A few years back, a summer riding goal was to ride through each and every one of the counties of Iowa, and what was found was a wealth of interest and beauty. Each month we will revisit each county as a featured article. We will tell you about new things to see, places to ride, and give you a little spark of touring curiosity for our state of Iowa.

McGregor’s Main Street takes visitors through a vale of two majestic bluffs that leads right to the edge of the Mississippi River. Enjoy an underground boat ride at Spook Cave and campground. Clayton County has so much more to offer then I have room to tell. The history, the people, the rolling hills and valleys are all worth the travel. There are many scenic roadways with twists and curves. One to mention is the River Bluffs Scenic Byway that takes the traveler through “Little Switzerland.” Communities traveled through offer history, shopping, and historic places. Some of the towns along this route are Guttenberg, Garber, Elkport, Elkader, Volga City, Saint Olaf, Giard, McGregor, and Marquette. Other scenic routes to travel are near Pikes Peak State Park in the northeast corner of Clayton County and Iowa’s Great River Road that travels through Clayton County and offers a year round scenic view of the Mississippi River. This month we bring you John “Mac” McDonald of Newton, Iowa. Mac is a retired (2003) 1st Sergeant of the United States Marine Corps. He spent 20 years in service to the Marine Corp and our fine country with 18 years served in Waterloo and 2 years in Des Moines. He is a Veteran of Desert Shield/ Storm from 1990-1991. He was an 0861 Scout Observer/9999 1st Sgt. He rode prior to his Military career on a 1974 Kawasaki 500 triple. He notes this was a smokin’ fast bike, but due to change of lifestyle, priorities, and the ever powerful dollar, he got away from riding until a few years ago. In 2009 things changed a little bit lifestyle wise again and he decided that he had earned it. He took a trip to Chipp’s in Osceola (great guys he states) and picked up his latest ride. He now is the proud owner of a 2001 Electra Glide Standard. He picked out this bike because of the style and comfort

of the ride. He lowered it and changed to a Badlander seat to drop the ride height, and played with the exhaust a little to give it the ever authoritative Harley “voice”. Plans for the future include his dream of doing an olive drab and black paint scheme to go with his Military frame of mind. This summer he is looking at a road trip to North Carolina. He has a regular group of friends that he rides with, and is also a Lifetime member of the VFW. Another thing he added was being Chaplain with Racers for Christ at Eddyville Raceway Park. Ever been cruising down the road and watched someone totally ignore the SHARP CURVE AHEAD warning sign? Or how about the SLOW – ANIMAL CROSSING signs? If you’ve ever been out to Sturgis, you’ve seen the consequences of this action multiple times in one day. Ride Needles Highway and before the day is out, you’ll come upon a group of bikers at the top of the ravine that parallels the road, all of them looking down at one of their comrades who thought he could outride the laws of physics. And Custer State Park is a great place to meet up with the bumper of a car when the driver slams on his brakes so his wife can get a picture of the cute donkeys. Too fast, too close, too bad. Similarly, laws are usually meant to protect others from our own lack of responsibility. I think we can all agree that the law against texting and driving is logical. If not followed, anyone riding on a cycle near the texting driver will be in grave danger.

