Happy Anniversary, Well FED
This holiday season I have so much to be thankful for. This issue marks the one year anniversary of the magazine and I’d like to take this opportunity to reflect on the story of Well FED, not just as a magazine - but as an organization and the people behind it.
I remember when Whitney and I took our very first trip here to Savannah. We were sitting in Forsyth Park and immediately I knew that this is where we should live. We made the decision almost instantly and by the time made we had made the drive back down to Jacksonville, we had also decided that we were both going to quit our jobs, start something entirely new, and we were going to get started right away. We started saving our money immediately.Then, we went to the library and read anything we could get our hands on that could teach us about designing and publishing a magazine. By the time we made the move to Savannah in the summer of last year, we were pretty much set on doing this all by ourselves, just the two of us. I remember putting an ad on Craigslist for a graphic design artist and thinking how awesome it would be if we actually got one. Of course we found out very soon that this was Savannah and there was definitely no shortage of starving graphic design artists! This would pretty much set the tone for the entire year to come. Time and time again, we have been so blessed to have so many people ready and willing to help us move forward. From graphic design artists, to photographers, writers, volunteers, business owners, and even government officials - all have shown so much generosity and confidence in us that we cannot even begin to express how thankful we are. Many of our readers do not realize that this magazine is created primarily by volunteers. These wonderful people believe in the message, believe in the cause, and most humbling, believe in Whitney and myself. So it is with this sense of duty, that even as the size and scope of the magazine continues to grow, we continue to strive and maintain our sense of humility and responsibility to our community and those connected to the organization. Over the past year, it has not always been easy, as we have continually tried to uphold certain values and express them through our publication and community actions. So I would like to use this page right now to state to anyone who cares to listen: I promise to all of you in the Well FED Family and our readers, clients, everyone - that no matter how much we grow over this next year, I will always remember who got us to where we are and will always remember to stay true to the values that we set forth upon inception. Unfortunately, I also promised that I would only devote one page to the publisher’s letter, so I don’t have nearly enough space to thank everyone personally! I would hope that you all know who you are though and I will make it a point over the course of this next year to figure out a way to best express all my gratitude. Rene and Whitney moved to Savannah from Jacksonville, FL in August 2010. Rene, a chef, and Whitney, an art teacher, both foodies, combined their passions to create Savannah’s only food, dining, and healthy living magazine. They have two dogs (also the Well FED mascots), Willoughby and Max, and will be tying the knot in dowtown Savannah in March.
Kelly has been an organic gardener/ farmer in Savannah since 1985, earning her Permaculture Design Certificate in 2003, and achieving Master Gardener in 2005. She has worked as a Horticulture Therapist, owned a successful gardening business, and founded the Savannah Urban Garden Alliance (SUGA) –“providing access to local healthy food one garden at a time.”
A 5th-generation Northern Californian, Cushing moved to Savannah 3 years ago to help bring the “fresh” cocktail movement to the South. She currently tends bar by night and dreams of lobbying against landfills by day. By writing the occasional feature for WellFED, she hopes to convince readers of the advantages of quality imbibing, while preaching against the sins of Styrofoam and lamenting the lack of a city-wide recycling program.

uilding community with food as the centerpiece is what Well FED, the Savannah Urban Garden Alliance, and several other organizations in our city are all about.When volunteers come out to the Growing Edge garden for a work day, they often are surprised at how much fun it is to work together, both with friends and with strangers, who by the end of the three hours, are also new friends. At other gardens, Starfish community garden and Tybee community garden, new friendships are forged as they work toward a common goal of growing nutritional food and keeping beautiful gardens. Then there’s the chicken-keeping community: SUGA’s 3rd annual Tour de Coop is right around the corner on November 20th, from 1:00 pm–5:00 pm Sunday afternoon. We’ll ride an Old Savannah Tours trolley around midtown to see how people are keeping chickens in the city. Several folks on previous tours who were only playing with the idea of keeping chickens are now on this year’s tour as proud chicken keepers. Mark the date and meet us in front of the Bean (the Sentient Bean, that is) and look for more details in these pages.

