‘TWIST ON TAPAS’

THE TWIST ON TAPAS Tapas have been the ultimate staple of Spanish cuisine for centuries. Whether they are hot or cold, sweet or savoury, served by themselves or combined to make a full meal, tapas have more recently expanded to incorporate a wide dimension of palates, cultures and hold a great significance in restaurant, ranging in sophisticated to casual dining. FLAMENCO AT THE STATION

LIVE MUSIC IN VALENCIA This is special! ‘Flamenco at the Station’ is set in the beautiful main train station of Valencia. In Spanish, it is known as ‘Estación del Norte’ with its distinctive, modernist design. Inside the train station you will find the welcoming GO! BAR VLC, which is open to a discerning public… Deep roots! Historically, Valencia was once part of the ‘Al-Andalus’ empire… so that flamenco has seen a re-birth in recent years in Valencia is perhaps fitting. ‘Flamenco at the Station’ is an exciting part of the live music scene in Valencia with live flamenco every Wednesday throughout the year from 20.30h. Different members of the ‘24/7 Valencia team’ have been going along every week and it has been a really enjoyable experience, with a different line-up each time.

The experienced team behind ‘Flamenco at the Station’ have picked the cream of the crop as the flamenco dancers, guitarists and singers are authentic artists from the flamenco scene. Time and again, we have seen the performers give their all in what is an impressive show… along with a nice break in the middle for everybody. There is a wide stage so your view is unhindered, comfortable seating and a long bar with drinks at reasonable prices. It’s a relaxed atmosphere with a respectful & varied crowd of locals and visitors enjoying the artistic spectacle. It has been great to casually bump into familiar faces, flamenco fans & friends from the past and present at the station! It’s a good sign that this new venue is really taking off and people are coming from afar for a good night out.

We do recommend you book beforehand to get a seat because ‘Flamenco at the Station’ is growing in popularity by the week! WHAT’S GOING ON IN UTIEL-REQUENA?

summer hailstorms. This is all leading to potentially the best harvest for some years.

At the same time, more and more wines from the region are winning prizes at International competitions.

After the smaller crop last year, caused by the drought and late storms, this year’s harvest has just started with the Macabeo and Chardonnay varieties for Cava now being picked. The harvest has almost returned to traditional dates this year…after gradually coming forward by up to three weeks, in recent years, due to global warming.

Bodegas Latorre, Vegalfaro, Murviedro, Dominio de la Vega, Hispano + Suizas, Covilor and Coviñas amongst others have won awards in Brussels & Frankfurt in Mundus Vini (The Grand International Wine Award). They are also being rated here in Spain in guides such as Guia Peñin and apps such as Vivino.

A colder spring with later flowering is the main reason for this delay. Combined with a wet winter which replenished the water table and a good hot summer, this has produced a good crop of healthy grapes. So far, there has been very little damage from

America. All of this from a wine region which, 10 years ago, was unknown outside of Spain! Much of this change in marketing has been led by the Council leading the D.O. which has taken Bobal, the region’s autóctono variety, on tours to present the best wines to customers overseas in the USA, China and Denmark. On October 1st, Bobal will go to London for the first time (officially) with Sarah Jane Evans MW leading a masterclass tasting for British wine professionals in St James, heart of the capital. The decision to seek UNESCO World Heritage Status of itself has not led to the wines being better known but it has raised the status and knowledge of the region’s 2500+ years of winemaking, making Utiel-Requena a target for increasing numbers of wine lovers and wine tourists.

RIKI WIGLEY & MARIAN DARÁS OF VÍ VID not all the experiments will end up in new wines to the market, it is all adding to the knowledge of what the variety is capable of and its potential for further development. To this extent, the D.O. (Denominación de Origen) is continuing its development of new planting techniques, in terms of orientation and watering, to help combat the effects of climate change. A major study is also underway to identify, locate and plot the planting of Bobal which make up 70% of planted varieties. This will eventually include identifying different clones of Bobal and soil types. This is so that in the future new plantings will be tailored by the clonal variety, which best matches the soil type, to produce the best quality grapes and thus wines.

