cooking with Written by Jennifer Strickland Photographs by Barton College Photography Students Two years ago, when the owners of Brewmasters, Josh Davis and Morkos Youssef, had the idea to open their very own store, serving food was nowhere on their radar. “We didn’t plan to have food; we didn’t even think we wanted to have food,” says Youssef. But during the planning phases, it was discovered that to open

their store, they had to have a kitchen to make and serve food. Enter Morkos’ mom, Kimberly. “Morkos called me one afternoon and asked me to get to the store as fast as I could. I thought something was wrong, so I rushed right over. When I got here, he asked me how I felt about going back to work. After retiring from my job as
a nurse tech at Nash General, and working in convenience stores with my husband until he passed away, I didn’t know if I wanted to go back to working again. But my son and his friend needed me, so I was going to help.” New building plans were immediately discussed and a tiny space that had previously been
dedicated as a closet was then repurposed into a kitchen, a very tiny kitchen. “We had just enough room to put miniature versions of all the appliances we needed in the kitchen in there. You could fit two people, but just barely,” says Kimberly. “I came in on the first day with no idea what I was supposed to make or how I was supposed to make it happen. I learned really fast how to work in such a tiny environment and how to make it functional for all of us.” From that tiny kitchen came some of the best soups and sandwiches you can get in Wilson. Brewmasters prides themselves in using high quality meats and cheeses from the Boar’s Head brand, and all of their soups are created in-house each day. “I spend a lot of time trying out new combinations to introduce into my soups. I want
them to be good because that’s what everyone has come to expect from us.” As a busy working mom of two boys, Kimberly learned years ago that it wasn’t about the amount of time that made
the meal great, it was about the effort and building of flavors that went into it. “What people don’t seem to understand these days is that you don’t have to be fancy when you cook. You can use ingredients that are already prepared and add your own personal touch to them and turn them into something amazing. You don’t have to cut, slice and chop all your ingredients for every meal. Take advantage of the convenient pre-sliced vegetables that are out there. You can still make amazing things with them, and you’ll do it in half the time.” Now that Brewmasters has opened their new location, which is over three times the size of their original location,

the kitchen is no longer the size of a closet. “I have room to move, and my refrigerator is large enough to hold things! I think that is probably my favorite part about my new kitchen.” The new kitchen boasts plenty of workspace as well as new equipment throughout and is now more conducive to the amount of employees needed to make the business run smoothly. With less than 10 employees, they’ve done pretty well so far! Brewmasters plans to have a lot more to offer in Wilson going forward. They will be offering live music and bands at least once a month and they plan to start a Trivia night in the very near future. “We want people to get out and see what the community has to offer, what we have to offer. For so long, we haven’t had the space to do much of anything except sell beer and make sandwiches. We want people to know we are so much more than that,” says Morkos.
They will also be offering the community an opportunity to use the restaurant as a way to raise funds for a cause that will give back to the Wilson community. “We will have celebrity guest bartenders that will be able to come in and serve our customers. They’ll pick a charity that is local to Wilson and we’ll donate $1 for each pint they sell to their charity or organization. We are all about giving back to the community that has given so much to us, and we want to do what we can to make Wilson a better place to be.” In addition to the celebrity guest bartender nights, the restaurant also plans to start offering fundraising opportunities for organizations in the community. “Fundraising these days is getting harder and harder. If we can provide an organization with an opportunity to raise some money, we want to do that.” The new location has also allowed for a major expansion in the different
products Brewmasters can carry. “At our old location, we had about 550-600 different kinds of beer. In this location, we have over 1,000 different kinds and we have also been able to add a large selection of wine and sake. We just didn’t have room for all of that at the other location,” says Morkos. Some of the more exciting expansions they have at the new location include wine on tap, cold kegs to go, and a large seating area for guests to dine in and watch sporting events on one of three large screens. They now also have room to host Christmas parties, rehearsal dinners, birthday parties and more. “We want people to come in and hang out. Now we have the space for them to do that and we couldn’t be more excited. The move to this new location has given us the opportunity to really grow our business in ways we didn’t even think possible. We have evolved into a family atmosphere that we didn’t have before. It has just been remarkable!”

