INVOLTINI DI ZUCCHINI CON BURRATA/STRACCIATELLA

COOK TIME 10 - 15 MIN. | MAKES 3 - 4 SERVINGS

Ingredients

• 1 whole green zucchini, sliced in long strips using a mandolin slicer

• 1 cup - flour

• 2 large eggs • 1 cup - oil (60% extra virgin olive oil & 40% canola oil)

• 1 roasted red pepper, cut in strips

• 2 oz - mircro greens • 5 oz - BelGioioso Grated Parmesan (can substitute Burrata or Straciatella)

Featuring: Directions

1. This delightful summertime appetizer is constucted by dredging a few slices of zucchini in flour and egg.

2. Place in skillet and begin to fry in oil on a light to medium flame.

Fry on both sides until slightly brown. 3. Remove from oil and let drain on paper towel for a minute. 4. Apply BelGioioso Grated Parmesan, Burrata, or Straciatella to flattened zucchini slice and begin to roll. Repeat until zucchini and

Parmesan/Burrata/Straciattella are used.

5. Serve immediately and top with roasted red pepper and micro green garnish.
