February is the Month for Hearts February is the month for hearts - giving them, receiving them, and taking care of them. Did you know that dance is one of the best cardiovascular forms of exercise as it combines brief bouts of high-intensity movement along with stress-relieving social connections? The National Academy for Sports Medicine suggests that there be five components for a heart-healthy fitness regimen: cardiovascular endurance, flexibility, muscle endurance, body composition, and muscle strength. Dance often meets all five of these components simultaneously. Running on a treadmill may improve cardiovascular endurance and body composition, but dance targets these as well as muscular endurance and flexibility. And, as a bonus, dance also improves balance, agility, coordination, reactivity, power, and speed. The best aerobic workouts aim for an exertion level somewhere between 5-7 on a scale where 1 is rest and 10 is extreme activity. The “talk test” is one of the easiest ways to determine exertion level. One should not be so out of breath during an activity that speech is impossible. Rather, words should sound choppy and the breath should be labored. A study by the University of Brighton involving over 48,000 residents of the United Kingdom, found that those who danced regularly had a 46 percent lower risk of cardiovascular death over a decade compared to those who rarely or never danced. This is slightly better than the percentage for routine walking. The statistics were also slightly better for women than men. Dance also provides unique benefits not typically associated with other low-impact exercise programs. Put simply, dance is creative and fun in a way that monotonous exercise routines simply cannot be for most people. The University of Sydney found that the “playful social interaction of dance, when coupled with its intense movement, can be a powerful stress relief.” The release of hormones such as serotonin and endorphins are well documented among dancers. Fitness experts agree that people are much more likely to commit to an activity that excites them. This pushes individuals to exercise longer purely because it is enjoyable. Dance inspires participants to engage in physical movement as it is exhilarating and social. There is something pleasurable about dancing along with others to music. It is primal, universal, and inclusive. Exercise can be solitary and intimidating due to specific skill sets required. But there is a dancer in all of us once the philosophy of

“dance like no one is watching” is applied. As heart attacks often happen when the organ is unable to de-stress and relax, dance is the perfect vehicle for lifetime activity. It is exercise in disguise for so many of us. In addition to heart health benefits, The New England Journal of Medicine has found that routine dance as a form of exercise is linked to a 76 percent reduction in the risk of dementia. Plus, dance encourages balance and lessens the chance of falls among the elderly. “Stifling an urge to dance is bad for your health. It rusts your spirits and your hips.” (Terri Guillemets) So be good to your heart, whether it is young or old, and dance.

The Costs of Dementia: For the Patient and the Family A recent report from the Alzheimer’s Association states that one in three seniors dies with Alzheimer’s or another dementia. Caring for someone with dementia is more expensive—and care is often needed longer—than for someone who does not have dementia. Caregivers are often family members who risk their own financial security and health to care for a loved one. Cost of Care for the Patient with Dementia—And How to Pay for It: As the disease progresses, so does the level of care the person requires— and so do the costs of that care. Options range from part-time in-home care (starting at $4,767/mo) to adult daycare (starting at $1,733/mo) to assisted living facilities ($4,25/mo) to nursing homes ($11,710/ mo). These figures are provided by Genworth in a study dated 8/14/17 for the Albany, NY area. Health insurance does not cover assisted living or nursing home facilities, or help with activities of daily living (ADL), which include eating, bathing and dressing. Medicare covers some in-home health care and a limited number of days of skilled nursing home care, but not long-term care. Medicaid, which does cover long-term care, was designed for the indigent -- the person’s assets must be spent down to almost nothing to qualify. VA benefits for Aid & Attendance will help pay for some care, including assisted living and nursing home facilities, but only for veterans and their spouses who qualify. Financial Costs for the Family: The financial impact on caregivers is substantial. Caregivers report they pay for care with their own savings and retirement funds. Many report having to reduce their own
quality of living in order to pay for care. Work absences, reduced hours and chronic tardiness can mean a significant reduction in a caregiver’s pay, and negatively affect a career. Caregivers who lose income also lose retirement and social security benefits. Caregivers may be sacrificing their children’s college funds and their own retirement. Emotional and Physical Costs to Caregivers: In addition to the financial costs, caregivers report increased stress, anxiety and depression. While a high percentage of caregivers have some positive feelings about providing care for their loved one, many also experience depression, mood swings and resentment, and admit caregiving negatively affects their personal health and well-being, reporting an extremely high level of stress and stating relationships with other family is affected. In addition, these caregivers often have high blood pressure, an increased risk of developing hypertension, spend less time on preventative care and have a higher risk of developing coronary heart disease. More than half did not feel qualified to provide physical care and worried about the lack of time for themselves and their families. Conclusions: Planning is important. Seek assistance. We help families who may need long-term care by creating an asset protection plan that will provide peace of mind. Comprehensive planning should be undertaken early and