A message from Burnt Hills is waking up! We have two new shops that opened recently, Bella Sophia Boutique and Northumbrian Cottage. Bella Sophia Boutique is located at the corner of Lakehill and Kingsley. Owner Connie Cocozzo has brought high fashion to Burnt Hills; this fabulous woman’s boutique is filled with American-made designer attire, jewelry and accessories. I attended an event a few weeks ago and bought my dress there. I had no less than 20 compliments on the dress. It is a classic design that can be dressed up or down. The best part is you can be sure you won’t see anyone in the same dress as the design lines she carries limit the production and distribution. If you are headed to the track this is a must stop shop! Northumbrian Cottage, located on Rt 50 just north of Lakehill is owned by Judith Connolly. This charming cottage is filled with vintage and modern quality furniture, home décor, jewelry, art and more. Starting July 21st Judith will be hosting Paint & Sip Thursdays, just one more reason to stop in and peruse the cottage. Make sure you check out their ads to learn a little more about our new local merchants. And there off! The Saratoga Race Course will open for the season on Friday, July 22nd. Tourist will be flocking to Saratoga and spilling over into our community. This is great news for our local economy; tourists are here to enjoy and enjoyment means spending money. Have a little patience as the traffic builds, and just remember we have something so special that people are traveling from across the globe to be here. Whether you prefer to be rollin’ on a river, hiking a mountain or casting a fishing pole into a sleepy lake you have access to one of the most beautiful places in the world just by hopping in your car and driving a half an hour. Did you know the Adirondack Park is the largest publicly protected area in the contiguous United States? Greater in size than Yellowstone, Everglades, Glacier and Grand Canyon National Park combined. It’s true and it’s ours to enjoy (respectfully). If being up close and personal with nature isn’t your thing, check out SPAC’s summer schedule. Theatre, orchestra, ballet, rock concerts, festivals, there is something going on at SPAC nearly every day throughout the summer and early fall. Introduce your children and grandchildren to the arts by bringing them to a show. Mortensen Motorsports Update for July 2016 How times have changed from back in 2011 when Mark Mortensen won the 602 Sportsman Track Championship at Fonda in the Mortensen Motorsports #1M until now in 2016. From American Racer tires back then to Hoosier tires now. From using Stewarts pump gas in our crate motor back then to using VP racing fuel in the motor now. Spending more time prepping tires now then you spent on maintenance on the whole car back then. From having a magical Teo car back in 2011 that just seemed to handle each and every night to a different design Teo car that Mark is running now that is as different as night and day. That’s dirt track racing for you in a nutshell and keeping up with it all is not an easy feat knowing that track conditions on a dirt surface can vary from week to week just like night and day as well. That being said when you garner a sixth place finish in a feature event in a season of bad luck and struggles it is something to be happy about. On June 18 in the 25-lap sportsman feature at Fonda, Mark started 10th in the Your Hometowne sponsored #1M and over the first few laps lost a few positions in the field before making his way steadily to the front. On a late race restart, Mark restarted in the eighth position but made a great move to get by three cars to get a spot in the top five. As the laps came to a close and the checkered flag flew on the event Mark lost one spot and ended up finishing sixth but the way the 2016 season has gone so far for the Mortensen Motorsports #1M it was almost like a victory. Introductions To create, to feel, to share deep emotions: this is what the gift of dance has given to me. And now, at this point in my life, I am humbled to offer this same gift to others. Let me introduce myself. My name is Dana Yager and I am the new owner of Modern Dance With Ginny Martin And Dana Yager. The world of dance first opened up to me when my mother enrolled me in Ginny’s Creative Movement class. What a wonderful opportunity that was to imagine, create, and dance, all in a gentle and nurturing environment. I continued on into college and returned to teach with Ginny after receiving my B.A. in dance from Columbia. What a privilege to have danced with her for over 25 years. I truly feel that I was able to mature into the confident dancer and self-assured teacher that I am today because of Ginny’s guidance and influence. I am determined to continue on with Ginny’s unique philosophy of dance instruction. The introduction of creative improvisation and how this can develop into more complex movement is an integral part of how I teach students to gain confidence as movers. As the classes progress through different levels, I introduce dance steps and technique in a gradual way that allows for mastery of new material without a sense of being overwhelmed. This environment of learning without pressure is vital to the happiness of my students. How and when I introduce these creative improvisations and various dance steps is incredibly important in what I do. If the exciting and creative world of modern dance is of interest to your child, please contact me. Enrollment for fall classes has started. I will be offering three free Creative Movement Classes for 4-5 year olds on Thursdays in August: August 11, 18, and 25 from 4:30 -5:15 and from 5:30-6:15, at the Glenridge Grange on Pashley Road.

