Serves 2
1 ounce Organic Chanterelle Mushrooms
This simple yet classic sauce can be made anytime with our Organic Chanterelle Mushrooms on hand. By using cool water to rinse and rehydrate the mushrooms, more of their rich flavor stays in the pan. Serve this decadent braise over protein or pasta.
2 tablespoons butter 1 tablespoon olive oil 1 small shallot, cut in half and sliced thin 1/2 cup corn kernels, fresh or frozen 2 cloves garlic, minced 1 thyme sprig, leaves removed 1/4 cup white wine 1/2 cup heavy whipping cream 1 teaspoon Kosher Sea Salt Flakes 1/2 teaspoon Dustless Ground Black Peppercorns 1 pinch Ground Nutmeg
Directions Cover the Chanterelle mushrooms with cool water and set aside for 10 minutes. Agitate the water two or three times during this period. Scoop out the mushrooms and rinse under running water then spread them onto a kitchen

towel and discard the soaking liquid. Inspect the mushrooms, particularly the stems, and remove any attached debris or dirt pieces and cut the mushrooms in half or thirds. Heat a medium skillet over medium-high heat and add the olive oil.
When the oil shimmers add the shallots and corn. Cook for 1 minute then add the mushrooms and butter. Turn the heat down to medium and cook for 2 to 3 minutes then add the garlic and thyme leaves. Cook 1 minute more and add the wine. Let the wine simmer until almost evaporated then add the cream.
When the cream has thickened enough to coat a spoon remove the pan from the heat. Stir the salt, ground black pepper and nutmeg.

WHOLE - Whole mushrooms are ideal for dishes in which presentation value is a strong consideration. Many mushrooms, such as Morel, Black Trumpet, Wood Ear, Candy Cap, and Enoki, are small enough to incorporate into recipes whole, and they add a refined look and visual impact to the finished dish. SLICED - Our evenly sliced, consistently sized mushrooms are ideal for use in dishes like stir-fries, stuffings, pastas, and pizzas. Our sliced mushrooms rehydrate quickly due to their uniform thickness, making them a convenient choice for quick preparation. KIBBLED - Our kibbled mushrooms are cut into small pieces with a target size of 1/4 - 1/8 inch, making them ideal for applications in which a rustic texture is desired, such as soups, stews, stuffings, sautĂŠs, and risottos. Our collection of kibbled mushrooms includes Oyster, Portabella, Porcini, Shiitake, Bolete, and Champignon mushrooms, as well as a selection of kibbled blends. CHOPPED - Our chopped mushrooms have a significantly finer texture than our kibbled varieties, but with more particle size variation than our mushroom powders. This finely chopped style is ideal for incorporating into pasta fillings, soups, gravies, and sauces. POWDER - With a fine, uniform texture, our mushroom powders are a convenient solution for whisking into sauces, gravies, soups, and light cream sauces. They are a useful flavoring and thickening ingredient in powdered soup and sauce mixes, and also make a uniquely savory addition to meat rubs.

WHOLE - Whole chiles add strong visual impact and bold, fiery flavor to a variety of dishes. After removing the stems and seeds, whole chiles are best lightly toasted to bring out their deepest, richest flavors. Whole chiles are ideal for purĂŠeing into sauces like mole, or for applications where large strips are needed. We offer both stemmed and de-stemmed whole chiles. DICED - Our diced chiles are conveniently cut into 1/4inch pieces, allowing for a more measured quantity in recipes. Diced chiles are best purĂŠed into sauces, but they are also excellent for incorporating into stews and roasts. FLAKES - Smaller than our diced styles but larger than our granulated and powdered varieties, our chile flakes are ideal for a variety of applications. The shaker-sized flakes are well-suited for dry seasoning mixtures but can also be added to dressings and sauces. GRANULATED - Our granulated chiles have a finer texture than our chile flakes, but with larger particles and size variation than our chile powders. Granulated chiles can be used in wet or dry applications, including rubs, marinades, sauces, soups, and chili. Ingredients 4 cloves garlic, peeled 1 tablespoon Ground Cumin 1/4 cup Aji Panca Chile Powder 3 tablespoons red wine vinegar 3 tablespoons vegetable oil 1 teaspoon Dustless Ground Black Peppercorns 1-1/2 lbs. beef top sirloin or beef heart
Anticuchos de Carne (PERU) This classic Peruvian kebab, traditionally made with beef heart, is marinated in a mild, fruity marinade made with our bold Aji Panca Chile Powder.
Directions Heat dry skillet over medium heat and toast garlic until browned on all sides. Transfer to small bowl to cool. Add cumin to pan and toast until fragrant, about 1 to 2 minutes. Transfer cumin to bowl of food processor. Add cooled garlic, Aji
Panca Chile Powder and vinegar, and pulse until well combined. With machine running, slowly add oil until thick paste forms. Season with salt and pepper. Cut meat into pieces about 3 inches long, 1-1/2 inches wide and 1/4 inch thick. Weave each
piece of meat back and forth onto a skewer. Place skewers in baking dish, and spread marinade over top with spoon, coating both sides. Cover and place in refrigerator for 2 to 4 hours for sirloin, or 6 to 12 hours for beef heart.
Prepare hot grill, or preheat grill pan over high heat. Drain anticuchos and discard excess marinade. Place skewers on hot grill or grill pan, and cook until sizzling and cooked through, about 3 to 4 minutes per side. Serve hot off the grill.

