LALOLA PREPARES MENUS FOR GROUPS FOR THE CHRISTMAS HOLIDAYS The entire Lolaloa team has a new plan for the Christmas holidays. There is a special New Year’s Dinner, New Year menu, menus for groups and midday menu, which are characterized by fiestas based on flavours from the local region. You can now reserve menus for groups, divided into various options with emblematic dishes like roast beef with salad with tomato pesto, Iberian solomillo, monkfish stew, pumpkin fusion, red curry or cod salad with an orange confit. The New Year’s Eve dinner will be another essential date in the calendar with a truly impressive gastronomic fiesta to end 2017.

Lolola is one of the most respected and well-established restaurants in the historic centre, it has been serving happy customers for 15 years with a great atmosphere and authentic cuisine by the Cathedral tower. This month marks the 15 the anniversary of Lalola, which first opened its doors to the public on November 14th in 2002! It is a rather tranquil refuge with plenty of plants, which converts the terraza into an oasis.

Silvia Gómez. They go for wines with soul and originality like the recent inclusion of ‘Tecot 2015’, for example. Lalola is a restaurant with the official ‘Q’ stamp of quality tourism and is also part of the Restaurant Club for Celiacs, meaning that gluten-free dishes area also served here throughout the year. All menus include ‘healthy heart’ dishes as evaluated by the Universitat de València.

The gastronomy of Lalola is characterized by their seasonal rice dishes (authentic rice dishes!), including some interesting varieties like ‘El Albufera’. The menu is led by soupy rices, traditional paella and an explosive fideuà with mushrooms and duck. It is Mediterranean cuisine, with products from the Mercado Central and with a distinctive touch.

BEZ INTERVIEW EXCLUSIVE INTERVIEW IN VALENCIA WITH THE LEGENDARY BEZ OF HAPPY MONDAYS, BLACK GRAPE & CELEBRITY BIG BROTHER! ‘24/7 Valencia’ interviewed Bez in Valencia in a hotel in the hip barrio of Ruzafa. This was a few hours before the legendary dancer & percussionist and his son played a 4am DJ set at PLAY CLUB, just around corner. For someone who has been described as a cultural icon and one of the most hedonistic figures of the late 20th century, we found Bez to be cool, calm and collected and disarmingly approachable and unassuming.

1. Tell us something about your background…

I’d rather keep it to myself…

I’m originally from Lancashire. My father was a policeman and he believed in the iron fist. I’ve been in full-blown rebellion going back to being a five year old. I was involved in petty crime and in and out of borstals, young offender’s institutions and jail as a teenager and young man. However, my dad was man enough to apologize to me many years later for not understanding who I really was. I was somebody so alien to him, in the way I saw and understood life. We get on fine now and we’re great friends. These days they’d probably give me some mad name like “Attention Deficit Disorder”. Maybe it was vaccine damage. It’s worth looking into what’s really behind compulsory vaccines…

3. How did you get into music?

2. How do you get on with Shaun Ryder of Happy Mondays and Black Grape?

You could argue that the Rolling Stones, the Beatles, Elton John and Jim Morrison were all guilty of selling drug culture to the youth and helping the “programme.” They were all involved.

Yeah, he’s great. He’s very funny and very dry. I think we’ll be mates until the day we die. We went out to Panama to record with a local tribe with the Happy Mondays for the new album that was released this summer. Black Grape are less known but we actually sold a lot more than the Mondays ever did, we even got to number one in the British charts. Michael Hutchence of INXS was a big fan and he befriended us not long before he passed away. I have my own theory about how he died but

As a kid, I loved the acid vibe of 60s psychedelic music and my whole aim with the Happy Mondays was to recreate that vibe, which I lived and breathed…the music and the drugs. I am a product of drug culture. I had such a great time on ecstasy, it changed my life. It was a way of expressing myself. I wouldn’t be here today if it weren’t for the drug culture… Having said that, I gave up drugs 18 months ago. I used to think I was being a rebel by taking drugs as a kid but then I found out that I was just part of the “mind control programme”…interested in distracting people from really changing society for the good.

4. Did those musicians actually know they were part of a plot to control the youth?

In my opinion, the fuckin’ Beatles did know what they were doing regarding “the mind control programme” and were admirers of that right evil cunt, the magician Aleister Crowley. You’ll find they

used a lot of that sort of magic in their songs. (Eerily, the hotel radio is playing the Rolling Stones ‘Sympathy for the Devil’ at this point of the interview). I was brainwashed by drugs. Drugs are a diversion tactic. Even though I don’t regret taking them and I had such a great time on them, I knew that I had to escape the fuckin’ monkey on my back…

5. What helped the change?

I have my own stage at the Glastonbury festival and I was invited to what was for me a life-changing experience with ‘The Vision Quest.’ You go out into the wilderness on your own, with basic survival gear and you fast for four days and four nights. It’s like a cleansing. You are given directions and instructions. The West is death; the South is dealing with all your issues from childhood to present day. The North is responsibility and discipline. So, for example, when you face the North you deal with those specific areas. The first night, I built a little fire during the setting sun and burnt a piece of paper symbolically with ‘free will’ written on it, thinking all it has ever done for me is to get me in trouble! The process partly comes from the Native American tradition as an initiation rite from boy to man. As a boy playing games, I always preferred being an Indian to a cowboy. At the time, I was reading and inspired by the South African writer Deon Meyer. One of his books teaches that we live in a state of awareness and consciousness that is both male and female. The Holy Trinity concept is real as is the Aphrodite state. Another of his books is about the warrior state and I love a good scrap but he shows us that the fight is within us and therefore with yourself.

