Our purpose at WTTW and WFMT is to enrich lives, engage communities, and inspire exploration, and one of the ways we do this is by bringing people together around food and cooking. Across our platforms this month, chefs from Chicago and beyond will share their delicious and unique recipes, invite us to explore cultural traditions, and offer tips for making the food we eat healthier, tastier, and easier to prepare. I hope you’ll be watching Saturdays from 11 am to 5 pm and weekdays from 2-4 pm when we present cooking programs for every taste, and visit wttw.com/food where you’ll find interviews with local chefs, recipes for the holiday season, and feature stories about the culinary scene in Chicago. On page 4, you’ll find three Thanksgiving side dishes (and a few variations) from your favorite PBS chefs. Also in November, we bring you the final two Chicago Stories documentaries of the fall season. The Outrage of Danny Sotomayor profiles a fiery activist leading the fight for AIDS treatment while grappling with the disease himself, and The Rise and Fall of the Mail Order Giants recalls how Sears, Roebuck and Montgomery Ward forever changed the way we shop. We’ll present two harrowing new documentaries that could only be done by Frontline: one following journalists as they cover – and then escape from – the Russian siege of Mariupol, Ukraine, and the other examining the response to the devastating school shooting in Uvalde, Texas. And on Sunday nights, settle in for the popular drama series Annika, World on Fire, and Hotel Portofino; also watch A Town Called Victoria, the story of how a community came together in the wake of a hate crime. This month on WFMT, listen as WFMT Presents previews CSO MusicNOW’s Montgomery and the Blacknificent 7 curated by Mead Composer-in-Residence Jessie Montgomery. On Live from WFMT, we’ll bring you performances from the Orion Ensemble and early music ensemble Black Tulip. Thanksgiving Recipes From Your Favorite PBS Chefs WTTW’S SATURDAY COOKING LINEUP is a favorite resource for many of our home chef members and viewers and, as we head into the heavy holiday cooking season, we’ve got a few seasonal side dish recipes for you from the best of the best.

Mashed Sweet Potatoes courtesy of AMERICA’S TEST KITCHEN This is one of ATK chief creative officer Jack Bishop’s favorite recipes. If you’re feeling adventurous, try one of his variations below. INGREDIENTS 2 pounds sweet potatoes, peeled, quartered lengthwise, and cut crosswise into ¼ inch slices 4 tablespoons unsalted butter, cut into 4 pieces 2 tablespoons heavy cream 1 teaspoon granulated sugar ½ teaspoon salt Pinch pepper INSTRUCTIONS Combine sweet potatoes, butter, cream, sugar and salt in large saucepan and cook, covered, over low heat, stirring occasionally, until pota-

toes fall apart when poked with fork, 35 to 45 minutes. Off heat, mash sweet potatoes in saucepan with potato masher, ricer, or food mill. Stir in pepper; serve immediately. VARIATIONS Maple-Orange Mashed Sweet Potatoes: Just before serving, stir in 2 tablespoons maple syrup and ½ teaspoon grated orange zest along with the pepper. Indian-Spiced Mashed Sweet Potatoes with Raisins and Cashews: Substitute dark brown sugar for the granulated sugar and add ¾ teaspoon garam masala to the saucepan. Just before serving, stir in ¼ cup golden raisins and ¼ cup roasted unsalted cashews, chopped coarse, along with the pepper. Garlic Mashed Sweet Potatoes with Coconut: Substitute ½ cup coconut milk for the butter and cream and add ¼ teaspoon red pepper flakes and 1 small, minced garlic clove to the saucepan. Just before serving, stir in 1 tablespoon minced fresh cilantro along with the pepper.

2 large eggs 3 ounces Parmesan cheese, finely grated (1 ½ cups), divided ½ cup panko breadcrumbs INSTRUCTIONS Heat the oven to 400 degrees with a rack in the middle position. Mist a 9-by-13-inch baking dish with cooking spray. In a 12-inch skillet over medium heat, melt 4 tablespoons butter. Add the potatoes and ½ teaspoon salt; stir to coat. Add ½ cup water, then distribute the potatoes evenly. Cover and cook until a skewer inserted into the potatoes meets no resistance, 15 to 20 minutes, stirring once about halfway through. Transfer the potatoes and any liquid in the pan to a large bowl, then mash to the consistency of chunky mashed potatoes; set aside. Wipe out the skillet and set it over medium heat. Add the oil, shallots, and ¼ teaspoon salt. Cook, stirring occasionally, until the shallots are softened but not browned, 5 to 6 minutes. Add the beans and mushrooms, then increase to medium-high heat. Cook, stirring occasionally, until most of the liquid has evaporated and the beans are bright green but still crisp (and not yet brown), about 5 minutes. Stir in the marjoram and cook until fragrant, about 30 seconds. Transfer to the bowl with the potatoes and cool for about 10 minutes. In a medium bowl, whisk the eggs, 2 ounces (1 cup) of Parmesan, ½ teaspoon each salt and pepper. Add the egg mixture to the vegetable mixture and fold with a silicone spatula until combined. Transfer to the prepared baking dish and spread evenly. In a small bowl, combine the panko, the melted butter, and the remaining 1 ounce (½ cup) Parmesan, then stir until the panko is evenly moistened. Sprinkle evenly over the vegetables. Bake until golden brown and bubbling at the edges, about 30 minutes. Cool for 15 minutes before serving.

