Q: Every day of the holidays, there are 20 kids in our pool for hours, with no bathroom breaks. We all know what’s happening in that water. How do I address this?
Unfortunately, this is a common problem. There’s also a misconception that it’s not a big deal because chlorine will kill the germs, when the opposite is true. Sanitisers need a specific pH level to be effective and peeing in the pool alters that level. When urine and chlorine combine, they create a by-product called chloramine. Where you think you smell chlorine (you aren’t, cause it’s largely odourless), you are actually smelling the by-product of people peeing in the pool.
The best option is to attack this problem at the source. Talk to the kids and explain the issues. Establish some pool rules including ‘everyone pees before they swim’ and ‘regular bathroom breaks are non-negotiable’. Left to their own devices, they’d stay in the water all day, so a forced break is a good idea. You can use the time to make sure they are hydrated and to hand out some snacks and reapply sunscreen if needed.
As far as the water goes, check that filtration, circulation and water balance are all in order — a good practice during any busy swimming time — and make any adjustments as necessary. Good luck!

Owning a swimming pool is a significant investment, but most pools are left unused for much of the year simply because the water is too cool for comfortable swimming. Even in the northern states, pools are shut down for up to half the year.
Heating a pool not only doubles the fun the family enjoys it also doubles the value of that investment and, in Australia, we are blessed with abundant sunshine so what could be more logical than using that energy to heat your pool when you most feel like swimming?
In 1974 three young students realised that enough solar radiation falls on a pool owner’s roof every day to heat three or four swimming pools. They wanted to develop new technologies that could harness some of Mother
Nature’s abundant free energy to heat those pools in an environmentally responsible and costeffective way, and Sunbather was formed.
Today, tens of thousands of domestic and huge commercial pools are heated by Sunbather solar pool heating systems. When the sun is shining and people want to swim, those systems collect the sun’s heat to regulate the temperature of the pool water. The only running cost is a few cents per hour to run a small circulation pump.
With solar, the sun generates the heat and that heat is fed directly into
the pool, so there’s very little to break down or wear out with a Sunbather solar system. So warranties are much longer with far less upkeep, but most important of all in these times, only solar technology can claim to be environmentally responsible.
Not satisfied with finding an environmentally friendly way to warm a pool, Sunbather engineers turned their attention to keeping it warm for as long as possible — and with as little cost as possible.
Pool covers not only help keep pools clean
and reduce evaporation, thermal covers also lock in heat, conserving heat energy and can even extend the swimming season for unheated pools.
One downside is that pool covers and rollers can be unattractive. Homeowners want to spend a lot designing and building their dream pool and landscape and don’t want a bulky roller and cover to spoil the view. Covers systems can also tend to take up an unnecessary amount of space. They can be a trip hazard and climbing on them is an unwanted poolside safety risk.
Sunbather addresses all of these problems with the Downunder hidden pool cover system. The roller and cover sit in a cavity below the ground/ deck at the end of the pool completely out of the way and out of sight.
WHILE PLENTY OF US ARE CONTENT TO LOUNGE AROUND THE POOL, BOOK IN HAND AND COCKTAIL AT THE READY, OTHERS NEED A BIT MORE ACTION.
If you’re low on toys or inflatables and looking for pool party ideas that will tire the kids out, these games are guaranteed get things rolling.
Depending on how confident everyone is in the pool, some games can be a bit rough for little ones — especially when one person or team is pitted directly against another. Of course, smaller kids can definitely join in but it’s good to aware that the following games aren’t necessarily for everyone. Players should be confident in deeper water and where they can’t reach the edge of the pool.
Marco Polo is an absolute classic. It’s suitable for three or more players — ideally more to keep things interesting. The rules couldn’t be simpler: one person is designated ‘it’ and starts in the water with their eyes closed. That player calls out “Marco” and the others respond with “Polo”.
The aim of the game is for everyone to keep moving and for Marco to locate and touch one of the other players based on the direction of their voice. Once tagged by Marco, that player becomes ‘it’ and the game continues.
