But if you’re looking to go beyond blending fruit to making something that can fill you up while boosting energy levels and your immune system, or even helping with digestion while tasting delicious, pressing start on that blender can be intimidating. From whey protein and coconut cream to spirulina powder and yogurt, here’s how to up your smoothie game.

BRIGHT BASE

THE PERFECT SMOOTHIE begins with its base. For a little healthy fat, start with whole milk or almond milk. Add flavor with that fat by using coconut cream or coconut milk. Iced green tea or matcha will add an earthiness plus a little kick of caffeine. If you don’t have a lot of frozen fruit, start with one cup of liquid and a 1/4 cup of ice. Avoid using juice, which will amp up the sugar factor without giving much in return.

FRUITS OF YOUR LABOR

THE NEXT STEP IS TO PICK your fruit profile, mixing and matching as you go, ultimately aiming for one to two cups, with at least half being frozen. Most fruit is high in fiber, helping with digestive health and bringing lots of vitamin power to the glass. Bananas will help to thicken but also tend to dominate flavor profiles. Blackberries, raspberries, acai powder, and blueberries are all high in antioxidants. Mango will add body and sweetness while strawberries can bring a tart sweetness to the table. Not a banana fan? Swap it for juicy kiwi with its creamy center. Swap pear for vibrant pink dragon fruit or for a sweet/ tart punch, add passion fruit.

GREEN GARDEN

IF PACKING EVEN MORE vitamins, minerals, and fiber into that glass is your goal, don’t skip throwing in a cup of leafy greens to the drink. Spinach and lacinato kale with the ribs removed are going to add body while avocado will bring some added fat, a small hit of protein, and up the creamy factor.

TURN UP THE VOLUME

THROWING IN A COUPLE

tablespoons of peanut, sunflower, or almond butter for body and good fat seems like a no-brainer. Same with a tablespoon of oats or Greek yogurt. Take things to a more customized level by adding a scoop of spirulina — which can give smoothies a vibrant blue hue and amp up protein levels like whey powder. Collagen powder can boost skin hydration. Freshly grated ginger is good for immune boosting and combats nausea while maca powder can give a boost of iron. Flax seeds help with fiber and provide a slight nuttiness while soaked goji berries bring antioxidants and a tartness akin to cranberries.

SWEET STUFF

FRUIT BRINGS SWEETNESS to the table, but if you’re looking to further refine flavors, consider adding cacao powder for a hit of chocolate with antioxidants, honey, or bee pollen for an earthy sweetness (the latter is a complete protein), or date syrup for a richness akin to molasses. Finish things with a dash of cinnamon, nutmeg, or even a splash of vanilla extract.

Let It Rain

Take water conservation to new heights with simple ways to make your garden more sustainable.

RAINSCAPES ARE TRENDING ON PINTEREST.

But dig a bit deeper, and you’ll find that the idea has been around for thousands of years. The ancient Greeks, trendsetters for so many things we take for granted today, developed systems to divert, retain, and store rain and flood waters for community consumption or for agricultural and industrial use. Regardless of where you live in the American West, managing water is becoming a reality as we learn to adapt our lifestyles—including gardens and landscape design—to a dwindling water supply.

WHAT IS IT?

You could be excused for thinking rainscape is a type of showerhead. After all, it’s the same concept. Just as water is directed on a body during a shower, rainscaping captures and redirects water, keeping it as close to where it falls as possible. It’s as simple as adding downspouts above your garden beds or collecting water in containers (think barrels and buckets) in lieu of turning on the hose.

WHY IT’S TRENDY

It used to be that water could look after itself. Precipitation falling on the land would permeate the soil, slowly wending its way into streams and rivers. With development came pavement. Water was directed away from roads, parking lots, buildings, and even green spaces into sewage systems where it was cleaned. Climate change has altered that framework. Storms — fast and furious — bring intense bursts of wind and water that push everything aside, scraping the landscape of soil, nutrients, and even plant life.

Rainscapes can slow that trajectory, directing water with management and conservation in mind.

“In the West, there is nothing more precious than water…. especially rainwater,” says Faith Okuma, a Santa Fe-based landscape architect who has spent her more than 40-year career focused on water harvesting and water conservation. “Gathering and husbanding that precious resource in our gardens ties us to appreciating how limited and amazing it is. The abundance that can result in small rain gardens is truly a gift of nature.”

RAINSCAPING AROUND THE WEST

In regions where precipitation is plentiful, a rain garden is a method of rainscaping that adds an attractive element to any landscape—a shallow channel lined with decorative rocks or native plants slows runoff and effectively cleanses water as it infiltrates the soil. An additional bonus: pollinators and birds tend to populate these areas, increasing biodiversity in your garden.

In areas where moisture is a valuable resource, collecting, storing, and managing it can be an equally daunting task because—let’s face it—wasting water is a lot like wasting money. Directing water to where it’s needed saves time and money. A good place to start is to simply redirect your downspouts into a planter. Better yet, place a barrel or a bucket under any spot where water runs off an impervious surface. You can also contour your landscape to direct water to a rain garden, or actively store it in a water feature.

