club NEWS Dear Woodcrest Members, Summer is here and there are a lot of great things happening here at the club! The entire Woodcrest Team is excited and looking forward to a fantastic fun-filled year of golf, pool, dining and other great activities, undoubtedly making this a fantastic year for everyone. I would like to welcome all of our new and returning members to Woodcrest, and I am happy to report that our membership family continues to grow. Over the winter and into the spring, we have been very busy on the golf course with our bunker renovation project. As most of you may have seen, the greens bunkers on holes 1, 8, 11, and 14 have been completely renovated with drainage, fresh sand and sod. We also removed several trees behind the 9th green and added a new greens bunker as our last project before summer. In addition to the bunkers, you may have noticed lots of pruning and elevating of tree limbs throughout the course. This will certainly help playability and the aesthetics of the entire golf course. Our greens aerification went well and the greens have recovered 100 percent and are ready for a great golfing season. Lastly, the 19th hole was opened in early May and ready for play, which includes a new practice green, short-game fairway and bunker. These improvements will dramatically enhance the overall practice facilities here at the club. I ask that each and every one of you take special care of our course as you enjoy playing your round, which includes repairing ball-marks, divots, raking bunkers and following the golf cart rules. With the season in full swing, it is a great time to visit our fully stocked golf shop and discuss with Jason Howard, our Director of Golf, and his team how they may be of service to you and ways to improve your game. For those of you with young children, don’t forget we have Operation 36, Kids Camp and private lessons custom tailored for young adults as well as aspiring golfers. Lastly, don’t forget to inquire with the golf shop about our new Trackman Simulator. I am happy to report the pool is open every day until Labor Day with a comfortable water temperature of 81 degrees. It has been great seeing everyone enjoying themselves and I look forward to a spectacular year at the pool. As some of you know, we purchased 128 new chaise lounge chairs to replace the old ones. This will go a long way in enhancing the pool facility and ensuring ample seating for everyone. The pool is open daily from 11:00 am until 8:00 pm through Labor Day weekend. As always, George Jordan, our Director of Food and Beverage, along with his Event Sales and Culinary Team are always eager to assist you in helping to plan and execute your special event from start to finish. Be sure to reach out to George and his team to ensure your event is an extraordinary and memorable one! Dear Woodcrest Members, Summer is here, the sun is shining, temperatures are rising—and golfing conditions could not be more ideal. With the 2019 Golf Season upon us, it’s a good time to take a moment and refresh on some key points that will make everyone’s experience at Woodcrest the best it can be. Thank you for your understanding.

Tee Time Policy With tee times at a premium, members are required to book a maximum of one tee time per player. If you are playing with multiple groups, you must make sure that other members in your group book the other tee time(s). This will help make sure that all members have a fair chance at securing their spot on the tee sheet for the day. Pace of Play Policy The Woodcrest Pace of Play Policy is 4 hours and twenty minutes for 18 holes, including tournaments. We all know how easy it can be to feel so focused that you lose sight of pace, so to ensure fair conditions for everyone, if any players find themselves out of position, one of the professional golf staff members will be going around to request a pick up in the pace so players can get back into position. If it’s necessary to ask multiple times, players will be required to pick up and move to the next hole. Golf Communication Board New for 2019 will be our Golf Communication Board outside the Golf Shop and Bar 1929. On this board will be all the information you need in regards to tournament sign ups, results, and flyers for events. New Staff Addition Many of you have been in the Golf Shop recently and have had the chance to meet Alex Forte. Alex comes to us most recently from Ramblewood Country Club, where he served as Golf Shop Associate. We welcome Alex to the Woodcrest family and if he hasn’t yet had a chance to introduce himself, please stop by the golf shop on your next visit. Dress Code Reminders Proper Golf Attire Members, family members and guests must be properly attired at all times while using the golf course and practice facilities. Warm-ups, jeans, cargo shorts and pants, cut-offs, tank tops, tee shirts, sweatshirts, swimming attire, and tennis attire are NOT permitted. All shirts must have collars and sleeves. All shorts must be appropriate length. Proper golf attire is required on all days and at all times on the golf course, at the driving range and at the short-game practice areas (including the practice greens). The dress code applies to all guests and children. Athletic shoes (including sneakers) are required on the golf course, at the driving range and at the short-game practice areas (including the practice greens). Metal spikes are not permitted anywhere on the premises of WCC. The Golf Committee has instructed the professional staff to strictly enforce the dress code and refuse an improperly attired golfer (Member or guest) the right to play or utilize the practice areas. Men: Proper attire is a golf shirt and long pants or Bermuda length shorts. Golf shirts must have a collar and must be tucked in. Caps are to be worn brim forward. Cargo shorts & pant, denim fabrics, and tennis and swim attire are not permitted. Women: Proper attire is a golf shirt with slacks, golf shorts, skirts, skorts and/or capris. Golf shirts may be with or without sleeves and with or without a collar, with the exception of "racer-back" golf shirts, which must have a collar. Caps are to be worn brim forward. Halter tops, track suits, cargo pants, tank tops, denim fabrics, tennis, and swim attire are not permitted. Please contact the Golf Shop if you have any questions or concerns. Thank you. Bar 1929: No tank tops, undershirts or ripped jeans.

