Community and food

have always been linked in our collective consciousness. Since the first people gathered around fires to share the hunt, the act of eating together is common to all of us, and celebrated in both communal and spiritual rituals across the globe. More than ever before, the quality of our food — how it is grown and how it is managed — has become both a political and a personal issue. With recent scientific research verifying that we are indeed what we eat, consumers make far-reaching choices about what we choose to put into our bodies. Voting with our forks has become a movement with enormous economic impact. In this issue, The Whole Person takes a closer look at those whose passions revolve around both what we eat and how that affects our lives, our health, and our communities, which includes the increasingly-powerful social networks. Pasadena writer Laura Miera and her daughter visit with the owner/chef of vegan food truck, Seabirds, with its hoards of online fans; Janice Cook Knight visits Santa Barbara CSA providers Avalon Farms, and Sharon Hall interviews cookbook author, teacher, farmer’s market aficionado and vegetarian chef, Suzanne Landry. All these passionate foodies have something in common — a commitment to wholesome, organic, and local ingredients as well as involvement with their communities, in different but complementary ways. No matter what your family ritual is, as we approach the holiday season, it’s a good time to think about where our food comes from, and to give thanks for the amazing bounty we get to experience living here in beautiful Southern California. Direct from the Farm: Your Very Own CSA by Janice Cook Knight

ecently, a toddler who was just learning to speak arrived at Avalon Farms, in Santa Barbara, with her mother. Before she even got out of her car seat, she called through the rolled-down window, “Strawberries!” This small person is already learning, through direct experience, that strawberries indeed come from a farm. And not just any farm: this family has a relationship with Avalon Farms – because they belong to the farm’s CSA program. CSA stands for “Community Supported Agriculture,” and is the new buzzword among food lovers. For good reason: a CSA means produce for your kitchen that comes directly from a local farm.

How does this work? The customer pays for produce at the beginning of the season. This initial outlay provides monetary support for the farmer, who must purchase seeds and supplies. In exchange, each week the customer either picks up, or receives by delivery, a box (also called a share) of assorted farm produce. At a CSA, the customers become part of the farm’s “community.” Laurie and Mark Constable own Avalon Farms, a lovely small farm tucked into a “hidden valley” adjacent to an old avocado orchard. At their CSA, a typical box for the Fall season might contain several sugar-pie pumpkins, salad greens, heirloom (continued on page 42)

Birds of A Feather Eat Vegan Together

FANS FLOCK TO SEABIRDS VEGAN W

ho ever said to “eat like a bird” means to have a tiny appetite has never watched a beach seagull chow down. If you don’t believe me, just ask Seabirds, the organic vegan food truck that serves Orange and Los Angeles Counties. The “birds,” as they call themselves, can’t keep enough gourmet beer-battered tacos and grilled barbequed jackfruit burgers in their truck to keep their hungry fans happy.

Yes, I said fans. Exactly 4,000 on Facebook today, hundreds more on Twitter, and growing by the minute. So just what makes them fans and not ordinary customers? First, the dictionary defines a customer as one who “receives.” You go, you eat. You do not however, “follow” – which is exactly what fans do. Seabird fans are a unique community, part road-groupie, part online fan and part social activist. They come from all walks of life, ages, gender, and many (like myself ) are not full-time vegans or vegetarians. Even my eleven-year-old, Sofia, can rattle off the names of “the birds” (Mama Bird, Lady Bird, Vu Bird, Dirty Bird and her favorite, Baby Bird) as easily as she can the cast of American Idol.

FOOD TRUCK

That’s partly due to Seabird’s 2010 appearance in the second season of The Great Food Truck Race on Food Network. The Birds and their original vegan, fresh-produce based menu, have received a lot of attention since then. Countless articles, blogs, posts and reviews (182 on Yelp alone) are dedicated to their top-selling items, secret recipes and even some saucy bits about their history. Seabird’s fans not only follow online, but also follow the truck. One warm October evening, Sofia and I did what any typical Seabird fan would do: (1) hit their website, Seabirdstrucks.com, to “follow their truck” and check their schedule for the day. (2) Clicked onto Stephanie Morgan’s (a.k.a. “Mama Bird”) “Seabird’s Blog” and spent a few minutes reading about what it’s like to be a vegetarian. That made us hungry, so we ran to the fridge to munch on some carrots and yogurt.(3) Next, I signed onto Facebook to confirm their schedule and glanced at the newest fan posts (“Thank you for the bombest food ever. It is always worth sitting in traffic and waiting in line to eat at Seabirds. You girls are the best!”) Sofia spent a few extra minutes checking out some cool new pics of their pristine white van with groovy Beatles-Revolver-album-cover-looking art. (4) Finally,

