SAve Money This Holiday Season By Chelsey B. Edens The cost of hosting a holiday dinner can easily spiral out of control. Turkeys, side dishes and desserts add up quickly. Holidays are stressful enough so don’t add to it by overspending on groceries! The solution to providing a fantastic Thanksgiving or Christmas dinner without breaking the bank is simple. Cut your grocery bills in half by using…wait for it… COUPONS. Your weekend newspaper is loaded with coupon inserts. The types of coupons available during the holiday season are for what you’re serving this time of year; gravy, pies, and those french fried onions for the ever present green bean casserole. Grocery store sales are based on the holiday season as well. Match your coupons with store sales to maximize your savings.
Some grocery stores even double your coupon’s face value. For example, save time and money. Cook boxed mashed potatoes rather than making them from scratch. Use a $.50 coupon for two boxes of mashed potatoes. If it doubles to $1.00 and they are on sale; (10 boxes for $10); you get two boxes for only $1.00. Since most boxes have two bags per box, you get 8-10 servings for only $1.00! Apply this type of savings to the rest of your grocery list and you can cut your bill in half. In addition, there are many free items you can get using coupons. The trick is to change your mindset and the way you shop. On Christmas Eve, Anthony and Teresa Pope will gather their families for a formal dinner. They’ll all sit around the dining room table set with Lenox Christmas china Teresa has collected for more than 20 years and enjoy a meal of grilled beef tenderloin, garlic mashed potatoes and aparagus. Anthony’s mother, Maude Pope, will read the story of Jesus’ birth from the Bible, and Teresa’s dad, Jerry Dixon, will say the blessing. After dinner and red velvet cake and pecan pie for dessert, they will

linger around the table and talk and enjoy English poppers filled with trinkets. “It’s just something that we do from the youngest to the oldest,” Teresa said. “It’s just part of our tradition.” Before the evening ends and the guests go home, someone will read “’Twas the Night Before Christmas.” A traditional Christmas celebration is always the goal for the Popes. So they fill their lovely home with trees and lights and nostalgic decorations that reflect the season. Christmas was a special time for both of them as children, and it continued into their adult years. Anthony
proposed to Teresa the day before Christmas Eve in 1995. That first year, he gave her a silver bell engraved with the date; he’s done the same thing every year since. They hang the bells on a 12-foot, flocked Christmas tree in their gourmet kitchen. Their goal each year is to create an environment where their children _ triplets Zach, Natalie and Noelle, who recently turned 15 _ are making holiday memories as well. “We just wanted our kids to love Christmas as much as we do,” Teresa said. Each year, Teresa brings out decorations from the year before, including
Holiday decorating takes on a whole new meaning for this Wilson resident and her family ornaments made by the children when they were younger and photographs taken for their annual Christmas cards and later framed for the live tree in the family’s comfortable den. Teresa said it’s hard not to add to her holiday collection each year. “If I see something that really strikes my fancy, I buy it,” she said. But mostly, it’s the same decorations in the same place each year. That’s part of the tradition. For instance, the large nativity set she gave her husband is always in the center of the dining room table. When they entertain throughout the holiday season, the nativity set is there, she said, reminding them all that it’s essential to what they are doing. “Our faith is central to our lives, so we want to make sure we remember the reason for Christmas,” she said.
Teresa’s decorating isn’t limited to the dining and family room. She tucks in lights and bows, candles and greenery in the kitchen, the bathroom and the large back porch as well. Teresa said she had a Christmas party on the decorated porch once and just asked people to dress warmly. The outdoor heater and fireplace helped guests stay warm as well. Another tradition is to host family and friends on the Sunday before Christmas, once the hustle and bustle of shopping and special events leading up to the nativity have ended. Many of those invited are friends from church, Teresa said. The Popes add another table to the dining room, and everyone sits down to eat in a less formal setting, talk for two to three hours and reflect on the past year. The event is relaxing, she
said, and has become part of their holiday tradition. “It’s a time to enjoy the last few days before Christmas.” Enjoying the holidays is what’s it’s all about, not just on days when there’s a party, but for weeknight meals served on special Christmas plates and Monday mornings when “White Christmas” is playing throughout the downstairs. “It’s real cozy in here,” Teresa said. “I love it when it’s cold, and the fireplace is going, and Christmas music plays continually, thanks to Pandora.” Their life with three teenagers is plenty busy, like everyone else’s, Teresa said. “But during the holidays we try to slow down a bit and savor family and Christmas and the reason why we have Christmas.” winter 2014 | wilsonwoman.com