SUGA also promotes growing food in your own yards as a wonderful family activity all ages can enjoy, and the quality, freshness and nutrition is unsurpassed by any other source (assuming you’re using organic methods). Look for upcoming classes offered to the community through the Growing Edge Educational Garden. Also, I’ll be teaching in the late winter and early spring two organic gardening basics classes through the continuing education department of Georgia Southern. They will take place at Skidaway Farms community garden and a classroom at Skidaway Island Methodist Church. There has been so much progress in the localsustainable food movement in our country and even in our Deep South Slow-vannah region this past year. For example, the Nutrition Committee members of the Healthy Savannah Initiative have added new members and re- formed into our area’s first Savannah Chatham Food Policy Council co-chaired by Teri Schell and Paula Kreissler. We work on local policy to make it easier to grow, buy and sell local sustainably grown food. The Transition Town initiative has come to our town, thanks to David-Tree Malpass, with ideas on how to become resilient to a future that not’s dependant on fossil fuels, and to become resilient to the changes in climate that are already underway.

Currently our corporate agribusiness that supplies most of our food uses over 55 barrels of oil per person per year to produce and transport this food. What happens when the price of oil keeps rising and eventually the oil runs out? I say we’d better have plan B well under way! In short, we’d better have local food resources. Any doubters out there about the correlation of food and oil should take a look at his graph. The information is based on the world Food Price Index data from the UN Food and Agriculture Organization (FAO) and the monthly average oil price from the US Energy Information Agency (EIA). The good news is that plan B is already happening with the Savannah Local Food Collaborative’s Forsyth Farmers Market (FFM) that doubles EBT spending value, and connects local farmers to local buyers and vice versa—know your farmer, know your food is a great motto! Kristin Russell and Teri Schell have been the driving force behind bringing this vibrant market to Savannah.
Plan B also looks like the Southeastern Green Network (SoGreen), which is “building a coalition to create a rich and sustainable environment.” Cynthia Hayes, Executive Director of SoGreen, works hard on food policy issues, educating African American farmers in sustainable agriculture practices, and much, much more. Many of the farmers you know at the FFM are a part of her network. Savannah now has an official Slow Food group promoting cultural, local, sustainable eating. They are growing, gathering, cooking and sharing foods, traditions around foods and building relationships nurtured by good, clean and fair food for all. For the upcoming holidays and for 2012, I challenge you with each bite you take to please consider where your food came from, how and by whom it was grown, how it traveled to your table and who you’ll share it with. In this way, vote with your fork for a more sustainable future in regards to this most basic human need— FOOD.

