The Importance of Imagination Do children today use their imaginations as much as we did when we were kids? Do you see your children spinning incredible tales and stories in their fantasy play like we used to when we played “cops and robbers” or “house”? Or does your child’s fantasy play seem to consist only of repetitive movements like karate chops or swiping a controller that have no story to them? Why do you suppose this is, and is it something we should be concerned about if someone grabs your toy away from you when you are four, you need to be able to imagine different ways to handle the situation, like sharing or using your words. If you can’t imagine these possibilities, you will probably just clobber the other kid to get what you want or retreat into a crying jag. If you need to figure out the answer to a high school geometry test question, you need to have the ability to imagine the possible solutions. If you can’t, you will undoubtedly fail, cheat or decide not to care. Has it ever been more important than it is today that we adults are able to imagine new ways of creating a peaceful world? In the world of child development you may hear phrases like “critical thinking skills” and “creative problem-solving abilities” when referring to goals for your child’s cognitive development. What we are really talking about is… imagination. The way to create human beings with imagination is to provide them with opportunities to develop it for themselves when they are very young. These opportunities can be

found in my creative dance program. Dancing as butterflies, an artist molding a piece of clay, being the different toys in a toy shop are just some of the wonderful things we become in class. Are you providing your children enough opportunities for this type of imagination strengthening? If they are spending hours sitting at a computer, watching television or playing video games, they are passive participants being fed someone else’s stories instead of having the time and space to dream up their own. If they are enrolled in soccer, ballet, T-ball, karate and gymnastics all in the same week, they are receiving wonderful opportunities to develop their skills. But they have little to no opportunity to use their creativity and imagination to decide how to use their free time, what fantasy to explore or what part of their world they’d like to discover more about at their own pace, in their own way. In my dance class they do! Often parents today think that if they give their children too much free time they are wasting opportunities for learning and preparing children for their futures. But these types of parental choices, though done with love and the best of intentions, are not a gift to children, according to current child development theory and research. Children today desperately need time and space to develop their creative imaginations free from adult agendas. If you want a child who is creative, healthy and self-assured, why not consider dance as a positive source for all these things. Free classes are being offered in August for the Creative Movement 4-6 year old level! Classes are on August 9, 16 and 23 at either 4:30pm or 5:30pm. Steps For Starting the End-of-Life Conversation No one wants to discuss death and dying. Yet it’s a critical time for which we ought to prepare. Many people are uncomfortable starting this conversation although they may wish to share their wishes. As an important part of estate planning, healthcare decisions need to be talked about. This helps preserve your legacy and provide peace of mind in decision-making for your loved ones. If you’ve been dreading having this talk with your own parents, children or other family members, there are a number of steps you can consider. Just ask. Before launching into this tough conversation, it’s not a bad idea to ask when they might have time to discuss your estate planning and healthcare decisions. By introducing the topic in this matter, no one is caught entirely off guard. It can help family members to reflect on what is most important and what they really want to communicate before sitting down. Aim for clarity. Do whatever you can to help make these conversations clear. Write out a list of major points you want to make ahead of time. Be prepared that family members may come with different opinions and questions they want to ask about. Family members should be aware “people with serious illness have priorities besides simply prolonging their lives. Surveys find that their top concerns include avoiding suffering, strengthening relationships with family and friends, being mentally aware, not being a burden on others, and achieving a sense that their life is complete.” Atul Gawande, Being Mortal: Illness, Medicine and What Matters in the End What this means will vary over time and personal circumstances. Family members included in the decision-making process should be aware of the ill person’s objectives, standards for a minimal meaningful quality of life, preferences for life support, memorials, etc.. Simplicity

and clarity can help neutralize feelings of anxiety. Don’t get sidetracked. This is a tough one. Likely no one really wants to talk about it, or would rather talk about something else. But you’ve got to get through it. Try to stay on task. You want to make sure that everyone walks away from the conversation with a better understanding than when it began. Keep the conversation going. While it may feel like a one-time conversation because it’s emotional, or hard to have if your loved one lives far away, remember that it’s not a one-time deal. You are simply opening the lines of conversation, not setting anything in stone. Remembering this will help empower everyone to be open and help provide peace of mind when the time comes to make difficult decisions. Need assistance? Give us a call. If no one tells us that what we are feeling is normal or that now is the time to attend to our inner world; or that yes, right now you feel like you are dying but it’s okay to feel that, then you may try to cling to who you always were and miss the chance for the joy that new life brings.

