Alaskan folk singer Annie Bartholomew’s debut album, Sisters of White Chapel , is full of Yukon-inspired stories

Before taking on a Jenny House Residency in 2019, Annie Bartholomew had only visited Whitehorse once, on a school trip. The opportunity to work out of the Jenny House gave her the first non-stop weeks-long stretch in her life where she was able to focus solely on her music and art, without worrying about a day job, school or anything else. Out of her sessions at the Jenny house came her debut album and its accompanying stage play. Set for release on June 16, Sisters of White Chapel is a collection of songs inspired by old northern stories, particularly about the journeys of women who followed the gold rush.

“While I was at the Dawson City Museum, Alex [Somerville, executive director] showed me this book called Red Light Revelations, by Jay Moynahan, that was all these newspaper articles about women and sex workers during the Klondike Gold Rush, in Dawson and Skagway,” Bartholomew explained to What’s Up Yukon. “Reading through them just really got me thinking about that time, and the women who lived there, and the complexity of those stories. And then, of course, it’s filtered through the news of that time, and yellow journalism fuelled the Klondike Gold Rush; they were selling papers, so they wanted to write the most-sensational stories. So, we don’t know how accurate they were, but I feel like there’s elements of an emotional truth.”

Asked if it can be difficult to relate personal emotions to stories that aren’t personal to herself, Bartholomew had an interesting answer.

“I wouldn’t write the songs if I didn’t feel some kind of connection to them,” she said. “Even though I’m not a sex worker and

I’ve never engaged in that line of work, I feel like there’s a lot of universal feelings and emotions and circumstances as a woman living in a capitalist system that drove these gals to make really hard choices out of survival.

“And so, even though my life isn’t their life or their reality, I feel like there are elements of any of these stories that can give someone courage or help them process trauma. Writing the songs kind of helped heal me.”

She may not be from the Yukon, but being a northern neighbour in Juneau, Alaska, Bartholomew can relate to Yukoners on a variety of life experiences, and like anyone who travels to the North with an instrument in hand, she

felt herself extremely welcomed and well-supported by the Yukon’s music community, some members of which she’s since seen over in her state. She gives a special shout-out to Speed Control and Soda Pony, while expressing awe at the vast skill set of Ryan McNally.

“I think a characteristic of the small northern towns is that if you don’t create the culture yourself, you won’t have it,” Bartholomew said. “Everybody wants to support everybody. And I think everybody knows that.”

Along with Sisters of White Chapel, Bartholomew adapted a play to go around the songs, which has been performed in Juneau and will travel around Alaska this fall. Bartholomew hopes to break more into Canada and the Lower 48, as well, with a few shows in New York lined up for the summer.

“We’re playing Rockwood Music Hall, which is kind of where you first play as an artist coming to New York, and then the Jalopy Theatre, which is where they have a lot of folk shows and world music,” she said. “It’s kind of a dream to get to play these two venues.”

While COVID slowed down the process of creating her magnum opus and forced Bartholomew to abandon some plans to bring musicians from farther away, to work on the record with her, she’s immensely proud of the final product and thankful for the team she has helping her along.

“During COVID, at least in Juneau, people were not playing shows at all,” she said. “Usually, if you go into the studio, you’ve toured the music, you’ve figured out the arrangements, you’ve practised them together. And for

us, it was a group of my friends. I’d planned to import some musicians from Lower 48, who I really love, but because of COVID we didn’t want to bring anyone north and expose them to small communities. The only place available to record an album was this cabin here in Juneau, and I invited all my friends.

“We were able to record two songs a day because we’d sit down with the pieces and then talk about the arrangement and debate them, because someone’s idea of what a folk song sounded like was not someone else’s idea. We learned the arrangements the day of and then recorded them the day of, and there was pretty limited overdubs. But it was seven

days of recording; it wasn’t as fast as I think a lot of my peers get done. And that was just a feature of COVID. But it was really cool to have all Alaskans on it. In my dreams, I would have had Canadian musicians on it, but with border stuff that wasn’t possible.”

In continuing on her musical journey, Bartholomew hopes to make it out to other small towns with vibrant artistic communities and said that a tour of American mining towns would be a dream for her.

