A message from June When describing June the most delightful words roll off my tongue. Balmy, beautiful, bright, clear, cool, fresh, glorious, pleasant, soft, sultry, sunny, sweet and warm. All of these words conjure up a charming mental picture of June in upstate New York. My rocking chairs are back on the patio, my yard is abounding with lavish growth, the smell of bon-fires fill the air on star filled nights. My mind’s eye sees all of these things when I think of June. June is a time of hope Our batteries are fully recharged and we are ready to take on the world. We make milestone decisions in June, the sun is a warming entity, and so it fires our passions and heats up our hearts. What was a thought in May becomes a conviction in June. June is a time for gathering Burnt Hills celebrates June and its glory by celebrating Ole Glory. The Flag Day Parade ( June 9th) is a fantastic start to the season. Rt 50 will be lined with lawn chairs, families and friends. It is the one time each year we gather the old fashion way in Burnt Hills. The volunteers that put this event together deserve a lot of credit. Coordinating marching bands, floats, safety and clean-up is like herding cats. The line-up is well planned to be sure the pace of the parade is even. The floats and marchers gather at the school, everyone buzzing around making last minute adjustments to their props and instruments. Chaos. Then the whistle blows and like magic the parade flows down the road for all of us to enjoy. It is a huge undertaking, thank you to all of the volunteers that pull this off every year. The Village of Scotia celebrates Father’s Day each year by hosting “Cruisin on the Avenue”, a car show that feels like a festival. With a few hundred cars, food venders and entertainment the village will be bustling with people. Free to the public this event is a great fun way to celebrate Dad and take in the scenery.

About the Cover This month’s cover is a photo my favorite bird of all, the Eastern Bluebird. The beautiful red, white, and blue Eastern Bluebird was designated the official state bird of New York in 1970. They are showy little birds, with the male performing a “nest demonstration display” to attract the females. They usually have more than 1 brood per year, the first brood leaves mid-summer, the 2nd brood stays with the parents throughout the winter. Our area is a perfect habitat for them, open spaces created by our sprawling orchards and farmlands is Bluebird heaven!

June was made for kids! Ahhh yes, the end of the school year! Excited kids are overflowing the sidewalks. Teachers are working double time to get everything required finished and have fun with their children before they move on. The last day of school is the best day of school! I can still feel the excitement that welled up in me as I ran out of the school, hunted down my girlfriends and staying up late playing in our yards. June is time to take pause The long days allow us the time to reflect on each day as it passes. It’s time to soak up the extra daylight hours chatting with the neighbors, floating on our boats, playing with our pets and children, gardening, whatever makes us happy. June is by far the happiest month of the year. June is for love...

Most Drugs Work like Magic! There’s only one problem with that… Yesterday I saw a TV commercial for an anti-inflammatory and pain relieving medication. I usually have a problem with these ads, but this one turned out to be totally true. The ad was about a man who was playing in a Father and Son baseball game. His son was upset because his Dad’s knee pain was preventing him from playing full out like the other dads. Then he took some of the medicine and he was able to play at the level that made both him and his son happy. The commercial ended with the father saying, “It works like magic!” As I said, I am not usually in agreement with drug ads, but this one spoke the truth in a way I had never heard it stated before – “It works like magic!” You see, the word “magic” can be defined as either “fooling someone,” “fooling nature” or “controlling nature.” Drugs work in exactly this way. They can “fool people” into believing their bodies are functioning just fine. This causes them to no longer be aware of warning signals their bodies are giving them to avoid certain things. They also work by “fooling nature.” That is, they fool the natural adapting and healing mechanisms of the body into thinking that everything is fine. And, they work by “controlling nature.” In other words, they completely bypass the natural systems God (nature) has set up in your body to continually adapt, heal and grow you toward the full expression of your purpose and potential in life and cause something else to occur instead. Think carefully about this now – Is that what you really want to do? Is that the choice you want to make for your family – to “fool” yourselves into a false feeling of security and comfort? Chiropractic is not “magic” at all. In fact, the last thing we want to do is “fool or control” anything! We know that we all have within us an Innate Intelligence that always knows what to be and do in every situation. The truth is that we are given everything we need to live, grow and fully express our purpose and potential in life! As long as there is no interference in our nerve systems, our Life Force can flow freely throughout our bodies and perform its duties. We know that when this Inner Wisdom can express itself fully through your nerve system, everything heals in the right way and in the right order. We also know that if your body needs to warn you about a certain movement, position or activity you will get that warning so that further damage can be avoided and healing may continue. The chiropractic adjustment process restores the communication between the brain and the body that is compromised and gives us back to ourselves. It allows us to live and express the way our Creator intended. But more important than the chiropractic adjustment process is the whole idea behind chiropractic. We know that you are not weak, defective and prone to illness. As such, nothing from the outside is needed for you to express your perfection. Nature needs no help, it just needs no interference. We also know that as you continue through your care and as you continually express your Life Force more completely, you will be able to progressively become more aware of what your purpose in life is and work toward the actualization of that purpose. You see, chiropractic is not magic – on the contrary, it is a miracle! The miracle is in the ability to express the perfection that was placed in you at birth. A Confidence Building Second Place