Protect your back during the Holidays By Dr. Jennifer Yap The winter holiday season brings many opportunities to injure your back - the stress of decorating, shoveling, eating and of course shopping! You don’t want to shop ‘til you dropgo on with the shopping, the exercise is good for you. Have an enjoyable time with your family and friends. Here are some recommendations to protect your spine from injury. 1. Cut the carbs and control your portions! Eating is not a winter sport but Thanksgiving and Christmas meals are well known times for gorging. The excess weight can pull the pelvis forward and cause strain on the lower back. Plan on drinking plenty of water to fill you up before the meal and focus on the turkey (protein) and less on the stuffing, bread and pie (carbohydrates). 2. Utilize Shopping Strategies: Bring two lightweight bags with thick handles when you go shopping. It’s better to balance one bag on each hand rather than consolidating everything in one purchase. Take trips to your car to unload. Avoid crowded locations especially on Black Friday where people will push and pull to get the best deals.
3. Have good posture when you clean. If you rake, keep your back straight, abdomen tight and instead of bending at your back, bend at your knees. Push the snow or leaves away, as opposed to throwing it over your shoulder. 4. Decorate Smart. Greater than 10% of winter related back injuries are related to decorating. Focus on using your legs instead of your back to help you lift. Consider wearing a back brace when moving heavy boxes to help engage your core abdominal muscles and to give you some back support. Use a ladder for hard to reach objects so that you do not excessively stretch your muscles. 5. Stay hydrated! You should drink half your weight in ounces. Lack of water contributes to chronic muscle spasms and increased blood viscosity. Both contribute to poor healing and inflammation. 6. Stretch and exercise. There are plenty of excuses to avoid exercise in the winter but you need to find the motivation to do simple stretches and keep your muscles toned. Some exercises can even be done lying down for those who have bad knees or other problems.
Our Guest Health Blogger for this issue is Dr. Jennifer Yap, DO, MPH, owner of Carolina Sports and Spine. Of course you should consult with your physician to make sure stretching and exercise is appropriate if you have certain medical conditions. If you do get back pain and it starts interfering with your daily activities or you find it difficult to control, call us at Carolina Sports and Spine at 252-442-4024. Otherwise, have a great holiday season pain free!

Making healthy choices during the holidays is easier than you think By Ann Strother Once again we find ourselves in the middle of the holiday season. Each year we plan and prepare for the season but are you prepared for the excess of food and busy schedules that the holidays bring? Have you given any thought to your plans for staying healthy through the holidays and in to the new year? If you haven’t then now is a great time to get started. Begin by thinking about the holiday treats you are going to buy or make for your family. There are literally hundreds of lower calorie and healthier versions of our holiday favorites. Not only will your family be consuming less calories but they will feel better and have more energy. Diets that are loaded with sugars and simple carbohydrates as well as saturated fats often leave us feeling sluggish and lethargic. This is a good time to try new healthy recipes for family meals as well. We often find ourselves picking up more quick meals due to shopping and extra errands so we need to make healthy choices for the meals we prepare at home.
You should also be considering what you are going to do to increase your daily exercise activity. For many people this can mean an extra trip to their health club or finding time after dinner to go for a walk. Everyone is different and each of us have different lifestyles and commitments. The key to establishing an exercise program or increasing the amount of exercise you perform is to find something that you will do consistently. Beginning a 5-mile daily run that last for two days is useless compared to a 30 minute walk done daily for six months. Each of us need to find an exercise program we can do in a reasonable amount of time on a consistent basis. Often the anticipation of changing our lifestyle through healthy eating and exercise can be overwhelming. This of course is exacerbated during the holidays. We think we should be able to do this on our own with little or no help because of all the information that’s available on the internet and in magazines and infomercials. These sources usually provide information overload
Our Guest Fitness Blogger for this issue is Ann Strother, co-owner of Victory Fitness in Wilson. and we soon become confused and discouraged. Consider seeking help from fitness professionals. While the cost of these services is often the first thing that comes to mind you should consider the cost of poor diet and lack of exercise. If you are the primary grocery shopper and meal preparer your influence on your family is tremendous. This Christmas consider asking for gift certificates or cash gifts that can be used for personal training or lifestyle coaching. You can ask your health care provider or friends for recommendations. Then spend some time talking with various fitness professionals to find the person and program that’s right for you.