WHAT IS THE SCOVILLE HEAT SCALE? Named after the American pharmacist who developed the system, the Scoville Heat Scale (originally named the Scoville Organoleptic Test) measures the perception of heat in chiles and other spicy foods. To measure a chile’s heat in Scoville Heat Units (SHU), a liquid extract of the chile is prepared for tasting and then diluted with sugar water until the heat of the chile is barely perceptible. Because it relies on human subjects’ sensitivity, this method can be somewhat imprecise, so a technique called High Performance Liquid Chromatography (HPLC) was developed to measure the amount of capsaicin compounds present in chiles, which are responsible for their heat.

There are two specific varieties of chipotle chiles – chipotle morita and chipotle meco. Chipotle morita chiles are smaller than chipotle meco chiles, as they are picked earlier in the season, often when the jalapeños are still somewhat green in color. Moritas are also smoked for a shorter amount of time, which allows them to retain much of their sweet, fruity flavor. These chipotles are the most widely used throughout the United States. Chipotle meco chiles are smoked for almost twice as long as moritas, giving them a deeper, smokier flavor and dusty brown color. They are also slightly larger than moritas, ranging from 2 to 4 inches long. Unlike chipotle moritas, chipotle meco chiles are not often seen or used north of their native Mexico.

Pebble Beans are like a naturally occurring bean blend, with a single plant producing a wide variety of different colored beans ranging from solid white, red, brown, tan, and black to speckled beans in the same color families. They have a tender skin, a dense, meaty texture, and a mild taste. Since the beans all come from the same plant and are about the same size, they cook at the same rate. They get their name because, like a handful of pebbles, they display an array of colors. The Pebble Bean plant was discovered fairly recently on a bean farm near Lodi, California. Genetic tests performed on five generations of the bean have not unearthed the reason for their unique coloring. They are, however, believed to be part of the flageolet family.

Directions Place Dutch oven over medium heat and add the oil. Add the carrots and cook for 3 minutes. Add the onions, parsnips, and garlic and cook for 3 minutes

until very fragrant. Add the collard greens and sausage and cover. Cook this for 5 minutes, stirring once or twice.
Use a piece of kitchen twine or cheesecloth to secure the herbs and the chile. Add this bundle along with the lentils and broth to the pot.
Bring this stew to a boil and allow to simmer for 40 to 50 minutes, uncovered. Season with salt and ground black pepper.

THE INGREDIENT Chana dal is the hulled, split form of black garbanzo beans, otherwise known as desi chickpeas. These small, dark brown chickpeas, also known as “Bengal gram” or “kala chana” in Hindi, have a darker, thicker seed coat than the popular kabuli chickpea variety sold in the United States. Authentic chana dal is common in India but rarely found in America. In fact, some yellow split peas are sometimes inappropriately labeled and sold as chana dal in the United States. While the two legumes appear to look the same, chana dal has a bumpier surface texture and a different consistency and flavor when properly cooked.
WHAT IS CHANA DAL? THE DISH In Hindi, the word “dal” can refer to any pulse that has been stripped of its outer hull and split, but it is also used as the name of a thick, flavorful stew made from a split pulse. In this case, chana dal refers to the popular Indian stew made with split desi chickpeas. Often served with a side of naan, roti or rice, dals are a staple source of protein in Indian cuisine, which often contains little or no meat.

Chana Dal (INDIA) In this traditional North Indian recipe, our Chana Dal is simmered with spiced water until the legumes break down, then combined with a hot flavored ghee or oil mixture known as “tadka�, to provide a final layer of flavor and richness.
Serves 8
1 1/2 cups Chana Dal 5 cups water 1/2 teaspoon Ground Turmeric 2 thick slices unpeeled ginger 1 teaspoon Kosher Sea Salt Flakes 1/4 teaspoon Garam Masala 3 tablespoons ghee or vegetable oil 1/2 teaspoon Cumin 2 cloves garlic, peeled and chopped 1/2 teaspoon De Arbol Chile Powder
Directions Place peas in large pot with water. Bring to a boil, and skim to remove surface foam. Add turmeric and ginger. Reduce heat to low, and cover pot, leaving lid slightly askew. Simmer for 1-1/2 hours, or until dal is

tender, stirring frequently during final 30 minutes of cooking, both to help break down peas and to prevent scorching. Remove ginger. Stir in salt and Garam Masala.
Heat ghee in small pan over medium heat. When hot, add cumin seeds and garlic. Stir until garlic pieces are lightly browned, 2 to 3 minutes. Stir in chile powder.
Pour ghee mixture into dal, and mix thoroughly.