Some 75,000 visitors attended FEREVIN, held over the last full weekend of August 2018 in Requena’s iconic Feria Recintal, a purpose-built exhibition centre on the edge of town where 20 bodegas showed a huge range of wines. Amongst them were the new Pugnus range from Murviedro, the new Escapada range from Coviñas aimed at introducing young wines to younger drinkers, a semi-dulce Bobal from Aluvión preserving the natural fruit flavours and sugars, a new Pinot Noir from Cerrogallina, a new wine from Carlos Carcel, (a wine from the oldest plot of Bobal vines in the area planted in 1906) amongst many others. VÍ Vid attended the Feria for the opening session on the Thursday and

on the Saturday after a visit to Coviñas with our tasting group the Circulo de Vino de Pedralba. We took the opportunity to speak to bodega owners and winemakers about developments. Chief amongst these has been a deliberate policy to make more wines from Bobal and make them in traditional ways, to emphasise the varieties characteristics. We were not surprised to hear more bodegas are experimenting with tinajas, the terracotta vessels for fermenting and storing wine which were used when winemaking commenced in the region in the Iberian period! We have reported over the last year on wines which have been commercialised using this technique including Bodegas Pigar, Vera de Estenas and Vagalfaro. Whilst

Also more bodegas are now accepting visitors for the first time, opening up the opportunities for wine lovers and interested visitors to experience how the region’s wines more fully taste in situ and truly understand how the winemaking process works firsthand. Chef Alejandro, tell us something about your experience in the world of hospitality and catering… My experience in the world of hospitality began at a young age when I worked with my parents in the different bars and restaurants that they have run. The rest of the ‘Ligazón’ team all have plenty of experience in this world too. 2. What is the philosophy of LIGAZÓN? Tell us something about your specialties… The philosophy that defines LIGAZÓN is that the client is the protagonist and is made to feel like a welcome guest in our restaurant.We offer the best product we can produce and we prepare it exclusively for our customers. More than just customers, we want our clients to feel at home. Good product and good service is essential. Attention to detail is another of the pillars of our philosophy. THE HUMAN TEAM of

Ligazón is both dilligently professional and magnificent. As for the specialty, it is the OCTOPUS known as PULPO GALLEGO. It is D.O Galicia quality and it comes directly from Carballiño in Galicia to Ligazón in Valencia. I would also highlight the meat we serve. Our chuletón and T-BONE steaks are exquisite. Our cuisine is modern and has substance. 3. What is a typical menu of the day? Basically, our food is market produce from the Central Market. I go to ‘Mercado Central’ every morning and many of our menus come from their products. Thursdays is our RICE DAY and you can savour a rice with secreto ibérico and tender garlic or monkfish with artichokes, among others. We are interested in healthy food and we take into account that the menu includes: salads, vegetables, proteins and hydrates. All for just €8.50…

4. Is there a TASTING MENU? Yes, there is a fantastic tasting menu at LIGAZÓN. These dishes are created with a more modern approach both in technique and presentation and it breaks away from the traditions of the daily menu. It’s a more sophisticated choice. It consists of three starters, including the Octopus with special ‘parmentier de cachelos’ potatoes, a main dish and very Galician dessert. To be frank with you, it is delicious! 5. Could you tell us about the interior of LIGAZÓN and its terrace? It is a small, minimalist place, nicely air-conditioned and with a very pleasant atmosphere. I should emphasize that our ample terrace really is special because it is like an island in the Barrio Carmen neighborhood. It is quiet, very beautiful, surrounded by a century-old ficus tree that is protected. There is hardly any traffic. It is a lovely terraza where you can talk, lunch and dine outside. It is the area most popular with visitors.

6. Are there cultural activities in LIGAZÓN? Yes, periodically there are painting and photography exhibitions by local artists. From time to time, we also have events with MENU + PERFORMANCE, which includes theatre, live music, monologues ...

7. What are your plans for the future? The future is to continue working and expand our knowledge regarding cooking, review dishes, review errors and improve everything we can. The future is to go from day-today and step-by-step by taking care of our product, service and our clients.

