The theme of this magazine is ‘Italy’. This may be a bit surprising for a winter issue, and maybe our minds are still thinking about the sun, due to the fantastic summer we have had. The beautiful weather began early, which made the Netherlands a great holiday destination. Enjoying the beach without having to puff under a parasol. Cycling through the cooling woods and enjoying shopping in one of the many beautiful historic cities in our country. No stress at the airport, but instead traveling by bike, by car or by train (and of course the ferry) to your holiday destination, which is always nearby. The Netherlands provides a familiar, safe and varied holiday destination. A foreign country can not beat that! And now we are already in fall and awaiting winter. The days are getting shorter, the heater is being turned up and the candles are lit. For us, it doesn’t have to be warm all year long. Because it is precisely these different seasons that make the Netherlands such a nice country to live in. Also unique is the water that surrounds the country. ‘We think it is a common thing, but it is not always like in the Netherlands, that the sea is nearby. Here you can just go there to simply relax and unwind’ The Netherlands is also an excellent destination for winter sports. With the right equipment you can endlessly bike through the woods or run along the beach. But it doesn’t become a real fairy tale until the rivers are frozen and we can pull out our skates. You can enjoy traveling from town to town on skates and enjoy a cake and coffee on the way. The only small downside is that we don’t have any mountains to ski on. Have you ever been to the Dolomites? I can really recommend it. The landscape is stunningly beautiful and the slopes are very kind. Located on the mountain are small huts where you can enjoy a cozy afternoon. Simply old-fashioned hospitality. And we haven’t even talked about the delicious Italian food yet. In the magazine you will find a great article about the beautiful resort and really nice hotel in Corvara, owned by the family Costamoling. A real winner! In the magazine you will also find the wonderful story of an Italian family business: Allegrini. The family produces quality soap products and provides miniature soaps and shampoos for the rooms of WestCord hotels. Furthermore, for this edition of the magazine we have invited many guests that have very close ties to Italy. Please read the story of Winonah de Jong. She lives in Milan with her husband Nigel. Bartender and cocktail shaker Chris Nuzzolo works in the SKYY Bar. He was born in Italy. We also have a column by Matteo van der Grijn, an actor who played in one of the Netherlands´ most famous plays: ‘Soldaat van Oranje – The Musical’. His family originally comes from Italy. Matteo van der Grijn La vita è bella!
Cycling through Amsterdam, the busy traffic passes me by. The canals, the cafes, the atmosphere, the theater around the corner, and even the tourists who occasionally annoy me make Amsterdam the city that I love and where I was born. Still, deep down in my heart I am actually an Italian. Until my early twenties I grew up in the north of Italy, Liguria – also known as the Riviera. And how! In the middle of nowhere, on a mountain, 25 kilometers away from the coast with the nearest neighbor being about 2 kilometers away. Together with my father and my mother, my early lifestyle was very ‘Spartan’. No running water, no electricity, no telephone and even no television. Very primitive you could say. But I wouldn’t have wanted to miss that for anything. Here in Italy I have learned how to appreciate the smallest things in life and these experiences have formed the foundation of the rest of my life. For example, it is not a matter of course to have central heating. I had to chop wood. During my early years, I washed myself in the stream behind the house. And I can tell you, it was very cold. I still have a photograph in which my father breaks the ice in the middle of the winter, so that I could have my bath. But it was Italy. The land of the sun, the temperament, the hospitality and the exuberant life. There, I learned how to eat like a real Italian. Eat well, lots of it, and of course pure food! The necessary wine included.
I always look forward to traveling to Italy with my kids. I love the way in which Italians treat their kids. I remember one holiday in Sicily. We had rented a cottage that was part of a large campagna. My daughter was only one year old. We went for a meal in the restaurant near the campagna. They received us with a great hospitality that I’m not used to in the Netherlands. My daughter was even ‘kidnapped’ to the kitchen, so that my girlfriend and I could eat in peace. Kids are the future; they should be treated with love and respect. ‘Che bel bambino!’ we often shout – ‘What a beautiful child!’ – and before you know it you have lost your daughter and she is somewhere in a shop surrounded by enthusiastic Italians giving her sweets or ice cream. I miss Italy, but at the same time I don’t. I lived in the mountains, in stark contrast to the city of Amsterdam where I live now. I try to teach my kids Italian. But for now my daughter doesn’t allow me to read aloud to her in Italian. ‘In Dutch daddy’ she says, ‘otherwise mummy will have to put me to bed’. I hope in the future she will love this country as much as I do. Unfortunately, I cannot bring Italy to Amsterdam and vice versa. For now, I’ll stay living here for my work, my family and the culture. But who knows what the future might bring. Life is beautiful! Or: La vita è bella!
At twelve o’clock in the afternoon every Italian family serves a meal of pasta. Extensive dining is something I occasionally miss here in the Netherlands. Here we eat our sandwich quickly, or even while we’re on the bike or alone while waiting for traffic, without actually enjoying the food. Take a break and enjoy the short time before you go back to work again. When my son of one-and-a-half once again threw pasta around the room, I taught him the Italian ‘buono gesture’ – spinning around your index finder on the sides of your cheek.

Matteo van der Grijn is an actor known for his work on ‘De Troon’, ‘Soldaat van Oranje – The Musical’, ‘Daglicht’ and ‘Toscaanse Bruiloft’. He currently has a guest role in ‘Nieuwe Buren’ and is busy with the rehearsals for the National Theater with ‘Blauwdruk voor een nog beter leven’. After that he will star in the stage adaptation of ‘Fatal Attraction’, along with Loes Haverkort.

Bartender at the SKYY Bar in WestCord Fashion Hotel Amsterdam Chris Nuzzolo (40) works as a bartender at the SKYY bar in WestCord Fashion Hotel Amsterdam. The love for his work arose by accident when he had to fill in for someone else one a night during his internship at the famous Grand Hotel Krasnapolsky. He’s been there ever since 1996 thanks to the huge passion he has for his job.