RING
16
WINTER 2015 | WILSONWOMAN.COM
As we begin to shop this holiday season, the ringing of bells will greet us as we enter many local stores. We’ve all seen them, we’ve all heard them, and many of us have rung them. They’re the Salvation Army bells and their volunteer ringers are gearing up to start the largest fundraiser the Salvation Army has each year. According to the Salvation Army website, Captain Joseph McFee was so compelled to help the many poor individuals in San Francisco who were going hungry. He made it his mission to provide a free Christmas dinner for as many people as he could help. His biggest hurdle? Funding the project. Borrowing an idea he had seen during his days as a sailor, McFee decided to set out a kettle and placed a sign on it asking people to donate anything they could to help his mission. It didn’t take long before his kettle was full and his mission complete. McFee was able to provide a Christmas dinner to over 1,000 people that year, using the funds from his one kettle. From that one kettle was born the Red Kettle that we have come to know today. They pop up all over town in storefronts and on sidewalks, manned by volunteers from many different local organizations and businesses. “We can’t have a successful campaign without the help of the community,” says Major Jim McGee with the Wilson chapter of the Salvation Army. “We appreciate the help of the volunteers that ring the bells and man the kettles, but we couldn’t do what we do without the support of the businesses that allow us to set up in front of their stores.” The faces you see ringing the bells might look pretty familiar. Several businesses and organizations participate each and every year. “We are fortunate to have ringers from Firestone, the Wilson Police Department, the Sheriff’s Department, and many local civic groups return year after year,” says McGee. “Their dedication to our mission is greatly appreciated.” The funds raised from the Red Kettle campaign are funneled back into our community to help with things such as hunger relief, housing and homeless services, youth camps and recreation and Christmas assistance. No donation dropped into the kettle is too small and every one is appreciated and used in the best way
possible. In 2014, the Salvation Army used the funds raised to assist over 30 million people. Locally, the Salvation Army works hand in hand with other local organizations to assist individuals in their time of need. “We are here to make sure we do whatever we can to help,” says McGee. Starting Friday, November 27, you’ll start seeing those bright red kettles show up in front of stores like Walmart, Belk, Harris Teeter, Hobby Lobby and Lowe’s. The hours are 10 a.m. - 7 p.m. Monday through Saturday.
If you’re interested in setting up a time to volunteer for your business or organization, or just for yourself, give the Salvation Army a call at 252-243-2696 and they’ll be glad to assist you. Volunteers are asked to sign up for a one day shift, but multiple shifts can be requested. This holiday season, as you’re rushing around searching for that perfect Christmas gift, take a moment and stop by that bright red kettle and drop a little donation in it. You never know who you might be helping, but you can rest assured that they will appreciate it more than you’ll ever know.

