Top Secret Recipes of “Mom” Aldrich’s Baked Maple Bread Pudding With Maple Whipped Cream Ingredients: 1 ½ Cup Milk ½ Cup Maple Syrup 5 slices of your favorite bread, cubed 2 Eggs Beaten ½ cup butter melted

¼ tsp salt 1 tsp nutmeg 1 tsp cinnamon 1 cup of heavy cream ½ cup maple sugar

This is a recipe from their old maple recipe book. This was developed by “Mom” or “Grammy” Aldrich, Roger’s Grandmother. Heat milk to “scald” (just before boiling, stir often). Mix with maple syrup. Add the cubed bread (We use our homemade oatmeal bread. This is the perfect recipe to use up “bread heels” or any stale bread) and stir to coat. Set aside until cool. In a separate bowl, combine: beaten eggs, melted butter (allow to cool before adding to the eggs, so you don’t cook the eggs), salt, nutmeg and cinnamon. Combine this mixture with the now cooled bread mixture. Mix to combine. Pour this into a greased baking pan. Bake at 350 degrees for 40-50 minutes- or until a knife inserted comes out clean. While this is cooking- prepare your Maple Whipped Cream. Whip your cream until it is soft peaked- don’t go too far or you’ll end up with butter. Add your maple sugar, and gently fold into the whipped cream. Refrigerate until ready to top the bread pudding with it. Serve with whipped cream while still warm.

Spent Grain Beer Bread Ingredients: ¾ cup of warm water 2 tablespoons of yeast ¼ cup of butter ¾ cup of milk 1 cup of apple juice ¼ cup of molasses

2 ounces of sugar 1 tablespoon of salt 1 ½ cups of spent grain 1 cup of wheat flour 4-5 cups of white flour

Put warm water in mixing bowl, sprinkle with yeast and let dissolve. In saucepan melt butter with milk. After butter is melted in the hot milk remove from stove and add apple juice, molasses, salt and sugar. By now, yeast has started to work so add butter and milk ect., mixture, and then add spent grain and wheat flour. Start to mix and add white flour gradually until dough is workable and does not stick to your hands. Knead dough for several minutes. Dough should not stick to your hands. Let rise to double its size. Knock back to original size. Make into 2 loaves, put on a sheet pan lined with parchment paper that is sprinkled with corn meal. Brush loaves with egg wash and sprinkle with spent grain (not included in ingredient list) and let rise. Cook at 325 degrees for about 45 minutes.

the White Mountains Staff Favorite Apple Cider Donuts

Ingredients:

- 1 cup granulated sugar - 5 tablespoons unsalted butter, at room temperature - 2 large eggs, at room temperature - 3½ cups all-purpose flour - 1¼ teaspoons table salt - 2 teaspoons baking powder - 1 teaspoon baking soda - 1½ teaspoons ground cinnamon

- ½ teaspoon freshly grated nutmeg - ½ cup low-fat buttermilk - 1/3 cup boiled apple cider - 1 tablespoon vanilla extract - Canola or safflower oil (for frying) - Cinnamon sugar (1½ cups sugar mixed with 3 tablespoons ground cinnamon)

In a large bowl beat together sugar and butter until mixture is fluffy, approximately 5 minutes. Add eggs, one at a time, beating a minute after each. In a medium-size bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and nutmeg; set aside. Pour buttermilk, boiled cider, and vanilla into sugar/butter/egg mixture. Mix well, the mixture might look a bit curdled; it’ll smooth itself out. Add flour mixture and combine gently just until fully moistened. Line two baking sheets with parchment paper and dust generously with flour. Turn dough out onto one baking sheet and pat gently into 3/4-inch-thickness. Sprinkle dough with additional flour, cover with plastic wrap, and place in the freezer for 10 minutes to firm up. Remove dough from the freezer; use a lightly floured 3-inch doughnut cutter to cut out about 18 doughnuts with holes. Place cut doughnuts on the other baking sheet as you go; then transfer to the freezer for 5 minutes to firm up again. Line a plate with a few layers of paper towels and set it nearby. In a Dutch oven or large pot, heat 3 inches of oil to 370°. Drop 3 or 4 doughnuts into the oil, being careful not to crowd the pan. Cook until browned on one side, about 1 minute; then flip and cook until browned on the other side, about 1 minute longer. Repeat with the remaining dough (if you find that it’s getting too soft as you work your way through the batches, pop it into the freezer again for 10 minutes). When doughnuts are cool enough to handle but still warm, sprinkle all over with cinnamon sugar or confectioners’ sugar. Serve immediately. Note: Boiled apple cider gives these apple cider donuts a rich, slightly tangy flavor. You can boil your own cider by simmering 1-1/2 cups of fresh apple cider down to 1/3 cup in about 25 minutes.

Walk It Off

Whether you are looking for an after dinner stroll or to work up an appetite, the White Mountains offers a whole host of outdoor recreation. Bald Mountain/Artists Bluff Loop offers some of the best views of Cannon Mountain and Franconia Notch. From I-93 (Franconia Notch Parkway) get off on Exit 34C towards the Cannon Mountain Ski Resort and head west on NH 18. Go up roughly a half mile where you see a large parking area on your right. Diana’s Bath is an easy, relatively flat walk to beautiful rocky cascades. It is a great place for all ages to enjoy the tranquility of nature, cascading falls and pools in the brook. Parking lot is located off West Side Road in Bartlett/North Conway. Elephant Head is another contender for “the best view for the easiest walk in the whole White Mountains.” It is a bit rugged, steep, and muddy, but it is only about a third of a mile each way, and leads to a sweeping view of Crawford Notch, both north and south. The trail to Elephant Head goes through a typical second-growth forest of mixed hardwoods and evergreens. The Kancamagus Highway - Sabbaday Falls is approimately a 1/4 mile walk into a 45’ waterfall. Rocky Gorge is another easy walk that takes you along the Swift River to a foot bridge that spans across the Swift River. Rocky Gorge offers a 10’ drop and rapids through the gorge. Lower falls is where the Swift River drops many feet over smooth granite rocks into a large pool.

Below are a handful of ways diners can show their appreciation to the women and men who work hard to ensure customers enjoy their dining experiences. 1. Recognize that waiting tables is no easy task. Waiting tables can be physically and mentally demanding. Servers spend hours on their feet carrying and balancing plates of food during their shifts. 2. Recognize that slow food often is not the servers’ faults. Very often a food server has no control over how fast food comes out of the kitchen. If you are in a hurry, let the server know in advance so he/she can work with you. 3. Look up at your server. Eye contract shows respect and it will help get your order across more clearly. 4. Holidays put a monkey wrench in restaurant flow. Mother’s Day, Father’s Day, Valentine’s Day, and winter holidays are popular and busy times of year for restaurant business. Diners should exercise extra patience when dining out during these busy times of year. 5. Tip with courtesy and respect. Tips are important to server because their income may not be steady. Tip according to how the service was, not the taste of the food and/or beverages. A 15% percent tip is customary, but you may want to tip 20% for exceptional service.
