CHRISTMAS IN SPAIN

Christmas time in Spain is a time for peace on Earth, goodwill to all men, fondly remembering relatives who’ve passed away and trying as far as possible to avoid all the living ones. At this time of year, the Spanish (as usual) like to have their fully iced and marzipanned cake and eat it. Not content to just hold on fiercely to all their own home grown traditions, they enthusiastically celebrate all the other countries’ traditions as well. Let’s take Valencia’s contribution to Christmas, which is Turron. For years, two Valencian towns had the Christmas sweet market sown up. Alicante made “el blando” a soft, dry almondy sweet moulded into a bar while from Xixona came “el duro” a hard, dry almondy sweet moulded into a bar. The third option in this grand array of Christmas delights

was polvorones, a powdery dry almondy sweet ingeniously moulded into an oval shape. Polvorones are only eaten at one time of the year. The reason for this will become immediately obvious if you ever try one. When your entire Christmas hamper has long been finished off, that box of polvorones (and there always is one) will still remain. The Spanish quickly realised that a bit of variety was needed, but always without surrendering sovereign tradition. The solution was to take what at any other time of year would simply be called a bar of chocolate and rename it as turron just for the Christmas period. Nowadays, chocolate turron easily outnumbers the traditional stuff on any supermarket shelf and comes in any number of “traditional” Spanish flavours such as kiwi fruit, Irish coffee and rum

and raisin. As if that wasn’t enough, the Spanish have also annexed Yule logs, Italian panetone, and even After Eights and embraced them as their own. Strangely enough, traditional Spanish sweets haven’t gone the other way and there isn’t a great export market for polvorones. As far as decorations go, in most Spanish households the dutifully sedate Belen or nativity scene of tradition now has to fight for space with the bauble strewn Christmas tree, the Mexican poinsettia plant, the holly branches and a plastic Father Christmas climbing up the balcony . In some cases, traditions have merged, producing strange, mutant Nativity scenes complete with tinsel, fairy lights and snow amongst the lowing cattle and the watching shepherds (strange when you consider the average temperature at

this time of year in Palestine is 26º). On the other hand the caganers, the figure of a shitting man which is traditional (honestly!) in Spanish Nativities especially in Catalonia, is now quite often found squatting behind the Christmas tree. Traditionally, in Spain, presents are brought by the three kings on the sixth of January and you’d think that would be enough. Not for the festive-frenzied Spanish. In the last decade or so Father Christmas has appeared on the scene in his white-beaded red suited American version but for some reason with the French name, Papa Noel. Far from having to fight it out with the kings for his status in the hearts of Spanish children he’s been neatly incorporated into the whole tradition. Just like George Martin was the “fifth Beatle”, Father Christmas is a bit like the “fourth king”; it’s just that he comes a little bit earlier and has reindeer instead of camels. The big winners, of course, are children who apart from getting loads of toys at Epiphany also get showered with goodies on Christmas day. It surely won’t be long before the kids get the triple whammy and St Nicholas, who brings prezzies for children in the Low Countries on the sixth of De-

cember, is brought in. I mean, why not? It’s already a Puente and, according to Dutch tradition, he actually comes over from Spain. The three kings themselves, Baltazar, Melchior and Gaspar (as they were named about a thousand years after they were supposed to have existed) arrive in a great cavalcade throwing sweets to the kids on the night of the 5th January. The one in Valencia starts at the port and finishes up at the Plaza del Ayuntamiento where the Kings are raised up on a fireman’s ladder and enter through the balcony. The night and the sixth of January itself are celebrated with the eating of Roscón de Reyes a rounded sweet cake with a paper crown on top and a bean and a present hidden inside. The tradition, you guessed it, doesn’t originate in Spain but in France where it has now gone out of use while here it still continues. The Spanish are second only to the British when it comes to a passion for eating sweet cakes and drinking vast quantities of alcohol while wearing silly hats.

The tradition is to eat one grape for each chime of the clock at the Puerta del Sol in Madrid while drinking a glass of cava with a gold ring inside. The hospital admission rates for people choking on grape pips and expensive jewellery at 00.15h on New Year’s morning have never been published. The buying of lottery tickets is an obligation. No Spanish person can say no when offered a ticket (or will take no for an answer when trying to sell you one) just to avoid being that sad person who always appears on TV reported as being the only one in the block who didn’t buy a share in the winning ticket. They are usually filmed fiercely claiming, “I’m very happy for my neighbours but the important thing is to be healthy” before going off for a good cry. We’re originally from France and we have been in Spain since 2017 and it has been a great success in Valencia since we began it… My name is Benjamin and i gained a Masters in International Business in Paris last year. Thomas has been a friend of mine for many years. He told me about a revolutionary idea that he found via the internet: Grilled Ice Cream! It’s an idea that originated in Thailand.

