ROMAN VALENCIA It was the Romans who started it all. Before them, Valencia was just a swampy island on the Turia River. The early history of the city was always pretty sketchy but the excavation of the Almoina site behind the Plaza de la Virgen basilica in 1985 changed all this…giving us information about the city’s beginnings and painting a clearer picture of Roman Valencia. The city was founded in the year 138 BC as a kind of retirement home for old soldiers! Victorious Roman Consul, Décimo Junio Bruto Galaico (played by multiple Goya-winning actor Luis Tosar in the film “Galaicus”) wanted to reward the veterans from his successful campaigns in Lusitania (part of the Iberian coast). He founded Valentia Edetanorum, ‘the city of the valiant’, and gave each of them a plot of land on an island in the Turia River (or Tyris as it was known to the local Iberians).

To get a picture of how the land lay on the site of the city 2000 years ago, what is now the city centre was surrounded by the river, which followed the course of today’s riverbed park on one side. On the other, a second branch of the Turia forked off at more-or-less the modern site of the Puente de las Artes, flowed through C/ Bolsería and formed a small lake around the Plaza del Mercado Central. After continuing through the Plaza del Ayuntamiento, down C/ Barcas and Pintor Sorolla towards Plaza Tetuán and the Glorieta, it rejoined the main river at what is now the Puente del Real. Unlike its more established neighbours like Sagunto, Llíria or Xàtiva (Játiva), which had been around for centuries, Valencia was a purely Roman construction on what had been previously agricultural land. This fell in line with Roman policy of making a clean break with the Iberians, Greeks and Phoenicians who had founded and controlled the other cities. Valencia, the true Roman city, was given increasing

importance in the region at the expense of its neighbours. But just when things were going so well, death, disaster and destruction were just around the corner. Not for the last time in its history, the city of Valencia backed the losing Republic side in a civil war and suffered the reprisals. In the first century AD, General Quintus Sertorius stood against the new regime in Rome and attempted to set up an independent Roman republic in Hispania. The city of Valencia was amongst those who supported him but, after his assassination, his forces were crushed by Pompey. The revenge of Pompey was brutal and in AD 75, the city of Valencia was destroyed by his forces. The Almoina excavation in the 1980s uncovered weapons used in the battle in which thousands died. Fourteen skeletons were found showing symptoms of horrible torture, some with limbs amputated and others that had been impaled alive. These were prisoners who had been publicly executed in order to terrorise what was

left of the population and to stand as an example to other cities. The city lay abandoned for more than 50 years but with the power of the Caesars restored, Emperor Augustus rebuilt the city in around 20 BC, increasing its size and importance and establishing the first great city of Valencia. A grand forum was built under what is now the basilica. A huge circus, the size of three football pitches and with a capacity of more than 10,000 people, was erected, stretching down from where the Comisiones Obreros building stands today in Plaza de Nápoles y Sicilia before crossing C/ de la Paz all the way to the Plaza del Patriarca. The city prospered and became the most important Roman metropolis in the region. Roman Valencia was a walled city with four gates at the cardinal points and a bridge where the Puente de la Trinidad (the one that goes across to C/ Alboraya) stands today. One gate in the Plaza de la Reina (more or less directly under Finnegans), one in C/ Salvador (remains of which will soon be on display in a basement next to the church), another in C/ Caballeros, and a

fourth in C/ Avellanas (remains of which can be seen at number 14, through a specially built window at street level).

If you are looking for other evidence

Despite its ancient grandeur, not much was known for certain about Roman Valencia until the 1980s when work started on the Almoina dig right in the heart of the city behind the cathedral. This unlocked many of the secrets of Valentia including the destruction by Pompey and its subsequent rebuilding.

