EDITORIAL
EDITORIAL On 10 April 2014, we went on an inspiration- and promotion trip to New York. This trip was organised by Amsterdam in Business and Amsterdam Marketing. Under the leadership of then mayor Eberhard van der Laan and alderman Carolien Gehrels, the delegation consisted of people from education, the art world, and the business community. In New York we became acquainted with the latest trends in hotel management and F&B. We also had several city marketing brainstorm sessions with New York Marketing. Highlight of the trip was

a reception at the most beautiful tall ship in the world: Clipper Stad Amsterdam. She lay moored at the quay in Chelsea. Boarding the boat, we all felt a shiver. We’re so proud of our country being represented on the world’s oceans by such a beautiful ship. Another highlight of the trip was a performance by Armin van Buuren in Madison Square Garden. The Netherlands has the best DJs in the world. They always leave a great impression of our country. In Madison Square Garden, Armin welcomed thousands of American fans with his characteristic hand in the air. We were there too, feeling very proud.

Bert Kommerij (Ameland, 1964) has produced countless radio programmes, written radio plays and soundwalks, columns for Radio 1 about art and TV, and is fascinated by neighbourhood initiatives. The same is true for the Java island in Amsterdam. Ever since the opening in July, Bert has been a host at Hotel Jakarta Amsterdam. He welcomes our guests and shows them around, leads tours, and takes care of all sorts of matters in front and behind the scenes. He writes about his experiences in the hotel for a weekly (Dutch) column that appears every Sunday on www.bertkommerijmedia.wordpress.com and the Facebook page of Hotel Jakarta Amsterdam.

AN EXPERT in super yachts AS A COUNTRY SURROUNDED BY A LOT OF WATER, THE NETHERLANDS IS AN EXPERT WHEN IT COMES TO SHIP BUILDING. BILLIONS OF EUROS WORTH OF INNOVATIVE CARGO SHIPS, COMPLEX OFFSHORE SHIPS, AND PLEASURES BOATS ARE CONSTRUCTED AND SOLD EVERY YEAR. ONLY A SMALL PORTION OF THEM END UP IN DUTCH WATERS; MANY MORE ARE EXPORTED ABROAD. TRULY A BOOMING BUSINESS. IT CERTAINLY IS FOR FEADSHIP.

nology, they try to outdo themselves with every
new ship. Yet all ships built by Feadship have one thing in common. Each yacht is equally beautiful and of the same top quality. It is craftsmanship that was handed down over generations. It shows – and it’s something you should experience yourself.
It all starts with pen and paper. Feadship draws the yacht of the client’s dreams. This is how the conception of a new ship starts, fully customised and tailored design. The design phase is followed by technology. It is a process that can take several years; ships aren’t built in a day. They are built for perfection. This is exactly why the people who can afford such a yacht come to the Netherlands from all over the world.
BIG, BIGGER, BIGGEST Super yachts constructed by Feadship come in a wide variety of sizes – it all depends on what the client’s wishes. For instance, last year the largest ship they had ever built was launched in Makkum. She measures 110 by 17 metres, has four decks, and is named Anna. This isn’t just a record for Feadship – it makes the yacht one of the largest super yachts in the world.
Anna is even bigger than Symphony, a yacht that was delivered in 2015 and the largest Feadship had ever constructed at an impressive 101.5 metres. Another well-known yacht of theirs is the 73-metre Hasna, which was launched in 2017 and won the main award at the World Superyacht Awards 2018. And there is more to come still. Feadship is currently working on a 93-metre motor yacht under the working title Project 814. It is scheduled to be completed in 2019.
What will the limit be? Only time will tell. In addition to the shipyards on Kaag island in Aalsmeer and Makkum, a new Feadship site will soon open in Amsterdam. It will have the capacity to build super yachts of up to 160 metres!