How NOT to go broke this Christmas By Mark Holmes Last year’s Gallup poll found nearly 25% of American’s anticipated spending $1,000 or more on Christmas. If you can afford it, that’s great. If you can’t, let’s commit to not overspending this year. Here are some ideas that will help you avoid the unwanted gift of a huge credit card bill in January. Budget – Come up with an amount that you can afford. Write down the names of everyone on your “to buy for” list. Put down dollar amounts for each. Total this all up and if it’s over your budget amount, start cutting back amounts and/or taking people off the list until you are at or under your budget. Have your final list with you when shopping. Keep a running tally as you shop. If you spend less on someone than budgeted you’ll have a little more to work with. If you run a little over on someone, you’ll need to spend a little less on others. The list and the running tally will keep you on task and on budget. Keep your name off the list – Studies show that half of all Christmas shopping time spent supposedly shopping for others is
probably for yourself. Almost two out of three people buy something for themselves during Christmas shopping and the average amount spent on this is $140. Remember, you will be getting gifts this Christmas as well – maybe even some of the very items you think you need now. Even if you don’t you may get a gift card or two that you could use on these items later. I bet the items you want now will still be around in January, and probably at a better price. Start shopping – now! – Sounds crazy but it works. Early bird shoppers spend less than last minute, procrastinating shoppers. Shopping early, when the stores are less crowded is much easier and less stressful. Last minute shopping in crowded stores can be intense and may lead you to buy things that are more expensive than you intended. A study from a few years back estimated that procrastinators spend approximately $250 more than early shoppers. If you stick to your budget, keep you name off the list and start shopping now you
Our Guest Financial Blogger for this issue is Mark Holmes, President and CEO of Cornerstone Bank in Wilson. may be pleasantly surprised at how far your money goes this Christmas. Using the anticipated spending amount of $1,000, avoiding the average spent on oneself of $140 and the average $250 procrastinators spend, you save $390 or 39% of the $1,000. More importantly, you will avoid overspending and maybe you won’t get that big unwanted January gift from the credit card company.

WEN Written by Jennifer Strickland Twenty-five years ago, in a small space in her home, Wendy Winstead began her career as an interior decorator. Now, she’s built a client list that numbers into the hundreds and loves every minute of it. “I feel like I’m doing what I’m supposed to be doing,” she says. “I enjoy creating beautiful environments for my clients and seeing their reactions when it’s done.” Over the years, Winstead has grown as a designer and as a business. “Once I moved out of my home, I had a small space on Airport Boulevard that worked well until we outgrew that as well. In 2002, we build the building that houses our current location, and the rest is history! As the design world has changed, so have I. I’ve evolved with the times and I do things a

little differently now than I used to.” Gone are the days of wallpaper and traditional design. Now, homeowners are looking for more modern designs that can easily be changed to suit their ever changing tastes. “Clients these days are looking for that modern approach that has become so popular. They want bold, bright colors and less of the traditional design appeal that has been popular for so many years.” The idea for the current location of Wen Designs came from an event that Winstead participated in several years ago, It was a fundraiser for Imagination Station known as the Designer House. Each designer was given a different room in the home to decorate in their own personal style. “We were given the master bedroom and bathroom,
and I feel like we really made it our own. We went with a traditional approach that I feel like everyone really enjoyed.” After participating in that fundraiser, Winstead had an idea. “I thought to myself: Wouldn’t it be a great idea if someone could walk in and see each room in the store decorated in a different way? So that’s what I did. I set out to create an environment that would showcase multiple styles of design, all in one location.” In the new location, you’ll find each room decorated in a different style of design. Today, the kitchen might be country chic, but tomorrow it could change to sleek and modern. The same goes for every room in the “house”. Not long after moving into the new location on Nash Street, calls started coming
in from clients looking to have their homes decorated for the holidays. Soon after, Winstead created her Deck the Halls Christmas service and now services about 16 clients each year. “Some of our clients have been with us since the beginning. We have learned over the years what it is they like, what they’re looking for, and how to make it all happen. In just one short day, yes ONE, Winstead and her team of elves can go in and completely decorate a home from start to finish, both inside and out. “We will pull everything from storage that needs to be placed, wrap and store everyday items that need to be tucked away until after the holidays, completely decorate the entire area, and clean up before we leave. We don’t want our clients to have to do a thing but enjoy it once we’re gone.” Talk about efficient! Winstead and her team of elves are currently busy decorating homes all over Wilson. They can use decorations you currently have, or they can bring in all new decorations if you prefer to go that route. From Christmas trees to mantles, to staircases, and more, Winstead and her team can decorate it all. Her current team
of elves includes herself as well as her husband, Don Winstead, Melody Jones and Christy Asbell. “I have a great team with me, and they all know our clients well. They are amazing at what they do, and I am lucky to have them on my team.” Some of the lines that Winstead carries in her store are Buyer’s Choice, Mark Winstead and Aromatique fragrances. Winstead has made it her mission to stock only the best for her clients. “I have learned over the years that you should never, ever jeopardize quality in any of the products you use. We will always stock high quality merchandise at low prices because we want to make sure we are giving our clients the quality they deserve at the prices they expect.” Winstead has this advice for anyone who is in the stages of decorating their home. “Wait until you find the perfect pieces for what you’re looking for. It might not happen as quickly as you think, but the wait will be worth it when you see the finished product. We have waited years in some cases to find the perfect piece for a client’s home. We won’t buy something that isn’t right just because we want to finish the job. We wait until that perfect
piece comes along, and when we see it, we just know.” In addition to her expanding interior decorating business, Winstead has also branched out into the world of fashion and accessories. The upstairs area of the store houses the Wen Girl Boutique, where you’ll find designer clothes, shoes, purses and accessories, all at affordable prices. “When we go to Market in Atlanta and other locations, we always stop by and see what’s new in fashion. I used to buy all my clothes there and people kept asking me where I got my clothes and how they could get them. I decided to create the Wen Girl Boutique two and a half years ago so I could share my fabulous fashion finds with my clients as well.” Just one trip into the store at 3713 Nash St. NW will leave you breathless. The beautiful products they carry are artfully arranged to show you just how you can incorporate them right into your home. A glance at the price tags will show you that yes, you actually CAN afford to pick up quite a bit while you’re there. Spoil yourself this holiday season and take a trip over to Wen Designs and Wen Girl Boutique. I promise you won’t be disappointed.