“I feel like if I could just stay confident and trust that rural communities are special, and so are the artists who are from there, I’ll do just fine,” she said. “But I’m trying not to psych myself out

because that’ll be the thing that gets in the way. But being in a small town, everybody wants to support your art. And that was the vibe I got from Whitehorse.”

Before we finish our video call, Bartholomew makes sure to express her gratitude to Music Yukon, the Yukon Film Society, Jazz Yukon and the Yukon Arts Centre for their support.

“It was just so amazing,” the singer said of her time in the Yukon. “I had no idea what I was getting into.”

STEP OUTSIDE

FIRELIGHTING IS A SURVIVAL SKILL

ABIC lighter is pretty small, isn’t very expensive, and even two or three of them won’t break the bank but could be the difference between making it home or not. Unfortunately, It can’t happen to me is still a common thought in the planning stage of any outdoor activity. A poorly equipped adventurer may find themselves in a real survival situation, whereas even a moderately well-equipped person will find the same situation inconvenient and unpleasant but survivable, thanks to planning and being even somewhat prepared.

Winter activities, including bison hunting and ski-trekking, can and will put you a long distance away from civilization. Situations, such as a broken ski or binding and snowmobile breakdowns or being stuck in overflow and breaking through the ice, are not uncommon. These can all be survival situations, so the next few decisions you make and the planning you did, before leaving home, now become vital. Summer activities are in the same realm,

except it isn’t as cold unless you are wet from a dunking, sweat or rain. An upset canoe, broken paddle(s) or an outboard or quad that won’t start can all be survival situations, depending on distance from the starting point.

The one-match fire works fine at camp but should not be relied upon if you are cold (hypothermic) and shivering. At times like this, immediate fire success can be crucial, changing a really dangerous situation into something you can deal with. First, you must have some material to burn and, even in the rain, the lower dead branches of evergreen trees will burn well, once ignited, and a handful of the really thin branches are easy to gather and light easily, as do dry needles on the ground (or branches). After the small stuff gets going, larger stuff can be gathered, by hand, to increase the size of (and heat from) your fire. The wood-gathering also keeps your group moving and occupied while awaiting the warmth of a fire.

Ignition comes more easily by

using one of your BIC lighters (note that they have a narrow metal band covering an abrasive wheel to make them kiddie proof. Remove this piece from all of your lighters so you can use them when you are hypothermic).

Ideally, you will have some material with you that ignites easily to get the kindling on fire. This can be carried in a plastic jar to keep it in good shape. Suggestions include kerosene-soaked chainsaw chips, duct tape, alcohol hand cleanser, fire paste, wood chips in a paraffin lump. This material must be with you when needed (if it was in the sunken skimmer or in the overturned and now downriver canoe, it is useless to you). A larger container can be in your mode of transport, but some amount of it is required to be in your pocket, around your neck or in a belt pouch, so it is available all the time.

Survival is always quite pleasant and you can make it more likely by just being even a little prepared. n

THE RACE IS ON!

It is almost June and for Yukoners it means the skis are in the garden shed, the parka is at the dry cleaners, and the bicycle is ready for action. It means the comeback of many favourite bike races, too.

for the fun and experience,” said long-time race organizer, Peter Heebink.

The race has been happening for the past 16 years, excluding 2020 when pandemic restrictions made the race impossible. Follow-

cles and get ready at the starting line. The race starts at 10 a.m., but not before a group meeting at 9:30 a.m. when the rules and road conditions are shared with participants. Racers are encouraged to come at 9 a.m. to pick up their

ing the paving of the road from Jake’s Corner to Carcross, more than a decade and a half ago, the Southern Lakes circuit was in prime condition for a bike relay

The initial format included the involvement of all communities along the course. Each with their own time station, food and drinks for participants. “The goal was to have each community centre participating. It was much more of a true relay race than it is now, but it also meant a lot of work,” recalled Heebink. Volunteer burnout and a lack of interest in hosting community relay stations made the race organizers rethink the format. The race was simplified, allowing teams to switch racers, as they wished, throughout the race. With only one time station, at the finish line in Marsh Lake, it required fewer volunteers. And it also meant fewer vehicles on the road. “This race is much more environmentally friendly than, say, the Haines to Haines race. The amount of cars, trucks, Winnebagos and whatnot is astonishing during the Chilkat race,” said

For the past two years, McClintock Bay Adventures, next door to Swan Haven in Marsh Lake, has been hosting the GranFondo. This is where racers leave their vehi-

registration stickers. The fastest racer usually completes the course in less than five hours.