It may be while planning Thanksgiving meals for my immediate family of 48 or shopping for the perfect Christmas gifts for my grandchildren. I have been at the YMCA for ten years and I have seen and experienced firsthand the healing power of exercise and relationships. Both of these are stressbusters . Harvest the calming benefits of moving and keep the unrealistic expectations of perfection away by putting on your tennis shoes, grabbing a friend and trying a fitness class or taking a walk. Let the joy of health and well-being replace the “Martha Stewart stress”.

Winter is a great time for skin procedures By Kristie Johnson Wondering what do during these winter months? Consider enhancing your skin care routine by adding medical treatments to your regimen. The winter season can be the perfect time for additional procedures for skin concerns such as age spots, sun damage, fine lines and wrinkles, and acne scarring. Although these advanced treatments are available all year long, the winter can be the best time to pursue these result-driven procedures. One such procedure is medical grade laser skin resurfacing, which uses controlled light and heat to create changes on and beneath the skin. The elimination of damaged cells, the improvement in skin texture, and the stimulation of collagen production are just a few of the benefits of medical laser treatments. exposure increases melanocyte activity. Ingredients 2 cups water 1/2 tsp. salt 1/2 cup uncooked quick grits 4 c shredded sharp cheddar cheese 8 eggs, beaten 1 c milk 1/2 tsp. dried thyme 1/8 tsp. garlic powder 1 lb. country sausage, cooked Instructions 1. Preheat oven to 350 degrees.

2. Bring water and salt to a boil in a large saucepan. 3. Stir in grits. Return to a boil, reduce heat, and cook four minutes, stirring occasionally. 4. Add cheese to cooked grits and stir until cheese is melted. 5. Combine eggs, milk, thyme, and garlic in a large bowl. Mix well. 6. Add cheese and grits mixture to egg mixture, then add sausage and stir well. 7. Pour into a casserole dish and cook at 350 for 50-55 minutes or until slightly brown around the edges and middle is set.
submitted by Joyce Peele Ingredients 2 cups sweet potato puree 1/2 tsp. cinnamon 3 eggs 1 c sugar 1 large can evaporated milk 1 box yellow cake mix 1 c. chopped pecans 2 sticks butter or margarine, melted
Icing 1 8 oz. package cream cheese, softened to room temperature 1 1/2 c. confectioners sugar 1/2 8 oz. container of whipped topping
Instructions 1. Combine sweet potato puree, cinnamon, eggs, sugar and evaporated milk well and pour into greased 9�x13� dish.
2. Sprinkle one box of dry yellow cake mix over mixture. 3. Sprinkle 1 cup chopped pecans on top of all ingredients. 4. Pour melted butter evenly over entire dish. 5. Bake at 325 degrees for 50-60 minutes or until golden brown. 6. Allow to cool. 7. Combine ingredients for icing and spread evenly over cooled cake. Refrigerate before serving.

submitted by Brittany O’Brien For Cupcakes 2 cups sugar 4 eggs 1 cup vegetable oil 2 cups all purpose flour 2 teaspoons baking soda OR 5 teaspoons of baking powder 2 teaspoons cinnamon 1 teaspoon vanilla extract 1/2 teaspoon salt 1 15 oz. can of pumpkin purée
Instructions Cream sugar and eggs together until light in color. Add the vegetable oil and continue mixing. In a separate bowl, combine the dry ingredients. Combine the dry ingredients with the wet while mixer is on low. Mix together and add pumpkin purée. Combine well and add vanilla extract. Preheat oven to 350 degrees and bake for about 25-30 minutes or until you can stick a toothpick in and it comes out clean. Let cool before icing.
For Icing 2 sticks unsalted butter 1 2 lb. bag of powdered sugar 4-6 tablespoons of pumpkin coffee creamer 2 teaspoons vanilla 1 1/2-2 tablespoons dark or light brown sugar Instructions Put butter in a mixer and cream until smooth. Slowly add the powdered sugar, alternating between that and the creamer. Beat until all ingredients are well combined. Add the brown sugar and vanilla. If the icing looks too dry, add a tad bit more creamer. Remember you can always put in, but you can’t take out! Enjoy your Pumpkin Creme Brûlée Cupcakes! You can even make them your own and put your own spin on them. The brown sugar for the icing is optional but provides an extra crunch in the icing. For extra decoration, melt some light brown sugar and drizzle it on top of the cupcakes.