While everyone is supposed to stay in the water, smart players slip silently out of the pool to avoid being tagged, hopefully re-entering the water without being caught. If Marco suspects someone is on dry land, they yell “fish out of water”. If that player is out of the pool, they become ‘it’… and on it goes. This game brings out the sneak in everyone.
Sharks and minnows is another popular option. It’s a ‘more the merrier’ game and best played using the deep end, so make sure everyone is comfortable swimming in a relatively crowded pool away from the edges.
One player is nominated as the shark and the rest are minnows. The shark starts the game in the water on one side (or end) of the pool, while the minnows line up on the opposite pool deck. The shark says “Sharks and minnows, one two three, fishies, fishies swim to me!” The minnows jump in and try to get to the other side without being tagged by the shark. Once tagged, minnows become sharks, making the game increasingly hard as the minnows become outnumbered. The round ends when all minnows have become sharks and the first minnow tagged in the last round starts as the shark in the next.
This one can get a bit rough and rowdy, so it’s probably best for strong swimmers, older kids and adults. You need two even teams and a whole, uncut watermelon to play. One side (or end) of the pool belongs to team one and the other to team two. The game starts with each team closest to their designated edge and the watermelon tossed in the middle (don’t worry, it’ll float). The object of the game is to get the watermelon to the other team’s side and put it up on the pool deck.
You get it there by any means possible — under the water, out of the water, passing it to your teammate or just barrelling your
way through. We probably wouldn’t recommend throwing it unless you wanted to ensure a very short game. Meanwhile, the other team is trying to stop you from reaching your goal by tackling, stealing the melon and generally holding you back.
This game gets raucous quickly, so set some rules before you start — no kicking, biting, scratching or holding anyone under the water. A submerged watermelon is much more slippery — and people way more competitive — than you think, so this game can be unruly, but also a lot of fun. Just make sure that everyone playing is confident in the water, particularly if you’re using the deep end of the pool.
If sacrificing fresh produce doesn’t appeal, you can play an alternate version using a clear (not tinted) two-litre plastic water or soft drink bottle with the label removed — ideally with a white lid. Fill the bottle with water so it doesn’t float and toss it in the pool. The objective is the same — get the target to the other team’s side — but the difficulty in finding a near-invisible clear bottle in the pool changes the game’s focus. Still plenty of fun to be had and no fruit gets harmed in the process.
CHICKEN, OR SHOULDER WARS Chicken, or shoulder wars, has teams working in pairs. One player sits on their teammate’s shoulders and the two work together to attack the other teams, attempting to separate the ‘riders’ from their ‘carriers’. The rules are pretty fast and loose but it’s generally accepted that only the rider can use their hands to unseat their opponent, while the carrier acts as a
vehicle and can make contact with the other team using their legs and body only.
As with any water-based play, safety comes first. Set some grounds rules around acceptable moves — for example, tickling and pushing are okay, but punching, hair pulling and other rough contact are absolutely off the table. Remember to steer clear of the pool edges and make sure everyone is swimming within their capabilities.
If all this roughhousing sounds like too much for the little ones, there’s plenty of gentle options that still provide hours of fun.
A simple game for any number of players — even one — diving for treasure works equally well in the shallow or deep end, depending on swimming ability. Line the players up on the pool deck with their backs to
the water so they can’t see where the ‘treasure’ goes. Throw in some items that will sink to the bottom but still be easy to spot — coins or rocks will do, set a timer and yell “go!” Players then turn and dive for the items and the player that recovers the most when the time is up is declared the winner. Goggles will be a great help here.
Players in FISH ‘follow the leader’ by copying tasks. This could be swimming from one pool edge to the other, doing a handstand, pencil diving into the water or sitting crosslegged on the pool floor — whatever the leader decides. When a player fails to complete the task, they ‘earn’ a letter, starting with F, then I, and so on. Once they’ve earned all the letters to spell out FISH, they are out of the game. The round ends when all players are out, with the last player swimming starting the new round as leader.