I like the diversity and the contact with our guests the most about my job. I have seen, heard and gone through so much that I could write a whole book about it!
Since when have you been working for WestCord Fashion Hotel Amsterdam? ‘I have been working here as a bartender since July 2013.’
Why are you the right person for this job? ‘Good question! Haha, you should ask my manager. For me, it’s about satisfying my guests and giving them a night to remember.’
And what kind of work did you do before this? ‘I have been working in the catering industry since I was sixteen years old. It is really in my blood. I’ve had my own business for years. As a catering entrepreneur I also put all my passion and love for the job in my work. I regularly worked there in the kitchen as a cook . I am a very good cook! Perhaps that’s because of my Italian roots.’
Perhaps it is because of your Italian roots? ‘Maybe! I was born in Friuli in the northeast of Italy and have been living in the Netherlands for 35 years already. A small part of my family is currently in the Netherlands, most of my family members live in Italy.’
What kind of education did you have? ‘The College of Hospitality Management.’

What do you like the best about your job? ‘I like the diversity and the contact with our guests the most about my job. I have seen, heard and gone through so much that I could write a whole book about it! But I always say: a good bartender doesn’t see, doesn’t hear and doesn’t talk. We do experience a lot of fun and crazy things. The bartender is always “the ears” of the hotel; we often hear and know a lot. Everyone can learn how to serve a beer or to make a cocktail, but a good bartender distinguishes himself by his feeling for the bar, quality and hospitality. The SKYY bar is known as one of the better cocktail bars in Amsterdam and the goal of our professional team is to maintain that level and to offer fantastic service, because that’s how you distinguish yourself.’ What do you like about the SKYY Bar? ‘First of all, the fantastic view you have over the city from the bar of course! The design of the bar is awesome and as employees we get the freedom to do new and cool things for our guests in the bar. That’s very nice. It really is a fun and cozy bar.’

What is so Italian about you? ‘Haha, my temperament! Yes. I really have that Italian temperament, in a good way, I hope.’ Do you have any other hobbies? ‘I like going for dinner, having a drink and playing golf with friends.’ And where do you like going on holiday the most? ‘I like going to my native area Friuli, because I really miss the food and nice wines. Friuli is a wine area and I am a real foodie and wine lover. That holiday is always a big eat and drink feast. If I really want to take it easy, I go to Asia for the palm trees and white sandy beaches. I can enjoy those as well.’ What could we still learn from the Italians? ‘Haha, romance and good manners! Too often I see men that come through the door here without holding the door open or not taking the coat of their wife or date. Or they sit down first instead of offering the woman a seat; they don’t pull up a chair, that sort of thing. That little bit of elegance we should be aware of more here. Maybe I’m a little bit old-fashioned, but I think it would do romance well if you look after a woman a little bit.’

Winonah doesn’t stand still and pumps that same passion in her own online platform Styledbywinonah.com. WestCord speaks with her about her passion, ambition and la dolce vita! You live with your family in Italy. Describe your version of ‘La Dolce Vita’! ‘A lovely Sunday afternoon with my whole family on the terrace of the Bulgari Hotel. A nice juice for the kids and a glass of Ruinart champagne for mum and dad.’ What do you miss about the Netherlands now that you live in Italy? ‘It sounds strange, but just the simple things. The Albert Heijn, pre-sliced and pre-washed vegetables and the Dutch cheese; there is nothing better than that.’ What do you want to show about yourself to your followers and readers on social media and your own platform StyledByWinonah.com? ‘That I am also an individual independently of my husband. That I am trying to set up my own career and turn my passion into a reality. I want them to know that I had to fight for it as well and that everything didn’t just fall into my lap.’ Which women of enterprise do you think of as a role model? ‘I look at women that combine their career with motherhood well.’ The fact that you are an entrepreneur now means a lot of changes for the kids as well of course. How did they react to that? ‘My daughter Isaura is slowly starting to realize it. Her brother is five years old now and when I’m leaving he sometimes says: “Mummy, are you leaving?” It breaks my heart and I find it difficult for a moment. I have to persevere and make sure they are in good hands. And they are, because my mother looks after them. That gives me peace. All in all, this also makes me a more fun mother!’
How is StyledByWinonah.com doing? ‘Very well. I still have so many ideas with which I will expand the website, like a beauty column and tips for my followers. It is still in development. For me the sharing began on social media and I wanted to continue doing that. Fashion, beauty and lifestyle are my passion and hobby and I try to build a company around these pillars.’ What can we learn from the Italian woman when it comes to fashion? ‘That you can liven it up when it comes to fashion. Leave those jeans in the cupboard when you go out for a nice dinner.’ What do you want StyledByWinonah.com to become eventually? ‘My ultimate dream is to have my own clothing line. My website and blog are a platform to facilitate this. Here I can show my style, the typical Winonah style. I pay close attention to the comments of my followers; they are the client and I listen to their feedback. Eventually, I would like to expand on that. This doesn’t all have to happen within a year. I want to learn and take the time to bring a brand onto the market.’ Where do you like to shop the most? ‘I am a huge online shopper! That surprises some people; apparently they think that I explore all the shops, but I simply just don’t have the time for that as a fulltime mother. I think online shopping is the invention of the century! My favorite shopping sites are; net-a-porter.com, mytheresa.com, luisaviaroma. com, matchesfashion.com, brownsfashion.com and harrods.com. Net-A-Porter really is my number one; there I will have access to pieces that are not online yet. Those are nice extras.’

What do those Italians really do better than us Dutch people? ‘I have to say that I am a big fan of the Italian cuisine. Not to mention the style. Italians are some of the best dressed people in the world.’ What did you have to get used to the most when you moved to Italy? ‘The siestas!’ What have you learned from the Italians? ‘Because of the easy-going mentality of the Italians I was forced to become more patient.’ What is the secret of the beauty and air of the Italian woman? ‘I think it is the realization that as a woman you can be a real woman. That femininity is really celebrated there.’