A meal will also be served onsite, after the race, as biking as fast as you can for 170 kilometres certainly works up an appetite. And, for the keen riders, the lakefront facility also has a beach for a post-race dip in the lake. Numerous categories exist for entering the race. Adult solo, both male and female, teams (two to five persons), as well as youth and family categories. Funny costumes are encouraged, as well as any choice of bicycles. Each of these categories have their own prizes, although coming last is no reason to go home empty-handed. The Crooked Wheel Award is given to the last rider to make it to the finish line, whether solo or as a team member.

Prizes come from local sources, thanks to the generosity of local sponsors including U Kon Echelon, which plays a major role in promoting cycling in the Yukon and helping with race organization.

Visit the Cycling Association of Yukon website at yukoncycling. com for the race registration link. For more information about the race, or to volunteer, contact yukongranfondo@gmail.com.

DESERT DAYS

Ihave heard this question over and over again since moving to Whitehorse, seven years ago.

I was surprised, too, but it has quickly become a favourite destination of mine, especially for travels with loved ones when they come to visit.

My earliest memory of the Carcross Desert is of my first winter in the Yukon. My husband and I were invited to join some friends on the sand dunes for some sledding adventures, and it quickly became an unforgettable experience. Using snowmobiles, we pulled the sleds up to the very top of the highest dune, and I recall my excited yelp as we raced down the hill, surrounded by the breathtaking mountain ranges that encircled us. I remember looking around and thinking how lucky I was to live in a place where this kind of surreal experience was only 40 minutes away from home. And for someone who had been experiencing a

recovered from an ongoing parade of illnesses in our household, it was a treat to get outside and enjoy a weekend of family fun. And what kid wasn’t going to love a sea of sand to play in?

After all, my little guy had never had the experience of walking barefoot in the sand. We knew he was going to just love it.

And, we were right.

The moment my child realized that he could walk around with his shoes off, the excitement permeated off of him like a laser beam.

knowing full well that this experience would not only provide pure joy for him but would also help to ensure that he would sleep very well that night. These days it is difficult to run this boy out of energy. He has an endless supply that demands opportunities to exhaust it. Yet, I still found myself surprised by the fact that he was able to run all the way up and back down the dunes without getting tired. Although, to be fair, he did eventually ask to be carried, once we got to a small section of sand that was littered with small, sharp twigs that began to hurt his feet.

“I want to go back,” he insisted on our drive back home that day.

great deal of homesickness at that point, this time in the desert certainly added to the plentitude of reasons to make a new home for myself in this incredible territory.

Since then, it has provided many memories for my family and me … the most-embarrassing one being when my husband and I were showing it off to my sister and brother-in-law on their trip up from Ontario. We had just had the most-wonderful time climbing the dunes and enjoying the sunshine when, suddenly, I stepped in something that was most certainly not sand.

Now, it has been debated how whiney my reaction was at the time, but I was understandably upset to find that, in the entire stretch of sandy landscapes, my foot had found the single piece of dog droppings in the entire place. My family got quite the laugh out of it, at my expense, but I chose not to blame the location for the unfortunate incident.

This past Mother’s Day provided the perfect opportunity to further brush aside this not-so-fond memory and to make a more-pleasant one. I finally got the chance to share this place that means a lot to me—with my son. Having finally

He squealed with happiness and my husband and I were delighted to watch him pause (and this kid never pauses) to look down as his feet disappeared under the sand.

“Where did my feet go?” he asked, his voice a mixture of astonishment and slight concern. “Where did Daddy’s feet go?” he added when he noticed the same thing had happened to his father.

He was enamoured. And, while we did eventually make it to the top of the massive sand dune, we were entertained by the continuous breaks that our son was choosing to take after every 10 steps or so. Whether it was to sit in the sand and run his hands through it, or to let himself collapse onto the golden granules at his feet, Little Buddy was enjoying every single moment of it.