6. So, Bez, to misquote George Best: Where did it all go right?

Ha-ha! I also gave up drugs for health reasons and made lifestyle changes, I live organically now. I juice every day and I make sure I get exactly the right amount of nutrients for my body each day. I like to know exactly what I’m putting in my body and that includes distilling my own drinking water. Fluoride calcifies your spiritual development. I discovered that my body was being poisoned by the chemicals that they put in our food…

7. Donald Trump just released thousands of secret papers on the JFK as-

sassination today. What is your view of what really happened?

Kennedy was talking about ending the Federal Reserve so I think the bankers were involved on some level and did him in. They rule the world. You don’t get in their way. Divide and Rule. There’s always a conspiracy theory for everything. Regarding Britain, look at the Bank of England. We have been part of the state of Germany since 1960 something. Our Queen clearly has German roots from the Hanoverian royal dynasty and the British police drive around in BMWs and Volkswagens for fuck’s sake! That should give you a massive clue! They say that all world leaders are 33rd degree masons…

8. You founded ‘The Reality Party’ in 2014 and stood as a candidate for Salford for the UK general elections in 2015 and it disbanded in 2016. What was the manifesto?

We were described as an anti-austerity party, interested in renationalization and socially managed hou-

sing. You don’t always need money; you can create many things without a currency. I live the life I preach, which is within a self-contained little community on the Herefordshire/ Welsh borders. I have a small place surrounded by people living in caravans. I share what I make and have. I’m all for communal living. I don’t see it as a revolution to bring the fuckers down… it’s more like evolution. I keep my own bees and brew my own ale and cider and elderflower wine and I grow my own vegetables. I was invited to anti-fracking protests in the Manchester area, which was one of things that reignited my interest in politics. When I wrote to Theresa May that I was withdrawing my assets from the state in protest of a serious injustice I suffered in a court case, she sent me a one sentence reply in a letter: “You can get in trouble for that, Mr Berry.” Iv’e been getting into trouble all my fuckin’ life!

9. Tell us about your memories of Valencia…

is off his head, we can’t understand a word he says, blah-blah! I really got on well with Germaine, we had some interesting chats. John was a really nice bloke as well and really solid away from the public eye. However, he decided to play the pantomime horse for the public and get booed and all that! He was actually a really likeable fella.

11. Do you still follow Manchester Utd?

I remember first going to Valencia with the Happy Mondays and the La’s. It was mad! We played at some club on the beach and went on stage at 7.30am! Another time, we flew thousands of miles from England to Spain and we were due to play in the ‘Plaza del Toros’ bullring in Valencia with The Pixies but the stage collapsed… so we didn’t play! I remember ‘La Ruta de Bacalao’ period in Valencia. It was great, very free. There’s plenty I would like to tell you about them days but I can’t because, for one, we were breaking the law a lot. We were coming to Valencia and scoring here and taking stuff back to Ibiza, which is not a good thing. I spent quite a lot of time in Valencia, you could do whatever you want, it was all kicking off here with the raves on the beaches… Infact, I’m off to Ibiza tomorrow to take part in a silent film. It’s directed by Julian Temple, about the history of the Ibiza. I’ll be playing the Phoenician God of dance ‘Bes’, the island of Ibiza was named after him. The cult of Bes was called ‘Iboism’, which eventually became the ‘Ibiza’ we know. He was a Dionysian-type, a party lover. He was the god of safety and dance. It has been written that: “He would ward off evil spirits by dancing and making noise like a jester.”

Bes came from Egyptian times, he was a demi-god and he was also a protector of the people and I was given the part to play in the film. In the times of Atlantis there was a Toltec priest who was also called Bes…so the tradition is a long one. The fact that it is also my name is just a complete coincidence!