Stress, drugs, and rock-‘n-roll A DJ’s life may seem like a dream, but the pressure is enormous. This pressure was a major theme during the Amsterdam Dance Event 2018. The death of Swedish DJ Avicii last April and the (temporary) retirement of the Dutch DJ Hardwell were of course important reasons. Hardwell had suffered a burnout before and has said he’s done with the stressful life for now. On his Facebook page, he compares it to a rollercoaster ride that never stops: ‘I’ve always tried to give 200 percent effort. In order to keep up and feed my creativity, I need a break for a while.’ All this is perfectly understandable once you see a DJ’s travel schedule. Afrojack, for instance, gave 83 shows last year, travelling 375,913 kilometres. Martin Garrix was at the turntables 115 times and travelled 345,856 kilometres. Armin van Buuren has more performances than anyone – 139 to be exact – for which he travelled 363,574 kilometres. To put this into perspective, a trip around the globe is about 40,075 kilometres.

Go to a greenhouse Have you ever swam in a sea of flowers, seen tropical plants grow in the Netherlands, or took a bite of a tomato as big as a space hopper? No? You’ve probably never visited a greenhouse then. You can visit the greenhouses on Saturday 6 and Sunday 7 April 2019. ‘Go to a Greenhouse’ (Kom in de Kas) is the biggest public event for the Dutch greenhouse sector. Hundreds of welcoming vegetable, flower, and plant growers will open their greenhouse doors to the public on this particular weekend. DELFT HAS TO OFFER Would you enjoy a fashionable dining experience? At Mme Coco, the new WestCord Fashion Hotel Amsterdam, you’ll experience this all. Chef Henk van Veluw and his team are ready to serve you a culinary and fun night. After dinner, you can take the lift up to the SKYY Bar on the tenth floor for a cocktail and a fantastic view of Amsterdam!
At WestCord Hotel Delft, they are proud of ‘their’ city and its famous Delftware. Thanks to a collaboration with Royal Delft, the pillars in the hotel’s lobby are now adorned with beautiful Delft Blue paintings. The results are striking!
CHEF TACO SHIFTING INTO HIGHER GEAR Chef Taco Boersma of Hotel Noordsee on Ameland is doing well. Not only does he serve his guests all kinds of delicious creations, he has also received an award. Last year, Taco was already selected as best chef of Ameland, and recently he entered the cooking competition ‘Klaar af kook’ in Groningen. After a tense final, he won second prize!
ENJOYING THE TERRACE, EVEN IN WINTER TIME At Hotel de Veluwe you can now spend the whole year on the terrace, even if it rains, snows or if it’s just very cold. They have built a huge veranda adjoining the grand café, including heat lamps! Of course they decorated it in the recognizable style; lots of wood and a nod to the four-legged residents of the Veluwe. Enjoy!

GREAT FOOD, GREAT CONVERSATIONS On the 13th of September, the brand new Hotel Jakarta Amsterdam was host to the Talkies Lifestyle Lunch. During this annual lunch, fifty women met up to enjoy delicious meals and catch up on lifestyle, food, beauty, and business. The new Talkies Magazine fashion issue, with Nicky Opheij and Carolien Spoor on the cover, was launched here too.
GIANT SPECTACLE
Leeuwarden was in the international spotlight last year, as the pride of Friesland was the Cultural Capital of Europe 2018. One of the literal and figurative highlights were the Royal de Luxe Giants. These awesome giants of up to eleven metres high made their way through the city centre of Leeuwarden for three days, giving audiences an unforgettable experience. Over thousand of visitors came to see the spectacular show.
LET’S HAVE A TOAST
Early September, glasses were raised to the reopening of the meeting and event facilities in WTC Hotel Leeuwarden, as well as the opening of Café Zero. A lot of people worked very hard to give the sixteen meeting rooms a makeover. While enjoying a bite, drink, and music by Trio Royale, the guests that evening were given plenty of opportunities to admire this new top venue for meetings and events. The night ended with a delicious walking dinner.

LET’S CELEBRATE...
Time flies! Sixty years ago ss Rotterdam was ceremonially launched by Queen Juliana. After speaking her blessing, the ship was launched at the RDM on 13 September, 1958. Naturally, this deserved a celebration. This is why the Vrienden van Stoomschip Rotterdam (Friends of Steamship) organised a festive get-together in collaboration with the ss Rotterdam. It was also the start of the anniversary year!