3. What products are for sale?

I liked the concept and I started do some research. It was the first time that I wasn’t held down by other commitments and I could give my all to what has already turned into a really fruitful project. We’ve lived in many different countries like Venezuela, Portugal, the Netherlands and the USA before arriving in Spain. When we arrived in Valencia we decided to open a coffeeshop where we would be serving delicious coffees, cakes and all sorts of wonderful teas. To our surprise we noticed that even though Spain might be considered a “coffee country” we were selling in Ruzafa and specifically in Ruzafa, more tea than coffee. 8 years later, in 2016, we opened D TES MAHATZEM boutique as a natural development from the original Coffeeshop idea.

BAJAMAREA Reflecting the international vibe of the historic centre, ‘Bajamarea’ is a newish and authentic Italian ‘Taberna & Pizzeria’, run by the charismatic, warm and welcoming Carlo Solazzo. This chef owner has a wealth of experience when it comes to Italian cuisine… He is from the historic port city of Brindisi in the Apulia region of Italy and this is reflected in the specialities of the house. We popped by on a mellow Saturday afternoon and savoured as a starter a seafood ‘Orecchiete’ with its ‘little ear’ pasta shapes complementing the lovingly cooked mussels, prawns, octopus and squid, which was a joy to our tastebuds and very pleasant to look at. Impressive… Other specialities include ‘Carpaccio de Dorada (Sea Bream) con lima y bayas de pimiento rosa’, ‘Cola de rape (Monkfish) a la mediterránea’ and ‘La Parmigiana de Berenjenas (Eggplant) ’ Blue, blue, blue. The cosy interior has a most distinctive marine blue fisherman’s cove vibe, with nets on the wall, a bar shaped like a boat, vintage photos from Italy and beautiful ceramic tiles as well as blue napkins and tablecloths… There are well over 20 homemade pizzas to choose from, made the traditional oven-cooked way and in plain view of the customers. These include Vegetarian, Meat (Diavola),

Fish (Napoli) and Cheese (4 Stagioni) choices. We loved our unpretentious (typical of the region) ‘Pizza Giulio’. It was a simple presentation and a tasty combination of Tomato, Mozarella & gorgonzola cheeses and Prosciutto Ham. It was large, filling and memorable. We finished proceedings with a lovely homemade dessert ‘Panna Cotta con Chocolate’ which was a soothing way to end our lunch. To accompany our dinner, we had a couple of refreshing ‘Tyris’ local artisanal beers. Carlo reminds us that they do have a pleasant range of Italian and Spanish wines that they can recommend to best accompany their very wide range of dishes. L’APLEC On a brisk Wednesday evening, a When it comes to Valencian cuisine…this is the real deal. ‘Aplec’ is the local term for ‘cultural meeting’ and this restaurant is quite easy to find as it is only a stone’s throw from the Torres de Serranos in the historic centre. No frozen tourist trap stuff here! This is local product that is fresh from ‘la huerta’, meaning what you are tasting is straight from the country orchard of the Valencia region… Chef owner Sonia is a knowledgeable & creative soul who cares deeply about the food that customers can enjoy here. There is no two ways about it…Sonia is an artista of the culinary kind. This restaurant is one of the Barrio del Carmen’s true success stories and for all the right reasons. It is the restaurant where you will find locals of all ages and backgrounds, week in and week out and it is open to all nationalities. It is LGBT friendly too. A couple of the ‘24/7 Valencia’ team recently had a midweek lunch here. With a long bar and open kitchen, it

has a very spacious and bright interior that is down-to-earth and so great for large groups and there are tables for couples too. There is a highly popular terraza outside that you will often find busy, which is a sign of just how loyal their customers are. Many keep returning, which is always a good sign… We asked our friendly and helpful waitress to choose some typical dishes. We started off with an ‘Ensalada Ventresca’ with its large & distinctive ‘Tomate Valenciano’ from the countryside combining well with the freshest tuna you will find in the city. It was enhanced by a delicious organic olive oil topping… making for a sweetly memorable starter with a great final finish. Indeed, the presentation of all the dishes at ‘L’Aplec’ is gently artistic without being showy… which complements the true quality of its lovingly prepared ingredients. Our patatas bravas were very well-cooked and partly covered in a secret salsa that we were warned, beforehand, would have a special effect! After a few mi-