10. What did you learn from being on Celebrity Big Brother 3?

That I actually won it was surprising in itself. Having said that, when I saw the people I was with I thought: Fuckin’ hell! If I don’t win this then there’s something wrong with me!!! (Laughs) Do you know what I mean? You had Brigitte Nielsen, Jackie Stallone, Germaine Greer, Caprice and that racing fella John McCririck and more. I was in with a lot of people who cared about winning. There were some fuckin’ strong characters and they were very competitive. I realized that from ‘Day One.’ The whole household were trying to evict me. What they didn’t realize was how fuckin’ strong and massive the Happy Mondays fan base was. The reason that I actually did win it is that I stopped bullying in the house. I can’t abide bullies. That had won me over to the older women. They had thought before that fuckin’ Bez

Yes, I have had some great times at Old Trafford and still go occasionally and take my sons. I remember keeper Alex Stepney running down the players’ tunnel with a cig in his mouth, with smoke bellowing out of his mouth and putting it out just before he got on the pitch! I remember the 1970s well, when the players all used to have little beer bellies in them days. However, I have become a bit disillusioned with the modern game. You don’t know if it’s all betting. You can’t trust the results anymore, there’s so much money because they are all prolific gamblers you don’t know how much debt they’re in…

12. You are DJing at Play Club in Valencia tonight with your son. What sort of music will you be playing?

Bez’s son: We play stuff like 808 state, New Order, the classic bands from the 90s like the Stone Roses and Mondays and sometimes new stuff like Cabbage. People like to hear what they know. (With a gentle smirk) Bez’s son to Bez : “You don’t really like playing the Mondays much!” Bez: You adapt to the crowd you are with. If I played them stuff from my record collection like Can or Cumbia it would put them off! We do weddings, funerals and bar mitzvahs! Interview by Owl

LA HUERTA DE RAMONET

This new venture started just six months ago but it is already starting to make waves. Chef Ramonet and his partner Tamara have made this compact restaurant bar one of Valencia’s best open secrets! They are a local couple and always warm & welcoming every time that we have popped by… Away from all the noise of the Barrio del Carmen, it is still just a stone’s throw or so from the Torres de Quart! It is based in the mellow & increasingly arty barrio of Botánico, which is literally across the road from the historic centre. ‘La Huerta de Ramonet’ is open to all nationalities. There is definitely a positive energy to this place. It is popular with all sorts of ages and backgrounds regarding the local Spanish clientele as well as discerning foreign visitors looking for quality and originality in an unpretentious atmosphere… No paella! They differentiate themselves from the competition by not doing rice dishes and they do not have a fixed menu…rather a tasty combination of tapas and fish, meat and vegetable dishes, depending on what the chef has brought fresh

from the Mercado Central that day. Ramonet spent 15 years away from his native Valencia, cooking in Berlin for 8 years. He studied cuisine in Vietnam and Cambodia and also cooked in Australia. He has also lived & worked in Chicago, Ibiza, Barcelona and London. He speaks six languages: English, Spanish, Italian, German, Valencian and “reasonable” Portuguese! . As you enter, there is a most distinctive “chandelier-style” lamp decorated with flower shapes that has an emblematic feel and sets the tone for the two floors. The downstairs bar has a warm wood finish with attractive, distressed brickwork wall. On the walls, you will find works of art, including a painting by self-taught Valencian artist Eduardo Bermejo, reminiscent of the great Pablo Picasso. Indeed, there is an occasional Andalusian touch to parts of the menu (more of which later) and there are weekly flamenco jams. We were fortunate to have a rather urbane flamenco guitarist discreetly accompany our tapas during the mellow Friday night that we last dined there. We were gently serenaded with a memorable and understated ver-

sion of Pata Negra’s ‘Yo me quedo en Sevilla’. We ended up having a fascinating chat with him afterwards about what seemed like every subject under the sun! Upstairs there are more tables and there is more space, which makes it perfect for groups and families. The white tablecloths, comfy white chairs and vintage white walls gives it an ‘Ibiza’ vibe and the music soundtrack includes flamenco, blues and jazz… Instead of red wine, it was their expert experience that suggested we savour our tapas with their ‘vermut’ from the region. Tamara suggested we try two different Valencian vermouths, both of which were by ‘Carmeleta’ with its distinctive design. For the man, she suggested a ‘Raiz de naranjo’ and for the woman a ‘Flor de Azahar.’ They have discovered that these are the most favourable flavours for their clientele’s palate, according to gender. The orange vermouth had presence and freshness while the flowery liqueur had a lighter. touch… First up was ‘Crema de Calabacin’(mashed courgette), which was presented in a glass and was quite

warm, smooth and tasty making evident the superior quality of their ingredients. They dared us to try their ‘Steak Tartare’ which was a raw ground beef dish which we were slightly trepidant about… but ended up savouring. Served on black platters, it was a subtle dish, with plenty of textures or ‘matices’ with the olive oil, herbs, salt and Worcestershire sauce combining perfectly. No after effects were felt. One of the most memorable dishes we tried was their ‘Huevo trufado de Ramonet’, which were truffled eggs with potatoes and a light chorizo sausage. You really felt the love put into this dish by Ramonet and served by Tamara. By the way, it is a lot easier to slowly enjoy this dish in person than it is to photograph to try and do it justice! To go with the 1940s jump blues seeping out of the speakers of the bar, our final dish was a ‘Pargo Imperial’ snapper fish. It was tender and delicious and it was probably the dish we took most time over with our vermouths. The lovely long brown strips of sautéed onions really brought out all the flavours that included

