CENTRE FOR PARKINSON'S DISEASE Center for Neuro-Regenerative Medicine has just completed a clinical trial to demonstrate the efficacy of acupuncture against Parkinson's Disease. Diseases such as Parkinson's, Multiple Sclerosis, or Restless Legs Syndrome (RLS) disrupt our body's basic functions: balance, speech, movement, or ability to swallow, among others. The ‘Centro de Medicina NeuroRegenerativa’ has been researching the applications of acupuncture in the field of neurology for years and has a therapy based on permanent acupuncture, capable of significantly improving the quality of life of people affected by this type of diseases. A therapy - which has already treated more than 5,000 patients that is not based on drugs, as usual, but in traditional Chinese medicine and therefore lacking adverse side effects. It is a technique discovered in Germany by neurologist and scientist Ulrich Werth, founder of the Center for NeuroRegenerative Medicine. The treatment consists of the application of tiny microimplants of titanium in the cartilage of the ear. They are painless, priceless and lifelong treatments and aim to reduce symptoms and alleviate discomfort, regardless of the age of the patient or years of evolution of the disease. These small needles can also be used to treat other diseases and dementias such as Multiple Sclerosis, Restless

Legs Syndrome (RLS), Alzheimer's, Vascular Dementia, Pick's Disease, etc. Regarding these diseases and dementias, the center applies a multidisciplinary approach that includes neuropsychology, physiotherapy and speech therapy throughout the treatment.

SAN VICENTE AND EASTER IN VALENCIA With the city all partied out and out of puff after Fallas, Valencia has never been big on Holy Week. Easter is a quiet affair around these parts. Some opt for a tentative pre-summer trip to the beach in the patchy April weather. Others decide to get away to the mountains for fresh air and herbal teas (or perhaps more likely, lamb chops and jugs of beer). If you do stick around, however, you’ll find there’s still plenty going on even if the pace slows a little. Best of all, you’ll easily get a table in that restaurant you had to queue outside the door for during Fallas. The only place in the city where you’ll find any major Holy Week celebrations is in the Poblados Marítimos down by the beach and the port. Far from the solemn, dignified processions you tend to find in Castile & León and Andalusia, the Valencia take on it all is a bit more

relaxed. Here it’s just another excuse for Valencians to show off and dress up as if they were taking part in one of those 1950s ‘sword and sandals’ epics, starring some bequiffed Hollywood beefcake. So… you get local people interpreting all manner of biblical characters, Roman soldiers, emperors, slaves, courtesans, virgins and saints, all dressed to the nines in their Quo Vadis chic. Pop into a Cabanyal bar during Holy Weekend and you might encounter Jesus Christ sharing a quick caña and some olives with Herod, Delilah and Victor Mature. At this time of year the bakeries all over the city fill up with the traditional monas de Pascua, a sweet cake also typical in Aragon and Catalonia, which is made in the shape of an animal and decorated with coloured hard-boiled eggs. Up until the ‘60s and ‘70s, before everyone had a flat at the beach or could rent a casa rural, the whole of Valencia would flock down to the river or to Malvarrosa to eat the mona along with longaniza de Pascua (a sort of less spicy peperami forerunner), eggs and chocolate. ‘A la vora del riu’ (down by the river),

games would be played, ropes would be skipped, kites would be flown and girls would be kissed. The girl in the old Valencia Easter joke says to her mother: “I lost my espadrilles down by the river”, her mother replying: “As long as it was only your espadrilles!” These days, the boiled eggs are often replaced by chocolate Kinder eggs and the mona is usually taken off to the villa or apartment to be eaten but the tradition lives on. It’s still a time for kite flying and the odd girl still gets kissed, although most of them lost their espadrilles a long time ago. The weekend following Easter is known as the Pascua de San Vicente. Then the first Monday after Easter Monday is San Vicente Ferrer day, which means we all get a second consecutive long weekend. San Vicente Ferrer along with his luckless namesake, San Vicente the martyr. The latter was tortured and executed by the Romans and thrown on a rubbish dump. The two Vicentes are the most iconic of Valencia saints. One is the patron of the region, the other of the city. Born in