So we let him take his time,

I smiled, knowing that this magical place had captured the heart of my son on his first visit (just as it had done to mine, seven years before). It really goes to show that Carcross Desert is an important part of what makes the Yukon so special to so many of us. Whether it provides the optimal place for sledding adventures or

Sledding

an endless expanse of sandbox play for the little ones, this place is a true gem that I am grateful to have on my doorstep.

“We’ll definitely come back,” I assured my son with a cuddle, “and next time, we’ll bring sand toys!” n

HORIATIKI (A.K.A. THE GREEK SALAD)

I’m sitting in an apartment just off Syntagma Square in Athens. Motorcycles roar by and a woman drags a big garbage bag to the corner. A well-dressed Greek man in a pinstripe shirt gestures vehemently as he talks into his phone. Tourists, in their straw hats and shorts, jump off and onto the sidewalk, heading for Plaka, the busy shop and restaurant area a short walk away. We’ll be dining there tonight.

There’s excitement in the air— national elections will take place on Sunday, and the square is blocked off while workmen erect a temporary stage. Each political party has its booth. We expect loudspeakers later, and we probably won’t get a lot of sleep. But that’s okay. Today is the last day of a two-week stay in Greece. Soon my companions will return from their walk with a bottle of wine, and we’ll drink a toast to this beautiful country.

In the meantime, I’m remembering some of the fabulous meals we’ve enjoyed in Athens, in the port town of Volos, in the mountain village of Zagora on Mount Pelion; and on Alonissos, the island where I lived in my mid-twenties.

Grilled mushrooms are a feature on Athens menus now, a new addition since my last visit. Smoky, juicy, meaty oyster and crimini mushrooms, sometimes with a splash of sesame oil and balsamic vinegar; and once, in Zagora, wild porcini slow-cooked in the oven with fresh tomatoes, garlic and peppers. In Volos, a dish of cuttlefish and wild greens, the cuttlefish melt in your mouth, the greens tangy with fresh lemon. In Alonissos, locally-caught calamari, crispy tender, salty fries cooked in olive oil and a tomato cucumber salad. In Alonissos, too, we were lucky enough to find fresh sea bream, a firm, white-fleshed fish I loved in the old days, grilled until the skin was charred and the meat just done. We ate with our fingers.

The weather has been unseasonably cool, but we managed four beautiful swims in Alonissos, and we walked everywhere, rediscovering old paths and finding new ones. I saw friends I’ve known for 40 years and haven’t seen for seven, learned about the friends, inevitably, who have died, and made new friends I will see next time. I used to lament the changes on this beloved island—the

new developments, the number of cars, the abandonment of the old ways, but somehow this time I was able to let it go and appreciate that change is inevitable.

One thing that has not changed, in all the places we’ve visited, is the ubiquitous presence of the horiatiki, the salad we know and love in Canada as “Greek Salad.” Its Greek name derives from hora, the word for village, and it means, roughly, “of the village” or “in the village style,” so called because every villager in Greece grew tomatoes, peppers, cucumbers and onions, and there was always a herd of goats or sheep nearby, and everyone had a few olive trees.

One day in Alonissos, after a gorgeous swim in water with a temperature similar to that of Chadburn Lake in July, and a walk up the old donkey path from the harbour, we made ourselves a simple lunch of horiatiki, tzatziki, bread and white wine. It doesn’t get any better.

I’m sad to leave Greece, but I’m looking forward to coming home, to seeing my doggie and my friends and to trying out some new dishes. Perhaps wild agaricus mushrooms slow-cooked in the oven with tomatoes, peppers and garlic … we will see.

I will definitely be making horiatiki—an excellent horiatiki is highly achievable during the Yukon summer. There are four essentials: ripe tomatoes, good olive oil, meaty olives and Greek feta. You don’t need lettuce, and you don’t need vinegar—the tomatoes provide all the acid necessary.

This just in: My companions have returned with news that the Prime Minister will be speaking tonight in the square. We’re cracking the wine!

Horiatiki (Village salad)

Ingredients

❑ 2 large, ripe tomatoes

❑ 1/3 large English cucumber (or 2 small cucumbers)

❑ ½ medium purple onion

❑ ½ red or green pepper

❑ 16 to 20 Kalamata or cracked green olives (or any good, meaty olives not canned or jarred)

Instructions

❑ 1 6 oz slice feta cheese

❑ 2 tsp dried oregano or 1 Tbsp fresh, finely chopped

❑ 2 or 3 Tbsp good olive oil

❑ Salt, to taste

• Roughly chop the tomatoes into 1-inch pieces. Slice the cucumber (washed, but not peeled) in half lengthwise and chop into ¼-inch slices. Thinly slice the onion. Cut pepper in two pieces crosswise and thinly slice. Transfer each vegetable into a medium-sized bowl as it’s ready.

