It’s a question that has perplexed everyone from the ancient Egyptians to today’s Celebrity Chef. WOODLAND FOODS answers that question by offering more than 20 different varieties of dried mushrooms in more than 100 different formats. The variety ranges from the mainstream Button Mushroom to the exotic Candy Cap. They are practical and cost-effective, as they have a long shelf life compared to fresh. In addition to individual mushroom varieties, we also offer our own custom blends.

NATURALLY OCCURRING UMAMI

Parmesan cheese has it. So does ketchup… and so do mushrooms, particularly Shiitakes and Porcinis. It’s umami, and it’s changing the way everyone from top chefs to global food manufacturer executives think about food. Americans are taught from an early age that there are four basic tastes: sweet, salty, sour and bitter. Umami, dubbed “the fifth taste,” is one of those elusive sensations that are instantly recognizable when experienced, but hard to categorize. So what describes the allure of chicken noodle soup? Or how the satisfying grittiness of anchovies “finishes” a well-crafted caesar salad? Or the pleasure one gets from the deeply aromatic flavor of sautéed mushrooms against the tongue? To an increasing number of chefs and food industry insiders, the answer is umami, understood and appreciated as “the fifth taste.” The food industry is embracing umami as part of an effort to deliver highly flavored foods to consumers while also cutting back on fat, salt, sugar and artificial ingredients. At the same time, more consumers are scrutinizing food labels for chemically or artificially produced (or even natural but unhealthy-sounding) ingredients. Since many Americans have claimed sensitivities to Monosodium Glutamate (MSG)—a synthetically manufactured source of umami—numerous studies have been conducted to find out what naturally occurring ingredients can satisfy our “fifth taste.” One way to naturally boost umami levels in your recipes is by incorporating mushrooms. And the savory flavor of rehydrated dried mushrooms are particularly umami-rich!

MUSHROOM STYLES EXPLAINED

WHOLE: The mushroom’s entire cap and part of its stem are expertly dried to preserve their integrity. PIECES: Pieces of dried mushrooms in varied sizes and shapes. SLICED: Whole mushrooms are sliced and then dried. KIBBLED: Whole mushrooms are dried and then diced. POWDER: Dried mushrooms are ground into a fine powder. Made from 100% ground mushrooms with no additives or fillers.

UNIQUE USES FOR MUSHROOMS

• Use mushroom powder in a rub or crust • Steep mushrooms in hot water to make restorative, healthy teas—Shiitake Mushrooms work well

BASIC PREP

Pour hot water over dried mushrooms and steep until fully rehydrated. Steeping times will vary by type of mushroom. Generally, one ounce of dried mushrooms reconstitutes to four ounces. Mushrooms add flavor and substance to any dish. They’re great additions to salads, omelets, sauces and soups. Sautéed mushrooms liven up poultry, pork, beef and fish dishes. Add Mushrooms to your grandmother’s treasured pasta sauce recipe or simply mix some Mushrooms into pasta with a little olive oil and parmesan cheese—no sauce required!

TRUFFLES Many people consider these tasty, elusive gems true diamonds in the rough. Chefs, in particular, prize these mushrooms. Ask any chef to name the most prestigious ingredient they want to incorporate into their cooking and chances are the answer is truffles. Throughout history truffles have ranked among the most in-demand food delicacies, prized for their heady aroma and exquisite taste. One legend suggests truffles were sent to Earth as a gift from God, in the form of a lightning bolt. Other legends credit truffles with granting fertility and eternal life to those people lucky enough to indulge in them. All we know for sure is that truffles add an other-worldly flavor to any dish.

BASIC PREP:

Truffle Oil, Truffles in jars and canned Truffles are ready to use. Dehydrated Truffles must be reconstituted and ideally paired with Truffle Oil. Reconstitute dehydrated Truffles by soaking in hot tap water for 30 to 40 minutes. Drain reconstituted Truffles before use.