C/ del Mar in Valencia in 1350, Vicente Ferrer was never martyred, tortured or even called nasty names and he probably never even went near a rubbish dump. Vicente was the son of a rich lawyer, the godson of a royal prince. A prize networker, he was close friends with the Borgia family and intellectuals like Erasmus and Machiavelli. He was an extremely able politician, a dealer in influence and proclaimer of popes, and had a great knack for always supporting the winning side, jumping ship whenever it suited. With incredible foresight he baptised Rodrigo de Borgia, who was to become the first Borgia pope, dropping one of the heaviest hints in history by declaring: “This boy will one day be pope and he will make me a saint”. Vicente was indeed fast-tracked to sainthood, just 30 years after his death, when Rodrigo ascended to the papacy. Throughout the week, you’ll start to see what look like ornate Punch-andJudy puppet theatres popping up on corners all over the city centre. These are San Vicente’s altars, which provide the scenery for short plays acted out in Valenciano by local children. The plays

depict the many miracles performed by the saint, because by far the coolest thing about San Vicente Ferrer is that he was the most prolific miracle worker of all time. Vicente is credited with 873 miracles, more than any other saint. He is usually depicted with his index finger aloft because, in the same way that Samantha from ‘Bewitched’ could do magic by wriggling her nose, Vicente could zap miracles out just by lifting his finger… like some sort of ecclesiastical superhero.

There are 18 altars in total around the city and the oldest is in C/ del Mar, where they have been putting on the plays since 1561. Other altars can be found in C/ Bolsería, the Central Market, Plaza del Carmen, El Pilar and Ruzafa. One of the miracles you may see dramatised is el ‘salser’ or ‘the cruet set miracle’ where San Vicente cured a neighbour’s fever with just oil and vinegar (there is a commemorative plaque on the door of the house where this is purported to have happened, at C/ del Mar, 37).

Another famous miracle was the ‘mocadoret’, the ‘little handkerchief’ miracle, where San Vicente proclaimed

nearby who needed their help. “Where are these people?” his followers asked and the saint told them to follow his hanky. He threw it up in the air and into an attic window where sure enough they found a poor and needy family…not all that unusual in medieval Europe, to be fair. The square where this is said to have taken place is just off the Plaza de la Reina and is named after the miracle

Seats are put out around the altars, which are usually filled by the parents of the kids taking part. In the old days, money was thrown for the children by the appreciative crowd. The kids had to hand over the cash to the local priest, although there’s more than one story of junior San Vicentes performing a little miracle of their own by stuffing the coins into their shoes and hoping nobody had seen. How do you find Valencia as a place to live and work regarding music?

Well, the cost of living in Valencia is lower than other places, for a start. That helps. Now actually making money out of music seems like a distant illusion. But there’s a necessity in me to express myself through music so I continue. There’s a pretty vibrant musical scene, lots of interesting bands, and bars like Deluxe pop club, Cerati Café, La Fábrica de Hielo and more. Regarding Valencia, it’s a fairly small city, making it very accessible. I like to walk around a lot, the Turia riverbed especially, with no precise

What are the themes of your debut

album ‘Songs for Mediocre Men, Vol. 1.’?

