eebe Springs Natural Area, located just north of the Beebe Bridge on Highway 97, is a great place to take a walk or a stroll, to fish, to bird watch or to simply enjoy being in nature. The Natural Area contains two miles of ADA accessible trails that loop around the marsh lands created where the Beebe Creek meets the Columbia River. Another feature of the park is a set of metal sculptures created by Smoker Marchand, an artist from the Colville Confederated Tribes. The most prominent of these is a Native American rider on a horse holding up a salmon. The sculpture is on top of a small hill, so it can be seen easily from the road.

Another group of sculptures are of Native American women digging for roots. The area is part of the traditional lands of the Colville Tribes, so the sculptures bring additional meaning to Beebe Springs, helping us to remember those who first lived in the land, and the hunting and gathering methods that sustained them. Beebe Springs Natural Area is a great place for children. On Aug. 22, Brogan and Kayla Kelly had brought their two sons Emmett, 3, and Judah, 2, to the natural area to spend some time together as a family. Emmett was riding his bike on the trails, Judah was picking blackberries

and flowers, and Brogan was spending some time fishing from a bridge. Kayla said that the family lives in Chelan, and this is a favorite play destination for them. Also, part of the springs area is a fish pond called Frank’s Pond, which is for juvenile anglers only. The stocked pond is an ideal place for kids to learn to fish. A Washington State Parks Discover Pass or a Vehicle Access Pass, which comes with purchase of a fishing license, is required for parking at the natural area. The area is managed by the Washington State Department of Fish and Wildlife.

I

n 2013 when Lindsay Evans founded the Lake Chelan Artisan Bakery she hired Catalina Jimenez as her baker. Jimenez had graduated from Chelan High School in 2002 after coming to this country from Mexico at the age of 16. Since graduation she had worked in the orchard industry for several summers, and at the Chelan Red Apple Market for the previous 10 years. Jimenez said that she knew nothing

about baking, explaining that baking is not a part of everyday Mexican cooking. “I started from scratch,” Jimenez said. Yet Jimenez loved the job. She started at 4 a.m. and was done at noon, giving her lots of time with her three children, who were young at the time. She enjoyed baking, and felt supported by Evans, who she described as the “best boss.”

At that time Jimenez couldn’t have imagined that seven years later she would be the owner of the bakery, which she purchased from Evans in January of 2019. Jimenez has stayed true to the original vision of the bakery, purchasing the best quality organic ingredients from local producers and making everything on site from scratch. She has kept many of the menu items that Evans developed, including quiches, pies, pastries, muffins,

scones, cinnamon rolls, cookies, bars, soups, sandwiches, bagels, specialty salads and fresh baked bread. She has preserved close ties with the Bear Foods Market, from which she buys high quality organic products. The market in turn sells her bread and other baked goods. She is slowly adding items of Mexican inspiration. These include breakfast burritos made from homemade tortillas and her own original tres leches cake.

Jimenez said that unlike many Mexican women today, she had grown up learning to make tortillas. Now she has taught all her employees, about half of whom are Hispanic. She said all of the employees have got it down now. She had never made a tres leches cake, a popular Mexican style cake which consists of a sponge cake seeped in a milk sauce. She took the basic idea and played with it to make her own unique version. This includes four types of milk flavored with cinnamon and cloves poured over the basic sponge cake and allowed to sit for 12 hours. “It’s been a hit,” Jimenez said. Jimenez said she is experimenting with some other traditional Mexican pastries and desserts to be introduced this winter. Since purchasing the bakery, Jimenez has been working very hard, often six days a week, 10 hours a day. Yet she said this is nothing new, since she has been working hard all her life. She is the first in her family to own her own business, and family members are very proud of her for what she has accomplished. Her father especially. He is 73 and still doing orchard work, and always taught his children the importance of hard work. Jimenez said that her children, now 17, 15 and 8 sometimes help her at the bakery, and her husband has been very good about taking care of the house and getting meals on the table when she is busy. Her older sister

Laura is one of her employees. The early part of spring was a very stressful time for Jimenez as she saw sales plummet. In May business started to pick up again, but she had to keep up with all the state requirements to stay open. She said she is grateful that her customers understand the need for the required precautions. Since May business has picked up, and in fact the bakery has been even busier than last summer. Lake Chelan Artisan Bakery is located at 246 W. Manson Highway, Suites 3 and 4 in Chelan. It has some indoor and outdoor seating, but is currently offering only takeout. The bakery is open from 7 a.m. to 3 p.m. seven days a week.
