How to be Well FED?
Do you make a grocery list prior to heading to the store? A list that possibly includes the essentials for tonight’s dinner, tomorrow’s breakfast and that oh so needed coffee to get you through the work week? Most likely you do. In New Orleans they call this “making groceries”. But have you ever made another kind of list? A grocery list for your soul? Well, prepare to be more nourished and satisfied with your life. A grocery list for the soul could be the first step in honoring the simple needs of your inner self. This is a way to supplement your everyday list of essential material items, with those forgotten (yet also essential) activities to lift your spirit. What are the things you need in order to nourish a healthy lifestyle? Is there a park you haven’t been to in a while? Some quiet time spent alone? A good book and a front porch? An early morning gardening adventure? A simple meal with a good friend? A visit to the museum? A massage? The sound of live music? Fresh flowers within your bedroom? Many of these components, unfortunately get lost in the hustle and bustle of our daily lives. We work all day, take the kids to school or practice, run errands, clean the house, and of course check off that grocery list. But we need to remember to take a moment or two to feed ourselves, nurture our souls and stay on track to becoming well fed. Make a commitment to yourself and write down your spirit lifting activities in addition to Well Fed’s mantra of feed, eat, drink. Make it visible and achievable! Include it on that grocery list for the week and while you’re “making groceries” for the household and go make some groceries for your soul! You can make change in our food environment Look around, and you’re likely to see things you want changed. But we all can’t be fulltime advocates. We’ve seen many changes in our food environment during the last decade. For example, we have more organic food choices and more locally grown products in our restaurants and stores. Trans fats are largely gone. Those changes are in large part due to day-in, day-out contributions of many people asking – sometimes pushing – for healthier food options.
YOU CAN DO IT!
There are lots of ways you can get involved in advocating for the conditions you need to stay healthy. It doesn’t have to take a lot of time or skill. In fact, everyday advocacy can be as simple as some of these examples: * Talk it up. Share your views about nutrition information on restaurant menus or the need for a farmers market in your neighborhood. Tell your friends, write a letter to the editor or make a blog entry online.
There’s power in numbers. * Talk to the store manager. Ask for what you need to be stocked at the store.
A few years ago I tasted soy-based eggnog at a trade show. It tasted much like traditional eggnog, but with far less fat. That year when the holidays approached, I asked a manager at my local supermarket if they would stock it. They ordered some and it sold well. Now it’s available every holiday season. * Model it. Let others see you walking to work or eating an apple at lunch. Be seen ordering an entrée salad at a restaurant and walking through the supermarket with almond milk in your basket. Be open about wanting to lose weight or being a vegetarian. If you do, you’ll make it easier for others who have similar interests to speak up as well, or even follow your example. * Exercise your purse power. Support small farmers by shopping at farmers markets and roadside stands. Buy locally grown foods at the supermarket. * Support the ones who work for you. Pick a few public interest groups and donate whatever you feel you can afford. The Center for Science in the Public Interest and the Environmental Working Group are two that advocate effectively for state and federal level food policies that support health. * Tell the policymakers. Pick up the phone, write or send an email to your representatives in the General Assembly or Congress, to school administrators or the people on the boards and commissions that make decisions that affect you.
Be aware of this simple fact: Your inaction also affects the policy environment. Increase the likelihood that things will go the way you want them to. Get involved. Advocate for what you need and want, even if it’s on a personal scale. It’s the only way change has ever been made. The coffee industry provides many opportunities to make a positive difference in peoples’ lives. Yet faced with so many options, it can be difficult for a person to know the best way to help. I have a heart for helping those in need, but as a small business owner, I simply cannot afford to donate money to charitable organizations. Fortunately, the specialty coffee world provides choices to help in ways other than monetary donations. One such cause is Grounds for Health, a charity founded in 1996 by Dan Cox, the president of Coffee Enterprises and his close friend, obstetrician Dr. Francis Fote to establish cervical cancer prevention programs. “Together with our coffee cooperative partners, we break down the barriers that stand between women and preventive care—such as lack of information, transportation and the social permission she needs so she can put herself first and seek care,” reads the organization’s website. “To make sure our programs are sustainable, we invest in the education and training of community health promoters, doctors and nurses.