Human beings have always been evolving and our ancient ancestors knew that successful initiations required community support, and support of the unseen world. They created rites and ceremonies to mark the changes of their lives. Today we face collective challenges of a global scope. Some of us are going through inner psycho-spiritual evolution that is new to humans . . . experiences of states and stages of development that in former times were the domain of mystics and adepts, not regular people. Because this new type of change and growth along with its accompanying challenges and trials, it is not yet ‘normal.’ People can feel like they are going in crazy — when in fact they are on a great adventure into the front edges of human consciousness. This doesn’t mean your special or better than others. In fact, the minute you feel you are cerebrally superior you’re failing an initiatory trial. Pay attention! I’m writing this just to say hey, this is happening people. If this resonates with you, look around. You will find others who are undergoing this initiation — they are your tribe. Follow your intuition. Listen for guidance, signs, synchronicities. Life, Liberty and the pursuit of happiness... EXCELLENT!

The Saratoga County Fair is one of the oldest fairs in New York State. It is a snapshot of NYS from farm animals to beauty pageants; complete with a midway of carnival rides for all ages. On a personal note; I was truly saddened when I reached out to them this year for their advertising to find out Jeff Townsend, the General Manager and the man I have worked with since 2011 promoting the fair and Your Hometowne had passed away a few weeks before I called. My favorite memory is when Jeff, me, a load of friends including my friends that were also in the band; all rocked it out listening to Rhett Tyler’s Early Warning banging out the blues! We had a great evening laughing and working at the same time. I know he is very missed by his “fair family” and the community. He was just a nice guy, I am happy I got to know him.

Be joyful for others and their good fortune. Take time to do something that brings you joy. Live PASSIONATE! Don’t just simply live, LIVE PASSIONATE! Be excited! Life IS good people - really good! You are ENOUGH!

This article was going to focus on summer reading and yet, the world was spinning so fast and desperately, we decided it was time for three simple words and that no other message this minute, this day, this month would suffice. YOU.....ARE.....ENOUGH The strife, discontent, suffering we see around us is coming from a central location. In each of us, we are grappling with these three simple words and all they mean. And yet, there is a simple answer. We are enough! As humans, we begin our domestication as children and ultimately, no matter how confident we are, no matter how many loving people we are blessed with, the world and all of its inhabitants teach us who we are, where we have failed, how we don’t live up to our potential, how we would be better if we just had the perfect house, look, car or the right makeup, hair or pair of shoes. This subtle and constant barrage from every sector of society is a core toxic seed that settles deep in our psyche and affects our behaviors. The innocence we were born with as children is our connection to source and inner guidance. It is infinitely more wise than ANY knowledge we have acquired in maturity. We can reconnect and hear our inner guidance, but we must first become aware. We’ve lost our compass... It is clear to see that money and success is not a cure-all and in fact, it can be the worst of curses. We see all around us that we can live perfectly wonderful lives and still be anxious and depressed and feel ‘less than’. The root is the deep-seated message from within our minds, supported without, that we are “not enough.” This is false. This is an absolute foundation in coaching. No matter how successful, bold, confident, caring, loving, achieving you are, beware that you may be driven by a subtle subconscious demon called “not enough.” Raising your level of consciousness is about seeing and hearing this

