Whether they make a daily chore a bit easier or add a touch of fun into our lives, the world of phone applications continues to surprise and delight. When it comes to home improvement, it is no different. We can all use a little help, and technology has the answers. Well, at least some of them. So grab your smartphone and follow along for the best interior design apps.

Houzz

For those home design fans out there, if you’re not familiar with the website Houzz.com, let me introduce you to your new best friend. It is an incredibly well designed, user-friendly site featuring hundreds of thousands of high resolution photos of all things home. By allowing you to search according to style, room or keywords such as “concrete countertops” or “walnut flooring,” the process for searching inspiration is made painless. Favorite photos can be saved into personal “ideabooks” and shared. Houzz also features search applications to find local area professionals to help with your project. The app gives the same access the website does, right at your fingertips. If modern design is your bag, check out the Dwell app as well. Similar to Houzz, but created by the same publishers at Dwell Magazine, it offers design ideas, video and text in addition to photo inspiration.

Homestyler Interior Design by Autodesk

Whether your project involves minimal rearrangement or a complete overhaul, this application invites you to become the designer. The trickiest part of remodeling or furniture placement is often being able to visualize the outcome while making decisions. This app allows you to take a photo of a room, scale it and drop in furniture, fixtures and accessories. With a swipe of a finger, try different paint colors on the walls. In addition to the 3D modeling magic other features include inspiration photos, tips, trends and articles.

Handy Man DIY

For the low price of $1.99, hire your own personal contractor in a phone. This feature packed home improvement planner assists in home renovation by providing the information needed to complete your project. Enter room measurements and let Handy Man do the math on how much trim, paint or flooring is necessary. The app offers prebuilt material lists for common household projects or you can build your own, including entering price information to estimate project cost. Video tutorials are a helpful bonus.

Snap a photo of any color inspiration and instantly receive its match from Benjamin Moore’s Color Capture, which has more than 3,300 paint colors. Share and save custom color combinations or browse their color collections and product catalog. Sherwin Williams offers a very similar app, Sherwin Williams Color Snap, matching colors to their line of paint.

iHandy Level

Don’t have a real level handy when you need one? Pull out your smart phone and use the iHandy Level app. This nifty little application acts just like the real deal by installing a level sensor that allows you to accurately hang pictures and artwork or figure out the correct roof pitch by placing the phone on the surface that needs to be taken into account. There are scores of other design apps, some costing more than others depending on their complexity, but these will give a good start for those home design projects. Extend the Trend

What’s Old Is New Again and Again

L

ove it or loath it, chevron has staying power. Long before there was Vogue the bold V shaped pattern was used in ancient designs including pottery and stone carvings. Chevron beads were made in Italy in the 15th century. The design is prominent in Native American beadwork and pottery. You’ve seen it in your great aunt’s colorful knitted afghans and Charlie Brown started sporting the zigzag design on his shirt in the late 50s. A few years ago the attention getting pattern exploded onto skirts, shirts, floors, walls, pillows, office accessories, fingernails and the ArtPrize poster to much dismay and delight. If you love zigzags, the good news is, the chevron craze continues into 2014. Look for fabulous new designs, tighter zigzags, colorful patterns and striking contrasts infused with a single splash of color. If zigzags make you queasy, there’s bad news. The onslaught of chevron that began in 2010 will continue to invade your senses. Then again, if Charlie Brown was fond of the chevron, it can’t be all that bad.

The Kitchen

Command Center

That old saying “the kitchen is the heart of the home” still holds true, but today’s kitchens also serve as command central for many families. In most homes, the kitchen is not only where we cook and eat, but where we pay bills, open the mail, leave messages, answer the phone and keep the family schedules and calendar. Even if you’re lucky enough to have a home office, chances are your kitchen counters are still home to a whole lot of paper. In a few simple steps you can clear off your counters and create a well-organized kitchen command center. Sorting Begin by sorting all the paperwork you have lying around the kitchen—bills, catalogs, magazines, permission slips, appointment cards, etc. Recycle or throw away things you no longer want or need and sort the rest into piles. For example, bills in one pile, appointments in another, kids’ papers in another. Any important documents such as birth certificates, passports or mortgage papers should be placed in a labeled box and put in another room.

homework and/or a file for each family member. Store the files in a vertical or horizontal file holder, whichever works best for your space. Hang the family calendar and schedule on the inside (or outside) of the cabinet above your command post.

