FROMTHEPUBLISHER Home for the HOLIDAYS! Recently I’ve been traveling a whole lot more than is usual for my lifestyle. So being home for the holidays sounds really wonderful to me. Yet for the first time in…well, let’s say forever…my whole family isn’t going to be together on Christmas Day. While that makes me incredibly sad, it also makes me grateful for all the holidays that this wasn’t true. It makes me think about others who can’t be home with their families, such as service personnel and those who have to work here at home on Christmas day to keep us all safe and healthy. I am so grateful for those who serve and want to thank not only those individuals, but their families who postpone the holidays so that they can be with their loved ones. I have nothing to complain about – that is clear! So I’m moving on to prepare for the holidays. I’ve already planned something different this year so that my focus is changed and the unexpected and new things fill my mind and heart with joy. What about your plans? Mrs.Claus WLSK: Thank you so much for taking the time to talk

WLSK: Are you a good cook? What do you like

Mrs. Claus (coyly): Oh, a time or two. It’s amazing the

WLSK: Wow. I’ll be sure to keep my eyes peeled in the future. Can you tell us how you and Santa met?

Mrs. Claus: You know, I’ve heard so many interesting

theories on this one. Katharine Lee Bates (she wrote ‘America the Beautiful” you know) suggested we met and wed in fairyland before fleeing on our wedding day. Then there’s the adorable story in “Santa Claus is Coming to Town” about me as a schoolteacher named Jessica who fell in love with Nicholas as he was being pursued by the Burgermeister…

WLSK: Isn’t that the clay animation movie that came out in the 70’s? I loved that movie growing up. Did they get the story right?

Mrs. Claus: Oh, heavens no. I love that movie, too, but

the truth is far less dramatic. I met Mr. Claus in the village in which we grew up and we fell in love while we were still youngsters. I was taken in by his charm, optimism and the overwhelming sense of joy he brings to everyone who meets him.

WLSK: Sounds really romantic! How long have you two lovebirds been married?

Mrs. Claus: A girl has got to have some secrets. I would

never understand why people think that we’re exactly alike. I may spend my days helping him with our mission to bring joy to the children of this planet, but I am my own woman. I’m partial to toffee, myself. I also love a good bowl of Cheetos.

WLSK: My mistake. I was wrong for assuming. What else don’t we know about you?

Mrs. Claus: I love a good mystery novel, I am just as

obsessed with “This is Us” as most people and I play a mean game of racquetball.

WLSK: Fascinating. I had no idea you were so up to date on the current culture. I like it. Care to tell us what your favorite Christmas Carol is?

Mrs. Claus (laughing): I know this is my cue to say

Mourn the tragedies, absolutely, but then look for the good that’s being done and find a way to join in. Make a difference one small act of kindness and love at a time.

How Much Money Do I Need to

RETIRE?

ear after year, this is the number one question I am asked. Of course, there is no single answer for everyone. Just as we

have income and expenses unique to our households during our working years, we will have our own income and expense needs, when we retire. The closer you are to retirement, the more likely your expenses will not change significantly. If you have several years before retirement, you will be affected by inflation, changes in family dynamics, debt balances, and career changes. However, there are some basic strategies that can help you to plan for your future needs. The goal is to have enough guaranteed, predictable income to cover your basic cost of living expenses. This includes utilities, phones, TV and internet, insurances, food, gas, etc. These are the expenses you cannot do without. The more you can cover with guaranteed income, the longer your other assets will last. Ideally, your retirement assets would then be available to pay for such things as travel, home remodeling and repairs, and autos and recreation vehicles. And let’s not forget about medical expenses. By having basic needs covered with social security, pensions, and annuity payments, you may not have to deplete your assets every month to cover the shortage. You can start planning for your income needs several years before you retire, by analyzing your current budget, and determining how much of it you will still need in retirement.

Determine your social security benefits by going to ssa.gov to view your benefit options. You will see your benefits at age 62, your full retirement age, and age 70. This will give you a starting point. Compare these figures to your Retirement Expenses Goal. If you are still going to be short, perhaps you may be eligible for some pension payments to add to the social security. he benefits of exercise are too numerous to count. And while short-term goals

like weight loss, fitting into that wedding dress or muscle definition are all totally valid reasons to get to the gym, they don’t compare to the significant longterm benefits of a regular workout routine. Age-related decline in muscle and bone mass lead to a frail frame, poor posture and alignment issues, making it harder to lead an independent life as an older adult. Luckily, the solution is as simple as this: Just move.

Protect Your Feet

“If you look at senior’s feet, they tend to start curving inward,” Brown explained. “You even see this in a lot of younger people.” To keep the feet young and spry, ready to hold you and take you on any adventure, simply sit with legs extended and stretch out your toes. “In yoga, it’s called ‘active feet’,” she said. “I tell my older clients to stretch the feet and toes every day.”

