For the caramel 60ml (¼ cup) water 180ml (¾ cup) castor sugar For the custard 500ml (2 cups) milk

250ml (1 cup) cream 4 eggs 60ml (¼ cup) castor sugar 5ml (1t) vanilla essence

1. Preheat oven to 160°C. Line the base of a roasting pan with a tea towel. Lightly grease 6 x 160ml moulds. 2. Caramel: heat the water & sugar in a small saucepan over low heat, stirring until the sugar has dissolved. Increase heat to medium, bring to a boil and cook, without stirring, for about 8 minutes or until a golden caramel forms. Pour the mixture evenly among the prepared moulds. Place in the prepared pan and set aside. 3. Custard: place the milk and cream in a saucepan over low heat and heat to just before boiling point. Remove from heat. Whisk together the eggs and sugar. Slowly add the hot milk, whisking constantly until well combined. Stir in the vanilla. Tip the custard into a large jug. 4. Strain the custard through a sieve into the moulds. Pour enough boiling water into the roasting pan to reach halfway up the sides of the moulds. Bake for about 30 minutes or until the custards are just set with a slight wobble in the middle. Remove from the pan and set aside for 2 hours to cool. Cover and place in the fridge overnight to chill. 5. To unmould, gently press all around the top edges of the crème caramels to loosen them, give a light shake, then turn out onto serving plates.

Starting a new life together as a blended family has its challenges. But they are not insurmountable. 1. Take your cues from the kids.

Don’t push the relationship if they seem to be putting walls up. Let them come to you, but make sure they know that the door is always open."

2. Talk about what the kids like to talk about. "Kids are naturally self-centered, so they may seem uninterested in what you're about, but they’ll love to talk about themselves. If they initiate a conversation with you, use that opportunity to engage with them. Ask them questions and then let them know how you experienced something similar and how you can relate to them. You can also ask them about their activities and hobbies. What do they love about it? What’s their favorite part? Least favorite part? Do they ever feel challenged? But pay attention to their cues. If they seem uncomfortable or aren’t engaging, let it go and try again another time.

3. Give your stepchildren time alone with their biological parent. "It may seem to the child that the one-on-one time they had with their mom or dad before you got married is over now that you are all living together. Make the effort to ensure your stepchild gets alone time with their parent. This will help build trust with your stepchild, and if any resentment is lingering or building, this will help alleviate it." 4. Find activities that your stepkids enjoy and do them together. "For example, if they like music or certain bands, you can take them to a concert to share in that experience with them, engaging in conversation to better understand what it is that they like about the activity. In return you can share things that you enjoy with your stepchild to teach them about you. Find activities that you both can enjoy together and make a habit to engage in them." 5. Incorporate your stepchild in extended family traditions. "Holidays and any family celebrations provide the perfect opportunity to get your stepchild involved with your extended family. It is also an excellent way for the stepchild to get to know more about you and for you and the family to get to know more about the child without the pressure of a one-on-one question and answer session." 6. Start out as friends. "Don't jump into the role of parent right off the bat or expect that unconditional love and trust will suddenly appear just because you have a new title. The most realistic goal for the first few years of your relationship with your stepchild is to be friends. Start out slow and let things develop naturally. As time goes on, a more meaningful relationship will genuinely develop. And remember: the relationship you share with your stepchild doesn’t have to resemble the one they share with their birth parents, nor does it have to compete with it." Even if your stepchildren are 'not your responsibility' or haven’t been that receptive to you being in their life, if you want to build a healthy relationship with them, always treat them the same as you treat your own children." 8. Don’t hide or make yourself small. "Many stepchildren grow up not knowing their stepparent’s favorite color, food or activity. Because stepparents often feel rejected by their step kids, sometimes they start hiding themselves or clamming up the children's presence. They actually end up excluding themselves. Instead, when the opportunity presents itself, speak up about things you enjoy doing. Talk about what excites you and what's important to you. You can do this by discussing these things with your partner in your stepchild’s presence, or directly with the child. Think about how you behave with your friends and do more of that. 5 New Year’s resolutions for busy moms that actually work