F b 11th andd 12th brought b ht some rather th chilly hill weather th February to Central Iowa and the Iowa State Fairground. This did not keep the crowds away from the largest show and swap in Iowa though. The place was standing room only for a large portion of Saturday, and Sunday brought some more mild temperatures, and a great crowd then as well. All had a blast, and at last report, no one lost and eye, but many were entertained. From the vendor area, if you needed something biker related and cannot find it at the Capital City show, you probably don’t need it. For the bike show part, there were so many cool rides that it was hard to walk away. No matter what type of two wheelers are your deal, you can find s me so meth thin ingg cool. I like TJs and TB as much or more than anybody else (I’m especially fond of TJs 6 pack and a pound! And their green hot sauce... don’t get me started! YUM YUM!!!) But there’s nothing that can be subs tuted for “authen c” Mexican food. Given the influx of people from “south of the border” to our area in search of the American dream, authen c Mexican ffood fo d isn’t i ’t as hard h d to come by as it used to be. We us contemplated the co roving “lunch vans” ro that you see here th and there (yes, an even Perry has one ev or two) but felt that might be a th li le too authen c for our diges ve fo systems, that and the temps, although they have been unseasonably mild, have not been conducive to outdoor dining. Our search landed us at Casa De Oro on 2nd Street in Perry; they also have loca ons in Creston, Harlan, Jefferson and Red Oak. When we entered we were met by a waitress who seated us and took our drink orders. In a few moments she returned with our drinks and our complimentary fresh, warm tor lla chips, a bowl of salsa and a bowl of cheese dip. I would describe the salsa as the hot side of mild with excellent flavor. Also when dipping into the cheese sauce make sure and dip deep to get some of the peppers that end up sinking to the bo om. The menu isn’t just filled with burritos, enchiladas and tacos as one might expect, it also has entries for seafood, steak, salads and chicken, of course all with a Mexican theme. They also have a kids menu and an American sec on in the menu (although I don’t know why you would go to a Mexican restaurant to eat American food!). Lynne e chose the Miguel Special
(I don’t know who Miguel is but his special is definitely special!) which was comprised of shrimp and scallops, sautéed with mushrooms, served with rice and your se choice of refried or Oya beans ch (which are cholesterol free) (w and an tor llas. Guacamole, le uce and sour cream rounded out the toppings. I ro chose to go for the most bang ch for my buck and went straight fo to the combina on menu where I found combina on w number 14 to my liking. It nu consisted of 1 Chile Relleno (I co had to ask, it’s a stuffed chile), ha 1 Enchilada (your choice of beef, cheese, chicken or picadillo, I chose beef), 1 pi Tostada. All the combina ons To include rice and refried or in (cholesterol free) Oya beans. Besides being some of the best Mexican food I have ever tasted the biggest surprise was finding the Chile Relleno was not only an absolutely HUGE chile but it was also wrapped in an egg omelet! l t! Talk T lk about b t an explosion l i off flavor!!!! Not only did the food raise the bar but the service was tremendous! Lynne e summed it up best (and she said I could quote her so I think I will!) “The a en veness of the staff was not only remarkable, it was excep onal!” If you’re looking for a restaurant with great service that serves authen c Mexican fare, look no further than Casa De Oro at any of their five loca ons. While watching a recent episode of “The Chew” on ABC, Chef Michael Symon taught us all how to virtually “corn dog” anything! How cool is that? “CORN DOGGIN’ IT BATTER Perfect for “corn doggin’” anything on a stick! Shrimp, hot dogs, whole mushrooms, skewers of steak or chicken, kielbasa......you name it, you can “corn dog” it. 1 Cup of All Purpose Flour 1 Cup of Corn Meal 2 Tbls. Sugar 1 Egg - lightly beaten 1/2 tsp. Baking Powder 1 Cup of Half & Half (Michael uses Whole Milk) Salt & Pepper to Taste (Michael suggests Kosher salt) Preheat vegetable oil to 365 degrees Fill a large skillet 3/4 full Add whatever you’re “corn doggin’ and dredge thru beaten mix and when oil reaches desired temp. Watch as dough gets all puffy and golden brown. Remove to drain on paper towels. CHIPOTLE MAYO AS DIPPING SAUCE 1 Cup Mayonnaise Juice & Zest of 1/2 Lime 3 Tbls. Pureed Chipotle In Adobo Sauce (in grocer aisle in Spice or Mexican aisle) 2 Tbls. Chives; finely chopped On that same episode of The Chew, Carla Hall showed us how to “blacken” just about anything we wanted. Love the versatility of these recipes on this episode. Use on poultry, fish or meat. I’m going with BLACKENED PORK CHOPS 6 Large & Thick Center-Cut Pork Chops; Bone In Blackening Mix: 3 Tbls. Smoked Paprika 3 Tbls. Sweet Paprika 2 Tbls. Cayenne Pepper 1 Tbl. Onion Powder 1 Tbl. Garlic Powder 1 tsp. Dried Oregano
1 tsp. Dried Thyme 1 tsp. Salt 1 Stick of Melted Butter Place a cast iron skillet on medium-high and just let it get smokin hot. Do not add any oil, butter or anything to the skillet. Just dry. Combine all dry ingredients in an oval glass casserole bowl. Add melted butter and stir well to combine. Add one chop at a time and make sure each side is coated well. Place chops in screamin’ hot skillet (if cooking chicken, place skin side down first) and turn your vent on high and just let it smoke up the joint and get good and blackened on each side. Just move iron skillet directly from stove to oven and let go about 30 minutes in a 350 degree oven. Damn.....this is eatin’ KING KONG CINNAMON BUNS Same episode of “The Chew”, Daphne Oz shows us how to make Cinnamon Buns that literally are the size of 2 “Grands” style ones’ put together! Betcha’ can’t eat more than one! Line a baking sheet with parchment paper 1 Tbl. Cinnamon 1-1/2 tsp. Vanilla Extract 2 Sticks of Butter (room temp) 1 Cup Granulated Sugar 1 Tub of Cream Cheese; softened 1 Cup of Chopped Pecans; toasted You need to get 2 buns out of 1 sheet of pastry dough, so go according to how many sheets per box as to how many Monster Buns you want to make. Mix all ingredients above together Roll out 1 piece of puff pastry onto a floured counter top to 1/2” thickness. Spread a generous amount of mixture on the entire pastry sheet. Roll pastry up into a log. Refrigerate for 30 mins. and then cut log in half. Repeat this until you have as many Monster Buns as you want. Preheat oven to 375 degrees. Put your buns in. While they’re baking; in a sauce pan over medium heat, combine the remaining butter mixture and tub of cream cheese until combined. Take off heat as soon as you see mixing as it will start to “break up” quick. Generously frost semi-hot buns (too hot & will just run off) sprinkle with toasted pecans and grab a big glass of milk! Oh, baby...come to MaMa Thunder!