Move

“Move everyday,” Brown advised. “Move everything. Stretch the joints. If you’re just moving and stretching and thinking of all the different ways you can, that is so important.” Best movement you can get in every day? A simple walk. Strap on your comfy shoes and explore your neighborhood.

“Keep that posture,” Brown said. “This keeps your core strong because you have to use the back and ab muscles to hold you up. Many of the chairs older adults sit in are squishy, so they slouch. It’s as easy as sitting up straight.”

Bacon Better Makes Everything

Bacon-Wrapped Figs WITH MAPLE & GOAT CHEESE THYME DIP 12 Servings 6 strips bacon, halved crosswise 12 figs, stemmed 12 pecan pieces, toasted 3 tablespoons maple syrup 1/8 to 1/4 teaspoon ground cayenne 1/4 cup soft goat cheese 1/4 cup cream cheese 3 tablespoons milk 2 teaspoons fresh thyme leaves finely chopped OR 3/4 teaspoon dried thyme leaves

Preheat oven to 425 F. Place four layers of paper towels on microwave-safe plate. Top with bacon slices. Cover with two more layers of paper towels. Microwave on high 1 to 2 minutes to render fat from bacon but not crisp. While bacon cools, slice each fig twice, starting at stem end and cutting three-quarters of way to bottom. Stuff each fig with a pecan piece. Wrap a half strip of bacon around each fig and secure with toothpick. Place on foil-lined baking sheet. Bake 10 minutes. Turn. Return to oven for 5 minutes or until bacon is sizzling and begins to crisp. In small bowl, combine syrup and cayenne pepper. Brush mixture over appetizers. For dip, combine all dip ingredients in small bowl. Cover and chill until serving time. Serve appetizers warm with dip.

Bacon Baklava

20 Servings

1 pound sliced bacon, cut crosswise into 1/4-inch strips 1 1/4 cups butter, (2 1/2 sticks) 1 2/3 cups hazelnuts, chopped 2/3 cup walnuts, chopped 40 9x14-inch sheets phyllo dough, thawed 1 1/2 cups Nutella chocolate hazelnut spread 3/4 cup cocoa nibs 1 1/4 cups water 1/4 cup light corn syrup In a large skillet over medium heat, cook the bacon, stirring occasionally, until crisped, about 15 minutes. Transfer to a strainer set over a bowl, separating the cooked bacon from the bacon fat. Set both aside. While the bacon is cooking, preheat the oven to 350 F. Arrange the hazelnuts and walnuts on a rimmed baking sheet and bake until toasted and fragrant, about 10 minutes. Set aside to cool While the bacon is cooking, in a small saucepan over medium heat, melt the butter. Set aside. Set aside 1/2 cup of the bacon. Brush another large, rimmed baking sheet with butter. Top with a sheet of phyllo and brush the phyllo with butter. Repeat, using 20 sheets of phyllo and about half of the butter. Spread about 2/3 of the Nutella on top, then sprinkle with the toasted nuts, cocoa nibs, and remaining bacon. Top with the remaining Nutella and set aside. Cover a work surface with a 12x16-inch piece of plastic wrap and brush it with butter. Top with a sheet of phyllo and brush the phyllo with butter. Repeat, using the remaining 20 sheets of phyllo and butter. Pierce the phyllo stack all over with a fork, then use the plastic wrap to help lift the pierced phyllo stack off the work surface, placing the stack on top of the Nutella. Bake the baklava until golden brown, 30 to 35 minutes. Meanwhile, in a medium saucepan over medium heat, combine the honey, water, corn syrup and bacon fat and bring to a boil. Set aside. When the baklava comes out of the oven, slowly and evenly pour the honey mixture over the top. Set aside for several hours to let the syrup soak in. Cut into 20 pieces and serve garnished with the remaining bacon.

Peanut Butter Bacon Cookies 48 Servings 1 pound bacon 2 1/2 cups flour, unbleached 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1 teaspoon salt 8 tablespoons butter, softened 1 cup brown sugar, packed 1 cup sugar 1 cup peanut butter, smooth (not natural) 2 large eggs 1 tablespoon vanilla extract 1 1/2 cups salted peanuts, finely ground Turbinado sugar Preheat the oven to 375 F. Arrange the bacon on jelly roll pans and bake for about 20-30 minutes, dipping each piece halfway through cooking. When all the fat has been rendered and the bacon is very crispy, drain the strips on paper towels. Reduce the oven temperature to 350 F. Pour the rendered grease into a metal bowl and chill it in the refrigerator (or freezer) until cool and solidified ed. Stir the grease occasionally to speed the cooling process. Combine the flour, baking soda, baking powder and salt in a mixing bowl and stir until well combined. Chop the bacon or crumble it by hand into small pieces, about 1/4-inch squares. Using an electric stand mixer beat the butter until creamy. Mix in 8 tablespoons of the cool bacon fat. Add the sugars and beat until creamy, about 3 or 4 minutes. Scrape down the sides of the bowl with a rubber spatula. Beat in the peanut butter

