On page 13, there’s an inspiring story about a Windermere office that is all fun and games when it comes to raising money for the Windermere Foundation. This team loves to find creative ways to support their local community, and their fundraising success is proof that it works.

Pizza IS AS FUN TO MAKE AT HOME

as it is to eat out. Make it entirely from scratch or use a pre-made dough, but either way, have fun with toppings. With the proliferation of tools, including home pizza ovens, plus online recipes galore, making pizza at home for the family or for a group of friends can be extremely rewarding—and easy.

Lee Kindell began Seattle-based Moto Pizza in 2021, and his pizza quickly became legendary, with orders for a whole pie opening two months in advance. His style incorporates his Filipino heritage and Pacific Northwest-influenced flavors: “It is an expression of all my pizza making, the high-hydration pizzas of Rome, the heartiness of the Midwest, the grit of East Coast NYC style.”

With that background, it’s no surprise that Kindell loves and encourages experimentation for all home pizza makers.

The Crust

THERE’S NO NEED to be intimidated by the idea of making your own pizza dough. Recipes are easy to find, including from grain companies such as Oregonbased Bob’s Red Mill, or your favorite food blogger.

If you love a cookbook, The Elements of Pizza, from the founder of Portland’s Ken’s Artisan Pizza and Ken’s Artisan Bakery, Ken Forkish (now retired), is an excellent bible.

Kindell advises not overthinking it and using quality ingredients, such as high-protein flour, which will often be labeled as bread flour. (He recommends Bob’s Red Mill because it’s readily available in many grocery stores).

“Dough is best old school: flour, salt, yeast, water, oil.”

When baking, Kindell stresses patience. “People tend to rush the dough process and the heating process. Like pulling out cold dough, pressing it, topping it, and throwing it in the oven. Planning and making your dough a day, or even better, two days, before you bake, refrigerate

[it] covered, is one of the simple things you can do to greatly improve your pizza.” he says this boosts the bake, gluten structure, and flavor profile.

If your dough has been refrigerated, wait at least two hours before stretching it out, giving the dough a chance to come to room temperature and proof.

When you’re ready to cook, the chef says, “Get your oven hot.” For home ovens, this can be from 500 to 550 degrees; a baking stone or steel are helpful, but not required, tools. “Don’t throw it in right when your oven beeps. Give time for your steel or stone to hold the heat then turn it down to around 425F and put your pizza in.”

If you’re not into dough-making, go ahead and use store-bought dough. Just give it a little time, like you would with homemade: “Store-bought dough is fine. Remember, patience. Take it out, let it warm up, and proof it for at least a couple of hours.”

Pizza + Potables

NUMEROUS BEVERAGES pair well with pizza—Kindell loves wine and champagne; on the Ken’s Artisan Pizza menu, specialty cocktails range from a classic martini to an Aperol spritz and a Negroni.

However, you can have fun dialing your flavors in even further, particularly when it comes to wine. With pizza, it’s not just the topping flavors you have to consider, but the sauce underneath and how everything plays together. Overall, consider which flavors and aromas dominate each wine, and which foods they could be a tasty flavor match with.

Wine Folly, a Seattle-based wine blog, has a guide by founder Madeline Puckette on a few classic pizza styles and the wines to match, “It’s All About the Sauce: Pairing Wine with Pizza.” Here are a few highlights:

CHEESE: For a cheese pizza with classic red sauce, Puckette recommends GSM (grenache, syrah, or mourvedre) or

Montepulciano, a grape that is widely grown and indigenous to Italy, to work with the pizza’s acidity and intensity.

MEAT: With pepperoni, the strong and spicy flavor that comes from cayenne, garlic, and paprika needs a strong wine. Sangiovese, the most widely grown grape in Italy, is a good choice, as is cabernet franc. Sausage pizza is also intense, but instead with spices like anise and fennel. Wines with fruit-forward flavors, such as syrah/shiraz or pinotage work well.

VEGGIE: Your selection may depend a bit on your vegetable and sauce combinations. Typically, a lighter pizza with fresh veggies (think of the basil and tomatoes on a margherita pizza, or arugula and spinach) can call for whites with tart notes and “green” flavors, such as a sauvignon blanc, verdejo, or grüner veltliner. Rosé is also a good option; or for red drinkers, garnacha.