Accessories make the outfit By Donna Richards Let’s talk accessories! Accessories are an important part of pulling any outfit together. You can keep it simple with a dainty necklace and pearl earrings or you can go bold with a statement piece of jewelry. Always keep in mind too that you should dress and accessorize to reflect your own personal signature of style while maintaining comfort for the day or evening. Shoes, scarves, necklaces, earrings, rings, bracelets, shoes, clutches and handbags are all accessories so use them accordingly! Some outfits will need little accessorizing. For example, a boldly patterned dress will only need simple gold hoops or large pearl earrings. Add a bracelet of your liking and a bold ring and top it off with the perfect heels or wedge booties and your outfit is complete. With a bold pattern dress there is no need for a necklace. Another example: If you have a classic black dressy top and you want to pair it
with fitted jeans and a pair of black booties you would want to add a grey faux fur vest and a bold necklace in your favorite color such as red or hot pink or a pale plum color. For the classy dress look I would also suggest a long gold chain necklace with gold earrings. Scarves are a perfect accessory that will also help keep you warm this time of year. A simple olive green dress that hits just above your knee, brown riding boots, a multi colored blanket scarf and earrings are a fun way to pull together a comfy outfit; consider adding bracelets and a small clutch for a “just right” emphasis. With this outfit I would wear only simple hoops or small earrings keeping in mind that too many or overly strong accessories can also ruin your outfit. Keep it fun and appropriate for the occasion but do remember that over accessorizing can detract from the look you are trying to achieve. Being happy and comfortable are also important in pulling off any great outfit.