Your Health Is Like Your Bank Account If someone were taking small amounts of money out of your bank account every day, would you want to stop it before it got so bad you finally noticed it and sadly exclaimed, “Look where I’ve ended up?!” Or, would you want to stop it right away - even before you noticed a change in your balance? What if you had the ability to make sure that instead of losing a little money every day, you were actually ADDING to your balance? Wouldn’t it be nice to be able to say those same words as in the scenario above - but with excitement and joy - “Look where I’ve ended up!!!!” This is actually very much like what can and does happen in your body every day. You see, your body is constantly changing. You have hundreds of trillions of cells in your body, and there are thousands of processes going on in each and every one of those cells, every second you are alive. It is quite literally impossible to stay the same even from moment to moment, let alone day to day. Once you understand this, that you are CONSTANTLY changing, you can also understand that your body can only change in one of two directions each day overall; It can either get a little better, or a little worse - a little stronger, or a little weaker. If you want to make sure you are growing stronger each day instead of getting weaker, you will need a positive focus and a healthy lifestyle (both of which are in your control), AND you will need a clear neurological CONNECTION between your brain and your body (THIS, is also in your control...with a little help). A clear brain-body connection is necessary because the only way your individual parts can function is if they are connected with your brain. PLUS, the only way all of your PARTS can work harmoniously TOGETHER for the benefit of your WHOLE body is if they are all connected to each other. This is what your nerve system does - it CONNECTS all of your parts together so they can communicate and work together. Now, because your spine and nerve system are so intimately connected with each other, whenever you lose alignment or function in your spine, you also partially lose the connection in the nerves between your brain and your body (you become “subluxated”). When this happens, the parts of your body can no longer work individually or together as well as they should, and you get a little weaker each day you stay subluxated. Most of the time, people are unaware that they have become subluxated, as it usually takes awhile for symptoms to show up. What is Art?

So……bit of a contentious question for some!

Hi, I am Judith Connolly, owner of The Northumbrian Cottage. Art to me does not just mean pictures on a wall, it is part of everything we see, everything we do, say and believe. I firmly believe that Art is for all and everyone should have the opportunity to access all forms of art. One way to access Art is to go to a “Sip and Paint” session. These sessions show that everyone has it within themselves to be creative and a Sip and Paint is a great environment to let go and simply enjoy! Art is a great way to relax, learn a new skill, rekindle an old skill, meet old friends and make new friends. Paint and sip offers everyone the opportunity to remember those creative urges often started in school, in a safe and welcoming place. Starting July 21st I will be hosting Paint & Sip Thursdays, details are below. The quote “you learn something new every day” is attributed to many people but how true it is for most of us and at The Northumbrian Cottage the watercolor paint and sip sessions are suitable for