fennel, curry, pepper and thyme. Desserts include ‘Crema de Chocolate a La Naranja o Fresa’ and a favourite with the locals: ‘Homer Simpson Doughnut with blue vanilla.’ Tamara tells us that they are especially popular for their exquisitely prepared fish dishes like ‘Pez de Roca con Limón’ which is a rock fish dish typical of the South of Spain.’ They also have vegetable dishes according to the season like pumpkin or courgette. Favourite meat dishes with local customers include ‘Secreto Iberico’ and ‘Ternera de Vaca Vieja’. On Sundays they have ‘Domingos de Cuchara’ with warm and nutritious “spoon dishes” like ‘Lentejas’ (lentils), ‘Potaje’ stew and ‘Sopa Castellano’. Ramonet tells us that they choose their wines from small and independent winemakers, which change according to the season. Their Gins include raspberry and ginger ale flavours. Overall, we had a memorable evening of top quality dining, creatively presented and with welcoming and informed hosts. It’s somewhere sli-

ghtly off the beaten track and worth making a reservation for due to the limited space. A wonderful place to take visitors if you want to take them somewhere really Spanish in its own way, with a natural vibe and quietly dynamic too. They have already developed a loyal fan base in Valencia in recognition of their good work. We’ll be back here before the month is out! 24/7 Valencia team

HEMINGWAY IN VALENCIA

The writer, Nobel and Pulitzer Prize winner and original Guiri loco Ernest Hemingway described Spain as “the last good country left”. His highly romantic and unapologetically hedonistic template for enjoying the country has inspired generations of TEFL teachers and Erasmus students to come over. They immerse themselves in the culture, live the life and get steaming drunk. Hemingway is most closely associated with the cities of Pamplona and Madrid but he also had strong lifelong links with Valencia, visiting here on numerous occasions. He came especially in the month of July for the bull fights taking place during the Feria de San Jaime. It is said he attended the Feria on 15 separate occasions, nearly always staying for months on end. Valencia appears often in his work, the city is referred to, one way or another, in seven of his novels including “For Whom The Bell Tolls” and “Death in the Afternoon”. As a young largely unknown writer, he first came here in 1925, arriving by train straight from the Sanfermines festival in Pamplona. The festival was over up in Navarra but Hemingway wanted to carry on the party… so he followed his favourite bullfighter Cayetano Ordoñez (with whom he would become

great friends) down to Valencia. Arriving at the Estación del Norte, he immediately fell in love with the city. If the station’s colourful ceramic tiles and Modernist architecture impressed him, what really swung it was the huge bullring which was the first thing he saw as he came out onto the street. In a letter which he sent during this visit, to his friend Waldo Pierce, he told him how much he was enjoying Valencia. He also expressed some strange ideas about Valencian eating habits: “In Valencia it’s dammed stupendous at the beach or in the city to eat a melon washed down with a real cold jug of beer”. I must try that some time. The first place he stayed in the city was the Hotel Reina Victoria in C/ Las Barcas, and it was on the balcony of his room in this hotel where he started writing his first novel “The Sun Also Rises”. Years later he would tell how he spent those days in Valencia writing during the morning in bed, and then having a late breakfast, continuing writing until the time for the start of the bullfights. Then in the evening he’d go down to Malvarrosa for a swim. Hemingway finished this first book in Valencia: “I’ve got 60,000 words” he told his father, in a telegram he sent from the grand central Post Office in the Plaza del Ayuntamiento. In the following years he would re-

turn many times, more often than not staying at the Hotel Inglés in front of the Palacio Del Marqués de Dos Aguas in C/Poeta Querol. He took his first wife Hadley there on his second visit in autumn 1925. In 1937, in the middle of the Spanish Civil War, it also became his favourite place to take his then lover, the renowned war correspondent Martha Gelhorn who later became his third wife. Gelhorn had agreed to go to Spain with Hemingway to report on the Civil War. She worked for ‘Collier’s Weekly’ while he wrote for the ‘North American Newspaper Alliance’. During some of the war, Valencia was the capital of the Republic. Hemingway reported on and photographed the bombing raids on the city carried out by the “Nacionales”. When visiting wartime Valencia, he and Martha would head each day to the Foreign Ministry to get passes to the front or to send their articles. This being Hemingway he would usually stop for a few drinks in one of his favourite bars at the time, which was located in the basement of the Ministry. It was the cafeteria ”Alianza de Intelectuales”. This once famous bar was in the building which now houses the Hotel Vincci Palace in C/ de La Paz and there is a plaque on the wall in remembrance of the anti-fascist intellectuals who met there. Despite the air-raids, compared to some other cities Valencia was re-