demon, the voice of ego, that questions you and assumes the voice of everyone we have ever met and every experience we have lived, making comparisons and wielding meaningless measuring tools. As you begin to recognize the false self and its messages, you can begin to discover your true self and live from your being. Our personal “not enough” messages leak out into not enough of everything. We don’t have enough time, energy, money, possessions, space. Listen to your thoughts. Do you hear “not enough” of all these things in your mind echoing daily? We are all falling into this trap. We are living in scarcity, rather than abundance. On a global level, “not enough” leads us to fight for power, land, and resources leading humans to unthinkable cruelty. What we can do to change the world.... We need to take charge of our own “ENOUGH”. When we feel that we are enough and that we have enough, we are able to share love and compassion with ourselves and others. We are able to walk out of the shadow of fear of not enough. When we develop this clarity, we re-establish our connection to inner guidance, our own inner compass. Are we ready to face the farce of “not enough?” Are we ready to understand we are simply enough for just being here and that our purpose in life is to work through the farce and become our truest selves so that others learn to do the same? If we do this one thing, we can change our world and make a far better place than we could ever imagine. What Should You Do With an Inherited IRA? Individual Retirement Accounts (IRAs) are quite popular. At the end of 2017, investors owned nearly $9 trillion in IRA assets, according to the Investment Company Institute, a trade association of U.S. investment companies. Given these numbers, it probably wouldn’t be surprising if you inherited an IRA someday. But what should you do with it? First of all, you’ll need to be aware of some basic rules. If your parent, or anyone other than your spouse, leaves you a traditional IRA – one in which contributions are typically tax-deductible and earnings can grow tax-deferred – you can transfer the money into an “inherited IRA,” from which you’ll need to take at least a minimum amount of money – technically called a “distribution” – each year, based on your life expectancy. These distributions are taxable at your regular income tax rate. If you’ve inherited a Roth IRA, you also must take these minimum payouts, but the amounts won’t count as taxable income, because your parents, or whoever left you the IRA, already paid taxes on the contributions that went into it. (To make sure you fully understand all the guidelines on distributions and taxation of inherited IRAs, consult with your tax advisor.) It’s also important to understand how your inherited IRA will fit in to your overall financial strategy. Consequently, you’ll need to address these questions: How much should I take out each year? As mentioned above, you must take a distribution of at least a minimum amount from your inherited IRA each year – if you don’t, you may be subject to a 50% penalty on the amount you should have taken. But you can take out more than the minimum. In deciding how much to take, you’ll need to evaluate a few factors. First, of course, is whether you need the extra money to help support your regular cash flow. It’s possible you have other pools of income from which to draw, and, in some cases, it may be advantageous for you to tap these sources first. Another consideration is taxes – if you’ve inherited a traditional IRA, the more