With a name like Popsicle, this must be a US import. It’s another game that works well for at least three — but preferably more — players. One is nominated ‘it’ and tags other swimmers, who must immediately ‘freeze’ and hold their arms up over their head — becoming a Frozen Popsicle. Frozen Popsicles are melted back into the game when they are tagged underwater by another swimmer. It’s a game of constant freezing and melting, which basically has no end, so you’ll probably need to referee and make sure that everyone gets a turn at being ‘it’.
Pool games are a great way to bring everyone together and can provide hours of fun… but any competition can easily end in tears. Make sure that everyone knows how to play nicely and that the big kids take care of the tiny ones.
Before starting any game, assess all players’ swimming capability. If anyone needs a life jacket or other flotation aid, make sure they are correctly and securely fitted before entering the water.
It goes without saying that adult supervision is a must — ensuring both safety and fairness. Games where someone is ‘it’ almost always involve disagreement, so get ready to be an umpire as well as a lifeguard. Make sure you can see everyone in the pool from your vantage point… and let the games begin!

The original pool in this project was a freeform concrete painted pool with higher coping than the surrounds and no wet edge or spa. These elements were added as part of a renovation and the wet edge was designed to act as a seawall. The pool floor was knocked out to drop the level of a new shell to lower the new pool structure and the results are spectacular. P: 13 20 25

Back in the day, a wellmanicured lawn was the pride and joy of every Australian homeowner.
Front- and backyards across the country were kept in pristine condition thanks to a sharp eye and hours of labour every weekend.
The arrival of petrol-powered, labour-saving devices — like mowers, leaf blowers, hedge and grass trimmers and chainsaws — changed everything. What once took hours of hard manual slog could be done in a fraction of the time — and with better results. But is all that convenience costing us?
A nice big patch of green looks like it should be doing good for the environment, removing carbon dioxide out of the atmosphere and lessening the prevalence of
greenhouse gases. To a point, this is what happens — grass pulls carbon out of the air and into the soil. So far, so good… right?
Well, depending on the methods used to care for that lawn, it’s pretty easy to undo the results quickly. Typical lawn maintenance activities — like using tools that burn fuel, plus the inputs that go into fertiliser production — can contribute four times the carbon emissions that grass can absorb. Watering and irrigation have obvious implications as well.
In addition, grass-bound soil steadily emits nitrous oxide, which is about 3000 times better at trapping heat than carbon dioxide. On its own that’s alarming enough but the impact is worsened with fertiliser use, which accelerates the release of nitrous oxide into the atmosphere. No matter how you look at it, growing
grass gives to the environment with one hand while taking with the other.
There are plenty of choices you can make to help minimise any negative effects — from tool selection to behavioural changes and chemical considerations.
While petrol-powered tools can have a serious effect on air and noise quality, the development of battery-powered alternative designs means you can lessen your environmental impact.
Of course, there are still issues around the mining of materials to manufacture the batteries required to power them, as well as the end-of-life implications, including disposal and recycling. According to the CSIRO, only 10% of Australia’s lithium-ion battery waste was recycled in 2021
and it’s growing at a rate of 20% each year. This is leading industry, government and research institutions to focus on developing domestic recycling capability as a priority, so we should start seeing improvements in the short term.
In the meantime, it seems oldfashioned push mowers are having a resurgence, as gardeners try to minimise the harm that comes from maintaining green space. Probably not a great solution for large lawns, but these are cheap to run, compact, quiet and easy to manoeuvre — perfect if you’ve got a small patch to tend.
This feels like an obvious one — and three years of La Niña should have made it even easier.
Of course, there are immediate direct benefits: your water bill be
reduced and you can maintain your garden and lawn even when water restrictions are in place. But there are additional ‘unseen’ advantages when you reduce reliance on mains water — it decreases stormwater runoff, lessens the need for dams and desal investment and reduces government infrastructure running costs, benefiting the broader community.