updated periodically. A message from “February, when the days of winter seem endless and no amount of wistful recollecting can bring back any air of summer.” ~Shirley Jackson The shortest month of the year is truly the longest! The holiday season long behind us, spring seems so very far into the future. We’re a tough bunch; us up-staters, but even the toughest of us get the winter blues occasionally. Our conversations revolve around the sun; literally and figuratively. We jump for joy at a mere peek at the sun! I’ve called my friends and said- quick look outside, the sun is out!!! Our weather forecasters deliver the news of sunny days with all the pomp and circumstance of a royal wedding announcement after a long stretch of gloomy weather. They gleefully smile as they point to the extended forecast with their little cartoon suns all lined up in a row. They take ownership in their good news; as well they should; since forecasting the weather in upstate NY must be one of the most thankless jobs around. “Every mile is two in winter” ~George Herbert The challenges winter presents are diverse and plentiful: from the required seventy thousand layers of clothes to ward off the chill to the walking at the breakneck speed of 1 inch per minute due to the fear of slipping on an icy patch and breaking your neck. But, they say the best way to deal with adversity is with a smile on your face. I will be the first to tell you, us NY’ers are hilarious! We build snow effigies of just about anything. Giant sharks eating mail boxes, snow monsters strategically placed to peer over our neighbor’s fences, and some “other things” we are hoping our neighbors don’t build…

Snow; it really is magical. When it is snowing outside everything looks extra beautiful. When the storm has ended and the clean up is finished don’t forget to take a minute enjoying the quietness, the crispness, the smell of fresh snow. We have had a long winter, we all need to take the joy when we can get it. Sometimes we need to be reminded to just stop and smell the snowstorm. Plus, if you live here you know; you are never to old to have a snowball fight! “Crocuses are Mother Nature’s apology for February.” ~Me Personally, I cannot wait to Spring Forward! I love the mornings and I look forward to that first morning when I go outside to get the dogs and I don’t see my breath. Maybe I’ll have to pick my way over some snow and ice, but I won’t have to haul on a coat and shiver while doing this basic ritual. I consider this a triumph. Maybe I won’t yet see the ground, and the view out my office window will still look like a black and white painting, but when that day comes I’m going to believe winter’s finally creeping away. In July, 1863, Senator Edward Everrett got up to speak on the solemn occasion of the dedication of the military cemetery in Gettysburg. He spoke 13,000 words commemorating a 3 day battle where more American lives were lost than in our many years of battle in Afghanistan and Iraq. Then, Abraham Lincoln stood to speak those famous words written by his own hand. 273 words later, the famous “Gettysburg Address” took its’ honored place in our history. To his credit, the next day, the Senator sent a note to the President stating: “I should be glad if I could flatter myself that I came as near the central idea of the occasion in two hours, as you did in two minutes”. We all meet people that say a lot of words, but really, don’t say much at all. And others get to the point succinctly and effectively. Which person holds our attention? Which persons’ words and thoughts stay with us later? When musicians improvise, it is much the same. Some can dazzle us with their speed, technique, and absolute command of their instrument. But, after listening awhile, our attention wanders. Later, we remember how “great” they played, but can’t recall much of the performance. Others musicians play just a few, well space notes and phrases…and you can hum them years later! So, when YOU improvise, develop a THEME. Reach into your emotions, and share it with your listeners. Like knowing where home is, and taking a tour of the surrounding neighborhood, then returning. Cultivating Self Love: Get at the Heart of the Art of Loving Yourself! “To love oneself is the beginning of a life-long romance.” ~Oscar Wilde Self love is essential for living well. According to the late Louise Hay, an icon in the field of coaching, “We are divine expressions of life and we need to know that, experience it, rejoice in it.” We know this at the core of our being, but often wastes away buried deep beneath the clouded mind, steeped in insufficiency. Our psyche or “ego”, a word commonly thought of as boastful, prideful or overly in love with self, is considered the mind’s voice of judgment, lack, comparison, doubt, and fear in the field of positive psychology and spirituality. Although we may think we are our thoughts, this voice of ego is not who we truly are but rather incessant chatter narrating the world around us. In many cases, this narration can be unkind and may hold us from living fully. From the ego, we live our lives in a place of lack and this includes a lack of self love. We may think we are not good enough, we don’t have enough, and that we are not enough. These thoughts are extremely common and viciously disempowering. Our ability to raise the level of consciousness in the world lies in our ability to believe the that we are all enough. We were born ‘enough’. We have everything we need. This is the reality of our ‘being’ rather than our thinking. When we live from our being, we are able to fulfill our potential, loving others and living with meaning and purpose, kindness and compassion. Withholding love from ourselves, is not humility, but rather a barrier to loving others sufficiently. We are not fully loving others (children, spouses, parents, friends, mankind) if we do not love ourselves. While we think it may be desirable to think less of or be unkind to ourselves, it is damaging. We should never keep love from ourselves! When something goes wrong, do we beat ourselves up or give ourselves comfort? By giving ourselves loving comfort and understanding, we create a sanctuary that nurtures us and allows us to enjoy life.