• Scatter olives over top. Lay the slice of feta on the vegetables and sprinkle oregano over top. Douse the whole thing with olive oil and put salt on the table for people to serve themselves. Serve with thick slices of hearty bread.

Makes 4 servings. n

Ican see my breath in the chilly pre-dawn light as my lungs work a little harder than usual to get enough oxygen from the thin mountain air. While my hands and feet are cold, my body feels warm from walking all night. Repetitive and lively melodies played on quenas (traditional Andean flutes) and drums accompany the movements of the people dancing around me. Everyone is cold and tired, but like birds singing on a tree branch, we’re waiting for the sun to rise. A long line of people forms along the ridge we’re standing on, as everyone instinctively

Elements of Andean cosmovision were mixed and intertwined with Catholic ideology and managed to survive in this manner, to this day.

Most of these devotees speak Quechua, the Indigenous language of this part of Peru, as well as Spanish. During the time of the Incas (and before), Quechua was never a written language and that is why you will find so many different spellings of Qoyllur Rit’i, as well as of the names of other local places and mountains. The pilgrimage to Qoyllur Rit’i is often referred to as a syncretic religious

It’s clear, however, that this place was sacred long before the arrival of the Spanish colonizers, 500 years ago, and subsequent attempts of the church to inject Catholicism into pre-existing Andean rituals and traditions.

Qoyllur Rit’i revolves around the importance of ritual, but not only the ones performed inside a church. Instead, it also celebrates and honours the natural world, the mountains and the traditions that existed in the Andes long before the Spanish arrived. It’s a living and breathing example of

Qoyllur Rit’i is celebrated a few weeks before the winter solstice, and its dates coincide with the reappearance of the Pleiades constellation in the southern hemisphere. Delegations from eight naciónes (nations), comprised of dancers and musicians from eight different regions of Cusco, make the journey each year. Their costumes are largely made by hand and each element has a story and a significance. The choreography of their dances is imbued with historical and cultural meaning, and

Yukon’s Best Friend:

For more information, please contact: sales@whatsupyukon.com

The Best Things in Life are… Rescued!

Meet Maple!

She is a 2-year-old, female German Shepherd. Maple is available for adoption from foster. Her foster family really enjoys having her, but it’s time for her to find her forever home. Visit the link below to see what her foster family they have to say about her:

Maple is outgoing and friendly, she loves to play with other dogs of all sizes. She is smart and learns quickly. She is very tolerant and trusting when it is time for her hip exercises. She would do well in a home with children, with proper introduction of another dog. We do not know how she is with cats.

Maple has been diagnosed with mild hip dysplasia which is likely congenital. The vet believes with proper care and management she is able to live a full and happy life. Potential adopters are encouraged to do their research into the financial and emotional cost of ensuring a dog like Maple maintains a high quality of life.

If you are interested in adopting Maple, please fill out an online application at humanesocietyyukon.ca. If you already have a preapproved application with us within the last year, call 633-6019 to put your application towards her.

PET PAGE!

She’s a 1.5-year-old Bernese Mountain Dog. Mikasa is a big bubbly baby. She’s a purebred Bernese Mountain Dog just over a year old. She loves other pets and flops her big paws around. She seems to be very tolerable and could potentially do well with children and other dogs. She is not very food motivated but would much rather have a walk or a cuddle session.

If you are interested in adopting Mikasa please fill out an online application at humanesocietyyukon. ca. If you already have a preapproved application with us within the last year, call 633-6019 to put your application towards her. Note: Please submit only 1 application, noting your first choice.

FOSTER FAMILIES NEEDED

As most adoptions happen in the city, YARN relies heavily on foster homes in the city when pups are ready for adoption. We look after all the vet appointments and adoption applications.