latively far from the front for most of the war. Being the capital of the Republic it was full of politicians, soldiers, artists, foreign diplomats, intellectuals, spies, refugees and war correspondents coming from all over Europe and the rest of the world. People living fast, not knowing what was around the corner. All of which fermented a very active and interesting nightlife in the city which was a great attraction for the writer. One of the standout bars which were symbolic of this time was the “Café Ideal Room” in C/de La Paz on the corner with C/Comedies. These days it is another shop but it still has its beautiful Modernist windows and on the inside its 1920s stucco decoration. Here Hemingway would discuss art, politics, the war and whatever else with his friend the writer John Dos Passos along with other regulars like Francisco de Ayala, W.H. Auden, Octavio Paz and Antonio Machado. Further up C/Paz was another favourite “intellectuals” haunt the “Café Del Siglo”, which also no longer exists but whose name you can still see on the façade of the building above a shop entrance just before the corner with the Plaza de la Reina. Hemingway loved to go to these bars but possibly his favourite place in Valencia (after the bullring) was “Restaurante Pepica” at Playa

de Las Arenas. It is still there now, a somewhat pricier option amongst the numerous paella restaurants along the beach front. It still conserves some of the atmosphere and style of old and there are a number of photos of the writer sitting at its tables. The restaurant gets a mention in his book “The Dangerous Summer”: “Dinner at Pepica’s was wonderful. It was a big, clean, open-air place and everything was cooked in plain sight. You could pick out what you wanted to have grilled or broiled and the seafood and the Valencian rice dishes were the best on the beach. You could hear the sea breaking on the beach and the lights shone on the wet sand.” When the war ended in 1939 with Franco victorious Hemingway swore he would never return to Spain under a dictatorship. He did, however, return in 1953 older, more taciturn and starting to show the effects of the years of drinking. He was now a celebrity who was referred to by everyone as ‘Don Ernesto’. Too celebrated and too famous to be ignored, he was humored by the regime he had railed against. He still had a few wild days left though. He was even thrown out of the Hotel Metropol on C/Játiva. So the story goes, he decided to take some shooting practice from his hotel window trying to light the cigar which his friend and

fellow bullfight fan, Orson Welles, was holding in his mouth in the street below opposite the bullring. Indeed, ‘24/7 Valencia’ interviewed British writer & long-term Valencia resident Christopher Wright who knew one of Hemingway’s tearaway friends in Valencia: “Reggie Bowler was another character and wonderful raconteur. He knew author Ernest Hemingway, both in Africa and Valencia. In fact, they were both banned from what was the Hotel Metropol infront of the bullring. Continuing the fiesta, which had started at the Pepica restaurant on the beach, they squirted the hotel customers, including the mayor, with gin-filled water pistols.” The last time Hemingway came to Valencia was in 1959. He stayed at the Hotel Royal, which was on the corner of C/las Barcas and C/Pascual y Genis. The famous Alicante photographer Paco Cano, who specialized in bullfights and bullfighters, photographed him there. The photograph is exhibited in Valencia’s Museo Taurino, the big man standing tall with bushy white beard next to the bullfighter Antonio Ordoñez the son of his great friend Cayetano. VOLARE On a brisk Wednesday evening, a couple of the ‘24/7 Valencia’ team breezed down the winding streets of the historic centre to the now well-established ‘Volare’ restaurant. It was nice and warm inside, a respite from the chilly weather outside. Just a stone’s throw from the famous Torres de Serranos, this restaurant is run by kindly and welcoming sisters…the chef Karina and your host Raquel. We’ve dined here on a number of occasions and they really know how to make you feel at home. It’s a family affair and their wise mother can often be spotted in the kitchen too… The sisters are from Uruguay but are of Armenian descent and Raquel lived in Italy and speaks the language. Their culinary concept is quite an original one. The cuisine encapsulates a wide range of Mediterranean influences including Spain, Italy, Greece and even the Lebanon, which many people know has a historic connection with Armenia. The interior is spacious with a particular emphasis on the colour red,

which reflects the warmth of the owners. On the walls, there are vintage-style posters of classic port cities like Alicante and Salerno and countries including Greece, Syria and Morocco. You will also find black and white photos of singers from a different era, which reflects the nostalgic roots of ‘Volare’, which is said to be the most played Italian song in history… With a gentle music soundtrack to accompany the diners dotted around from around the world, we browsed the elegantly presented menu that is conveniently in Spanish & English & Italian. This time around, we asked our hosts to choose some typical tapas dishes to share from their ample selection. We wanted to try out the Valencian ‘Venta del Puerto no 12’ red wine, which Raquel tells us is doing very well at the moment. It was quite intense without being overpowering yet balanced and it lasted us the entire evening. We savoured a ‘Humus de albahaca con tostaditas,’ which was presented most artistically on trendy, rectangu-

lar black platters known as ‘tablas’ .The Hummus on toast had a delightfully fluffy texture and a nice tang of basil, which is an Italian influence. Raquel tells us that us that this hummus is typical of Syria, Lebanon and Israel among others… Next up was a ‘Chicken tempura with tzatziky sauce’, which had a wonderfully refreshing Greek yoghurt with dill, cucumber and garlic. It contrasted well with the fresh & crisp chicken, which is always donein-the-moment and cooked in sesame oil. It had a lovely flour with a touch of cerveza. This tempura style of cooking originated in Portugal and is typical of Japan as well as the Lebanon. Again, the presentation was beautiful… We were next offered ‘Stuffed Aubergines with cream cheese and walnuts’. The Berenjenas were smooth and combined nicely with the crunchy walnuts and queso. “Fue esquisito” was the summing up of our Spanish-speaking dining partner