Location Next, choose your location. If possible locate your command center away from the area most used for food prep. A little bit of counter space may be enough, but if you can clear a small cupboard or drawer as well, it will work even better. Once you decide on a spot, remove all the “kitchen” items from the area to make room for the command center.

Using the Command Center Remember to flip through your mail as you’re walking into the house and toss unwanted magazines and catalogs into the recycling bin. Open the rest of the mail at the command post and put everything in its proper file (or toss it) before it can clutter up your kitchen.

Supplies and Set Up Hang a dry erase, magnetic or cork board above the counter to post messages or, alternatively, place a notepad and pen on the counter. Place extra pens, pencils, a pair of scissors, a stapler, paperclips, stamps etc. in an office caddy (use one you have or find one at a store that carries office supplies).

It’s important to get the whole family to use your new command center for messages and notes. If you find they aren’t, you may need to tweak your system a bit to better fit your family’s needs. Still don’t like the look of paperwork in your kitchen (even when neatly corralled)? Simply pick up the caddy and the file holder and hide them away when guests are coming!

Label individual colorful file folders or an accordion file in the way that worksbest for you. For example, you could label each compartment for bills, receipts, notes,

LEAN MUSCLE by Kimberly Olson

I

f you are asked to think of muscle, you will probably imagine a buff male model or a bulky wrestler. We often associate muscular physiques to body builders, models, athletes and males. On the contrary, we have to be aware that those people are not the only ones who need to build and maintain muscle. Lean muscle is essential for every individual regardless of gender, status or occupation. I know most of you do not want to build large muscles, but having muscle doesn’t necessarily mean looking bulky. You can still be slim while keeping your body well toned. Many of us are conscious of our health and often focus on losing and maintaining weight. For instance, when a person is overweight, the usual goal is to lose weight, but what exactly does losing weight mean? Weight loss may be due to lost water, body fat or even muscle. As a personal trainer, I’ve had hundreds of clients come to me with an increased percentage of body fat due to losing so much lean muscle from dieting. Losing fat while building lean muscle is what should be focused on; having lean muscle is not just for appearance’s sake. Sure it can make you look good and feel sexy, but it definitely offers a lot more than that. It does wonders for our body, which has significant effect on our overall health and well-being. Here are some of the benefits of having lean muscle: Good physique and increased strength. Lean muscle makes a person look better, as it can enhance the natural curve or shape of the body and allows clothes to fit better. Increase in muscle mass also provides more strength and stamina. This keeps an individual strong in order to perform daily activities and enhance productivity. Weight and body fat control. Body fat can never be converted to muscle and vice versa. Nonetheless, lean muscle can hamper the deposition of fats in body caused by excessive calorie intake. Lean muscle is metabolically active, and even at rest, it burns more calories than body fat. Calories are burned efficiently, making it easier to lose weight and even body

fat. Building and maintaining lean muscle is in fact one of the best ways to achieve long term fat loss and weight maintenance. Prevention of diseases. The role of lean muscle in the prevention of certain diseases is related to its contributory effect in lowering body fat. Lean muscle can be helpful in combating obesity, which is a risk factor for several diseases such as heart problems and diabetes. An overweight person can build lean muscle to burn fat and calories more efficiently. This may lead to eventual fat and weight loss, and lower the risk of developing diseases associated to obesity. In case of diabetes, lower body fat positively affects insulin sensitivity. A person who has more muscle than fat responds better to insulin. Likewise, muscle plays a significant role in glucose metabolism. It maintains normal concentrations by absorbing glucose from the blood. Moreover, muscle supports the bones and helps maintain strength and density. Having enough muscle mass and function can actually help prevent osteoporosis. Better response to injury and stress. Our muscles also help us respond and recover better from stress or injury that causes muscle protein breakdown. For aging adults, lean muscle provides protection from injury especially in the hip bones, spine and joints, and eases the pain of certain diseases such as osteoporosis and rheumatoid arthritis. Now that you know the importance of lean muscle, you can move on to the next step. In order to build and maintain muscle, you need proper diet and exercise, as usual. I recommend that you consult with a nutritionist for a customized meal plan and a personal trainer for an appropriate workout program.