LIFE IS SHORT, BUY THE SHOES
Hotel New York’s 25th anniversary had to be acknowledged properly. To start, an impressive exhibition was organised in the Museum Rotterdam, but that’s not all. For instance, special Hotel New York shoes were developed together with the Rotterdam shoe label Mascolori. They designed a brown version (based on the colour of the building) and a green version (the colour of the towers). The right shoe has an image of Western Europe highlighting Rotterdam. And the left shoe features North America, focusing on New York. The heels show the two landmarks of the Hotel New York towers, weather vane and banner. That’s not all; hotel manager Edo in Delft wears a pair of unique Delft Blue Mascolori shoes!
WELLNESS ON THE TOILET In addition to the new paintings on the columns in the lobby, the bathrooms in Delft were also renovated. Naturally, this included new toilets. One of the rooms now features a very unique toilet, a so-called wellness toilet by Grohe. This shower toilet combines all the latest technologies. For example, you can control and personalise it using an app, and it even has an odour extraction feature. It takes some getting used to, of course, but Grohe insists you’ll never want to go back!
BRAND NEW Work to be done at Strandhotel Seeduyn on Vlieland. This winter people will be working very hard to renovate 54 bathrooms. They will get brand new walk-in showers, sinks, and toilets, all to make a stay on Vlieland even more comfortable.

BIG Of all the classics, the Gispen 412 armchair is by far the most famous design by Willem Hendrik Gispen. The armchair was designed in 1934 and remained in production until 1966. The frame consists of a two-part chromed steel tube that has been manually bent. The characteristics armrests made of bakelite complete the look. The armchair is known for its timeless design and comfortable seating.
IN DESIGN THE NETHERLANDS HAS A NUMBER OF BIG FURNITURE BRANDS AND DESIGNERS. THEY WERE PRESENTED INTERNATIONALLY UNDER THE LABEL ‘DUTCH DESIGN’. THE LABEL IS QUITE WELL KNOWN BY NOW! ONE OF THESE FURNITURE BRANDS IS GISPEN, ORIGINALLY FROM ROTTERDAM. A UNIQUE AND TIMELESS BRAND, JUST LIKE ONE OF OUR HOTELS. HOTEL NEW YORK.
#36
Willem Hendrik Gispen was born in Amsterdam on 7 December 1890. After dropping out of his architecture studies, he started his own business. The company makes a name for itself with its modern tubular furniture. The clean style of the furniture was a reaction against expressionism. But the furniture only gains real popularity when Gispen is hired to furnish the offices of the Van Nelle factory in 1929.
Gispen’s first lamps are introduced in 1926. This is the start of the GISO collection. The name
comes
from Gispen and his first wife, Anna Gisolf. Each new lamp in the collection is given a basic design originating from previously designed lamps. This makes it easy to build a collection, in a sustainable way by using as few new parts as possible.
Innovation, design, and quality are what Gispen’s designs are all about. Designs from the period between 1930-1950 are still made today. Gipsen is known for its classics.
Gispen’s progressive vision that started 75 years ago is still carried by the company today. They work circularly. What does this mean? All product components can be reused. If a spare part can’t be used for another product, it will become part of something else.
GISPEN X HOTEL NEW YORK Hotel New York has had Gispen furniture in its rooms from the very beginning. The collaboration goes back a long time. They also share a historical connection to Rotterdam. This is where Willem Hendrik Gispen laid the foundation for his company when he bought an artistic smithy. A year later, the Holland America Line headquarters was given its final appearance.
In the summer of 2018, 27 rooms of Hotel New York were redecorated. This also required new furniture, also by Gispen. The company suggested the Gispen 201 chair, with a chrome frame. But Hotel New York wouldn’t be Hotel New York if it didn’t want things just a little different. The frames are now black powder-coated. ‘This gives them a slightly cooler appearance,’ says Roel Dusseldorp, General Manager Hotel New York.

MAKES US PROUD FOR YEARS WE HAD BEEN LOOKING FORWARD TO IT, AND THEN THE MOMENT FINALLY CAME LAST JULY; THE OPENING OF HOTEL JAKARTA AMSTERDAM. THE WEATHER GODS SMILED DOWN ON US, AND WE HAD A BEAUTIFUL OPENING EVENT. BECAUSE WE’RE SO PROUD OF THE RESULTS, WE WOULD LIKE TO PRESENT THEM HERE!

