‘THE SPIRIT OF MAY 1968’ Plus ça change. Loosely translated, you might say that the more things change the more they stay the same. 50 years on from May 1968 and unjust wars, unequal rights and increasing unemployment have become commonplace on this 21st century planet of ours. Despite that jaded view, it can also be said that we also enjoy many of the freedoms fought for by workers & students across the globe who did their bit in sowing the seeds of change fifty years ago. Arguably, the events of Paris, Madrid, Mexico City, London, Prague and beyond in 1968 changed something in society forever. Spain certainly felt the changes as the Franco dictatorship slowly started to fade… In this May edition of ‘24/7 Valencia’, we visit the newish ‘Nikkei’ restaurant with an attractive fusion of Peruvian & Japanese cuisine. We also enjoy a superb show with live music & dancers at ‘Tablao Flamenco La Buleria.’ We also interview the owners of the delightful ‘Anómalo’ in the historic centre over a lovely Mediterranean lunch, packed with customers, on a lazy Sunday afternoon…

AGUA DE VALENCIA

FROM AVANTGARDE TIPPLE TO BOTTLED SUPERMARKET TRAVESTY Agua de Valencia was first concocted by erstwhile artist and barman Constante Gil, who

started serving it in his bar, the now sadly defunct Cerveceria Madrid in C/ Abadia San Martin in 1959 in Valencia. The bar, with its live piano music and its alcoves and poky corners was a classic of Valencian nightlife, especially through the years of the ‘transition’ to democracy and up until the mid-nineties. Its walls were decorated with Constante’s collection of impressionist paintings ‘Tertulias de Café’ that invariably depicticted people sitting around a

table enjoying a jar of the famous cocktail. So the story goes, a group of Basque salesmen who were regular visitors to Valencia, staying in the nearby Hotel Bristol, would spend their evenings in Constante’s bar and would always order the best house Cava, jokingly calling it ‘Agua de Bilbao’ in honour of their homeland. “In Bilbao the water is as good as this” they would tell him. One evening, getting a bit tired of their banter, Constante said he would surprise them with something a bit different and that's how he came up with ‘Agua de Valencia’… a mix of fresh orange juice, white spirits and cava. In the dark & lonely nights of Franco’s sixties, like the rest of Spain, nightlife hadn’t really taken off in a big way in Valencia. Constante was offering his mixture to customers every evening in his bar but few people had heard of it in other parts of the city. It

wasn’t until the seventies when the tired old regime was starting to be openly challenged. Groups of beardy Che Guevara wannabe students known at the time as “Progres” would frequent bars like Cerveceria Madrid to smoke too many Ducados and talk politics. As the Universities were almost perpetually on strike, these largely middle-class revolutionaries had time on their hands to kick- start Valencian nightlife and what was the first obvious signs of a Valencian youth culture. One of their favourite drinks was Agua de Valencia. It seemed to tick all the boxes. Girls liked it, its name chimed with their political struggle for autonomy, it had a hint of elegance, something more intellectual and sophisticated than beer, it was cheap and it got you drunk. Here was a perfect cocktail for lefties and artistic types, to be drunk while listening to the music of Maria del Mar Bonet or Raimon. Article © 2018 24/ 7 Valencia


AGUA DE VALENCIA

By the 1980s, Agua de Valencia had become THE drink of the Valencia scene. It was especially popular amongst students as, just like its bastard son, the Cubalitro and the present day Botellón drinking in the street, it was made for sharing. In those days it was relatively inexpensive. You would order a jug and enough glasses for everyone. Agua de Valencia was available in the dozens of new bars opening up in the Carmen and had quickly spread to other up-and-coming areas of the city like Xuquer, Ciudad Jardin, Cánovas and Juan Llorens. As often happens with these things, it was the widespread popularity of Agua de Valencia, which finally led to its downfall. Mass sales meant a drop in quality, especially in the spirits used to mix the drink. Freshly squeezed orange juice was increasingly replaced by bottled juice. The centre of the whole ‘Agua de Valencia’ scene had moved to the then extremely popular Café de Paris in the town centre, which also had a

