ome places, like some people, are incredibly special but also a little bit elusive. They may not make things easy; they can be difficult to reach and they don’t open themselves up to just anyone. Their richness and gifts are hidden, initially, and are often only entrusted to those who show up with humility and sincerity. One might argue that the Yukon is such a place. The long, cold winter nights are the price we pay for generous summer days, and the biggest clouds of mosquitoes and blackflies hide the sweetest wild strawberries. You have to be patient and willing to go through a bit of discomfort, but if you’re lucky, it will reward you with things that you could never even have imagined. Other places like this exist: one such place is Haida Gwaii. Like getting to the Yukon, it’s a bit of a journey to get to Haida Gwaii. Although you can get to the archipelago by plane, the most common way to travel there is by ferry, from Prince Rupert, crossing the Hecate Strait. On a clear, balmy day, with light winds, the seven or eight hours on the ferry can be a wonderful way to soak up some sun on the upper decks or watch for sea life while drinking a coffee inside. But just as likely, or maybe even more so, is that the waters will be rough, with high winds hinting at why some call this notorious stretch of water (between Mainland, B.C. and Haida Gwaii) one of the mostdangerous bodies of water in the world.That might be exaggerated, but maybe these geographical hurdles are what help keep places like Haida Gwaii and the Yukon as special as they are. And like the Yukon has its swarms of mosquitoes and cold winters to protect it from becoming too crowded, Haida Gwaii has its rainy climate and limited infrastructure; there are only about 140 kilometres of paved/maintained highways and very little cell service, and the largest part of the islands can only be accessed by sea or air. straightforward—you get what you see. Haida Gwaii isn’t like that. Spend time in the islands’ temperate rainforest and you’ll begin to understand that there’s more here than meets the eye. Spruce, hemlocks and cedars tower above, rain drips off of branches, and soft moss carpets the forest floor. At first it all just seems overwhelmingly green. But if you look a little closer it becomes apparent how complex the understory is and how much biodiversity and history exists here. Salal berries are in abundance on the forest’s edge, mycelium networks spread like a web beneath your feet and, on occasion, a Haida Gwaii black bear (North America’s largest subspecies of black bear) can be found hibernating in a hollow tree. Half-finished dugout canoes, ancient carved poles and fallen longhouses lie draped with moss, almost unrecognizable in the oldgrowth forest.

On rocky ledges, tide pools hold marine life that could entertain a

European contact brought with it various diseases to the islands in the 1800s (including an epidemic of smallpox), and death swept through the Haida communities. It’s estimated that from a population of more than 20,000, only a few hundred survived. So swift and lethal were these introduced illnesses that canoes were abandoned half-completed, and half-cut trees were left standing. There’s something intangible that still lingers, reminding visitors that these ancient places held and nurtured life for thousands of years, and that they still do. Culturally modified trees—showing evidence of how the Haida harvested cedar bark and made test holes—are living connections to the past, as well as sacred teachers for present and future generations.The tides come in and go out twice a day, creating the eternal rhythm that the Haida have lived interconnected with for as long as they have existed. The tides bring life to the intertidal zones of the islands and what, from out at sea, might look like just another picturesque, sandy beach begins to reveal its secrets to those who spend a few hours in the salty ocean spray while wandering its expanse. Shells, agates, dead jellyfish and edible seaweed are regularly washed up, along with many other maritime curiosities. Come back a few hours later and everything will be different again. small