The true eye catcher upon the entry is the subtropical garden. Have you ever seen anything like it in a hotel before? Each corner holds new plants and trees to behold. The Hortus Botanicus has posted signs, so you can learn all about Asian flora.
Although it opened slightly later than the hotel itself, Bakery Westers is a great place to hang out. In the morning it’s full of people buying bread, and later in the afternoon they come for cakes, great coffee, and other delicious treats. Did you know we sell our own coffee beans? Sumatra Gayo beans, roasted specifically for Hotel Jakarta. #40
More and more residents of Amsterdam have found their way to Café Jakarta, our living room. Our ‘Two Worlds Connected’ dishes are very popular, but our bestseller is the Jakarta Table. And we completely understand why!

We like to call our WellCome Wellness the most relaxing place on Java Island. A hot pool, fitness area, and various treatment rooms to feel all zen again. Our guests often turn their beds towards the window to take in all the boats and ships sailing by and why wouldn’t you!
Malabar, the place to be when the sun goes down the city centre. A wonderful view of the IJ, the A’DAM Tower and the centre of Amsterdam. Our cocktail shakers will delight you with beautiful creations, and DJs get the party going in the weekends. A great place to be!

DELFTWARE
DELFTWARE, KNOWN AS DELFT BLUE IN THE NETHERLANDS, IS ONE OF THOSE DUTCH PRODUCTS THAT ENJOYS GLOBAL POPULARITY. PEOPLE ARE OFTEN UNAWARE THAT THIS GLAZED EARTHENWARE HAS A RATHER LONG AND UNRULY HISTORY. IT BEGAN AS A WAY TO IMITATE CHINESE CERAMICS, BUT NOW IT IS A SYMBOL OF DUTCH ART, LIKE FAMOUS PAINTERS SUCH AS REMBRANDT AND VERMEER. WHAT’S THE STORY BEHIND DELFTWARE?

Collaboration Royal Delft celebrates its 365th anniversary in 2018. A unique anniversary we get to be a part of. The Delft earthenware manufacturer recently developed a new, exclusive line of coffee sets we use in all our hotels. This makes us the only hotel group with its own Royal Delft coffee set - something we are extremely proud of. The Dutch royal family also has its own coffee set line from Royal Delft. How’s that for proud to be Dutch?

Why is Delftware called Delft ‘Blue’ in Dutch?
The beautiful blue colour on the pottery is the result of a chemical reaction during baking. Cobalt oxide is used for painting. While painting, it has a grey-blue colour in different shades. When it leaves the oven, it has that distinct bright blue colour.

RINTJE RITSMA and his love for Leeuwarden
RINTJE RITSMA IS A FRISIAN BORN AND RAISED. AS A MULTIPLE WORLD CHAMPION, HE BEGAN HIS SKATING CAREER IN AND AROUND LEEUWARDEN. HE ALWAYS STAYED
‘WHEN YOU STAY IN A HOTEL 220 DAYS A YEAR, YOU START TO APPRECIATE A COMFY MATTRESS’
IN THE WTC HOTEL AND WENT OUT FOR DINNER AT THE ADJOINING ÉLEVÉ RESTAURANT. ONE OF THE NETHERLANDS’ MOST SUCCESSFUL LONG-DISTANCE SKATERS TALKS TO US ABOUT HIS EXPERIENCES.
‘Thanks to the Elfstedentocht, Leeuwarden is inextricably linked with skating. During my professional skating career, I regularly visited the Frisian capital. Through acquaintances, I came into contact with the former F&B Manager of élevé, the restaurant in WTC Hotel Leeuwarden. He invited us for dinner, and many pleasant evenings followed! élevé is a Michelin-star restaurant. Dining here is a real experience. I like everything, so I love being surprised by the chef and his creativity. Up until now, he’s always lived up to my expectations! And as you
can imagine, there’s always a bottle of wine on the table during these evenings. My wife and I also decided to stay overnight at the hotel – very relaxing. Not to mention, convenient! Even though we live half an hour away from Leeuwarden, we were able to organise our morning appointments in the hotel. The location is good too. There’s plenty of parking and you’re in the centre of Leeuwarden in no time. I have to say though, the most important thing about a good hotel are the beds and shower. During my skating career, there were times that I stayed in a hotel 220 days a year. This is when you start to appreciate a comfy mattress. And I can tell you from experience, the beds at the WTC Hotel are extremely comfy.’
‘Next to the hotel is now the Leeuwarder Elfstedenhal with a 400-metre skating stadium. It was constructed several years after my retirement from professional skating. Today I occasionally visit to organise clinics or training sessions. There’s no doubt that if the rink had been here earlier, I’d have stayed in the hotel a lot more often! Whether I miss skating? Not really. I look back fondly at a great twenty-year career. If you’ve been skating professionally for twenty years, you no longer have the need to visit the ice every weekend. Unless it’s natural ice, of course! Those times are very rare in the Netherlands, so when it happens, I’m definitely the first to put on my skates. An especially great feeling is skating on the same water you sail on during summer. When the water is frozen, my social media usually explodes. After all, other regions don’t see ice that often in the Netherlands. That’s the beauty of Friesland!’