Urban alienation, isolation and trying to keep the faith are my main recurrent

split, I wanted an evocative title for Le Garçon Rêvé’s debut album. When

I MADE THIS! (AGAIN!) A DAY AT ESCUELA DE ARROCES Y PAELLA VALENCIANA

Regular readers of this column will know that, though I love paella Valenciana, if I want to make my own I have to do it in the privacy of my own home with no Valencianos to witness me in the act. Valencia’s seriously believe you have to be Valencian to make a decent paella - It’s impossible, impossible, for a guiri (foreigner) to make a decent paella! Paella Valenciana is sacred, really. I even have a friend whose parents lived in Paris for many years and couldn’t get their Sunday paella to taste right, so when they came to Valencia for family holidays, or when friends from here were visiting them in Paris, they always took Valencia water with them, for the paella - And you cannot play around with a Paella Valenciana, It is always made with chicken and rabbit, and is nearly always eaten at lunchtime…

I now make a very good Arroz Meloso de Mariscos.(soupy rice withe seafood, meloso means honey-ish) I know it’s good because my daughter’s partner, a Valencian, has not only told me it is, but always requests it on visits to our home! And I’m here to tell you that after our second visit to the ‘Escuela de Arroces y Paella Valenciana’ (the school of rice and Paella Valenciana) in the Barrio del Carmen, we are really pretty good at the classic chicken and rabbit paella. No more will I submit to our Valencian guests taking over, as they have in the past, the cooking of what they think will be a second-rate paella!

same time as us, on the stroke of 10 am by the Miguelete- the cathedral bell. There were 21 cyclists - all Dutch. We left them to sort the bikes and entered, where we met 2 couples. An English couple visiting Valencia for his birthday and two more Dutch ladies, sisters, in the city to chill… We had coffee whilst the group outside carried on trying to secure their bikes, but they suddenly moved off and Jaime - our tutor for the day (and joint owner and Commercial relations director) introduced himself and Juan who was to be our translator for the day, and we were off.

We last visited the “escuela” in 2015 when there were just five of us taking the tutorial. D and I, a Japanese couple and an American lady who were coincidentally at a convention at the UPV (the University of Valencia) but had not previously met.

Where to? The Mercado Central (The Central Market) of course, to buy the ingredients for our paellas; we were to cook 3 paellas - D, B and I were going to cook a paella for three, the other couples would be cooking paellas for two.

This time, as we approached, there was a crowd of female cyclists in the narrow street in front of the restaurant, trying to secure their bikes to the bars of the windows of a building opposite. We were meeting B, who arrived at the

more places on a daily basis to learn the fine art of rice. It’s not just paella that you can learn how to make, hence the name Escuela de Arroces y Paella Valenciana (the school of rice and Paella Valenciana) you can learn how to make a vegetarian or a seafood version. The visit to the Mercado Central is most entertaining and informative, and included a potted history of the building, before taking us to various stalls to buy the different green beans for the dish - we were making a summer Paella Valenciana today - beans in the summer and artichokes (alcachofas) in the winter, when the beans get too expensive. Then on to the chicken stall to order the chicken and rabbit we would be using today, we would return for it a little later when it was chopped and ready for the recipe. So, on to the pimienton stall, paprika to you and me. Here we bought smoked paprika as we would be cooking our paella over gas, and the smokiness normally imparted by the traditional orange-wood fire would by added in this way. We visited five of the markets 400 or so stalls to pick up the ingredients,

including the azafran (saffron) where we learned all about this highly prized and hugely expensive aromatic. Then we made our way back to the restaurant to cook our paellas, but first we had to don our chef’s hat and apron - and latex gloves, because we would be cooking to Jaime’s expert instruction. Breaking, not chopping, the beans, podding the broad beans, grating the tomatoes. Whilst the ingredients which we had mixed (an enormous amount) of water reduced into a delicious caldo (stock) we took a break and were invited to almorzar (eat elevenses). A delicious tortilla de patatas (a potato omelette which another of the chefs had been making while we cooked) was served with a large slice of Valencian tomato (they are surely the tastiest tomatoes in the world?) followed by clochinas al vapor (Steamed mussels) and served with a crisp and cool white wine. Then it was back to the kitchen to add the rice and to stay with the dish until it was perfectly cooked, which involved highly amusing steps and was very entertaining. Then it was back to the table carrying our own paellas, which were arranged