classroom open to anyone who’s interested and willing to devote a bit of time and attention. Sea lions, whales, porpoises, halibut and salmon thrive in the waters around Haida Gwaii. The last of these holds a significance so strong in the lives and spirit of the Haida and their lands that its representation can be found in lots of Haida art, past and present, as can be seen at the Haida Heritage Centre at Ḵay Llnagaay. If you find yourself driving along the main stretch of road through the village of Daajing Giids (formerly the village of Queen Charlotte) or the town of Masset, in the north, craving some good local food, keep your senses open. Pay attention and you might see locals gathered around a food truck or a grill on a small trailer parked on the side of the road. In-between the restaurants and the shops you catch a whiff of something delicious and absolutely mouth-watering. Nothing showy, nothing complicated, just a bun and a freshly grilled piece of salmon or some halibut dipped in batter, with a few fries. It may not be advertised on Tripadvisor or be listed in a guidebook, but it’s fantastic and may be accompanied with an interesting conversation or a tip on where to go next. Such information might lead to a hike up Sleeping Beauty, a mountain near Daajing Giids that resembles a reclined woman, when seen from the ferry coming into Skidegate, and is said to offer stunning views all the way north to Tow Hill and south towards Gwaii Haanas. A muddy, slippery trail leads upwards through a steady drizzle.You reach the summit wet and cold and find yourself enveloped in fast-moving clouds of fog and mist. Feeling discouraged, you huddle between a few straggly bushes on the top, trying to find some shelter from the ceaseless winds. You think about heading down again, defeated. Pulling a snack out of your backpack, you look towards what one might imagine is the rest of the island and the sea beyond it. A bit of sun begins to push through, the clouds begin to open up and, ever so slowly, little islands take shape off in the distance. A deer appears a few-hundred metres below you, unaware of your presence and the fact that the clouds that had shrouded and protected it, seconds before, are no longer there. The sun warms your face, and as you close your eyes for a brief moment, an eagle soars out towards the coastline, and a raven calls from somewhere nearby. Places like Haida Gwaii are full of gifts, but not the kind that are sold in a store. It’s a place that offers you experiences and memories that money can’t buy, that can’t be reserved on a website or found in a guidebook. They can only be shared with us in a collection of unforgettable moments, like a person’s trust that has finally been earned. You may have to keep coming back, to continue building a relationship and to continue learning, but, as we Yukoners already know from experience, it’s worth it. (The natural and cultural treasures of Haida Gwaii are still abundant and flourishing, thanks to the stewardship of the Haida Nation and the individuals who have fought to protect it, in respect and honour of their ancestors.)

• Add grains to a large jar with 4 cups of water and all ingredients.

• 1 Tbsp water kefir grains • 2 Tbsp sugar • 1–2 cups dried fruit: figs, dates, grapes, berries (depending on size)

Two types of kefir grains exist: water/fruit kefir and milk kefir. Today we will talk about both types of grains and how to use them. Fruit kefir (or Tibicos) a naturally fizzy, tangy and healthy fermented drink While there is very little information on the origin of water kefir grains, some studies state they could come from Caucasia, as milk kefir grains were used by Russians, centuries ago. These grains are translucent and look like little crystal fragments. They are micro-organisms that contain a yeast and bacteria colony (scoby) that live in symbiosis. The grains grow and split into smaller bits during the fermentation process of the beverage. Usually they are shared by friends, family or people in the community. Nowadays, social media is helpful, too, to find grains. These micro-organisms feed on sugar and minerals that they use to multiply kefir seeds. The grains produce lactic acid and carbonic gas, making the beverage fizzy andIttangy.isnot a sugary drink since the bacteria use pretty much all of the sugar during fermentation. The role of dried fruit, especially the fig, is to bring more yeast and to feed sugar to the beverage, while lemon or other fresh fruits add minerals, aroma and tartness. It is quick and easy to make and can be flavoured according to taste. So let’s go with the recipe! Water Kefir Ingredients: • 4 cups water, unchlorinated (or chlorine will evaporate overnight in a jug)

• Pour the liquid into a bottle (beer-bottle type), close it and let it ferment another 24–48 hours at room temperature. If it is ready, when you open the bottle you should hear the gas.

Water kefir can be aromatized with green or back tea, plants, fruits, ginger or other flavours, according to taste. It is possible to ferment any type of liquid with sugar, thanks to the water kefir. You can use apple juice, as long as it is nat ural (with nothing added but or ganic fruit). It will produce a lesssugary, more-alcoholic fizzy juice. Use 2 Tbsp water kefir for each 4 cups of fruit juice. Once you make your own water kefir, the grains will grow. You can give some away, use part of it straight away and preserve the rest. For the latter, it is advised to leave the grains in a jar (jam-jar type) with water and a bit of sug ar. The water should be changed once a month, and the grains fed again with a teaspoon of sugar. It is also possible to dry the grains by placing them on a clean, dry cloth (at room temperature) and storing them in a sealed jar. Or you can freeze the grains. When you want to use them again, put the grains in water, with sugar, to reactivate the micro-organisms.