Cervical cancer is one of the most preventable cancers, yet remains the leading cause of cancer death among women in developing countries. Since 1996, Grounds for Health has screened over 16,000 women in coffee-growing communities for cervical cancer. Each year, Grounds for Health holds an auction where coffee importers and producers worldwide donate green unroasted coffee for auction with all proceeds going directly to Grounds for Health.When this year’s auction was announced, I knew that it was something I wanted to participate in. I also wanted to reach out to the greater Savannah community to join in as well. The Sentient Bean, a Savannah fixture near Forsyth Park for the last decade, has been a local leader in striving for ethical coffee purchases and business decisions. Knowing this, I contacted owner Kristin Russell to see if she would be interested in joining me in this project and here’s her side of the story.
The Sentient Bean concept started as an experiment -- and hopefully became a local example -- of a business model that could be profitable without relying on sweatshop labor, environmentally-destructive practices or products, and other pitfalls of international trade. Through trips to coffee cooperatives, I have seen the effects of trading, both positive and negative. Small farmers everywhere are underpaid, under-capitalized, and ultimately underappreciated, and especially so in robust coffee-growing areas. Because coffee is a valuable commodity grown for export and subject to price fluctuations, small farms and cooperatives are often manipulated, yet they continue to grow coffee because it is their only source of income. It is easy to think that selling Fair Trade coffee is enough, but really there is much more to be done. For years, coffee importers, roasters, and shops in developed countries have profited on the backs of less sophisticated small farm in other countries. Participating in the Grounds for Health auction is one small way to give a little more back. Selling Fair Trade coffee and trying to source all of the Bean’s products started as just a lofty ideal, but after 10 years in business, the lasting relationships have become equally important to me. The people I meet through the Bean are my family. My staff are like my brothers and sisters, the small farms I buy from are like aunts and uncles and I think of all the unknown growers of other products we use like second cousins. I try to do right by them as best I can, which often means baby steps, but I wouldn’t sleep well if I knew I wasn’t at least trying. There’s another aspect of this auction that hits even closer to home for me. The Bean family recently lost one of its beloved members to cervical cancer.
It was an incredibly difficult reality check when doctors diagnosed Sarah, because it is likely that had it been detected earlier she would still be alive. It is especially gut-wrenching to me because my sister is an OBGYN and I consider myself to be a fairly well-informed advocate for women’s health. I hadn’t been asking all my female employees if they are keeping up with their annual checks. I do now. It’s still not that simple, though. If you don’t have health insurance and you’ve tried to seek medical care outside of an emergency room, then you know what I’m talking about. Private clinics did not want to see Sarah because she didn’t have insurance. Public clinics did not make time to listen to her symptoms and sent her home because she was too timid to get them to listen. This cycle persisted for months as her tumor grew and the cancer spread. Enter Planned Parenthood – who listened, examined, diagnosed, and helped her start treatment within days. Then when she planned the move home to the Seattle area to continue her treatment, they helped find her care out there. So, encourage the women in your life to get checked, and if they can’t afford or get treatment, tell them about Planned Parenthood. If it’s that hard in this country, you can bet it is 10 times harder for women in coffee-growing communities. At the end of the auction, Kristin and James had secured a bid on one bag of Fair Trade Organic Coffee from the COCAFELOL cooperative in Honduras. The auction overall secured over $100,000 in donations and included 44 producers and importers and over 125 bidders. Kristin says, “When we start to sell the coffee at the store, I’m going to give the profits back to Grounds for Health. I hope to use the experience to help more women get the preventative care that Sarah couldn’t before it’s too late.” In the end, it’s every bean that counts.

Vegetarian and Vegan Dining In Savannah

According to the 2008 Vegetarian Times survey conducted by the Harris Interactive Service Bureau, 7.3 million Americans follow a vegetarian diet.+ Included in this number are 1 million vegans, who consume absolutely no animal products. A further 22.8 million Americans follow a less strict, but still vegetarian-inclined, diet. With recent documentaries such as Forks Over Knives and Food Inc. detailing the lifetime benefits of eating a plant-based diet, it’s no surprise that the Vegetarian Times study also revealed that 11.9 million nonvegetarians were “definitely interested” in switching towards a plant based diet in the future.++ In a country with a current population of 314,199,174, +++ that’s a considerable number of potential diners, but are restaurant owners paying attention? As is the case for many vegetarians and vegans who live outside of large metropolitan hubs like New York City and Los Angeles, good vegetarian and vegan dining can be difficult to find. In general, when dining out at popular chain restaurants around the country, recent additions of health conscious dishes have provided some vegetarian food options. Yet, apart from the recent addition of vegan sandwiches to the Subway sandwich menu in select US cities, vegan food in particular is rarely offered.
To be fair, most restaurants will do their best to find something suitable on their menus for diners with plant-based diet requirements or food allergies. Yet, in most cases this effort amounts to nothing more than removing cheese from a sandwich or meat from a salad. Where’s the guarantee that there won’t be hidden dairy products in sauces or dressings, or that you won’t find a hunk of beef in your vegetable stir fry which may be cooked on the same grill used for cooking meat? After conducting local research, Savannah turns out to provide a great variety of restaurants, cafés and carry out options where vegetarians and vegans are catered for and welcomed. These locally owned, health conscious and often organic based eateries rely on unique and carefully crafted menus to entice a variety of diners. While the following list is in no way exhaustive, local eateries that are doing a great job of catering for the ever-growing number of planet-based eaters in the city have been highlighted. If you thought there was no hope in truly dining out in Savannah as a vegetarian or vegan, fret no more. Hope is literally around the corner in many cases.