Pain: The Gift that Nobody Wants While no one may ever actually wish for pain, it truly is an important gift we have been given. You may never have thought of pain as a gift before, but once you understand how valuable it is in helping you survive, heal and grow, you just might. Many people talk about having a high pain tolerance. But think about it, pain wasn’t meant to be TOLERATED, it was meant to be NOTICED! Pain is your body’s way of forcing you to become more aware of yourself and your environment and warns you that something is wrong and to use caution in your actions during the healing process to avoid further damage. Do you see the value in this? Pain can also cause us to reflect upon how we may have contributed to our current situation ourselves, thereby allowing and enabling us to learn. Do you see the value here as well? Without the lessons we learn from our experiences, we can never grow. Most people’s first reaction to pain is to use or take something try to eliminate the pain. But killing the pain without asking WHY your body is warning you is not only foolish, but dangerous. If the check engine light comes on in your car, you have two choices. The first is to take a piece of masking tape and put it over the light so that you are no longer aware of the warning your car’s internal mechanisms are sending you. In fact, you can go right on driving for quite awhile, totally oblivious that the problem that caused the warning light to come on is still there. But, you also know that if you do that, down the road you will run into an even bigger problem that will take a lot more time, effort and money to fix, if in fact it’s still able to be fixed at all! When you take steps to make
sure the reason for the warning is addressed, your car’s master control system stops warning you and your ride becomes naturally easy and carefree again. However, it is important to learn and grow from your experience so that you can avoid the same warning again in the future. There are things you can do on your own during the healing process that will help you feel a little better as ease returns to your body. First, remember how valuable pain is. Then, relax as much as you can. Sit quietly and take some deep breaths to help return your body to ease and picture yourself doing normal activities, being productive and having fun, all the while feeling great. Drink extra water as it carries toxins and cellular debris away from the area to speed healing. Last, make sure you are listening to your body (P.A.I.N. = Pay Attention Inside Now!) and asking yourself how your own thoughts, words and actions may have contributed, and learn for the future. The number one thing you can do to help yourself is to get adjusted by your chiropractor to keep a clear neurological CONNECTION between your brain and your body, so that your Innate Intelligence can comprehend and respond properly to whatever is needed from moment to moment during the healing process. Then, as the body heals and returns to its natural state of ease, the pain (warning signal) will automatically resolve in the right amount, at the right time while continuing to provide you with the proper degree of protection and the opportunity to learn, grow and unfold into all you were meant to be. Then all you have to do is allow TIME, and trust that the highest part of you (your Innate Intelligence) is doing its job in helping you move consistently toward total integration of body, mind and spirit, so that you can express your purpose and full potential in every area of your life. Mid Winter Bird Tips
I’ve had my bird feeder up and filled for over a month now so it is time to bring it inside and give it a thorough cleaning. We need to keep the feeders clean to keep the birds healthy. In the wild, bird diseases can’t spread easily from bird to bird since the food is spread all around and the birds have little common contact. Our bird feeders attracts all the birds to only a few feeding ports so it is important to keep those ports clean. They are all eating from the same plate so to speak so is best to keep that plate clean. When cleaning your feeder, pay close attention to the inside and outside of the feeding ports since this is where diseases can be spread from bird to bird. An old toothbrush can come in handy for this. After it’s clean, soak all the feeder’s parts in a mix of 1 parts chlorine bleach to 10 part water. This will kill any germs. Let it dry thoroughly and reassemble. As difficult as this winter’s weather has been on us, it’s hard to imagine what it’s like for the wild animals out there...especially the tiny birds. To endure such unrelenting cold, winter birds need to stay active, and their activity is fueled by calories and protein. The trick to attracting birds is providing calories and protein in forms that they prefer. Black Oil Sunflower is higher in calories per pound than Gray Striped Sunflower. Many people believe that striped sunflower must be better because it costs more. In reality, the reason striped is more expensive is due to supply and demand. Striped sunflower can be machine hulled with the kernel intact. Hulled sunflower kernels are consumed by humans in a variety of forms. These alternate demands on the supply of Gray Striped Sunflower are what keep the price higher
than Black Oil Sunflower. Black sunflower is used only for bird feeding. I’ve found that the smaller black seed are more easily handled by chickadees and other small birds. The second most important food for wild birds is fine cracked corn. Cracked corn appeals to ground/platform feeding birds like cardinals, doves and juncos. When you shop for cracked corn, be sure you get FINE cracked corn. Medium or coarse cracked corn is too large to be beneficial to small wild birds.