An electronic thermostat which can be operated remotely outside of the home and gets to know your family’s unique heating and cooling preferences, can help increase your home’s overall efficiency. Conversely, other high-tech gadgets, such as an umbrella dryer, may not be as practical for everyone. Be selective in what you choose to bring into your home and focus on investing in tools/appliances that will benefit the whole family to help keep your space from feeling too cluttered or messy.

Quinoa Vegetable Salad Makes 4 to 6 servings

- 1 bag of quinoa - Your favorite seasonal vegetables (mushrooms, bell peppers, onions, and broccoli) - Olive tapenade or a sauce or salad dressing that you like — Italian works well - 1 bunch of kale

Boil water over high heat. The bag of quinoa lists how much water to use per cup. Two cups of quinoa is sufficient. Once the water is boiling, put the quinoa in it, cover it, and lower the heat to low-medium. Let it simmer for 20-30 minutes, or until the quinoa is soft, stirring occasionally. While the quinoa cooks, chop up the vegetables and sauté them in a separate pan with 1 tablespoon of oil. When the quinoa has about 5 to 7 minutes left, add the kale to the pan to steam it. When it’s done, put the quinoa and kale in a large bowl. Add the vegetables and olive tapenade and stir. You now have a salad that’s delicious either hot or cold and filled with protein and nutrients.

Spaghetti Squash with Marinara Sauce and Bell Peppers

Alternatively, if you don’t feel like cooking, head out to Gaia House, Bartertown, Marie Catrib’s, or Freshii for some hearty vegan and vegetarian dishes. Favorites include veggie fajitas, Mediterranean salads and platters, and veggie burgers. Your body will thank you for it later, both at the doctor’s office and in the mirror.

Makes 4 to 6 servings 1 medium-sized spaghetti squash 1 jar of red sauce 1 red bell pepper 1 green bell pepper

Set oven to 375 F. Cut the spaghetti squash in half. Gut the inside of it like you would with a pumpkin. You may drizzle it with olive oil if you’d like, but it will cook fine without it. Put it in the oven for 30-40 minutes. While it cooks, cut the bell peppers into slices and sauté them over medium heat with 1/2 tablespoon of olive oil. Once they are tender, add the sauce and cover the pan. Lower the heat to low-medium and let the sauce warm up. You can test if the spaghetti squash has finished cooking by poking at the outside of it with a fork. When it’s done, you will be able to break the skin easily. Let it cool for 5 minutes before pulling out the inside of each half. The inside will be the consistency of angel hair pasta. Put the squash in a bowl and pour the sauce and peppers over it for a healthy alternative to pasta.

1. Tell Us About Your Family: I am the third of four generations to live in Plainwell (and attend Plainwell High school) – on my dad’s side. I am a single mother with two young adult children – Mollie (21) and Caleb (17). 2. Tell us about your career! I’ve been a writer all my life and have been in the PR business since I was in college. I started working for the West Michigan Tourist Association in 1997 and was hooked from the first day. How had I lived nearly 30 years of my life without knowing all these great things about Michigan? There was so much to absorb and I just couldn’t get enough. I began traveling to all corners of the state, exploring and becoming acquainted with my home state. In August, 2004, I took a leap of faith and started my own public and media relations consulting business called “Promote Michigan”. And, I do exactly that, just about 24/7. I am a professional marketer, promoter, writer and broadcaster. Essentially, I get paid to PLAY in MICHIGAN…to eat, drink and travel. 3. Who Are Your Role Models? I have two major role models…my dad (a local broadcaster for more than 50 years) and Kenny Zelnis (my high school journalism teacher). These two men always encouraged me in my various modes of communication and inspired me to do what I love for a living. 4. What Is Your Favorite Part Of Your Career? I love everything about my job – because it doesn’t feel like a “job”. It’s about the people, the places, and the stories. Every day is different and full of opportunity. There are days when I’m running non-stop from 6am until 10pm, and then there are others where I’m