FOOD BY HELEN WESTWATER OF LA OLA FRESCA POTATO BONDA BALLS

Bouncing back to Valencia?! Put yourself in step with this tasty South Indian recipe for ‘Potato Bonda balls’. Crispy on the outside, fluffy on the inside, they are bonda wonderful! This recipe is inspired from my all-time favourite cookbook ‘World Food Cafe’ written by Chris and Carolyn Caldicot, my avid travelling & cook guru friends. It is adapted from the ‘Mysore Bonda’ recipe, which are made with rice flour instead of potatoes. You can serve them as a snack on their own or with green coconut chutney. As our recipe comes from South India, please spare a thought for Kerala where they have suffered terrible floods this year. This month we will be offering solidarity Oxfam Coffee and fair-trade tea, for donations towards the emergency aid response…

POTATO BONDA BALLS Method

Green Coconut Chutney

Mix all the batter ingredients in a bowl. Add water until a thick paste forms.

Serves 4 to 6 Handful of coriander leaves Handful of mint leaves 1 garlic clove 2.5cm / 1 inch piece of root ginger peeled and chopped 2 green chillies 250g/9oz desiccated coconut Juice of 2 limes 1 teaspoon sugar 1 teaspoon salt

Mix all the rest of the ingredients well with a potato masher. Mould by hand into golf ball sized balls. Heat the oil. When it is hot enough that the batter will sizzle and bubble, dip each ball in the batter mixture and deep fry in 2-3 batches turning regularly until golden brown all over. Drain on kitchen paper and serve hot or cold.

Blend all the ingredients in a food processor, adding just enough water to make it moist.

KHAMBÚ 1. What is the philosophy of KHAMBÚ ‘Khambú’ was born in Valencia as a vegan fast food restaurant. We have a great commitment to sustainability. You will find a variety of dishes that will surprise you regarding their texture, taste, smell, colour & appearance. All of this at a price that is affordable with very reasonable options and accessible to all pockets… Our main purpose is to make known the philosophy of vegan life. As far as food is concerned, no products of an animal origin of any kind are used. We have eliminated plastics, which are replaced by compostable materials such as paper or reusable as glass. We have innovated with our edible containers for delicious salads. We provide quality products, with hard work and enthusiasm from our team, so that our customers have an excellent dining experience. 2. What are your specialties? In Khambú you can find a wide variety

of burgers, fries, crunchy sweet potatoes, nachos with guacamole and vegan cheese, wraps, original appetizers such as ‘Aros del Mar’ reminiscent of traditional squid. Enjoy our Quorn nuggets, which have mycoproteins of great nutritional value. Our ‘Heura’ skewers also have excellent nutritional properties that surprises everyone who tastes them because of their great resemblance to chicken and other delicious snacks to share.

The older people who come along and dare to try it then congratulate us for the pleasant surprise they get. Many families with children come to the restaurant or come to buy food to go. Parents are very happy knowing that their children are eating more vegetable products and are happier than if they went to another traditional fast food restaurant. Children also enjoy ‘Khambú’ a lot because there are flavours and textures similar to those they already know.

We also have a variety of irresistible desserts that are homemade without dairy products, eggs or any other animal derivatives. They are suitable for people with allergies, even gluten-free and vegan desserts, something usually quite hard to find.

3. Do you have a specific type of public? By offering cheap prices, taking into account the quality and size of the rations, our audience is very broad although it is mainly a young audience, with growing concerns such as the state of the animals, the sustainability of the resources we use on the planet, health care and more.