nutes of savouring the delightfully crisp potatoes, the sauce literally kicked in and it was like getting a euphoric alcohol-induced shot of your favourite short and suddenly you are in a more energetic zone. A real subidón of a dish! Having lived & worked in the port city of Genoa in the mid-nineties before moving to Valencia, this writer has tried a good few pistos but nothing compared to the delicious Valencian pisto known as the ‘Titaina’ that we tried here. Sonia explained that the ingredients are slowly cooked for 1 and ½ hours, to really bring out all the flavours of the tomato and other ingredients. It was literally perfection and could not be bettered. Highly impressive and one of the highlights of this lunch… The Octopus dish as well as the fried artichokes were beautifully presented on rectangular dishes. Their subtle textures combined pleasantly with the bottle of lightly intense ‘Albariño’ white wine (Rias Baixas) that lasted us the whole lunch. This wine is said to be a palate-cleanser, which

makes it perfect for seafood tapas and savouring the wide variety of tapas on offer here… To finish off, we were proudly presented by the owner with one of their star dishes, which was a superb squid-in-ink with parsley known as ‘Sepia Playa’, which was truly exquisite. Sonia is originally from the Castellon Playa region of the Valencian community so this plato is from her corner of the world…. This is authentic and creative Valencian cuisine in the heart of the old town. Recommended if you are looking for something truly representative of the region. VEGAN SHEPHERD’S PIE AND ROASTED BEETROOT SALAD

With our December recipe, Shepherds can watch their flocks with no fear, with this vegan interpretation of a British winter classic that is Shepherd’s Pie. Easy to make and protein rich with hearty lentils, it’s a dish fit to lay before any King.

Method

First slice the aubergines lengthways and with a little oil grill on a heated non-stick saucepan. When cooked on both sides, chop and leave to one side. Prepare all the vegetables, dicing the French onion and carrots finely.

When your lentil mix is ready, place in a large pie dish and top with the mashed potato. Dribble a little olive oil over the top. Place in the oven along with the tray of sliced beetroot. While they are cooking, prepare the salad. Mix the dressing ingredients and wash the salad leaves. Place in a large bowl with the nuts. Remove the beetroot from the oven after about 10 minutes. Mix the dressing over the beetroot and then mix into the salad leaves.

Peel the potatoes and sweet potatoes and cut into quarters. Bring a large pan of salted water to boil and when boiling add the prepared potatoes. Boil until soft, then drain, mash with about 1 tablespoon of olive oil, salt and pepper. Set to one side.

Check the pie and when it is nicely bubbling underneath and golden brown on top remove from the oven. Serve while hot with the salad and accompanied by a little Dijon mustard.

Heat 1 tablespoon of olive oil in a heavy-based saucepan. When it sizzles when touched with a wooden spoon, add the finely chopped onion and carrots. Cook gently until soft. Add the thyme, followed by the hot vegetable stock and the laurel leaf. Boil until it has reduced substantially. Add the lentils, parsley, aubergine and season with the other spices and seasonings. Leave to cook for about 10 minutes. By this time, the liquid should have reduced so that the lentils are juicy but not dry.

STILL ON TRACK Valencia look to be entering into the La Liga winter break still on track and in a powerful position despite losing their unbeaten record, in early December, at Getafe. The start to this league campaign is the best for the club since the 1943/44 team took 32 points from their opening 14 games. Their ten wins, two draws and two losses equates to just one point more than the current squad at the same point in the season. The little hiccup at the Coliseum Alonso Perez came after two backto-back performances against the two Catalan giants, Espanyol and Barcelona. At the El Prat Stadium, Valencia faced several familiar faces. Both Javi Fuego and Pablo Patti started in the Espanyol initial eleven and their coach Quique Sanchez Flores was in charge at the Mestalla from 20052007. The visitors started sluggishly and were lucky to go into the dressing room at half time level, after both Gerard and Sergio Garcia had hit the Valencia posts with fine strikes in the first period of play.