What are the fashion essentials of the Italian man and woman? ‘For the men it is definitely a perfectly cut suit with the most beautiful Italian leather shoes. For the ladies it is a feminine dress with a clean cut, in combination with a pair of statement heels. Everything is then hidden behind an enormous fur coat. Emphasizing femininity is the most important aspect.’ What would an Italian look be like styled by Winonah? ‘A black A-line dress with a tight cut coat over it. Both come up to the knee. Pointy Valentino heels in nude and the Celine Box in croc or in nude. Hair styled in a big, robust curl – to make sure the whole look does not look too serious.’ Who are your Italian fashion icons? ‘Anna Dello Russo keeps surprising me with her exuberant style. Fashion designer Fausto Puglisi also inspires me a lot with his über-feminine creations. I once got to meet him during an event where Anne was also present.’

ominique van Hulst A look into the world of presentation
She’s back! Dominique van Hulst, also known as Do, recovers after the birth of her first child; Jip. She eventually married her love Marc after a time of being apart. She now takes her place in front of the camera, as a host for the show ‘Surprise Surprise’! We meet the smiling singer on a drizzly afternoon in Amsterdam. We sit down on the couch in the bar and catch up on the stress of our everyday lives, but we also discuss her love for Italy and her new role as a mother and television host. How are you feeling now, a few months after the birth of your son Jip? ‘I feel good, I exercise and I eat healthy, but to be honest, losing weight is a bit disappointing. During my pregnancy I gained about 28 kilograms. But I’m having difficulty losing the final 12 kilograms. But of course, I won’t give up! Oh well, I’m just very busy with Jip at the moment. He’s not even a year old, which means he wakes up at about three times a night. And at half past six in the morning everything starts all over again.’ What is motherhood like? Is it what you expected it to be? ‘I never really imagined what it would be like. I come from a close family and now that I have my own family it feels the same as when I was still living at home. But there is one really special feeling; that feeling of being in loving with your child.’ Were you warned about anything? What things went better than expected and what were your disappointments? ‘That you’ll no longer have time for yourself. Which is completely true! I rarely have any free time left. It’s different for a man, because his normal life just continues, while a woman has months of maternity leave and is constantly in the vicinity of the baby. My husband Marc is also still getting used to all his new daily obligations and the fact that he has to play the role of a dad when he comes home from work. He doesn’t like it that he is required - because of his work - to miss being with his new son. So for a man the way of getting used to a new child is different than that of a woman. This is something I’ve been noticing recently.’
Are you already thinking about having a second baby? ‘No, not right now. Eventually I’d like to think about it, but I also want to just continue doing my work. On the other hand, I do not want to miss too much time with my son. We’ve not had a child to let him be taken care of by someone else half of the time. So we’ll have to find the right balance. But that shouldn’t be a problem in the end. My work can be busy, but at the same time it can be very quiet.’ Don’t you find that a bit scary? ‘Now that I have a child it’s all a bit more exciting. I’ve never been afraid of ending up without a job, but now that I have Jip I want a bit more certainty in my life.’ Are you currently experiencing this with the ‘Surprise Surprise’ show? ‘Yes, I think it’s really cool! Presenting is a lot of fun, and I’d love to grow further into it. “Surprise Surprise” is an amazing program! I love feel-good programs and I’m happy we can bring joy to many people with each new show. From giving a flower to a lady at the age of 74 who still takes care of others to organizing a sweet sixteen party for a young mother who never got to experience that part of her life. The program brings tears of happiness to everyone, which is really a nice thing, seeing that a lot of programs on TV are about other people’s misery.’ It’s a tough show to present because there is a lot happening. How do you manage it? ‘I think I just remain myself while I’m presenting and I have definitely learned from others. I’m not afraid to say that I think I have a talent for it. And it is ridiculously fun to do. My experience on stage as a singer is definitely a bonus, but there are still so many things to learn. I even have a coach who tells me how to

TRAVEL improve. That was even something I asked for. Because I want to learn more right from the start. One thing I think is important to learn is how to lead the discussion in the right way. That’s something that is very important for this show.’ Are there any other hosts you really enjoy watching? ‘Yes, I think Wendy van Dijk is very good. She’s remains her true self and has a great ability to empathize. Linda de Mol is an excellent game show host! But also people like Mies Bouwman of the past who presented in a very natural manner.’ Is presenting something you wish to develop and do more of? ‘That is definitely my goal. But I’ll continue producing albums and singing of course. It would be nice to work as an actress some time; although I do not believe I’m a brilliant actress. But acting isn’t really a dream of mine, and presenting is something I really enjoy. It’s also closest to me as an artist.’ Are you an optimist or a pessimist? ‘Sometimes I can linger in melancholy. Everything is in extremes for me. Both sadness and happiness. I really love the quality and small things in life that make you feel rich. i could have been an italian for that matter! Lots of passion!’ Please describe your love for Italy. ‘I love their design, their temperament, La Dolce Vita, the climate and of course the country itself. The cities, the nature. I once took a wine trip from the north to the south of Tuscany. We ate truffle and meat dishes in the north and pastas and seafood in the south. Delicious! We’re real wine lovers and only drink Italian red wines. Marc knows quite a bit about the various grapes. Italian red wine is always delicious!’ What is your fondest memory of Italy? ‘The times that we went on holiday to former Yugoslavia and always stayed in Milan for a couple of days. We used to hire those famous yellow bikes and cycle with the family around Milan for three days! We looked at shops and enjoyed unique neighborhoods and art. We ate at the best restaurants. Those are really great memories.’

If you go on vacation to Italy, where do you prefer to go? ‘Tuscany I think. I really love that place; it’s beautiful, there are many gorgeous villages, the nature is serene, the people are kind, the weather is great and the food is delicious! Really, you can do everything in Italy. Even skiing!’

What do your holidays look like? ‘I love to stay in boutique hotels. I think they’re more personal. That includes the WestCord Hotels. But you won’t often see me in large chain hotels. I think a good bed, a soft duvet cover and lots of pillows are what makes a hotel luxurious. I believe those things are really vital to an excellent hotel. But I also enjoy the wellness facilities. But I enjoy it more in my own country. In the Netherlands I more often make use of a hotel spa than in a foreign country. When we’re abroad we prefer to explore the country. Marc and I often enjoy a weekend away in the Netherlands. I enjoy a nice sauna and a firm massage. I think a really good treatment is important in hotels that offer a wellness service. I also think the staff should be friendly and they should make you feel at home.’ What kind of a lifestyle do you live? ‘I’m a real Burgundian, I love enjoying myself! For me, luxury is all about the experience and atmosphere. We were in Piedmont in Italy once and enjoyed a meal at a restaurant on the top of a mountain. The whole family was in the kitchen enjoying the cooking. I thought that was a real joy. Fantastic! I love the Mediterranean lifestyle of the Italians!’ You are currently presenting the ‘Surprise Surprise’ show. What other kind of program would you like to present? ‘I dream of presenting a huge live show in the future. Or a combination of live and recorded. That would be incredible.’ What is it like to present with Henny Huisman? ‘I think it’s really cool! I enjoyed watching him on TV as a small child. I truly believe he is the founder of the feel-good programs. He has lots of experience and is really funny as well! He’s much more mischievous than you think, [laughs], we have a real chemistry together!’ What other things are on your schedule? ‘I’m performing a matinee in Deventer on the day after Christmas; I’ll be singing Christmas songs, complete with strings. I always love that! Because I can only sing Christmas songs for a short period, [laughs], two weeks maximum! I love Christmas and its carols. I like being at home for Christmas with friends and family. In February 2015, I’m starting a theater tour, so I’m currently working on a new repertoire. I’m writing songs together with various people. I produce everything in-house. I’m still planning on writing a great single; a single that is played a lot on the radio and is comparable to an advertising campaign for a brand.