Pork Roast with Cuban Mojo Rice & Beans Cuban cuisine is characterized by bright, rich flavors and bold, aromatic herbs like cumin and paprika. Mojo is a traditional Cuban sauce and marinade that blends the zesty flavor of sour oranges with savory garlic and plenty of heat, and our Cuban Mojo Rice & Beans captures those classic flavors in a well-balanced blend that is a perfect accompaniment to pork, chicken, or seafood.
Directions Preheat oven to 300°F. Line a baking dish with the sliced onions and crushed garlic and place the roast on top. In a small bowl mix the orange juice, honey, cumin, and salt. Brush this liberally over the pork. Place the pork in the oven and cook for 3 hours.
Remove the pork from the pan to rest, and turn the oven to 450°F. Strain the juices from the pan. Add 2 cups of the pan juice to a 1 quart pot, top with water if there is less. Bring this to a boil and add the Cuban Mojo Rice & Beans.
Cover, reduce to a simmer, and cook for 20 minutes. Return the pork to oven when it is ready and cook for 15 minutes, or until the rice is ready. After 20 minutes, remove the pot from the heat and set aside to rest for 5 minutes. Do the same for the pork roast.
Carve the pork and serve over the rice.

9-Grain Porridge This breakfast porridge takes full advantage of our 9-Grain Blend, a unique combination of different grains and rice. Hearty and substantial with just enough sweetness from raisins and honey, this satisfying porridge is a great way to start the day.
Serves 4-6
2 tablespoons honey, plus more for serving 1/2 teaspoon salt 1 teaspoon Ground Sri Lankan Cinnamon 1/8 teaspoon Ground Nutmeg 1 cup 9-Grain Blend 1/2 cup raisins 1 tablespoon butter 1 cup whole milk 1/4 cup Slivered & Blanched Almonds
Directions Bring 2 cups water to boil in medium saucepan. Add honey, salt, cinnamon, nutmeg, 9-Grain Blend, and raisins. Return water to boil, and reduce heat to a low simmer. Cover and cook for 40 minutes.

sun-dried tomato, asiago, & rosemary focaccia (italy)
Ingredients
Fresh, warm focaccia with a savory topping of golden-brown Asiago cheese, sun-dried tomatoes, and rosemary is a perfect complement to hearty bean- or vegetable-based soups and stews. Don’t be intimidated by the long prep time; most of it is passive, as the dough needs to rise multiple times.
Serves 8
2 cups warm water 2 teaspoons dry yeast 4-1/2 cups all-purpose flour, plus more for dusting 2 teaspoons Kosher Sea Salt Flakes 3 tablespoons olive oil, plus more 1/4 cup Natural Julienne Sun-Dried Tomatoes 1/2 teaspoon Coarse Sea Salt 1/4 cup shredded Asiago cheese 1 tablespoon fresh rosemary, chopped
Directions Place warm water in large bowl, and sprinkle yeast over. Stir with fork, and let stand about 10 minutes, until yeast has dissolved.

Add flour and salt to yeast mixture, and stir until well-blended. Dough should be sticky.
Wash and dry large mixing bowl, and coat generously with olive oil. Form dough into ball and place in bowl, turning to coat. Cover bowl with plastic wrap and let rise in warm part of kitchen for about 1-1/2 hours, or until doubled in size.
Transfer dough to well-floured work surface, and knead for 10 minutes, until smooth and elastic. If dough remains too sticky while kneading, sprinkle with additional flour, one tablespoon at a time.
Punch down dough, re-knead and form into ball. Return to bowl. Re-cover with plastic wrap and let rise again in warm part of kitchen until doubled in size, about 45 minutes.
Bring medium pot of water to a boil. Add sun-dried tomatoes, and blanch for 30 seconds. Drain. Coat baking sheet with 1 tablespoon olive oil. Punch down dough again, and transfer to prepared sheet. Lightly press into even 10-inch by 13-inch rectangle. Spread out fingers rigidly, and use to make deep indentations in dough (about halfway through). Let sit 10 minutes. Drizzle remaining 2 tablespons olive oil evenly over dough.
Sprinkle with sea salt, followed by shredded Asiago cheese, blanched sun-dried tomatoes, and chopped rosemary, in that order. Let rise again, uncovered, in warm part of kitchen, until puffy, about 25 minutes. While dough rises, preheat oven to 475°F. Transfer dough to oven and bake until golden brown and crusty, about 20 minutes. Serve warm or at room temperature with olive oil for dipping.