branch on C/Manuel Candela. Café Paris had a long list of ‘Aguas’ from anywhere you can think of; Agua de Dublín, Agua de Londres, Agua de Estambul, Agua de Milan even, for some reason, Agua de Leeds. Each of these was a different colour, with impossible combinations of cordials and low-quality alcohol which were to blame for many a Sunday morning bad head in the late eighties and early nineties. Much to the horror of most Valencianos, Agua de Valencia was even bottled and sold in supermarkets. The drink’s popularity had reached its peak and suddenly, during the end of the nineties, it fell out of fashion. Hector, the owner of La Salamandra, a small bar with a wonderfully welcoming and relaxed atmosphere and a large terrace on a popular corner of Plaza Xuquer, has been a witness to the comings and goings of Valencian nightlife over the last thirty years. He believes that it was mass production that nearly killed Agua de Valencia off:

“People realised it was getting more and more expensive and because the bars weren’t taking any care in its preparation and ingredients, it didn’t seem to taste very good anymore. Agua de Valencia is freshly squeezed oranges with the right mix of spirits and half-decent cava, the bars weren’t providing that, and don’t get me started on that bottled stuff they sell to tourists” says Hector. The drink is still popular in his bar, mostly drunk by couples. For Hector it is important to get the mix right and, according to him, the proportions just don’t work in a big one or two-litre beer jug: “It’s a social drink, but it should only be served in small jugs for two people, if you want more then I’ll make you a fresh jug.” A true purist, he prefers to do the job properly or not at all, he even says if the oranges aren’t sweet enough, it’s not worth making it: “Adding sugar to sweeten the orange juice just shouldn’t be an option”. The area of the city most associated

with Agua de Valencia is the Barrio del Carmen and if you are only going to try it once, it ought to be in a place like Café San Jaume on C/ Caballeros or Radio City on C/ Santa Teresa. They are two of the area’s longest standing bars which typify the old “barrio” and, now that Cerveceria Madrid no longer exists, they have strong claims to have been making and selling Agua de Valencia longer than any other bar in the city. Even though demand isn’t what it was in its heyday, they still get through plenty of jugs of the drink. According to the people at San Jaume: “A lot of tourists who have found the bar in a guide or on the Internet come to our place especially to order Agua de Valencia. There are local people who’ve been coming back here regularly since the very beginning to enjoy the odd glass. Also couples often order it or mixed groups of men and women. Men on their own, for example, don’t usually order it and, these days; it’s not a cheap drink, so it’s not so popular with younger

customers who can get two or three beers for the price of a glass”. In the Barrio de Ruzafa a classic place for Agua de Valencia is Cafè Tocado in C/Cadiz, a bar in the heart of the area with live music and theatre whose decoration puts you in mind of a “cabaret” from the ‘La Belle Epoque’. Like all the classic Agua de Valencia bars we’ve mentioned, they go for quality ingredients but this being Ruzafa, unlike the bars in the centre, they don’t attract so many tourists. They told us that although it is still a staple, other drinks have replaced Agua de Valencia in popularity: “It’s normally drunk by groups and couples, usually people over thirty, these days younger people tend to go for more fashionable drinks like caipirinhas or mojitos. Having said that the drink is a classic, we've always served it and it’s always been in demand.” So how do you make it? Every bar does it their own way; some add cava and some don’t. Most places keep the

exact recipe to themselves but we did pick up a few tips. Anywhere worth its salt will use freshly squeezed orange juice with sweet oranges, so sugar is not necessary, plus a mixture of good quality white spirits. We were also told never to use orange-flavoured liqueurs like Cointreau or Curacao, as they don’t blend well with the orange juice. David Rhead and José Marín

NIKKEI VALENCIA Away from all the tourist din and not far from the Torres de Quart you will find the Botanical Gardens of Valencia. The quietly hip & understated barrio of ‘Botánico’ is literally across the road from the historic centre and is discreetly waiting to be discovered… Just 4 months old, one of the barrio’s newest and most distinctive jewels is ‘Nikkei Valencia.’ They serve a quality Japanese-Peruvian fusion cuisine. They explained to us that their distinctive logo combines the colour red that represents Asia with the fish-tail that is part of Inca culture. The interior is clean & gently eye-catching. You’ll notice that the minimalist lines on the walls give the restaurant a coherent & calm feel, making it just right for lunching and dining in good company. There is a positive energy to this place, which augurs well for the future. Nikkei is the name given to the