went to Twitter to see what “the Birds” had to say about the day and their fan’s feeds. That’s more than I ever did for Bruce Springsteen! But not so for Priya, a jumping-up-and-down high school senior I met at the truck’s window that evening. She told me she is frequently online with Seabirds. Once, she even chased the truck down on the freeway after she spotted its notable blue-winged rooftop. A vegetarian since childhood, she describes the Seabirds menu as, “different than any taste I grew up with. There’s so much going on in my mouth right now! I’d follow them anywhere!” Founder Stephanie Morgan’s mythological transformation from a NYC finance young adult turned van-driving-beach-vegan is well documented and feeds the green/sustainable movement’s craving for an accessible, hip, young positive role model. Eager to meet “The Birds,” I hit the freeway as excited as my daughter to taste the much-touted vegan tacos. But, I was also chewing on some other ideas. Like how are “The Birds” viewing the idea that they are on the cusp of not one, but two, movements. One, of course, being the vegan lifestyle, and the other, the gourmet food truck movement itself. The Passionate Chef: An Interview with Suzanne Landry by Sharon Hall

first met cooking instructor, chef, nutritional consultant to cancer patients, and cookbook author Suzanne Landry at the Lavender Inn in Ojai. I loved her breezy, easy teaching style. As she demonstrated preparation of her delicious vegetarian food with hands-on techniques for a rapt audience, she talked about other health-related topics. Through Suzanne, I learned how vegetable oils are made, and why they are not created equal. Most are heat-processed, and hydrogenated, which turns them into something not nearly as healthy or useful to the body. That explains why cold-pressed oils are more expensive and healthier. Like many vocations that evolve out of personal crisis, Suzanne started her long-time career out of a need to help her children. While still living on the East Coast, she found herself pushed towards alternative approaches to health and healing when faced with the her young children’s health problems, and the limited choices of allopathic medicine: Suzanne Landry: My interest in healthy eating began when my firstborn had chronic health problems. Doctors were giving him antibiotics, one after another. I looked for a pediatrician that would try a different approach, but couldn’t find anyone at that time. Then the baby developed eczema on his joints. He suffered with that for six months. The doctor wanted to give him cortisone shots, but I decided to find answers myself. That’s when I started changing our diet. WP: Obviously you believe in the healing power of food. SL: Yes. At the same time my baby was suffering, I had an ovarian cyst the size of a lemon on my left ovary. They wanted to take it out; I was 28. I wasn’t sure I wanted the operation unless there was no alternative, so I decided to try a vegetarian

diet and I stumbled upon the macrobiotic principles of healthy eating. The principles are based on indigenous foods, eating locally, seasonally, and mostly vegetarian. It’s a very nourishing, nutrient-dense way of eating. WP: So, what happened? SL: In six months, that ovarian cyst dissolved. WP: And the children? SL: Within two weeks, the baby’s eczema stopped leaking, and in a month you couldn’t even tell he ever had it. My other son’s ear infection cleared up and they went through elementary school without even getting so much as a cold. By the way, I didn’t just jump into this, and I don’t recommend that for my students, either. I changed my own diet first and as I learned, I trusted more that what I was eating was good for growing young boys as well. I raised them without dairy foods. That was a shocker in those days, but it was dairy that caused their problems. After I took them off, the problems cleared up. But, raising them without the dairy, I wondered; how will they get their calcium? Fast forward, my three boys are well over six feet. After I’d learned with the first two, my youngest was raised on healthy food from the very start, and no dairy. He was never sick, not even a cold or sniffle. At 19, he got a job at a deli and started exploring all the dairy food I’d never let him have and he got a cold for the first time — he was miserable! WP: How did you evolve into teaching and everything else you do — judging food contests, and writing a cookbook, and all your various teaching venues — from your interest in health and feeding your family? SL: My father was an actor, and got me