still in my PJs at three in the afternoon – even though I’ve been working for hours. I love sharing what I learn about Michigan with anyone and everyone who will listen. 5. Describe Your “Perfect” Day Off: I’m a sucker for romantic chick flicks. That’s actually my perfect “day off” – not having to worry about deadlines, emails, chores or anything. I just lounge around, watch TV and nap. That’s how I recharge from my excessively busy schedule. 6. Which Cause Is Closest To Your Heart? Breast Cancer has affected multiple members of my family and I even had a scare a few years ago that put me on high alert. I help with a fundraiser called Experience Pink which raises awareness and money for the Susan G. Komen Foundation of West Michigan. 7. What Would You Really Like Our Readers To Know? My maternal grandmother was one of the happiest people I knew. Even when battling cancer, knee surgery and dementia, she always had a smile on her face. She was happy for each day – thankful for what she had. I try to live that way as well. Life is too short to be unhappy. Figure out what really makes you happy, and then find a way to make money at it. LIVING ON A BUDGET Does it seem like you’re never able to get ahead? Do you ever wonder where your money goes each month? If so, you should establish a budget to help you track your spending habits and help you reach your financial goals. Regular reviews will keep you on track You’ll need to review your budget regularly and make changes when necessary. But keep in mind that you don’t have to keep track of every penny that you spend. In fact, the less record keeping you have to do, the more likely you are to stick to it. Above all, be flexible. Any budget that is too rigid is likely to fail. So be prepared for the unexpected (e.g., untimely home or auto repairs).

Put your goals in writing Before setting up a budget, you should determine your financial goals. Start by making a list of your short-term goals (e.g., get out of debt, family trip) and your long-term goals (e.g., college education, retirement). You have to agree on how important is it for you to achieve this goal, and figure out how much you will need to save. With a clear picture of your goals, you can work toward establishing a budget that can help you reach them.

List your monthly income sources and expenses To develop a budget that is appropriate for your lifestyle, you’ll need to identify your current monthly income and expenses. You can do this on paper, or you can use one of the many software programs available for a minimal price. Start with your income. In addition to your regular salary and wages, be sure to include all types of income, such as dividends, interest, and child support. Next, list all of your expenses. To determine the choices in your spending, it helps to divide them into two categories: fixed expenses (e.g., housing, food, clothing, transportation) and discretionary expenses (e.g., entertainment, vacations, hobbies). You’ll also want to make sure that you have identified any variable or occasional expenses, such as gifts, car maintenance, home repair, and so on. To make sure

that you’re not forgetting anything, it may help to look through canceled checks, credit card bills, and other receipts from the past year. Finally, as you list your expenses, it is important to remember your financial goals. Whenever possible, treat your goals as expenses and contribute toward them regularly.

Balance your budget Once you’ve added up all of your income and expenses, compare the two totals. To get ahead, you should be spending less than you earn. If this is the case, you’re on the right track, and you need to look at how well you use your extra income. If you find yourself spending more than you earn, you’ll need to make some adjustments. Look at your expenses closely and cut down on your discretionary spending. And remember, if you do find yourself coming up short, don’t worry! All it will take is some determination and a little self-discipline, and you’ll eventually get it right.

How to stick to your budget 1. Find a budgeting system that fits your needs (e.g., write it down, software) 2. Involve the entire family: Agree to meet regularly to check your progress 3. Make budgeting a part of your daily routine 4. Start your new budget at a time when it will be easy to follow and stick with the plan (e.g., the beginning of the year/ month) 5. Distinguish between expenses that are “wants” and expenses that are “needs” 6. Avoid using credit cards to pay for everyday expenses.