While they cater for vegetarians, they do not sell vegans dishes. However, all their food is made to order, which means they are happy to work with customers to cater to dietary needs. Many of the sides, like the quinoa and sweet potato salad, are vegan-friendly and there is always the option of making your own salad from the multitude of ingredients on offer. Kayak Kafe Downtown, 1 East Broughton St., 912.233.6044 Kayak Kafe is another well-known go-to cafe for vegetarians and vegans in Savannah. The chef, herself, is vegetarian and has recently added new veggie and vegan dishes to the specials menu. Due to the chef’s vegetarian background, 90% of the dishes on the menu can be made as vegan dishes if requested, making it a very reliable dining option with a wide variety of food choices. KBella Carryout Whitemarsh, 119 Charlotte Rd., 912.897.4026 KBella’s gourmet carryout meals are created from the highest quality ingredients available at the time of order, which means that the menu changes daily. However, vegetarian options are available and special requests can be made when ordering depending on other dietary needs.
Brighter Day Deli Downtown, 1102 Bull St., 912.236.4703 Situated next door to The Sentient Bean, Brighter Day Natural Foods Market is a great place to pick up a healthy deli snack while you’re on the go. The Brighter Day deli offers a wide selection of custom sandwiches, salads, main dishes, side dishes and deserts. If animal products, such as meat, cheese or eggs, are used, it will be clearly stated on the food label. Therefore, vegans can relax in the knowledge that unless stated, everything is vegan-friendly. In fact, the deli only uses Veganaise, a vegan mayonnaise, in its recipes, so don’t be scared to grab a helping of potato salad to go. Thrive Whitemarsh, 4700 Hwy.80 East, 912.898.2131 Savannah’s first green certified restaurant creates dishes from local, sustainable and organic ingredients. Thrive even has its own working vegetable garden and the vegetables grown there are showcased in many of the prepared dishes. The menu is vegetarian and vegan friendly, but changes regularly depending on the ingredients available, so don’t be scared to ask for advice on what plant-based dishes are currently on offer. Foxy Loxy Midtown, 1919 Bull St., 912.401.0543 Less an eatery and more a coffee shop, Foxy Loxy still offers great food that even vegetarians and vegans can indulge in. A variety of snacks are on offer that are vegetarian friendly, including a vegetarian soft shell taco loaded with delicious vegetables and beans that can be made vegan, if requested.The vegan brownies and vegan chocolate chip cookies are out of this world!
Starland Café / Café Zeum Midtown, 11 East 41st St., 912.443.9355 Downtown, 207 West York St., 912.790.8833 Starland Café, located in the Starland district, and Café Zeum, situated in the Jepson Center, offer new American cuisine, Italian food, and sandwiches. These cafes use locally sourced ingredients to create a tasty selection of salads, soups and paninis, many of which are vegetarian. The hummus plate and Thai soup are the only vegan items on the menus, but customers are always welcome to ask for vegan versions of salads and sandwiches. Make sure to regularly ask about the specials offered at these cafés, which can also be vegan options.
Asian Asian cuisine is a great option for bridging the gap between meat-eaters and plant-eaters. However, Asian food can have hidden ingredients such as fish and oyster sauce, so its better not to assume that just because its vegetable based that its vegetarian or vegan friendly. Fortunately, there are a few Asian restaurants in Savannah that do cater specifically for vegetarians and vegans. Ruan Thai / Aroy Jung Downtown, 17 West Broughton St., 912.231.6667 Downtown, 8 East Broughton St., 912.231.2948 These two restaurants are run by the same owners, and are well known to be vegetarian and vegan friendly. This is due to the willingness of the chefs to customize many of their dishes for plant-based eaters. Aroy Jung even has a vegan section on its menu consisting of four tofu-based entrees. Everything in these restaurants is made from scratch so if you request it, the chefs will do their best to make it according to your dietary needs.
Pakwan Southside, 7102 Abercorn St., 912.349.4261 Pakwan recently advertised their commitment to catering for vegans by announcing that vegans are welcome on their signage outside the restaurant.Their award-winning chef has created a menu consisting of many vegetarian options and every day there are at least 2 or 3 vegan dishes available on the buffet. Other great news is that a downtown location will be opening up in the near future expanding the vegetarian and vegan dining options in the historic district.
Fine Dining If you are looking for a dining experience like no other in Savannah, there are a few downtown vegetarian and vegan friendly options on offer. Cha-Bella Downtown, 102 East Broad St., 912.790.7888 Cha-Bella prides itself on delicious organic and seasonal food. Many of the dishes on offer are vegetarian options that cannot be found in other vegetarian friendly restaurants downtown. Vegans, on the other hand, will find the menu possibilities rather sparse. However, it’s worth asking your server if any dishes can be made vegan friendly. Alligator Soul Downtown, 114 Barnard St., 912.232.7899 Although Alligator Soul is most commonly known for their exotic selection of meats; Executive Chef Chris DiNello also prepares a one-of-a-kind vegetarian “tasting course” entrée, using local market-fresh ingredients so, Veggies Fear Not! Sage Downtown, 41 Whitaker St., 912.233.0002 Vegetarian and vegan friendly Sage has a dedicated vegetable cook top, guaranteeing diners that their choice to eat a plant based diet will not be compromised. Sage offers continental cuisine with a Mediterranean and Spanish influence for both lunch and dinner. There are several vegetarian dishes on the menu, as well as a couple of vegan dishes.

Relaxed Dining If you’re looking for something a little more home grown, there are some local restaurants that provide classic American fare while still offering vegetarian and vegan options. Screamin’ Mimi’s Downtown, 513 East Oglethorpe Ave., 912.236.2744 Downtown, 10 Whitaker St., 912.233.0655 Screamin’ Mimi’s, with two downtown locations, has several vegetarian pizza and sandwich offerings on their menu. Their dough is vegan-friendly is and they provide the option of building your own pizza, without cheese, from a variety of vegetable options if you eat a vegan diet. Vegans can also request to have cheese removed from the vegetarian sandwich options. Mellow Mushroom Downtown, 11 West Liberty St., 912.495.0705 While vegetarian pizza options are staples on the menu, Mellow Mushroom is the one and only restaurant in Savannah that offers vegan pizza with actual vegan cheese. However, unlike vegetarians who can choose a pizza off the menu, vegans do have to build their own pizza, request vegan cheese and choose a sauce base that is vegan friendly. Ask your server if you need help. Another great offering by Mellow Mushroom is an allergen PDF on its website that allows you to check what ingredients each item on the menu includes. Did you know, for example, that their pizza base is vegan friendly, but their grilled Portobello mushrooms are not suitable for vegans or people with a milk allergy? Check out the PDF before you dine to make sure you’re requesting items on the menu that fit your dietary needs. Corleone’s Downtown, 44 MLK Jr. Blvd., 912.232.2720 Recently refurbished Corleone’s is the one and only vegetarian and vegan friendly Italian restaurant downtown. There is plenty on the menu to choose from as a vegetarian and a few dishes that are suitable for vegans. Vegans should ask their server for advice on the best dishes to suit their dietary needs.