on stage when I was young. With my background and my mouth, and my need for an audience, I was a natural. My first cooking class was four people around my kitchen table. The first bigger class was through adult ed in the high school. My classes turned out to be very popular. I was the Tofu Queen; this was the 80’s, and nobody was doing healthy cooking classes. I taught tofu classes, ran a dinner club, had a catering business; I lectured, counseled… and at that time, I was a single mom. WP: Suzanne, I understand you also worked as a consultant and food developer. Can you tell me more about that? SL: Before I came to California, I did food development for Fantastic Foods where I created the recipe for a vegetarian wrap as a frozen product. I also worked for Planter’s Peanuts. They wanted to develop vegetarian entrees using walnuts as a protein source. And, I served as a consultant for a store championing a new natural foods section, but none of their staff knew anything about these foods, so I developed a training program for all 24 stores. And, a newsletter that went out every month with recipes and health tidbits. WP: Did you move directly from the East Coast to Santa Barbara? SL: No, I went to Atascadero first. From there I went to San Luis Obispo, where I lived for eight years. I taught classes at Questa College, Sycamore Springs, Cal Poly, and Sycamore Farms. WP: The same kind of classes? SL: Always health-oriented. I remember trying to teach in Bakersfield. There’s a kitchen appliance store that offered cooking classes. I wrote that I could teach tofu. He wrote back and said that unless it was road-kill tofu, it probably wouldn’t fly in Bakersfield! I realized at that time Bakersfield probably wasn’t my target audience. I opened up a lot of places in SLO and taught classes, and did some catering. WP: All of this was around healthy eating. It sounds like it’s been your commitment. SL: Not just my commitment—it’s my lifestyle. I could never stand in front of people and teach them something I’m not doing myself. You might run across me in a grocery store…it’s funny. The first thing

people look at after they look into my eyes is… WP: Your grocery basket! SL: That’s right — they look in my basket to see what I really eat! SL: I have to say, my first joy is teaching. If what I loved the most was the cooking, I’d be working in some commercial kitchen making food and selling it as a caterer. I love being with people — just passing on, whatever. WP: What led to you working with cancer patients? SL: My father died of cancer when I was nineteen. He was supposed to be dead in six months and he lived for 17 years. This is what fuels my passion to help people with cancer today — to give them hope. WP: Let’s talk about your book. SL: The Passionate Vegetable has been like a very long labor. I started putting the recipes together 20 years ago. I had kitchen testers working on it in New Jersey; then life happened, and I moved out here. Picked it up again in SLO where I had students willing to test the recipes and give feedback on an evaluation sheet I designed. Maybe it’s because I’m in my

60’s, maybe because I’m more settled, but I’m not putting this down until it’s done. We’re in the late stages — thank you, God. It’s finished in terms of my input. WP: What would you like the reader to know at this point — about your book, or about what and why what you teach? SL: I want them to be inspired to get back to real food. I want them to understand what good health really feels like. I see people in their early twenties who lack the energy I have. They just don’t eat well, and many people don’t know what eating well looks like. When you’re feeling great, you have a sense of well-being, good energy…not only can you handle stress better, you have a more positive outlook on life, romance is better — it’s all better. WP: Who’s your target audience for your book and cooking classes? SL: Anybody. I have students from their early twenties to their late seventies. I would say the average age is late forties. WP: It seems a lot of the really young people have gotten interested in health and cooking, especially those who identify themselves as part of the green movement. SL: Yes, and I get more young men in my cooking classes then I used to have. WP: Most of your teaching is through community classes, like Santa Barbara City College, and local cooking schools, like the Lavender Inn in Ojai. Do you also work at all with the lower grades — elementary schools, for example? SL: Santa Barbara is incredibly pro-active when it comes to changing our school lunch menus, especially in private schools. I have my little wheat grinder and I do this with first and second graders. They like grinding the wheat; the flour comes out and we combine it with a little water and yeast and honey. They get to know what kneading the dough is like and the finished product — I bring a loaf — is for many, their first taste of homemade whole-wheat bread. I send them home with the recipe. WP: One thing I’ve observed is your connection to the farmer’s market community; you take people to the markets to shop and then teach them how to cook the produce, and you seem to know a lot of the (continued on page 10)

