We were lucky enough to have a very special morning of pampering at Verulamium Spa recently, where we had a really relaxing time, and would recommend you go and try it for yourself! Tuesday is a day where one confesses their sins and asks God for absolution. Shrove Tuesday is celebrated in different ways around the world; the Brazilians Samba in Rio and people in New Orleans throw their most famous party of the year, Mardi Gras, which literally means ‘fat Tuesday’ in French. and here in England it’s also known as Pancake Day! Eggs and butter were among food forbidden during Lent, so they were often used up in pancakes. Pancake races are held where people must successfully toss and flip their pancakes into the air before crossing the finish line. Points are awarded for time, number and height of flips, and number of times the pancake turns over. It’s believed that the tradition of pancake races was born out of women rushing to church to confess their sins before the noon cut off time, clutching their half finished pancakes!

Breaking Barriers Arts for Autism

February onwards A new project is being organised by St Albans Arts Sport & Health for people on the autistic spectrum, aged 16 and over who may already be practising artists or who would like to take part in arts workshops. The arts will be used to explore the theme ‘Gestures for Freedom’ through the senses, including sound, light and spatial awareness. The group will produce an art installation to be part of an exhibition entitled ‘1213: The Journey Starts Here’ at the Museum of St Albans between the 3rd June and 15th September. They will also have the opportunity to create a performance to be showcased during the Magna Carta weekend in August. Slugs are also a pest, tunneling into the tubers’ flesh and sometimes even hollowing them out. The biological control nematode Nemaslug works under the soil surface, has a brilliant effect and poses no threat to wildlife.

how do you like your spuds?

smashing spuds February is the time of year to think about perfect potatoes and smashing spuds. Home grown potatoes are an extremely ‘good value’ crop and the so-called humble spud is a very tasty and extremely versatile vegetable. If you don’t have much space, use a 45cm (18in) diameter pot with a single tuber (seed potato). Make sure the container has lots of drainage holes, fill it two thirds with compost, put a tuber in the centre and add a further couple of inches of compost on top. As foliage appears, cover with more compost and repeat until the container is full, then keep well watered. Most potatoes produce a slightly earlier and somewhat heavier crop if the seed potatoes are allowed to produce small but sturdy sprouts before planting. Stand the tubers widest end uppermost in a seed tray or old egg carton and place in a cool but frost free spot with plenty of natural light. After a few weeks the sprouts will be home grown potatoes are ‘good about 1cm tall, perfect for planting.

Potatoes are divided into ‘earlies’ (first to be harvested) and ‘main crop’, generally larger tubers, harvested later. Try ‘earlies’ if the soil hasn’t been cultivated for several years. They’re in the ground for less time than main crops and are less likely to suffer from wire-worm attack. ‘Earlies’ are also useful in smaller gardens as they takes less space giving you the opportunity to grow another fast-maturing crop after they have been lifted.

following doctor’s orders Many people will know that the last of Henry VIII’s six wives, Catherine Parr “survived”. But how many know the role played by a doctor with a St Albans connection? In 1546 the Catholic faction at court suspected Catherine of being a Protestant. Foremost amongst the plotters were Bishop Gardiner and Lord Chancellor Wriothesley who accused her of heresy. And when Henry complained of being lectured by his wife on religion they ceased their chance and accused her heresy. Later Henry confided in his physician Dr Wendy that he had agreed to Catherine’s arrest adding he was tired of being lectured by Catherine on matters of religion. Events then took a turn that favoured Catherine. First the warrant for her arrest was dropped by a courtier and was found by one of Catherine’s servants who took it to her. On reading the warrant Catherine become hysterical. If she was found guilty as a heretic she would be burnt at the stake, Henry hearing Catherine was ill and not knowing the cause sent Dr Wendy to attend her. Wendy quickly realised Catherine knew of the plans for her arrest. And remembering what Henry had told him he advised her to beg the King’s forgiveness for debating religion with him and to submit to him. Catherine followed his advice. The next time she saw Henry she told him she had debated religion with him as she wished to learn from him, and to distract him from his painful ulcer. Henry was delighted. The following day as Henry and Catherine were walking in the palace gardens Wriothesley arrived to arrest Catherine. Henry sent him away with a flea in his ear. And so Catherine outlived Henry and went on to marry for a fourth and final time. This time it was for love, but sadly her happiness was shortlived as she died in childbirth. And what of Dr Wendy? He took a risk informing Catherine of the King’s conversation with him. It is thought that he was a Protestant. He was one of the witnesses to Henry’s will and went on to be Physician to both Edward VI and Mary I. recipes from Abbots Kitchen at the Cathedral The 10th February sees the start of the Chinese New Year, which this year is the year of the Snake. For the Chinese it is the most important festival in their calendar. It is centuries old, with many myths and traditions, celebrating the influence of the lunar calendar on their lives. It’s traditional to thoroughly clean the house to sweep away any ill fortune to make way for incoming good luck. Windows and doors are decorated with red paper lanterns displaying designs of good fortune, happiness, wealth and longevity. The Chinese give gifts of money in red envelopes for the same reasons. The Snake is the symbol of intelligence, gracefulness and materialism; people born in the year of the Snake are said to be influential in business and enjoy luxury. Why not join in the celebrations and treat your family to this easily prepared supper.

egg fried rice 1 egg per person bunch of spring onions, finely chopped 50g / 2oz cooked / cooled rice per person clove of garlic, chopped (basmati is great for this recipe) 100g / 4oz cooked shrimp or small prawns 100g / 4oz frozen peas (defrosted) Beat the eggs in a bowl until thoroughly mixed. Heat half the oil in a large pan or wok, fry the egg mixture as you would a regular omelette, turn onto a plate to cool and cut into small strips. Heat the remaining oil in the wok, add the onions and garlic and fry for a couple of minutes. Add the peas and prawns and cook for a further two minutes then stir in the rice and egg and cook until heated through. Serve immediately, with a savoury dish such as sweet and sour chicken.

sweet and sour chicken 4 skinless chicken breasts (cut into cubes) 2 egg yolks 3 tblsp cornflour 200ml / 10floz vegetable oil 1 onion, chopped 1 red and 1 orange pepper, sliced

450g can of pineapple pieces in natural juice 2 tblsp tomato ketchup 2 tblsp light soy sauce 1 tblsp white wine vinegar 1 tblsp fresh chopped coriander salt and pepper to taste

Mix together the egg yolks, 2 tblsp of cornflour, 1 tblsp of water and salt and pepper; toss the chicken in this mixture. Heat the oil in a wok, deep fry the chicken in batches for 5 minutes or until golden brown and drain on kitchen paper. Empty all but 1 tblsp of oil from the wok, stir fry the onion and pepper over a high heat stirring continuously to prevent burning or sticking. Drain the pineapple cubes (reserve the juice), add them to the wok and cook for 1-2 minutes. Mix ½ of the reserved juice with the cornflour to make a paste, and add this to the wok. Stir then add the rest of the juice, tomato ketchup, soy sauce and vinegar. Increase the heat and stir until the mixture thickens. Return the cooked chicken to the wok and simmer for 5 minutes. Once cooked add the coriander, and taste to check if more seasoning is required.