The second half saw Valencia take a greater grip on the game and a moment of quality from Kondogbia gave Los Che the lead. The French international reacted quicker than Piatti to a defensive clearance from Espanyol. He then created enough space for himself to curl the ball just inside the right hand post of Pau Lopez. Valencia secured the three points late in the game when Santi Mina latched onto a defensive error by Victor Sanchez and then finished clinically, when one on one with the keeper. And then ... Barcelona came to town. With the Mestalla sold out for the first time this season, the anticipation was high. Marcelino was banished to the stands after his sending off at Espanyol. For Barcelona, Pique was suspended after another yellow card at Leganes had pushed him past the sanctions mark. Before the game the whole stadium paid tribute to the club’s ex-president Jaume Orti (who had passed away during the week) with a minutes’ applause. Orti was at the helm during the successful Rafa Benitez

years and was arguably the most popular of all the past Valencia kingpins. His trademark celebration was to don an orange wig with the club’s triumphs. During his three year tenure, Valencia won two league titles, the UEFA Cup and the European Super Cup. The first half saw Barcelona in complete control and lamenting the fact that a perfectly good goal was not given on the half hour mark. A mediocre shot from Messi was spilled inexplicably by Neto, and to all inside the stadium except the referee and linesman, looked to have fallen well over the goal line. However, Ignacio Iglesias Villanueva saw it differently and waved away the mounting protests of a mass of ‘Blaugrana’ shirts. This led to controversy after the game, the upshot of which is that the video review system will be used next season in La Liga for such instances. The second half was a different affair, and Valencia came to the party. On the hour mark Rodrigo put the hosts in front. The move was textbook Valencia this season. Guedes attacking the defen-

der, giving Gaya space for an overlap on the left hand side. A well-timed pass from the Portuguese youngster put the Valencia left back in behind the defence to pull the ball back to the incoming Valencia forwards… in this case, Rodrigo. The Mestalla erupted as the Spanish international outpaced Vermaelen and poked the ball home. The celebration was equally delightful. The striker made a beeline for the 14 year old ball boy David Vassilev who was feverously plucking out an orange wig from a nearby plastic bag. The Valencia Infantil A player handed it over to the striker and the iconic picture that was on the back pages of the world’s newspapers was created. Rodrigo later explained he had bought the wig earlier in the week after meeting and speaking with Orti’s family and had asked the ball boy to give him the wig if he scored. ‘Bonico’ (Orti’s nickname - Mr Nice Guy) would have enjoyed that. Alas, Valencia were not able to hang on to the victory as former favourite Jordi Alba denied the home side three points. Latching on to a sublime pass over the top of the defence by Messi, the speedy little left back produced a spectacular volley to give the Catalans a share of the spoils. The remaining seven minutes saw both sides have chances and with the last kick of the game Zaza had

a chance to win the game for the hosts. Casi casi…. December started with the tough encounter at Getafe and the loss of Valencia's unbeaten record. To be fair, Valencia did not play well and Getafe got their tactics spot on. The pitch was not complimentary to the visitors playing style and the hostile approach of the hosts was evident from the kick off. As early as the 25th minute the most lenient referee in La Liga David Medie Jimenez had punished Arambarri with a second yellow card. With nearly three quarters of the game remaining the odds were heavily against a Getafe victory. However, the side from the Madrid outskirts got lucky when a deflected shot wrong footed Neto, to give them an unexpected lead on 66 minutes. Valencia searched in vain for an equaliser but found Guaita in fine form against his old club. The travelling fans left the capital disappointed and frustrated knowing it was a dropped chance on closing the gap on the league leaders Barca, and establishing breathing space between the chasing pack. Looking to get back to winning ways, Valencia then edged the game with Celta by the odd goal in three with a determined and forceful performance. Leading from a Zaza glancing front post header from a Parejo corner going into the break, they were im-

mediately pinned back at the start of the second half when they fell foul to the poaching instincts of Celta’s in form striker, Aspas. The Spanish international was the first to react to a deflected shot and slotted home from close range after the home defence had failed to clear on several occasions. With the crowd getting increasingly nervous and frustrated, the referee gave the home side a silver lining by awarding a penalty late in the game that many of his peers would not. Parejo saw his poor effort squirm under the body of the Celta keeper and creep over the line to the huge relief of the home fans. With Eibar away and Villarreal at home left to play before the winter break, the signs are good that the team will occupy an automatic Champions League spot at the enforced interval. Levante UD continue to flirt with danger in the bottom half the table. A fine win against relegation strugglers in Las Palmas was the highlight of the month for their fans but the way their capitulated at home to Atlético Madrid would have been a major worry. However, Levante did manage to join Valencia in the last 16 of the Copa Del Rey. Levante's reward for disposing of Girona is a match up with Espanyol. Valencia also have a kind draw, being paired with Las Palmas. Both are drawn away ini-

tially with the exact dates yet to be determined. Finally, there was some good news for Levante fans as they have the current bragging rights in the Ladies derby, having come from behind to beat Valencia ladies 3-2 in early December. John Howden

