Cheesecake Recipe What you will need for the crust and filling:

What you will do:

Crust

Mix cracker crumbs or Oreo crumbs, butter and brown sugar. Pack tightly into spring form pan or pie plate, going up the sides as much as possible. Place in the freezer while you make the filling.

Filling

Beat cream cheese, sugar, flour and vanilla with mixer. Then, add the sour cream and mix well. Add an egg one at a time while mixing on low speed just until blended. Put this mixture onto the crust. Bake for one hour, check to see if centre is set. Let cheesecake cool then refrigerate for 4 hours. Top with your favorite berries!

Join us on a Greek island paradise in February for Mamma Mia! a story of love, friendship and identity cleverly told through the timeless music of ABBA. “It's a toe-tapping jukebox musical with many familiar songs,” says Director Sharla Sauder, a veteran of Fraser Valley Stage. “Mamma Mia! had a 14-year run on Broadway. There's a reason for that.” The large cast of actors from all over the Lower Mainland makes it all work. “There is such strong talent. (We) couldn't believe our luck, finding such a talented, enthusiastic group of people,” adds Sauder. “People who sing and dance and act are so hard to come by.” Debbie Calicetto, founder of Can Dance Studio in Mission, has choreographed musical numbers for over 30 years in the Fraser Valley and she knows her stuff. “In this year’s production of Mamma Mia! we have taken the choreography to some new heights; glam disco, fun beach scenes and ABBA tunes that will have you dancing along as you sing in your seats. Over 20 dancers fill the stage with musical numbers that will keep you smiling from beginning to end.” Set on a Greek island, ABBA's hits tell the hilarious story of a young woman's search for her birth father. On the eve of her wedding, a daughter's quest to discover the identity of her father brings three men from her mother's past back to the island they last visited 20 years ago.

“The show features some well-known FVS members and welcomes for the first time several new talented personalities to the FVS family,” says Producer Margaret Kennedy. New this year to Fraser Valley Stage are Samantha Silver, who plays bride-to-be Sophie, and Dianna Fast as her mom Donna. “Audiences are going to be amazed, truly,” says Fast. “The talent is very high caliber - it's practically professional only we are all volunteers! What a great group to be a part of.” The three dads who arrive on scene just in time for the big day are Andy Rolleman (Sam), Dann Wilhelm (Bill) and Derek Barnett (Harry). Groom-to-be, Alistair Hart as Sky, dances his way into the heart of Sophie as well as the audience. Other prominent cast members include: Kelly Shackleford, Brittany Kliewer, Stephanie Anderson, Leina DeBoer, Brad Dewar and Brady Moore in addition to a large chorus. Over 60 million people worldwide have fallen in love with the characters, the story and the music that make Mamma Mia! the ultimate feel-good show.

Parsnip Soup An easy, luxurious, winter soup

Preparation time: Less than 30 mins - Cooking time: 30 mins - Serves 4

Ingredients

Method

1 tbsp olive oil 2 garlic cloves, finely chopped 4 1/4 cups / 1 lb 5oz / 600g parsnips, cut into 1/2 inch cubes 1/2 tsp dried red chilli flakes, plus extra to serve 1 3/4 pints hot vegetable stock 1 3/4 cups / 200 ml / 7fl oz double cream *

Preheat the oven to 400 F / Gas 6. Heat the oil in a heavy-based pan over a medium heat. Add the chopped garlic and cubed parsnips and fry for 4–5 minutes, stirring occasionally. When they are golden add the chilli flakes and fry for one more minute. Pour in the stock, stir and bring everything to a simmer. Cover with the lid and cook for 12–15 minutes, or until the parsnips are tender. Meanwhile, for the croutons, place the pieces of bread on a baking tray in a single layer and drizzle with the olive oil. Sprinkle over the cheese, and season with salt and pepper. Bake for 5–10 minutes until crisp and golden. Remove the soup from the heat and blitz with a stick blender until smooth. Return to the heat, stir in the cream and heat through gently. Season to taste with salt and pepper. Serve the soup topped with the croutons and a sprinkling of chilli flakes for a little more kick.

Garden View This issue – Sniff! Sniff! No I don’t have a cold but this month I will be sniffing a lot. Mainly because of my winter flowering shrubs. Every garden should have a couple of plants which bravely open their petals while winter is doing its worst. Viburnum farreri or Viburnum x bodnantense ‘Dawn’ or ‘Deben’ are upright shrubs which bear pretty clusters of pink-buds on their bare branches, that open into honey-scented white flowers. They are incredibly tough, withstanding all but the harshest of frost. It’s lovely to cut a few sprigs to stand in a jam jar indoors.

My favourite winter flowering shrub is the witch hazel plant Hamamelis mollis. It’s a delightful shuttlecock-shaped bush that explodes with citrus scented spidery flowers right about now. I have the orange ‘Jelena’ in my garden but the pale yellow ‘Pallida’ and the deep red ‘Ruby Glow’ are equally lovely. My dad had a wonderful winterflowering honeysuckle in his garden: Lonicera fragrantissima, which I adored. A few years ago I discovered Lonicera x purpussi and fell in love. It has creamy white flowers and a really strong scent.

Even if you have a tiny garden you’ll have room for a Christmas Box Sarcococca confusa. It produces white whiskery flowers from among its dark shiny evergreen foliage. I have two in pots on either side of my path and I’ve had people stop in their tracks and return back towards the house sniffing, in search of the source of the amazing sweet, heady scent. And don’t forget that there are scented snowdrops and tiny Iris reticulata which are deliciously perfumed too. Time to get sniffing. Happy gardening! Rachael Leverton