in a row and we all sat down to eat. A lovely salad was bought to the table and large glasses of red wine were poured to accompany our meal. Jaime encouraged us to eat it with a spoon directly from the dish - the traditional way, and also to try each group’s dish as "no paella is ever exactly the same." I have to say that I thought ours was the best (but I may be biased!). This is also a restaurant, Arroceria La Valenciana, and it had filled up nicely inside and out on the sunny terrace well worth a visit just to eat, as the food looked great. There’s a presentation of a Diploma to say that we had successfully cooked a paella and that we were qualified to cook one for friends and family. I have purposely left a lot of the detail of our day out of this report, so that if you try it, and I strongly recommend you do, there will be enough surprises to make your day as enjoyable and memorable as ours. It is a really fun day, run by a friendly and very enterprising team of professionals who obviously really love what they are doing, and, judging from the other diners around us, this goes for the restaurant ‘La Valenciana’ too. BAR ALMUDÍN There’s a restaurant behind the Cathedral that was originally established in 1933 and has seen good times and bad over the years. It is now in a good phase, a great phase even, proudly owned and run by Beni (José Manuel Benito), a great chef who has his fingers in quite a few culinary spaces in Valencia, including the ‘Escuela de Arroces y Paella Valenciana.’ Before we go much further, I should tell you that there’s no Wifi at Bar Almudín but there is great vermouth! Oh, and there’s no published phone number, either, so you can’t book ahead, just turn up! We did just that on a sunny Saturday with two good friends. I can vouch for the vermouth, no sooner had we sat down than four very generous glasses of this excellent local vermouth arrived at the table! We ordered a bottle of Les 2 Ces, a UtielRequena wine from Chozas Carrascal

that is a fruity blend of bobal, tempranillo and syrah aged in oak (15€ a bottle), while we perused the menu and took in our surroundings. Bar Almudín is a small bar on two very low-ceilinged floors – the walls are covered in photos of old Valencia and family photos, which Beni told me were of his own family over the years, his parents and grandparents, uncles and aunts. We sat on the lower floor, a couple of steps down from the bar, and decided that we would all have the Menú Degustación (Taster menu. 16€ per person), which consisted of five starters to share, followed by a main course and dessert or coffee. We each started with a huge and lovely salad, topped with boquerones (small cured fish). Then bread and a little pot of grated tomato and oil arrived at the table (pan catalan). We followed this with Valencian clochinas even though there was an ‘r’ in the month…

rising sea temperatures are apparently responsible for extending the season of these smaller, sweeter mussels. They were excellent and slightly piquant, which was a surprise. Next came a great favourite of all of us at the table – escalivada (roasted red peppers, aubergine and garlic in olive oil, in this case topped with quality tuna), really delicious! M’s favourite came next – patatas bravas (Brave potatoes! Fried potatoes smothered in a garlic mayonnaise and a chilli tomato sauce). Albóndigas de abuela were served two to a little cauldron (Grandma’s meatballs in a rich sauce), piping hot and tasty. Just when we thought we were finished with the starters, the manageress Araceli arrived at the table with a little plate of freshly cooked croquetas de bacalao (cod and potato croquettes) which, though delicious, made us all seriously wonder if we were going to manage the main course! After a little wait(enforced by us), our

main course arrived to the table. A large enamel cauldron of Arroz meloso de pollo, pato, hongos y caracoles…a creamy rice (the word meloso means honey-like), with chicken, duck, wild mushrooms and snails. When we had the paella class at ‘Escuela de Arroces y Paella Valenciana’, we were asking the chef Jaime why snails were disappearing from paellas. His answer was that most restaurants were leaving them out for the tourists, so it was interesting that they were included in this delicious rice dish. We managed to almost finish it in spite of all we

had eaten before – well, it was over a couple of hours or so! We had another little break before desserts – Apple tarte tatin arnadi (a Valencian dish of roast sweetened pumpkin with almond flour and lemon zest – it’s traditionally served around Easter), Crema valenciana (a ground rice pudding with cinnamon and brûléed sugar topping). All three were great but a struggle to eat… We finished with a chupito of mistela – a chilled sweet white dessert wine. A perfect end to a great meal.