until thoroughly combined. Add the eggs, one at a time, and then the vanilla. Scrape down the sides of the bowl again. On low speed, mix in the dry ingredients. Stir in the ground peanuts and bacon until mixed. Form the dough into golf ball-sized rounds and place them on a sheet pan, spaced about two inches apart. Dip a fork in water and press the tines into the surface of each piece of dough two times, to slightly flatten the cookie and to form a crisscross pattern. Sprinkle the cookies with a generous amount of turbinado sugar.

Bake the cookies, two sheet pans at a time, for 10-12 minutes, rotating the pans midway through baking. The outer edges of the cookies should only just begin to turn golden while the center of the cookie will still look a bit pale. Let the cookies cool for 2-3 minutes on the sheet pan before transferring them to a wire rack to cool completely.

Prioritizing time to connect with your partner ensures that your romantic relationship doesn’t get lost in the holiday shuffle, and oh, what a season for love! Heed the tips below to strengthen your bond and forge a deeper connection with your partner amidst the holiday magic.

Show Interests in Their Interests

Take time to get to know your partners hobbies, and you may be surprised to find you also like these same things! What a remarkable moment to find shared interest with someone you have pledged to love in sickness and in health. Alternatively, you may have to do what we like to call “Taking one for the team.” Perhaps you won’t enjoy your significant other’s favorite past time as much as they do, but you will get to know your partner better and seeing them light up with excitement as they share their passions with you will be enough to make your heart soar.

Make a Mixed Tape

Fun with Fondue: Your New Dinner Party Go-To

F

or a fun meal with friends, nothing hits the spot like fondue. It’s communal, laid-

back and makes for a totally unique dining experience. First of all, diners get to choose their favorite dippers. Secondly, you, as the host, get to spend more time with your guests rather than toil in the kitchen. Lastly, since everyone will be bent over a pot to make sure their piece of bread gets enough cheese, it guarantees lively conversation. What’s more, with fondue people get to choose their food, to a certain extent. With all dietary programs that exist today, serving fondue just makes it easier to please everyone. It’s literally a melting pot of possible aromas and flavors.

There are many different types of fondue: cheese, oil or broth. Then, of course, there’s dessert fondue: warm, delicious chocolate, for example, where marshmallows and fruit are the quintessential dippers.

The word “fondue” comes from the French word fondre, which means “to melt.” Most people believe Swiss farm families created the dish to make use of their leftover bread and cheese during winter months. Fast forward to 1930, when the Swiss Cheese Union (Yes, there’s an official union for cheese. Where can we sign up?) declared it as the country’s national dish.

MEET THE DIPPERS

Don’t even bother dipping pre-sliced white bread: it will fall apart before it reaches your mouth. What works best is bread that is firm and dry, but not stale. Try a chewy French or Italian loaf that can withstand the heat of the fondue and the thickness of the cheese. Don’t forget to cut it into bitesize cubes! For more variety, try artisanal dippers like summer sausage, prosciutto & other premium cured meats. You can also dip pickles, salami, vegetables, apples or potatoes.

Although it may seem like common sense, it needs to be said: Never eat right off the fondue fork! It’s a cooking tool, not a dining tool. Even though fondue is communal eating, you don’t want to contaminate the mix. In traditional Swiss culture, losing your bread in the pot is considered bad form.

Another old school fondue tradition is that if a woman’s dipper falls into the pot, she has to kiss the man on her left. If a man drops his dipper, some say he has to buy a round of drinks for the table. Others say he has to chug a full glass of wine or take a shot. So be careful with those dippers unless you want a fondue party full of intoxicated people kissing each other!

Curry Sauce 1/2 cup mayonnaise 2 to 3 tablespoons curry powder 2 to 3 tablespoons 2% milk 1/2 teaspoon hot pepper sauce Mustard Sauce 1/4 cup mayonnaise 1/4 cup Dijon mustard 1 teaspoon hot pepper sauce 1 garlic clove, minced Onion-Horseradish Sauce 1/4 cup finely chopped onion 1/4 cup mayonnaise 1 tablespoon prepared horseradish 2 to 3 teaspoons water 1/4 teaspoon hot pepper sauce Fondue 1 pound beef tenderloin, cut into 3/4inch cubes 3 to 4 cups canola oil In three separate bowls, combine the curry sauce, mustard sauce and onion-horseradish sauce ingredients. Pat meat dry with paper towels. Heat oil in a fondue pot to 375°F. Use fondue forks to cook meat in oil until it reaches desired doneness. Serve with sauces.