The Sauce

TOMATO SAUCE IS ALWAYS a crowd-pleaser, but it’s not the only one—you can use pesto, herbed olive oil, or come up with your own tasty blend. Ken’s Artisan Pizza uses a pistachio pesto for one of their pies, while Kindell has a yellow pepper sauce for Moto’s shrimp-topped pizza.

The Toppings

FROM MEAT TO ROASTED or raw veggies to seafood—think clams, crab, or smoked salmon— there are few pizza toppings that won’t work. And grabbing an idea or two from your favorite local pizzeria is often a sure thing. “Throw everything at the wall and break the rules,” says Kindell, “but be mindful about just throwing stuff on by asking yourself, ‘How does this taste together?’”

When considering how his pizzas will come together, he has an acronym: FATTT, which stands for flavor, appearance, taste, texture, and temperature. He suggests mixing cold ingredients (added after the baking process) with hot “for layers of interest for your tongue.”

Additional topping ideas: Pickled veggies—added before or after baking. It’s easy to do a quick pickling of all kinds of vegetables, including onions and peppers (there are loads of tips and recipes for this online). One of Kindell’s signature pizzas, the beef adobo, incorporates cabbage kimchi for a salty tangy crunch. Ken’s Artisan Pizza includes pickled shallots and pickled jalapenos among their toppings. Cheeses—mixing cheese varieties can be a treat. Try different types of mozzarella, fresher cheeses like ricotta, or tangy goat, blue, or feta to sprinkle into the mix.

Above all, Kindell advises any home pizza makers to enjoy the experience and the conviviality: “Have fun! Enjoy both the mistakes and the victories, can’t have great ’za without the two.”

Going Solar

How to decide whether harnessing the sun’s power is right for you.

Over the past decade, solar power has experienced an average annual growth rate of 24 percent—with no signs of stopping. Driven by a desire to help the planet and reduce their electricity bills, many homeowners are installing solar panels to capture the sun’s energy. If you’re considering doing the same, here are answers to some common questions.

HOW DOES SOLAR POWER WORK?

Solar panels, most often installed on roofs, capture and absorb energy from the sun. When the sunlight hits the panels, it generates an electric charge through a process known as the photovoltaic effect. The direct current (DC) electricity that’s produced is then transformed into alternate current (AC) electricity, which can be used to power electric devices.

I DON’T LIVE IN THE SUNNIEST PLACE. DOES THAT MATTER?

California leads the country in solar power for a reason—there are a lot of sunny days—but there are still benefits in areas with grayer skies. In Seattle, for example, a residential solar electric system installed in an unshaded area generates about 1,000 kilowatt-hours per year for each kilowatt installed. “Solar is still viable here because we’re at such a high latitude that we get long sunny days in the summer,” says Shari Weir, renewable energy program manager at Seattle City Light. “You can run up that balance of excess credits in the summertime and apply it to winter bills.”

WILL MY ROOF WORK?

“The best candidate for solar power would be a home with a south-facing mounting plane that’s unshaded,” Weir says. If you don’t have that, all is not lost. Roofs facing another direction may still work, and ground mounts are possible if you have

the space. You could also become part of a community solar garden—check with your utility provider to see if there’s a local project you can join.

IS GOING SOLAR EXPENSIVE?

Installing solar panels is a long-term investment, but the prices have dropped in recent years. Back in 2010, an average-sized residential system before any incentives cost about $40,000. Today, it’s roughly $25,000.

At the federal level, a 30 percent tax credit (expiring in 2035) is available for installing solar. There are often state and local programs you can also take advantage of. To calculate your return on investment, look at how much energy you’ve consumed over the past couple of years, then consult with a solar installer on how much a system would cost for your home. (Weir recommends getting three bids from solar installers.) Once you have that information, you can determine how many years the panels will take to pay for themselves.

“WALLPAPER BEHAVES THE WAY A GARDEN DOES: IMMERSIVE, TRANSPORTIVE, JOYFUL, AND expressing personality,” says Kate Blairstone, a designer for Portland-based Manolo Walls and a custom-wallpaper artist.