There are plenty of options when it comes to rainwater harvesting systems. Do a quick search online or start with your local hardware outlet and talk to an expert — there are literally hundreds of tanks to choose from, along with all the accessories you need. Depending on your location and exact circumstances, you may be entitled to a government rebate, so check local and state government websites for more info.
Every garden is an ecosystem and it’s all about finding the balance. “ ”
• Use native plants only invasive planting can wreak havoc on the local ecosystem. Introduced species cause problems with pests, and biodiversity is impacted. Local fauna can’t use the plants as food or habitat, which threatens their survival.
• Opt for organic if you’re using mulch (and you should be), then go for an organic variety that incorporates lots of different natural materials, like wood chips, grass clippings and other plant materials. These will decompose, providing additional nutrients. Cheap mulch often contains non-biodegradable matter, which offers absolutely no benefit to your garden.
• Install a vertical garden wall the perfect solution if you’re after an expanse of green but can’t justify the lawn any longer.
Composting is a double-duty greening activity, helping reduce waste by using food scraps to create an eco-friendly fertiliser. It’s as easy as grabbing an outdoor compost bin and filling it with organic waste — kitchen scraps and leftovers, garden trimmings and grass clippings. Just chuck it in, put the lid on and let nature do its thing.
Compost bins come in a multitude of styles, shapes and sizes. Do some research to find out which option will best suit your needs.
The pursuit of the perfect lawn can be a tough game, but using fertilisers, herbicides and pesticides will ultimately make things worse. Lawn can become dependent on the chemicals that are harming them, leading to disease that needs another chemical to fix the problem. The use of blanket pesticides kills off all the beneficial insects needed to keep your garden flourishing. In other words, it’s a slippery slope.
Where possible, remove unwanted plants and weeds by hand and use natural insecticides and oil sprays to keep pests at bay. Ladybirds love aphids and mites — two of the garden’s biggest pests. To attract ladybugs, plant dill and coriander and make sure they have access to a wellwatered garden (they’re thirsty little critters). Every garden is an ecosystem and it’s all about finding the balance that keeps everybody happy.
There’s no rule that says you can’t replace lawn with an alternative groundcover like moss or clover. Just as nice underfoot, both options tick
the aesthetic boxes but require far less care. Some groundcover plants thrive in sunshine and others in shade, so check out options at your local garden centre, where you can get advice on the best alternatives for local conditions.
While we’ve had a long love affair with lush green lawn, it may be time to have a rethink and plant something a little more in keeping with the Australian climate. By opting for native plants and grasses, you’ll not only support the natural ecosystem, but probably save yourself hours of time on the weekend as well… a win/win situation!
There are plenty of choices you can make to help minimise any negative effects.

Just like us, no swimming pool or spa can escape the effects of aging forever. Unavoidable exposure to sun and chemicals eventually shows when it comes to your pool’s interior surface. In the Summer 2021 edition of Pool & Spa, we explained what to do when your fibreglass pool has seen better days. If you need specific advice on fibreglass pools, you can find past issues of the magazine on the poolspalife.com.au website. In this issue, we’re taking a look at a slightly different beast — concrete swimming pool constructions.
As a concrete pool ages, you may start to see cracks, chips and discolouration. If your pool is leaking, if it is hard to remove stains or the texture has become uneven, it’s time to act.
The first thing to do is speak with a pool resurfacing professional — this is not a job you want to take on yourself. There is a range of available resurfacing materials, each with their own specific set of characteristics that make them more or less suited to your application.
As with many other industries, technology advances keep delivering improvements in pool interior finishes. The best solution for your specific application depends on many variables, which is why you need expert advice. Some general information on available options follows.
Plaster is a simple and cost-effective option. It is also one of the least durable choices and doesn’t perform
that well in high-use areas like stairs and swimouts.
Another economical option, pool painting is usually only a cosmetic, short-term fix. It won’t address the underlying problems, which means you are just delaying the inevitable.
Aggregate choices range from the familiar pebblecrete to newer options that incorporate reflective materials for a shimmer finish or light-coloured cement flecked with brilliant coloured stone, offering a multitude of design choices.