Green Truck Pub Midtown, 2430 Habersham St., 912.234.5885 Listed as vegetarian and vegan friendly, Green Truck Pub is a great option for freshly made meals that are locally and mindfully sourced. The majority of plantbased dishes on the menu are vegetarian with the exception of Chilli Non Carne and gazpacho soup, which are vegan. However, the servers are happy to work with your vegan dietary requirements so feel free to request a vegan version of a vegetarian dish. The specials can also be vegan options so make sure to ask what is on the menu. Basil’s Wilmington, 216 Johnny Mercer Blvd., 912.897.6400 If you’re out on Wilmington Island, look no further than Basils for a locally owned dining experience that is not only kid friendly, but also vegetarian friendly. They offer Eggplant Parmesan as a vegetarian pizza option as well as other typical Italian vegetarian dishes. Basil’s pizza base is vegan-friendly and there is the option of building your own pizza, creating many vegan possibilities. Unfortunately, the only offering not available is vegan cheese, but the pizza is very fresh and tasty, with plenty of vegetable toppings choices.
The key to successful vegetarian and vegan dining appears to be communication. Whenever possible, let your server know your dietary needs so that you receive the food you would like rather than what simply appears on the menu. Remember, eating out is a competitive business and if you find a restaurant unwilling to meet your food requirements, there are plenty of others willing to fill that gap. As demand for vegetarian and vegan food grows, no doubt the menus of many restaurants in Savannah will do the same. In the mean time, plenty of locally owned restaurants sympathetic to plant based diets are doing their best to cater to the dietary needs of a variety of customers. They are also supporting local farmers and the environment with their culinary practices, which means you can feel good not only about your choice of a healthy diet, but also your choice to help support the local economy and eco-friendly restaurants in your area.

Food Day is a nationwide celebration and a movement toward more healthy, affordable, and sustainable food. This is a national grassroots mobilization backed by some of the most prominent voices for energizing the food movement. On October 24, 2012, people will gather at events big and small and from coast to coast in homes, schools, colleges, churches, city halls, farmers’ markets, supermarkets, and elsewhere to raise awareness about food issues and advocate for change.

On Sunday, October 28th, the Sunday after National Food Day, the City of Savannah will be treated to a large outdoor festival at Daffin Park, which is located next to Historic Grayson Stadium on Victory Drive, at 1198 Washington Avenue. The festival is from 11am to 6pm and is free and open to the public, with live music, food vendors, dozens of exhibitors, vendors and free workshops. O
ne of my favorite parts of cooking is, of course, stealing bites of the fresh ingredients while preparing a meal. Over the past few years, this snacking-whilecooking technique has become a favorite for my dogs as well. Whenever my husband or I open the refrigerator during dinner preparation, our dogs bound into the kitchen, tails wagging and tongues flapping. They then proceed to sit at our feet and stare longingly at us until – as is usually the case -- they are rewarded with a delicious treat. Not all foods in your kitchen are good for Fido, but if you follow some simple guidelines and pay close attention to how your dog reacts to various foods, you can devise a fresh food supplement plan that is not only healthy but maximizes your dog’s enjoyment. Always remember to reduce the amount of commercial food your dog receives when adding fresh foods to a meal or as a snack. Cutting the amount of your dog’s kibble will reduce the chance that your dog will experience any unhealthy weight gain. Also, limit the amount of fresh food to one quarter of the total calories consumed at any particular meal to help ensure that your dog’s diet remains balanced. Finally, avoid fresh foods that are toxic to dogs, including grapes, raisins, onions and chocolate. Here are a few suggestions for healthy fresh snacks that your pup may enjoy:

Some of our dogs’ favorite snacks come from the vegetable crisper. Dogs love a good crunch and many vegetables are the perfect treat in both taste and texture. Our dog Liz will be the first to tell you just how much she loves baby carrots – she eats them whole as well as cut up in her wet dog food. Some dogs also enjoy green peppers, broccoli, and cucumber. Veggies are low in saturated fat, cholesterol and sodium and are a good source of folate, magnesium dietary fiber, and vitamins. Just be sure to avoid onions and tomatoes, as these are toxic for dogs.

you can feel good about the nutritional benefits that they offer. Blueberries in particular are packed with antioxidants and are the perfect size to be used as training treats. Apricots, either dried or fresh, are another great source of vitamin C and potassium. Just be sure that you aren’t giving your dog any dried fruit that has added sugars, as too much sugar can quickly pack on the pounds.