you take out each year, the bigger your tax bill may be. Should I keep the same investments? Inheriting an IRA doesn’t mean you’re stuck with the original account owner’s investment choices. You can change the investments to align with your goals and risk tolerance, both of which may change over time. How does the inherited IRA fit in with my overall financial strategy? You’ll need to consider how your newly inherited IRA fits in to the “big picture” of your financial strategy. Are you adding redundancies? If you keep the inherited IRA largely intact, how will it affect your current investment mix? Could the added income from required distributions change your retirement calculations or even enable you to retire earlier? You may want to consult with a financial professional about these and other questions related to your inherited IRA. The person who left you an IRA worked hard for that money and thought enough of you to pass it on. Funeral Filing Let’s continue this month with our discussion of other important arrangements to be made when a loved one dies. Today we will focus on filing important documents and paperwork, and what you can expect the staff at Townley & Wheeler to handle for you during this difficult time. Depending on where a person worked or if they had life insurance policies, the amount and type of paperwork will vary from one individual to the next. One document that applies to everyone, without exception, is the Statement of Death by Funeral Director. This form is sent directly to the Social Security Administration within 72 hours of a person’s death. Information needed to complete this form includes the correct name and address of the deceased, his/her social security number and the name/ address of a surviving spouse. Social Security benefits are not pro-rated. Regardless of whether a person dies on the 1st or the 31st of the month, you will not receive a partial payment for the number of days that person was alive during the month. Townley & Wheeler will notify unions and insurance companies when a person passes away. We care for many residents who were employees of General Electric and have pensions, so there are usually survivors’ benefits claims that need to be processed. Teachers’ and other professional unions have similar procedures to follow, and you can count on us to do that for you. In Memory of Jack Moran We are deeply saddened to share the news that dedicated volunteer and life-long supporter of the Capital District YMCA, Jack Moran, has died. Much more than for his life-long devotion to the Y, I will miss Jack for the loss of my dear friend and mentor. As you know, Jack received our Lifetime Achievement Award in 2016. That award is given to an individual not only for his commitment to the YMCA but also for his life-long accomplishments in business and the community. That description was perfect for Jack, who became involved with the YMCA when he was a young boy. Jack started at the Y in the same way so many children do, because it was a safe place where he could have fun. Jack learned how to swim at the Y, how to box, and came to the Y to play basketball. Jack’s journey with the Y has covered almost 80 years. Jack is one of the original volunteers who helped form the Capital District YMCA, from the 3 independent YMCAs in Albany, Schenectady, and Troy. Throughout his life, Jack continued to volunteer for the Y, most recently as a member of our President’s Emeritus Council. Jack will be remembered for his love of the Y. When the Schenectady YMCA was on the verge of bankruptcy, it was Jack who helped organize a small group of men who, including he, loaned the YMCA the money needed to keep the Y open using their own homes as collateral. At the time I presented Jack with his Lifetime Achievement Award, I noted that we can never repay him for all that he has done for the Capital Region and the YMCA, and that our community will be forever indebted to him for his tremendous leadership and his tremendous kindness. Jack lived his life in service to others, and that is rare. Please keep Jack’s wife Mary Lou and all his family in your thoughts and prayers.

Summer Sowing

Some seeds like tomatoes and peppers must be started inside in March but the real value (savings) to be gained from vegetable gardening is from crops that we seed directly in the garden. I have to say that there really isn’t anything at all difficult about starting seeds directly in the garden... much easier than starting seeds indoors in winter. Lettuce and all the other greens like chard and spinach are good examples. Radishes are also very rewarding since you can sow a row every two weeks and they grow and mature in less than a month. Go to the garden center and pick up the “Vegetable Schedule”. It is a wonderful resource for the beginning gardener showing when the different plants and seeds should be planted. You can get one at any Hewitt’. Let’s take a look at beans. According to the vegetable schedule you can start sowing them in early May or anytime through the third week of July. As you can see, there’s plenty of time to start a crop or two of beans. Now let’s take a look at a bean seed pack.

The back of the seed pack has complete growing instructions. Following the instructions, make a little trench 2” deep as per the instructions and placed the seeds at the bottom. Then cover them with 2” of soil and water them in. Now just need to keep them moist and they’ll sprout in a week or less. Once they sprout, you’ll need to thin them out by removing any that were closer together than 6” spacing the seed pack indicated they need. It is tempting to let them all got but you’ll get better results if the plants are spaced so they get lots of light and air circulation. That’s pretty much it. All seeds work the same way...corn, beets, radishes and so on. Learn to use your Vegetable Schedule to time your plantings. Once you go through a season, you’ll see that it is possible to get a great deal of food from even a small plot. “It’d too late to start a vegetable garden” is also something beginners like to believe...that they’ve missed the opportunity to have a vegetable garden once Memorial Day has passed. If you spend some time with the vegetable schedule you’ll soon see that vegetables aren’t something that you “plant in the spring and yourhometowne@gmail.com

