In his nanobrewery in Courtrai, he experiments with novel beer styles and eccentric ingredients, staying well away from traditional Tripel pale ales or darker dubbels. As you wander around the Church of Our Lady in Courtrai, you’ll suddenly come upon a burst of colour concealed among the lawns: the idyllic terrace of In de Wolken. ‘In de Wolken’ means ‘in the clouds’ and is the perfect name for this piece of heaven on earth. It began by planting a single hop plant in the garden, and grew into a professional brewery: that’s Brewery Toye’s history in a nutshell. The old flax barn is a mere stone’s throw away from where the Battle of the Golden Spurs was fought, and the Flemish goedendag spear would win the day. Today at Brewery Toye, it’s no longer blood that flows from the goedendag, but amber liquid: Goedendag Sterk Blond, Goedendag Donker and Goedendag Cuvée 1302. The trio recently gained a little brother: O’de Lys.

BREWERY In 1892, Omer Vander Ghinste founded his legendary family brewery. And now, 130 years later, you can still sample his characteristic creations: quality beers brewed according to authentic recipes, in the traditional way but using state-ofthe-art techniques. During the tour, you have a chance to look around the old and new brewery hall, the fermentation tanks and the new bottling plant, before sipping the Courtrai gold in the taprooms.