Yogurt is an especially healthy way to treat your dog since it is natural source of beneficial bacteria called probiotics. A spoonful of yogurt makes a delicious snack, but you can also incorporate it into your doggie’s dinner by mixing a spoonful of nonfat plain yogurt with your dog’s food. Freezing yogurt is another great way for your dogs to get nutritional benefits and cool down at the same time. The Puppy Pops (frozen mixtures of yogurt, dog treats, peanut butter and fruits) that we sell at The Grateful Hound are one of our most popular items because dogs absolutely love them and owners can feel good about giving them as a snack.
Eggs and egg shells can be a delicious and healthy addition to your doggies diet. Eggs contain high-quality protein and fat, as well as a large quantity of vitamins and minerals. Because they are inexpensive and readily available, they can be integrated easily into your dog’s diet. Serve them up boiled, scrambled, as an omelet or even fried with some butter (but only as a once-in-a-while treat). Egg shells can be ground up over your dog’s regular kibble as extra source of calcium and some great crunch to boot. Regarding portions, experts note that small dogs should eat no more than half an egg daily, while larger dogs can easily handle the 70 calories present in a large egg without gaining weight.

Fish contains high levels of omega-3 fatty acids, making it a highly desirable food supplement for dogs. Not only are omega-3’s great for dogs’ skin and coats, but they also support healthy brain function and regulate the immune system. Examples of fish that are affordable and good for dogs include sardines, jack mackerel and salmon. Review the packaging on the can or tin of fish to ensure you know how many calories you are adding to your dog’s meal and reduce the amount of dog food as necessary. As long as you keep these guidelines in mind, you can feel good about including fresh foods in your doggie’s diet. Please also consider consulting your dog’s veterinarian before making any drastic changes to your pup’s diet. Happy snacking!

hey say from the ashes, rises the phoenix and nothing could be truer about this particular British institution in Savannah. However, it’s not so much an institution as an international hub for sumptuous food and craft ales. Since 1996, Churchill’s has “colonized” Savannah by bringing only the most authentic and mouth-watering cuisine from England while serving some of the best American and Southern favorites. Churchill’s first debuted in Savannah in 1996 at their first location on Drayton Street. Tragically, an electrical fire wiped out the restaurant in 2003 where Isaac’s now stands. In 2004, Churchill’s reopened on Bay Street the day after Christmas much to the delight of its patrons. Churchill’s has remained British owned and operated under the very hands that created it nearly 16 years ago. Since its inception, owner Andy Holmes has satiated the good people of Savannah and our guests in a comfortable and charming atmosphere. Originally a computer programmer from Manchester England; Holmes immigrated to Savannah. Here he and his wife began their careers at The Six Pence Pub, until finally materializing their aspirations into Churchill’s.
Holmes’ father, who owns a construction company, is heavily involved in the restoration, design, and maintenance of Churchill’s. Maintaining the front and back lines is manager, Mark Royston who is also from the U.K.

this place is enormous During this Summer’s London Olympics, patrons poured into Churchill’s to watch from one of their three multi-level bar areas. To put it bluntly, this place is enormous. The first floor has three separate dining areas, one by the bar, another by the sunny front windows, and the last, tucked in the back, features a working fireplace perfect for cozy, intimate meals. All affectionately adorned with Churchill paraphernalia. Winston Churchill is pictured during his daily life, running parliament, and sternly pointing his finger at you because YOU DESERVE VICTORY! Downstairs features another bar area fit for a night with the fellas. Besides the pool table and dartboard, this sub-bar boasts a flat-screen TV equipped with a Wii game system and a projector. Feel free to take your competitive spirit to it’s limits down here while facing off against your friends in a virtual bowling tournament. Fancier affairs are held in the 2nd floor dining room, a private event space called 10 Downing. Churchill’s uses this area for weddings, receptions, business dinners, and the like and provides a private fully stocked bar and buffet dining. The wildly popular British Beer Dinners are held every few months. The most popular and beloved of Churchill’s dining locations is by far the roof top patio. This elevated oasis offers a view of the city not available anywhere else. You could schlep up the stairs or take the convenient elevator to a dazzling outdoor seating area that is just as beautiful during the day as in the evening. Once the “dog days of August” are over, as manager Mark Royster says, the roof top will be open longer and prone to more favorable weather.
the proof is in the pudding The Fish & Chips is the most popular British dish at Churchill’s made with the traditional cod that New Englanders like me crave. The Bangers & Mash are another favorite among patrons who highly recommend the hearty meal as well as the succulent Steak and Ale Pie and Shepherd’s Pie. The desserts are nothing like you’ve ever fathomed. We’ve all had a chocolate lava cake, but Churchill’s Molten Chocolate Cake has a dark chocolate blackberry ganache at its warm center that truly sets it apart from any other. Among many patrons, the Bread Pudding seems to keep them coming back. But as far as Mark is concerned, he thinks the most unique item on the menu is the Yorkshire Pudding.
“I’ve never quite seen Yorkshire Puddings quite like we do Yorkshire Puddings,” Mark says. The Yorkshire Pudding is almost like a biscuit, it’s made from a batter of milk, eggs and flour and bake in a heated pan. The yummy result is a fluffy, buttery roll that is fantastic as a side to any cut of meat. “I mean, I grew up in the U.K. obviously, but my mum and my grandmum couldn’t get Yorkshire Puddings right like we do.” So whether you have the roast beef and Yorkshire Pudding or the Toad in the Hole, which is the bangers baked inside Yorkshire pudding, you’re going to be blown away! First visually and then again once you take a bite. However, Churchill’s American fair is nothing to scoff at. “For one thing we’ve got really good burgers. We use certified Angus beef for everything including the ground beef.” According to Mark, as far as the entrees are concerned, this English restaurant has made an impact on an adored Southern dish, Shrimp and Grits. But who is the man behind these masterpieces? “We’ve got a relatively new chef. He’s been with us for a year, he was formerly the Sous Chef over at the Mansion for several years and he is extremely talented.” Mark is of course referring to the man responsible for the outstanding meals that make your mouth water, Chef Glen Benskin. Originally from Barbados, Chef Glen has lived in Savannah for years bringing his culinary creativity with him wherever he cooks. Here as the Head Chef at Churchill’s, Glen has the freedom to create and add his own international flair. Almost ten years ago, Glen left his home of Barbados, to share his unique style of cooking. Barbados has been a British colony for it’s entire existence. Multitudes of cultures, Portuguese, British, French, Jamaican and more coexist in this Caribbean land. Growing up with his mother as a guide, Glen learned to cook for his entire family. We’re lucky that Savannah caught his eye and that he’s here to nourish our taste buds. However, Glen is torn between his favorite Churchillian entrees. Is it the fish tacos or roasted chicken that’s roasted in a little bit of rum? Who could decide?