and experienced home cook. The following dish was squid, attractively presented in quality flour. They were tasty, with a light touch, and nicely salted and just right “en su punto.” As you would expect, a cut above what you will find for ‘calamares’ in a normal tapas bar. We finished with Spanish mussels in white wine, which is an Italian influence. Combined with parsley, it was an understated and subtle dish. For an exotic dessert, the sisters presented us with Chajá (pronounced Cha-ha) from Uruguay. It was a delicious peach merengue sponge with cream and a touch of dulce de leche. ‘Volare’ travels far and wide. The International clientele ranges from twentysomethings to pensioners. This is delicious food to enjoy during the week and at the weekend. You can see and taste that love is put in these dishes. There is that added homemade touch of affection in the cooking making all the difference to the final product as well as the professional presentation. The majority of the vegetables and fish dishes are from the Mercado Central and the lettuce comes from ‘La Huerta’ in the Valencian countryside. 24/7 Valencia team

SWISS CHARD LEAVES FILLED WITH MINTED LEMON RICE

While kale seems to be the vegetable of the moment, let’s not forget Swiss chard, a leafy green vegetable in the same family as beets and spinach. More publicity shy than kale, it hides under a variety of names such as silverbeet, perpetual spinach, spinach beet, crab beet, bright lights, seakale beet, mangold, or even just as spinach in South Africa. Despite what its most common name implies, it originated not in Switzerland but in the Mediterranean region. Its leaves have a delicately bitter taste and are more robust to use raw in salads or blanched as in this recipe. Around this time of year there is an abundant supply of Swiss Chard but, as with many greens, the leftover stalks very often end up in the compost. However, this tasty recipe makes full use of all of the vegetable, which, like more publicity hungry kale also gives you a good dose of all its benefits; Vitamins K, A, and C, as well as of magnesium, potassium, iron, and plenty of dietary fibre. Combined with cooked rice, this is a fresh and healthy, colourful meal for a November day. Method So, keep your energies up for a month of activities ahead this October, starting with the not-to-be-missed, ‘Benimaclet Confusion Festival’, 7th and 8th, Valencia Day on the 9th, plus on 31st La Ola Fresca will be celebrating its’ 7th anniversary with a special Halloween party, aided and abetted by French Bluegrass band, ‘Ohio Sunshine’ First select nice full chard leaves. Cut

the stems off, making a little v-shape into the leaf. Prepare boiling water and blanch the leaves for about 3 minutes and then dip in iced water. Remove and leave to one side. Chop the stems into 2cm lengths and quickly blanch them also in the water. In a large frying pan, gently heat 1 tablespoon of olive oil and when bubbles start to sizzle on wooden spoon add the onion and garlic and cook gently. Next, add the chard stalks. Cook for about 5 minutes. Add the finely chopped tomatoes, followed by the dried mint, salt and pepper. Cook for a further 5 minutes. Add the cooked rice and chopped fresh parsley and continue cooking for a few minutes. Add the lemon juice and finely grated rind and a further tablespoon of olive oil. Mix and adjust seasonings to taste. Heat the oven to 180 degrees centigrade. On a chopping board, take the leaves one by one. Place the rice mix in the middle then fold end to end and side to side to make neat little packages. Place on an oven proof baking dish side by side. Lastly fill the baking dish with the prepared vegetable stock. Bake in the oven for about 30 minutes. Decorate with cut 1/2 lemon and pomegranate seeds, accompanied by a fresh salad with dressing of your choice

TRUE TITLE CONTENDERS Valencia fans struggle to contain their excitement as the team continues to win game after game and currently split the two Spanish giants, Barcelona and Real Madrid, at the top of La Liga. The seven game winning streak, after their 3-0 victory over Leganes, leaves pundits and supporters alike convinced the team can make a serious push as title contenders. At the very least fans feel secure that there will be European football, once again, at the Mestalla for next season. The magnificent seven started with the 5-0 thumping of Malaga at home, a tricky 3-2 success at Real Sociedad in San Sebastian,

and another 3-2 victory against Athletic Bilbao at the beginning of October. Next followed an assault on the two clubs from Seville. In an amazing game at the Benito Villamarín stadium, Valencia found themselves four goals to the good, through efforts from Kondogbia, Guedes, Rodrigo and Santi Mina. Betis were given a lifeline when a sloppy back pass from Parejo allowed Joel Campbell to reduce the deficit in the 78th minute. Five minutes later, the home side were searching for an equaliser after rapid strikes from Sanabria and Cristian Tello. A nervy end to the game ensued until Zaza finished clinically from a breakaway move, with barely three minutes of normal time remaining. Just for good measure, the substitute Andreas added a