AN AIR OF EXPECTANCY This season there is a renewed air of optimism and expectancy outside the ‘Mestalla’ and ‘Estadio Ciudad de Valencia’ stadiums on match days as Valencia CF and Levante UD continue to capture the imagination of the local public. Valencia have bought well during the summer recess. More importantly, they have clung on to key players from last season’s successful campaign. Kondogbia, Guedes and Murillo have all been secured on permanent deals and the marquee signings of Kevin Gameiro (Atlético Madrid) Daniel Wass (Celta Vigo) and Michy Batshuayi (Chelsea) are sure to create an healthy competition for places in the starting lineup. The addition of Denis Chéryshev from Villarreal is another real positive, giving depth to the forward line. The Italian Cristiano Piccini (Sporting Lisbon) looks like a ready-made replacement for Martín Montoya, who has headed to the South Coast of England to join Mat Ryan at Brighton & Hove Albion. Many Los Che fans are lamenting

the departure of Simone Zaza to Torino. Getafe have got themselves a bargain with the purchase of Nemanja Maksimović for a reported fee of around five million euros. Fringe players Nacho Vidal Miralles and Álvaro Medrán have also been allowed to leave. The former to Osasuna and the latter to Rayo Vallecano. The club had a successful pre-season campaign that included a win at Everton and the 3-0 drubbing of Bayer Leverkusen in the Trofeo Naranja. However, the La Liga fixture list gave Marcelino and his side a tough start at home to Atlético Madrid. Diego Simone’s team were on a high, fresh from beating Real Madrid and being crowned the European Super Cup champions a few days earlier in Tallinn. A tense but evenly balanced contest at Mestalla ended in a 1-1 draw. Ángel Correa put the visitors in front midway through the first half, to give his team the lead at the interval. Valencia were back on level terms, early in the second half, when Rodrigo blasted home after he had chested down nicely to create

space for himself inside the penalty area. The club’s first away game of the season was in Barcelona and a match up with Espanyol. The Catalan side outplayed Valencia in what can only be described as a really poor performance by Los Che. Granero’s free kick just after the hour mark was correctly judged by the VAR system to have crossed Neto’s goal-line. Six minutes later, a lapse in the Valencia defence saw Borja Iglesias secure the three points for his team. Four days later, thousands of Valencia fans were fixed to their television sets as the Champions League draw unfolded from Monaco. Valencia would have a tough passage whatever the draw but being pitched against Juventus, Manchester United and Young Boys Bern made the task of getting out of the group stage increasingly difficult. With two blockbuster Champions League fixtures to enjoy in due course at the Mestalla, the team then turned their attention to the small matter of a

local derby with Levante in the North of the city. ‘Los Granotas’ fans were also keenly anticipating this season after the positive way they had finished the previous campaign under their newish manager Paco López. Their coffers had been swelled by the transfer of Colombian international Jefferson Lerma to Bournemouth for an estimated 25.2 million Euros during mid-August. Within days of that transfer the club had spent over half of it on two signings. Raphael Dwamena, a striker with the Ghana international side came in from Zurich for around 6 million euros. Also, Montenegrin Nikola Vukčević signed from Braga in Portugal for almost 9 million Euros. A defensive midfielder, he is an ideal replacement for Lerma. Other summer signings include Sanjin Prcić from the French club Rennes and Moses Simon from Gent. Perhaps the most enterprising piece of work came on the last day of the league’s transfer window when Spanish national under-21 star Borja Mayoral signed on

a season-long loan from Real Madrid. Described by many as “the new Raul”, he spent time with VfL Wolfsburgo last season, scoring two goals in 17 appearances for the Bundesliga club. A 3-0 victory over Real Betis in Seville on the opening day of the league had already increased the expectancy levels further of the Levante faithful. However, Levante did blot their copy book a little by losing their first home game 2-1 to Celta Vigo. However, a victory for Levante UD over their local rivals Valencia CF would certainly put a smile back on the home fans faces and leave the performance against Vigo well & truly forgotten. A 12 noon kick off on a Sunday in the baking Valencian sunshine had been anticipated by the Levante club. In a nice touch by them, they gave away free water and sun caps to both sets of fans. A near capacity crowd of over 24,000 were entertained from the very first moment and it was not long until goals came. First blood went to the home side when Morales went on one of his