harvest in the fall”. There is a huge planting season that won’t even start until late June and into July. Here’s a list of just some of our summer sowing possibilities: •Basil-Sow seeds late June through late July. •Beans-Sow seeds of quick varieties until 3rd week of July. •Broccoli-Sow seeds until mid July. •Brussels Sprouts-Sow seeds until mid July. •Cabbage-Plant transplants through mid July. •Carrots-Sow seeds through mid July. •Collards-Plant transplants until August 1st. •Dill-Sow seeds late July to early August. •Escarole, endive-Sow seeds early July through August. •Kale-Sow seeds through first week of August. •Kohlrabi-Sow seeds through first week of August. •Lettuce-Sow in groups two weeks through September 1st. •Mustard-Sow seeds mid July to mid August. •Parsley-Sow seeds mid June through mid August. •Peas-Sow seeds in early to mid July. •Radish-Sow seeds until early September at two week intervals. •Spinach-Sow seeds late July to early August. •Summer squash-Sow seeds until mid July. •Turnip-Sow seeds late June to early August. Seed packs are cheap so play around with them. There are plenty at the garden center so take some time to read the backs. Pay attention to the “days to harvest” information. As of now we have at least 100 days left until frost. You can have a crop of beans in harvest in 50 to 60 days or radishes in less than 30! Many crops like Brussels Sprouts and Swiss Chard aren’t bothered by frost and can be harvested into October most years. There’s something quite rewarding about starting your crops from seed right in the garden. Try it out...you’ll be hooked in no time. Thanks for the read. That’s It!? How a Small Chiropractic Adjustment Can Make a BIG Difference One of the most common questions I get after giving someone his or her first adjustment is, “That’s it?” There seems to be some confusion initially about how the small amount of force that was put into your body in the location it was given is going to be enough to begin to bring about change toward the desired result. There are really three different issues to cover here, so let’s look at them one at a time. Issue 1: Why do you sometimes give me an adjustment where my pain is and other times you work somewhere else? Think of the last time you were in a traffic jam. You noticed the problem where YOU were, but was this necessarily where the problem was? If you are the cause of a traffic jam, then it is necessary to work right where you notice the problem. However, what if the cause of the congestion is somewhere else down the road? Even though you notice the problem where you are at the moment, the cause of the problem (which is somewhere else) must be cleared, and then you will notice an improvement where you are as well. The same thing is true of the subluxation process. Sometimes, you notice a problem right where the nerve interference occurs. Other times, you may notice it in a place other than where the subluxation exists (and many times you

may not notice it at all!). We always give the adjustment in the place that will most effectively empower the Innate Intelligence of the body to resume NORMAL function in ALL areas of the body. Issue 2: How can those few, low force adjustments really make any difference? Anyone who has ever gone to sleep with a mosquito in the room knows how a tiny thing can change an entire room! Here are three more examples of how small things can make a big difference. There are two ways to open a locked door. One way is to force your way through it with a battering ram; the other is to find the right key and gently turn it. If you move a kaleidoscope just 1/4 turn, the entire picture changes. Last, if you change just one digit in a telephone number or web address, it will take you to an entirely different place. You see, the truth is, some lightening bolts come in the form of a whisper. Our techniques allow us to be so incredibly accurate with our adjustments that we rarely have to use more than a minimal force. Issue 3: Will I get the results I’m looking for? What is your ultimate goal? Is it to have less of something (i.e., less pain, less spasm, less inflammation, less disease, less restriction, etc.), or is it to have more of something (i.e., more energy, more movement, more joy, more freedom, etc.)? Our goal is to help you consciously express the Innate Intelligence of the body as completely as possible. But, it is important to understand that progressively expressing your purpose and potential in life is a PROCESS, and all processes take TIME! Understand that as the adjustment process continues, and as you progressively make health-creating lifestyle changes and improve your focus, Your Life Energy progressively heals your body in the way and in the order that will most effectively allow you and your family to unfold into your potential. This is what “wholeness” is all about! We like to ask the question, “How do you remove the darkness from a room?” The answer, of course, is that you don’t! You ADD LIGHT. And, as light comes it fills in the darkness. The same is true of everything in life, including your health. We trust that as the conscious expression of your Life Energy is steadily increased, your natural states of vibrant health and happiness will progressively return. Summer Tips to Keep Your Cat Healthy Summer may be the perfect time for family trips and outdoor activities, but it’s also a great time to reset and make sure you’re keeping the whole family healthy, including your feline friend. Help your cat stay active, healthy and safe during the summer months by following these tips. To live their best lives, cats need to feel healthy from the inside out, and much of that stems from what they eat. Help your cat stay active, healthy and safe during the summer months by following these tips: 1. Focus on Food : Cats are natural carnivores and need the proper amount of protein in their diets. High quality foods are well worth the price. There are many brands and flavors, find a wet cat food that is formulated with approximately 84 percent of protein sourced from chicken and salmon. The high concentration of high-quality chicken and salmon helps cats maintain strong muscles and keeps them active. 2. Prioritize Playtime: Though they tend to sleep a lot, especially in the heat, cats also require exercise. Playing a cat-and-mouse game with toys that encourage aerobic activity is one way to give your cat necessary exercise and create a fun bonding experience. 3. Keep Hydrated: Cats need help to stay hydrated, especially in warmer weather. Make sure their water dish is always full and consider placing a few additional water dishes throughout the house. Whatever rooms your cat is drawn to or wherever the family spends quality time, have water readily available so your pet can easily quench his or her thirst and avoid dehydration. 4. Create a Cool Space: When the weather is warm, your cat will likely seek out cool places in and around the house to lounge. Make sure he or she has plenty of shady places to lay and that those spots are free of clutter or obstacles. Cats are curious by nature, so tuck cables and cords away, limit the amount of free-standing, sharp or glass objects and keep anything with hazardous chemicals, such as cleaning supplies, locked away to help reduce the possibility of illness or injury. 5 Keep the Litter Box Clean: Dump litter and completely scrub the box twice a month. If you’re not using a scoopable clumping litter, then the box will need to be scrubbed at least once a week and have the litter totally changed out. If the box still smells after being thoroughly scrubbed, then it’s time for a new one. Odor-causing bacteria can get