MULTICOLOURED VEGETABLE SPAGHETTI!

By Helen Westwater In the neighbourhood of Benimaclet, where La Ola Fresca is situated, we are swinging into spring, kicking off in April with a series of monthly organic food markets and talks which explore the production of food through ecological and sustainable methods. It’s Ecomaclet! Check out Facebook Ecomaclet for the programme of events. With the change of the season we can also welcome in a greater choice of vegetables and array of colours. So, here’s a wheat-free recipe that is both healthy and delicious… to bring some of that spring vibrance to your plate. PREPARATION

Preheat the oven to 350F / 180C / gas mark 4. First prepare the spaghetti squash. Cut it down the middle. Scoop out the seeds and place it face down in a baking tray. Pour about 1/4 – 1/2 jug of water into the tray to keep the squash from drying out and place in the oven to cook for about 40 minutes. While the squash is cooking, place the sundried tomatoes in boiling water to hydrate and soften them. Then, to skin the fresh tomatoes, make small cuts in the skin and then soak, also using boiling water. Peel, cut in half to discard the seeds, and roughly chop. Next, finely dice the onion and heat a little olive oil in the pan at a low heat. When it starts to sizzle, gently cook, being careful not to burn. When the onion is just starting to brown, add the roughly chopped tomatoes to the pan. Turn up the heat and cook down, adding a little water when necessary. VEGETABLE SPAGHETTI Lower the heat and cook for about 30 minutes. Meanwhile, prepare the courgettes. You can either use a julienne or vegetable peeler. First, make flat slices and then cut length ways to create spaghetti shapes. Set aside in a colander to drain. Now place the soaked sundried tomatoes in a small food processor, or use a hand-held blender, and blend them with the olive oil and cloves of garlic, followed by the grated parmesan. Finally, add this mix into the fresh tomato mixture. Season to taste with the salt and pepper, stir and set aside. By this time your squash should be ready. Test that it is with a knife and then scoop out and discard the seeds. Scrape out the spaghetti strands. Squeeze the half lemon. Set a little olive oil to heat in a saucepan. Add the spaghetti squash. Take off the heat, then add the courgette spaghetti strands. Add the lemon juice and a little sea salt and toss together so you have a mix of colours. Place directly onto plates and top with your freshly-made tomato sauce. Sprinkle with shavings of parmesan, chopped roasted hazelnuts and basil leaves. La Ola fresca

Ingredients. (serves 4) • Vegetable spaghetti • 1 medium-size spaghetti squash (Angel Hair Pumpkin) • 2 medium-size courgettes • 1/2 lemon Tomato Pesto sauce • 1/2 onion, finely diced • 4 large fresh tomatoes, skinned, or 1 can chopped tomatoes • 1 large handful sun-dried tomatoes, rehydrated with boiling water • 2 cloves garlic • 1 cup virgin olive oil + oil for frying • 75 gm parmesan cheese, finely grated, + shavings for decoration • Ground black pepper and salt • Roasted hazelnuts, chopped • Basil leaves for decoration

TIME TO BUILD FOR NEXT SEASON With just nine games to go, Valencia’s season should hopefully now run a tranquil course. With no trophies to play for and relegation increasingly unlikely after strong performances in recent weeks, it is the ideal time to give some of the talented youth on the fringe of the first team a chance. The Valencia coach Salvador González Marco (affectionately known as Voro) is the ideal man to do this, having worked with the youngsters in the past during his numerous tenures with the reserve team. He has also shown he is not afraid to blood the young starlets and his treatment of Carlos Soler is a prime example of this. Having had isolated starts with Gary Neville and Cesare Prandelli, the young man from the city is settling into his midfield role nicely since being given an extended run in the first team by Voro. His confidence is growing with every game and he did not seem out of place in the recent matches against Real Madrid and Barcelona, where he was