W

hen it comes to entertaining people with good food, no one does it with more style than New Orleans. With its incredible heritage, this city has an equally incredible eclectic take on food and fun. Many have put their stamp on the culture and cuisine of this unique American city. No wonder everyone loves to celebrate Mardi Gras; it’s a part of each one of us. I love cooking New Orleans style food; the smells, working with fresh ingredients, the chopping and the peeling, the camaraderie of good friends in the kitchen, and the ultimate act of sitting down and enjoying a fantastic moment. At my house, we celebrate each year with an annual New Orleans Style party, complete with beads, flocks of flamingoes and plenty of great food. There’s always big, icy buckets full of brew, more buckets of shrimp and crawfish, Zydeco music playing and a large container filled with Planter’s Punch on the table. And, feathered boas! Not sure which year those started showing up, but they have become tradition for the ladies. Start your own New Orleans Style party tradition. To help you along, here’s a few of our favorites that are a ‘must’ at every soire.

Shrimp Clemenceau

Serves about 4 Ingredients 3 cup canola oil 2 large Idaho potatoes, peeled and cut into small dice (About 3 c.) 2 teaspoons olive oil 1/2 cup chopped yellow onion 1 teaspoon salt 1/2 teaspoon freshly ground black pepper 1 pound medium size shrimp, peeled and deveined 1/8 teaspoon cayenne 6 ounces boiled ham, cut into small dice 1/2 cup fresh sweet baby green peas (can use frozen) 1 teaspoon chopped garlic 2 tablespoons unsalted butter Method In a heavy, deep pot or an electric deep-fryer, heat the vegetable oil to 360 degrees. Add the potatoes, in batches, and fry until golden brown, 6 - 8 minutes. Remove with a slotted spoon and drain on paper towels. In a large nonstick skillet over medium-high heat, heat the olive oil. Add the onion and season with the ¼ t. of the salt, and ¼ t. of the black pepper. Cook for 2 minutes. Season the shrimp with ¼ t. of the salt and the cayenne and add to the skillet. Cook, stirring for 2 minutes. Add the ham, green peas, garlic and the potatoes. Add the remaining ½ t. of salt and ¼ t. black cracked pepper. Cook for 3 minutes. Add the butter and stir until it melts. To be truly traditional, drizzle some hollandaise sauce over the top of each portion.

Planter’s Punch Makes about 16 servings Ingredients 1 fifth dark rum 1 6-ounce can frozen orange juice concentrate 1 6-ounce can frozen pink lemonade concentrate 3 tablespoons fresh lemon juice 3 tablespoons grenadine 4 cups of water Method In a large container, combine all the ingredients and mix them up until everything is dissolved. Refrigerate until you are ready to serve it. It’s potent so be forewarned!

Pralines

Ingredients 1 1/2 cups toasted pecans 1 1/2 cups white sugar 3/8 cup butter 3/4 cup brown sugar 1/2 cup milk 1 vanilla bean Method Line a baking sheet with aluminum foil. In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, and milk. Split the vanilla bean in half and scrap all the seeds into the pecan mixture. Heat to between 234 and 240 degrees, or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. When it reaches this consistency, remove from the heat. Drop by spoonfuls onto prepared baking sheet. Let cool completely.

he key to making a home uniquely special to the people who share the space is ensuring that the decor tells a story. A set of cream sofas, beige pillows, pale khaki curtains and a large wooden coffee table may create a safe, neutral palette, but it’s highly unlikely that it reflects who you are. There’s an App for That

A

beep, a ring, or that buzz in your pocket, your phone is begging for your attention and if you are anything like the other 145 million Americans who have a smartphone, you will shift your attention to it. In fact, according to Comscore.com, we check our phones on average 100 times a day and the ubiquity of smartphones had us shell out over 5 billion dollars in 2013 to upgrade to the latest “it” device. You could be an Android user or an iPhone user and still find yourself thinking that your phone should do more than check email, text, post status updates on Facebook, Instagram photos, and occasionally do some heavy lifting. Don’t worry; there’s an app for that. According to Apple’s own statistics, they surpassed 1 million apps in their store and 60 billion total downloads of apps in October 2013, which was nearly three months after the Google Play store hit the same mind-numbing number. With over 2 million apps in two different stores, what are the must have apps you need now? With spring break around the corner, you need your beach body and an app that will help get you there: Map My Fitness. This is a great exercise app that can track your runs using the phone’s GPS, track your intake of food, log workouts, meet friends in the area doing the same routines, and you can upgrade to the MVP version to get coaching along the way. It also scores high because it pairs with the newer trend of wearable workout devices such as the Nike Fuel Band, Jawbone UP + UP 24, and the Fitbit. Map My Fitness will talk to all of these devices, thus why it is one of my must haves on my phone. Travelling for spring break? There are two apps you should not leave home without. If you love food and the adventure of trying new places, Foodspotting is the app for you. Using the GPS on your device, it will locate where you are in the world and provide venues based on the type of