Finish Highlights Mortensen Motorsports Month of May Confidence is something that is so important in any sport or in everyday life as well, but in motorsports, it means a lot to be confident about what you are doing and the car that you are driving. The start of the 2016 season for the driver of the Your Hometowne sponsored #1M, Mark Mortensen, has not gone as hoped after being involved in a couple of wrecks not of his doing along with a night that the car just wouldn’t handle. A big change in the car to a setup that Mark is very familiar with changed all that with a second place finish on May 21 at his home track the Fonda Speedway, which could have been a possible win had it not been for a part failure on the motor. It was a great finish and a confidence booster for sure for the Scotia, NY driver. Here is the race story from that evening. With Saturday evening (May 21) being the first night of handicapping it was proof of the drivers who have not had such a great start to the 2016 season as they were fortunate enough to start up front as long as they did well in their respective heat race qualifying events. Two such drivers were 2011 602 Sportsman Track Champion Mark Mortensen and Billy Gray who started the 25-lap sportsman feature on the front row after both drivers won their heat race events. At the drop of the green flag Mortensen took the lead and from that point on it was “yellow fever” as nine caution flags slowed the event. The first of those cautions was on lap two for a three car wreck in between turns one and two and while Mortensen held on to the lead through the early restarts Gray and sixth place starter Brian Pessolano were swapping the second position on each of the restarts once Pessolano moved up front quickly after the green flag flew. An unnecessary caution flew on lap 12 when the car of Josh DeMagistris was smoking coming down the front straightaway but instead of driving to infield and out of harm’s way to allow the race to continue he continued on slowly around the track until the caution was thrown before driving in to the pit area. When Rocky Warner brought out the caution by coming to a stop in turn three and then drove away to the pit area on lap 13, track management had seen enough and ordered a single file restart with the top five at the hallway point consisting of leader Mortensen, Pessolano, eighth place starter Chris Schaffer, Gray, and Ray Zemken. The final restart of the event came on lap 17 when Zemken spun on track and JaMike Sowle made hard contact with Zemken but fortunately, both drivers were not injured. Mortensen maintained the lead on the restart but his lap times started to slow as Pessolano started running faster laps than the race leader on lap 19. On lap 21 when a mechanical issue caused Mortensen to slow in turn three, Pessolano ducked under the leader to take over the lead on the inside of turn three. As it turns out something mechanical in the #1M of Mortensen caused the motor to spit and sputter going down the straightaways, which is what happened down the backstretch on lap 21 when Pessolano was able to get by for the lead. While Pessolano pulled away to the easy win, Mortensen nursed his car home to a second place finish with a broken fuel pump on the side of the motor.