Japanese who emigrated to Peru and developed a truly distinctive cuisine of the same name. Our knowledgeable and helpful host Fabio was based in London for seven years. He was truly inspired by his involvement with a “Nikkei” restaurant in Soho…before eventually moving to Valencia. The amiable chef Luca has proved to be a real artist in the kitchen, providing a fresh presentation with a lightness of touch. You can see & taste the love put into the dishes that fuse Asian and South American ingredients & traditions with some new ideas. This is a very attractive, healthy & delish combination. The last time we ate at Nikkei for a delightful lunch it was spacious when we arrived and completely full by the time we left… with an age range from early twenties to late sixties and about 70% of the customers being locals. The vibe is open-minded; this is for people curious for new experiences.

The vintage music soundtrack started with some swinging blues, seeped into catchy French chanson and swayed along with jazz from the eternal Bille Holiday. These are people with really good taste in music and food…always a good sign. For starters, we went for tempura de verduras, which was humorously presented in a cone with newspaperstyle paper. The tempura sticks included courgette, eggplant, carrot and cabbage in a Japanese batter that was a light and agreeable introduction to the proceedings. To accompany our lunch, we went for a bottle of Albariño Bicos D.O. (Rias Baixas). This vino blanco is a current favourite of ours when dining out… a fresh white wine that is great to accompany all sorts of tapas & platos and rewarding between dishes too. Our ‘Solterito de Quinoa’ was beautifully presented. With corn, cheese, olives, quinoa, red onion and green peppers. It was colourful

and very appealing to look at, let alone taste! It was full-flavoured, consistent and with a subtle touch too. There really was a lot of amor put into this dish. The ‘Sea bass ceviche’ with Rocoto peppers’ from Peru was memorable too. This is not such an easy dish to make effectively in terms of balance, especially getting the consistency of the fish right. It turned out to be a very special fusion, instead of the traditional ‘Ceviche’ that you tend to come across. It was very agreeable with the combination of peppers, lubina fish and fresh yellow mango. The Passion Fruit juice from South America added a very special touch to this refreshing main course. We found this to be a very interesting mixture that was “rico” and just right or as they say here: “en su punto.” For our sushi dish, we allowed maître

d’ Fabio to present us with his own personal favourite, which was ‘Maki tempura spicy roll with teriyaki sauce.’ Presented on a trendy rectangular black tabla, it was nourishing and very balanced with the wasabi & ginger to accompany giving it a bit of kick. Conveniently, the very welldesigned carta is in both Spanish & English. We were curious to try a postre from the Peruvian capital called ‘Suspiro Limeño.’ Combining the warmth and solidity of the merengue with the sublime freshness of the lime underneath, it was a clearly confident dessert of perfect contrasts and with a lot of personality. All in all, a very satisfying and different Sunday lunch from the norm and with lovely service too. We plan to go back soon to try the Wok Noodles, Tuna Tataki, Niguiri and

FOOD BY HELEN WESTWATER OF LA OLA FRESCA LEMON AND ALMOND TART

The protagonist of this month’s recipe shouts the colours of SPRING, mixes and matches with both sweet and savoury and is second to salt as a flavour enhancer. Curiously, it also has a role in adulterous liaisons, diplomatic double-dealing, and military sabotage…having been used since the fifth century as an invisible ink and also a birth control. Its greatest triumph however, has to be holding a key role in the defeat of Napoleon Bonaparte! The discovery of its medicinal properties of ascorbic acid, being an essential element that prevented mariners from getting scurvy. This enabled the British Navy to blockade French ports for lengthy periods of times, hence annihilating the naval powers of France. For a final clue, it also rhymes neatly with my first name. It is, of course, the lemon. Refreshing, invigorating and lauded for its fighting free radical properties. Bitter or sweet? Since the Egyptians started making lemonade more than 1,500 years ago there are a multitude of recipes to choose from but this sweet lemon and almond tart was made for me the other day by my German friend Clara, so let’s stay sweet.