sixth in stoppage time to give the visitors a comprehensive victory against one of the better teams in the league. The visit of Sevilla to the Mestalla always generates interest. Both teams seem to have a dislike for each other and there have been some unsavoury match ups in recent years with the Andalusian club. The fixture came at a good time for the home side, as the visitors had suffered a 5-1 drubbing in Moscow at the hands of Spartak in mid-week. They looked to be still suffering from that Champions League ‘hangover’, when Guedes fired Valencia into the lead with a spectacular right foot shot just before the interval. A second for Zaza just after the break killed the game as a contest and a tired and listless Sevilla did little to suggest a comeback was on the cards. To the delight of the

Mestalla, the home side showed little mercy and added two further goals through Santa Mina and Guedes before the final whistle. The Mestalla is once again turning into the fortress it was in the days of Rafa Benitez and the counter-attacking abilities of Zaza, Guedes and Rodrigo will challenge any team when Los Che go on their travels. Deportivo Alavés away was next on the calendar and this was always going to be a tricky fixture. The home team had made a poor start to their league campaign but were finally starting to find some sort of form as Valencia CF went North to visit Mendizorroza Stadium.

Winless in the league since September, they have been slowly dragged to the fringes of the relegation places. A cluster of draws and a good start to the season have helped to give them a little breathing space from the bottom three but another month like October could well see them in a dog fight to keep their La Liga status. THE VALENCIAN COMMITMENT TO MONOVARIETAL ALTERNATIVES VÍ Vid is dedicated to promoting the wines of Valencia and we spend a lot of time tasting the primary local varieties (Bobal, Utiel-Requena: Monastrell, Alicante: Moscatel Alicante and Valencia: Merseguera, Valencia etc). 15% of the vineyards of the Denominations of Origin (DO´s) are planted with the ‘noble varieties’ such as Cabernet Sauvignon, Merlot, Syrah, Chardonnay, Sauvignon Blanc et al. Fortunately, we are often invited to tastings andalso run our own, most notably through the ‘Circulo de Vino de Pedralba’. This is a private tasting group, which started there some 7 years ago and which celebrates its 80th tasting in the village on December 10th 2017. Today, members come from across Valencia and with experience of that many tastings (8 wines per month), VÍ Vid is always looking for wines which are good examples of their varietal characteristics. OCTOBER-THE AULA RANGE FROM COVIÑAS Coviñas is the largest bodega group in Requena, serving the whole of the Utiel-Requena DO. It was founded in 1965 and is currently led by President Jose Miguel Medina who is concurrently President of the DO and Diego Morcillo Fortea, Technical Director. In October, we were privileged to be able to show the following monovarietals from their Aula Range.

Bobal Rosado, Aula de Autor, 2016, Coviñas , DO Utiel-Requena, 12% ABV.

A lighter style of Rosado, this won the Bronze medal in the Proava monovarietals competition. A pale rose, light strawberrycolour, clean, bright, with a very expressive nose. Red fruits, strawberry, raspberry, fresh with lollipop notes but not as ‘in your face’ as some rosados. In the mouth the balance between the fruit and the acidity is perfect, refined with a good long finish. This would be ideal as an aperitif as well as with food. We matched it with tuna and tomato salad, beef empanadas and bollo de Requena.

Syrah 2015 Aula de Autor, Coviñas, DO Utiel-Requena 13.5%ABV.

This is one of the wines chosen by the DO for their promotional events. Syrah is normally an expressive variety and this is no exception! Medium bodied , black cherry colour, with slow, fat, long legs. On the nose there is an explosion of fruit, black cherry and raspberry which is persistent. In the mouth super entrance and pass, soft, mature black fruits, blackberry, blackcurrant and floral notes of violet. The fruit is maintained in a full long finish.

Cabernet Sauvignon 2015 Aula de Autor, Coviñas, DO Utiel-Requena, 13.5% ABV

Garnet in colour, this is typical of Cabernet Sauvignon, full bodied with long legs. On the nose green peppers and forest floor. In the mouth, this is fruity and full with blackberry and notes of pepper. Well balanced with a full body and long finish. A very good example.

Merlot, 2014, Aula de Autor, Coviñas, DO Utiel-Requena, 13.5%ABV

Winner of the Bachus d’Oro award, this is much deeper in colour and fuller bodied with long slow legs. The colour is more of a deep plum. On the nose you cannot miss the American and French oak as it blends with ‘Rowntrees’ wine gums, plums, blackcurrant, morello and

notes of oak, vanilla, and cinnamon and chocolate. In the mouth, rich, very full, very round with additional notes of black pepper and a smooth, sweet fruity finish. An excellent and textbook Merlot. November, the wines of Cent Piques. For November we tasted wines from Cent Piques, Bodegas Vinados. This is a bodega which has a base in Picassent, from which it takes its name. But the wines are very much in the style of their creators Salvador and Guillermo. They buy grapes and make their ecological wines using the spare capacity of other bodegas throughout the Valencian community. In the past, our group has enjoyed Viognier, Bobal, Syrah, Gewurztraminer, Merseguera and Vermuts amonst others.

