A warm welcome to you all...

As I sit down to write this, it is a lovely February morning and the sun is streaming through the window. It really does feel that winter is on its way out, and indeed a quick look at the calendar tells me winter officially ends on Thursday 20 March with the spring equinox. Not long to go then, but of course in reality it is possible to get spells of wintry weather from now until May, so don’t put away your winter tyres and snow boots just yet!

This is one of my favourite times of the year – the cold winter days slip away and the season of spring approaches, bringing with it a transformation of the world around us. The days grow longer, and the sun's warmth gradually awakens nature from its slumber. Looking out on the garden, I can see the trees and bushes are already starting to bud, and delicate green leaves starting to unfurl. Flowers are starting to push through the soil too – daffodils and tulips. The birds are particularly full of life this morning, filling the air with their chirping and cheerful songs as they build nests and prepare for new life. All is a beautiful illustration of nature’s own artwork. Damn, just as I was immersing myself with the beauty of spring, another reminder that spring is on its way has just dropped into my inbox – an email from the council saying their garden waste collection service will soon start again, and payment is now due!

The arrival of spring can also be a rejuvenating force for our mental health and wellbeing. By stepping outdoors, becoming more active, and connecting with the beauty of nature, we can fully embrace the transformative power of spring, leading us to a greater sense of happiness and fulfilment.

So, as we ease ourselves into March and shed our winter layers, let’s welcome spring with open arms and allow the beauty of rebirth that surrounds us to uplift our spirits and nourish our souls.

Daring dips and delightful days at The Mayfield

February has been a month of excitement, creativity, and community spirit at The Mayfield.

We had our first-ever (and probably last!) Dip for Dementia. Braving freezing temperatures and stormy seas, thirteen courageous team members plunged into the icy North Sea to raise funds for Dementia UK. Initially met with disbelief, the idea gained enthusiasm which then completely disappeared as we realised how cold it would be on the day.

However, the team rose to the challenge and plunged into the churning waves. Laughter, screams, and sheer determination got everybody into the water, with residents and families offering much-needed support from the

Beyond the dip, our residents enjoyed a trip to the theatre to watch the pantomime Dick Whittington. We also did another brilliant Tour of the Moors, a scenic trip to Robin Hood’s Bay, Sneaton, and Ruswarp. This was followed by a delicious lunch at Jack and Jill’s at Scaling Dam. It was also another month of creativity as residents enjoyed a variety of arts and crafts sessions. Decorations were made for Chinese New Year and presents for Valentine’s Day. We also enjoyed scrapbooking and making tissue paper flowers. Claire from Whitby Museum came to The Mayfield with a pop-up archive filled with old photographs, postcards, and newspaper clippings, sparking conversations and fond memories of Whitby life.

There were numerous birthdays in the month which were celebrated with families, friends, laughter and cake!

Lastly, our Winter Warmer Dinner has been a huge success, offering comforting soup and warm company every Thursday. If you haven’t joined us yet, there are still two more dinners to enjoy on 20 and 27 February—no booking required, just turn up!

How to throw a fun and festive St. Patrick’s Day party!

St. Patrick’s Day, celebrated on 17th March, honours

St. Patrick, the patron saint of Ireland. He is credited with bringing Christianity to Ireland during the 5th century and is famously associated with the shamrock, which he used to explain the Holy Trinity. Over time, the day has evolved into a global celebration of Irish culture, featuring parades, music, food, and vibrant green decorations. Many cities around the world, including London, New York, and Sydney, hold grand St. Patrick’s Day parades, drawing thousands of people dressed in green.

Hosting a St. Patrick’s Day party is a fantastic way to embrace the Irish spirit! Start with themed decorations: adorn your chosen space with shamrocks, green tableware, leprechaun hats, and twinkling fairy lights for a festive atmosphere. You could also add gold coins and pots of “gold” (chocolate coins) as playful table decorations. For food, serve traditional Irish dishes such as corned beef and cabbage, shepherd’s pie, or Irish soda bread. Add a touch of green to your menu with spinach dip, green-tinted cupcakes, and green cocktails like a shamrock martini. Be sure to have plenty of Irish coffee on hand, as well as Guinness or a smooth Irish whiskey for those who prefer a classic tipple.

No party is complete without entertainment! Create a playlist of Irish folk music or modern Irish bands such as U2, Pillow Queens, or Lankum. Consider hosting fun games like a gold coin scavenger hunt, an Irish trivia quiz, or a “best-dressed” contest for guests in creative outfits. A round of traditional Irish dancing could also be a great way to get everyone involved and energised. Finally, offer guests a taste of Irish heritage by reading an Irish blessing or a fairy tale. Sharing a few words about the significance of the day or an interesting fact about Irish traditions can add depth to the celebration. With great food, lively

entertainment, and a warm atmosphere, your St. Patrick’s Day party will leave guests feeling lucky to have celebrated with you!

Monthly Recipe Teriyaki and lime-glazed chicken wings

Crispy, flavour-packed, and coated in a rich, glossy teriyaki glaze, these oven-baked chicken wings are a guaranteed crowd-pleaser!

Perfectly balancing sweet, savoury, and tangy flavours, they’re baked until golden and crisp before being tossed in a sticky, homemade sauce. Finished with fresh lime zest, spring onions, and a hint of chilli, they make a deliciously moreish dish that’s ideal for sharing. Serve them with fluffy jasmine rice for a satisfying meal, or enjoy them as a tasty appetiser at your next gathering.

Timings & Servings

Preparation time: 10 minutes

Cooking time: 40 - 45 minutes

Serves: 4

Ingredients

• 2 tbsp rice flour (or substitute baking powder).

• 900g chicken wings (pat dry with kitchen paper).