The basics on the effects of gluten and how to avoid it By Murphy Basore If you have ever participated in sports you’ve probably been told to ‘carbo-load’ before competing. A tennis superstar has proven this to not always be the best advice. For years, Novak Djokovic suffered from fatigue, stomach and breathing issues effecting not only his health but also his performance. Djokovic, 24, later discovered the root of these problems was his sensitivity to gluten, the protein found in grains like wheat, barley and rye. Ever since the Serbian champ began sporting a new diet he’s had his best season yet reaping titles and a long streak of victories, all leading up to his win at Wimbledon and ranking as the #1 tennis player in the world. Like Djokovic, many people with sensitivities to gluten go undiagnosed for years. The reason being that many of the symptoms vary widely and can be mistaken for other illnesses. I can attest to this myself. For years I experienced many of the symptoms associated with gluten sensitivity but was never successfully diagnosed. I met with several specialists who all agreed I was too young to be sick and tired of being sick and tired. Unlike most college kids, the majority of my time was spent in doctors offices or sick in bed, and not because I was out late the night before. Finally, after hearing my symptoms, a nutritionist suggested I get tested for food allergies. Voilà! Upon the big revelation, I felt I had been left high and dry – “I have a sensitivity to gluten. Now what do I do?” First, I did what any normal person would do – Google. I was overwhelmed with information, tips and recipes and created a new hobby for myself in learning about anything pertaining to gluten. Through the Internet, books and meeting with specialists and others affected, I was able to get a better understanding of what it is like living a gluten-free lifestyle.
Most common symptoms: • Gastrointestinal issues (abdominal pain, bloating, diarrhea, constipation) • Malnutrition or anemia
• Chronic fatigue • Body and joint aches • Frequent infections • Headaches • Depression, anxiety or mood swings
Gluten intolerance is the most undiagnosed disorder in the US. Now, merely three months later, I may not be landing world-renowned titles, but I feel great. While I am still mastering my new lifestyle, I’ll share with you the basics of what I have learned. What is gluten and where is it found? Gluten [gloo-ten] is a combination of proteins found naturally in grains such as wheat, barley and rye. It is the “glue” that holds ingredients together and gives dough its texture and elasticity. Gluten can be found in things like bread, cake, pasta, pizza and beer. “I would love to paint some chickens!” Linda Warner Constantino is beaming. It’s like she’s telling the details of a life goal.
“My sister and business partner has six chickens. I can’t have chickens where I live. My husband thought I was crazy. I really thought they would be a good addition to our lives.” She continues with such enthusiasm that I find myself wanting to own and paint some chickens. It’s not only chickens. The edible painting adventures keep coming,
“This farm that I go to in Italy, they have an endangered pig that is so delicious it’s called the The Cinta Senese Pig. They’re very distinctive looking. I have done paintings of them and I will do more and one day I was out painting and they broke out and they came into where I was painting and some of them were kind of large and I wasn’t really sure what to do. I just kind of did the “Dog Whisper” kind of thing like “I’m in charge. You guys can be here but I’m in charge!” So I kind of intimidated them and they just kind of walked around me and ate.” In addition to being a story teller and pig whisperer Linda is a painter, an illustrator and in an entrepreneurial partnership with her sister (Dona Warner) the President and artist of linadona botanica. She is also an Adobe certified expert in Photoshop. She’s a Savannah College of Art and Design Illustration professor.
“I’m interested on a daily basis in the process of just constantly creating things.” She delves into what drives her as an artist. “I do get up in the morning anxious to paint. Because it does run in your head a lot. It needs to. I feel I need to and I want to!”

What does she “Need to and want to” create? Paintings of delicious pigs of course, and those chickens;
“Sometimes I just really enjoy painting the individual eggplant or radicchio. I’ve always liked fruits and vegetables. I like the shapes of them. I’m really taken with their design. I see them abstractly and very realistically.” While art is obviously a passion for Linda it’s also a business. That’s the realm of linadona botanica (www.linadonabotanica.com).
“Food is a big industry. There are lots of places where food imagery is appropriate. We have all of this stuff on the food channel. There’s magazines, websites. We (linadona botanica) do table top items, place mats, dishes, menus, aprons, shopping bags, posters, art on the walls for restaurants, wine bottle labels…”

things, and sensitizing people to the garden as a part of the home, as a part of life, is a positive reinforced message. Why not surround yourself with these beautiful things?”
Mostly she works in oils and water colors and the painting-of-the-edible does not stop with the subject matter.
“I use a type of water colors that use honey as part of the binding process. It does have a different quality. I have used walnut oil to clean my brushes. I took walnut oil with me to Italy!” Her subject matter even expands to kitchenware.
“I love the kitchen at this place Spannocchia (Italy) where I go to. I love the stove. I painted all the frying pans hanging up over the stove. I did that from life. I just sat in the kitchen and painted. To me they were beautiful.”
But it isn’t just painting and illustrating the edible: There is of course eating…
“I like being able to straddle between making the food and painting the food. My favorite thing is too make some spaghetti sauce and put it on the stove. I made roast chicken this weekend and just the smell of good food in my home is really inspiring. That’s one of the really nice things about having a studio in your home.” …Eating well and healthfully of course.
“A lot of my stuff comes out of a love of organic foods and things like that. There’s something about the purity of vegetables and fruits in their original form. Surrounding yourself with natural things, and sensitizing people to the garden as a part of the home, as a part of life, is a positive reinforced message. Why not surround yourself with these beautiful things?”
“Why can’t we buy more turnips with the leaves on them? Things are so trimmed out at the grocery store. I got broccoli leaves this big this weekend from the farmer’s market. They were huge. I painted them. And then I chiffonaded them, and cooked them with garlic and olive oil. I put some roasted red peppers in there and some scallions and served it over pasta and it was delicious. The farmer told me that broccoli leaves have the most nutrition in them”.