DIRECTOR’S OFFICES OF THE FOUNDERS HAVE BEEN RESTORED TO THEIR FORMER GLORY IN HOTEL NEW YORK. THIS WAY, THEIR NAME LIVES ON.
In their twenties, Antoine Plate and Otto Reuchlin founded the company Plate, Reuchlin & Co in 1871. This company operated as a steamship line service to America with two ships. It was partly made possible by W.A. Scholten, an entrepreneur from Groningen. One of the ships was later named after him. Waterweg made Rotterdam the largest harbour in the Netherlands, and the men were doing excellent business. Since 1896, the company has been known as the Holland America Line. New York is already a regular destination. In 1901, a striking office building is constructed on the head of the Wilhelminapier. This would later become the famous Hotel New York. During the years that follow, almost the entire Wilhelminapier is built up with warehouses, offices, an immigrant hotel, and a terminal. In 1920, the shipping company’s name is added to the head office’s facade in beautiful gold lettering. In fact, they still adorn it today!
During the hundred years that the Holland America Line was in Dutch hands, a total of 173 ships were constructed. This is a huge number, and the difference between the ships was significant. They all had one thing in common; almost all their names end(ed) in ‘dam’ or ‘dijk’. Many consider the Nieuw Amsterdam II (1938) the most beautiful ship of its era. It had a very modern appearance. where you have everything at your disposal: nature, culture, delicious food, and a great atmosphere combined with a comfortable climate!’
The Dutch are traditionally pioneers; pushing boundaries is in our blood. Not so long ago, the main route to reach New York was by ship with the Holland America Line departing from Rotterdam. On 15 October 1872, the ship ‘de Rotterdam’ departed for New York. The journey lasted fifteen days and was important to the many migrations from Europe to America in the following years. Not only does the Holland America Line have a special relationship with New York, KLM also has a unique history with this city. As more or less a pioneer, KLM launched the first airline after the Second World War; a regular service between the European mainland and New York. On 21 May 1946, a DC-4 departed Schiphol with 44 passengers on board, including government representatives, journalists, KLMers, and several businessmen. The flight time took a 25 hours, of which 21 were actual flying hours. Today, seventy years later, KLM’s North Atlantic route network is one of Europe’s most important connections with the US. Together with its partner Delta, KLM flies to New York several times a day. Every year, KLM transports half a million customers from Amsterdam to the Big Apple. This makes it KLM’s largest North-Atlantic destination. Combined, KLM and Delta transport approximately 775,000 passengers from Amsterdam to New York a year.
Pieter Elbers, CEO of KLM: ‘New York is one of the most important routes in KLM’s extensive network. In 2016 we celebrated the 70th anniversary of KLM’s Amsterdam-New York route. I’m proud that KLM introduced a unique miniature house in celebration of its anniversary on 7 October of that year: Hotel New York in Rotterdam. The historic location where the Holland America Line departed, and which is now a beautiful, modern hotel. Naturally, this KLM house holds a very special meaning for me.’