confronted by the likes of World Cup winners Andrés Iniesta and Toni Kroos. The moment of petulance he showed against Eibar that resulted in a penalty for the visitors and a red card for the 20-year-old seems to be a lesson he has quickly learned from and he already has two goals to his name from his handful of first team appearances. Another that is close to first team exposure and worth blooding for a few consecutive games at some point in this campaign is the exciting left back Antonio Latorre Grueso, probably more better known to fans as Toni Lato. Another local product, he is very much in the mould of the likes of José Luis Gayà, Jordi Alba and Juan Bernat. He looks to have a promising future, having already been capped by his country at Under-19 level. Reportedly Real Madrid have expressed an interest already, leading to a contract that now includes a 25 million euros buy-out clause. The third most likely candidate to get an opportunity, if the timing and situation is right, is the strong centre forward Rafa Mir. The Murcia-born striker was born in the same year (1997) as both Lato and Soler and spent some of his teenage years at the world-famous La

Masia Academy in Barcelona before joining Valencia in 2015. At six foot two, he is powerful in the air and surprisingly agile and nimble on the ground for his size, as well as having a great turn of pace. The thought of both Zaza and Mir simultaneously terrorizing the opposition defences with their strength and ferocity is something the Valencia faithful would love to see, at least once before the end of the season. Other Mestalla B players could find themselves supplemented on the bench in May once any chance of relegation is totally extinguished. Do not be surprised to hear the names of Nacho Gil, Fran Villalba, Sito or Javier Jiménez blurting out over the Tannoy system in the near future, as the public announcer reads out the team line-ups. For all the money Peter Lim has spent on trying to create a winning team… the actual answer to success may lie much closer to home. One thing is for sure, the team is much more of a unit now than in 2016 and the signs are there that progress is being made. Less than a year ago Gary Neville’s Valencia were humiliated 7-0 in the first leg of the Copa del Rey at Camp Nou. In the recent game in Barcelona last month, Los Chés were more than a match for the Catalans in

the first half. Mangala put the visitors ahead with a typically aggressive header from a corner early on. Luis Suárez quickly levelled things after the Valencia defence switched off from a throw-in from Neymar. My name is Sirio. I was born in Valencia but I grew up on the island of Ibiza. Since childhood I have been interested in increasing one’s own personal development, and to understand the complexities of people’s motives in life, both internal and external. I soon started to learn about astrology, the tarot, numerology and the interpretation of dreams. I was fortunate enough to have an enlightened father who was a chemist and astrological alchemist. He taught me from a young age to think about symbols and always to seek knowledge and the real truth, to be sceptical of socially accepted beliefs and not to accept them without analysing them thoroughly. He explained to me about theosophy, alchemy, and the works of Gurdjieff, Alice Bailey and H.P. Blavatsky. They all made me think about planetary consciousness, the stars, and plants, entities from other dimensions and about the relation between the different

worlds of consciousness. My thirst for knowledge has meant that I have never stopped trying to learn about many types of alternative therapies and to increase my spiritual knowledge. What is the yoga that you practice and teach and what are its benefits?

I was trained in Kundalini yoga and I love this type of yoga. It’s very spiritual. We chant mantras, we practice ‘Breath of Fire’, we awaken an energy that is both devotional and at the same time vital. Kundalini is a thorough practice that works on the chakras of the yoga students. It awakens the consciousness quite quickly; it empowers the creative being that lies inside all of us. I am also a teacher of Chi Kung and other disciplines that I combine with Kundalini yoga. In this sense, my yoga that I sometimes label ‘CreativoTerapéutico’ includes Chi kung exercises, with dynamic exercises for groups and in pairs, so in this way the teaching is both clear and effective. Benefits? To awaken and balance kundalini energy in all your chakras. Spiritual intelligence, wisdom about the body, peace, vitality, faith in oneself, a silent interior, intuition, a sudden understanding, an increase in the