Maria Brennan OWNER OF VICTORIAN BAKERY

M

aria Brennan has been turning out delicious baked goods since her youth in her hometown of Dublin, Ireland, where she was privileged to be taught the art of baking both at home and in school. She met her husband, John (a former Navy brat and Navy man himself) in Kuwait and was intrigued enough by his offer to make her sourdough bread that she agreed to go out with him. Though that promised loaf has yet to materialize, his other charms were more than enough to convince Maria to marry him and eventually follow him to Kalamazoo for his job. Here, they’ve built a life, a family and a business of which they are both extremely proud. Maria and John and their two sons, Conor and Emmet, live happily in the beautiful Stuart District of Kalamazoo. When Maria began to bring baked goods into the boys’ school to thank the teachers and staff, she soon began to be inundated with requests for scones and cakes. She began creating those items in the basement of her Victorian home (incidentally built by an Irishman in 1859) and soon had enough business to make the move to 116. W. Crosstown Parkway in 2010. The bakery is committed

to using local ingredients as much as possible and is a Bread Baker’s Guild of America member. Maria was diagnosed with Ovarian Cancer in May of this year and started chemotherapy in July. She can’t speak highly enough of the team at the West Michigan Cancer Center for their help during the process. She expresses her thanks for the staff’s care and wicked sense of humor with baked goods when she can. She is also grateful to her Oncologist, Dr. Benjamin Mize, and his staff for their compassionate and professional care. Maria is passionate about the importance of every woman taking the time to see her doctor for check-ups and screenings, no matter how busy life seems. Early detection is so important and can make all the difference. Maria’s team at the bakery has been an incredible support for her during her cancer journey, stepping up to the plate to run the business after her surgery. Their dedication allowed Maria to focus on her recovery, a fact for which she is extremely grateful. She knows that, with a loving family, caring medical team and dedicated staff on her side, she is equipped to face anything that comes her way.

What to Expect When You Aren’t Expecting BY JENNY TANIS

F

or most, December is a month filled with love, joy, hope and excitement.

However, for the 1 in 8 families in the US who struggle with infertility, December can be excruciating. Think about it: The month revolves around kids, from toy commercials on TV, to kiddos lining up in every mall to sit on Santa’s lap. For those trying to conceive, the month of December can feel like one giant neon light reminding them that they are still not pregnant. Perhaps you have been walking through infertility yourself, or maybe you now realize you could do more to make the holidays easier for the people in your circle; either way, everyone journeys through life with their own silent stories. These experiences do not disappear with a fresh blanket of snow or the buzz of the holiday season. Enter December with intention, knowing how to better care for yourself and those in your life as you all navigate this season.

Be Reasonable

You may not be in the “holiday spirit.” That is OK. Create space for yourself that allows you to experience your emotions and feelings fully. Let go of unrealistic or unmanageable expectations for yourself.

Set Boundaries

Help Out

Be ready to answer inevitable questions. Rather than holding your breath and hoping Aunt Sally won’t ask when you are going to fill those empty bedrooms, spend time thinking about how you are going to respond to the hard questions. Being prepared and practicing your response will allow you to be present and enjoy your holiday celebrations.

Understand

As the invitations flood in, look at your calendar and decide what is manageable for you. Set a limit to how many parties you attend and how long you stay. Attend adult-only parties. Set aside alone time or time to be with just your partner. You do not have to do it all, and you owe no one an explanation.

Shop Local

This time of year, malls are filled with Santa, elves, and kid-geared advertisements. Take this opportunity to avoid the chaos and find small, local shops to do your holiday shopping.

Refrain

If a person doesn't broach the subject himself or herself, avoid asking childless friends and family members when they will have children. Even people you think you know best may be experiencing silent struggles.

Picking out clothing and toys for other children can be an unwelcome reminder of infertility struggles. If you know of people who are experiencing infertility, offer to go shopping for the kiddos they love. At the very least, offer to accompany them and lend support (or ice cream) as needed. Encourage healthy boundaries and self-care by understanding when people in your life say, “No” to an invitation. Rather than saying, “We wish you could come” or expressing disappointment, instead respond with a gift card for a date night or a card of encouragement.

Be Present

Emotional reactions to infertility can sneak up on you when you least expect them. Allow anger, hurt, sadness, disappointment or fear to attend your holiday gatherings this year by accepting people for exactly who they are and how they feel.