TILE
Tiles offer a huge array of design options, with virtually endless colour, size and pattern choices available. Of course, that flexibility comes with a price tag — tiling is one of the more expensive pool
resurfacing options. It’s also one of the easiest to clean.
Fibreglass is a popular resurfacing material because it delivers a smooth, stain-resistant finish and is relatively quick to apply.
Another cost-effective option, application of a vinyl liner can rejuvenate the appearance of your pool.
Once you engage a professional and decide on your finish, you’re ready to roll. Of course, they’ll give you a complete project timeframe and outline the steps required. Timing is weather dependent and also affected by the surface choice, but you expect it to take at least a week and possibly two. You can also bank on the following general steps.
Clear the area — before the team arrives, remove all furniture and other loose items, like potted plants. Talk to your professional about protection for other areas beyond the outer perimeter of the pool, as things can get messy.
Draining the pool — this job obviously means the pool needs to be emptied. You won’t need to do it, but you should ensure that all your equipment is in working order before the water is removed. Check that lighting, circulation and skimmers are all operational while the pool is still full.
Patching and preparation — your chosen pool surfacing professional will remove damaged surface materials and start preparing for the new application.
Tiling, coping and masonry — waterline tiling, coping and masonry details are taken care of at this stage.
Plumbing and sealing — ensures that your pool is watertight.
Surface application and additional required washes — some material choices might call for application of an extra wash as part of the process.
Cleanup, fill and initial water treatment — in the first week, your ‘new’ pool will require monitoring, as the curing process occurs. Your resurfacing professional will provide all the information you need to carry out appropriate water treatment and how to monitor.
Resurfacing your pool is a great way to give it a lift. A design change will not only deliver a completely new look, you’ll also end up with a smoother surface finish that is easier to clean and resistant to algae, stains and discolouration.
Don’t forget, if you want expert advice on the best options for your pool, speak with a SPASA member.

Low maintenance is a term that is rarely associated with pool ownership. In years gone by, the work required to keep a pool in tiptop condition and looking the right colour whilst being safe to swim in was enough to turn some people off the idea of pool ownership.
However, with pool equipment manufacturers racing to incorporate timesaving technology into their products along with internet integration and apps, we asked Hayward Pool Products whether it really is now truly possible to spend longer in your pool than working on it.
FOR BUSY HOMEOWNERS, WHAT ARE THE BEST CURRENT TECHNOLOGIES AVAILABLE FOR REDUCING THE WORK REQUIRED TO RUN A POOL?
Probably the quickest and easiest thing that you can do to make maintenance easy is to cut down on the time and effort it takes to clean your pool. You can do this by investing in an automatic pool cleaner. It will remove
debris and scrub the pool for you — all you have to do is remember to empty it. The new AquaVac 650 Robotic Cleaner from Hayward has even done away with filters, meaning you can stay away from the mess and empty it with the touch of a button.
A more long-term solution to improve the ownership experience would be to invest in an automation system to run your pool. Many owners install a pool to improve the lifestyle of themselves or their families. In the past they have been unable to fully enjoy this change due to the work required to maintain and run a pool. Automation removes many of these time-consuming and labour-intensive tasks so the owner can enjoy the lifestyle improvements that a pool can bring.
ARE THERE ANY SPECIFIC HAYWARD POOL PRODUCTS THAT YOU’D RECOMMEND FOR A BUSY HOMEOWNER? WHY?
Hayward OmniLogic pool and backyard automation is
the perfect system for a busy homeowner. It provides an easy way to control the chemistry of your pool and spa, as well as the heating, lighting, water features and any other pool or backyard equipment required by the user. The system takes the hassle out of pool ownership by bringing together all the elements of a modern energy-efficient pool and allowing the user to control it with an app. With an OmniLogic installed you can quickly and simply get your pool running exactly how you like it, at the touch of a button.