“Students can create the cover of a magazine, or they can make fun characters out of food for a children’s magazine encouraging kids to eat fruits and vegetables. In the spring she teaches a specialty illustration class: Illustrating the Edible of which she says: “It’s sort of become my baby!”

“Usually when you meld your passion with your work you get a good result.”
What advice does she give to students? To artists in general?
“I always tell people that you should paint what it is that you love about something, what it is that interests you… It takes a lot of discipline; just continuously working at it. That’s the first step. You just keep painting and painting and then all of the sudden you start doing better work and you can’t even really explain why. But you just know that you’re at a higher tier than where you were before. A lot of it is your point of view. You have to have a point of view as an artist. By Kelly J Nelson To me, food is very intimate. Food sustains and comforts us. We celebrate and mourn with food. We consume food with those closest to us. Feeding loved ones and sharing food is something that I do as a gesture of love. So it’s natural for me to want to share a few bites with my three dogs, because I love them. There are several different schools of thought regarding feeding your dog “people” food. Some folks are whole heartedly against it, while others only give their dog’s homemade grub. Most of us are somewhere in the middle. To ensure that I completely understood the good, the bad and the ugly about sharing my “food love” with my pack, I did a bit of research and discovered a whole world of healthy treats that I can share with them. Keep in mind that high quality commercial dog foods are designed with the nutritional needs specific to dogs. The ASPCA recommends that “people” food treats should make up no more that 10% of your dogs daily diet and that the rest should come from a nutritionally balanced dog food. Just like us humans, dogs benefit from the nutrients found in (some) raw fruits and veggies, and lean meats are a good source of protein. Here’s a list of delicious “people” food that has been approved by my dogs, Birdie, Josephine and Mildred:
Bananas As soon as they see me start peeling one, they all sit. They LOVE bananas! This delicious treat also provides lots of potassium, fiber and magnesium – all which are important nutrients for dogs. In addition, bananas contain vitamin B6 and Vitamin C. Cantaloupe
Another fan favorite. Cantaloupe is a healthy alternative to a dog biscuit. It’s low fat, high in Vitamins A and C and just plain tasty!
Yogurt
Just like humans, dogs benefit from probiotics as well. My dogs like to eat yogurt by itself, but you can try low-fat yogurt mixed in with their regular food. Yogurt is a big winner at my house. Avoid anything high in sugar, however.
Green Beans These are a great “treat” substitute for dogs that have a little too much junk in their trunk. Green Beans are really filling and have way less calories than store bought “dog treats”. Well FED

Swiss Chard Who knew? According to Dr. Roschelle Heuberger, PhD, “chard’s nutrients have the potential to maintain bone health, blood vessel integrity, eye health and immune function and benefit optimal muscle function and energy production.” Best served blanched and chopped up.
Oatmeal Served cooked and plain, oatmeal is another yummy, low-calorie and filling treat. No brown sugar, milk or butter for the pooches though…. Apples are yummy and Seedless Apple Slices crunchy and my dogs love them. They are also a good source of Vitamins A and C as well as fiber. Beware of the seeds though as they are a natural source of cyanide. While it is not likely that your dog would be negatively affected by a few seeds, the effects could accumulate over time if eaten regularly.
Willoughby and Max: Master Beggars
Salmon A great source of Omega 3 Fatty Acids, Salmon should be cooked prior to serving to your dogs. The Omega 3’s are great for skin and coat and also support the immune system. Sweet Potatoes Again referring to Dr. Roschelle Heuberger, PhD, sweet potatoes are “loaded with nutrients, such as the carotenoids and Vitamin C, in addition to some lesser known antioxidants and phytochemicals. They are high in pyridoxine, potassium, fiber and magnesium. They also are good sources of copper, iron and manganese–all essential minerals that perform myriad functions in cells, from transporting oxygen to assisting in the assembly of proteins.” Serve them up cooked and mashed or cubed. Blueberries My girls like them frozen. It’s a great summer time treat, but only a little at a time as too many may cause diarrhea. Birdie, my eldest, is eleven and has been eating broccoli, bananas, carrots, green beans and cooked meat (in moderation) for the ten years that she’s been living with me. She’s in excellent health and still has lots of energy. My gut has always told me that if I share good food with my dogs that it would be fine. I mean, I don’t give them the obvious no-no’s like chocolate, grapes, and bones (especially chicken and fish bones!). It’s just been veggies and lean meats. But once I did the research, I realized that not only is it fine, it’s good for them! As always, check with your vet before making too many dietary changes. And remember, some “people” foods are harmful to your dog. You can use the above healthy options to replace your dog’s high calorie commercial treats, or if you’re like me, you can share your “food love” straight from the dinner plate, as long as you haven’t smothered, covered, or over-spiced it (sauces, garlic, onions, salt and pepper are not recommended for the pups)! Either way, it’s a nutritious way to give your beloved dogs some much deserved affection.