You can visit the site of the excavation at the Almoina Archaeological Museum in Plaza Décimo Junio Bruto (from the Plaza de la Virgen, just go under the arch between the cathedral and the basilica). It’s like travelling back in time as you go down the steps under the square. You can walk along the Roman streets towards what was the Roman Forum where you can see remains of its columns, porticoes and capitals. There are parts of a temple and grain store, even remains of the cold water and hot water baths and the changing rooms, which date back to the original republican Valentia and were constructed as far back as 120 BC.

of the Romans around the city, some ancient Roman plaques dating back have been used to decorate the Plaza de la Virgen façade of the Basilica (more or less at floor level). You can also see parts of the circus in the church of San Juan del Hospital and in the basement of the Caro Hotel at C/ Almirante, 14. There are also numerous artefacts and ceramics in the various museums around Valencia, particularly in the Museo de la Ciudad and the Centro Cultural de la Beneficència. The ancient Roman city was of course rebuilt and built over again by the Goths, Visigoths, Muslims, Christians, Borgias, Carlists,

We are musicians and friends from the País Valencià and we live in València. We write, record and play live. We interpret American rock music but sung in Valenciano. What is the ‘Valenciana’ sound?

It’s a sound with clearly Anglo-Saxon influences but with the distinction of being sung in our language. Could you explain the reference to Lomax on your latest album?

Alan Lomax was an American ethnomusicologist who dedicated his time to travelling the world, recording the folk music of each particular land to then take back to the United States. We do the same, but the other way around. We take Anglo-Saxon folkloric music and we transport it to the Mediterranean and make it our own. In both cases the objective is the same, to make local music global. How do you find Valencia as a city to

live, work and play regarding music?

There is no music industry here, there are very few venues designed for concerts and culture in general is a concern only for a minority. (VEGAN FOOD) Linda McCartney would be proud! It’s not often we review a fast food restaurant, but we have good reason to this month. Not a very long time ago when it was almost impossible to find a vegetarian restaurant in Valencia… finding a vegan restaurant really was impossible!!! I remember the first time we took a vegetarian friend to a pretty good quality restaurant and asked for the vegetarian option. The waiter looked at us blankly and shrugged, “A salad, for example?” “Nothing else?” we asked. “Verduras a la plancha (grilled vegetables)?” “Oh, sí!” Our friend settled for these two options – when the salad arrived, it was topped with serrano ham and tuna. Neither was considered actual meat! This was par for the course only 10 years ago. There are certainly more vegetarian restaurants in the city these days. Indeed, many nonvegetarian restaurants now offer worthy

vegetarian options. And now there’s a fast food vegan in town on C/ Quart in the historic centre. It works just like a McDonalds or Burger King but serves healthy vegan burgers. It is the brainchild of a lovely, smiley couple, Marian and Luis, who are committed vegans. They started out about a year and a half ago with a food truck down at the drive-in cinema in Pinedo on the Valencia coast. They took over a late 1950s English caravan that was selling Mexican food in the drive-in, completely refurbished it and began selling and perfecting their vegan wares. If you’ve never been to Pinedo's Drive-in Cinema, you should go, it’s great! But get there early, as they start queueing early for the best spots. Back to ‘The Vurger’, we arrived at around 21.00h on a Friday night to find there was already quite a queue forming to the counter where you order your food – this is fast food – and took our place at the back. The diners didn’t fit any pre-conceived ideas you might have of vegans. There

were young and old, and families with kids waiting to order or sitting in the bright and hip interior. There are attractive graphics on the walls featuring surf boards and palms, exotic plants, and pelican and pineapple ornaments. The graphics have quotes on them – one that caught my eye was “The only way to predict the future is to create it.” One of the things you notice at The Vurger is that the staff are all smiling and seem genuinely happy. Co-owner Marian was manning the till, taking orders and smiling, of course! I ordered an ‘Original’ burger with vegan cheese and bacon (also vegan) and D, an ‘Aloha’ chicken burger. It goes without saying that both are made from soya protein, the Aloha with a crunchy coating, served with salad in a locally baked bun (5.90€ each). Other burger options available were mushroom, vegan fish or a double burger. We also ordered a ‘Star’ salad and two types of chips, traditional, and sweet potato. To drink, we both chose a Turia beer. Children at the next table were really enjoying their hotdogs, which looked indistinguishable from the real

