All about his training camp at Port Haverigg

Once upon a time... ...There was a castle named Saltmarshe, located within a peaceful rural setting, close to the town of Bromyard, where nowadays our amazing new park is laid!

Although the Castle itself was demolished many years ago, parts of the outer walls and turrets still remain together with various outbuildings and stables, making this a historic and peaceful site.

THE WORK HAS ALREADY STARTED! As we’ve announced in the last Newsletter, Wyldecrest Parks has recently acquired its first site in Herefordshire and a massive refurbishment programme is planned for the park’s upgrade over the next years. The development is now under way! Besides the brand new signage and continuous maintenance works, the park has seen its water supply upgraded. With essential replacements and developments, the water service has truly improved throughout the entire site.

A new one way system with a 10mph speed restriction is now in place in order to improve the traffic and pedestrian safety around the park and works are also being carried out into the park’s electric supply system.

But it won’t stop here…watch this space!!!

Autumn Suggestions Asparagus, Peas & Salami Risotto

Ingredients 2 sun-dried tomatoes, finely chopped,

1 generous tsp unsalted butter,

plus 1 tbsp of their canning jar oil

at room temperature

10 asparagus, cut into small pieces

1 handful of grated parmesan cheese

8 German salami slices, cut into strips

Olive oil to taste

½ cup frozen peas

Pinch of black pepper

1 cup Arborio rice 1000 ml hot vegetable stock 2 eggs

The Method Combine the sun-dried tomatoes oil with 1tsp of olive oil into a large non-stick pan and bring it to the heat. When hot, add the asparagus, sun-dried tomatoes and salami and sauté for 2 to 3 minutes, stirring occasionally. Then add the rice, season with pepper and let it all fry for 2 minutes more, frequently stirring. Add now to the pan 2 ladles of hot stock, stir gently and let it cook on medium heat until the liquid evaporates. When the broth has been

absorbed, add again two more ladles of hot stock as well as the peas. Always let the liquid disappears again before adding more. Repeat this process until the rice is cooked through. Remove from the heat and stir in the butter and grated cheese. Involve well and gently. Serve the risotto straight away with a poached egg on top and scatter everything with an extra pinch of parmesan and a drizzle of olive oil. Tip: You can mix water with some leftover stock to poach the eggs!

Lemon & Almond Cake

Ingredients 225g unsalted butter, at room

150g ground or finely chopped

temperature

almonds

225g granulated sugar

1 ½ tsb baking powder

4 eggs, beaten

1 tbsp honey

½ tsp almond extract

Lemon curd

Zest of 1 ½ lemon 75g plain flour

Whole almonds to decorate

Steak Sandwich with Mozzarella & Asparagus

Ingredients 1 big ciabatta, cut halfway

Juice of ½ lemon

1 medium sized skirt beef steak

Pinch of salt and pepper

2 handfuls green salad leaves

Balsamic vinegar to taste

6 asparagus

Olive oil to taste

(1 handful) 1 mozzarella, cut into slices

The Method

In a large bowl, beat the butter with the sugar until soft and pale. Add the eggs slowly, whilst continuing to beat. If the mixture starts to break, just add 1 teaspoon of flour. Add the lemon zest and almond extract and set aside.

Distribute the salad leaves and mozzarella slices between the bread and set aside.

In another bowl, mix the flour with the ground almonds and baking powder. Using a metallic spoon, gently incorporate the dry ingredients into the liquid mixture until smooth. Pour this batter into a greased round tin and place it in a preheated oven to 190°C for about 40-45 minutes or until the cake is cooked through. Remove from the oven, without turning it off, and allow the cake to cool a little bit before removing from the tin.

Bring a grill pan to the heat. When really hot, add the steak and season with salt and pepper. Cook the meat accordingly to your own taste. Remove it from the heat and let it rest for 2 or 3 minutes before slicing. Return the same grill pan to the heat again and add the asparagus now. Season with a small pinch of salt and drizzle generously with the lemon juice. Grill for 3 or 4 minutes. Add the steak slices and asparagus to the bread. Drizzle with olive oil and balsamic vinegar and serve with some roasted ripe vine tomatoes.

Meanwhile, arrange the almonds in a tray lined with baking parchment. Place it in the oven for around 8 minutes or until they start to be slightly toasted. At this point, drizzle them with the honey and return the tray to the oven for about 8 to 10 minutes more, until caramelised. Remove, allow to cool and then coarsely chop them using a sharp knife. To serve, brush the top of the cake with your favourite lemon curd (if too thick to brush, just add a few drops of hot water and mix well), sprinkle with the caramelised almonds and help yourself!

Extreme Makeover! Our Harewood Park resident, Steven Tully, has decided to do a full refurbishment into his beloved Park Home located in Andover, Hampshire! The project was carried out by SH Park Homes and it involved a complete refurbishment of the inside of the home which, amongst many other transformations and improvements, has now new ceilings and wallboards, a larger and renewed bathroom and a brand new open plan kitchen. “My house really looks like a home for me now! Park Homes - Do I need a Solicitor? This is a question that I am regularly asked. The answer that I would normally give is that it is up to you. But how would you go about making this kind of decision without knowing all of the relevant factors? I will try and assist you in finding your way to making the correct decision. In terms of buying and selling a mobile home, you do not have to have a solicitor in the same way that you do with bricks and mortar as there is no conveyancing or land registry requirements. Following the changes to the Mobile Homes Act in 2013, the sale and purchase of a mobile home is a simple process and can be dealt with by using the 5 schedules produced by the DCLG (Department of Communities and Local Government) who also produce a number of helpful factsheets. As long as the forms are completed, the process is quite straightforward however if you feel that you would like to have your interests represented, then ask a solicitor or other legal representative to look after your interests. Similarly if you have a dispute, this is now generally dealt with by the First-tier Tribunal Property Chamber and not the County Court. The hearings (if required as cases can be determined by paper submissions only) are much more informal than the Courts and the Tribunal take into account the legal knowledge of the parties. All you have to do is tell the Tribunal what your issues are and why you believe they are a term of your agreement they will make a determination. They are used to dealing with litigants in person and will try to make you feel as comfortable as possible. Again if you feel the need to be represented you should seek legal advice and ask a solicitor or other legal representative to represent you or look after your interests. If you do decide to appoint a solicitor or other legal representative, the next question is how do you make your decision on who to choose and how much will it cost me.