Join the Club Churchill’s isn’t only famous for their food. The bar is well known for introducing some of the finest craft beers from across the sea and right from home. Bombardier is one such ale that if it were taken off the drink list, there would be riot. Mark describes it as a bolder big brother of Newcastle Ale and they’ve been carrying it for the last two years after being so well received as a guest beer. Many beer advocates throughout Savannah find Churchill’s to be a haven of craft beers from around the world. As a way to thank their regular patrons, Churchill’s offers a Platinum Club card that earns you one point for every dollar you spend. For every 100 points accumulated you earn $10 towards your purchase of food or drink. Not to mention that only members of The Platinum Club are privy to daily drink specials on beer and liquor. Situated at the heart of Bay Street, Churchill’s has become a Savannah tradition. Not every fire is an omen of doom, and this phoenix certainly rose to the occasion. directions Preheat oven to 375 degrees. Saute beef over med to high heat until cooked thoroughly. Throw out any excess fat, add onion, garlic, tomato paste, carrots, peas, thyme, and bayleaves. Add pinch of salt & pepper and cook over med/high heat for 5-7 minutes. Add worcestshire and beef broth and allow to cook another 5 min. Taste, add salt or pepper if needed. For Mashed Potato, follow package instructions or use personal recipe. Add beef mixture to medium casserole dish and top with prepared potatoes. Bake in oven for 10-15 minutes or until golden brown on top. Serve with favorite garden salad and enjoy!

Welcome to early fall where soon enough it will be time to turn in our beach towels for blankets. If you love & appreciate delicious food like us and your friends at Well Fed, seasonal change is as exciting as trying to come up with a clever way to get your first camp fire’s smoke out of your hair. We’ve chosen a salad recipe to share with ya’ll that is perfect in color (rich brownish reds, greens, and burnt orange), texture and flavor for the cool days ahead. This salad, like many great recipes, was inspired from cooking for a small group of folks who were craving a fall salad at the last minute. We decided to use some small lettuce, frisee’, also known as curly endive, and a pear (which are in season here in coastal Georgia) which seemed to be a good start. The next best fall element we had in stock & thought would work well with the salad was prune juice. The resulting recipe & the beautiful prepared salad has continued to wow everyone we’ve ever made it for. Please give it try, share, and enjoy with friends and family this fall.

Directions 1. Add prune juice to a stock pot and bring to a boil. Peel pears, slice them in half and add to stock pot. Boil untill liquid is reduced by half. 2. In a large mixing bowl combine 4oz olive oil, 1oz rice vinegar, juice of half a lemon, 1 Tablespoon of brown sugar, 1 Tablespoon of reduced prune juice and one small pinch of allspice. Wisk like Chuck Norris! 3. As thinly as possible slice fennel bulb and shallot. Add to dressing, cover and refrigerate. Put goat cheese in freezer for a minute or two to firm up. 4. Very carefully ladle out pears and put on plate (they are tender and can fall apart). Toss frisee’ in mixing bowl to coat in dressing and plate next to warm pear. Crumble goat cheese over warm pear. Sprinkle Maldon salt and black pepper to season (always use freshly ground black pepper). Sprinkle on saffron and place two fresh thyme sprigs on pear!!!!!

Even if you’ve never been to Corleone’s, it’s the type of place you might already know. It’s the intimate neighborhood restaurant back home, the type where you walk in, and the host grabs your drink, and the chef starts cooking your eggplant parmesan and side of spinach before you even sit down.

“We’re basically a good, straightforward Italian restaurant. If you want a good lasagna, a good shrimp scampi, fettucine alfredo, this is the place to come,” says executive Chef Erik Johnson.