VEGAN & WHEATFREE SPANISH TORTILLA By Helen Westwater

There’s an expression in Spanish, “como agua en mayo”, for something that comes as a happy relief, be it water to soak dry fields, money or for me an exciting new recipe, ‘Vegan tortilla!’ As regulars to La Ola Fresca will know, it has become my favourite spring delight! By way of a little industrial espionage, I discovered the recipe at the lively and always tasty ‘La Paca’ bar in Cabanyal, followed by a bit of investigating online. Sorry to say, chickens, but I prefer these vegan versions… for both the tortilla and the mayonnaise! What’s more, replacing the eggs for uberhealthy chickpea flour (gram / harina de garbanzo) will help cut down cholesterol levels and it contains minerals, fibre and proteins. It also results in a remarkably eggy consistency. As with a normal Spanish tortilla, you can make any variety you like. Possibly you have experienced Spanish people can talk at length as to whether the pungent onion should be included or not? Well, I vote for yes! With this one I have stuck to a basic potato tortilla with a touch of Pimienta de la vera (paprika) for seasoning and sundried tomatoes. It could also be interesting with anise. What more can I say... you’ve got to try it! PREPARATION

First, prepare the potatoes. Peel and slice. Some prefer their potatoes thinlysliced, some thick. What is important is they are all roughly the same size, so they take the same time cooking. I prefer towards the thin size. Add 2 tablespoons of olive oil to a rounded frying pan about 23 cm / 9-inch diameter and place over gentle heat. When hot add the sliced potatoes with

a goodly dose of salt. I think it is all the more tasty if the potatoes are a little caramelized, but do turn them every so often. When they are starting to dry out, add about enough boiling water to cover (about 1 cup) and continue turning. While the potatoes are cooking, prepare the other ingredients. Chop the onions and in a bowl, start to measure the ‘gram’ flour. Add the seasonings and mix well. Then add the measured water. In about 20 minutes, the potatoes should be well cooked and starting to disintegrate a little. Add the chopped onions to cook a little. Remove them from the pan and add to the chickpea mixture. Add the chopped rehydrated sundried tomatoes. Wash the pan and re-oil thoroughly. Return the pan to a gentle heat with a little more oil and, when hot, add the mixture. This will cook much more quickly than a normal tortilla, so you need only between 5 and 10 minutes on either side. You can keep turning it using a plate and reshaping it each time so it is nicely rounded at the sides. For the ‘Veganesa’ simply mix all the ingredients together in a food processor. Add seasoning to taste, plus a little garlic and tomato puree if you prefer a stronger taste. (serves 4) • Extra virgin olive oil • 800 gm / 28 oz potatoes (about 4 medium potatoes) • 1/2 onion • 5 sundried tomatoes, rehydrated with boiling water • Pinch pimienta de la vera (paprika) • 16 tablespoons chickpea flour, aka ‘gram’ • 16 tablespoons water (+ 1 cup hot water for cooking potatoes) • Salt to taste Veganesa (vegan mayonnaise) • 1 cup / 220 gm unrefined sunflower oil • 1/2 cup / 120 gm unsweetened soy milk* • 2 teaspoons apple cider vinegar • Sea salt to taste • * Add crushed garlic / tomato paste if you wish

TWO LA LIGA TEAMS IN VALENCIA NEXT SEASON... CONGRATULATIONS TO LEVANTE UD!! At the first time of asking, Levante UD have regained their La Liga status and will join Valencia CF in the top flight of Spanish football next season. ‘Los Granotas’ have totally dominated their league from the beginning of this year’s campaign. They now look odds on to go up as champions with six match days remaining. They confirmed their place alongside Valencia for 2017-18 with a nervy 1-0 victory over Real Oviedo. Sergio Postigo headed home from a corner to give head coach Juan Ramón López Muñiz and his team the necessary points to trigger wild celebrations at the Ciutat de Valencia stadium. This is the fifth time the club from the north of the city have been promoted to the premier division, having achieved the feat previously in 1963, 2004, 2006 and 2010. With Osasuna and Granada’s fate already sealed in the premier flight,

the third relegation spot now seems destined for Sporting Gijón. Valencia are already assured of remaining in the division, despite a wretched run of recent form that has yielded only one point from a possible twelve. The season on the whole has been mediocre for all concerned with Valencia CF. There have been moments of hope and excitement for the fans… but those, too, have usually ended in frustration. This was highlighted perfectly in the home game with Real Sociedad that was attended by just 30,000 spectators. Most of them had only just settled in their seats when the team from San Sebastián took the lead after just 39 seconds. Diego Alves managed to turn a tame shot from the byline into his own goal, when there was very little danger lurking elsewhere from the Sociedad attack. With just over two thirds of the game gone, Los Chés were chasing a threegoal deficit and the stadium was still to hear any kind of positive chant from the Curva Nord. Then, the referee gave the hosts a lifeline by awarding them a cheap penalty and Nani made no mistake. A flurry of Valencia attacks were rewarded when Zaza rammed the ball home at the back post from close range to make the score 3-2 to Real.

