed the lack of a local source for specialty gardening and hydroponics supplies. Combining their passions for all things green and healthy including gardening, cooking, and environmentally conscious living, the two South Carolinians put it upon themselves to fill the gap and so began Savannah Hydroponics & Organics. Situated on a quiet lot, their store not only carries anything and everything you need to start and maintain a hydroponic or traditional garden, but also an array of other interesting products including home brew kits and supplies. The owners of Savannah Hydroponics & Organics, Julie and Andrew. For many, beginning your own hydroponic garden or trying out an alternative growing method can be intimidating and confusing, but never fear, Julie and Andrew are here. The Perks Flexibility. Hydroponic gardens can be grown outdoors or indoors (with the use of grow lights) and are great for those with limited space as several plants can be grown together in a small area. They can also be used where traditional crop production isn’t possible to produce quality, dependable, locally grown foods. Without further ado, let’s get down and eh, not dirty, with an intro to hydroponics written by the Savannah Hydroponics and Organics’ duo, Andrew and Julie.

What is Hydroponics? Hydroponics is a branch of agriculture in which plants are grown without soil, but instead with nutrient enriched water. In fact, the term hydroponics literally means “working water”. Not only can you produce food through use of hydroponic systems just about anywhere, but plants grown hydroponically have the capacity to mature up to 25% faster and produce 30% more on average than the same variety grown in soil. Why is that, you ask? The reason is simple; plants that are grown in a nutrientrich solution simply don’t have to spend their energy seeking out food and so they can more easily thrive.

Stability. As light and temperature are controlled by the grower and not the natural environment, plants are generally able to produce higher yields and can be harvested at a quicker rate. Also hydroponic gardens rarely contend with soil-borne disease or weeds. Water Efficiency. Some hydroponic systems only use about 10% of the water required for traditional soil gardening due to the fact that nutrient solutions are typically recycled and plants only use what they need.

How it Works It may be hard to believe for some, especially those with a “black thumb”, but plants actually need very little to grow. It was discovered as far back as the mid 17th century (and possibly even thousands of years ago), that even soil is not necessary for plant growth and ultimately serves as a reservoir for a plants’ necessary nutrients. There are a variety of hydroponic techniques used today, but essentially they all are based upon the same principles and can be divided into two categories; solution culture or medium culture. Medium culture meaning that a medium (other than soil, such as rockwool or perlite) is used and solution culture referring to the method of growing without a medium. There are 6 basic types of hydroponic systems; Deep Water Culture (or Continuous Aeration Technique), Ebb and Flow (aka Flood and Drain) , Drip, Wick, Aeroponic and finally Nutrient Film Technique (aka NFT). There are several variations of these basic types of systems, but all hydroponic methods are a variation or combination of these six.

On the next page is a step by step guide to creating your own beginner’s Wick sytem. This exact project was accomplished by elementary age kids as part of the Little Growers’ Program at the Bluffton Farmers’ market. If they can do it, so can you!

The materials necessary for this project may be found laying around your home or garage, but if not, you can always check with your local hydroponic store (hint, hint). Please feel free to give us a call with any questions, we’ll be happy to help you get on your way to starting your own hydroponic garden.

DIY Wick System

An automatic watering planter project for soil and hydroponic plants.

1. Gather plastic containers of varied sizes. The larger of two containers will be used as the reservoir and the smaller used as the planter. The idea is to nest the smaller container inside the larger to leave space underneath for your nutrient solution. We prefer buckets or plastic drinking cups. You can also use large storage totes, or cups from yogurt, sour cream, etc. If available, a 3”- 3.75” net pot* works well with a standard plastic cup. For large plants, a 3 gallon bucket fits into a 5 gallon bucket perfectly for this project. 2. Poke holes in the smaller container to use as the planter. If using a net cup this step will not be necessary. The holes will allow drainage and also provide a place to pull your wick through. 3. Locate your wick. Material like a cotton t-shirt cut into a narrow 1/2” strip is all that is necessary to absorb moisture, and wick it up against gravity towards the plant. We have also found that certain synthetic rope of 1/4” or less works very well. To test material for the ability to wick moisture, just put an inch of water in the bottom of a bucket. Take your dry wick material and drape over the bucket edge into the water. If in a few minutes the water has soaked the entire wick, you have found good material. Measure the distance from the bottom of your larger cup/bucket, up to about half way up the height of the smaller planting container. 4. With

wick in place, fill smaller container with planting medium which can be any planting soil with good drainage. Green Thumb Tip: Adding perlite or expanded clay pellets will help medium from getting water logged. The planter can also be treated hydroponically by using an inert medium, which doesn’t provide the plant with any nutrients as opposed to soil based medium. When using hydroponic mediums the need for proper pH and balanced fertilizer solutions becomes critical.