LEMON AND ALMOND TART Method Place the flour, sugar, ground almonds and butter in the food processor and pulse briefly just until it becomes crumbly. Beat the egg yolks and 1 tablespoon water with a fork and add this to the flour mixture. Pulse just until the dough comes together. With your hands, form the dough into a ball and wrap it in plastic. Let rest for 1 hour. Preheat the oven to 375 degrees F. On a lightly floured surface, roll the pastry out and fit it into the bottom and sides of a fluted 9 inch tart pan. Prick the bottom with a fork in several places and then bake the crust for 12 to 15 minutes.

INGREDIENTS Pastry: - 2 Sticks Cold Butter (1 Stick = 1/2 Cup or 125 ml) - 1 3/4 Cups All-Purpose Flour - 1/2 Cup Sugar - 2 Egg Yolks - 1/4 Cup Finely Ground Almonds Filling: - 4 Large Eggs, Lightly Beaten - 2/3 Cup Sugar - Grated Zest Plus Juice From 3 Large Lemons - 1 Stick Unsalted Butter, Melted (1 Stick = 1/2 Cup or 125 ml) - 1/4 Cup Sliced Almonds (Optional)

Filling Place the eggs, lemon juice, zest, sugar in the food processor and blend. Pour in the melted butter and blend. Pour this mixture into the pastry crust and sprinkle the sliced almond on top. Bake for 25 to 30 minutes until the top is lightly browned and a skewer comes out cleanly. Cool and refrigerate until ready to serve. To serve, garnish each slice with a dollop of whipped cream, sliced almonds and a raspberry, or a decorative slice of sugared lemon. It sounds like a good way to stay out at sea to me!

I’m from London originally but have always travelled and met Danilo when I was living in Rome. I was working in Television but dreamed of running my own restaurant or beach bar. We spent 7 years in Australia; Danilo was an acclaimed head chef and I was directing an award-winning design show so I think our friends thought we were crazy to give it up and move to Valencia to open Anómalo! But I don’t regret it for a minute…

Danilo:

I lived with my nonna (grandmother), father, brother, aunts and uncles in the centre of Rome. My nonna was amazing; she had to cook for 10 people every day, so started very early each morning. One of my earliest memories is waking up to the smell of a delicious sauce being prepared – I learnt so much from her! So it was inevitable I became a chef. After working for years in Rome, I moved to London with Amanda then to Australia, so I’ve been lucky to experience many different cuisines.

2. How do you find Valencia as place to live and work compared to other cities? London has a multi-cultural cuisine; it was very exciting and challenging to work there, particularly in a gastropub. But everyone rushes around, I’m not sure they always have time to savour what they’re eating. Sydney cuisine has an Oriental influence, which is fascinating. But the biggest surprise was how early they eat dinner! Valencia is more like Rome; I can buy wonderful fresh produce daily from the local market and people have great respect for food. We’re so happy that our customers have time to sit and chat with us after they’ve eaten; it’s like being at home with friends!

3. What kind of cuisine can we find dining at Anómalo? Simple dishes, full of flavour and love. The menu changes weekly; everything from Artichokes alla Romana to veal tongue and Panna Cotta with Orujo liqueur!

DOUBLE CELEBRATIONS IN VALENCIA

The city of Valencia had two reasons to celebrate on the football front this month as Levante UD have secured their La Liga status for another campaign and Valencia CF have confirmed their Champions league spot for next season. With a comfortable points cushion for that coveted fourth place it was always going to be difficult for the fifth placed side Real Betis to overhaul Valencia. The Andalusian club’s loss at Athletic Bilbao in early May ensured that manager Marcelino and his Valencia team completed a massive turnaround from last year’s disappointing twelfth place.

It was a huge relief to many of the Valencia fans as the club’s recent form has been patchy to say the least. The wins over CD Leganés and Espanyol were tense affairs that the team just edged. A good performance at the Camp Nou, against the champions FC Barcelona, saw Valencia unlucky to lose 2-1. Since then the club have been winless in four games. The biggest shock came with the home defeat against a resilient Getafe side. The teams had fought a bruising affair in the Coliseum Alfonso Pérez earlier in the season and there was no reason to expect that the team from the outskirts of Madrid would not try to make the contest a physical battle once again. True to form, it was a niggly contest with Getafe's pantomime villain Damien doing his best