by Eric O’Brien food you are interested in. Results include user generated reviews to help you weed out the over and under rated diners, drive-ins and dives that appear in search results. If you are travelling overseas, try the winner of “app of the year 2013,” Duolingo, a free app (with in-app upgrades) that helps you learn a new language using mini games. This process called gamification, helps you learn along the way with a clever and crisp design. You can learn Spanish, German, French, Italian, and Portuguese. Log in easily with your Facebook account, as the app tracks your progress so you can share with your friends. Finally, if you’re someone who does any sort of group or teamwork on the job, no doubt you have used Google Drive or Dropbox, but there is one app any professional who lives on their phone simply should not over look: Evernote. In Evernote you can take notes on the phone, take photos of notes you handwrite, upload memos or documents from your work computer and they will live on one app in one place – everywhere you are. The most resent upgrade was a series of Moleskine journals that are specifically designed to work with the camera of your phone and the structure of Evernote to create a digital home for all of those ideas. Within the app, you can send the notes to co-workers, set reminders, and even add audio attachments. As far as productivity goes, Evernote is my must have. Apps, like your music library, are very subjective, so this is meant only to be a primer on some areas in which your phone could help make your life better. What apps are you using? This tech-curious mind would love to know.

Check out some other handy smartphone applications to simplify the complication in your life: Frequently lock yourself out of your house? Try Lockitron, which enables you to control your house security by the click of a smartphone. If you’re frequently downtown, download Parkmobile, an application that allows you to pay at parking meters directly from your phone. No more bulky change! Stay safe with iBreath, a breath-test device that attaches to your iPhone or iPod and tells you your blood-alcohol content level on the spot. For the traveler, use Trakdot, an application that allows you to keep track of your gear, no matter where in the world you are. The device is placed in your luggage and comes with tracking notifications in case it gets lost. If your job requires plenty of networking, try using CardMunch to organize business cards of people you meet. A photo of the card will create a listing in a digital address book and connect you with that person on LinkedIn.

Tastes from the Kitchen - Taphouse Caramel Pretzel Bread Pudding 6 pretzel buns (preferably fresh, hamburger style buns) 1/2 cup sugar 8 egg yolks 1 quart milk 1/2 quart half and half 1/2 tablespoon vanilla 6 oz prepared caramel sauce Cut pretzel bread into inch cubes. Place egg yolks into a large bowl. Scald milk, half and half, and vanilla. Combine sugar with yolks and half of the caramel sauce. Whisk the milk mixture into the yolks. Pour slowly as you temper the egg yolk and be careful not to scramble the eggs. Let mixture cool slightly and pour over the pretzel bread. Let soak for 15-20 minutes or as long as 2 hours. Put mixture into a 9X13 pan and cover with remainder of caramel sauce. Wrap with foil and bake at 350 degrees for about 25 minutes. Bread should appear “dry” and most liquid absorbed. Remove foil and bake uncovered another five minutes. Let cool slightly and serve with vanilla ice cream.

Beers are sourced from just about everywhere, including breweries around the state of Michigan and 200-year-old Belgian monasteries. Both locations even offer unfiltered, unpasteurized ale from a hand-pull cask. Taphouse Executive Chef, Aaron Smith, has worked in fine dining both in Chicago, Illinois and around southwest Michigan for years. He attended Kendall College in Chicago from 19992001, and even owned his own restaurant in Mendon, Michigan with his wife and parents. Aaron was originally hired as the chef for the hospitality arm of the Millennium Restaurant Group during a contract project at Heritage Community of Kalamazoo, and was then brought on as Executive Chef for both the Central City and Centre Street Taphouse locations. “I have trained and worked at all stations [in the kitchen] but prefer to work on sauté,” said Aaron. “I feel it is more of a ‘finesse’ style of cooking, and think it takes more focus than other stations. Our menu is very well-rounded and has some good variety.” Not interested in beer? Both Taphouse restaurants are