MERCADO CENTRAL: SOUL OF THE CITY

If you are looking for the heart and soul of the city of Valencia you could do worse than stroll down the Calle de Maria Cristina and on to the Plaza del Mercat. Some cities are identified with their cathedrals or great churches. In Valencia’s case it is two great secular temples to commerce that represent the essence of what the city is. On one side, La Lonja de Seda, a masterpiece of late Gothic architecture reminding us of Valencia’s illustrious medieval past. On the other side, the Mercado Central in all its noisy Modernist glory. There has been a market on this site since Roman times and beyond. Farmers, fisherman and goat and cattle herders would gather here between two streams, which wound around the ancient city. In Moorish Valencia, traders would set up stalls at this spot next to the Boatella gate in the Muslim city walls. The area was officially incorporated within the walls of the medieval city. Over

the centuries, it became the recognised Market Square where bullfights were held, criminals were executed and witches were burned along with any number of other medieval “entertainments”. There was never a permanent market structure and traders would come in from the countryside and set up temporary tents and awnings to offer their produce to the populace, filling the streets with the smells, sounds and atmosphere of an eastern bazaar as described in all its excitement and colour by Vicente Blasco Ibañez in his novel “Arroz y Tartana”. The modern day Central market was opened by King Alfonso XIII in January 1928. It had cost an enormous 19 million pesetas to build. It was the key piece of a hugely ambitious programme of Modernist construction in late nineteenth and early Twentieth Century Valencia.

This included the Ensanche and the Gran Via, the Post office building, the Estacion del Norte train station and the Mercado de Colon. All of this was pushed and financed by the new middle classes flush with enormous profits from the export of rice and oranges. These people saw themselves as heirs to the great merchants of Valencia’s fifteenth century golden age and their construction would have to be every bit as magnificent as that period’s shrine to commerce, La Lonja, on the other side of the road. After an official tender, two prestigious Catalan architects Alexandre Soler and Francesc Guardia were chosen to lead the project with a remit to both instil the modernist ideal and mirror some of the details of La Lonja, incorporating iconic symbols of ancient and modern Valencia. The build wasn’t without its practical problems but the architects

some of the store holders. You’ll hear plenty of Valencian spoken. Valencia is proud of its market, Valencians will always tell you it’s the best and most authentic place to buy food in the city and how it’s the biggest covered food market in Europe…although often when pushed many of them seem to admit to only getting round to actually going there once or twice a year!

followed the more artistic design instructions almost to the letter, the results of which are still there for all to see today. The walls are decorated with traditional ceramic tiles along with typically Modernist “trencadis” mosaics of broken tile shards. There are great Modernist iron columns and stained glass windows showing the colours of the Valencian flag and arms of the city. The whole place is bursting with motifs of oranges and lemons and decorative stone, glass and iron work. The building sprawls out over 8,000 square metres forming a strange fourteen-sided polygon under a beautifully decorated domed roof, which at its highest point is thirty metres up above the market floor. To one side is the fish market, all metal and white stone slabs, and there are two slightly odd Austrian-style gothic houses built on at each side, which used to house the local Government offices. The present day market is the pulse and lifeblood of the surrounding area and spills out through each of its doors into the tapas bars and temporary stalls on the Plaza del Mercado and out to the

multi-coloured houses on the Calle Palafox. Inside, you’ll find mayhem of stallholders’ calls and the general cacophony of a lively bustling market with alleyways of food stalls of every type. Many great city markets have long moved away from their original purpose and ended up like museums to their own former glory, becoming a place of souvenir gift shops and designer boutiques and restaurants or merely an outlet for expensive gourmet food. The Central Market has always had its share of gourmet stalls, and it is certainly not as cheap and cheerful as you might want, but it is still essentially doing what it has been doing since time immemorial; serving fruit and veg and the fruits of the Valencian coast to the people of the city. It is what you would expect from a market of its ilk, a loud, brash, and in-your-face, friendly sort of place with largely local produce from small local businesses. You may find groups and coach-parties of Northern European or Japanese tourists (and some stalls even have signs in Japanese) but the majority of its customers live locally and are doing their daily or weekly shop just as they have done all their lives, often on first name terms with