As for squeezing water out of an arid climate? That’s the million-dollar question Okuma has been pondering her entire life. “I grew up in the desert with a mother who kept asking—as she watched the metropolis of Phoenix explode—‘Where’s the water coming from?’ She is now 100 and still asking that question!”

Although rainscapes are naturally seasonal depending on precipitation, the benefits are abundant. Consider this statistic from the Arizona Cooperative Extension Service: For every inch of rain that falls, you can collect 600 gallons from a 1,000-square-foot roof, while a 4,500-square-foot lot will receive 2,800 gallons!

Trendy or not, you should always consult your state’s water law to determine if there are restrictions on rainwater collection. In the West, the laws of “first-come, first-serve” still pertain in areas where water rights dictate prior allocation. In Colorado, for example, residents can collect rainwater in two barrels with a combined capacity of 110 gallons for use only on the property where it was collected. Oregon allows homeowners to collect runoff from rooftop surfaces only, and in Utah, collectors registered with the Division of Natural Resources are subject to additional regulations.

“THE FIRST STEP TO A SUSTAINABLE KITCHEN is looking at your garbage,” says Aline Bloch, owner of Out of the Box Eco-Store in Issaquah, Washington, which sells environmentally responsible products and provides a mobile refill service. “If you replace single-use items with reusable ones, you’ll be on your way to low-waste living.” Here are some ways to get started:

NON-PLASTIC FOOD STORAGE

Replace plastic wrap with 1 Bee’s Wrap organic cotton cloth infused with beeswax, plant oil, and tree resin. Both durable and pliable, it can be used over and over. Stretch and seal silicone lids also reduce the need for plastic wrap. Being airtight, the lids keep food fresh and can go directly on half-cut produce. Instead of plastic zip storage bags, try W&P’s Porter sandwich bags. Pure silicone, these bags are dishwasher safe. Take 2 Lotus produce bags to the store to avoid using their plastic counterparts. As a bonus, these bags can hold up to 25 pounds, and their breathable mesh slows the ripening process.

REDUCE DISPOSABLES

Instead of using aluminum foil or parchment paper for baking, use a Silpat silicone mat

A favorite of professional chefs, these nonstick, reusable sheets are extremely durable and lauded for even baking and browning. If sparkling water is a household must, consider avoiding plastic bottles or aluminum cans and investing in a Drinkmate, which can carbonate water and other liquids in stainless steel bottles. MAKE IT YOURSELF

It’s easy to use ingredients you have on hand to make economical and earth-friendly kitchen cleansers. For an all-purpose surface cleaner, combine baking powder (two tablespoons), white vinegar (½ cup), lemon peel (to curb the vinegar smell), and 10 drops each of antimicrobial eucalyptus and tea tree essential oils. Alternatively, Bloch recommends simply mixing a cup of water with a teaspoon of eco-friendly dish soap. For a subtle scent, incorporate a couple of drops of essential oil. On top of avoiding products with harsh chemicals, DIY cleansers reduce single-use containers going into landfills; reuse old spray bottles or get glass ones from 5 Grove Collective

GIVING BACK TO THE COMMUNITY

Agents in Oregon’s southern Willamette Valley help strengthen the neighborhoods where they live and work.

WHEN WILDFIRES BLAZED ACROSS OREGON

in the summer of 2020, the agents of Windermere Real Estate/Lane County wanted to help. In 48 hours, they raised just under $15,000. Thanks to the Windermere Foundation, they were able to quickly get those funds disbursed so they could make an immediate impact.

“Our group is very proactive and generous, and the Windermere Foundation is a great way to have structure around that,” says Elliott Wood, owner and principal broker. “Sometimes logistics can get in the way of getting money to the right places and doing it the right way, but the Foundation makes it easy.”

While they’re ready to spring into action when a critical need arises, as with the wildfires, the more than 90 Windermere Real Estate/Lane County agents also give on a yearly basis. At their

annual meeting, they vote on the organizations they want to support—some in Eugene and some in Florence, Oregon—with the funds collected the previous year from each agent commission.

One group they often donate to is Food for Lane County, a nonprofit food bank. As part of Windermere’s Community Service Day, they volunteer annually at the food bank’s 2.5-acre GrassRoots Garden. “We get close to 100 people to come, and we absolutely transform that thing,” Wood says. “Most of the funds that we give go right back into that garden.”

In recent years, the agents have also provided financial assistance to Bags of Love, which provides necessities and comfort items to children who are in crisis; CASA of Lane County, offering court-appointed special advocates to neglected

and abused children; and Florence Food Share, a nonprofit food pantry.

In some cases, the agents have toured local nonprofits to get a first-hand look at the work they do. Last year, several visited Kids First, a children’s advocacy center for those who have been victims of, or witnesses to, crime. Windermere Real Estate/Lane County gave the organization $2,000, which helped bring in a translator who spoke fluent Spanish and English.

“When you give back to the organizations that help your community thrive, it lifts everyone up,” says Wood. “Having a foundation that helps facilitate that sets Windermere apart.”

After cutting inland along the Columbia River, make a detour along 52-mile Spirit Lake Highway to behold the devastation wrought by the May 1980 eruption of this still-formidable mountain.

Whidbey Island and Bellingham