5. As long as the lower reservoir has water, the plant will never dry out. An optional overflow hole can be drilled into the side of the reservoir to avoid overfilling and roots getting water logged. There should always be air space between bottom of planter and water level in reservoir. Potting mixes that are rich in fertilizer or organic compost can be watered with plain water. When growing hydroponically, plants will demand a mineral rich hydroponic nutrient solution to maintain aggressive growth. This is due to the inert mediums used in hydroponics. Flushing planter and reservoir monthly with plain water is beneficial to avoid salt build up from fertilizers. Several containers can be linked together to share reservoir space and increase time between water changes. Enjoy the hot summer days knowing your plants are happy and watered, even when you are out of town.

s the students prepared to go outside to work in the school’s garden, a puzzled looking boy, new to the school, asked the question, “What is a garden?”. His sincere question sent a roll of snickers through the class, as his fellow classmates prepared themselves for the what they already knew as a treat of learning while playing in the dirt. Their Farm to School Program mentor quickly quieted their laughs and assured the questioning student that he would soon find out what a garden was. The school garden at Shuman Elementary was created to give the students a special place at school they could call their own. Two years ago, Sandra Cason, the current SavannahChatham PTA Council President, saw “beyond the dead carpet of weeds, the rusted bicycle racks, and the ugly, noisy air conditioner units” in a grassy space between two class wings and envisioned a spot that would make the school a special place for its students. “To describe it as an eyesore is an understatement”, Sandra recalls. A grant, written by Scott Boylston of Emergent Structures, secured $7,500 from the IKEA Foundation. This seed money was used to fertilize the dream of a healthy green space for learning; building raised beds and a pergola. Over a 15 month period, a team of visionaries donated time, sweat equity, and various resources to ensure the dead space became a living green space the students could use to experience academic learning as they connect with “where food really comes from”. A ribbon cutting ceremony officially opening the school’s garden was held in June 2012. Care of the garden is divided between several teachers. Ms. McAbee’s 2nd grade class uses the Victory Garden plot and the colonial herb garden to reinforce their history/social studies lessons. Working with the garden inspired second grader, Skylar Jmia Lawton, to create a postcard reflecting the statewide Jimmy Carter NHS Education Program Poster Contest’s theme “Digging Peanuts in Plains: Home of the 39th President”. She won 2nd place in her age group out of 8,000 entries and was able to meet President Jimmy Carter. Her artwork will be displayed at the Plains High School Museum through May 2013.

Shuman Elementary’s garden is used for many other things other than just teaching students about gardening, plants, or food. Students observe the basic geometry of nature in the “math” garden. In another section, you can find the “music” garden which is cared for by Ms. Moore’s music students. This section of the garden is used to grow gourds and other plants that can be used as natural musical instruments. The butterfly garden is cared for by the 5th grade special needs students. Ms. Fuller’s gifted students, as well as Ms. Rosario’s kindergarten students also help out with care of the garden. As the students interact with the garden, whether it be by getting their hands dirty or being inspired by it for an art project, they also learn important lessons on life and death as they watch the cycle of life play out in the plants. A school garden is not only a place where vegetables or pretty flowers grow, it is a place for students to grow too.

ver take a look at your pet’s dried kibble and wonder it was made? The majority of today’s pet foods are extruded, though more and more pet foods are making the transition to baking their kibble. So what exactly is extrusion? Combing heat and high pressure, extrusion pushes a pre-mixed dough through a shaping die, which simultaneously cooks and produces the individual pieces of kibble. After cooling, the kibble is sprayed with a flavor-enhancing coating of fat. Extrusion became the primary form of mass pet food production beginning in the 1950s, due to its efficiency and lack of expense, and is still used to produce kibble today.