(Landry continued from page 9) farmers and growers. Do you do that in other venues? SL: Several times a year I do the Julia Child Program for “Road Scholars.” It used to be called Elder Hostel. It’s a vacation company that offers tours. The Julia Child Program is a food experience in SB — it’s a foodie thing. What I do is give them an hour-and-a-half cooking class. WP: Do you use her recipes? SL: It’s about the spirit of who she was. I don’t cook anything like Julia, but what she was committed to was local and fresh. She didn’t use canned beans, she always used fresh ingredients…it’s all about the fresh. I give them sample foods, and I give them all those tips and tricks I use in my other classes; what a good knife is, how to use a good knife. WP: How are these classes different from your adult ed classes? SL: They are half as long! I meet them later in the afternoon and take them to the farmer’s market, and expose them to something in season and not too expensive. We nibble along the way. Many of these folks are from California; I would say 80% are from California, and everyone knows about farmer’s markets, but here we have a farmer’s markets seven days a week. WP: Anything else you’d like to share about your new book? I know they will be able to find it through your website, but will it be available elsewhere? SL: Probably the local bookstores; also online as an e-book, and maybe in healthfood stores. The first 60 pages are information about nutrition; a new vegetarian will get lots of information and support on how to be a heathy vegetarian or vegan. For those people who still want to have some animal protein in their diets — or Flexitarians, as they’re sometimes called — there’s one chapter that includes a lot fish and seafood, one meat dish and one bison recipe and chicken. My husband calls it “vegetarian on the verge.” In my cooking classes, I’ll ask how many consider themselves vegetarians, and I’ll have two people raise their hands out of 25. People who are not vegetarians want to take these classes. It equates to them as healthy, and as more vegetables. People are being told to abstain from animal

protein at least one day per week. It used to be a meatless meal was lasagna or eggs or spaghetti with marinara sauce. WP: You’re really teaching those who, for health reasons, are now being told to change their diets and especially, to include more fruits and vegetables. SL: We eat a diet in America that’s pro-inflammatory. There are enough studies now to know that most of our diseases are inflammatory-based. So, if

And, less than 5% of children are getting their five fruits and veggies a day. you don’t have it in your body, it’s a little more difficult for disease to take hold. When there’s inflammation, it sets up a whole chain of immune reaction and blood pH reaction that can set the stage for illness later on. And, it’s much more than that, but the meats and the sugar and the processed food and the fried foods — I read recently that less then 10% of Americans get their five fruits and vegetables a day. And, less than 5% of children are getting their five fruits and veggies a day. WP: Can you give our readers a preview of a good vegetarian recipe you’re really crazy about? SL: The one that gets consistently rave reviews is the California Fiesta Quinoa Salad. I used the ingredients that were inspiring me here in California. So it contains cilantro and hot pepper flakes and corn and black beans and tomatoes and olives — it has got all those flavors going on, lots of colors and the quinoa has

a lot of protein in it, so it’s like a meal in itself. WP: What’s next for Suzanne? SL: When I get this book behind me, there are a lot of things I want to do. My passion is children, so my next book with probably be something to do with food and cancer, or cancer and children. I’ll probably do more education with kids; I want to teach, and I’d really love to draw more vegetarians to my classes. WP: What’s a typical teaching schedule? SL: Well, last week I had four cooking classes and worked fulltime at the clinic, and then Elder Hostel. In terms of the book, I’d say the message organic chefs want to give people today is that healthy eating should not only look fantastic, but should taste fantastic. WP: Have you thought about a cooking show? SL: I have a channel on YouTube called The Passionate Vegetable, with just my videos. I had a cable show briefly in SLO. What I’d really love to do is go to a local farmer’s market with a video crew and, talk about a particular farmer’s strawberries, and why these are so good; then the rest of the show is back to the kitchen and make something with them. WP: That sounds wonderful. I will look forward to it. Thanks Suzanne, for sharing your time with me today. And, good luck with the launch of The Passionate Vegetable. The need for fans to track the trucks’ locations online has allowed chefs, like Morgan, to take innovative approaches to interacting on a more personal level and with a higher degree of community involvement than a traditional restaurant. I can’t say I “sat down” with “The Birds,” but instead, Sofia and I were ushered inside for a bird’s-eye view of the truck and food. With Sofia happily munching away on her first vegan dessert and taking photos for this piece, I felt close to what the fans of Amelia Earhart must have experienced as they cheered on her history-making flight. WP: How do the pros of online relationships with customers weigh against (if any) cons? SM: Immediate feedback is awesome. It’s nice to ask a question and get responses so quickly. A con would be that it’s hard to respond to questions in time when I get slammed with other business matters.