The last 20 minutes saw a constant bombardment on the visitor’s goal but the equaliser never materialised and, once again, the home supporters went home disgruntled. A trip to Santiago Bernabéu is always a daunting task and with Real Madrid scrapping it out with Barcelona for the title, it was always going to be difficult to return to Valencia with points. Ronaldo opened the scoring with a glancing header not unlike the one he scored at Mestalla earlier in the season. Dani Parejo then did what Guilherme Siqueira had done the week before, gave away a penalty when there was very little danger. The Valencia defence, and Diego Alves in particular, stalled the spot kick by arguing with the referee and confronting Ronaldo…the impending penalty taker. Their tactics worked as the Portuguese superstar shot tamely, allowing Alves to add to his already record-breaking total of penalty saves. Valencia then looked to have snatched a point in the 82nd minute when Parejo made amends for his rash challenge by drilling a perfectly placed free kick over the wall and into the top corner of the Real Madrid net. However, Marcelo, who is in the form of his life, gave the hosts victory four

minutes from time. He cut in from the left and curled a right foot shot past the despairing dive of Alves, to keep the pressure firmly on Barcelona in a title fight that looks to be going down to the very last game. With nothing left to play for in the remaining games, the supporters are beginning to discuss in the bars and tabernas in the city who will and who will not be at Mestalla next season. Middlesbrough have already stated they have no interested in making the loan deal for Álvaro Negredo a permanent one and there are frequent rumours in the press that Nani will not be at Mestalla next season, allowing Jorge Mendes once again to negotiate another inflated transfer fee. João Cancelo is another Mendes-based player who is likely to leave, although FC Barcelona seem to have curbed their interest somewhat. Valencia look unlikely to keep Fabián Orellana, who signed on loan in the winter from Celta Vigo. However, the other major acquisition in the January transfer market, Eliaquim Mangala, is someone Los Chés would probably love to keep if a deal can be done with Manchester City and the player wants to stay. On the administration front, the mouthpiece in the city for owner Peter

Lim, Chan Lay Hoon, will step down from her s post as president in July. She will be replaced by fellow Singaporean and former diplomat Anil Murthy, who will move upwards from his current post as an executive director on the Valencia board. This appointment will do little to appease the fractious relationship between Lim and the fans. It also remains to be seen what kind of commitment Lim will give to Voro as manager. He has done a wonderful job, once again, in stabilizing the club when it was in free fall. However, you can’t help but feel that once again the owner will be looking for a marquee name to be at the helm come August and the new season. Finally, once again the city’s football aficionados came out in force to support the historic female derby match between Valencia and Levante played at Mestalla last month. Over 17,000 spectators saw Valencia beat their Levante counterparts 6-0. With Levante’s confirmed promotion, both sets of fans can look forward to two more meaningful derby clashes again next year. VALENCIA WINES Wines from Castellón Province

Every Palm Sunday weekend a country fair takes place in the picturesque village of Benlloch, not far from Castellón Airport. It is a mixture of craft fair, medieval market, food fair as well as rare breed show. However, it is the wines of Castellón’s bodegas which have now become the main draw. Historically, Castellón was always an important part of Valencia’s wineproducing areas with massive exports throughout Europe and a famous sweet red wine, which went to the top tables of various monarchies as well as export to South America. It was called ‘Vino Carlo’. Phylloxera ended Castellón’s wine trade very quickly and when it became time to re-plant, the Civil War got in the way. The Pla de Useres vineyards, for example, were used by the Condor Legion as an airfield. Then, when replanting did happen, the EU had intervened and European legislation only allowed the planting of ‘noble varieties’, not the traditional hybrids grown beforehand. So many farmers abandoned their plots or

grubbed them up, whilst those who could afford it planted cabernet sauvignon, merlot, monastrell, etc. …

The red from merlot, tempranillo and monastrell is equally fruity, bright cherry red with a good structure.