Kefir Milk

• Pour the milk into a jug or a large open jar.

• Let it rest at room temperature, 1–2 days or more, depending on the temperature. When ready, the milk will be thicker and a bit gassy.

• Filter the beverage to collect the grains and make more batches.

• First you need milk, ideally raw for its nutritious properties (if you have a goat, ewe or cow. If not, you can buy pasteurized milk).

• It is possible to drink the fermented milk straight away. It will taste quite mild. If you want more flavour and more bubbles, pour the milk into a sealed bottle and let it mature in the fridge for at least another 24 hours. To make it really fizzy, add a spoonful of sugar and let it ferment for another day or two at room temper ature. If you let the kefir milk ferment even longer, you are making cheese! The whey will separate from the curd (coagulated milk). Collect the curd by filtering it with a paper coffee filter or in a clean sock, for instance. Add a bit of salt and enjoy on sourdough bread. The whey can be used in any preparation, instead of milk (it is full of protein)—in cakes, bread, pancakes—used for cooking pasta or potatoes, or just enjoyed as is and flavoured to taste with syrup, fruit, plants, etc. To preserve the milk kefir grains, cover with milk in the fridge. The milk needs to be changed every trimester or so. Enjoy! n

Milk kefir grains Originating in Central Asia, these grains have been passed on for generations. Cheese made from kefir has been found on a Chinese mummy dating back as early as 1615 BCE. The grains you might have in your kitchen have a longThesestory!grains are easily differ entiated (by their colour) from fruit kefir grains. They are white and look like tiny gelatinous lumps of cauliflower. Depending on where the grains came from, they can have a different compos ition of micro-organisms. To find these grains, ask people in your community or head to Dawson City. The Klondike Valley Creamery makes delicious cow’smilk kefir. Loren and Jen, the farmers and makers, are always happy to share their grains when they have extra! Milk kefir or fermented milk is slightly fizzy due to the produc tion of carbonic gas and a tiny bit of alcohol. The taste is quite tart and creamy, similar to yogurt and buttermilk. To make a fruit kefir, you just need grains, water and a bit of sugar to feed your micro-organismsLeave the jar in the fridge for a second fermentation to enjoy more bubbles!

The storyline in this installment of Thor is written very well and is highly creative. There are also some cameos from Matt Damon, Melissa McCarthy and Russel Crowe. The use of special effects and computer-generated images is impressive. I think the best highlight of the film was Cristian Bale’s superb acting and the humour within the script. From a visual point of view, you could describe Thor: Love and Thunder as one big hot mess, but it is a very delightful mess to watch, especially when Thor is not wearing a shirt (Ladies, you are welcome!). Filled with action, comedy and creativity, Thor: Love and Thunder is definitely one you will want to watch, then watch again. n