It’s something I’m working really hard on right now. I’m also thinking of producing an album with more acoustic songs on it. It’s something that is more personal and smaller, I have reached that stage in my career now. Over the past 10 years of making music a lot has changed for me personally. In the past I dreamed of performing huge shows like Beyoncé, whereas now I’ve started to enjoy music itself and less so the huge shows around it. The emotion in music is the most important to me.’ Who do you think is a great entertainer? ‘Well, obviously Beyoncé. I love her as a total package. You can’t do all that by yourself of course, which means gathering the right people around her is one of her great talents.’ What are your greatest talents? ‘I am a fighter. I can take a couple of setbacks. If it does not go as I want, or if I’m having difficulty, then I keep trying my best. I also remain myself; I believe that is an important talent to have. I keep both feet on the ground. And I’m not afraid to say that I am very musical and I love this profession. I really enjoy it. I am a singer; it is not just something I do. It gives me a certain satisfaction.’ Who would you like to sing with in the future? ‘D’Angelo is great. Especially live he is amazing! I’d also love to work with John Mayer, his songs are so impressive! And of course, I would have loved to sing with Whitney during her peek years...’ Is working with D’Angelo or John Mayer a real possibility? ‘Why not? Everything is possible, right? I’ve also worked with Pitbull and Bryan Adams. But if I want to do something like that again, I would have to be fully committed to it.’

That lovely feeling of the fresh air in your lungs and rays of sun in your neck, the beautiful – almost picturesque – surroundings, the crunching of the snow and the heat of the flames when you huddle up near the fireplace after a long day of skiing? Wonderful. But where is the trip headed to this year? We would like to introduce Alta Badia, a fine ski resort in the heart of the Dolomites, Northern Italy. #42 ALTA BADIA
It is not without reason that Alta Badia is often described as the perfect symbiosis between Tyrolean tradition and Italian Dolce Vita Alta Badia is a gorgeous mountain area with a not entirely undeserving reputation; the Limestone Mountains have been included in the UNESCO World Heritage List since 2009. Together with the impressive, vertical rock formation and the sharp mountaintops the six Tyrolean villages create a beautiful scenery. The area is covered with snow in winter and luxuriant green in summer. It is this combination that makes Alta Badia pre-eminently accessible for activities in all seasons. Add to this the 17,835 beds, 450 ski lifts, 1.220 kilometers of ski runs, 80 kilometers of cross country ski runs and the world famous Selle Ronda track at an altitude of 3,151 meters and you’ll end up with a very alluring output.

Skittles On Ice Everybody knows curling – that unusual sport with sliding skittle pins and fast moving brooms – from TV, but only a few of us have actually played the game. On the frozen Sompunt Lake in Alta Badia you can get to know this sport of Scottish origin in an accessible manner. Here the sport got a somewhat friendlier name anyway, namely ‘Skittles On Ice’. Not only does the name sound more accessible, also the movement of the broom and the skittle pins are made a lot more user-friendly. For lovers of the sport a professional rink has also been installed. Are you up for the challenge?
Winter holidays Of course, the winters in Alta Badia will be overrun by countless possibilities. Skiing, snowboarding, Nordic walking, skating, walking, free ride skiing, sledging; the supply matches every possible demand. Because the area is at a height of 1,400 to 3,269 meters, snow is guaranteed in the period of November until April. The low atmospheric humidity creates a powdery type of snow and ideal snow conditions, which turns the mountains into ultimate ski slopes. A fun fact: Alta Badia was at the bottom of a tropical sea 200 million years ago. It may be hard to understand, but the bestknown mountaintops used to be coral reefs once, like the Sella Massif, the Marmolada Glacier and the Civetta Group.

‘For me, Hotel New York is the ideal location for my business meetings. Whenever I’m there I always feel like I’m carrying a piece of history with me. My grandfather had his own taxi company in Katendrecht during the Second World War. He was a regular chauffeur for the guests of the, at that time, headquarters of the famous Holland America Line. It was from here that people departed for America, and of course, many of the people that left would never return again. ew to Terschelling
Going for a walk along unknown places! With all its nature Wadden Island Terschelling is a beautiful place to go for a walk. With at least 250 kilometers of trails, dirt roads and charming villages, you can completely relax here. It is even nicer now that the existing trails have had a makeover and a true walking network has been introduced. State Forestry has marked six trails on the island that lead you along the most beautiful spots. And besides the marked trails, four walks have been put together without any marking. These routes run along unfamiliar and historical sites, through woods, dunes and polders. The various starting points are easily accessible by public transport and all routes have on site catering facilities, so that you can have a nice rest in between. The length of the routes ranges from five to fifteen kilometers. With a reasonable fitness, equipped with the right walking shoes and the walking route book these walks are possible for anyone. You will soon notice that walking will make you completely detach yourself from daily hustles and concerns. A nice way to enjoy the sun, with that wind-in-your-hair feeling... This way you will be able to completely relax!