“Our [diners] want the food they grew up with, the food their grandmother made. “ Their alfredo sauce has just four ingredients -- heavy cream, garlic, red onions and prodigious amounts of fresh parmesan cheese. Their red sauce, about the same. “We think along the lines of simple is better here,” says Johnson, who moved to Savannah in 2008. “I don’t need to put flour in my alfredo to thicken it up. If I need to thicken it up, I’ll just put in a little more cheese.” Johnson hails from southern New Jersey, perhaps the cradle of Italian food on the eastern seaboard with its proximity to Philadelphia and New York. His father has owned multiple restaurants, where Erik worked growing up, so you could say the business is in his genes. “Italian is what I grew up with. Where I grew up, everyone’s last name was Gaspari or [sic] Tulia,” he jokes. “All my managers were Italian. I was the six-foot-four, blonde-hair, blue-eyed kid in the land of Italian restaurants and pizza places.” Like many people who eventually call the open arms of Savannah their home, Johnson’s journey was anything but straight. “I was lost for a long time, but I got my life together,” admits Johnson. “And at some point, I realized the only thing I really wanted to do was cook. Actually, it was kinda chosen for me, honestly.” A zig-zag wanderlust eventually pushed him south to New Orleans (“I always liked the South”) and after marrying a SCAD graduate he’d met in New Jersey, next thing he knew he was in Savannah. “I’ve always been intrigued by Savannah,.” says Johnson, whose mom bought him a copy of Midnight in The Garden of Good and Evil to pique his interest.

Five days after arriving in town, he had a job. Saute chef at Corleone’s. The interview? One question -- can you saute? Evidently, yes. “This is the only job I’ve ever had in Savannah. I got this job five days after I moved down here,” Johnson recalls. “Six months later, I was running the kitchen.” The food is fresh, and sourced locally whenever possible (“We’re going with the flow with what comes naturally from our marketplaces,” says Eden Geib, Corleone’s marketing manager).The restaurant does not have a microwave or a large walk-in freezer, and the pasta artisanally produced. In Savannah, Corleone’s is one of the few places that is friendly to those with gluten-restricted diets. Gluten, from the Latin word for “glue,” is a protein found in foods processed from wheat, flour and other grains. While it gives dough its elasticity, shape and a “bite,” many people are highly allergic or have a form of celiac disease. As a healthy alternative, they offer a penne pasta made from corn, one his wife actually found at Amazon.com and that he regularly eats at home. “We really specialize in serving anyone’s needs,” says Eden Geib, the restaurant’s marketing manager. Chef Erik agrees. “We can accommodate anyone here,” says Johnson, who also routinely handles vegan and vegetarian-friendly requests. “If you don’t like butter, or don’t want dairy, we’ll do penne broccoli with just olive oil. Try it with a little white wine, and it’ll be perfect. If you don’t eat meat, we have plenty of options.” Johnson creates the eatery’s nightly specials, but he’ll leave the sometimes intimidating -- and often pretentious -- haute cuisine to others. “We’re not trying to have octopus carpaccio on our menu,” he jokes. “This place was here before I got here, and I’m sure it’ll be here after I am gone. These people, this menu, they’re going to be here forever.” Corelone’s is located at 44 Martin Luther King Boulevard, near the intersection of Congress Street and MLK. The restaurant is open for dinner, seven days a week, from 4pm-10pm and until 11pm on Friday and Saturday. Lunch is also served, Monday – Saturday, from 11am-4pm. Spirit Rising By David Gignilliat
In a city rife with tales of ghosts and gravestones, a new spirit lurks at the east end of River Street. A friendly one, probably not the type of spirit you’d think, but the one you drink. Since opening in April, River Street Liquor has been providing spirits -- of the liquid type -- to the thirsty denizens of Savannah’s most popular byway.
Filling A Need Despite scores of bars and restaurants in the Historic District, owner Jeff Notrica sensed that there was a shortage of package shops downtown. “I had several people come up and ask me just walking down the street, ‘where’s the closest liquor store?,” recalls Notrica. “And I started thinking about it and I realized, boy, there’s really not one nearby [downtown].” So, he just opened his own. His family has owned package shops in the past, so he was not in unfamiliar territory. An owner of several downtown properties, he decided to employ a space on River Street in a building that he’s owned for several years. All the usual licensing was obtained (“the city’s been great helping us get set up,” he says), and he was ready to go.
Not Your Typical Package Shop The shop’s interior is well-appointed, rich in dark woods and with an efficient setup that allows its patrons to see all of its bottle choices at a glance. The store is the newest venture for Notrica, who also owns popular Motorini (a scooter store, and Savannah’s only authorized Vespa dealer) on Drayton Street. Open since mid-April, River Street Liquor seems to fit right in with River Street’s varied selection of bars, restaurants and specialty shops. “We tried to make it look a little different, like it had been here for a while,” said Notrica, a real estate developer/investor who owns and operates the Dresser Palmer House in Savannah. “We were really conscious of that.”
Despite its small size, River Street Liquor has all the trappings of a store many times the space, including a diverse selection of beer, wine and champagne. The store purposely does not carry single-serving ‘shot’ bottles, and its inventory does not reflect an off-brand volume selling approach often seen at other local package shops. Notrica also stocks an assortment of mixers, canned drinks and tobacco products.
Liquor, Thoughtfully Done The staff at River Street Liquor has juried all of its products, and is prepared to make recommendations for customers, a refreshing approach that is sure to appeal to the thousands of tourists and visitors that walk from downtown hotels to the river’s ballast-stoned streets.