INGREDIENTS 4 tablespoons (½ stick) salted butter, plus 2 tablespoons salted butter, melted 1 pound Yukon Gold potatoes, peeled and sliced ¼ inch thick Kosher salt and ground black pepper 3 tablespoons extra-virgin olive oil 2 medium shallots, finely chopped 1 pound green beans, trimmed and cut into ¼-inch pieces 8 ounces cremini mushrooms, trimmed and sliced about ¼ inch thick 1 tablespoon minced fresh marjoram or oregano

Green bean casserole was invented in 1955 by the Campbell Soup Company, and it’s pretty much been a Thanksgiving mainstay ever since. For a change, you might want to try this robust Italian version from Chris Kimball's Milk Street.

Persimmon Pudding courtesy of A CHEF’S LIFE Series regular Bill Smith, who shared this recipe with host Vivian Howard, recommends using an old-fashioned food mill, such as Mulinex, for pureeing the persimmons. INGREDIENTS 1 tablespoon plus 1 stick unsalted butter, at room temperature, divided 3 cups persimmons 2 cups buttermilk 1 ½ cups sugar 3 large eggs 1 ½ cups all-purpose flour ½ teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon freshly grated nutmeg ½ teaspoon ground ginger 1 teaspoon cinnamon Whipped cream, optional INSTRUCTIONS Preheat oven to 350 degrees. Grease a 4x8x12 inch baking pan with 1 tablespoon butter. Use a food mill, sieve, or cone strainer to remove the seeds from the persimmons and puree the pulp. Combine the puree with the buttermilk. Beat the remaining butter and sugar in the bowl of an electric mixer with the paddle attachment until fluffy. Add the eggs one by one. By hand, in a large mixing bowl, stir the persimmons into the butter. Sift all the dry ingredients and fold them into the persimmon mixture. Put the batter into the baking pan, and place the pan in a larger pan and fill halfway up with warm water. Bake, uncovered, for 75 minutes, or until the pudding is firm at the center, has pulled away from the sides of its pan, and a paring knife inserted into the center of the pudding comes out clean. Serve hot with fresh whipped cream. This keeps in the refrigerator for 4 to 5 days and reheats well in the oven or microwave. Tireless in his search for new means of creative expression, Vengerov has followed in the footsteps of his mentors—Daniel Barenboim and the late Mstislav Rostropovich—and turned his attention to conducting. In addition to maintaining his career as one of the most in-demand soloists, he now conducts major orchestras around the world. WFMT Presents: Music and Conversation with Miloš Miloš is a superstar musician at the forefront of today’s classical guitar revival. Miloš’s new album Baroque offers varied 18th century works transcribed and arranged for guitar solo and in collaboration with Arcangelo, the stylish period instrument ensemble led by Jonathan Cohen. Miloš joins WFMT to share his passion for this repertoire: “Within the classical guitar context…I believe we have only ever managed to touch the surface. This very thought inspired me to try and dig deeper, go beyond the obvious, experiment, collaborate and transcribe, to open a new door of possibilities for my instrument.”

Best of Studs Terkel: Buffy Sainte-Marie Buffy Sainte-Marie is believed to have been born on the Piapot First Nation reserve in Saskatchewan and taken from her biological parents when she was an infant. By age four, she had taught herself to play the piano. SaintMarie began playing guitar at age 16 and invented new tunings which influenced artists like Joni Mitchell. Since her groundbreaking debut in 1964, the singer-songwriter has been a tireless advocate and a disruptor of the status quo. Her artistry, humanitarian efforts, and Indigenous leadership have made her a trailblazing force in the music industry. Studs’s two-part conversation with Sainte-Marie was recorded in 1968.

Music of the Baroque: Viva Vivaldi! MOB’s October program celebrating Vivaldi featured a solo turn for a local early plucked instrument specialist. Brandon Acker is in high demand for his performances on baroque guitar, theorbo, lute, and archlute. He also operates a successful YouTube channel that provides tutorials and information about historical lutes and guitars, and performance videos. Acker’s interest in education has led him and his wife to establish an online music school for “all things that go pluck.” Since opening Arpeggiato.com in 2020, he has taught thousands of lessons to students in more than a dozen countries.

Highlights will include the world premiere of The United States Welcomes You by Jasmine Barnes, Damien Geter’s Annunciation, and Dave Ragland’s Eight Tones for Elijah, a loving tribute to young violinist Elijah McClain, who was killed by the police on his walk home. Additionally, Jessie Montgomery and Carlos Simon will improvise the interludes woven between each piece on the program. From LA Opera: Pelléas et Mélisande LA Opera’s production boasts a phenomenal cast: Kyle Ketelsen as Golaud, Ferruccio Furlanetto as Arkel, and Susan Graham as Geneviève. In the title roles, American soprano Sydney Mancasola is paired with Will Liverman, one of opera’s brightest stars. Raised in Virginia Beach, Liverman’s musical training includes Wheaton College and the Ryan Opera Center (and Juilliard). Other important benchmarks for Liverman’s career are Chicago-centric. He recorded his Grammy-nominated album Dreams of a New Day: Songs by Black Composers with Cedille Records, reprised his starring role in Fire Shut Up in My Bones at Lyric Opera, and premiered his own pioneering opera The Factotum right here in the Windy City.