trapped in lacerations in the plastic caused by the cat’s nails. 6. Lot’s of Love: Kitties get a bad rap for being aloof and not needing a lot of affection. They need affection and love to bond with their humans. Just hanging while you watch TV will make them happy, but nothing beats a toy on a stick being held by their human!

A good education for your child means good schools, good teachers and good vision. Your child’s eyes are constantly in use in the classroom and at play. So when his or her vision is not functioning properly, learning and participation in recreational activities will suffer. All parents want to see their children do well in school and do all they can to provide them with the best educational opportunities. But too often one important learning tool may be overlooked - a child’s vision. Vision is more than just the ability to see clearly, or having 20/20 eyesight. It is also the ability to understand and respond to what is seen. Every child needs to have the following vision skills for effective reading and learning: •Visual acuity — the ability to see clearly in the distance for viewing the chalkboard, at an intermediate distance for the computer, and up close for reading a book. • Eye Focusing — the ability to quickly and accurately maintain clear vision as the distance from objects change, such as when looking from the chalkboard to a paper on the desk and back. Eye focusing allows the child to easily maintain clear vision over time like when reading a book or writing a report. • Eye tracking — the ability to keep the eyes on target when looking from one object to another, moving the eyes along a printed page, or following a moving object like a thrown ball. • Eye teaming — the ability to coordinate and use both eyes together when moving the eyes along a printed page, and to be able to judge distances and see depth for class work and sports. • Eye-hand coordination — the ability to use visual information to monitor and direct the hands when drawing a picture or trying to hit a ball. • Visual perception — the ability to organize images on a printed page into letters, words and ideas and to understand and remember what is read. Unfortunately, parents and educators often assume that if a child passes a school screening, then there is no vision problem. In reality, the vision skills needed for successful reading and learning are much more complex. Vision changes can occur without your child or you noticing them. A yearly exam allows your eye care practitioner to stay on top of your child’s visual needs, as well as ensure that your child’s prescription for eyeglasses or contact lenses is still correct. The visual system is developing along with your child, so annual prescription changes are common. The earlier a vision problem is detected and treated, the more likely treatment will be successful.