Why You Gained Instead of Lost, in the Gym You head to the gym because you know that exercise burns calories and helps you to shed extra pounds. Knowing this, you may think that losing weight should be easy with enough exercise. However the truth is that if you aren’t accustomed to exercising and are out of shape, beginning an exercise program may actually lead to an initial increase in your weight. What is it about exercise that may cause some people to gain instead of lose weight? Muscle: One of the main reasons exercising can lead to initial weight gain is that it promotes the growth of muscle. If you are not used to working out and haven’t used certain muscles regularly, after exercising your muscles will be sore and will increase in size. While you may burn off fat, muscle is denser than fat. Therefore, the weight you gain is in your muscles. Don’t sweat it. Since muscles take up less space than fat, your extra weight doesn’t necessarily translate to larger size. In fact, once you start working out, you’ll become thinner, even if you maintain your previous weight. If you see that you’re losing inches, then you know you’re on the right track. Cardiovascular activities like walking, running, or swimming will encourage the growth of lean, toned muscles. Other activities such as weight lifting promote the growth of larger, stronger muscles. If you stick with the exercise program, your muscles will soon stabilize in size and after a time, become toned. After your muscles are strong and able to handle more strenuous workouts, you will be able to burn calories faster. While it may be frustrating and disappointing to see the scale go up after starting an exercise routine, it shouldn’t stop you from exercising. You may just be building muscle faster than losing body fat. This can be especially true if you’re genetically prone to building muscle fast. The key is to incorporate bouts of interval exercise in addition to strength training. That way you will burn plenty of calories during your routine and be more able to shed pounds. Eating Habits: When you work out and burn calories, your body will feel the need to replace those burned calories. This may make you feel hungrier than usual, which can cause you to eat more than normal—sometimes without knowing it. A good idea is to keep a food journal to track of the actual number of calories you are consuming. At the same time, eating too few calories can be counterproductive and slow your weight loss. Without enough calories, your body may slow its metabolism. So eat plenty to keep your body well fueled, but choose healthy calories that will help your body recover after a workout and grow stronger. Hydration: Depending on the time of day you weigh yourself, the scale may read differently. Your weight can fluctuate as much as five pounds depending on the amount of water or food you have recently consumed or the amount of water you have shed in sweat. It is therefore important to weigh yourself at the same time each day. My exercise programs are specifically designed to produce results quickly. Let the festival begin. Could you just imagine a big shin-dig like the 4th of July over 240 years ago? As I read more on social activity and sports of this time, I realized that they knew how to do it. There were no picking of teams and games were informal and spontaneous. The rules seemed flexible, no scores were kept and no hierarchy was among the groups. It seemed as simple as if you showed up, you were on the team. Imagine the bonfires and the bells, canons and guns ringing into the night and music trumpeting across the great land. Toasts of celebration and the generous love of liberty flowing in our hearts. Commemorating the memories of those brave patriots who gallantly gave in defense of freedom. Closing the evening with bells and 13 rockets with red glare illuminating the nights horizon. As this vision ruminates in my head, the glory, the pomp and the parade, I can see us not so far from that night 240 years ago. Gathering with friends and family. The football game in the backyard or frisbee in the park. If you were there, you played. The grills are smokin’ with burgers and dogs. We raise our glass to celebrate, to relax and to enjoy the summers warm day. As the fireworks light the nights sky and the music plays be thankful from this end of the continent to the other, from this time forward forever more. Take a Walk on the Bright Side Focusing on the positive can transform our life experience. It is through appreciation that we find joy and hope. Negative thinking and fear has the power to paralyze us. There are times, especially in recent weeks, when tragic events in our nation and world perplex and disturb us. There are times when our empathy for others or concern for our country can cloud our life. There are times when we do not know the answer to life’s problems or if we do, we can be assured it is either more complicated or simple than we think. Changing the world is overwhelming, but a certain level of change begins with you. You can feel overwhelmed and powerless. You can watch hours of news coverage as your civic duty, however this often leads to anxiety, discouragement, sadness or anger, with no plan of action. Reversing this downward emotional spiral is possible. Just take a walk on the bright side. In response to the Orlando shooting, some examples of the “bright side” were shared in messages from cultural leaders. While there were numerous statements, two stand out as examples. Jimmy Fallon and the Dalai Lama reminded us that there is more good in this world than