THOR: LOVE AND THUNDER GIVES US MUCH TO LOVE

“Thor: God of Thunder” is a very-impressive title, indeed. In Norse mythology this hammer-wielding god was also associated with storms, lightning, strength, fertility and sacred groves. Thor also pops up in the pagan religion of the Germanic people during the Roman occupation. His famous hammer, called Mjölnir, was the mostpopular symbol to represent him, and people often wore it as an emblem.Fast-forward to modern times and Thor has taken on a whole different level of popularity through the Marvel Universe franchise. The first Thor film was released in 2011, starring a then-unknown Chris Hemsworth in the titular role. The film was hugely successful, and two more were made afterwards: Thor: Dark World (2013) and Thor Ragnarok (2017). Thor was also featured in four of the Avengers movies. The fourth installment of the Thor franchise was released on June 23, called Thor: Love and Thunder. Starring alongside Hemsworth is Christian Bale, who plays the psychologically disturbed God Killer.Having lost his young daughter, due to dehydration in a desert, the God Killer goes on a quest to destroy all gods within the galaxy. To assist him, he steals the god-killing Necrosword, which is designed to kill any god. While the God Killer is making his way around the different planets, Thor’s ex-girlfriend, Jane, is encountering some struggles of her own. Reprising this role is Natalie Portman. You may recall from past films that Jane and Thor have a very-cute romance. In Love and Thunder, we get to see what exactly caused their relationship to turn cold. Since Thor’s departure from her life, Jane continued her scientific research but, unfortunately, finds herself battling stage 4 cancer. Determined to beat it, she decides to visit New Asgard—a tourist-like town that is designed to look like the planet Asgard. While standing in front of Thor’s hammer, it calls to her and allows her to grab it. She then transforms into a female version of Thor—full of energy and strength.Shortly after, the God Killer lands in New Asgard and begins terrorizing the town with the use of Shadow Monsters, which are large nasty-looking creatures. Thor hears about the God Killer’s rampage and comes to the rescue. It is here that he is first reunited with Jane—much to his surprise. The two put aside their awkward moment and team up to try and defeat the God Killer. They are unsuccessful and the God Killer disappears and captures all of the town’s children. Determined to get them back, they set out on a mission together. You will have to watch the movie to see how the mission goes.

There are few wild greens easier to enjoy than lamb’s quarters (Chenopodium album) also known as white goosefoot and, sometimes, pigweed. A member of the populous Amaranthaceae family, which includes amaranth, quinoa, beets and spinach, among thousands of other plants, the leaves can be eaten fresh or cooked and have a flavour somewhere between spinach and kale.The animal nomenclature derives from the leaves’ shape, like a goose foot (and because pigs like it; though too much of the plants’ oxalic acid can be bad for them), and from an ancient English festival known as Lammas, when a loaf of bread made with the first harvested grain of the season was consecrated, and lamb’s quarters were part of the feast. Like dandelions, lamb’s quarters are opportunists. They show up in disturbed ground, empty flowerpots, ditches, or at the edges of forests or fields. You’ve probably noticed them—shieldlike, forest-green leaves, with raggedy edges, growing on stalks topped by lacey towers of green seeds.Those seeds can be ground into flour or cooked like quinoa, but they are difficult to hull. Foragerchef Hank Shaw suggests the easier method of throwing seed heads into soups and stir fries, as though they were broccoli. The young stalks are juicy, but turn woody as they get older, so later in the season focus on the leaves and the seeds and leave the stalks for the compost.Follow the usual precautions when harvesting—take a knowledgeable friend or a field guide with you to make sure you’re properly identifying the plant; be aware of any allergies you might have, and eat sparingly if it’s your first time. Once you’re comfortable, try out this traditional Greek recipe, typically made with the wild greens that show up after the first rains of October.

• Bake in a preheated 400° oven until golden brown, about 20 minutes. Serve warm or at room temperature.

If you can’t find lamb’s quarters, try chopped spinach, kale or chard. Ingredients 1/4 lb (4 oz) lamb’s quarter leaves (4 cups, packed) 2 green onions, both white and green parts, finely chopped. 1/2 bunch of dill, finely chopped 1/2 tsp salt 1/2 tsp black pepper 2 Tbsp olive oil 1 egg, beaten 8 oz feta cheese, crumbled 6 oz (3/4 cup) unsalted butter 1 package (16 sheets) phyllo pastry, defrosted overnight in the fridge Instructions

• Fold the bottom inch over the filling and roll it over so the filling is completely covered. Continue rolling, poking the ends in as necessary, until you’ve reached the top end and you have a small log. Repeat until you have three logs.

• Place two tablespoons of filling about an inch from the base of each long piece. Fold the sides of the pastry over the filling (about one-half inch on either side) and continue the fold for the whole length of the piece.

• Cut the stacked, buttered sheets lengthwise into three even pieces with a sharp knife or pizza cutter.