Owners can access their pool from anywhere as long as they’re connected to the internet. So rather than having to manually switch valves or press buttons around the pool, the owner can do this from the comfort of their sun lounger. You can even get
your pool up and running before you arrive home from work, allowing you to get straight in and make the most of your evening.
When choosing your pool equipment make sure that you are comfortable with understanding how it operates — modern systems can appear complicated and this can be off-putting to some people. The last thing you want is to be standing around scratching your head trying to figure out how to get your filtration running when you could be in the pool splashing around. However, if a system is set up in accordance with the needs of the pool owner and a good handover is provided by the installer, pool automation can truly transform your ownership experience and turn it into the dream you always hoped it would be.

Take a sneak peek inside any family pool fence and you’re guaranteed to see some brightly coloured inflatables.
Toys, beach balls and sun lounges bring hours of enjoyment, while flotation devices are a valuable aid in developing kids’ confidence in and around water. But these ubiquitous signs of an Aussie summer don’t always stand the test of time. If you own a pool, it’s odds-on you’ve got a few old, damaged inflatables lying around.
Unfortunately, many of these items are made from PVC, a material that is difficult to recycle, so they end up in landfill if torn or if the kids outgrow them. This doesn’t have to be the case, if you repair, reuse or repurpose.
This option is recommended for toys and leisure inflatables only, not for flotation aids and water safety devices.
The problem with many pool toys is their low initial cost, which makes it seem more economical to simply replace them when they are damaged. Before you rebuy, take a minute to assess the damage. A small hole or tear may be repaired using heavy-duty gaffer tape, which is available from hardware suppliers. If this doesn’t do it, try heavy-duty inflatables repair patches designed for the purpose.
You may no longer have a need for kids’ inflatable toys, but plenty of others will. See if friends and family can extend the life of pool toys by
providing a new home. Try online marketplaces as well — you probably won’t get any money for them but you will get the satisfaction of keeping them out of landfill.
As the problem with non-recyclable inflatables becomes clearer, new services are cropping up. SOMETIMES ALL YOU WANT FROM LIFE IS TO KICK BACK WITH A COOL DRINK, WHILE THE DELICIOUS AROMAS OF A BARBECUE WAFT BY… ENJOYING THE QUINTESSENTIAL AUSTRALIAN SUMMER VIBE.
Summer is all about having fun — spending time with friends and family and enjoying the good life. If you’re looking for some entertaining ideas, we’ve got you covered with barbecue marinades and rubs guaranteed to keep them coming back for more. Wash it down with our delicious summer cocktails and mocktails for an instant party.
Dry rub, wet rub or marinade? Ask 10 people what they think, you’ll get 10 different answers. Barbecuing is a weirdly personal thing and people have their ways… and their secrets. They won’t be afraid to tell you when they think you’re doing it wrong, either. The trick to a successful barbie is to pick your lane and stick to it.
Do what you want to do, act with conviction and never falter in the face of questions.
Luckily, we’re here to help. If you don’t know your wet rubs from your dry rubs or marinades, read on for everything you need to know, including how and when to use them. We’ve even included some tasty recipes to get you going.
Dry rubs are used to season and flavour meat while sealing the juices on the inside. As the name suggests, these rubs use only dry ingredients: salt, sugar, spices, seasonings and dried herbs.
Dry rubs work best when you are cooking with dry heat — like smoking or using a kettle-style BBQ. Start with a basic recipe like the one below and tweak it to suit your own tastebuds. If you’re adding dried herbs, stick to
quick cook cuts, like chicken pieces, steaks, chops and veges.
For slow-and-low-style cooking — larger, fattier cuts like brisket, pork shoulder, lamb shoulder or ribs — leave the herbs out, as the delicate flavour will probably get lost. Up the ante on the stronger flavours and include some dried chilli flakes or ground coriander.
Wet rubs sit between dry rubs and marinades. The addition of a little liquid makes it stick to the meat, adding deep flavour whether you are barbecuing, smoking, grilling, roasting or slow cooking. This rub works well on just about anything — beef, pork, chicken or prawns — and the chipotle powder adds a nice kick. Leave it out if you aren’t a fan of too much heat.