bad. This simple, factual reminder, from a comedian and a world leader, refocused on the positive after heartfelt condolences. Consider taking a positive lesson from an event or situation rather than putting more on your shoulders than ought to be there. Resist taking on confusion, overwhelm, anger, despair, but rather create a plan to choose your experience. This approach engages both gratitude and resilience. If you are feeling overwhelmed or unsettled by any situation, consider asking yourself this question, “Am I willing to look at this differently?” Then proceed to list for yourself the evidence you have to the contrary. For example, you are on a plane and the pilot makes an announcement that it will be a flight with enough turbulence that everyone is required to stay seated and buckled. Immediately, you may start thinking “I have to get off this plane!” and feel a panic attack arising. However, if you are open to looking at the situation differently, you realize that turbulence is normal, the pilot and flight staff have experience, millions of people fly all over the world, Walt Disney made billions on the love of ‘bumpy rides’, and the list can go on and on. Choosing to see the positive in any given situation is a skill that can be harnessed for your wellbeing. So where do you go from here? How can you experiment walking on the “bright side” when negative feelings arise? Step 1: When feeling unsettled by a given situation, ask yourself “Am I willing to look at this differently?” Step 2: List evidence to counter your initial position. Step 3: Send yourself compassion and appreciation for taking the time to do this exercise and for the initial fear or negativity you may have felt. (for example, “It’s natural I would feel this way initially...) Ultimately, we can choose what any given situation or event means to us. We can choose to feel fortunate that at this moment we are safe. Or we can choose to feel lost and in danger by evidence we see around us. We can look at horrible world events and choose hatred or choose love and acceptance. We can choose policies we believe in and appreciate that we have a right to do so. Never underestimate the role you play in making your own inner world a more peaceful place and of course, the outer world a better place as well. If you can’t read it, don’t feed it; give birds healthy, natural food Have you ever wondered what’s in one of your favorite packaged foods, grabbed the box from your pantry, read the ingredients list … and realized you still didn’t know what you were eating? The ingredients in some processed foods can read like a chemist’s shopping list. Now imagine if your backyard birds could read. What would they say about the ingredients in the food you feed them? A growing number of Americans are choosing natural foods for their pets; nearly a third say they prefer natural products. People who feed wild birds care about them just as much as their four-legged pets and want to know they’re feeding their backyard birds the most natural and nutritious options available. It’s hard to feel that confidence when reading the mystifying ingredient list on the feed bag makes you feel like a bird brain. The wild bird experts at Cole’s Wild Bird Products Co. offer some tips for ensuring you’re feeding your feathered friends a healthy, natural diet that they’ll appreciate: • Avoid seed blends that are full of cheap fillers, like oats and red milo. Fillers not only lack nutritional value, birds will kick them right out of the feeder. Select natural feed comprised of top-of-thecrop seeds and pass by seed coated with chemicals and mineral oil. • Take note of ingredients you can’t read, often it’s an indication the ingredient is a synthetic or lab engineered. Ingredients like Menadione Sodium Bisulfite Complex and Thiamine Mononitrate aren’t found in natural food, they’re man-made versions of vitamins. Since wild birds normally get all their vitamins and nutrients from natural sources, adding a synthetic version is questionable at best. The rule of thumb for buying all natural is if you can’t read it, don’t feed it! • Focus on serving feed with an ingredient list you can read and understand. For example sunflower meats contains nothing but shelled sunflower seeds. Easy, right? It’s a favorite feed to a wide range of backyard birds, too. • Feel free to supplement seed and feed with natural food you already have at home. For example, jays and woodpeckers love raw peanuts, while mockingbirds and orioles love fruit, and chickadees, blue jays and cardinals savor suet. Soak raisins and currants in water overnight, then place them on a table feeder, or purchase blends with a dried fruit and nut mixture, like Nutberry Suet Blend. To attract orioles and tanagers, skewer halved oranges onto a spike near your feeders for a special treat. • Don’t forget the importance of the right type of feeder. Dish and bowl feeders are great for serving fruits, while most birds will appreciate a terrific tube feeder for seeds both large and small. Traditional tube feeders are great all-purpose feeders, and a musthave for backyard bird feeding. • Buy feed from companies who specialize in wild bird food. How the Eyes See: Part I We see the world around us because of the way our eyes bend (refract) light. Refractive errors are optical imperfections that prevent the eye from properly focusing light, causing blurred vision. The primary refractive errors are nearsightedness, farsightedness and astigmatism. Over the next 3 months we will discuss each of these. The process of vision begins when light rays that reflect