also home to twenty varieties of on-tap and bottled wines and a selection of whiskeys served to please your taste buds. Both restaurants are home to a variety of offerings, including separate Whiskey, Dessert, Raw Bar, Pizza, Dinner, Dinner & A Show, and Double Tap menus, as well as a Beer Bottle list. This month’s featured recipe is Pretzel Bread Pudding, and it is Chef Aaron’s concoction. “It is a recipe that I came up with to put on the menu when we opened the Centre Street Tap House. It is a great combination of sweet and salty with some richness to round it out.” Made with pretzel bread soaked in eggs, cream, and sugar, the kitchen staff adds on a healthy coating of caramel sauce before the sweet treat goes into the oven. Before it’s served, the Pretzel Bread Pudding is topped with a scoop of vanilla ice cream, another drizzle of caramel sauce, and a sprinkling of large-flake sea salt—all in accordance with Chef Aaron’s vision for the dessert dish. “My work motto is ‘Do it nice or do it twice,’” said Aaron. “I try to instill professional work quality in the staff and give them tools to be successful at the Taphouse and in future restaurants. We all take a lot of pride in the products we turn out, and we really hope the customers can see and taste that.”

As a wine importer I spend over 80% of my time educating about wine. Much of this is hands on.. with personal appearances across the USA and internationally. This is obviously a relatively slow method of reaching “wine enthusiasts”, so I have recently partnered with Google in developing a national and international wine app that will reach millions. SkandisWineApp.com is an interactive guide to cool, hidden and unique WINERIES in the world around you. It is intriguing, inspiring, and a serious tool for learning more about wine and will, of course, be incredibly useful in promoting wineries so that travelers can find them. Unlike me (I need to sleep sometimes) the app is interactive and available 24 hours a day, 365 days a year! It will (of course) feature and promote Michigan wineries, just in time for the upcoming Pure Michigan Governor’s Tourism Conference to be held March 9-11, 2014. This international virtual 3D Wine Tour is a cool, new technology that will be embedded in Google Field Trip along with other trend-setting publications like Food Network, Zagat, and Eater – all of which point out the best places to eat and drink! Google Field Trip launched in 80 countries and 30 languages in 2013 and is quickly becoming the leading guide to fascinating things in the world around you. Field Trip runs in the background on your phone. When you get close to something interesting – in this case a nearby winery - it pops up a card on your smart phone with details about the winery near you. No click is required. If you have a headset or bluetooth connected, it can even read the info to you.

Then it further provides walking or driving directions directly to the winery in question. Information available about the winery includes – • GPS data points that will notify travelers that they are near a winery, populate a map and provide turn by turn directions to get there (walking or driving.) • Whether it’s open to public and if so, what are the hours of operation? If not, the location of a nearby store/restaurant where one can purchase that winery’s product. • Where to park. • A paragraph regarding the historical significance of winery. • Two to three intriguing paragraphs about the winery – why you just must stop in to visit them. While trends such as these are not necessarily disappearing, we can expect to see several new ingredients, food philosophies, and preparation methods joining the ranks of these already popular items. With such a large percentage of the population discovering food allergies, chefs are focusing on offering menu items free from many of the “hot” allergens like gluten, soy and dairy. While most consumers expect accommodation at a restaurant if requested, many establishments are now getting ahead of the problem, offering delicious items on the regular menu that are considered safe for most. Upscale cuisine is continuing to change as well. The trend of fancy comfort food has exploded onto the scene with no signs of stopping. Many fine-dining establishments have begun to serve menu items you might expect to find at your local diner, but with an upscale twist. Crowd pleasers like fried chicken, braised stews, and fancied up macaroni and cheese create that “something for everyone” feeling in even the nicest of restaurants. In terms of international cuisine, Mexican looks to be in the spotlight for 2014. Mexican food is expected to evolve into a fancier version for a variety of the already adored cuisine. This really means that chefs are working on serving real, traditional Mexican, not just burritos and tacos. Due to this trend, more Mexican-born and trained chefs are expected to open restaurants in the US. While organic ingredients are not going anywhere, the focus is transitioning more toward local ingredients. With big-name grocery stores now offering USDA organic meats and produce, consumers are becoming more and

more interested in procuring food directly from the source. In 2014, farm-to table cooking and shopping at the farmer’s market looks like it will be more popular than ever for chefs as well as for everyday cooking.