Accent walls can add artistic and personal flourish. Along those lines, they’re an excellent, low-commitment way to revitalize a room, without making overwhelming changes. Whether you want something bold or understated, here are some considerations for your project:

FIND YOUR WALL

An uninterrupted rectangle is ideal for an accent wall. Windows and doors can interrupt the visual impact of a pattern. For instance, the “headboard wall” in a bedroom might be a better choice than a kitchen wall with cabinets. For maximum effect, choose the wall that you first see when entering a room. Or choose a less obvious wall to be more subtle. Also consider how the wallpaper design will interrelate with the furniture, rug, or artwork. Be aware that wallpaper in direct sunlight might fade. Have an adventurous streak? Wallpaper a ceiling!

CHOOSE YOUR PAPER

There are tons of options for an array of budgets and styles.

PRINTED Digitally printed wallpaper comes in every imaginable design. It requires a water-soluble paste, which makes installation and removal easier, but isn’t practical for a kitchen or bathroom where water usage can easily unstick the paper. “Non-woven” printed wallpaper is a blend of natural and synthetic fibers and thrives in more high-traffic areas because it’s washable and abrasion-resistant—unlike luxe, 100 percent paper varieties.

VINYL Both budget-friendly and long-lasting, this type of thick wallpaper is ideal for bathrooms and kitchens. Bonus: vinyl wallpaper is scrubbable.

MYLAR AND FOIL Want a little bling? These metallic, shiny wallpapers deliver. But keep in mind they are tricky to install, more delicate, and show surface blemishes.

FLOCK Originating in the homes of 17th-century nobility, flock wallpaper features a raised pattern of soft velour. A more expensive option, it adds texture and sumptuousness to a room.

GRASSCLOTH Made with hand-woven natural plant fibers— such as sisal, seagrass, arrowroot, bamboo, and jute—grasscloth wallpaper can add a lot of textual interest without bright colors and patterns. Downsides include finicky installation, susceptibility to water, and visible seams between roll drops.

PROFESSIONAL INSTALLATION VS DIY

An expensive aspect of decorating with wallpaper is professional installation. To save on costs, people turn to peel-and-stick options. There are a wide variety of designs, and the quality has improved over the years. However, peel-and-stick might not last as long. Also, it’s known to occasionally take out chunks of drywall with removal. Wall decals are another budget-friendly choice and are becoming more sophisticated. They function essentially as stickers that embellish a wall with anything from geometric shapes and flowers to mountain ranges. Unless you’re super handy, difficult types of wallpaper—like mylar, flock, and grasscloth— are best left to professionals.

REPURPOSE LEFTOVER WALLPAPER

Have a little fun and get creative with those gorgeous scraps. Line the inside of drawers with an audacious pattern or spruce up the bottom of a plain wooden tray. Wallpaper a light switch cover to give a room a pop of color or pattern. Otherwise set the leftovers aside to use as particularly inspired gift wrapping.

WALLPAPER AS ART

“You can look at wallpaper in several ways: as a background element with a subtle pattern or as a piece of art which signals who you are,” says Blairstone, who is part of a niche high-end wallpaper design industry that elevates the craft to artistry. From silkscreen and digital printing to hand-painted paper and silk, designers will work closely with you to create the perfect accent wall.

For the Windermere Ballard office, the best way to raise money is by having a good time.

AT THE HEART OF EVERY WINDERMERE

Ballard fundraising event is a core principle: joy.

“Our motto is to raise money and have fun while doing it,” says broker Sara Medford, the Windermere Foundation rep for the Seattle neighborhood’s office.

Their biggest event is an annual themed bingo night in the fall. Last year’s Bingo Boogie celebrated the disco era; this year will focus on that beloved music genre from the late 1970s and early ’80s known as yacht rock. “We encourage people to dress up in costume, and we have music and decorations related to the theme,” Medford says. “People look forward to bingo every year.”

In 2019, as a joke, Medford donated a bingo prize that was a gnome hunting and wildlife watching party in her backyard. To her surprise, a dozen people signed up. After pandemic-related delays,

she was finally able to stage it this past June. “All 12 people showed up, and we had so much fun. I made grown adults hunt for plastic gnomes in my yard,” she recalls with a laugh.