Today, the area is classified as an IGP(Indicación Geográfica Protegida) and around a dozen bodegas meet the required standards. There are several others who choose not to produce wine within the required rules and more striving to get there. Wine is on the way back up! Main areas of production are around Segorbe and Vilafamés / Les Useres in the Alt Palància and Maestrazgo districts. Further north, there are vineyards in Canet lo Roig and Sant Mateu, where olive trees 1,000 years old are not uncommon and the oil produces a second line of commerce.

Mas de Rander is a bodega in Benlloch between the airport and coast. Wholly organic wines are produced, including superb reds from syrah. However, the new white was the wine which attracted us, produced mainly from macabeo. Pale gold, it has fresh citrus notes with some depth and a long finish. Perfect with seafood.

For this fair, we decided to concentrate on new wine releases and wines from bodegas we had not tried before. One of the bodegas we have followed for some years has been that of Vicente Flors who produces blockbuster, longageing reds from tempranillo and monastrell and a sweet red called ‘Dolçet’. His two new wines (‘Flor de Tarongers’) are a fresh, fruity, aromatic and spicy white from gewürztraminer, macabeo and moscatel. A really easy drinking wine, this will set you back about 6€ a bottle and is available from Laboratori de Carme in Valencia.

In nearby Cabanes, Víctor Bellmunt of Ildum Vinarius produces ‘traditional method’ sparkling wines from pinot noir and chardonnay, which have won awards in the Valencian wine competitions. He also produces espumantes called ‘Marenostrum’ and the white from moscatel is pale gold in colour with a floral, perfumed nose and ripe fruit in the mouth. The bubbles and acidity are perfectly balanced to produce a fresh sparkling aperitif. There is also a rosado version from the ‘embolicaire’ variety, a grape local to the area. Bodegas Alcovi from the village of Almedíjar near Segorbe were also showing their new rosado from monastrell. The soils on the edge of the Sierra de Espedán are poor in quality but this wine is a good strawberry colour, with a light fruity nose and very well balanced,

fresh, fruity and with sufficient body to substitute for red wine in summer. They also produce quality red wines from individual vineyards in the same area. A new bodega we had not encountered before is Celler L’estanquers from Canet lo Roig. José Tena is a young winemaker in the family bodega, producing two white wines, a rosado and four reds. We liked the whites from cariñena (carignan) and garnacha, unusual varieties in Valencia, especially the subtle, oak-aged crianza of seven months in second use barrels. This is very elegant and a perfect accompaniment to paella. ‘Desgavell’ is a young red from garnacha tinto, 14%ABV and selling at around 4€ a bottle. It is fresh, floral on the nose and in the mouth with distinct violet notes. Great on its own or with ibéricos. ‘Le Roig’ is a blend of garnacha, tempranillo and syrah with 12-month crianza in second use barrels. This is very round and soft, elegant with understated oak and soft tannin. These wines are not yet available in Valencia. From vineyards in Les Useres, Juan Carlos Pavía produces ‘Roques Negres’

wines, a white macabeo, fresh and floral with green apple fruit and a long, dry finish; a young red ‘Francisco Salvador’ from syrah and monastrell, which is very Mediterranean in style, fresh, fruity but equally good with fish as red meat; and from 2014 a pure syrah with six months in oak, full on with raspberry fruit and a wine which will develop with keeping. Carmelitano is a bodega and distillery in Benicàssim well worth a visit. A former monastery where the fathers collected the herbs for their ‘licors’ they produce a wide range of drinks including a traditional vermut, a ‘119’ London Gin and the orange-based gin ‘Ginself’ for another client. A trip around the bodega museum is followed by an opportunity to taste everything in the cellar below and then buy from the shop! Miguel Vidal produces three reds at Barranc dels Cirers in Vall d’Alba. From varying blends of garnacha, cabernet sauvignon and merlot, Barranc del Cirers 2015 (no oak) Terres Calisses 2013 (all second use oak) and Terres Calisses Selecció 2013 (all new oak) are very impressive, powerful wines which will become much better known.

in the bodega of Gabriel Mayo García in Vilafamés. Both accompanied an

escalivada and a traditional paella at one of our working lunches perfectly!