There are several great, healthy pet foods available that use the extrusion process, although some pet parents are turning to an alternative process that is growing in popularity. This process is baking. It is essentially the same way you would cook at home, just with much larger ovens. To learn more about the process of baking pet foods, we contacted Daron Matsuura of Lotus Pet Foods, a company which has been exclusively baking their pet food since 2003. “We believe in baking because it produces a healthier, more flavorful pet food,” says Daron. It’s true, baked pet foods retain almost 100% of their initial vitamins, as opposed to a 40% loss in vitamins which is typical amongst the average extruded pet food. Baking also allows a manufacturer to use quality, fresh meat in their formulas instead of rendered meat meals. Using fresh meat makes a more easily digested food, and provides better nutrition than meat meals as 100% of protein and essential amino acids are retained in the baking process. -Continued on Next Page wellf edsava nna h. c om | feed 19

Most commercial kibble gets a final coating of fat sprayed on at the end of production to make the food more palatable for your pets. In comparison, imagine you went to a restaurant and ordered a turkey sandwich, but instead of actually putting turkey on the sandwich, they spray it with turkey-flavored fat. t’s the early-evening at FORM, a unique wine and retail gourmet space on 34th and Habersham, and some of the night’s 20-or-so guests begin to filter in for an evening of wine and food. The crowd is festive, a lively cross-section of Savannah food and drink enthusiasts. After some light conversation, everyone sits down at three long rectangular tables in the store’s main retail space. Behind the tables are scores of wine bottles, among the hundreds of vintages that the specialty shop offers. The track lighting is dimmed, the heat warm, providing an ambient, cozy setting, a refuge from the brisk cold weather outside. Glass stemware, three per person, is lined on a mat in front of each seat, waiting for co-owner Claude Auerbach to begin each pour. Tonight’s wine selections -- a Venetian prosecco, a Spanish sauvignon blanc and a California red varietal. Auerbach generously pours three glasses for each guest, one for each course. Tonight’s special ingredient -- cheese.

“Cheese is just part of the culinary journey. If you really enjoy food, but don’t enjoy cheese, there’s something wrong,” Auerbach teases. “I think a lot people consider cheeses to be a luxury - it shouldn’t be.” He brings out a plate of three cheeses on a rectangular plate -- a creamy Green Hill brie/ camembert amalgam from Thomasville, Ga., a sharp, tangy Snow White goat’s milk cheddar from Wisconsin and an English cheddar. An indulgent mix of dried fruits (fig, apricot, pear, apples, cranberries) and local honey adorn the plate. And so the evening of wine and food begins. The shop, though not open for nightly dining, offers several specialty dinners and tastings each year, having done over 350 of these events in the last two years. From listening to Claude speak about wines and cheese, you can sense the passion he has for the evening’s topic. His childhood included frequent European excursions, cultivating the kind of gourmet savoir-faire and culinary appreciation that he now cherishes. “I spent a lot of time travelling as a kid,. It was a big part of my life growing up. I probably tasted more cheese and meats from Europe than most anybody else has at my age.That was a fortunate situation that was my upbringing [in] that my parents wanted to spoil me culturally, not monetarily,” says Auerbach, who grew up in Bellport, NY, on the South Shore of Long Island.

“So when other kids were hanging out at home during summers, my parents would drag me to Europe kicking and screaming. Obviously, as you get older, you realize that was quite an upbringing. It was pretty specialized.” A perfect entree into the world of cheese is FORM’s Cheese-of-the-Month Club. For $35 a month (paid in a lump sum, or in two six-month installments), patrons can sample cheeses from all over the country and the world. The choices are curated by Auerbach, who says he has never repeated a cheese. “The biggest advantage is that people can come in [to FORM] and we can teach them about cheese, how we use it, what to use it in,” says Auerbach, a graduate of Johnson & Wales in Providence, R.I. “Other than grilled cheese, there’s thousands of things that people can use it for. I’m still learning a lot of that myself.” One of the better ways for a customer to enjoy cheeses is through experimentation, especially if it means trying something new they may not have tasted before. “I think it’s like wine -- people tend to stay in the vein they are comfortable with and, beyond that, trying to get people to try things that are beyond the scope of the norm is probably the best thing about having this store,” he says. “We give you personalized information, and you speak to somebody that not only knows a lot about the brand, but can tell you a little bit about how to use it. There has to be a comfort level there,” he says. “It’s the same thing with wine, the same thing with food. If you want information, that’s what we’re here for. We’ll spend the time with you to give you that, but you also have to be open to that [advice]. And you have to understand that there is no right or wrong -- it’s your personal taste that matters.”