Our summer volunteer program runs June 27—August 5 and volunteers can sign up for one shift. Each volunteer will select a two hour time slot and will come at that day/time for the six weeks of Summer Reading (for example Mondays from 1:00 PM—3:00 PM). Volunteers must be available at least four of the six weeks to participate. We will have a volunteer sign-up and informational meeting on May 31 at 6:30 PM, potential volunteers must attend with a parent or guardian and will choose their time slot at this meeting. Modern Dance

with Ginny Martin

I began teaching sixth grade at Pashley Elementary School in 1968 when sixth grade was still part of the elementary school. My second year teaching I began a modern dance club of fifth and sixth grade girls. At years end two parents asked if I might consider teaching modern dance outside of school. I did just that two afternoons a week after school during my last two years of classroom teaching. In 1972 I decided to try teaching modern dance part time while I started a family. That was 44 years ago! In building my modern dance business from nothing, I have been able to follow my dream. A lot of creative imagination, a ton of hard work, plus good business and professional instincts have all contributed to making Modern Dance with Ginny Martin a successful adventure. My colleague Dana Yager and I teach twenty three classes each week serving approximately 350 students every year. Having children want to come and share with me what I love has made my life joyful in so many ways. It has also challenged me to be the very best I can be. I want to thank all the parents who have trusted me with their children and who have understood and appreciated what I do. I want to thank all of your dancers for making my life’s journey so worthwhile. You’ve meant the world to me. Thank you. Dana Yager will soon be the owner of Modern Dance with Ginny Martin and Dana Yager. She will continue with my unique and very creative dance curriculum for young dancers including my movement poems and improvisational stories. She will be using the wonderful improvisations that I have developed for all of the dance class levels. While staying true to the original business model Dana will develop her own beautiful and inventive choreography for all classes. Dana danced with me from the time she was a youngster until she graduated from high school. as she completed her education. She wanted to attend a college with a good choreography program so she decided to attend Columbia College Chicago. In 2009 Dana graduated with a Bachelor of Arts degree in dance and we began working together. We’ve been teaching together for seven years now. Dana teaches all of the older dance students and she teaches with me in all of my beginning level classes. Dana is busy teaching twenty three modern dance classes every week. She is completely professional, talented in beautiful and inspiring ways, committed to teaching with intelligence and concern for the wellbeing of each of her students, always with a positive, cheerful sense of humor. Dana is a diligent, hard worker, highly organized, and always prepared. She doesn’t miss a beat! Dana has complete respect for the dance business that I have built over the past 46 years. She will continue to nurture the business and keep it strong. To be able to entrust my dance business to Dana is a gift to me and to you. I can retire knowing that my “dance baby” is in great hands and all of you in the community can know that Modern Dance with Ginny Martin and Dana Yager will continue uninterrupted. Spartans and SPAC by Sam Capuano