Tonya Sorenson I AM WILSON
Written by Lisa Boykin Batts Photographs by Theresa Scott & Anna Batts
Christmas decorating starts early for Tonya Sorenson. She and her sister, Carol Dunn, have been decking the halls at clients’ homes, mostly in the Raleigh and Cary area, since the second week in November. 26
WINTER 2015 | WILSONWOMAN.COM
Closer to home, she is spending quite a bit of time making wreaths and tree toppers at The Wreath Bar, located in the Rummage Warehouse on Barnes Street. Last year, Sorenson and Culbreth Spivey decided to collaborate. Spivey is owner of Culbreth’s Creations and the Rummage Warehouse. Using Culbreth’s wide selection of Christmas ribbons and decorations, Sorenson was able to make fanciful custom wreaths with festive ribbons, greenery, even an elf or two. “It’s a great collaboration,” she said. Sorenson, an interior designer, was very pleased with the response last year. “I felt very good with what I sold from there,” she said. “People seemed excited.” She hopes this season will be even bigger. By the first of November, she already had some custom orders. “I think it will definitely be a good year,” she said.
BUSY HOLIDAY SEASON In the midst of decorating for clients and customers, Sorenson said she must remember her own home. For years, she would concentrate on her decorating jobs and wait on decorating for herself. Between decorating jobs, teaching youth tap and working with a competitive tap team at Hunter’s Dance, and working with her church’s annual Community Nativity Celebration, there is little time to do anything else at the holidays. This is the sixth year Wilson’s Church of Jesus Christ of Latter Day Saints has hosted the Wilson Community Nativity Celebration. The first
year, there were around three dozen nativity scenes at the event. Last year there were more than 300, and Sorenson anticipates even more this year as more and more community members ask to participate. The project takes a lot of work, but Sorenson enjoys it. The free event is Dec. 10 and 11 from 5:30 to 8:30 p.m. and Dec. 12 from 3 to 8 p.m. Nightly musical performances are also planned. If you’d like to take in a nativity scene for this event, contact Tonya Sorenson at 252-230-7188. The church is located at 2615 Tilghman Road. Sorenson is also involved with one of Wilson’s largest holiday events, “The Grinch,” presented by Hunter’s Dance. Sorenson said it’s so much fun to be part of this annual event. The show opens with the rag doll dance, which Sorenson originally choreographed. It’s a favorite dance number, she said, and the girls looked forward to their turn being in that routine and wearing oversized doll dresses and green wigs. “It’s like a rite of passage for the older girls,” she said. Each year, Sorensen teaches the dance to the girls in a series of rehearsals and camps that start in August. This year’s production of “The Grinch” is Dec. 10-13 at Fike High School. After working on holiday jobs and projects much of the day — making things festive and elegant for someone else — Sorenson said it was upsetting to return to her own home with no tree or wreath or stockings hung by the chimney with care. Now she’s learned to start early at home and do a little bit at a time. She planned to start decorating upstairs first, about the same time her home decorating jobs started. But she says she won’t turn on the

Christmas lights until after Thanksgiving. Sorenson’s home decorations are similar from year to year, she said, because her family likes the tradition. She did make one addition last year, a flocked tree. “I tell myself I don’t need more, but I get it anyway,” she said laughing. Sorenson loves the combination of pink and red and uses it in the whimsical decor in her home, adding blue and green as accents. You will find several trees in the Sorensons’ home, which is nearly a century old. Sorenson uses a live tree on the side porch and decorates it with ornaments that have special meaning to her and her husband, John, as well as their four children. The ornaments reflect the family’s hobbies and activities from daughter Hollan’s cheerleading days to son Adam’s first marathon.

Last year’s flocked tree found a place of honor in the dining room. That tree was adorned with Radko hand-crafted glass ornaments and was a beautiful complement to the Sorensons’ dining room table. A tablecloth hand-crocheted by John’s great-grandmother covers the table. A colorful centerpiece sets the mood for a fun meal. Sorenson keeps the table set with holiday china throughout the season. “I love putting out all the stuff for the table,” she said. A custom-made, whimsical gingerbread house by Cathy Daniel has a place of honor on the buffet and carries out the color theme in the room. Sorenson uses elves, nutcrackers, holiday photos of her children, a nativity scene and any other decoration she likes throughout the home, adding a fun touch to “show our personality a little bit,” she said. For instance, several elves are
positioned to slide down the bannister. Her advice for anyone with a big decorating job is to start early so you don’t feel rushed. And use things you love. It’s a process, she said. Add items from one year to the next and build a collection. “Work around what you have.” If you’re looking for trends, Sorensen said the woodland theme appears to be quite popular this year for Christmas decorations. She decorated one at Culbreth’s Creations with all natural products and it’s been quite popular. The retro elf theme is remaining popular as well, she said. And how does she make those long colorful ribbons fall so perfectly on her trees? Drape the ribbon on first, she said, then add the decorations. And during it all, have fun. “I love making things look beautiful,” she said.