Mexican Seared Mahi with Cilantro-Mango Salsa Makes 2 servings 2 1/4 1/4 1/4 1/2 1/4 2 2 2 2

mahi filets, about 5-6 ounces teaspoon chili powder teaspoon cumin teaspoon nutmeg cup fresh mango, cubed cup red cabbage, thinly sliced tablespoons jalapeno, minced tablespoons red onion, minced tablespoons cilantro, chopped Juice of 1 lime tablespoons canola or safflower oil Salt and pepper to taste

Season the mahi filets with the chili powder, cumin, nutmeg, and a pinch of salt and pepper. Heat the oil in a skillet until it’s very hot. Add the filets to the pan, flesh side down, and cook until golden brown. Flip and cook the other side. Transfer the fish to a lined baking sheet and bake it at 375º F for 6 to 10 minutes, or until cooked through (depending on the thickness of the fish). In a bowl, combine the remaining ingredients. Taste the salsa to make sure the seasoning is correct. Serve the fish topped with the mango salsa.

Allergen-free Chocolate Chunk Cookies 1 cup gluten free flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 teaspoon cinnamon 1/2 cup sugar 1/2 cup brown sugar 1 egg 1 mashed ripe banana 1/2 teaspoon vanilla 1 1/2 cups gluten free oats 1/2 cup dairy free, soy free dark chocolate chunks Cream the banana and sugars until well combined. Add the egg and vanilla and mix. In a separate bowl, add the flour, baking powder, baking soda, salt, and cinnamon. Add dry ingredients to wet in 2 separate batched, mixing well between each. Add the oats and chocolate and mix by hand until just combined. Scoop 1 tablespoon cookies onto a lined cookie sheet. Bake at 350º F for 10 minutes, until golden on the bottom and edges and soft in the center.

eing a parent is the only job in the world that you work twenty-four hour days, seven days a week, with no vacation, breaks, or required training. When I tasked myself with finding the right educational materials for my child, I didn’t know what resources I had in my backyard. Well, not literally my backyard but close. I recently “bumped” into a very nice Golden Retriever named Charlie. Anyone who knows me knows that I greet every pet I meet (as long as its owner says it’s okay). I happened to adore this sweet pup; little did I know it was Charlie from Charlie & Company.

n recent years, research into animal rights violations and animal treatment in the meat industry has caused many people to give up consuming meat altogether. In conversation, when someone admits to being vegan or vegetarian, that person is met with a series of questions: how do you get your protein? Do you miss meat? Why did you decide to cut it out? Although the lifestyle may seem extreme, becoming a vegan can boost one’s energy as well as lessen one’s risk for heart disease, high cholesterol levels, cancer, and other illnesses. Animal-based foods are the only types of food that contain cholesterol, and our bodies actually create all of the cholesterol that we need. As a result, avoiding meat can help control or lower one’s cholesterol. Further, since animal-based food is high in saturated fat, by cutting it out you are likely to consume less fat. Of course, you do have to be careful that you don’t replace meat with more carbohydrates and sugar. If done right, though, eating vegan can also help prevent obesity and diabetes.

Replacing animal products with plant foods is also beneficial to the environment. According to medical guru Dr. David L. Katz, MD, eating plants, rather than feeding plants to animals and then eating the

animals, makes much more efficient use of land and water and lessens pollution. You can educate yourself and motivate yourself to change your diet by watching documentaries such

as Food, Inc. This detailed, investigative movie highlights the toxic living conditions of most farm animals as well as the amount of antibiotics used and the lack of sanitation during the butchering process. If you decide to give the vegan diet a try, here are some foods you’ll want to have stocked: quinoa and soybeans — which are complete proteins —avocado, chickpeas, kale, bell peppers, broccoli, onions, fruit, and tofu.