Delicious Helping of Soul and Class by Katelan Cunningham
There are not many places in Savannah to indulge in fine dining fare. I’m talking about more than one fork sort of places. There’s only one place though where you can eat a multi-fork dinner of ostrich, antelope or even yak. Though some of its meats may be foreign to your tongue, Alligator Soul offers familiar tastes in a new way. In 2003, Maureen Craig and her husband Chef Hilary opened their third restaurant to carry the Alligator Soul label. Their first two being in the Seattle area and then most recently here in Savannah. Located downtown just off the corner of Broughton and Barnard, the restaurant is set in an underground grain house, circa 1885. The man behind the menu is executive chef and co-owner Chris DiNello. Maureen Craig and her late husband Hilary selected DiNello over 5 years ago to run the kitchen at Alligator Soul. His flair for specialty meats keeps customers coming back for a taste of something that they can’t get anywhere else. DiNello likes to “sneak in the unexpected, [but it’s] still approachable.” Specialty meats are so popular that he can’t keep them on the menu. If the kitchen runs out of one dish, it’s quickly replaced. Twice per season, DiNello whips up a new menu featuring brand new seasonal creations. That’s somewhere between 130 and 150 dishes each year! - Continued on page 32.

- Continued from page 27: Alligator Soul’s style is Creole-based and French-inspired. Even with the diversity of local produce coming in and new meats to prepare, DiNello stays true to the Creole influence while adding his own twist. The seasonal menus of DiNello’s new inventions keep people coming back for the ride. Much of his menu planning revolves around the produce he gets from local farmers. Cooking up new creations based on what’s available makes for a different experience for chefs and diners. “There’s always a lot of flux but that’s what’s fun about it,” DiNello said. “I think there’s a really good movement bringing restaurants and farmers together,” he said. Where local produce used to be out of the price range of restaurants needing to buy in bulk, DiNello said, “There’s starting to be more of a compromise [with prices].” Most of Alligator Soul’s suppliers are a stone throw away. So when they come in the kitchen with beautiful baby eggplants, DiNello’s makes a place for them on the menu. When you play to the strengths of the season, flavors are always vibrant and new.
“I don’t want to reinvent the wheel. I just want to give it nice rims.” Make no mistake, running a kitchen requires culinary invention and a master staff. But still DiNello says, “You have to have fun with food. You’ve got to love food.” During my short interview with him I saw his interactions with other chefs and heard him fawn over baby eggplants, so it’s clear that he does in fact love food. His passion is making dishes “someone will want to try.” And with the ten-year success of Alligator Soul, DiNello and Maureen Craig continue to do that by attracting locals and travelers who want to indulge in Southern cuisine with a twist.

