CHEF CASSIE’S PASSION FOR COOKING AND LOVE FOR PEOPLE BRINGS TOGETHER A FAMILY

There was a time in life where strong connections and personal

relationships were the cornerstone of a community. For seventeen years of my life, I had the same postman. His name was Steve. He brought the mail at the same time every day. I grew up going to the same convenient store on English, would come out from behind the cash register just to give me a hug and kiss. I could always depend on a nice home cooked meal from just about anybody’s house or from one of the neighborhood mom and pop shops. I miss those days. I never knew much about these people, but their cameos in my life are engraved in my mind. Subconsciously they were part of my family.


Now that I’m grown I can’t say that, outside of my inner circle, I’ve made much of the same connections. I could careless who my postman is, I frequent the same convenient store every day, but the cashier never remembers me. Many eateries I go to shove food out at me without the simplest “thank you�, and “have a nice day�. That is except one place. Off the corner of Kapahulu and Kapiolani is a shiny silver lunch truck decorated with the colors of Jamaica and the shaka “thrown� on the side. Within a two-mile radius of this truck, you can smell the aromas dancing through the streets. Served here is the best Jamaican Caribbean food ever to touch my tongue. I spoke with Chef Cassie, the owner of Jawaiian Irie Jerk. Chef Cassie is bringing back personal connections by serving up a distinctive taste with love and an infectious smile. WHEN DID YOU COME TO HAWAII?

I use to work on the MS Patriotic cruise ships for four years before 9/11. I was running all the islands of Hawaii. I was the head chef, and, after 9/11, the ship went bankrupt. I was living in Miami at the time, so I went back to Miami. I was the maitre d’ at a 5 star restaurant in Miami. I worked at the Forge. Have you ever heard of the Forge? NO.

You should look it up. It’s a really tight restaurant! Thai style, 5 star, extensive wine cellars: nine wine cellars. I worked for Starwood Hotels, and I was then I said “let me move back to Hawaii and do my own thing,� and here I am. I love Hawaii so much. It reminds me of Jamaica. I love the people, the food is the same as I got back at home in Jamaica, and I love it man! I say, “hey it’s not violent, you know, it’s a nice place to grow with family�, and that’s it man...paradise...right? The Starwood Hotels were supposed to hook me up with the Sheriton Hotel. I


showed up, but they couldn’t come up with the money I was making in Miami at the Western Diplomat. So, I worked for Chias Bistro for like...a month. Too much work and no money. So, I say, “let me do my own thing”, and I start to do my own thing. The over head was too much for me to open a restaurant. So I said, “let me go mobile.” So I decided to go mobile. HOW LONG AGO DID YOU START YOUR MOBILE EATERY?

blah, blah, blah. So, you know, I did the whole thing. I cook with passion. I love to cook. Whatever I’m doing has to be the best of what I can do, and to the best of my ability. Cooking to me is an art. I love to cook and see people really, really enjoy. You know what I mean? That brings satisfaction to me.

Four years ago. I drove around a little bit and then got a location by the airport. I was there for maybe a year. But that wasn’t lucrative enough. Then I got this place which is tight, man. Right in the middle of Kapiolani and Kalakaua.

The food I cook here in Hawaii is different. It’s like a Caribbean, Jamaican fusion, and it’s different. Once they get that taste they want to come back for that taste again, and so people do that. They come back, chit chat, and I chit chat and blah blah blah. We form a family. I’m a happy go lucky guy, you know?

YOU HAVE BEEN COOKING FOR HOW LONG?

I guess the food and personality has a lot to do with people returning.

Since I could walk and watch my grandmother cook, you know. I was interested in cooking since I was a baby, man. Cause of that I do stuff like my grandma use to make. All the Jamaican food and stuff like that. I never forget. I see it once, and I don’t forget it.

Also, there are a lot of Caribbeans here in the military, and I have the only Jamacian Carirbiean food here. If people know that, they’ll come here to get it. Then they’ll go off and tell their friends, and the guys in the military will tell another guy. So, I just keep cookin.

I told my mom, “hey I want to be a chef.” She sent me to culinary school,

Exactly, because of the familiarity, the food, it’s the only kind of food they can get here, and it’s a great little place to hang out, man. YOU ARE BRINGING TOGETHER THE CARIBBEANS.

And the Hawaiians. IT’S NOT JUST THE FUSION OF THE FOOD BUT -

Fusion of the people. It’s international. We want to bring that international mix! That’s why I want to open my restaurant soon. I SEEING CARIBBEANS, BLACKS, WHITES, HAWAIIANS, THE LOCAL BOYS, EVERYONE

You name it! You know what the motto is in Jamaica? “Out of Many One People� YOU SEEM TO BE A VERY CARING PERSON. YOU’RE LIKE A FARTHER FIGURE.