Economical, sporty and complete Green morals are an increasingly stronger sentiment in our current society. Not only do multinationals fanatically put green stickers on their products, also on the road the attention to economical cars grows steadily. And even though it is still often a struggle with smart solutions, Audi has discovered a nice method with the Tron-technology. Economical yet sporty. The Tron-technology comes in two forms: E-tron and G-tron. In short, the E-tron is a hybrid plug-in (power) and the G-tron is a natural gas/biogas model. Whereas many brands sacrifice on other functions with economical models, the Audio Sportback A3’s E-tron and G-tron are just as good – and fast – as always. But more economical. And cleaner.
E-tron With the Sportback A3, Audi has taken a smart place in the hybrid scene. The German manufacturer predicts that the average person drives seventy kilometers per day. The first fifty kilometers it drives fully on electric power, as a result it only drives the last twenty kilometers of the daily trip with a hybrid gasoline engine. It is easy

Whereas many brands sacrifice on other functions with economical models, the Audio Sportback A3’s E-tron and G-tron are just as good – and fast – as always. to calculate that the consumption comes down by 1.5 liters of gasoline per hundred kilometers. Which is extremely economical. But what are the huge advantages compared to all other economical, yet electric cars? There are two: power and radius of action. An often heard problem with full electric cars is the low radius of action – the distance a car can cover without charging. Audi chose an economical car, but didn’t sacrifice on the content of the gasoline tank and because of this the total driving distance is an average of 940 kilometers. Plenty of space for a nice ride! The second advantage – and this is perhaps the most fun part – is the powerful engine. 204 hp. Enough to sprint from zero to a hundred kilometers an hour within 7.6 seconds, with a maximum speed of 222 kilometers. Quite a punch. And because of the direct coupling with the electric engine it responds as quick as lightning to the commands of its boss. In case you love to rest during driving, there is yet another advantage: the E-tron is extremely quiet. Even the ‘buzzing’ of most electric cars has been gotten rid of skillfully by engineers.
G-tron Also for the G-tron, Audi has used the ultimately distinguished Sportback A3 again. Under the hood it is however a totally different cup of tea. The main force behind the G-tron is the addition of a double Compressed Natural Gastank (CNG) under the load-bed of the trunk. Note: with the G-tron, the gas tank also exists next to a full gasoline tank. The driving distance does not decrease, in contrast to many other gas vehicles. But it is a lot more economical and cleaner. A full natural gas tank drives between 240 and 270 kilometers and costs a mere fifteen euros. On the other hand, you pay just as much road tax for gasoline vehicles. After the gas tank has emptied, the A3 will automatically switch over to the gasoline installation. When you remain in the gas kilometers, you drive extremely advantageous. With over 125 CNG-tank stations, there is a national coverage in the Netherlands. So finding a tank station within reach will hardly cause any problems. Besides natural gas, half of these stations also offer green gas or biogas. In Germany, Switzerland, Austria and Italy there is also national coverage, and also in France and Spain there are dozens of CNG-
stations. In theory, switching to gasoline is not necessary anymore. But what about the environment? The CO2 emission with natural gas is 88 grams per kilometer. If you choose green gas with the tank (see text box) the emission is considerably lower: 25 grams per kilometer. By way of illustration: with a gasoline tank, the emission for those five liters you use per 100 kilometers will soon be 120 grams per kilometer. German grandeur That the Germans have made building cars their second nature should be obvious by now. Audi has earned its stripes largely with the A3, which is one of the most popular models. It is therefore not surprising that the manufacturer made the choice to give the showpiece a cleaner and more economical upgrade. Smart, because the A3 is a popular leased car that has a respective seven percent addition (E-tron) and a fourteen percent addition (G-tron) thanks to the Tron-techniques. What is green gas? Besides normal natural gas, biogas or green gas is now also available with many tank stations. But what is green gas exactly? This is how it works: green gas is produced from (among others) sediment, waste from dumping grounds, garden waste, vegetable and fruit residue and animal waste products like manure. Next, the biogas is cleaned and dried and is graded up to the same quality as natural gas. After this process is complete, it can be called green gas, which makes it a sustainable alternative to fossil natural gas.

The New Yoga School
in 2013 Johan Noorloos’s entrepreneurial adventure started in the shape of The New Yoga School in Amsterdam. The centuries-old traditions and wisdoms from the yoga doctrine already inspired the young Noorloos to take action about 15 years ago. Johan took matters into his own hands after he was diagnosed with a life-threatening disorder.

Johan, how did this adventure start? ‘I have been teaching at different locations for twelve years already. I started practicing yoga when I was in a phase of my life in which a lot was going on. My fascination for yoga and the matching way of life drove me to travel for it and follow training and learn more about it in different continents. I started sharing my experiences with others and found out that I became a kind of yoga teacher. My ambition to bring everything together in one place grew. A place where I could give teacher training, yoga lessons and where people can also just have some peace and quiet in the garden on a Sunday. I wanted to do this in the heart of Amsterdam, in the Jordaan, where people are busy and sometimes also quite lonely because of their hectic lives. The community – as I call it – is the most important pillar of this school. We’re a place where you can be yourself, where there is always someone to talk to. We don’t do outward-shows or tricks. I think people need this. With a membership of 49 euro a month you can come here whenever you want and follow the lessons you want.’ What does yoga actually do to people? ‘Everyone will answer that question differently, but the common factor will be that it makes people feel calm, in balance and stronger. That’s the experience. I think the trick is to know how to translate what you do on the mat into life itself. And that you come here when you feel the need to practice again. Something that helps everyone is to keep breathing when the going gets tough. Breathing deeply in the most difficult positions is an exercise that you can perform during difficult situations in the office. And what I consider to be a very nice metaphor is pushing the boundaries of tension in the muscle or causing an injury to that muscle. That’s a very fine line, the question is; what is good for you and what is harmful to you? To be able to feel that boundary is what people find really difficult in daily life. There are more than one million people with burn-out-related problems in the Netherlands. These are the people that cross their boundaries systematically and you could say they have sustained an injury in life. On the yoga mat you learn to feel and mainly accept your physical boundaries. This means it is very applicable in daily life.’ Who gave you the best advice and what was it? ‘Two quotes stuck with me. The first is “if you want to live life forwards, you have to understand it backwards”. To look back every now and then and keep considering why you do what you do. And the second is “there is a crack in everything, that’s where the light comes in”. Be prepared to discover your own cracks and dare to be vulnerable in it. From there, dare to live up to your own potential. I was sick for a while. That’s when I started yoga. And what I found horrible and cursed at at the time eventually became my biggest strength. It was the diagnosis of a life-threating disorder and I didn’t have long to live anymore. I decided to accept this instead of fighting it. It was freighting sometimes but that’s what gave me the strength to look past it and work with it. My health is very well right now. The combination of the mental and physical training gave me a huge boost.’