DiNello proudly claims that they have one of the biggest (if not, the biggest) bourbon selections in the city. Cranberry Ginger Chutney with Rhubarb, Dried Apricot and Golden Raisins
WHAT YOU’LL NEED: 16oz Fresh or Frozen Cranberry 8oz Dried Apricots (sliced) 1 Cup Golden Raisins 2 Stalks Sliced Rhubarb 2 Cups Sugar 1/2 Cup Grated Fresh Ginger 2 Oranges; Zest and Juice ¾ Cup Apple Cider Vinegar 1 Cup : Small Diced Celery, Carrot, Red Onion ½ Cup Small Diced Jalapeno 2 TBSP Madras Curry Powder 2TBSP Garam Masala Curry Powder 1 TBSP Ground Toasted Cumin 1 TBSP Toasted Coriander Salt, Pepper, Cayenne to taste
DIRECTIONS:
1. Heat small amount of oil in heavy bottom pot over medium heat and sweat mirepoix (onions, carrots, celery, and jalapeno) until just softened. 2. Add cranberries, apricots, rhubarb, ginger, raisins, and orange zest with juice. Stir until combined. 3. Add vinegar and cook approximately 1012 minutes. 4. Add sugar and cook till dissolved and syrup has formed. Add fresh herbs and seasoning to taste. Cool to room temperature MAKES 12-16 SERVINGS

he origin of ‘liqueur’ – generally speaking, an infusion of fruits, herbs, and spices, seeds, and/or nuts macerated into a spirit base and heavily sweetened with sugar, caramel, or honey – dates well back into at least the 17th century in France. These fortified alcohols, wines, and cognacs were luxuriously supplied and taken with the elegant meals of hearty game meats and rich cream soups, fit only for kings and the aristocracy of old Europe.
Chambord, Liqueur Royale de France, the iconic French black raspberry cordial, hearkens back to such a time, when a similar concoction was prepared for King Louis XIV’s sojourns to his massive hunting lodge south of Paris in the Loire Valley. Chateau Chambord is still one of the most prominent castles in France. (The original round bottle represented a “globus cruciger” or “cross-bearing orb”, and was a symbol of archaic French royalty. It has recently been given a more stream-lined look).
While the inspiration for the product we enjoy in modern times may be based on a 17th century French spirit and is still made in the Loire Valley, it’s initial marketing and distribution is credited to an American Company based in Philadelphia who has been producing liqueurs since the late 1800’s. Although not widely published, it seems that Chambord, the brand, didn’t make an official appearance on the market until the late 1970’s or early 80’s.The owner of the Chambord brand, Brown-Forman, has also released Chambord-flavored vodka. Today this infusion of all-natural ingredients (it only has a shelf life of about 6 months) including raspberries, blackberries, black raspberries (and yes, there are such things!), currants, Madagascan vanilla, Moroccan citrus peel, honey and spices into a cognac base remains
a classic component of modern mixology. Their carefully monitored three-step infusion/ extraction process with the fruit is timeconsuming but ensures a rich, natural product that remains unparalleled in quality and subtlety of taste. It is almost protocol to use Chambord itself, shunning any of the lesser substitutes when mixing a French Martini (adding vodka and pineapple juice) or with champagne into a specialized Kir Royale, instead of the usual Crème de Cassis. The versatile syrup also finds itself a coherent component in sweet and savory cooking - perfect drizzled on ice-creams, a natural pairing with chocolates, meats, or cheeses, and appropriately complex addition to sauces or glazes. So now perhaps we may appreciate a bit more, this quality cordial fit for royalty – enjoy Chambord this holiday season, in recipe ideas such as these, knowing you’re in the company of kings ~