In the mid 1960’s, a few people notable in the music world saw a need. George Balanchine, Founder of the New York City Ballet, and Eugene Ormandy, Conductor of The Philadelphia Orchestra were kicking around ideas for summer homes for their respective organizations. It almost didn’t happen here. A few years before that, as the legend goes, there was some rumblings about Stowe, Vermont being an ideal summer spot for the New York Philharmonic. An Albany journalist, Duane La Fleche, blanched at this idea. “It seems very wrong,” wrote La Fleche, “that a New York orchestra should have to look outside the State for a summer residence. Wouldn’t the State Reservation at Saratoga Springs make a nice location?” That location proved to be more than “nice.” And, boom, a few years later, 50 years ago this summer, the Saratoga Performing Arts Center, SPAC, was born. This great outdoor music shed, 12 miles from Burnt Hills-Ballston Lake High School became the summer home for generations of Spartans as well. It is, of course where the BH-BL High School (along with most other Saratoga County school districts) have held their commencement ceremonies for years. It has become a great tradition for seniors on graduation day to march into the amphitheater on what always seems to be a horribly hot June day. The maroon gowns that the guys wear magnify the incoming sun that much more. Still, for many of us, being able to be on the same stage in which practically every known musical talent since the second part of the 20th century has stood was and is a great thrill. And what about that musical talent? Heading those 12 miles north became a rite of passage for BH-BL’ers. We never felt we went the summer without seeing our friends, because seemingly everyone would converge in the SPAC lawn seats (which aren’t really seats, but...) from June through August each year. In those years, lawn admission was a mere $7 - $8, something which we could afford, even with minimum wage being just $3.25 at the time (although I suspect most of us hit our parents up for the money.) That low lawn price allowed us to make multiple trips each summer. This was a time before Live Nation took over the popular music bookings, and each February we would eagerly await the announcement of who was coming that year. Some were a given. The Steve Miller Band, Doobie Brothers, Santana, Chicago and Beach Boys made annual stops there. As did James Taylor. Seeing JT up on stage with his white suit was as much a part of our summer as putting off our summer reading assignment until the night before classes started up again in the fall. My first time was as a 13 year old, on August 26, 1976 to see the aforementioned Beach Boys. The ‘Boys were on one of their comebacks, and riding high with their best selling album, 15 Big Ones, in over a decade. It seemed everyone from Burnt Hills was there that night. And everywhere else as well; for years this was the second largest SPAC crowd ever, trailing only the legendary 1971 Who concert. During the 1980’s, the Grateful Dead and Bruce Springsteen would have something to say about SPAC attendance records. Another memorable Spartan gathering at SPAC occurred a half dozen years later, to see a band whose star shown a bit briefer than those mentioned above. In the summer of 1982, the supergroup Asia, touring behind their eponymous debut album was just about the biggest band on the planet. I remember sitting on the lawn for that one, with dozens of high school classmates, now fellow alumni, as we had graduated (yes at this very location) the summer before. This brings up another Spartan SPAC memory. While much of the Northeast uses Northway Exit 13 and Route 9 to enter the grounds, Route 50 is the way to get there from Burnt Hills. And to do so, one needs to pass through Ballston Spa, and their pesky 30 miles per hour speed limit. In those years, we all knew that driving even 31 mph through that Village could very well mean a speeding ticket. A small price to pay, perhaps, for summertime memories which last to this day. ‘Til next time, keep on smiling. Thomas Semon Accepts Appointment to USMMA Thomas Semon, a Burnt Hills-Ballston Lake HS Senior, has accepted an appointment to the United States Merchant Marine Academy located at Kings Point, NY on the north shore of Long Island. The United States Merchant Marine Academy, USMMA, is the smallest of the service academies with a highly selective admittance process and requiring a congressional nomination. Thomas was nominated for the appointment by Congressman Paul Tonko and Thomas is one of approximately 250 appointees selected to attend the Academy from around the nation and the world out of over 2,200 applicants. Completion of the intensive four year regimental and academic curriculum, which includes three trimesters at sea (sea year) on U.S. Flag Merchant vessels and U.S. Navy ships as well as an Internship, leads to a Bachelor of Science Degree, a U.S. Merchant Marine Officer’s License as either a Deck Officer or Engineering Officer, and an Ensign’s commission in the U.S. Navy Reserve.

The USMMA’s regiment is the only service academy regiment authorized to carry a battle standard in recognition of the service and sacrifices of prior USMMA cadets in times of war during their sea year training. The USMMA cadets have a service obligation but with many options upon graduation. They can accept an officer commission in any branch of military service, sail as a ship’s officer on merchant ships, or accept employment ashore in the maritime and intermodal transportation field while serving in an Armed Forces Reserve duty. Thomas plans on Majoring in Marine Engineering Systems and rowing on the USMMA Crew Team. At this time, Thomas is interested in pursuing a commission in the U.S. Navy, Marines, or U.S. Coast Guard serving as a pilot or flight officer. According to Rear Admiral James Helis, the Academy’s Superintendent, Thomas’s appointment to the United States Merchant Marine Academy reflects great credit on him and demonstrates that he is already living up to the Academy’s motto “Acta non Verba” - Deeds, not Words.