off objects and travel through the eye’s optical system are refracted and focused into a point of sharp focus. For good vision, this focus point must be on the retina. The retina is the tissue that lines the inside of the back of the eye, where light-sensitive cells capture images in much the same way that film in a camera does when exposed to light. These images then are transmitted through the eye’s optic nerve to the brain for interpretation. Nearsightedness, also known as myopia, develops in eyes that focus images in front of the retina instead of on the retina, which results in blurred vision. This occurs when the eyeball becomes too long and prevents incoming light from focusing directly on the retina. It may also be caused by an abnormal shape of the cornea or lens. The exact cause of nearsightedness is unknown, but two factors which may be primarily responsible for its development are heredity and visual stress. Some of the signs and symptoms of nearsightedness include: headaches, eyestrain, squinting and difficulty seeing distant objects, such as highway signs. Nearsightedness can be treated with glasses, contact lenses or with laser procedures, such as LASIK. In some cases, myopia may also be treated with a corneal-reshaping procedure, although results are usually temporary in nature. Nearsightedness is usually detected during childhood, between the ages of 10 and 20. It is often discovered when a child complains of not being able to the chalkboard. The condition often continues to get worse, but stabilizes in the mid to late-twenties. Nearsightedness is diagnosed by a comprehensive eye examination completed by an optometrist or ophthalmologist. Using the information obtained from an eye exam along with the results of other tests of eye focusing and eye teaming, your optometrist can determine the power of lens correction needed to provide clear vision. Every once in awhile, I like to take a look back and catch up/follow up on past columns, and use it for material for a current one. It usually seems to follow on the heels of having no real subject to write about that particular month (hmmm...I think I just gave away the great secret of every columnist. But, since the theme of this space is a look back, I’ll give myself a pass on this one.) One of this column’s favorite subjects has been Beverly Stephenson Oudt. We first met Bev, a 1948 Burnt Hills graduate, in April of last year. Not only did she provide a wonderful wealth of information (both verbally and old Spartan Hilltop yearbooks, etc, from days of BH-BL yore, but talking with her was so much fun.) So, when recently I saw that I had a phone message from Bev, I was delighted. Then I called her back and she, ever so gently, with just a hint of scolding, informed me that I still had all the materials (the aforementioned yearbooks) she had given me. Oops. Well, we made sure we got those back to her. But, in the mean time I asked her what she had been up to. She beamed and informed me that she was putting her musical training to good use. As we noted last year, Bev went to Crane School of Music (now part of SUNY Potsdam), where she studied music with future BH-BL music department head Glenn Soellner. She is still going strong with that, playing piano for folks on a regular basis, clearly loving every minute of it. This included the Burnt Hills Flag Day Parade. While she seemed to lament she had not used her music talents more in her younger days, she is more than making up for it now. It was a wonderful phone call. Almost makes me glad my tardiness in getting her goods back to her necessitated the call (just kidding, Bev, just kidding.) A short while later, I received a big envelope in the mail from Bev. It contained the program for the Class of 2016 BH-BL Athletic Hall of Fame ceremony from last month. A peek inside allows me to follow up on another past column. Last December, I wrote about Richard “Mac” McPhilomy, Burnt Hills Class of ‘52, who grew up a friend and neighbor of Glenn “Doc” Kinns in Alplaus. Mac, along with a few others was gathering information to present to the Hall of Fame nominating committee in hopes they would induct Kinns into the Hall. Well, Mac and his crew must have smiles on their faces. The program Bev sent me lists this year’s inductees. In the “Legacy” category is none other than Doc Kinns. Based on the research I did when writing that December column, it seemed as though it was only a matter of time before Doc was inducted. Incidentally, while most of the other inductees from this year are from more of a recent vintage, I did see some other potentials for future columns, namely the 1949 Girls Varsity Cheerleading Team and the 1956 Football Team. The latter team was coached by Murry O’Neil, Ed Dempsey and Dick Agar. All three were still around in the late 70’s, early 80’s; your columnist had the honor of playing for all three during those latter years. And, another former BH-BL football coach, the late Pete Barden, will be the final look back this month. I wrote about Coach Barden in August of 2014, when doing a column about baseball (for which Coach was much better known, having managed the Spartan baseball team for years.) Anyways, out of the blue, I recently received an email from Coach Barden’s son, who had come across the column almost two years after it was published. He loved reading about his dad, and much to my relief, chuckled over my mention of Coach’s fiery temper as a coach, agreeing the nickname of “The Leo Durocher of the Suburban Council” was well earned. ‘Til next time, keep those cards and letters coming.