WP: What is your take on viewing gourmet food trucks (all, not just yours) as a new political or community movement?

WP: Other than the obvious (vegan) movement, have others influenced or inspired you? SM: Obese children. WP: Are you doing anything pro-active about the food-waste issue in this country? SM: We do a lot to reduce waste, but of course we can always do more. We limit our waste on the truck by sourcing locally and serving a sustainable menu. SM: Food trucks are great for the community because it’s an accessible and adventurous way of eating that’s great for children, couples, coworkers and neighbors. How else can you go to one spot and sample all different types of food at a great price without braving the depressing food court?

WP: Do you feel that your mobile and online presence can make a difference in the lives of your customers (excluding your TV presence)? SM: Being mobile with a social media presence is a great advantage since we’re able to reach many different people and cities in one day. It’s advantageous for us because we are introducing a new food concept with hopes of turning on a lot of people to healthier, more-sustainable diet. WP: Do you think Seabirds would have as strong of an impact if you were a non-mobile restaurant? SM: Probably not. I’m not sure how things would have unfolded if we started as a brick and mortar, but being mobile

WP: When you conceived Seabirds, did you put any thought into how to build community online or was that a surprise? SM: Hmm, I wouldn’t say it was a surprise. I was planning, and hoping, for it but wasn’t sure exactly how it would come together. I just trusted that it would organically. WP: Any recipe books in the future? If so, do you think it will be influenced at all by your online community? SM: An e-cookbook is being created now and hopefully will be available by Christmas (plug: great Christmas gift!) It will include only recipes of dishes we’ve served on the truck. I think inevitably Seabirds’ online community will influence this cookbook and others because they give us such great feedback on our dishes.

Avalon tries to always include two fruits, salad greens, and a fresh herb, along with whatever veggies are in season, at the cost of $25 per week. (A smaller box is available for $15.00.) Avalon offers two pick-up days per week, Monday or Thursday afternoons, as well as a convenient delivery service to five local schools. Customers simply pick up their produce on the designated day when they pick up their children after school. At Avalon, customers pay ahead for a six-week season; at other farms, you might need to pay ahead for several months. And if for some reason you can’t get your box that week, Avalon will let you take a “rain check” – stopping the pick-up that week and extending the subscription – with 24 hours advance notice. Each farm has its own policies. What are the advantages of joining a CSA? Laurie Constable points out that you will not find fresher produce anywhere, unless you grow it yourself. Customers also develop a personal relationship with the farm and the farmer. Another advantage: belonging to a CSA exposes members to new vegetables and fruit. Perhaps you’d like to eat more greens? In the winter, kale, Swiss chard, mustard, and spinach will probably be a part of your share. Most CSA farms, including the Constable’s, provide a newsletter in the week’s box that also includes recipes. The Constables try to grow staples that they know most of their customers will enjoy, based on the feedback they get on a weekly basis. Occasionally, they will include one “esoteric” produce item; recently this was a fruit in the tomatillo and tomato family called a ground cherry. Inside a papery golden husk, which must be peeled back, is a small, sweet golden fruit that looks much like a yellow cherry tomato. Ground cherries have an almost tropical sweetness. Laurie said some of her customer’s kids fought over who got to put them in their lunchboxes! What is it like to be a CSA customer? Is it easy to do? What are the pros and cons? I interviewed author and cooking teacher Cynthia Daddona, a seasoned CSA member (she has belonged to two Santa Barbara area CSAs, as well as a produce delivery service) as well as a farmer’s market shopper. Cynthia has had overwhelmingly positive CSA experiences, with few cons. Here’s what she loves about them: �� You have a once-a-week pick up or delivery, eliminating time-consuming shopping choices. �� vegetables, especially greens. While some CSAs will let members trade in disliked foods for others, with most of them, you get what you get. Some CSAs will let you try out the service for a week or two before you commit. That’s a good way to test if a CSA is right for you. If there are several CSAs in your area, you might want to sample them – because you might enjoy the produce at a particular farm over another’s. Also consider a produce delivery service. For a similar fee, produce is delivered straight to your door, but instead of coming from one farm, the box contains the best of several different farms. Often special items can be added, such as eggs, meat, honey, and in some cases, prepared foods like pie, quiche or jam. Whichever service you choose, adding more farm-fresh produce to your diet is a delicious way to go, and membership in a CSA can truly be a life enhancing experience.