with his fellow defenders to ruin any fluid football Valencia tried to play, by fair means or foul. The seven bookings the visitors accrued throughout the game counted for little, and in Loic Rémy they had a striker in clinical form. Subsequently, the former QPR, Newcastle and Chelsea star punished two lapses in concentration in the Valencia defence to put Getafe two up. A strike twenty minutes from time from Rodrigo reduced the deficit. However, by that time Getafe’s mindset had been strengthened by some weak refereeing decisions and they stayed resolute and aggressive until the final whistle to stroll off the field at the end of the game with all three points. A trip to Galicia and Celta Vigo followed. The first half had very little incident in either penalty area

but the second half came alive on the hour mark when former Vigo favourite Santi Mina finished in fine style with a lethal shot across the keeper that nestled into the corner of the net. Valencia’s lead lasted all of four minutes before Maxi Gomez levelled with a strong header from a free kick that wrong-footed Neto and crept over the line, despite the best efforts of the Brazilian keeper. Both teams had a couple of chances each to win the match but the game ended in stalemate… and a valuable point was added to Valencia's tally. The club’s penultimate home match was against La Liga’s smallest club Eibar. The Basque side’s story on how they were promoted to the top flight of Spanish football a few years ago only to be denied a place in it

initially on financial grounds is well documented. Then, a shrewd pre-season share scheme called ‘Defiende al Eibar’ (Defend Eibar) was then put in place and thousands of football fans worldwide bought shares in the club for a minimum of 50 Euros each. The Eibar coffers were swelled by several millions and as a result the Spanish Football Federation relinquished and allowed them to take their rightful place in La Liga. Known as ‘Los Armeros’ (The Gunsmiths) due to the arms factories in and around the town of under 30,000 habitants they are the “second team” in Spain of many football fans because of their romantic underdog status. Fielding former Valencia players Yoel and Fabian Orellana in their team, Los Armeros built a fortress of their own in front of their goal that Valencia did not have the

firepower to break down. For only the second time this season, the club were involved in a goalless draw in the league. However, it did mean another point for Los Che. Consequently, just another solitary point would claim Champions League football for Valencia, even if Real Betis did win their remaining three games. As it happened, Betis played their game in Bilbao a few hours earlier than Valencia in Villarreal and lost 2-0 to the home side. Former Valencia favourite Aduriz added to Muniain’s first goal in stoppage time to secure victory for the Basque side and put the Valencia fans in celebratory mood as they headed for the East Coast local derby in El Madrigal or Estadio de la Cerámica as it is now officially known.

Marcelino was given a warm welcome by the home fans on his first return to the club he had taken to the Europa League semifinal in 2015-16. Valencia could now play with a freedom knowing that a Champions League place was secured whilst Villarreal needed a victory to virtually assure Europa League football returned once again to their patch next season. The urgency initially laid more with the hosts and as the game went on Villarreal looked the more likely winners. So it proved, as Mario Gasper scored a late winner for the ‘Yellow Submarine’. However, it did not dampen the spirits of the large Valencia contingent in the stands and both players and fans celebrated their confirmed fourth place in unison in the stadium well

after the game finished. The two games left, away game at Girona and at home to Deportivo La Coruña will be relaxed affairs now the job is done and this week the club fly out to play in Saudi Arabia for a money spinning friendly against the local side AlNassr FC. This is the third time the teams have played each other in recent years and the Brazilian legend Ronaldinho will be making a guest appearance for the Riyadh based club. Meanwhile, Levante UD have found a new lease of life under the new interim manager Paco López. Three consecutive wins against Malaga and Sevilla at home and away to Bilbao have ensured the club remain in the top flight and that Deportivo La Coruña,

Malaga and Las Palmas will be the relegated clubs this season. This is especially pleasing for the Levante season ticket holders who have attended every league game as they will receive a free season ticket next year as part of a deal that the club struck with fans before their first home game last year against Villarreal. VALENCIA MUSIC