The term “legume” is a shortened form of “leguminoisae,” and refers to the seeds or fruits of plants of this family, most notably beans, lentils and peas. BASIC PREP

BEANS: Soak dried beans in cool water overnight. Drain, then place in a large pot and cover with fresh, cool water. Bring to boil. Cook 3 minutes then reduce heat and simmer, covered, until tender. LENTILS: Lentils do not require soaking before cooking. Add lentils to simmering water to cover and cook, skimming any foam from water, until tender. PEAS: Soak dried whole peas in cool water overnight. (It isn’t necessary to soak split peas.) Drain, then place in a large pot and cover with fresh, cool water. Bring to boil. Cook 3 minutes then reduce heat and simmer, covered, until tender.

SPECIAL NOTE: Do not add salt to the water in which beans are cooked as this could toughen the skin of the bean. Soaking and cooking times will vary from bean to bean.

Dried corn should be soaked overnight and then simmered. Grains need only to be simmered. Soaking and simmering times will vary from product to product. Cooking grains and corn can almost feel like cheating. They’re so easy to prepare and delicious without adding any other food or ingredients. Our suggestion? Cook these grains often! TRADITIONAL COUSCOUS BASIC PREP In a saucepan, add couscous to two cups of boiling water. Stir and let stand for 5 minutes. Fluff with fork and serve. Yields three cups.

Consider making couscous instead of rice or other pastas anytime. Couscous can perk up salads and transform soups into meals. Our variety of tastes and textures of Asian Noodles affords diners the opportunity to mix and match noodles to create their own traditional dishes. CELLOPHANE NOODLES are made of mung beans, so they are gluten-free. They are often called glass noodles because of their transparency. IF VARIETY IS THE SPICE OF LIFE...

We’ve all heard variety is the spice of life, but what exactly is a “spice,” anyway? This short glossary provides a few quick insights into the varieties of herbs, spices and other flavoring agents we at WOODLAND FOODS are so excited to share with you. DRIED HERBS are the flavor-packed leaves of herbaceous plants. The drying process helps preserve their flavor, but volatile oils can evaporate over time, so it is essential to maintain a fresh supply of dried herbs. PAGES 64-65 SPICES & SEASONINGS are any part of a plant, other than its leaves, used to season, flavor, preserve or color food. Spices are typically the roots, bark, seeds or even the fruit of plants. PAGES 66-72 SEASONING BLENDS are useful, pre-mixed combinations of herbs, spices and salts. Our blends are designed to evoke the typical flavor profiles of exotic locations or well-known cooking styles. Try our pre-blended varieties or find out about our custom blending program. PAGES 72-74 RUBS are a complex blend of herbs, spices and salts applied directly to foods (typically, but not exclusively meats) prior to cooking. Once applied, rubs are often left to be absorbed for hours at a time. Our staff of trained culinary experts has personally developed our standard rubs and takes great pride in the custom blends created for our customers. PAGE 75 CURRIES are among the most important (and potent!) spice blends in world cuisine. Traditionally curry powder is mixed in small batches according to cherished family recipes by cooks throughout Southeast Asia and along the Pacific Rim. Blended from our own hand selected spices and ingredients, WOODLAND FOODS’ curry powders were inspired by traditional Indian, Japanese, Thai and Vietnamese curries. PAGE 75 PEPPERCORNS are actually berries! True peppercorns are the fruit of the pepper plant (Piper nigrum). Black and white peppercorns come from ripe berries (removing the skins changes final product from black to white). Green peppercorns are simply picked before they are fully ripe. Varieties like Pink and Szechuan peppercorns and the truly exotic Long peppercorns are the fruit of plants and trees other than Piper nigrum. PAGES 76-77 SALT is among the simplest (and most necessary) ways to enhance the flavor of any dish. WOODLAND FOODS is proud to offer exotic specialty salts from all over as well as the smoked and seasoned salts we’ve created ourselves. PAGES 77-79 SUGAR is highly prized for the sweetness it brings to recipes, but also for the complex role they perform in baking. WOODLAND FOODS offers more than 20 specialty and conventional sugars each with its own unique flavor. PAGES 79-80 VANILLA is an invaluable addition to all sorts of baked goods and other recipes. We import our own vanilla beans from Madagascar, Papua New Guinea and Tahiti. Our Vanilla extract is the real stuff (none of that harsh, mass-produced, synthetic stuff you’ll find in the grocery store) created following a painstaking, traditional process that has captured the floral subtleties of the high-quality Vanilla beans we select.