From the Woman’s Seat Having not taken to the road since the fall this time of year can get tuff. For myself this time of year gets busy with swap meets, new product shows, bike shows, and not to mention the everyday bump and grind. The hunger to ride is almost over powering. I miss hearing, feeling, and experiencing the roar of the engine as I travel down the road. Does this mean that I am a biker? When you ask others the meaning of a biker, your response can be different.
Mike Reasoner Freedom Tim Gessert Biker, a true biker in my opinion is someone that has the passion to ride under any condition, some one that would rather ride than drive, even if rain is in the forecast. Even though winter provided many good days to ride, the REAL season is closely upon us now! Again I say, YEA Bud-DEE. I clenched my teeth every time a friend called on a sixty degree day and asked if I wanted to go with, I usually had something smart to say back, but my ride is still undergoing the “knife” of change, although, I am chompin’ at the bit to get it finished, the maiden voyage thing and all. But to the rest of those who were lucky enough to be out there this winter, I say this, I just hope you don’t have to put yours up in the prime of the season for repairs you should have done this winter!

So let’s take a ride down that road so to speak, because as the cold weather is turning warmer, there is still a cover of the white stuff, so with a plethora of swap meets scheduled, and everybody has a new gadget they want to add or change in their ride, either for appearance or performance, get out there and do some horse trading. You never know, you may just find a treasure in the middle of a junkyard! I usually do, connecting cash flow of the right amount, and swap day together is the real trick, but, I think I am prepared this time, well, maybe! I want to remind all you “enthusiasts” out there, have your bike checked out, maintain what you can yourself, and leave the tougher stuff to the smart guys who know. If your tires are thin, don’t try to get that extra mile from it, I can guarantee you, you will be sorry you tried. Fuel lines should be inspected, cables and levers working freely or need to be replaced if necessary, chains or belt need adjusted, wires making their connections, lights should be bright not dim, so wash the crud from the lenses, shifter and linkages operating smoothly, just to run down a few. Now, I do realize there are a greater number of you with “NEW” bikes that don’t need this much attention, but DO IT anyway, get to know that hunk of metal underneath you, it is your best friend, and you should BOND with it, some of the “old schooler’s” would be proud to see you take it seriously, whether it is needed or not, it’s a relationship that will always need attention, and if you take care of your friend, it will damn sure take care of you, and when you need it the most! But what do I know? Hell, take your chances if you want, I’m just too old to push a 987 lb. machine all the miles that I have in the past, and I’ll never let it sit on the side of the road while I “go get” a truck and/or trailer. Sieben C.O.I.R. of Iowa Lt Commander ABATE of Iowa Legislative Officer The EPA is a group of appointed bureaucrats given the power to regulate just about everything. What they’re up to now is trying to unilaterally require raising the 10% ethanol standard to 15%. Unfortunately, they have the power to do this. “The EPA’s decision to allow the E15 into the marketplace will impact every American who owns a car, lawnmower or boat” said Representative Jim Sensenbrenner (R-WI). Auto makers insist that using E15 will void warranties, lower fuel efficiency and cause premature engine failure. The EPA however, is basing their decision upon only one “in-house” test which ignores evidence showing that E15 gasoline has a negative effect on engines.
Riders should pay close attention to this since no motorcycles are approved for use with E15. The AMA says that E15 burns hotter than gasoline containing less ethanol. This causes overheating since many air-cooled motorcycles cannot dissipate the added heat. E15 may even void the manufacturer’s warranty. We need to write our legislators, on the federal level, and convince them to help pass H.R. 3199. This important bill would require the EPA to seek independent scientific analysis on the effects of 15% ethanol blend (E15) gasoline.