Beef and Pineapple Kebabs with Cashew Rice • 1 1/4 c. rice • 2 tbsp. soy sauce • 2 tbsp. maple syrup • 2 tbsp. rice vinegar • 1/2 small pineapple, cut into chunks • 1 1/4 lb. sirloin steak, cut into 1 1/2-inch chunks • 4 red chiles, each cut into 6 pieces • 1/3 c. roasted salted cashews, roughly chopped • 1/4 c. cilantro, chopped • 2 tbsp. lime juice 1. Cook rice. Heat grill on medium-high. In bowl, combine soy sauce, maple syrup, and rice vinegar. 2. Thread pineapple chunks onto skewers. Thread sirloin steak chunks and red chiles onto other skewers; brush with oil and season with 1/4 teaspoon each salt and pepper. 3. Grill kebabs, turning occasionally, 4 minutes. Brush with sauce and grill until pineapple is lightly charred, 2 minutes, and steak reaches desired doneness, 3 to 4 minutes for mediumrare. Transfer to plates. 4. Fluff rice. Fold in cashews, cilantro, and lime juice. Serve with kebabs. Wiggle Room: Use Brown Rice or Quinoa for a richer flavor

Chicken with Creamy Spinach and Artichokes • 1/2 cup apricot preserves • 1/4 cup balsamic vinegar • 1/4 teaspoon pepper • Dash salt • 1 bone-in turkey breast (5 pounds) • Grapes or other colorful fruit for garnish 1. Season chicken with 1/2 teaspoon each salt and pepper. In skillet on medium, cook chicken in 1 tablespoon olive oil until golden brown, 6 to 8 minutes per side. Remove from heat and squeeze lemon juice on top. 2. Meanwhile, halve artichoke hearts and brown, cut sides down, in 1 tablespoon oil on mediumhigh, 3 minutes. 3. Lower heat to medium; toss with 2 cloves garlic, thinly sliced. Stir in dry white wine; cook 2 minutes. Stir in sour cream and spinach leaves; season with salt and pepper and cook until just wilted. Wiggle Room: Personally, I would use boneless thighs. Add cherry grilled tomatoes for color and summer flavor

Grilled Veggies with HoneyThyme Vinaigrette • 2 tbsp. red wine vinegar • 1/2 tsp. honey • Kosher salt • Pepper • 1 shallot, finely chopped • 1 tsp. fresh thyme, plus more for serving • 2 tbsp. olive oil, plus more for brushing vegetables • 2 yellow summer squash, sliced • 2 zucchini, sliced • 1 small eggplant, sliced • 2 red peppers, quartered lengthwise • 1 lb. asparagus 1. Heat grill to medium-high. In small bowl, whisk together vinegar, honey and 1/2 teaspoon each salt and pepper to dissolve. Stir in shallot and thyme; let sit while grilling vegetables. 2. Brush vegetables with oil and season with salt and pepper. Grill, turning once, until lightly charred and just tender, 2 to 4 minutes per side; transfer to platter. 3. Stir 2 tablespoon oil into vinegar mixture; serve over vegetables and sprinkle with additional thyme if desired. Wiggle Room- Use whatever veggies are ripe, have fun with it. Keep it colorful, you can’t lose!

Jalapeño Mango Margarita • 1 tbsp. chili powder • 2 tsp. sugar • Kosher salt • 2 c. mango juice • 1 1/2 c. tequila • 1/2 c. fresh lime juice • 1/4 c. agave nectar or honey • 1 jalapeño, halved • Lime wedges, for serving

1. On plate, combine chili powder, sugar and 1 tablespoon salt. 2. In pitcher, combine mango juice, tequila, lime juice, agave nectar and jalapeño. Refrigerate until slightly spicy, 1 to 3 hours. Discard jalapeño. 3. When ready to serve, run a lime wedge along rims of 4 glasses and dip in sugar mixture to coat. Add ice to each glass and pour margarita mixture over it. Serve with lime wedges.