2 tablespoons sea salt flakes
3 tablespoons firmly packed dark brown sugar
1½ tablespoons paprika
1½ teaspoons garlic powder
1½ teaspoons dry mustard
1½ teaspoons ground cumin
½ – 1 teaspoon cayenne pepper
1 teaspoon freshly ground black pepper
The method couldn’t be simpler: just add the ingredients together and stir till well mixed. This rub works well with beef, pork, chicken or vegetables. Sprinkle an even layer of the rub on all sides of the meat and massage in. Any extra rub should keep for a couple of months in a cool, dark place, provided it is in an airtight container.
2 tablespoons olive oil
2 tablespoons lime juice
1 tablespoon brown sugar
2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon sea salt flakes
½ teaspoon cumin
½ teaspoon chipotle powder
½ teaspoon freshly ground black pepper
Combine all ingredients and stir until they form a thick paste. Spoon over meat or seafood and spread evenly. You can refrigerate for a little while to let the flavours develop or head straight for the barbecue and get things cooking.
1 cup Greek yoghurt ¼ cup olive oil
5 cloves garlic
1 large lemon, juiced
2 teaspoons salt
2 teaspoons chopped oregano leaves
1 teaspoon paprika
½ teaspoon freshly ground black pepper
Handful chopped flat parsley for serving
Combine all the ingredients except the parsley in a large bowl or ziplock bag. Add the chicken or lamb pieces and cover (or zip). Refrigerate for at least an hour — preferably three or four. Honestly, the longer, the better here. Let the yoghurt get in to do its thing, tenderising the meat for the most succulent result.
The best thing about a marinade is that it can take you to any corner of the globe. Choose ingredients from your favourite cuisine for just about any type of meat or seafood you can imagine: Thai, Moroccan, Indian, Korean, Brazilian, Japanese, Greek, Turkish… you get the picture.
Marinades usually include one or more similar starter ingredients to rubs, but also incorporate a liquid that helps tenderise the meat. They often use fresh garlic, rather than garlic and onion powder, and usually some fresh herbs as well.
This simple yoghurt and lemon marinade is great on chicken, but would also work well with lamb kebabs, chops or cutlets.
It wouldn’t be a party without some refreshments. Hot weather calls for drinks that keep you cool, without packing too much of a punch. These classic summer cocktails and mocktails are just what the doctor ordered.
Ah, the ubiquitous spritz is always a crowd pleaser… delicious and summery without being too fruity or sweet, thanks to the use of bitter Italian liqueurs like Aperol and Campari.
3 parts prosecco
2 parts Aperol or Campari
1 part soda water or sparkling mineral water Ice
1 orange slice
Drop some ice in a glass, pour in the prosecco, add the Aperol and top up with sparkling water. Serve with an orange slice. Serves 1. No-alcohol version
You can easily make a ‘virgin’ version of everyone’s favourite summer drink replacing the prosecco with nonalcoholic sparkling wine and using Lyre’s Italian Spritz instead of Aperol or Campari.
Another popular summer choice, the humble mojito is the ultimate holiday drink. A perfect blend of sweet and sour, topped off with refreshing soda water and plenty of ice.
60 mL white rum
20 mL lime juice
1½ teaspoons sugar
Handful fresh mint sprigs Soda water to top Ice
Lime wedge to garnish
You’ll need a tall, heavy-bottomed glass for this one. Add the sugar and about three-quarters of the mint sprigs and muddle together until you can smell the mint (you can use a clean wooden spoon if you don’t have a muddler). Pour in the rum and lime juice, then stir to dissolve
the sugar. Fill with ice and top with soda water. Give it a good stir to let the flavours combine. Add the lime wedge and remaining mint spring to garnish. Serves 1.
For a tasty variation, cut up some watermelon cubes, throw in the blender and blend till smooth. Strain to catch the pips and excess pulp. In this version of the drink, add the lime juice with the sugar and mint and muddle together, then add the watermelon juice when adding the rum.