D

o you always make resolutions for New Year‘s that you can’t keep? Come January 1st save yourself some guilt and don’t set yourself up to be a failure. Instead of resolving to become a fitness guru, go on a juice diet, or to be the perfect parent, resolve to make realistic resolutions that will benefit you so much you’ll be determined to see them through. Resolution #1: Say No! Busy moms have an “I can do it” attitude. That’s one of their secrets to being able to do it all. This year, embrace the “I can’t.” When faced with piling more on your plate (like volunteering to be the troop leader, soccer couch and PTA coordinator all in the same season) take the opportunity to say “not now” or “no thank you” when asked. Of course, pull your weight whenever you can, but if you’re typically the one who is called on to make the magic happen, give someone else an opportunity to shine. Resolution #2: Delegate. Summons up all those times you’ve thought “Because I said so” was a good enough answer and give it to those who question why you’re outsourcing whatever you can. Save yourself time and energy by utilizing an online grocer who delivers, using a drycleaner that picks up/drops off, and hiring a housekeeper to come in once a week if it’s in the budget. Getting whatever you can off your plate allows you to free up space to take on things that really need your attention. Resolution #3: Be the First One Up. The truth is that you can’t meet anyone else’s needs until you’ve met your own. Set your alarm to get up 30 minutes before everyone else in the house to take a shower

and drink your coffee in peace.While you definitely want to get as much shuteye as you can, getting up and tending to your own needs before your brood needs you is much easier than changing your name first thing in the morning when everyone is calling for you. Resolution #4: Make “I’ll need to check my calendar” Your Mantra. Is darling daughter available for a playdate tomorrow? Let me check my schedule and get back to you. Are you able to attend the PTA meeting on Friday? Let me check my schedule and get back to you. Are you free to volunteer in the co-op the first Friday of each month? Let me check my schedule and get back to you. Commit to responding to demands on your time with an instance on checking your calendar first. When you do, it gives you an opportunity to truly evaluate if you’re able to commit and prevents you from double-booking, which just takes more time to undo. Resolution #5: Schedule ME Time. Whether it’s date night with your partner, a girl’s night out, or a stress-free evening in the bathtub and a good book, schedule you time into your calendar. Set aside 20 minutes each day to decompress and care for yourself and at least one night a month to do something for you. You need to recharge your batteries if you want to operate at optimal performance all of the time. When you make resolutions that benefit you so much you want to keep them, it’s easier to stick to them. This year, let yourself off the hook and commit to making resolutions that you can’t afford not to keep.

A

s a parent, you want the best for your child. Many of us have used food, usually sweets, to comfort or reward our child-a milkshake for a skinned knee, an ice cream for a scored goal, a chocolate to quiet a screaming toddler at the grocery store. And while occasionally celebrating with a treat isn’t a big deal, making a habit of it can lead to emotional eating and other problems in adulthood. While food is certainly a pleasure to be enjoyed, it can become something else when it’s taught to be a source of comfort, to manage stress, boredom, etc. It is important that we also reward our kids in other ways while also helping them learn to properly express emotions and feelings. Here are a few ideas. Give Them What They Really Need – Love and Attention

If a child comes to you with a hurt, or is proud of their report card, chances are that all they really need from you is reassurance. If they are hurt, give them a hug and reassure them that they will be ok. If they make straight A’s, give them a high five and tell them how proud you are! A hug, an I Love You, a smile, a high five, a reassurance are appropriate rewards for just about anything. You can also teach them to begin self-assurance by saying “Wow, you must be really proud of yourself!” or helping them to explore how they feel.

Help Them Express Their Feelings It can be tempting to take a sad child who has had a bad day straight to get a milkshake at the drive-thru, but really the best thing you can do in this situation is to help them explore their feelings. Ask them how they are feeling, get them to talk through a tough situation, and try to validate their feelings without offering advice unless they ask for it. To validate their feelings, just repeat back what you are hearing them say: “You seem to be feeling really frustrated with your teacher.” Don’t judge, just listen. Just getting it out will help them more than any milkshake ever could, and they are learning a valuable lesson for adulthood. Read With Them Younger children especially LOVE to be read to. Nurture a love for reading and imagination. Friendship Another alternative to food rewards is to allow your child to have a sleepover or play date with a good friend. Tanning and lying in the sun and soaking up the sun's rays used to be considered both pleasant and healthy - before we became aware of the dangers of exposure to ultraviolet rays. Nowadays we know that we need to avoid being overexposed to the sun and that excessive sun can lead to sunburn, wrinkles, skin texture changes and skin cancers. What are the sun's rays? The sun produces both visible and invisible rays. The invisible rays are known as ultraviolet-A (UVA) and ultraviolet-B (UVB). These types of rays are the so-called "problem rays", as they cause sun damage. UV rays are more intense during the summer months, closer to the equator and at higher altitudes. The UV rays' harmful effects are also increased by reflections from water, sand and snow and even on cloudy days UV rays can cause skin damage. Protection from the sun Sun protection should start in infancy and continue throughout life. Remember that sun protection in childhood is very important in preventing skin cancer later in life.