• 4 tbsp soy sauce.

• 2 garlic cloves - finely diced.

• Thumb-sized piece of ginger - finely chopped.

• 4 tbsp light soft brown sugar.

• 1 tbsp cornflour.

• 1 lime - zested and juiced.

• 2 spring onions -sliced.

• 1 red chilli - remove seeds and chop finely.

Method

Preheat the oven to 220°C/200°C fan/gas 8.

Line a large baking tray with greaseproof paper. Place the dry chicken wings in a large bowl. Sprinkle over the rice flour or baking powder and mix well with your hands until the chicken wings are coated. Season well with salt and pepper.

Spread the coated wings across the baking tray in a single layer. Bake for 20 minutes.

While the chicken is cooking, make the teriyaki glaze. Into a small pan, add the soy sauce, garlic, ginger, sugar, and 150ml of water. Cook over a medium heat for 4–5 minutes until the glaze is bubbling and slightly thickened. Mix two tablespoons of the glaze with the cornflour, then pour the mixture back into the pot, whisking continuously. Simmer for 2–3 minutes until thickened. Squeeze in the lime juice.

Remove the chicken from the oven after 20 minutes and tip them into a bowl. Reserve a few tablespoons of the glaze and pour the rest over the wings, making sure they’re well coated. Spread them over the baking tray again and return to the oven for another 20 minutes.

When they’re cooked, remove them from the oven, top with the reserved glaze, then sprinkle with the lime zest, spring onions, and chilli. Serve with fluffy jasmine rice.

Puss Wuss simply loves adventures, and she has already had lots of them in Whitby. In this latest story, her pussy cat friends start to disappear and Puss turns detective in order to find them. This story is full of action and adventure, with a very dramatic speed boat rescue which takes place in Whitby Harbour. Does she track down her friends? This a masterfully crafted book set in an anonymous city in the US, which explores the interconnected lives of children as they navigate their journeys home from school across ten city blocks. The book is divided into ten chapters, each focusing on a different set of characters with their own challenges, joys, and discoveries.

From a boy struggling to care for his sick mother while managing school, to a girl leading a double life of mischief and kindness, all the stories stand alone, yet they are subtly linked. Reynolds captures the nuances of friendship, family, and resilience beautifully. His use of

June McCleave is a local retired schoolteacher. Every penny raised from the sale of this book will go to Newcastle University for their groundbreaking research into a cure for blood cancer sufferers like June’s son, Peter, who has been battling multiple myeloma for the last six years. Peter has set up a charity called ’10,000 Donors’ and to date, along with June and her family, and the sales of June's The Adventures of Pandora Pettigrew Puss Wuss books, and Just a Village Kid and Other Ramblings (an autobiographical account of June growing up in the 1950s, which also includes her poetry and creative writing), over £50,000 has been raised.

humour, keen observation, and lyrical prose makes the ordinary feel extraordinary. Themes such as bullying, grief, first love, and bravery are handled with sensitivity and a deep understanding of childhood.

The narrative celebrates diversity, both in terms of the characters’ backgrounds and the ways they perceive the world. Reynolds uses each story to highlight universal truths about growing up while respecting the unique experiences of each character. Books aimed at the 12-15 agegroup can be notoriously downbeat, so it is much appreciated that Reynolds balances more poignant scenes with laugh-out-loud funny moments.

While the book’s structure may initially seem fragmented, it ultimately reinforces the central theme: that everyone has their own story, but we are all connected.

Bedding plants are a staple of springtime gardening, and nurseries are full of them at the moment. They are little powerhouses of vibrant colours, which we as gardeners can use to brighten our plot.

Bedding plants are simply short-term plants, usually annuals or biennials, grown for their decorative flowers or foliage. They are typically planted in beds, borders, containers, or hanging baskets to provide a stunning display for a specific season, such as spring or summer. Unlike perennials, which return year after year, bedding plants complete their life cycle in one season, making them ideal for gardeners who love to experiment and refresh their displays annually.

At the moment, I’m planting up pansies, petunias, begonias, geraniums, and marigolds. There are so many varieties, with something to suit every garden and colour scheme.

They are such a quick and affordable way to inject colour and interest into a garden. Their fast-growing nature means you can create an eye-catching display in a matter of weeks, perfect for filling gaps in borders or brightening up patios and balconies.

They are also incredibly versatile, thriving in various settings, from formal gardens to informal cottage styles. Many bedding plants attract pollinators like bees and butterflies, which, as you know, I love to encourage because they contribute to a healthy ecosystem. Additionally, they allow gardeners to experiment with assorted colour schemes and layouts each year.

How to Use Bedding Plants

Plan Your Display – For a formal look, plant them in neat rows or symmetrical patterns in flowerbeds. For a more relaxed vibe, mix different species in containers or hanging baskets.

Prepare the Soil – Bedding plants thrive in freedraining, nutrient-rich soil. Before planting, prepare the ground by removing weeds, loosening the soil, and adding compost or slow-release fertiliser.

Planting Tips – Spring bedding can be planted straight away. Wait until the risk of frost has passed (usually late May) before planting summer bedding plants. Space them according to their requirements to ensure healthy growth and avoid overcrowding.

Caring for Your Plants – Regular watering, especially during dry spells, is essential. Deadhead spent blooms to encourage continuous flowering, and use liquid feed every few weeks for the best display.

For a year-round garden display, consider seasonal bedding. Spring bulbs like tulips and daffodils can take centre stage early in the year, followed by vibrant summer bedding, and finished off with hardy winter options like violas or ornamental cabbages.

Versatile, affordable, and pretty, bedding plants are an excellent choice for gardeners of all levels. Whether you’re filling a formal border or adding flair to a balcony, they will bring a splash of joy to any outdoor space.