River Street Liquor offers one of the few glutenfree types of vodka on the market, the High West Vodka 7000’, named after the exact elevation of the High West Distillery & Saloon in Park City, UT. The company takes advantage of its high-altitude mountain home, using the mineral-rich snowmelt to distill the spirit with locally-sourced oats. The result is a clean, versatile vodka, with hints of vanilla and nuttiness from the oats, perfect over ice, for a vodka martini or mixed. The vodka, which RSL also carries in the company’s peach version, has won numerous awards, including a Silver Medal at the 2009 San Francisco World Spirits Competition and a Gold Medal from the International Review of Spirits Puro Verde, is a single-estate grown brand of tequilas grown on over 2000 acres of sustainable farmland in Jalisco, Mexico. The farm’s organically cultivated blue agaves (specifically, agave tequilana, the plant used to make tequila) are grown without the use of fertilizers or pesticides, and the company is committed to a green “seed to sip, from plant to drink” approach, according to the company’s website. “Puro Verde goes like water,” says Mac Taylor, one of River Street Liquor’s well-versed employees. The agave juice is fermented 100 % naturally, and double distilled through stainless steel vats, letting the sweetness of the agave take center stage. It is then triple-distilled with natural volcanic spring water, and estate bottled by Puro Verde.
Notrica’s favorite choice is the store’s Bacardi 8, a Cuban-style rum and an homage to founder Facundo Bacardi’s launch in Cuba exactly 150 years ago. Much’s of the rum’s layered flavor comes from the white-oak barrels, producing a sipping rum with sweet wood & vanilla notes. The popularity of Puro Verde, High West and others and other speaks to a certain sea change in the liquor industry, comparable to the craft beer movement of the late 1990s. “We have a lot of craft [spirits] too,” says Notrica, who recommends a Romeo y Julieta cigar to be enjoyed with a glass of Bacardi 8. “There’s sort of been a revival in that [market] that we really haven’t seen in decades.” Of course, the revival of spirits is nothing new in Savannah, and if the store’s early success is any indication, River Street Liquor will be enchanting visitors and locals alike for years to come. ne of my favorite go-to medicinals, tequila, (a liquor distilled from the blue Agave succulent in the state of Jalisco in Western Mexico) holds in it’s fluid body, an ancient and colorful history characteristic of the land and people that have been cultivating it long since the Aztecs first did millennia ago. Said native culture believed that the goddess of fertility, Mayahuel -aka ‘She of the 400 Breasts’- was the very source of this mystical juice. That must have been some potent stuff! Looking specifically at the blue agave’s more modern environs, to the heart of the distilling region, lies the small town of Amatitán which itself embodies the mysticism of Mexico; Here an abundance of truly peculiar tales of the undead are sown from the soil, from somnambulistic forces who guard gold hidden in the ancient labyrinths underground, to magical images of the Virgin Mary which have appeared in the hillsides. Locals even report seeing troops of ghostly conquistadors marching the agave fields, and a headless priest is said to still ride his horse through the grounds of one of the oldest tequila distilleries in Mexico, Casa Herradura. On these very grounds Felix Lopez, his descendents and their beneficiaries have been faithfully hand-crafting the product there, making Herradura tequila since the 19th century, on this soil bespeckled with gold dust and besieged by treasurehunters, wailing ghosts, healers, holy virgins and witches. The stories are widely known and the energy is said to be palpable there, and permeates everything which might explain why the tequila is so good. It certainly hasn’t been a curse to the fortune of Herradura – Spanish for “horseshoe,” which refers to the good luck charm found during a poignant moment in the fields by one of the original Lopez clan.

Although most likely, luck had little to do with the brand’s success: The truly hand-crafted methods faithfully follow the original family recipes, and it is the only 100% house-made tequila in the country. Much care is adhered to, and the process is not rushed, an essence you can almost taste in the liquor. The very plants cultivated today are even offshoots of the original crop from 1870– symbolic of the reverence for heritage and tradition that defines the Casa Herradura and the culture surrounding its homeland. Inspired by that same respect, I’ve created a few recipes, in honor of the genuine and the fabled.
Cactus Flower The roastier, round notes of the Herradura Reposado pair well with the floral and citrus elements featured in this drink, good chilled and up, or on ice 2 oz Herradura Reposado 1 oz Chambord raspberry liqueur .5 oz Hibiscus flower syrup (buy the kind with flowers included) 1 drop rosewater/extract fresh squeezed grapefruit juice (to fill, about 1 oz) Add all ingredients over ice and quickly shake and strain into cocktail glass or leave in rocks glass over fresh ice. Garnish with hibiscus flower from jar.
El Chino Hot Cocoa (El Chino was one of the legendary gold-stealing bandits of Amatitรกn, rich and spicy!) 2 oz Herradura Anejo Ibarra brand Mexican drinking chocolate (usually in bar form) 6-8 oz Organic whole milk Dash of cayenne pepper and cinnamon Bring milk to a near boil on stovetop. Liquefy 2 oz of the Ibarra bar into a blender with hot milk (I like to substitute an ounce or more of half-andhalf), and pour mixture into a mug with a dash of cayenne. Top with fresh whipped cream sprinkle with cinnamon.

The name is Spanish for a lady of French descent, it is pretty and refreshing, but can pack a punch. The French elderflower liqueur is a great adjunct to both the silver tequila and the fruits. 2 oz Herradura Silver .75 oz elderflower liqueur .5 oz fresh lime juice .5 oz simple syrup 2 ripe medium-sized strawberries, sliced 2 slices cucumber Muddle strawberries and cucumbers at bottom of any tall glass with simple syrup or lime juice, add remaining liquids, fill with ice, toss in a shaker a couple of times and put back in glass; top with splash of sparkling water if desired.