The use of adequate sun protection measures assists in preventing skin damage and reducing the risk of skin cancer. Make a point of taking these precautions: Plan outdoor activities early or late in the day to avoid peak sunlight hours between 10:00 and 16:00. Dress sensibly. Most clothing absorbs or reflects UV rays, but certain clothing (like white cotton clothes and wet clothes) does not offer much protection. Generally, the tighter the weaving of the clothing, the more sun protection it will offer. Wear a wide-brimmed hat. Wear sunglasses. Use beach umbrellas and other kinds of shade, but remember that they do not provide full protection, as UV rays can still bounce off sand and water. Using sunscreens: Sunscreens should be applied about 20 minutes before going outdoors. Use a broad-spectrum sunscreen on all exposed skin, even on cloudy days. If you're swimming, use a waterresistant sunscreen. Reapply the sunscreen frequently (at least every one and a half hours, or even more often if it's sunny, or you're swimming or perspiring). These are the easiest and probably the most economical Christmas Mince Pies you can make. The recipe calls for a jar of Safari fruit mince which I found at my local Spar Supermarket. The recipe makes about 16 mince pies.

Ingredients 2 cups flour 120 g butter, cut into cubes 2 tablespoons sugar Pinch of salt Grated zest (1 tablespoon) and juice (1/3 cup) of one orange 1 jar Safari fruit mince (454 g) Icing sugar for dusting Method In a bowl, sift the flour and salt together. Add the butter and rub into the flour until it looks like breadcrumbs. Add the sugar, grated zest and orange juice and mix until the dough comes together. Knead the dough into a bowl and cover with cling wrap.

Place the dough in the fridge for 30 minutes. When you’re ready to roll the dough, set the oven to 180 C and spray a shallow muffin tin with Spray & Cook. Roll out the dough to about 2mm thickness and, with a round cookie cutter, cut the bases and place them in the tin, gently pressing the bases down. Place a tablespoon of fruit mince in each casing. Now cut out the top of the mince pies – the dough can be a little thinner for this. A star shape looks nice, but a round shape will work as well. Place on top of the filling. Bake for 30 – 35 minutes or until the pastry has browned nicely. Cool in the muffin pan before removing. Dust with icing sugar and serve. justeasyrecipes.co.za

s smart devices become commonplace at younger ages every year, establishing a family mindset for internet safety can help keep your kiddos out of harm’s way. Schools have begun using technology, so your tech savvy children are going to want to learn and interact online at home the same way they do at school. With the wild west of the internet, determining how to get started on managing a child’s internet access can be daunting. Here’s a quick set of tips to help guide the rules you set within your home.

1. START EDUCATION YOUNG As electronic devices and access to the internet are permitted, talk at an age appropriate level to your children about which apps and websites they can access. Provide the same level of guidance regarding talking to strangers online as you would offline. If you allow apps that encourage interaction, like SnapChat or Instagram, establish rules about what privacy settings are and who they are allowed to connect with. Be certain to manage those accounts regularly to confirm who your child is interacting with. As they grow older, it may not be as necessary to watch every conversation. Having open conversations about access will build trust and encourage your child to talk to you when they have concerns or issues online. 2. CREATE A FAMILY CONTRACT FOR INTERNET SAFETY Before introducing your child to the internet, write up

a contract that fits your family’s needs. This should include what information is okay to share, who you can talk to, and when to get an adult. You may also want to introduce rules that prevent cyberbullying when it becomes age appropriate. Talk through the contract and have everyone using the internet sign it. If your child breaks any of the rules of the contract, set a consequence, like losing internet privileges for a set amount of time. 3. DESIGNATE A DEVICE FOR YOUR CHILD(REN) While it’s easy to use one computer for the entire household, logging in and out of your account and into one for your little ones can be a pain in the neck. Designating a ‘kids’ computer or tablet enables you to lock down security as much as you feel you need. Set a unique password for your child’s access to the app store so you can control which apps, movies and music can be downloaded. 4. KEEP TECHNOLOGY UPDATED Viruses and malware can take over when devices use outdated technology. Check for updates regularly to make sure that no data can be accessed remotely. If you can, allow updates to happen automatically when connected to the internet. For computers, make sure that your child’s device has an antivirus software installed. While most adults know what kinds of links to click and which ones not to, kids do not.