YARN cannot continue accepting litters, unless it has foster homes to care for them in the city, while they find their homes. We are in need of some great Fosters Families to help our little fur-babies when they arrive in Whitehorse.

the notes of their songs are ones that have reverberated through these valleys and mountains for hundreds, if not thousands, of years. Coming to Qoyllur Rit’i is not something to be taken lightly. Even if one is not part of these comparsas (troupes), most people believe that one needs to make a commitment to come for three consecutive years. Some visitors come for only a day, but many spend several nights in the mountains and bring with them tents and tarps to rest under.

Most don’t rest much, however.

Crosses are carried up towards the glacier in special processions, people wait in long lines to go into the sanctuary to greet the image of Christ, and families gather at

the base of the mountains and build miniature houses of stones to represent the ones that they one day wish to have. Strangers get symbolically “married,” and stalls line the trail, below the shrine, hosting a market selling toy cars, ceramic livestock, bundles of fake money and all sorts of representations of possible desires for the future. The nights are filled with different dances, fireworks, sacred initiations up in the mountain, and loud continuous music under the full moon.

Ukukus, traditional Andean dancers representing the mythological offspring of a woman and a spectacled bear, are a quintessential part of Qoyllur Rit’i. Some

times also referred to as “pabluchas,” ukukus dance and play pranks, but they are also in charge of maintaining order, preventing excessive drinking and punishing any offenders. Qoyllur Rit’i is not a game. Preparations are made several months in advance: there are rules and codes of conduct and, for many who attend, it’s a very serious and important part of their year. For some, it’s about deepening their faith; for others, it’s a time of cleansing or a type of penance. People come to make offerings, to ask for a blessing or to seek healing (both physical and spiritual). Historically, ukukus were the only ones allowed to climb up to the sacred glacier where they would collect blocks

of ice that were believed to have healing properties. The water from the melted blocks would be taken home to bless the fields and to bring good luck to the communities. This is, however, no longer done because of a growing awareness of how rapidly the glacier has been retreating.

It’s said that the Peruvian Andes are home to more than 70 per cent of the world’s tropical glaciers and the Cordillera Vilcanota (the mountain range where Qoyllur Rit’i takes place) includes almost 500 of these glaciers. Long-term shifts in weather patterns and temperatures are being observed everywhere, and Peru is no excep-

used as holy water seems quite profound now.

Most visitors leave via the same path they came, but a few groups spend several nights in the glacial basin and eventually continue the pilgrimage for 24 more hours, carrying with them the images of the Virgen Dolorosa and the Lord of Tayancani, through the night, to receive the sunrise, Inti Alabado (the praising of the sun), before descending to the town of Tayancani. The long trek from the base of Apus Sinakara and Qolqepunku, to this area, is an example of the internal fortitude of these comparsas. They dance and play their music all day and night, with

tion. The dry season is becoming longer, water more scarce; and abnormally high UV index readings, more common.

To the Indigenous Quechua people of the Andes, the mountains have spirits. They’re referred to as Apus and protect the people and animals who live near them. Traditionally, offerings to these divine entities were woven into Andean daily life but gradually have become forgotten as more and more people move to cities. The accelerated melting of these glaciers, whether it’s caused by consumerism and burning fossil fuels or by a forgetting of ancient traditions and a lack of offerings to the mountain spirits, is clearly a symptom of an imbalance in the world.

The fact that glacier ice was

no sleep, fuelled only by their faith and maybe a few leaves of chewed coca. Views of Apu Ausangate accompany them in the distance, and the stars of the Milky Way and the light of the moon guide them during the last few hours before they wait in a long line to greet the sun. They then continue on dancing in rows, over the dry, grass-covered hills, to eventually arrive in Tayancani and then make their way back to their communities. Next year, they will come back to these mountains to once again show their devotion and love for the Lord of Qoyllur Rit’i, as well as the Apus and Pachamama (Mother Earth), hoping to still find the life-bringing glaciers of the Andes waiting for them. n

Having good visibility on snowy roads can make all the difference. You will be able to see things clearly and avoid accidents and injuries. Here are a few tips to sharpen your vision and ensure a safe drive at night. First, check your lights. It is important to check your headlights that includes fog lamps, driving lights and brake lights if they are working properly before heading out. WHAT ABOUT FOOD?