Give it a try Cheese works well with dried fruits, fruited mustards, chutneys, he adds. They can also be used liberally in sauces and as a component of stuffed meats and poultry. Auerbach prefers a classic French recipe, the type you might find in a classic French cooking tome like Escoffier’s Le Guide Culinaire. “I think that the best item you could ever use cheese for is in an omelette,” he notes. “A classically made French omelette is probably one of the most enjoyable foods things if it’s done right, where it’s actually left a little bit runny, which is the way it’s supposed to be done, also very light and fluffy.” Start with a good piece of bread. Auerbach recommends baguettes, ciabattas, a rosemary/sea salt foccaccia or a kalamata olive bread. And then add your cheeses.Virtually any kind will work, though some are better for melting than others. “Those types of open-faced grilled cheeses are wonderful,” he says.

Let it Breathe If possible, avoid wrapping cheese in plastic or having it shrink-wrapped. While an airtight seal may preserve a cheese’s freshness, it’s okay -- even advisable -- for it to have some exposure to air and moisture. Instead wrap it in parchment or cheese paper, which FORM uses and sells at its store. -Continued on Next Page

Though refrigerator maintenance trains us to throw out things that have mold, don’t toss the block of cheese for a beauty mark-sized swatch of mold. That’s what cheese is supposed to do.

At any given time, FORM carries between 40 to 60 cheeses in the store, some familiar, some not so much. Auerbach curates the cheese selection, many of which have won awards from the American Cheese Scoeity and World Cheese Awards.

“It’s a living organism,” says Auerbach. If you find a bit of mold has appeared on your cheese, simply cut away the molded part and rewrap the remaining portion.

If you’ve not heard about a particular cheese, ask your cheesemonger about it. Tell him what you like, what you usually eat.

“One of the purposes behind a good cheese store is that cheeses can age over the course of time,” says Auerbach. “If I have a cheese that lasts in the store for over a month, it’ll change character from the beginning to the end.”

“That’s our hope, that when people come in here, they really do ask us those questions, and trust our opinion because that’s what we do,” says Auerbach, who prefers goat’s milk cheeses like the Humboldt Fog. “Between [the four of us], we have over 100 years of experience in this industry, and that’s important that people can ask for a recommendation, get to know us and get to know what the business is all about.”

If you happen to find green or black mold, however, please discard the remaining cheese immediately. “Green mold is bad. Black mold is even worse,” he says. In that case, you should check the temperature setting’s in your refrigerator’s crisper. Or, if you have any access to a wine cellar, that would be a suitable climate-controlled environment to store your cheese.

Why? Because I get to work with my wife! I am sure there are some of you out there thinking I could never work with my spouse, especially if it’s in a small, sometimes hot, stressful kitchen full of sharp objects, but it seems to work for us. I have had the privilege of working with the beautiful and talented Kelly Yambor for the past 15 years. She eventually got sweet on me so I made her an honest woman and we have been happily married for the past 6 years. We have certain seasonal ingredients we gravitate towards and when it gets a bit cooler, and the days get shorter, it’s oyster time. We get ours from 2 sources, “Spatking” which is a local oyster company, and Russo’s Seafood. For most people, Russo’s would be your best bet. We get our green baby vidalias and lemons from Davis Produce and our cilantro from Heritage Farms. This recipe is simple enough for anyone to do at home and all you need is your ingredients and a food processor. You can bake or broil them. Top with panko for a nice crunchy texture if you like. Spatking oysters with herb butter

ingredients (ser ves 3)

• Place butter, chipotles, green onions, cilantro, lemon juice, salt, and garlic in a food processor or blender and puree. • Top each oyster on the half-shell with one tablespoon softened butter. • Divide and sprinkle each of the oysters with the capers and panko, about a half teaspoon of each, on top of each oyster. • Roast in a 450 degree oven for approximately 4-7 minutes until hot.