Summer is under way at Woodcrest Country Club! I would like to thank all the Members who joined us for all of our Member events over the last few months. We had a fantastic turnout for our Mother’s Day Brunch, A Night with Sinatra and Comedy Night. I am still receiving rave reviews on the food and service from all of these events. Our Friday Night Live continues all summer long with great live performances and amazing food and specialty drinks. We have well over fifteen craft beers on tap for our craft beer lovers. These nights are extremely popular and it helps us to better serve you if we are prepared, so please make your reservations early. Look for these weekday specials in Bar 1929 for the months of July, August, and September: Taco & Tequila Tuesdays with great tacos and specialty margaritas. Wine Down Wednesdays with creative pasta dishes and a nice selection of wines at reduced pricing. Burgers and Brews Thursdays, great burgers and craft beers. Sunday Brunch with a great pitcher of Mimosas and amazing breakfast fare. Please join us for Seafood Night on Wednesday, July 24th. We will have an amazing selection of seafood to include: Clams, Mussels, Shrimp, and Scallops, Lobster skewers, Crab Cakes and more. We are constantly trying new menu items, upgrading and improving service and food quality in Bar 1929. We have received many compliments on the food and service. But of course there are some hiccups that need to be addressed. We would like to provide a dining experience you can bring your friends and family to and be proud of. We will always look to improve all aspects of your dining experience. I believe no matter what the standard is currently, there is always room to grow and make it even better. I want your experience in Bar 1929 to make it one of your favorite places to dine. It is no secret that Woodcrest Banquet business has surged the last two years. A day doesn’t go by without a member stopping me to comment on how busy the club has become. Our banquet, sales and culinary team’s tireless efforts, dedication and attention to detail is what makes our Catering second to none. Woodcrest continues to receive rave reviews on our innovative food presentation and quality. Our parties are priced right and the food and service is always top notch. In a rush?! Call your lunch order in from the golf course and we will have it waiting for you! Remember, the events are always more fun when you are there! Like always, my door is open for you. Miso-Ginger Salmon

SERVED WITH WASABI MASHED POTATOES

Ingredients: Miso-Ginger Salmon 1/3 White Miso 1/4 Mirin 2 tbsp Rice Vinegar 3 tbsp Soy Sauce 3 tbsp Chopped Green Onions 1 1/2 tbsp Sesame Oil 1 Lemon 5 Pieces of Salmon (8 oz) Salt & Pepper for flavor

Wasabi Mashed Potatoes 5 White Potatoes 1 1/2 tbsp Wasabi Paste Salt & Pepper for flavor 1/2 cup Heavy Cream 3 tbsp Butter

Directions for the Miso-Ginger Salmon: Step 1: Mix the rice vinegar, miso, mirin, soy sauce, chopped green onions, ginger and sesame oil in a bowl. Step 2: Place the salmon on an oven dish. Pour the marinade over the salmon. Let it sit for 15 minutes. Step 3: Grill salmon skin down for more flavor. Keep it on the grill until you see a golden brown crust. This will take approximately 5 minutes. When complete, squeeze the lemon on top for potency. Directions for the Wasabi Mashed Potatoes: Step 1: Boil the potatoes for 20 minutes or until soft. Step 2: Mix the wasabi paste and the boiled soft potatoes in a bowl. Add heavy cream and butter. Mix until you have reached a perfect consistency. Step 3: Add salt and pepper for flavor. Add chopped up chives.

Pan Seared Sea Scallops WITH SWEET CORN PUREE, HERB ROASTED TOMATOES AND CHAMPAGNE BUTTER Ingredients: 1/2 cup Corn Kennels 1/2 cup Chicken Stock 3 tbsp Butter 1/4 cup Heavy Cream 1 tsp Cayenne Pepper 1/4 cup Cherry Tomatoes 1 tsp Dill

1 tsp Tarragon 1 tsp Garlic Oil Pinch of Salt & Pepper 5 Scallops 1 tbsp Olive Oil 1 oz Champagne Butter 1/4 cup Fresh Chives

Directions: Step 1: Place 1/2 cup of corn kernels in a blender. Step 2: Heat 1/2 cup of chicken stock, 2 tbsp of butter, 1/4 cup of heavy cream and 1 tsp of cayenne pepper in a small sauce pot. Step 3: Once simmering, pour it into the blender with the corn and add salt and pepper for taste. Step 4: Blend until smooth and creamy. Step 5: Roast 1/4 cup of cherry tomatoes, cut in half, with 1 tsp of dill, 1 tsp garlic oil, pinch of salt and pepper at 425 degrees for 5 minutes. Step 6: Sear 5 scallops in a small pan with 1 tbsp of olive oil, and 1 tbsp of butter for 2 minutes on each side. Step 7: Place in the oven for 3 minutes. Step 8: To plate - Place the corn purée in the middle of the plate. Add the scallops in a shingle formation. Place the tomatoes around the purée. Top the scallops with 1 oz of champagne butter (1/2 cup of champagne reduced then add 1 tbsp of butter, simmer until it is very light brown). Sprinkle fresh chives on top.