Suet provides maximum calories to help birds stay warm and is a favorite of nuthatches and woodpeckers. Suet comes in lots of flavors like peanut, fruit and nut, blueberry and more. I like to buy the ten pack so I have a ready supply during these coldest days of winter. Make sure that you keep your feeders topped off. Once you start feeding the birds, they become dependent on the supply you’ve been providing. This is the time they need the food the most. During extended periods of sub-freezing weather, birds will have a hard time finding water. If you provide fresh water, the traffic to your feeding stations will increase dramatically. You can refill the water source each day or use an electric birdbath warmer to keep ice from forming. I only plug mine in during the very coldest days of winter. Thanks for the read. When a Loved One Dies By Kathleen A. Sanvidge, Licensed Funeral Director
It’s hard to believe it’s been nearly five years since I’ve lovingly taken on the responsibilities here at Townley & Wheeler Funeral Home. I have had the privilege of getting to know so many of the wonderful people who make up our community. During that time, I’ve spoken to a lot of you who have questions and concerns about what happens when a loved one dies. Many people are unsure of what needs to be done at such a delicate and trying time. I’ve decided to reach out to you, my friends and neighbors, and use this column to start a conversation. One of my favorite aspects of this profession is making those I serve feel at ease and comforted. I’d like to share that with you now, in this column. Death is not an easy topic to talk about, I know. And many people feel understandably shy or reticent about asking certain questions on a topic that often seems a bit taboo. But if I can use this series to ease the burden of discomfort that surrounds talk of death, I will feel that I have already made a difference to my friends and neighbors in this wonderful community. So today, I’m going to talk about the first steps you should take when someone passes away. I will talk about making that first call and what to expect in the hours that follow. Making that first call… At the time of passing, the best thing you can do is call your chosen funeral home right away. You will always talk with a live person when you call our home. We are available and ready to help at any time of the day or night. We will arrive at your home,
hospital or care facility shortly after you call on us. We offer as much time as you need for privacy and as you wait for other family members to arrive for their final goodbyes. When you are ready, we will respectfully receive your loved one into our care. At this point, we will discuss a very few key items so as not to overwhelm you during an understandably emotional time. These points include: when and where (our home our yours) you would like to sit down and make arrangements for the funeral or memorial service; what type of service you are planning on having and whether it will be a full burial or otherwise; your clergy information, if any, so we may notify them on your behalf; and items you will need to gather to have on hand for the arrangement meeting. An obituary should also be on your mind. But rest assured, we will, at your request, carefully and respectfully draft a full and personal obituary on your behalf. Next month, we will talk about the next steps in planning … As always, we are open to answering any questions or concerns you might have. Every question is important. The Leading Cause of Vision Loss Perhaps you have just learned that you or a loved one has age-related macular degeneration, also known as AMD. If you are like many people, you probably do not know a lot about the condition or understand what is going on inside your eyes. What is AMD? AMD is a common eye condition and a leading cause of vision loss among people age 50 and older. It causes damage to the macula, a small spot near the center of the retina and the part of the eye needed for sharp, central vision, which lets us see objects that are straight ahead. In some people, AMD advances so slowly that vision loss does not occur for a long time. In others, the disease progresses faster and may lead to a loss of vision in one or both eyes. As AMD progresses, a blurred area near the center of vision is a common symptom. Over time, the blurred area may grow larger or you may develop blank spots in your central vision. Objects also may not appear to be as bright as they used to be. AMD by itself does not lead to complete blindness. However, the loss of central vision in AMD can interfere with simple everyday activities, such as the ability to see faces, drive, read, write, or do close work, such as cooking or fixing things around the house. Who is at risk? Age is a major risk factor for AMD. The disease is most likely to occur after age 60, but it can occur earlier. Other risk factors for AMD include: •Smoking. Research shows that smoking doubles the risk of AMD. •Race. AMD is more common among Caucasians than among African-Americans or Hispanics/Latinos. • Family history and Genetics. People with a family history of AMD are at higher risk. How is AMD detected? The early and intermediate stages of AMD usually start without symptoms. Only a comprehensive dilated eye