As we say farewell
to the summer...
and greet the cool air of the holiday season, we begin to focus on everything for which we are thankful. Of course, I am so thankful for my wife Jennifer, daughter Vivian, and our pup-Bordeaux! But being a wine lover, and writing for Well FED, I think it would be perfectly appropriate to have a little fun and express what I’m thankful for in the wine world. Several months ago, I had the opportunity to delve into the realm of Grower Champagne and gain a greater understanding of its basic form and mass production. So what is Grower Champagne? Grower Champagnes are sparkling wines made in the Champagne region of France that are produced by the same estate that owns the vineyards where the grapes are grown. In the wine industry, it’s often referred to by its playful nickname, “Farmer Fizz”. Many, myself included, love going to the farmer’s market, or even buying produce on the side of the road, where we can directly talk with the experts. Just as with fruits and vegetables, it is much more satisfying to know that a wine was grown, harvested, and bottled by a farmer or grower and sold directly to you. Simply because a large corporation has the means to parade a ‘brand name’ in magazines around the world, doesn’t guarantee substance or style or justify the acceptance of hollow markups on price. I love great juice made by humble people. Gaining a better understanding of champagne is always helpful, but so is gaining a new perspective on an old wine variety. Although the summer is long gone, I hope you didn’t miss out on the ‘Summer of Riesling’, a celebration that lasted the entire month of July. This national event was designed to showcase the real character of this misunderstood wine, and give the farmers of this grape greater exposure. You may be thinking, “Why the summer of Riesling…what happened to Chardonnay?” Well, I’m here to tell you that we can and must overcome this ridiculous notion that Riesling is always sweet. I actually believe that Riesling is more sophisticated than Chardonnay, and can be enjoyed with all styles of food. Unfortunately, Savannah didn’t participate in the event, but I recommend marking your calendar for next year’s 31 days of drinking Riesling. Start asking your favorite dining spots to participate in this event next year. I am thankful for Riesling, but even more I love to know what I’m drinking, and where it was created. Have you ever heard the phrase ‘Single Vineyard Expression’? It’s simply an expression of where the grapes were grown. That’s easily said, but not necessarily easily understood. If a Cabernet from California states that the fruit was made from California, what sense of place do you garner?

“I am thankful for Riesling, but even more I love to know what I’m drinking, and where it was created.” You simply acknowledge the fruits’ tastes. But if that same bottle stated that the fruit was from Napa Valley, you will inevitably pair the fruits’ characteristics with that Napa region. To take it even further, if that Cabernet stated that it was from Napa Valley and the grapes specifically came from the “To Kalon Vineyard”, you now find yourself appreciating fruit from one specific site. When a wine is from a specific site, the grapes TRUE character is showcased from that site and its surrounding region. I truly am grateful for the investment by winemakers in creating single vineyard site juice. Of course, we all like to know where our food comes from, so why not know where our wine comes from. And in the long run the wine producer will gain better name recognition and eventual increased popularity. It’s a win–win for everyone. Not only is it nice to know where your wine came from, but I love coming across new wines. The other day I was in a restaurant and I stumbled across a varietal that I had read about, but never tasted. To my delight it was offered by the glass. Who doesn’t like to find something new when you’re not looking? The varietal was called Welschriesling. It is a grape that carries Riesling as part of her name. But as I mentioned earlier it’s not necessarily sweet. Rather, it is driven more with ‘garden’ aromatics. It is from Austria and this particular wine “Vogelsang” is perfect for our amazing southern cuisine. It’s bright, lively acids and subtle ripe fruit is almost addictive. Its translation is ‘romantic Riesling’, which seems to fit in Savannah if you ask me. I find that enjoying austere varietals is exciting and rewarding. It allows you to expand your palate and taste outside the literal and metaphorical wine box. (Oh, and by the way the restaurant that offers it by the glass is pink. Hint, hint!) In the spirit of trying something new such as a varietal, I must mention a new sensation that is exponentially gaining popularity. Madeira, Madeira, Madeira! About two years ago, Mannie Burke, owner of the Rare Wine Company, arrived at the Old Pink House in Historical Savannah to launch the new Historical Madeira series, Savannah “Verdelho” Madeira. This launching of the
Madeira was the beginning of a local revolution. With the excitement of world class wine that had a direct tie to Savannah, the Old Pink House staff couldn’t help but make this Madeira offering a standard of service and share with the world. Given the immense popularity of the Madeira, the winemaker himself, Ricardo Freitas, had to visit the Old Pink House a year later with Mannie Burke for a special Madeira Dinner. To this day, Savannah Madeira is showcased in the old bank vault in the Planter’s Tavern in the basement of The Old Pink House. To experience these events first hand and to stumble upon great historical ties between early America, Madeira, and Savannah I must implore that you stop for a visit at the Old Pink House. As we all huddle around the fire this fall and winter, and vocalize our thanks; remember the importance of our loved ones and the events that we share in our lifetime. It just so happens that many tend to enjoy a cocktail or glass of wine during these wonderful events with those loved ones. So I encourage all of you try new ideas when it comes to beverages. Comfort is great but so is drinking outside the box. From grapes to table, and me to you!