Its fish market is particularly worth a visit. There is a huge variety of sea and river creatures of all shapes and sizes laid out on banks of crushed ice like some sort of dead aquarium, which also has its fish tanks of live eels and llisa from the Albufera Lake. There are specialist stalls for herbs, spices, tea, cheeses, beers, bread, wild mushrooms, dates, the list goes on. Most of all, of course, there are stalls selling the typical products of the Valencian huerta but you can also find stalls selling typical British or South American food, and in amongst all the artichokes, onions, oranges and green beans there are also tamarinds and tree tomatoes. Housed in its identifiably Valencian Modernist palace, with its regional decoration, the Mercado Central is a typically Valencian. It’s a busy, bustling place, which brings together the produce of three of the pillars of the city’s economy and culture; the Huerta, the sea and the Albufera Lake under one enormous roof. The Central Market encapsulates the soul of the city. It is testimony to the fact that the age old practice of buying and selling fresh market produce is still very much part of day-to-day modern Valencian life. If you want something special or a bit different or exotic along with your spuds, tomatoes, lettuce and pork chops, then this is the place to come. HOLIDAY SEASON VI Vid had met with Antonio Piqueras a couple of times in 2016 when we attended ‘Jornadas’ organised by DO Utiel-Requena. In conversation over lunch, he had told us he was creating a new family bodega in the village of Campo Arcis. We were later introduced to his wife Amparo Garcia by Emilio Expósito of Dominio de la Vega and Vice-President of the Ruta del Vino. ‘You must visit them’ said Emilio, ‘they are a very important part of the heritage of the area’. The family hold a number of parcels of vines, typical of ‘cosecheros’ in the DO and were selling their grapes to the local San Isidro coop, part of Coviñas. But, they have identified three special parcels and created a new bodega, making and selling artisan wines from three different varieties Bobal, Chardonnay and Syrah. Their son Juan Antonio is a qualified wine-maker, trained in the local Requena wine school. He has spent 8 years as ‘tecnico’ at the prestigious Manuel Manzaneque bodega before returning to the family bodega.

We set off straight away to visit the three vineyards, first the Chardonnay, then the Bobal and finally the Syrah. The Chardonnay vines are 9 years old and planted in trellis in single guyot pruning, (that is one cordon and one spur) with occasional double guyot. The vines are not irrigated. The family is awaiting formal permission to plant a new plot nearby with Macabeo, with one eye on Cava production, but with irrigation as this part of the DO is susceptible to drought. The soils were very arid and sandy. Next we drove back towards the village and visited the Bobal parcel, La Serratilla, the most picturesque of the parcels. Here the vines are also without irrigation and were planted in 1979. The vines are typically traditional in goblet planting. The soil is very stony with the limestone bedrock more evident. Finally we drove towards Los Duques and the nearby Las Pilillas archeological site, home to Spain’s 2700 year old ‘Iberic period’ bodega. Here the Syrah grows on a generally

sandy, well-drained soil, also without irrigation and the vines are 20 years old. Nearby we passed some of the oldest vineyards in the DO with Bobal planted well over 100 years ago. Roman remains are regularly found in this district, testament to the continuous use of the land as vineyards. Back in the family home we were shown the garage which forms the bodega. Yes, it is a garage. Amparo’s father’s vintage cars were expelled and replaced with a reception table for the grapes, hopper, de-stalker, a home-made press and four stainless steel deposits, three of 1000 liters and one of just 300 liters. Everything is done by hand, bottling, corking and labeling included! Fast forward to Monday 4 December this year and we paid our second visit to meet with Juan Antonio and to taste the new wines. It would be an understatement to say that Juan is driven, totally passionate about his wines and very keen to learn what each variety can do. The family have recuperated some further plots since we last vi-

sited. They have found that there are other, lost varieties such as Rosetti, Royale and Moscatel planted amongst some of the older vines. So Juan has set about experimenting with some of these grapes and making ‘Natural Wines’. This includes an ‘orange wine’ where white wine is made the same way as red wine, involving a second or malolacatic fermentation after much longer maceration periods to extract all the colour and flavour from the skins and the pips. Two other changes were immediately obvious in the bodega. The first was the appearance of four terracotta tinajas in which some of the wine was fermented. The second was the almost complete lack of chemicals in the process. Sulphur is usually added to the grapes on arrival and/ or before fermentation to keep the flavours fresh and avoid faults in the wine. However only an absolute minimum is necessary in natural wine because a lower pH and higher acidity (especially in Bobal) act as natural preservatives. We started with the Chardonnay, still in contact with its lees following fermentation. Still cloudy, therefore