• Peel the second sheet from the pile, lay it on top of the first, brush with butter and repeat with a third sheet, covering the remaining phyllo with a tea towel every time. If the sheets are cracked or torn, try to turn and layer them so the cracks are not in the same place, always keeping the short side of the rectangle closest to you. Don’t worry too much about cracks or gaps; the butter and the rolling of the phyllo into log-like packages will take care of any imperfections.

• Remove the phyllo pastry from the package and unfold carefully onto a counter. Cover with a tea towel so the phyllo sheets don’t dry out.

Skagway plays host to a unique venue for their first-ever escape room. At 777 Alaska Street, you will spot an old White Pass train car that hosts the challenging puzzle. The goal of an escape room is to find all of the clues, to advance you and your team, and to solve the puzzle and escape. Becky McGill has been the owner of Beyond Skagway Tours, since 2011, and it quickly became one of the top-rated, small private tour companies in Skagway. “We try to have a training/company-bonding trip at the beginning of each cruise ship season,” said Timothy Sislo, the operations manager. “In 2017, we took our staff up to Dawson City and a group of employees did the escape room, up there, and absolutely loved it. From there, the idea of starting an escape room was on Becky and her daughter Kate’s minds.” In 2018, while on their training trip, they also stopped and did an escape room at the Takhini Hot Springs, near Whitehorse. “This cemented the idea that we would build an escape room,” said Sislo. After completing numerous escape rooms, over the winter, Becky and staff decided to create a storyline that evoked the adventurous spirit of Becky’s mother, Patricia Silvey. So, the goal to escape—Find Patricia’s itinerary! If you find it in under one hour, there are also prizes! “With a storyline created, it was then time to start creating the puzzles and design of the room,” said Sislo. “Ninety percent of the room was designed and built by Becky and [her] family, with only a few pieces being sourced from outside of Skagway.”

It’s up to you and your team to solve the puzzles and find the hidden itinerary, to find out where Patricia has ended up. There is only a limited time to find the itinerary, as the Investigators’ jurisdiction runs out at the Canadian border. This escape game will be running until midsummer, when they will then switch to the new escape-game concept for the remainder of the summer. The new escape game, Snow on the Tracks, has guests playing a captured gang of notorious thieves. While on the train up to Whitehorse, for a trial, an avalanche hits, leaving the train cars teetering on the edge of Dead HorseWithGulch.aneven-bigger avalanche looming, the crew deserts the train, leaving behind a gang of criminals to take the plunge with the rest of the train. “Guests will have to solve the puzzles to break into the safe, get their plunderings and escape the train before it is knocked off the mountainside,” saidSisloSislo.has experience working in escape rooms, as well as in professional theatre, and is working hard to create a more-immersive theatrical and family-friendly experience that all ages can enjoy. I have used this reference in a number of my columns, but his lines apparently need explanation. It is loosely talking about “carrying capacity.”