The Festival Nino Bravo in Aielo de Malferit is just one of more than 20 such festivals and conventions all over the Spanish speaking world. The small town near Ontinyent and the birth place of this unique big voiced singer teems with hardcore fans from as far away as Chile and Australia, all coming to pay homage to Valencia’s true enduring pop icon and one of the most successful Spanish singers of the seventies. Nino Bravo was born Luis Manuel Ferri Llopis on August 3rd, 1944. When he was just one years old his family moved to the city of Valencia as part of the widespread Spanish rural migration towards the industrial cities during the Forties and Fifties. He was brought up in the barrio around Calle de Visitación, parallel to Calle Sagunto. A statue now stands in a small park in the area. As a teenager in the late fifties and early sixties he founded local bands like ‘Los Hispanicos’ and ‘Los Superson’, singing versions of hits by Cole Porter, the Platters and Domenico Modugno. The groups never achieved more than a certain

local notoriety and eventually broke up. It wasn’t until he finished his Military Service in 1964, when he changed his name to Nino Bravo that his career really took off. He began to tour the Verbenas and Fiestas all over the Valencian region and took part in the Festival de la Canción de Barcelona with the song ‘No debo pensar en ti’.

With his national profile growing, and on the verge of the widespread fame he achieved in the 1970s he still, at this time, didn’t give up his day job as a salesman at a jeweller’s shop. This was typical of a man whose working-class fans always considered him as “one of us”. While certainly less politicised than many of the university educated ‘cantautores’ of the time, he was more representative of the average working Spanish man in the street and his aspirations and therein perhaps lies part of his enduring popularity. While the student hippies hiding from the “Grises” on the Madrid campus or on summer holiday in Ibiza may have been looking for something

more cerebral, the average factory worker or bus driver just wanted the escapism of a Nino Bravo song. For many people it was pop, just as much as protest, which powered the transition to democracy. People who were close to the man often talk about how he never turned his back on his roots and his lifelong friends. Paco Samper, a personal friend of the singer describes him as: “just a normal bloke with an incredible voice” who was never really impressed by fame and the screaming crowds. Mr Samper tells of how Bravo was fond of saying that “music calms the wild beast but it doesn’t seem to be the case with some of my fans”.

While his common touch and his image as the hard-working, perfect boyfriend for your daughter made him popular…it was that amazing multi-octave voice which set him apart. His powerful but controlled rock style crooning, somewhere between Tom Jones and Scott Walker, is explosive on record and must have been an unforgettable

experience for those who saw him live. He wasn’t a writer but an interpreter of songs, whose distinctive style meant that his was the definitive version of every song he ever recorded. This is what cut through and powered his rise to international success bringing him hits in more than twenty countries. It was in 1970 when hit songwriter Augusto Algueró (a sort of Spanish 1970s Phil Spector) heard him perform and gave him a song he had originally written for Lola Flores called: ‘Te Quiero, Te Quiero’. It became a massive summer hit and even made the charts in Germany and France. A string of number ones followed between 1970 and 1972: Noelia, Perdona, Mi Gran Amor, Esa Sera mi casa, Voy Buscando, Un beso y una flor and Mi Tierra. At a time when the whole of Spain had access to just two channels, he also cemented his position as a national household name participating in the weekly Saturday night TV show ‘Pasaporte a Dublín’.

In 1973 Bravo was at the height of his fame, he had just had a hit with one of his most emblematic songs “Libre” (later an inspiration to Spanish people during the transition period) and was looking forward to a bright future. He was planning amongst other things to record some Beatles and Leonard Cohen songs in an attempt to conquer more international markets. There were also plans to set up a way of promoting Valencian acts through a Valencian company in order to move the focus away from Madrid. He was just starting to see some of the money he had made. He was a young man who could finally realise one of his teenage dreams of owning an expensive high performance car. On the 16th of April 1973, Nino Bravo was driving to Madrid in order to promote the Valencian band ‘Humo’. The two members of the band and his manager were also in the car. Bravo lost control of his white BMW on a sudden curve on the N-III near Villarrubio in Cuenca. The car turned over two or three

times. Seriously injured and miles away from the nearest hospital, Bravo was rushed to a nearby convent but was dead on arrival. He was 28. Bravo was survived by his wife and two daughters. He left a lasting legacy. ”America” was an immediate posthumous hit and his recordings have been re-released and repackaged many times over. ‘Libre’ is has been used in an advert for Amena mobile phones (to paraphrase the Clash, some people think it’s funny turning rebellion into money). Forty five years on he is part and parcel of Valencian life and culture. Every Valencian knows his songs, which you can hear sung anywhere from the local Verbena to the crowd at Mestalla (on the odd occasion when they actually sing). Not bad for “just a normal bloke with an incredible voice.”