WORLD HERITAGE IN JUNE 2009, THE WADDEN – RUNNING FROM DEN HELDER IN HOLLAND TO ESBJERG IN DENMARK – WERE ADDED TO UNESCO’S WORLD HERITAGE LIST. IT CONFIRMED HOW UNIQUE THIS PIECE OF NATURE IS. THERE WAS ONE THING MISSING, BEAUTIFUL AS IT IS, THE WADDEN AREA DID NOT HAVE A GOOD NATURE DOCUMENTARY YET. THAT’S WHY ‘WAD’ WAS CREATED.
#79
TRAVEL The Wadden area – part of the Netherlands, Germany, and Denmark – makes a complete metamorphosis twice a day. One moment you can see miles of mudflats, the next all you see is water. This phenomenon gave the sea its name. Because sometimes you can walk – or wade – across it, it’s literally a wadeable sea. This is why it’s called the Waadsee in Frisian and the Waddenzee in Dutch.
Spectacular as this experience may be, it’s far from the only thing that makes the Wadden area so special. After all, you don’t get added to the UNESCO World Heritage List for no reason. This is even more true for nature reserves. So why exactly did the Wadden make it to the list? The short answer is because it’s so unique. The long answer includes three reasons.
WHY WORLD HERITAGE? First of all, the area is still young, or rather, relatively young. It formed about seven thousand years ago, following the last ice age. This is quite a long time ago, and it certainly does not mean that it looks the same today as it did back then. That’s because the Wadden area is so dynamic; sand plates and dunes form very rapidly and disappear just as quickly. As a result, you can see with your very own eyes how the Wadden landscapes have formed over the past seven thousand years. Nature still has free reign there today. This makes the Wadden area unique indeed.
AS MANY AS TEN THOUSAND SPECIES OF PLANTS AND ANIMALS LIVE IN THE LAND AND WATERS OF THE WADDEN AREA #80
THE FILM PORTRAYS THE WADDEN AREA IN ALL ITS BEAUTY AND SHOWS HOW GRAND AND DYNAMIC IT TRULY IS
The second reason is the rich diversity of life on the Wadden. Conditions on the Wad change on a daily basis – particularly where the salt water of the sea meets the fresh river water, and the tides and wind vary constantly. Sand and silt are deposited, and you WAD NOW? can see how nature, plants, and animals have their own ingenious The natural beauty of the Wadden area never seizes to amaze. ways of dealing with all the changes. It gives the Wadden area its That’s exactly what the creators of the film ‘WAD’ want to achieve. many faces, and all the changes lead to a unique variety of plants They want to show how very special this unique area in the world and animals.
is, as well as how vulnerable it is. The film depicts the Wadden area’s entire ecosystem in a way that has never been done before.
Which brings us to item three: The way of life and richness of plants The nature reserve’s entire animal kingdom makes an appearance, and animals in the Wadden Sea. As many as ten thousand species from the very bottom to the top of the food chain. In other words, of plants and animals live in the land and waters of the Wadden from the smallest organisms – such as diatoms and shellfish – to area. In addition to residents, the area also has many visitors. Every the peregrine falcon and grey seal. The film portrays the Wadden year, ten to twelve million birds make their way past the Wad. Such area in all its beauty and shows how grand and dynamic it truly is. a wide variety of life is truly unique – you won’t find it anywhere else It is proof of how precious this piece of UNESCO World Heritage in the world.
truly is.
This film, which premiered in Dutch cinemas in the autumn of 2018, is just the start, however. In 2019, a four-part television series will appear with all the stories that were cut from the film. In addition, a lesson programme has been developed for primary and secondary schools. It is important that Dutch children learn about this unique area.
The Wadden area has a lot to offer, as well as education as science. Many studies have been conducted into the Wadden Sea – few bodies of water in the world have been as thoroughly explored as this sea. And research continues. Scientists still have a lot to learn about the region – like observing large-scale bird migrations up from Africa – and so do you! The Wadden Sea is a great place for anyone to learn more about the sea and surrounding nature.