How Can You Declare Your Financial Independence?

A beloved friend of the Burnt Hills-Ballston Lake community, Danny Ward, passed away suddenly on May 3rd, 2009. Danny had worked at Carney’s Restaurant for 27 years and he was honored by the Burnt Hills-Ballston Lake community with the launch of the first Community Field Day, held two years ago. The proceeds enabled the establishment of a memorial fund established in honor of Danny (BH-BL ’72) to recognize his commitment and love for his Burnt Hills-Ballston Lake home community. To this end, two scholarships have been established which awards annual scholarships for college-bound BHBL Seniors. To date, twelve $1000 scholarships have been awarded. The DanRan5K Run/Walk is a race formed in Danny’s memory to perpetuate the scholarship award program for years to come. Danny was an avid runner and sports enthusiast. Proceeds go directly to the Daniel G. Ward Memorial Scholarship Fund, a tax-exempt 501 (c) 3 organization.

We observe the 4th of July with sparklers, picnics and parades. And living in a country that offers so much freedom, we have a lot to celebrate. But on a more personal level, you may still be working toward another type of independence – financial independence. What can you do to speed your progress toward this goal? Here are some ideas to think about: • Free yourself from excessive fear. As an investor, it’s not hard to find something to fear. Oil prices, interest rates, political squabbles, even natural disasters – at any given time, each of these factors (and many more) might be blamed for volatility in the financial markets. In response, many people take a “time out” from investing. Don’t let fear hold you back. It takes discipline and some mental toughness to stay invested in all economic environments, but if you’re constantly jumping in and out of the market, you’re almost guaranteed to miss out on the kind of continuity and opportunities you need to move toward your financial freedom. • Liberate your investments’ growth potential. Many investors avoid investing too aggressively, wishing to lower their risk level. And that’s certainly not a bad idea. On the other hand, you can easily slip into investing too “safely” by keeping the bulk of your portfolio in investments that protect your principal but offer so little in the way of return that they may not even keep up with inflation. So, try to always maintain a reasonable percentage of growth-oriented vehicles in your portfolio. The exact amount may depend on your age and tolerance for risk, but at virtually every stage of your life, you need some growth potential. • Avoid the tyranny of debt. It’s not easy to stay out of debt. But carrying a heavy debt load is truly a burden – you’re not only concerned about making the payments, but you’re also depriving yourself of dollars that could be used to invest for your future. Try to do everything you can to live within your means and avoid racking up more debt than is necessary. And when you do whittle down your debts, put that “found” money to work. The more you put in your investment portfolio, the more opportunities you have to reach your objectives. • Free your thinking about the future. Here’s another roadblock on your journey toward financial independence: short-term thinking. Instead of seeking quick gains (which are notoriously hard to achieve), strive for steady growth. Instead of reacting to the news of the day by making impulsive moves, chart a long-term strategy that’s appropriate for your needs, and stick to it. Instead of focusing on the losses you might see on one month’s investment statement, look back over the progress you’ve made over the last five or 10 years. In short, worry less about today – and plan for tomorrow. It will take a lot of time, effort and patience to ultimately achieve your own Financial Independence Day. But once you do, you’ll have reason to rejoice – and you won’t even need the fireworks.

In order to construct a portion of the new Roundabout at the south end of the Rexford Bridge Project, we will be enacting a full closure of Route 146 (Balltown Road) for a short distance south the Aqueduct Road intersection. This closure will include both the eastbound and westbound directions. The closure will begin at 9:00 PM on Friday July 15th and must end prior to 6:00 AM on Monday July 18th. The Rexford Bridge and Aqueduct Road will remain open during this closure period. Although the actual closed section of Route 146 will be relatively short, the signed detour will be Aqueduct Road to Van Vranken Avenue to Nott Street to Balltown Road, or reverse (see attached detour map. The detour route will be clearly signed. While we are allowed to keep the road closed until Monday morning, our goal will be to have the road back open to full traffic sometime during the day on Sunday. Please consider this closure and the impact it may have on your operations or travel routes.

Classic Chimichurri Sauce

Simple Salsa Skillet • 2 cups peeled, cubed potatoes • 8 ounces skinless, boneless chicken breast, cut into 1-inch pieces • 1 tablespoon cooking oil • 1 green sweet pepper, cut into julienne strips • 1 red sweet pepper, cut into julienne strips • 1 15 1/2 - ounce can whole kernel corn, drained • 1 15 - 16 - ounce can black beans, rinsed and drained • 1 16 - ounce jar salsa • Sour cream (optional) • Fresh cilantro, snipped (optional)

Our herb gardens are ready to work for us! This classic Argentinian sauce is made for spooning over grilled meats (especially steak), but we also love it with scrambled eggs or roasted potatoes. The recipe comes from chef Michael Ollier, of Certified Angus Beef in Wooster, Ohio. • • • • • • • • •

1/2 cup chopped fresh flat-leaf Italian parsley 1/2 cup chopped fresh cilantro 1/2 cup olive oil 1/2 cup red wine vinegar 1/4 cup finely chopped onion 3 -4 cloves garlic, minced 1 teaspoon dried oregano, crushed 1/2 teaspoon crushed red pepper 1/2 teaspoon kosher salt