exam can detect AMD. The eye exam may include the following: • Visual acuity test. This eye chart measures how well you see at distances. • Dilated eye exam. Your eye care professional places drops in your eyes to widen or dilate the pupils. This provides a better view of the back of your eye. Using a special magnifying lens, he or she then looks at your retina and optic nerve for signs of AMD and other eye problems. • Amsler grid. Your eye care professional also may ask you to look at an Amsler grid. Changes in your central vision may cause the lines in the grid to disappear or appear wavy, a sign of AMD. AMD has few symptoms in the early stages, so it is important to have your eyes examined regularly. If you are at risk for AMD because of age, family history, lifestyle, or some combination of these factors, you should not wait to experience changes in vision before getting checked for AMD.

What Should You Do with Your Tax Refund? You may not get much of a thrill from filing your taxes, but the process becomes much more enjoyable if you’re expecting a refund. So, if one is headed your way, what should you do with the money? The answer depends somewhat on the size of the refund. For the 2017 tax year, the average refund was about $2,760 – not a fortune, but big enough to make an impact in your life. Suppose, for example, that you invested this amount in a tax-deferred vehicle, such as a traditional IRA, and then did not add another penny to it for 30 years. At the end of that time, assuming a hypothetical 7 percent annual rate of return, you’d have slightly more than $21,000 – not enough, by itself, to allow you to move to a Caribbean island, but still a nice addition to your retirement income. (You will need to pay taxes on your withdrawals eventually, unless the money was invested in a Roth IRA, in which case withdrawals are tax-free, provided you meet certain conditions.) Of course, you don’t have to wait 30 years before you see any benefits from your tax refund. If you did decide to put a $2,760 tax refund toward your IRA for 2018, you’d already have reached just over half the allowable contribution limit of $5,500. (If you’re 50 or older, the limit is $6,500.) By getting such a strong head start on funding your IRA for the year, you’ll give your money more time to grow. Also, if you’re going to “max out” on your IRA, your large initial payment will enable you to put in smaller monthly amounts than you might need to contribute otherwise. While using your refund to help fund your IRA is a good move, it’s not the only one you can make. Here are a few other possibilities: Pay down some debt. At some time or another, most of us probably feel we’re carrying too much debt. If you can use your tax refund to help reduce your monthly debt payments, you’ll improve your cash flow and possibly have more money available to invest for the future. Build an emergency fund. If you needed a new furnace or major car repair, or faced any other large, unexpected expense, how would you pay for it? If you did not have the cash readily available, you might be forced to dip into your long-term investments. To help avoid this problem, you could create an emergency fund containing three to six months’ worth of living expenses, with the money kept in a liquid, low-risk account. Your tax refund could help build your emergency fund. Look for other investment opportunities. If you have some gaps in your portfolio, or some opportunities to improve your overall diversification, you might want to use your tax refund to add some new investments. The more diversified your portfolio, the stronger your defense against market volatility that might primarily affect one particular asset class. (However, diversification, by itself, can’t protect against all losses or guarantee profits.) Clearly, a tax refund gives you a chance to improve your overall financial picture. Love is...50! Love has been around since the beginning of time. It’s me that will be 50! Oh, yes you heard it here first. Now if you see me out and about I will most definitely deny it and continue to be 49 forever and a day. Truly I am embracing it with grace and love. As I sit quietly in my living room in front of my woodstove, a smile comes across my face. Thinking of the years gone by. There were some real doozy’s back then. Sometimes when you fall to your knees, something wonderful happens. You become humbled. You get back up and you see how far you have come. That is amazing grace. If you focus on the gap of how far you have to go, you will surely give up in it. A pastor once told me, “you can’t judge the story by this one scene.” I am glad I continued to read my story. I may be a little more worn and bent but I didn’t break. They say with age comes wisdom. Ok, well maybe it’s just lessons learned. I want to encourage you with these few words that got me to 50 with grace and love. You have to be a good cake before you get your icing! Do everything with a good heart and expect nothing in return. You will never be disappointed. Happiness is a CHOICE not a result! If you LOVE life it WILL LOVE you back! and last but not least Just... be HAPPY, make a difference, love, be loved, learn and create, stay fresh and try to look good naked! The Most Chocolate Pudding The three Ds of chocolate pudding are dense, dark, and delicious, so when baking, use high-quality chocolate with a cocoa-content of at least 50 percent.