A simple way to explain this is that an area of land that includes habitat like water, or sources of food and places where animals seek shelter will support specific animals or birds. Because that parcel of land would support a grouse, does not mean the same parcel would support a different population of birds. Cottontail rabbits, (a “great flea” example) … In a year, a female cottontail may give birth to a dozen young. If there is a good crop of grass, dandelions, etc., the cottontail population will flourish. Now let’s add a high population of coyotes (“lesser fleas”) and the rabbit population is going to have a sharp decline. Now let’s add mange, or some other bad disease, to the coyote population and we will have fewer predators to keep the rabbits below an excessive carrying capacity for available food. Consequently, the rabbits eat themselves out of available food for their high numbers, and you end up with a die-off. In short, lose the rabbit population and you cut down the food source for the coyote, and that affects the proper carrying capacity for the coyote. The moose population must have sufficient food, shelter and water to carry a specific number of moose. Take away one, and you could have a disaster. In short, you don’t need another animal to affect the moose population; just the loss of one of the essential three needs: food, shelter or water. Just cut down the trees and scarify the land. Moose live on young poplar and aspen branches, Drain a wetland where (moose rely on the aquatic plants that grow in wetlands) and you will reduce the available food and consequently reduce the number of moose in a given specific area. Let’s flip the coin over. Have a good amount of food but an exceptionally high number of moose. Now we have over grazing (not enough food for the high numbers of moose) and few predators to keep those numbers down. We have a disaster. Weather conditions … As one can see, wildlife management is a complicated science. Now let’s add the weather condition. If we have a dry spring, wetlands will dry up, and right now this is a major problem with wetlands in western North America. Consequently, the waterfowl population is declining. Water, of course, is essential both for animals as well as as for waterfowl. Reduce available water and you reduce mammal populations. Extreme cold winters will freeze many small creeks and that can be a disaster for animals. Animals then rely on snow for water intake. It takes more energy to melt snow down, which solves thirst problems. For example, fill a glass with snow and let it melt down to water and you will understand this point. We cut down trees for lumber and replace them with pole tree plants that do little good for animals. When was the last time the Yukon industry planted cedar, aspen or poplar trees for wildlife? The importance of water … Clean, non-toxic water is not only important to fish and wildlife, it is essential. Many lakes, rivers and creeks are becoming toxic due to industrial runoff, and broken hillsides as a result of off-road vehicles chewing away ruts to allow water to carry dirt into water sources. Plants need sunlight, but over time the runoff of toxic chemicals and dirt discolour the water and restrict the necessary sunlight for plant growth. Plant life in streams and lakes will die off and decay. Come winter and the freezeover of ice, plants can no longer give off needed oxygen, as the process will result in a lack of oxygen and, consequently, the fish will die. The future of wildlife management … It is clear that the future management of all species of wildlife should be managed by professional and experienced wildlife managers. When we get down to the basics of life—man or beast; cottontail rabbit or elephant— there is a need for a specific quality of habitat for the health and welfare of every species on this planet. Remember, science is an exact knowledge and that will determine life on this “small pebble of sand” in our universe. I will end with an ancient Chinese saying: “May you live in interesting times” (origin unknown). I have used this before and it is most fitting for this column. I started training Sadie on the paddle board while the lakes were still frozen, putting lots of treats on the board so she was excited and wanted to stand on it. Once she associated the board with reward, I moved it onto a folded up duvet so it was unsteady. I would stand there on the board, with her, rocking it from side to side and back and forth while rewarding her for staying on. Then we moved into the backyard, which had some very large puddles. She was still happy to stand or sit on the board while I fed her treats and I took her to Long Lake, in May, to go out on the water, and she did great!

Since its creation, the Victoria Gold/NND CBA Scholarship Program has provided over 135 scholarships to FNNND citizens for a total disbursement over $130,000. “I would tell other FNNND citizens to follow their dreams and step out of their comfort zones to try something new,” continues Maggie. “Learn, explore and find your passion.” First Nation of Na-Cho Nyak Dun citizen and Victoria Gold/NND CBA Scholarship Program recipient Maggie Wallingham-Schultz who is pursuing her Bachelor of Science in Biology at the University of Calgary.

As part of the Comprehensive Cooperation and Benefits Agreement (CBA), signed by Victoria Gold and the First Nation of Na-Cho Nyak Dun (FNNND) in October 2011, a scholarship program was established in 2012 and is mutually implemented to help support FNNND citizens attending full-time university, college or trades and technical courses. This initiative, the Victoria Gold/NND CBA Scholarship Program, accepts applications twice a year; in August for the Fall school semester and in November for the Winter school semester.

Maggie Wallingham-Schultz received a Victoria Gold/ NND CBA Scholarship earlier this year as she pursues her Bachelor of Science in Biology at the University of Calgary.

The upcoming scholarship program application deadline is August 19, 2022 and scholarships will be awarded on September 9.

The next Victoria Gold/NND CBA Scholarship Program deadline is November 25, 2022 and will be awarded in January 2023. Program details can be found at

“The Victoria Gold-NND scholarship helped me immensely as it allowed me to focus solely on my studies instead of worrying about the financial aspects of my post-secondary education,” says Maggie. “After I finish my undergraduate degree, I plan to apply for medical school.”