SUSTAINABILITY IS AN INCREASINGLY IMPORTANT TOPIC, BOTH IN TODAY’S WORLD AND CERTAINLY WITHIN TU DELFT’S NUON SOLAR TEAM. THEIR GOAL IS TO INSPIRE THE WORLD IN THE FIELD OF HIGH-END TECHNOLOGY AND SUSTAINABLE ENERGY. HOW? BY PARTICIPATING IN THE WORLD SOLAR CHALLENGE. get as much power out of the solar panels on the cars as possible, in order to optimally charge the batteries. They power the motor and keep it going. There are a number of rules as well. For instance, a solar car’s maximum dimensions are 5 by 2.2 metres, and it can contain up to 6 square metres of solar panels. It is therefore essential to arrive at the starting line in a car that is as advanced as it can be.
The technology goes beyond power, however. Each solar car also transmits data to its support vehicle – including on its power levels and speed. This information is combined with weather forecasts in a computer in the support vehicle. Based on this, the optimal speed for the solar car is calculated. The data is then digitally transmitted to the race car’s cruise control.

THE DUTCH CHEESE PLATTER THESE DAYS, PRETTY MUCH EVERY RESTAURANT HAS A CHEESE PLATTER ON THE MENU. PARISIANS ENJOY STRONG FLAVOURS ON THEIR CHEESE PLATTER. DUTCH PEOPLE NOT SO MUCH. THE NETHERLANDS HAS AN EXCELLENT REPUTATION AS A CHEESE COUNTRY. WE DUTCH ARE KNOWN FOR OUR LOVELY GOUDA CHEESES, BUT THERE IS SO MUCH MORE. FARMER’S CHEESE IS BECOMING INCREASINGLY POPULAR, BUT THE NETHERLANDS ALSO MAKES VERY NICE GOAT AND SHEEP CHEESES, AND EVEN BLUE AND RED-SMEAR CHEESES. What exactly is cheese? Basically, cheese is a way to help fresh milk keep longer and make it more solid. Farmers are the one’s who add flavour to the cheese. They choose a kind of milk (cow’s, sheep’s, goat’s, or even buffalo’s), the feed the animals receive, the way in which the milk is processed, the duration of the ripening, how they salt and season the cheese, and

whether they add mould cultures. Each step in

the process affects the taste. This is the reason why a great cheese can be subtly or even significantly different from the same cheese prepared a year later.
YES OR NO? An allergy can have a significant impact on the enjoyment of cheese. Still, depending on the seriousness of the allergy, there are a few alternative ways to enjoy cheese. If you suffer from a cow milk allergy, it’s best to avoid cow milk
cheese, but goat cheese as well. The proteins in both products are very similar. In theory, sheep’s cheese can be an option. People who are lactose intolerant can try this cheese if it is older than twelve months. Cheese lovers who are allergic to gluten are in luck; cheese is gluten-free. Be aware of how the cheese has been washed! Cheeses washed in beer or an eau de vie do contain gluten. If you’re pregnant, don’t eat raw milk cheese: It may contain listeria bacteria, which can harm the unborn child. Pregnant women should take this warning seriously. Avoid raw-milk cheeses. Instead, opt for cheese made with pasteurised milk. However, most people don’t know that the listeria bacteria in raw-milk cheese breaks down after fourteen weeks: Hard, farmer’s cheeses over four months old are therefore perfectly viable on a cheese platter.
SO MANY CHOICES The Netherlands produces so many wonderful cheeses! Which one would you choose? Whether you like milder or sharper cheeses; a tasty cheese platter is all about how you prepare it. Take your cheeses out of the fridge one hour in advance. This way, the cheese will be at room temperature, which is best for the flavour. Use a separate knife to cut each individual cheese; this prevents the flavours from influencing each other. Properly build up the flavours. Start with something fresh and end with something strong to ensure you will be able to taste each cheese. This five-cheese cheese platter is a recipe for success: • Goat cheese, because of the fresh acidic notes, goat cheese is a great way to start off the cheese platter • White cheese, to wake up your taste buds • Red-smear or hard cheese up to ten months old; for its saltiness • Hard, salty, or cheeses with special ingredients such as cloves or cumin • Blue cheese completes the board, as this cheese often has an outspokenly strong and sharp taste Make sure to always first sample the cheeses before deciding on your final composition. Don’t be afraid to experiment and be creative. Not a fan of blue cheese or goat cheese? Choose something else keeping in mind this composition. Explore, taste, and enjoy!