With yoga I try to inspire people to get out of their comfort zone and grow as a person
People see you as a huge source of inspiration? ‘At the beginning, I found it very difficult when people came up to me with compliments, for example, they thought I was inspiring – I would feel a huge pressure to do even better. By now, I can receive these compliments better. Nelson Mandela once said that we humans fear the fact that we are immensely strong the most. And I think that in essence we all fear our own strength. With yoga I try to inspire people to get out of their comfort zone and grow as a person. I am convinced that you can only grow when you are prepared to go past the resistance. And getting out of your comfort zone means finding resistance. On the yoga mat you will experience physical resistance of your body. Like the muscles you stretch and the exercises you do. You will feel how stiff you are, how bad you’ve been looking after yourself and how restless it is in your head. But if you want to become limber, you have to confront yourself with how stiff you are and if you want peace in your mind you have to confront yourself with the restlessness. And not everybody wants to do that, so people that are looking for that “quick fix” I often don’t see again. You have to be prepared to look for that resistance and breathe through it. When you feel that resistance, you could say that it is growing pains. I personally think that the yoga class only really starts once you get off the mat. The question is whether you can integrate and translate what you have practiced in the lesson into daily life.’ Do you have a practical tip for the readers? ‘With everything you do in life you could ask yourself the question: “does this help or harm me?” Not everything in life has to feel good or has to be comfortable, sometimes something that isn’t comfortable can help you, but you shouldn’t harm yourself. And if you don’t know the answer, get onto the yoga mat and practice your body first. Another lesson that matches this well is that for everything that happens to us the law of Anitya applies. This is a word from Sanskrit that literally means “nothing stays the same, everything constantly changes”. This can be threatening on a lower level, but very liberating on a deeper level. When you realize that, you can be in the “now”, as author Eckhart Tolle describes in the book “The Power of Now”.’

The facts and myths about sleep Sleeping... We do it so much and yet we know so little about it. Why do we require it? What happens to us when we don’t get enough of it? And what does sleeping even mean? As long as it goes well, there is no reason to linger over sleep. And yet, it is certainly a very interesting subject to know more about! We assume, for example, that eight hours of sleep per night is the recommended amount of time, but is this correct? The amount of sleep you need differs per person and it is mainly the quality of sleep that is the most important. The first four hours are the most important, but that doesn’t mean that that’s enough. On average, a person needs between five and ten hours of night’s sleep, which is quite a lot. Therefore the question about how many hours you need yourself is difficult to answer. This can be measured best by means of functioning; those who are tired during the day, probably don´t sleep enough during the night. That is actually a modern lifestyle problem; people simply don’t sleep long enough. This can lead to various complaints. You may experience a decrease in concentration, a bad memory, weariness and tiredness. Someone who is really tired can also just fall asleep out of nowhere. Crazy enough, most people do not realize it when they have a chronic lack of sleep. Many claim to need merely five or six hours of sleep per night, but then they have to catch up on sleep during the weekends or during holidays. These people also don’t perform as well as they think! On the other hand, these symptoms do not necessarily indicate a lack of sleep – there can be other causes.

If you experience a lack of sleep, you can’t just supplement it with having a long lie-in – it takes more time. To recover from the lack of sleep, you will simply have to sleep longer on average. To achieve this you will have to set aside several weeks. You don’t just pay off a sleeping debt in one go! As you get older, the need to have a long lie-in becomes less though, because you need less and less sleep. Enough sleep is important, but more is not necessarily better. Sleeping longer does not always make you healthier. There is also such a thing as sleeping too much. For example, people who suffer from a depression often stay in bed too long and they sleep so much that they don’t feel better because of it. Reducing sleep can also be a solution for complaints of weariness! Vicious circle Whether you sleep enough is something you can control yourself in a way. And of course there can be a sleepless night, but this is something we can take. A problem only arises when you’re really not able to get to sleep. Because then it becomes a sleeping disorder of which there are more than eighty different types, with chronic insomnia at number one. Even though this disorder has different causes, it starts in quite a typical fashion. This shows straight away how sleeping works. Chronic insomnia often occurs with people who usually sleep fine and then suddenly sleep less, because of a certain cause. This can occur for example when somebody in the family or a friend dies. Drastic events like that can cause people to sleep less over the course of a couple of days. Normally the pressure of tiredness reaches a highpoint after a couple of days that people just fall asleep once again and sleep though the nights again. However, there are also people that think and worry so much that they can’t get back into their old sleeping pattern by themselves. They look at the clock a lot and think a lot about the fact that they can’t fall asleep. And exactly because of this, it becomes more difficult. Those who are tired, are also inclined to go to bed earlier. This way they think they make up for lost time. But that’s not how it works. When you go to bed earlier than usual, that doesn’t mean that you will actually fall asleep early. You’ll only be worrying about it longer, which only makes the problem bigger. Structurally tossing and turning for hours – and also watching TV and reading in bed – creates a vicious circle: your brains (subconsciously) no longer associate your bed with a nice sleep, but instead with lying awake, which makes it impossible for you to sleep again. Once you have entered that vicious circle, you really have to be careful with sleeping pills. They often don’t work well enough to break through the pattern, although you do get used to them very fast. And if you quit all those pills, then the problem will only get bigger. Healthy sleeping rhythm It is important to break through such a vicious circle and change the negative association between bed and sleep back into a

positive association. If you are awake in bed for longer than twenty minutes, it is wiser to get out of bed for a bit. By reading in another room for example you will automatically get tired again. As soon as that happens you should go back to bed again. And if necessary you repeat it, so that you won’t keep lying awake. If this doesn’t work, there are also sleeping centers where they can help you restore a healthy sleeping rhythm. This happens for example through cognitive behavior therapy, or psychological therapy. During this therapy different things are dealt with, like sleeping hygiene. This means that you going to bed at fixed hours is very important, as well as a good, comfortable bed and a not too warm or cold room. Another solution is the so-called sleeping restriction. When people lie in bed for nine hours and only sleep in it for five hours, this is
brought back to six hours, in order for them to sleep almost a hundred percent of the time. This way the brain is trained to once again experience positive associations so that people can sleep well again and go to bed again for a longer perio of time. At these centers, people also learn to only use their bed for sleeping and not for, for example, watching TV and reading. That doesn’t mean however that this is strictly forbidden; for people who sleep smoothly it doesn’t hurt to also do other things in bed. And the other way around it is also fine if a healthy sleeper follows the rules, because this reduces the chance of developing insomnia. And remember: having one bad night isn’t bad, because that doesn’t necessarily mean that there are problems. Moreover, your body is perfectly capable to restore from a bad night of sleep. But the best thing to do is go to bed and get out of bed at fixed hours.

he magic of Carré What is it about the theater that makes is so magical? Is it the artists that take the stage? The mysterious architecture? The illusion of the play? Its varied history? Or is it the red carpet? Since 1887, the Royal Theater Carré Amsterdam (which was then owned by founder Oscar Carré) has been the most magical theater in the whole of the Netherlands. A portrait in words and images.