In addition, Windermere Ballard hosts an annual poker tournament in the office garage, where the grand prize is the winner’s name displayed on a trophy. They also put together impromptu events, like a saltine cracker challenge where people had to try to eat six saltine crackers in 60 seconds sans water. The quirky event, held at a local bar, raised about $1,500.

The office typically donates to five to seven nonprofits a year, with a focus on organizations in the immediate community. Brokers vote on where they want their funds to go. Past recipients have included the Ballard NW Senior Center, which offers

programming to improve the physical and mental well-being of more than 4,000 seniors a year; the Ballard Boys & Girls Club, which has a mission to create culturally relevant, inclusive, and diverse experiences for youth; and the Ballard Food Bank, providing a grocery-style food bank, a no-cost café, home delivery, and a Weekend Food for Kids program.

Medford, who planned her first fundraising event in 2006, continues to love being involved with the Windermere Foundation. “What I’m most proud of with the foundation is that it’s primarily volunteer-run,” she says. “It’s such a powerful way to get a collective group of people together to do good stuff.” And, of course, have a little fun.

In the western United States, even during the cooler months of the year, you’re never far from enticing ways to play outdoors and pamper yourself indoors. Consider these three diverse examples: the blissful beaches of La Jolla, California, for strolling and snorkeling; the powdery slopes of Park City, Utah, for skiing and snowboarding; and the fertile Willamette Valley vineyards of McMinnville, Oregon, for wine tasting.

In addition to stunning natural scenery, these picturesque communities are easy to get to—they’re all near interstate highways and within an hour of a major airport. And they promise a bevy of alluring accommodations, superb restaurants, and colorful cultural attractions.

La Jolla

A perfect destination if you can’t quite decide whether you want an urban adventure or a small-town beach vacation, this cliffside jewel on the Pacific overlooks a gorgeous cove and is technically part of the city of San Diego. Its easygoing vibe, gallery- and cafe-lined streets, and sun-soaked sandy beaches create the sensation of being someplace far more remote than it is. It’s just a 20-minute drive over the coastal headlands to San Diego’s leafy and green Balboa Park, home to the world-famous San Diego Zoo (sandiegozoowildlifealliance. org) as well as some exceptional Spanish Colonial–style cultural draws, including the San Diego Museum of Art (sdmart.org), the Japanese Friendship Garden (niwa.org), and the Old Globe (theoldglobe.org) theater. La Jolla’s walkable downtown is packed with exceptional art galleries and dapper boutiques, especially along Prospect Street and Girard Avenue. A must-see is the Museum of Contemporary Art San Diego (mcasd.org), which reopened in 2022 following a spectacular $105 million renovation and expansion and hosts edgy and compelling world-class exhibits. Amid the fragrant eucalyptus groves and outdoor art installations of UC San Diego’s campus, the esteemed La Jolla Playhouse (lajollaplayhouse.org)—founded in 1947 by Gregory Peck, Dorothy McGuire, and Mel Ferrer—presents both current and classic plays and musicals, often featuring top stage and film actors. Also on campus, you can view and learn about little blue penguins, massive kelp forests, and formidable leopard sharks amid the 60 habitats at the outstanding Birch Aquarium at Scripps (aquarium.ucsd.edu). Along La Jolla’s seven miles of pristine beaches, catch some rays, keep an eye out for seals and sea lions, take surfing or scuba lessons, or paddle a kayak—popular spots include downtown’s sheltered and snorkeling-friendly La Jolla Cove and adjacent Shell Beach (which is great for winter tide pooling), and picturesque Windansea Beach, a famous surfing locale for generations. Open to the public and offering 36 holes set atop soaring oceanfront cliffs, Torrey Pines Golf Course (sandiego.gov/Torrey-pines) is one of the

hen you think of Park City (visitparkcity.com) in winter, two things may leap to mind: incredible skiing and the prestigious Sundance Film Festival (festival.sundance. org). Indeed, from around mid-November through midApril, this once rough-and-tumble Victorian-era mining town just 25 miles over the mountains from Salt Lake City offers day after day of perfect skiing and snowboarding conditions, and for 10 days in mid-January, Hollywood A-listers and auteurs descend on this urbane resort town for one of the world’s iconic cinematic showcases.