trademark mazy runs… before passing to an unmarked Boateng on the edge of the box. The striker’s effort was only parried by Neto, straight into the path of Roger Marti who made no mistake from close range. Just one minute later, Valencia were back on level terms. Carlos Soler did well on the right hand side before putting a tantalising cross towards the back post. Denis Chéryshev nipped in between two Levante defenders to head the ball home from close range. Then, against the run of play, the home side regained the lead. A wonderful 40yard, cross-field ball by Enis Bardhi put in Roger behind the Valencia defence. A cute first touch took the Levante striker out of reach of the pursuing defenders and he then slotted the ball past Neto, with his left foot, from a tight angle. Valencia finally gained parity in the 52nd minute when Carlos Soler was fouled in the box when heading away from goal. It was a mixture of Rock ‘n’ Roll, Jazz, Tamla Motown and Pop. I still have the first LP my Mum bought me out of the Co-op, ‘The Wonderful World of Reggae’. It was 1969 and we were all little skinheads and my love affair with reggae began. The next LP was ‘Motown Chartbusters’, full of brilliant soul music. I started collecting records about that time, 7 inches and all the Tighten Up and Motown Compilations.

EXCLUSIVE INTERVIEW What is the philosophy of Funkadelia? Our philosophy at ‘Funkadelia’ is for people to come to the bar to relax, talk, meet new people & listen or dance to the music. We like to play a mixture of 60s/70s/80s Soul, Funk, Jazz, FunkJazz, Disco, Boogie, Reggae, AfroFunk & Blues. Also we appreciate the soulful, jazzier side of house music. We’ve been very lucky to meet a lot of people into the same styles of music, some of whom guest as DJs at Funkadelia. Others just like to reminisce about the past re: clubs, record shops, concerts and favourite DJs.

This is our philosophy; to make Funkadelia a place where you’ll always hear top quality music of this ilk when you’re visiting and with a friendly, relaxed atmosphere. We’re very passionate about live music also and have a variety of bands / singers who play at the weekend. We also have a Jam Session on Thursdays, where we have some very talented musicians doing their thing! An example of the ambience that we want to create happened last Saturday when I noticed someone in a ‘Watts Stax’ T-shirt. He started talking about his love of 70s Soul and the DJ then played one of those very records that he had bought earlier… this is the easy going vibe we have at Funkadelia.

When I left school in 1974, me and a few friends started going to clubs which were very underground at the time, mostly in and around Soho: Mash, Countdown, 100 Club, Upstairs at Ronnie Scott’s Global Village and my favourite, which was Crackers in Wardour St. Tuesday was the night and the DJ Mark Roman educated me every week with his selection of Soul, Funk, Disco & Funk-Jazz. A special Deejay and Club! We found out the titles and bought them at the best shop ‘Contempo Records’ in Hanway St, the home of our bible at the time… as well as ‘Blues & Soul’ magazine and a second-hand shop full of imports called ‘Cheapos’ in Soho. 70% of my record collection comes from that era and those shops. Wayne, tell us about your background in football I played football back in the 60s, like most kids up the rec or in the streets until it was dark. I was at Luton Town when I was 13 years old, Crystal Palace from 14-17, TSV Auerbach in Germany when I was 18 and various semi-pro clubs in and around London. In 1983 I was signed by Karlsruher SC in Germany. In ‘85 I played semi-pro

again in Holland for Ripperder FC. In ‘87 I played in Cyprus for 2 seasons for Líbanos and Morphou. I returned to play in the UK for various semi-pro clubs until I was 47. I played for ‘TV Entertainers and Showbiz 11’ for 20 years in Charity matches. My Coaching Career: Coached in Miami freelance, various academies. Whilst living in London I had exhibitions of my paintings including at the BBC Club, involving 70s Soul, Jazz & Reggae artists. While living in Jerez, I had an exhibition with portraits on vinyl. I continue painting commissions for people here in Spain, mostly in acrylic. However, i have started to decorate various pieces of vinyl with client’s favourite singers. VALENCIA MUSIC

1. Tell us something about your musical background and influences I grew up as a classically trained pianist, starting to have piano lessons at the age of six. Then I entered my first Conservatory and finished my degree almost fourteen years after. Those years gave me the music foundations to compose my own music, especially ‘Impressionism in music’ (Ravel and Debussy) but I was very keen on many music genres at the same time. Music from Nick Drake, Billie Holiday, The Who, Nina Simone and George Harrison taught me loads too. My influences nowadays are many: The National, Sufjan Stevens, Laura Marling, Fleet Foxes, Big Thief... 2. Where does the name June’s Kaleidoscope come from? June was the name I was going after for weeks when I tried to find an alterego. It brought me to the doorstep of summer and every feeling that may bring. I wanted that my music transmitted warmth and fresh air at the same time. ‘Kaleidoscope’ was the tool to see life through, finding contrasts in every picture I wanted to write about.