No-alcohol version
For an alcohol-free mojito, just skip the rum. There’s still enough flavour for the perfect party drink, thanks to the rest of the ingredients.
The Hugo is like a cousin of the spritz — part of the same family but just different enough to be interesting.
120 mL prosecco 25 mL gin 20 mL elderflower cordial 25 mL soda water
Ice
Handful of mint leaves + a sprig of mint to garnish
Scrunch the mint leaves to bruise them and add to the bottom of a glass. Pour in the cordial and gin, allowing the ingredients to meld and infuse for a few minutes. Fill with ice, add the prosecco and top with soda water. Finish with the mint sprig. Serves 1.
No-alcohol version
Use non-alcoholic sparkling wine instead of prosecco. The gin replacement is a bit trickier, as it has a truly unique flavour. A splash of tonic water will help bring another layer of complexity to this refreshing drink.

There’s no denying the Australian sun can be harsh — on you and your guests, your pets and your garden — so part of creating your backyard oasis should be providing shelter from the elements. Don’t let an otherwise perfect day by the pool end in sunburn when there are so many creative ways to add respite from the heat.
A well-placed umbrella or shade structure can completely transform your backyard instantly. Think about how you and your family use your space, so you can determine which areas will benefit the most.
• Adding a little shade to dining and entertaining areas means everyone
can relax and enjoy the outdoors while still staying nice and cool… bring on the long lunch!
• Adding shade beside poolside chairs and lounges gives off an instant resort vibe.
• If your pool is exposed to sun all day, part shading over a section offers relief from the sun for swimmers — especially the little ones. It can also deliver added benefit, like reducing evaporation and limiting problems with debris.
• If you’re growing delicate flowering plants, fruits or vegetables, they might like a little reprieve from the midday sun as well.
• Think about how the sun moves during the day, so you can plan for shade when it’s needed the most — during the hottest hours when the sun is high.
There are plenty of options to choose from, for every budget and requirement.
Market umbrellas are available in an almost limitless range of designs, colours and material choices. They are an economical and portable shade option and can be easily moved and angled to offer protection wherever it is required, at any time of day. They can also be folded and stored when not required.
These umbrellas will vary greatly in price based on the materials used in construction — this includes the centre post, the ribs, the stand and the umbrella fabric itself. Look for sturdy construction from materials that can stand harsh outdoor conditions. You’ll want an umbrella with fabric that can withstand UV rays, and think about a vented option if your space is prone to wind.
Cantilever umbrellas can be freestanding or fixed and are intended to cover larger areas. The cantilever design means that you can easily reposition, rotate and change the angle to suit, without the need to move the entire umbrella. You’ll generally have 360-degree rotation with a generous shade proportion, allowing you to cover several large areas throughout the course of the day.
Shade sails are a great choice for pools, decks and patios. They consist of a flexible canopy that is tied to multiple anchor points, which are generally on permanently installed posts. Shade sails are available in a range of materials, but you’ll need one that offers protection from UV radiation. They are a customisable option that can be easily tailored to suit your needs and have the added bonus of being removable when not required, so you can take them down in winter and let more sunlight in.
A more permanent solution, gazebos and pergolas work well if you want to create a distinct entertaining area or extend your living area and create a wall-less outdoor room.
Strictly speaking, gazebos are constructed with a solid roof, whereas pergolas feature a slatted roof that allows light and air to flow in. You can easily train a vine to grow across the roofline, providing shade without trapping heat.
Outdoor blinds are a great option for gazebos and pergolas, or any area that can accommodate them, including decks and patios. They can help protect furniture and block the hot afternoon sun in specific areas, letting
you enjoy more of the day without needing to retreat inside.
Awnings and canopies can be freestanding or permanent. Many options feature remote control functionality and can also include automated retraction in certain conditions like high wind.
There are so many options, it can be a bit overwhelming. Seek out pool landscape designers and outdoor suppliers, along with shade structure specialists, so you find the best advice on every available option and uncover the ultimate solution for your needs.