Slow-Cooker Red Wine Beef Stew Because red wine makes everything better including stew • 2 c. beef stock • 3 tbsp. all-purpose flour • 2 tsp. Dijon mustard • 1 lb. carrots, cut into 2-inch pieces • 1 (8-ounce) package cremini mushrooms, halved if large • 1 large red onion, cut into wedges • 2 large celery ribs, cut into 2-inch pieces • 4 cloves garlic, chopped • 6 sprigs thyme • 1 tbsp. canola oil • 3 lb. pot roast, trimmed and cut into 4 pieces • Kosher salt and freshly ground black pepper • 1/4 c. tomato paste • 1 c. dry red wine • 1 tbsp. unsalted butter • Chopped fresh flat-leaf parsley, for serving
If preparing in advance, cool, cover and refrigerate. Reheat in the microwave, about 5 minutes on high, just before serving. Stir vigorously after reheating to fluff. • 4 cups water • 1 1/2 teaspoons of salt (or 1 teaspoon if using salted butter) • 1 cup medium-grain yellow polenta • 2 tablespoons butter • 1/4 cup cream cheese 1. 1 Heat salted water (1 1/2 teaspoons of salt for 1 quart of water) to a boil over high heat in a thick-bottomed 2 or 3 quart pan, about 5 minutes. Quickly whisk in the polenta until fully incorporated. 2 Lower the heat to a very low simmer, add the butter and allow the polenta to cook, stirring occasionally so it doesn’t stick to the bottom of the pan, for 25 minutes. 3 Finish by stirring in the cream cheese until it has melted into the polenta. Taste and add more salt if necessary.
1. Whisk together stock, flour, and mustard in a 6-quart slow cooker. Add carrots, mushrooms, onion, celery, garlic, and thyme; stir to combine. 2. Heat oil in a large skillet over medium-high heat. Season beef with salt and pepper. Cook, turning occasionally, until browned on all sides, 10 to 12 minutes. Remove to slow cooker. Add tomato paste to skillet and cook, stirring, 1 minute. Add wine and cook, scraping up browned bits, 30 seconds; add to slow cooker. 3. Cover and cook until beef is tender, on low heat 7 to 8 hours or high for 5 to 6 hours. 4. Discard thyme. Remove beef and shred with 2 forks; return to cooker. Stir in butter. 5. Serve topped with parsley.

• 1 bar bittersweet chocolate • 2 tbsp. butter • 1 1/2 tsp. vanilla extract • 1 3/4 c. milk • 3/4 c. sugar • 1/4 c. cocoa • 3 tbsp. cornstarch • 1/4 tsp. salt • 3 egg yolks • 1/2 c. whipped cream (optional) • 2 tbsp. Chocolate shavings (optional) 1. Combine chocolate, butter, and vanilla in a medium bowl, and set aside. 2. Heat milk in a medium saucepan, and bring to a simmer. 3. Whisk sugar, cocoa, cornstarch, and salt together in a bowl. Beat the yolks in a bowl, using an electric mixer set on medium, for 1 minute. Reduce the mixer speed to low, and add the sugar mixture. Beat together until it resembles wet sand. 4. Add half the hot milk, and whisk until blended. 5. Transfer the cocoa mixture to the saucepan. Cook over medium heat, while continuously whisking, until thickened -- about 8 minutes. 5. Strain into the bowl of chocolate. Let sit for 3 minutes before stirring smooth with a wooden spoon. 6. Press a sheet of plastic wrap onto the surface of the pudding and chill for 2 hours before serving. Wiggle Room: This pudding doubles as a terrific filling for a layer cake or a chocolate cream pie. Make it the day before for a quick delicious Valentines Treat!