Off-grid living presents its own unique challenges when it comes to food

Who doesn’t love precooked meals? And what could be better than for you to prepare them in the first place? That way you know exactly what’s in them. Such meals save a lot of time and energy (yes, they do!). Say you cook one big pot of moose stew, which could end up being as many as 21 meals for you and your chosen one … Wouldn’t that be swell? Imagine getting up in the morning and discussing what’s for supper—then, decided, you head to your cellar, pick up

low heat.

• Then place 3 to 4 chunks into a quart jar, cover them with the liquid and repeat with your other jars, discarding the veggies. (Seven quart jars will fit into a canner.)

• Bring the pressure up to 10 pounds and cook for 90 minutes.

When we take this meal on the trail, we put it in a food container. Then, at the line cabin, we transfer it into a pot and set it on the wood stove. For supper, we mix

that mason jar—and, when you get home from work you just cook some noodles or some potatoes or rice, heat up the stew, and that’s it. Instead of cooking moose stew 21 times, you just cook it once. You need to buy a pressure canner, granted, and mason jars.

A Stew Recipe For You: Instructions

• Take three-quarters of a cup of chunks of meat (moose, caribou, elk, bison), of any cut, put them in a large pot and add water.

• Then add a whole onion, to make sure the broth stays clear.

• Add salt and, if you have it, celery root, parsley and carrots. Cook for about 1 1/2 hours on

this meat with sauerkraut and roasted potatoes. Then we can the leftover bouillon, as well, at 10 pounds pressure for 30 minutes. Using this broth on the trail

gives you an instant boost … better than Red Bull! Or you can use it for your other cooking.

A root cellar that keeps its temperature (around refrigerator temperature) is ideal for keeping all of your jars of eggs, onions, lemons, apples and potatoes. Your fresh groceries last a lot longer when your root cellar is free from frost, dry and (especially) dark. Eggs will last us four months. Gala apples, Yukon Gold potatoes (the red ones will start sprouting) and yellow onions will keep for six months. Carrots don’t do really well, so we dehydrate or can them.

Around the end of fall, we pickle eggs and have them for our

lunches. You just have to make sure you don’t cut down on salt (follow the recipe).

The Yukon bush has so much to offer—so many berries. I enjoy picking them. Years ago, I started ripping out some Labrador tea and dwarf birch in front of the cabin. Blueberries and roses started sprouting … Heaven! Of course, every Yukoner knows what to do with blueberries and low-bush cranberries, but what about high-bush cranberries? You walk through the bush and all of a sudden you get a whiff of dirty socks (it’s not you; it’s the highbush cranberries, which are in the honeysuckle family—compared to

What About Food? ... cont’d from page 19

the low-bush cranberries, which are in the heath family). Make a sauce out of the high-bush cranberries and try it on pancakes.

Mossberries are great when thirsty, or mix them with other berries for pies—or make juice. And discover which berries you like best in your oatmeal.

Pick juniper berries and use as a spice for smoking, or for cooking wild game. Brew the berries as a tea for urinary-tract problems. Eat a few dried ones before a meal, to prevent flatulence. We’ve seen robins eat juniper berries, when nothing else was poking through the snow, yet pick only the darkblue ones, as those are the ripe ones.

If you happen to find melonberries in the summer, enjoy three or four (but not more); otherwise, you might have to find yourself a hidden spot or an outhouse pretty quickly.

Should you buy a dehydrator? It makes a lot of sense but does require a lot of energy, so we dehydrate our food when we are back

in civilization, when loving dried fruit without anything else added.

I love pineapple, kiwi, mango and apples. And dehydrated carrots, peas, leeks, celery and other root vegetables make any soup so much better.

Once we’re back out on the trapline, in August or Septem-

ber, we have to make sure our cakes, sausages, steak, ground meat, cheese and bread stay frozen. Either we have enough solar energy or we’ll have to run the generator for a few hours on every second or third day. We do use coolers, too, so that the freezer is not chock full (we switch ice packs back and forth from freezer to cooler).

And once we run out of a certain food (say we bought a couple of family-size Lays chips and they’re finished by January), well, that’s it. That’s why we enjoy them while we have them. Can’t do a quick run downtown—forget Timmies, Subway, or pizza delivery. The first time back in Whitehorse, though, I will head over to Tim Hortons and buy myself a plain butter croissant!

Get crackin’ in the kitchen, and stay safe!