The Fabulous Mrs. Claus A tradition that began more than 20 years ago lives on
By Jennifer Strickland For this issue, I had the pleasure of sitting down with a woman that has been a part of the Wilson Christmas scene for more than 20 years. Betty Jo Currie has played the role of Mrs. Claus at various locations throughout the community for many years. Her original appearance was back when her now grown children were in elementary school. “My husband Charlie had been asked to play Santa for a gathering at the school. I wanted to be involved as well so he suggested that I play the role of Mrs. Claus. It just kind of went from there”, she says. In addition to her role as Mrs. Claus, Betty Jo also played the role of Rudolph for 12 years at the Wilson Mall. “I was inside a festively decorated house where I controled Rudolph’s head and mouth. I was able to interact with the children by playing silly reindeer games and singing Christmas songs. Rudolph became as much a part of the mall as Santa as schools from the community and outside visited. This was a precious ministry to me.” Each year, the number of gatherings Santa and Mrs. Claus attended continued to grow. Eventually, Charlie was asked to play the role of Santa in the city Christmas parade. Of course, Mrs. Claus had to be by his side. Charlie continued to play the role of Santa in the parade and at other gatherings until his passing in February of 2011. “That was a

hard year for us as a family. The support and outpouring of love from the community was overwhelming and unforgettable.” After a short break from playing Mrs. Claus, Betty Jo reprised her role the following year and participated in a few small gatherings that she had been invited to attend. “It was hard to go back to it without Charlie, but being Mrs. Claus was just as important to me now as it was then.” When I asked her if she planned to continue the role of Mrs. Claus for many years to come, the tears in her eyes were obvious. “Playing this role has touched me in ways no one would understand. I have met so many wonderful people and have had the pleasure of having my life touched by so many of them. I want to continue to touch lives the way my life has been touched for over 20 years. Your life is like a tapestry and each person you meet along the way weaves a special thread into your life.” It’s entirely possible that the family
tradition of playing Santa will live on in this particular family as well. Betty Jo says there have been a couple family members that have expressed interest in bringing back that role. “My son has said he might want to do it someday and so has my grandson. We still have the suit hanging up in the closet so it’s ready whenever someone wants to step into it”. A firm believer in her faith, Betty Jo knew God had a plan for her. It was a year and a half after Charlie passed when an old friend called to reconnect after many years. It turns out, it was more than just an old friend. Dennis Currie was once a special part of Betty Jo’s life. The years may have taken them in different directions and on different paths, but they both believe they had a little help from above in their reunion. “God saw a need for the both of us. He saw the hurt and pain we were both feeling and it was as if God was giving us a new life, restored hope, and a new beginning.” Dennis’ wife had also recently passed away so he knew the pain and loneliness Betty Jo was feeling. The similarity of their situations allowed them to connect in a way that comforted both of them. An official courtship had begun. Now, they are happily married and have a variable Brady Bunch of kids between them! Add in all the grandchildren and you have the makings of a huge family gathering. The gathering this Christmas will be filled with extra joy as Betty Jo celebrates as a
two time cancer survivor, once in 1998 and again in 2013, 6 months after Dennis and Betty Jo married. “The spouses that have passed on are still a part of who we are. They have given us a special treasure in our children and a a lifetime of precious memories.” One thing is for sure. The love that is shared between the Curries can be described with just one word... magical.