History has shaped the theater, because over 125 years later the theater is still as prestigious as it ever was
‘Ladies and gentlemen, the show is about to begin!’ In the year 2014 this is a phrase which is mainly used by pranksters, but the shows in Carré were actually once opened in this manner. Rows full of theater enthusiasts were eager to enter the prominent building along the Amstel every week. Inside a warm nest awaited. Beautiful foyers, an impressive hall in the shape of a semicircle and a large stage on which fantasy was brought to life for one evening. History has shaped the theater, because over 125 years later the theater is still as prestigious as it ever was.

Circus Temple The Royal Theater Carré Amsterdam was founded by Oscar Carré; son of a circus family and a self-professed horse trainer. For years he traveled as an artist with his father’s circus. They were mainly located on – the not always loved – fairs. Oscar had more ambition. He wanted to build a circus temple in a fixed location. Made out of stone and with a luxurious interior. A place for the elite.

‘Grand and majestic. This is what my circus should be like. With people who marvel at and give a loud applause for my horses - my stars. The “high stand”, with all my twelve lovely horses, will be the highlight. In my own circus. I will fulfill that dream one day. Even though it will require lots of sacrifice and take a toll on my beloved ones’. These are the words of Oscar with which the NTR documentary ‘Circus Heart’ opened. A dream that became reality. But so did the horrific downside; his wife Amelia died in a crash during a train journey with the circus. Elite In the days of Oscar, the horse was an important part of society. And although the muscular and loyal animals were used a lot for public affairs, they were for the most part used by the elite for transport and entertainment purposes. Circus dressage at the highest level therefore garnered a lot of positive attention from the rich and famous. It was the start of the distinguished status of the theater. Outside of the circus season the building was used by theater producer Frits van Haarlem who brought in successful variety shows. Subsequently, Carré slowly but surely transformed into a place where different types of popular entertainment came together. After a long period during which revue theater and opera predominated, the Dutch theater saw a fresh new start after the Second World War under the leadership of director Karel Wunnink and programmer Louis Dekker. There was

now room for new art forms such as musicals and cabaret. Toon Hermans set the tone with his One Man Show, but also comedians such as Snip en Snap and André van Duin were very popular. Yet, Oscar’s love for the circus never really left Carré. The Strassburger circus became a huge success, as well as the Russian State Circus. In 1985, an old tradition returned; the World Christmas Circus. An annual highlight of which the opening night is often still reserved for the absolute elite. Atmosphere Back to the present. According to the current director Madeleine van der Zwaan, the unique atmosphere of Carré is mainly due to its warmth and size, she says in an earlier interview. According to her, it is said, that when an artist is able to tackle Carré, that artist is able to tackle all other auditoriums. Carré is a grand and imposing place. In the same interview Theo Maassen says: ‘It’s like a warm bath’. In the documentary ‘125 years of Carré’ André van Duin explains how he once tried to record the atmosphere of Carré on a tape recorder. The result was disappointing. According to him there is only one way to experience this atmosphere, and that is by being there yourself. Media magnate Joop van den Ende explains that another part of the theater’s success is because of the way in which the artists ascend the stage. In the earlier mentioned documentary he explains how the dynamics of ‘the story’, delivered in whatever way, always provides an attraction to the people.

The power lies, according to the organization, in its flexibility and relevancy. Cherish your history, but also accept future developments. An excellent example is the placement of the new foyers. No theater-red, but tight, warm and with a sand color. A nine meter long marble bar with wooden finishing has become the theater’s flagship, in combination with the classic chandeliers of course. Not only the building itself faces continuous change, also the program has seen various changes under the direction of Madeleine. More than ever, room has been made for multiple forms of theater. Even opera is once again part of the program. Magic Every artist wants to experience the magic of Carré. Nobody says it out loud, and it is no written rule, however it is the truth. An unwritten rule. Ascending the Carré floor boards and feeling the heat of the spotlights; for many this is the highest attainable. An artist’s work is only complete once he has experienced Carré. This is the magic of the theater.

Uitgaanstips! TIP 1 Opera At one time, lovers stood in long lines along the Amstel waiting to get a ticket for the many (mainly) Italian operas. Unfortunately, opera disappeared for a while. But after a long period of silence opera is back in Carré! TIP 2 Claudia de Breij - Teerling Besides being a presenter, Claudia de Breij is also a radio DJ and a successful comedian. The press was extremely positive about earlier performances of her show ‘Teerling’. NRC newspaper wrote the following about De Breij: ‘An authentic kind of sincerity that is rarely seen in comedy today. Moralism that is not embarrassed of itself. Michael de Ruiter (33), born in Delft, started working at WestCord Hotel Delft three years ago. He holds sway in Gullmander Restaurant & Bar and enjoys showing his creativity!