I am a father! I’m a father to a lot of people. If I see guys who are younger or older than I am going the wrong way, I like to set them straight. So, yeah, your right about that. I

When we think of the Holidays, we think of gathering our family together in the name of love and for good cheer. Then we send those lovely Christmas letters telling those we love what a glorious year we had. Our family is quite dear to us, but what about our family that truly isn’t our family, but truly is our family. That family that doesn’t share the same blood, but share a special love that is unusual, and quite beautiful in some strange way. There is a family bond found in friendships, coworkers, even between returning patrons and the staff or owner of an establishment. This bond is so lovely, memorable, and tough to come by. These people simply cross your path, happen to be in the same place as you, and some how walk into your life. This holiday season, EH celebrates families that are made by chance. The Hula’s and the Jels are the featured families of 2010. As a gift, they share their family Christmas letters with all of you. (Guess which family is the theatre family.)

To: You From: The Jels Family How do you sum up in one brief letter a years worth of activities? You cut a lot of corners, and just summarize. The beginning of the year was boring at best. Well that is once Mother Sara sobered up and found her way off the mountain. It probably wasn’t a very good idea to let her go hiking after a solid week of drinking. Next time we will try to keep her inside after the celebration. I fear the twins, Jared and Erich, might have begun to realize they are not only adopted, but not actually twins. I had hoped to keep this a secret from them for a few years more, but the differences are just become too noticeable.

I recently discovered coffee, and oh my God, can I say that stuff is just heavenly. Plus it has really helped me channel all my energy! I was thinking of joining a marathon, but only if they will allow me to drink while I run.

Features of 2010

Often I feature photos on my Facebook fan page. I may have chosen that picture to announce an upcoming event or to promote one of my client’s beauty and talents. It could be because I thought the image was cool or unusual. All of the images, however, were chosen because they stood out to me as having a distinctive kind of beauty that is unique, strange, funny, memorable and special.

To me, photographing comes from the heart. Rather it’s shooting a model to build her portfolio, a DJ at a slammin’ rave, or images that catch the eye while moseying down the street, getting the perfect shot isn’t all about composition. To round out the year, I am showcasing the top 12 features. Included are the explanations, straight from the fan page, as to why these photos were featured. 09/23/10: The Soul Saviour Festival is one of many festivals that allow take a small amount of money and create masterpieces. % and actors for a great night at Ward Theaters. You all should be extremely proud.

07/08/2010: I miss my Chikos. That was the # theatre folks here in Honolulu. That is where I got to know people and made new friends. We all shared birthdays there, special occasions, “just cuz� occasions and we also went there when we needed a cry together. It’s where we gathered as a family whether we knew each other or not.

I’m moving on to bigger and better things!� Soon Chikos will reopen with a brand new look that will be exciting and fun. The owners, Lelani and Quinn, are tremendously excited about the change, and I’m excited to have my second home back.

Anyway... Sabrina is an aspiring actress who has a unique and exotic look that stands out from the conventional beauty that is (I’m sorry to say) boring. That “seen it before� look and sooo over it. She has her own beauty that is ' # " # " another adventure she should consider going on, though this wasn’t something she mentioned to me. But I say, “what the hell girl! You’re hot!�

05/18/10: Beauty and the Beauty. This is a just a taste of what I did at Chiko’s with Twan Matthews and Jared Dudulau. There’s plenty more. Chiko’s is currently under construction and soon will be open better than ever!

04/04/10: Just because I like this picture. This is Bree. She is the boss demon in the upcoming Battle of the Minion. This was one of the outtake photos from the shoot. I quite like this photo, so it ended up in my personal stash.

11/8/10: This kid is insane! DJ Alex! I walked into the Warehouse (an all ages club behind Pipeline in Honolulu, ran by 00-Spot), and my feet just took off! My mind was on work, but my feet were on the music. Keep your eyes out for this up and coming DJ.


01/21/10: I used my camera phone to shoot this model who stood in the shop window of InTo in Chinatown Honolulu during First Friday (a block party celebrated once a month in the streets of Chinatown) as an artist painted his art all over her naked body while she sipped on her cocktail.

10/23/10: I’m giving this one away. A sneak peak to what you will see in the March 2011 issue. One of the best DJs in the world, Mark Farina! If you don’t know anything about Mark, then you will have to read the March issue. I had the pleasure to photograph him during Honolulu’s “Mushrom Festival” at Pipeline. The evening was off the hook!


Secretly, but not too secretly, I love the Minions. I am their biggest # ' The November issue featured the Angel Minions. Here, you have the Demons as this years #4 feature.

donates his talents to such charities as “The Passion Project� which is held in L.A. This function, which attracts thousands each # 4+ 6; Cancer� and “The Children Burn Foundation�. This is a grand example of how one’s talents can bring joy to others’ lives as well as saving them.

02/02/10: I decided to feature Dessica’s album because I believe this young lady has a future in modeling. Never mind the fact that, we are told, Hawaii doesn’t hire black talent < ' *=> need African-Americans on occasion.) I cannot see her focusing on Hawaii, but I see her going much further. With practice, training and dedication (and of course lots of encouragement) Dessica will reach her dreams.

08/17/10: This is my absolute favorite! This guy was brilliant! Seeing me with my camera, he told me to take his picture as he gave me an interview about...God knows what! He was really cool, and we had fun.