1. Place all ingredients in a food processor or blender. Cover and process or blend until finely chopped, with just a few herb leaves still visible. Serve immediately or store in the refrigerator for up to 1 week. Before serving, let stand for 30 minutes at room temperature.) Wiggle Room - Red Chimichurri Sauce In a food processor or blender, combine 1/2 cup chopped cilantro; 1/2 cup chopped onion; 1/2 cup olive oil; 1/2 cup sherry vinegar or red wine vinegar; 3 cloves garlic, minced; 1 tablespoon smoked paprika; and 1 teaspoon crushed red pepper. Cover and process or blend until finely chopped. Serve immediately or store in refrigerator for up to one week. Before serving, let stand for 30 minutes at room temperature.

1. In a covered large nonstick skillet, cook potatoes in a small amount of boiling water, about 10 minutes, or until tender, stirring occasionally. Drain and set potatoes aside. 2. In the same skillet, cook chicken in hot oil over medium heat for 2 minutes. Add pepper strips; cook 2 minutes more. Add cooked potato, corn, black beans and salsa. Stir gently to combine, then cook, covered, for about 10 minutes, stirring occasionally. If you like, serve with sour cream and/or cilantro Wiggle Room - substitute green salsa for red in this easy Mexican-inspired meal.

Keep the Show Going! As summer rolls along, we can begin to enjoy the fruits of our spring labor. Finally our flowering plants are leaping into life. It would seem that there is little to do now but enjoy the show. While that’s true, there are a couple of easy things we need to do now to keep the show going...deadheading and feeding. Deadheading is simply snipping off spent flowers and the seed pod that form after the flower. The main reason for deadheading it is to prevent the plant from wasting energy producing seeds. Producing seeds is the highest priority of an annual since it is their only chance at reproduction, so the plant pours all the energy it can muster into those seeds. Any energy it puts into seeds is energy that could go toward more buds and flowers. This is where we need to step in and remove the seed pods...deadheading. You would think that there would be no need to deadhead perennials since they come back from their roots every year. Perennials are ‘low maintenance’ but you still should deadhead them. The obvious reason is a neater appearance of the plant but the real reason is to improve the plant’s vigor. Even though perennials return from their roots, they still pour lots of energy into their offspring....seeds. When we deadhead perennials, we’re redirecting the energy the plant produces into more leaves which produce even more energy that it uses to expand it’s root system. Our perennials will mature more quickly and produce even more flowers next year if we remove the seed pods. Daffodils, allium and others grow from hardy bulbs that were

planted in the fall. By now the petals have fallen away and we are left with these clusters of ripening seeds. If we let them continue, they prevent the bulb from storing as much energy as they could. Once the seed pods are removed the bulb has no choice but to store the energy produced by the leaves and roots. Now the bulb will grow larger as it stores lots of extra energy. We can expect many more flowers next year if we snip away the seeds now. More flowers...nothing wrong with that idea. Even flowering shrubs benefit from deadheading. Just as with the perennials, I can expect more flowers next year if I take a little time now to snip off those seed pods. Lilacs form next year’s flower buds during what remains of this growing season, so the sooner I remove those energy-robbing seed pods, the better the show will be next year. Just a few minutes spent deadheading produced this batch of seed pods that are on their way to the compost pile...no need to waste all those nutrients stored in those seed pods. Deadheading not only makes your gardens look neater but will pay a dividend of more flowers and healthier plants...not a bad reward for such little effort. Now that we’ve stopped our plants from wasting energy on seeds it is time to add energy by feeding. To get the most flowers from your annuals, you can feed them with a soluble plant food. Soluble plant food is absorbed by the plant very quickly but only lasts a short time...especially when rain washes it away. This means that we need to use soluble plant food every couple of weeks for continuous feeding. There are a lot of soluble plant foods to choose from so it is important to pick the one that will promote the most flowers. Phosphorus stimulates root growth and flower production. Phosphorus is represented by the middle number of the tree you’ll find on soluble plant foods like my favorite, Jack’s Blossom Booster. That’s it! A little effort now (along with some sun and dry weather, please) will insure that our gardens look their best for the rest of the season and beyond. Thanks for the read.