Cent Piques 2016 Graciano Joven Autor, Bodegas Vinados, 14%ABV

Only one other bodega (Heretats de Taverners) produces a wine from Graciano which is more common in Rioja and Italy. This is textbook in terms of its varietal characteristics. Deep black cherry colour with a vermillion edge. Long slow legs. On the

nose cherry and other red fruits, a little patisserie, (English cherry tart), compote. In the mouth a huge explosion of ripe fruits, very big, round and with a typical touch of acidity. Long finish with over ripe fruit in the aftertaste. (This wine gets better when it has been opened for 24 hours.)

Cent Piques, 2016 Monastrell Joven Autor Bodegas Vinados 14%ABV

This young Monastrell has a deep black cherry colour and long slow legs. On the nose it is initially floral, a very special fruit, figs, plums, damsons. In the mouth it is immediately big, round, with ripe red fruit has a creamy texture with a long finish and full, fruity aftertaste.

Cent Piques, 2016 Graciano Autor (8 months oak) Bodegas Vinados 14%ABV.

The same wine as the joven above but with oak ageing. As a result the fruit is muted a little, but it gains liquorice on the nose, as well as hints of oak. In the mouth the fruit is all cherry, ripe but not so jammy as the young wine. Very big, round and very elegant. This is a wine which will improve with bottle age!

Cent Piques 2016 Monastrell Autor (8

months oak) Bodegas Vinados 14% ABV As with the Graciano, this is the same Monastrell as the joven but with oak ageing. This is a little closed on the nose still and needs more time in bottle but with 24 hours of decanting it is a big, elegant, floral with blackberry and plum notes. A wine to keep! VÍ Vid recommends you look out for these wines and others from the two bodegas as all are good examples of wines from the ‘imported varieties’! VIKTORIJA PILATOVIC 1.Tell us something about your musical background and experiences.. I was born in Klaipeda, Lithuania, I was involved in different musical activities from a very early age. When I was six years old, I started playing classical piano. I was part of a very strict classical music world until the age of 13. My teenage years were filled with rehearsals and songwriting for my rock & pop band. I was playing guitar, singing and writing songs. At the age of 18, I started my first bachelor’s degree in Jazz Performance at the Lithuanian academy of music and theatre in Vilnius, Lithuania. After a couple of years, I did an Erasmus exchange and went to The Netherlands, the Prins Claus Conservatorium. I took a year off from studies in Lithuania and in 2012 finished both bachelor degrees, in Holland and at home. Right after that I was accepted to a Master’s programme at Berklee College of Music, Valencia campus with a full scholarship and from there everything really started. After finishing my Masters, I was offered a job in Quito, Ecuador. I was living there until 2016 and since then I have been living in Valencia, performing and teaching at Berklee and Sedajazz.

Some months are busier than others. These last two months I was lucky to perform every weekend, with different projects, in different countries. I went to Poland for the Sopot Jazz festival, directed by Greg Osby, and to Portugal to perform with OJA Big Band and many places in Spain. On average, I am busy 2 weekends of the month and the rest of the time I teach and practice. 4. Take us through the tracks of your latest album, ‘Stories’ Rising Sun was written right before going to Ecuador, dedicated to someone I was afraid to lose and the lyrics explain how to make the waiting easier. New 2 – I wrote that in Ecuador, it is

about unconditional and prohibited

– that was written in The Netherlands, dedicated to people who are confused about what they want…whilst praying or saying sorry. The recording features a wonderful guitarist from Madrid – Israel Sandoval. Conviction – is about addictions to

friendship, getting attention and is also about melancholy and strong feelings of homesickness. The recording features a very well-known Spanish saxophonist from Valencia, Perico Sambeat. Stories of England – has nothing to do

with England , I wrote the song based on a story my friend told me. The story has impacted me a lot and after coming back home I had to write about it to get it out. Question Me – absolutely my favourite,

also featuring Perico Sambeat on saxophone. Dedicated to people who inspire me to continue my job, which sometimes turns out to be hard. Apart from the creative part there are a lot of things musicians have

to deal with such as: admin work for your band, the frustration of looking for concerts, being far from your family and friends, long-distance travelling, dealing with many different people, simply feeling tired and uninspired but having to continue. So, there are some musicians and people in my life that just make me forget all that and continue creating and performing.

I feel wonderful in Valencia since the first day of my arrival, I love it. I work a lot, it is easy to travel to other cities and countries. It is always warm, fresh fruits and vegetables all year long, prices are great, the city is a perfect size, not too many tourists and people are just lovely! And of course – the beach!!!

7. What are your plans for your music in the coming year?

As I mentioned earlier, I had a concert marathon from August until the last days of October. So now it will be pretty chill. I will use this time to