it is grassy and herby on the nose, with good volume in the mouth, citric (grapefruit) and with a lot of brioche. The wine produced in the tinaja is Tardana, the local white grape with about 8% of added Moscatel. Pale amber, this too was on its lees undergoing battonage still. It has a very expressive nose very aromatic and hints of orange skins on the nose. We moved on to the ‘Bobales perdidos’, from the old plots of Bobal recuperated vineyards, which had not produced much fruit this year but which would do so again in the future. These old vines produce small looser bunches with concentrated fruit. The wine is bright purple in colour with very expressive nose and in the mouth liquorice, mature red fruits and very typical of ‘alta expression’ wines from the variety. The bright pink wine in the bottles in the pictures is from the Royale variety, which has nearly disappeared. Blended with a little Bobal to give it colour this is a traditional sparkling wine from the area with a single fermentation in bottle… We descended into the old fermenting tanks (trullo), under the patio

of the property, which now holds barrels of Garnacha, Syrah and Bobal and tasted from these barricas. These are wines which will go on the market once bottled. Pigar is a fascinating new project, experimental but making wines of such quality that apart from a couple of outlets locally, the wine is sold in top restaurants in Denmark, Australia and Belgium. In Juan, who is just 30 years old, the bodega has one of the most promising young winemakers of his generation and one to watch. REINA ROJA 1. Tell us something about your roots and influences…

Celine Dion, Niña Pastori and the Cranberries among others…

We are a mixture of all the music that we have been listening to all of our lives as well as the influences of the musicians that have played with us. If you like what you are listening to, it stays with you and forms a part of what you yourself end up transmitting.

2. What is flamenco for you? Flamenco is a style of music that forms part of our tradition. Flamenco is a tradition charged with emotions and feelings and it is very rich and complex. That its roots have a mixed heritage makes me feel it all the more deeply.

I was born in Marxalenes in Valencia, next to where the legendary singer Conchita Piquer was born and brought up. For that reason, the genre known as copla has always been a part of me and the way i sing. Since I was young, I have always sung songs with my posse like: María de la O, la Zarzamora, Bien Pagá, Ojos Verdes, Tatuaje, Fumando espero…i suppose that many girls of my generation share those musical memories. I send homage to our marvellous grandmothers who left us this wonderful legacy. During my adolescence, I grew up listening to Luz Casal,

When i submerged myself deeper into flamenco, i went to Granada to study song (cante). It was there that I discovered great women like Paquera de Jerez, Niña de los Peines or contemporaries like Carmen Linares and Remedios Amaya, who I both deeply admire. On this new album we have done a homage to the Remedios of their fantastic song “Por nada lloro.” We believe that with a respect and knowledge of flamenco’s traditions, one has to continue mixing and renovating and that is what we have

done on this new album. 3. What is a typical month for Reina Roja musically speaking? In this band, we don’t have typical months. In Reina Roja we work independently, self-financing our projects. It’s a hard path where you learn a lot and enjoy each day to the maximum. The only common experience throughout the whole year are the live shows, but they differ for each situation. For over a year, we have been working on this new album surrounded by great friends like our graphic designer and the artist Ibán Ramón. At the moment we are concentrating on shows to present our new album. 4. Can you tell us something about your new album, ‘Sankara’ Sankara is an innovative album where our own compositions have played an important part. 9 of the 11

original tracks are original compositions. On this CD we haven’t wanted to limit ourselves in terms of styles although our latent flamenco & Mediterranean roots are evident. Our natural curiosity has left us open to approaching new challenges regarding different genres of music. It hasn’t been easy as until now as we chose songs for our repertoire that most attract us from other artists. It’s true that when it has come time to compose our own songs we have had the interesting challenge of trying to equal them or at least try to.

Ha-ha! The immediate future is the presentation of Sankara on December 20 at the Palau de la Musica de Valencia at 21h. Apart from that, we will be continuing to work to find our own space in the world of music. Many thanks for offering this space… Interview by Owl. Photos by Jorge Molina.