How did you end up at WestCord Hotel Delft? ‘I ended up here through my little brother. Before, I worked at the Spanish chain NH Hoteles in The Hague as Chef de Partie. My little brother has worked here in Delft since the beginning and pointed out the vacancy – fact is, I had hinted at him that I was looking for a different job. The position here in Delft was merely an executive function and it was never my goal to become a chef, I thought it was too much responsibility, lots of stress and pressure. But then I had an interview here and it clicked immediately, really, and before I knew it I was already standing there. It took a lot to get used to the many responsibilities, but I was guided really well. It is really to my liking.’ Where does your passion for cooking come from? ‘As a kid, I spent lots of time with my mother in the kitchen, it has always fascinated me. My mother was creative in the kitchen, my father was not. During children’s parties I sometimes made things in the kitchen and my little brother would show it to all his friends. That is actually sort of how it came to be. Then, I did the secondary school of cookery in The Hague and after that I obtained my Cooking Diploma at ROC Leiden.’ What does your average workday look like? ‘Haha, busy! I normally start around 11 o’clock in the morning. I work with a team of seven people in the kitchen, including students and interns. It is a fun, young and close team. Before lunch we always discuss the state of affairs and update the administration. Next, we run lunch, make preparations for the evening and usually I run the evening shift. Around nine o’clock in the evening I head towards home, the others close up the restaurant. I also have other shifts, but these are my most regular ones. It is a flexible team and I am not averse to a breakfast shift either. I work five days a week, it changes per week which days I work. It purely depends on the occasion.’ Who puts together the menu? ‘We put together the menu with the entire team, but also reception can give suggestions. Every four months we create a new menu. In 2012, we received the Green Key Certificate for corporate social responsibility. This means we have biological dishes on the menu. We also work with fish that is caught responsibly and fair trade products. We furthermore have biological bread and vegetarian dishes.’
What do you hope to achieve with your job? ‘That we get more brand awareness, I hope more people discover our restaurant and that we become more well-known in the area.’ Who is your role model? ‘The Spanish chef Ferran Adrià, the driving spirit behind the famous restaurant El Bulli. I got fascinated by him when I started working at NH Hotel The Hague; he came up with the gastronomical Nhube concept there. The concept is characterized by combining restaurant facilities and relaxation in a comfortable residence room. Adrià works with molecular cooking a lot, which appeals to me. Molecular cooking happens a lot in star restaurants, but I try to select small things from it.’
How would you describe the menu? ‘A luxurious, but accessible menu. With exceptions of course. Affordable, and there is something for everyone!’ What do you like so much about your job? ‘Every day is different; I get satisfaction out of my work. I sort of have a free reign here. Cooking has always been my passion and I would not want to do anything else. Also when I think of the future, I would only like to go a step up. In the future, I would like to educate people who could take over the baton. Ultimately, that is what you do it for. These days, the quality of the students is unfortunately decreasing and I would like to change that and educate students to become good cooks. We also work with students here. As of now, they have learned the basics and we are preparing them for the future.’ What do you not like so much? ‘Sometimes you don’t have enough time, because it is really busy. That is a good sign, but it can be very frustrating every once in a while. Nevertheless, I don’t have much to complain about really.’ What is your specialty in the kitchen? ‘The cuisine is French, but I also try to add Dutch and foreign influences to it as well. The vegetable garden was my idea, that really is Dutch recipe. For this starter we use “forgotten” vegetables like parsnip and Jerusalem artichoke with rye bread. It is really vegetarian. That is a dish that stands out.’

Which dishes can we wake you up for at night? ‘Lasagna. Simple, but delicious. It doesn’t all have to be very spectacular. I could say I’d prefer duck liver and truffle, but that doesn’t inspire me at all. I like basic food.’ Where do you see yourself in ten years? ‘I would definitely like to grow in my profession. Maybe work in a five star hotel. I am not working on it right now. Within WestCord Hotels there are plenty of possibilities to grow. And when the opportunity arises to be able to work abroad, I would definitely consider it. I’m not that old, so I don’t know yet what could still cross my path.’ What do still dream of? ‘To become famous. I hope so. I am not working on it however, because that is something that could happen out of the blue. I would also like to enter a cooking competition. And winning the jackpot, I also still dream of that, haha!’

Cannelloni with ricotta and young spinach Cook the pasta sheets until they’re done and put them in ice water. Next pat them dry and put them away. Cook the ricotta in the oven for 15 minutes at 180 degrees and let them cool off. Wash the spinach and cook it in plenty of water, pour it off in a sieve and let it drain. Mix the ricotta and spinach in the food processor or with your hands until a mixture forms. Add some salt and pepper to add flavor and put the mixture in a piping bag. Put the gelatin in cold water and let it soak. Cook the tomatoes for 30 seconds and put them in ice water. Peel off the skins and cut the seeds out. Next, mix the tomatoes into a smooth mixture, sift this mixture and add salt and pepper to add flavor. Heat the gelatin and the tomato juice in a pan (don’t boil it) and pour it on a plate afterwards and let it cool off in cold storage. Slice the onion and fry it in a pan with some oil and add the spinach. Add wine and reduce it down to half, add cream and reduce it down to half. Mix the sauce until it’s a smooth sauce and season it with salt and pepper. Next, grate the pecorino and spread it out on baking paper. Finish it off in the oven at 180 degrees (for 10 minutes) and let it cool off on the counter. Place the pasta sheets in front of you and draw a line with the piping bag (with the ricotta mixture). Next, wrap up the pasta into a nice roll. Finally, remove the tomato jelly from cold storage, cut off a nice piece and put it on a plate. Bon appetit!

in combination with cannelloni with ricotta and spinach
A dish isn’t finished without the addition of a nice wine. However finding the appropriate wine can be difficult. Luckily Wijnimport J. Bart will lend you a hand. Their tip? They chose the 2012 Fattori Soave ‘Danieli’ from the wine region east of the city of Verona, northern Italy, to go with the recipe of chef Michael de Ruiter. The brothers Fattori, Giovanni and Antonio built a modern cellar in 1997, equipped with the most modern equipment, making sure that the sulfuring of their wines was at a minimum. They are very innovative and passionate wine makers. This is why several farmers let their wine be produced here. The Fattori family has owned vineyards in the region since the beginning of the last century. They currently own about 80 hectares, of which 25 hectares are located on the slopes of the Alpone valley, northeast of the village. It is located 150 - 450 meters above sea level. The soil is very volcanic, which makes it ideal for producing quality Soave. Fattori produces strikingly delicious wines; they are often reviewed as the best of the area in leading journals such as Decanter and Gambero Rosso. Fattori – which literally means farmer – is a well-known name in the region. Danieli is the nickname the Fattori family has in the region. The basis of a good Soave is the Garganega grape. The grape is harvested by hand – roughly ten percent of the grapes is harvested a month later, which means the grapes have properly dried. They give the wine an additional concentrate, complexity and a softer feeling in the mouth. After removing the stems, the peels remain on the must for six to eight hours. This gives them an additional flavor. With its smell of white fruit, pear, flowers and jasmine, the Soave Danieli has a nice scent. The rich and elegant taste is nicely balanced; nice and juicy with fresh sourness, and of course very refined. The cannelloni with ricotta and spinach dish has clearly been influenced by Italian cuisine, which of course means that Italian wine is an excellent fit with this meal. The freshness of ricotta with tomato goes perfect with a wine with fresh sourness. Combined these taste become a perfect whole. Because of the purity of the dish a not very wood layered wine such as the Soave is an excellent choice.