3. How did you find living in England? It was pretty amazing for the first few years. Living in London on my own finally was incredible as an experience and as a step to self-introspection. That was the time I actually learnt how to perform. I wrote my first EP inside my room, living in an university residence in Colindale. I met all kinds of people and musicians to work with. I loved to explore every corner of the city.

everyone I want in less than twenty minutes. To have people close is important for me. Then, of course, there’s the concept of the seaside town. I love the Mediterranean way too much; being outside, our food culture, the tranquillity. It is something you miss whenever you travel abroad.

I started my own band in 2012, then we started to play in many venues and everything went smoothly at first. The following years I found it harder, life got a little bit more serious and it was difficult to deal with music, jobs and independence at the same time. London is well-known for being hectic. But I loved everything. I really enjoyed travelling around England. The landscape is magical and I learnt a lot from its culture.

Perranporth I wrote this song when I was traveling to Cornwall for the second time. I was inside the car, really excited about the trip; talking about what we saw the last time we were there. This song speaks about a place full of beautiful memories. It’s like a day in the life, where you feel lots of things walking by an extraordinary beach like Perranporth but, at the same time, you haven’t actually done much,. I wanted people to sense on their own skin the Atlantic air, the sound of the waves, the visions inside an enormous cave, or mostly, the feeling that one day like that can’t come again.

4. What do you like most about being based in your hometown of Valencia? Here calm actually exists. I can move freely and quickly from one point to another, and I can actually see

BRAVE JOURNEY INTO THE ENGLISH SEA

Mermaid Crop Mermaid Crop is the point of the story of two people that love each other but have to end the relationship. It’s the moment when things get real and the truth comes out. One of them wonders about what exactly the other needs, acknowledging that much can’t be done now. A new person is involved, the imagined figure of a mermaid and so the changes arrive. Even though the song has an ironic & regretful feel, there lies only one thing underneath: It was simply not meant to be. Best hotel room we’ve ever had This is the warmest and happiest part of the album. The breakthrough. I remember myself having great fun experiencing with new beats and latin-jazz to write it, a new style I had not touched on before. It made me realize I could start to bring new things into my music, and follow that path as well. I came with the idea from being at a songwriters’ workshop in New York. That city inspired me a lot and the musicians’ stories I got to know. It’s a song about being sure there is an open door, and after it, dancing, seeing the future, new streets, friends watching over you. Secret farewells This is the first song I wrote for the record, a single I actually launched a year before the EP was released. It can either calm you down or make you feel lonely in the middle of a mountain. This is maybe the most emotional bit of the process. The real pain when

you wave goodbye to your former life, hoping things did not go that way, having to face new beginnings without someone you loved dearly. It is loss, and it is strength, and having the impressive force of nature as the mirror to your feelings. That’s why I decided to film a music video in a place where all that significance could be alive, and I chose the coast of Ireland. Brave Journey into the English Sea The final lesson, the consolation or just peace of mind. The memories of a trip inside the sea of yourself and the life living far from home. The end of a time when you find you’re already another person, when you come out of the storm. It is at the same time a feeling of confidence. I included strings arrangements here to lift that feeling up more, feeling surrounded by some kind of natural support. It is the song where I thought the listener could sense being actually underwater the most, which is the point of this record. 6. Do you have any plans regarding recording and touring? I am writing new music and I hope to come up with a new style very soon. I would like to record at the end of the year but it depends on how this EP goes first. I released it just last February in 2018. We’re planning new dates to bring ‘Brave Journey’ to people this autumn. 5. Can we see you play in Valencia in the coming months?