1. Habit: Whether you realize it or not, you eat in a learned pattern, rather than out of need. You clean your plate because that’s what your mother taught. You eat what is served without stopping to check if you are full. You butter two pieces of toast for breakfast rather than questioning if one piece would do the job. 2. Absentminded: You forget to pay attention when you eat. Mindless munching while watching a movie, snacking while driving, or picking at food while cooking – these absentminded calories really add up. 3. Something Deeper: Sometimes you use food for recreation or to change your mood. This means you shouldn’t always eat carb-based meals, and you also shouldn’t always eat high-fat meals. Make a mental checklist of the food groups that you’ve eaten each day. Did you eat lean protein? Did you have plenty of vegetables? Did you refrain from eating more than one or two primarily carb-based meals? Step #3: Be Tuned In Your body will always tell you when its hunger has been satisfied – you’ve just gotten so good at ignoring the signs that you barrel through your meal only to feel like you’ve been hit by a ton of bricks once all that food hits your stomach. It’s time to take a deep breath and listen to your body. An important part of being tuned in is to eat slowly. Once you start to pay attention you’ll notice a point when each bite becomes less and less satisfying. That is your body’s way of letting you know that you’ve had enough and that each continued bite is simply overkill (yes, even if you’re only halfway through that plate of pasta).

What Does It Mean to Be Mindful? Each day we hear more and more about mindfulness. What is the all the fuss about? Mindfulness is used successfully to treat anxiety, pain, depression, obesity, and addiction in addition to helping us reclaim our everyday, ordinary, amazing, miraculous lives. The expression, “Yesterday is history, tomorrow a mystery, and today is a gift...that is why it is called the present,” gives us insight to mindfulness. We spend entirely too much time ruminating about the past and worrying about the future. We plan and worry until all our time is used up and we have lost our present moments. We effectively steal our own joy, the joy that naturally occurs in the present moment. Sure, there is excitement about future retirement or vacations or the next promotion. In general however, overusing our brain power to focus on the future rather than the present can leave us feeling bereft and disappointed. Jon Kabat-Zinn, a pioneer in mindfulness who created Mindfulness Based Stress Reduction (MBSR) gives us this definition: “Paying attention; On purpose, in the present moment, and non-judgmentally.” Any activity can be turned into a mindful practice when you bring your full attention to it, purposefully, and do not judge the activity, yourself or others. The studies continue to reveal benefits of mindfulness which include reduction in stress and anxiety, weight loss, addiction recovery, improvement memory, increased calm. Mindfulness can help us recover our present moment and our joy. It allows us to experience the present moment in all of its glory. If you are washing and drying the towels, pull them out of the drying and feel their warmth. If you are drinking, consciously feel the liquid going down your throat. Try eating a meal and doing nothing else at the same time. Feel the textures, taste the flavors. Enjoy the beach this summer without thinking about how the time will end all too soon. These moments are your life. When we race to the next moment, we take the present moment and make it an obstacle to the next moment. “If I just get through this week...” or “Once this housework is done, I can relax.” Far too often, that only leads us to the next present moment we are trying to leap over to get to the next moment yet again. Try enjoying this week by taking in all of the experiences it offers. Try to mindfully approached washing dishes, cherishing the present moment, feeling the warm water on our hands. Our fascination with multitasking also inhibits our ability to enjoy the present moment. It develops a habit that steals joy and creates discontent. Time and again we hear, “I don’t know what to do with downtime. I’m uncomfortable with free time. I never have free time.” We long for calm and peace, but when it is right there for us we run to fill the space with activity. As we lose the habit of enjoying calm, we develop a longing for chaos, busyness, and stress and here’s the real surprise -- we don’t even realize it! Our obsession with texting is another example. We receive a little jolt of excitement each time we have a response. Our brain is responding to the stimulus making it difficult for us to leave the conversation of those not present, for the conversation of those that are present. Many of us credit our planning and multitasking with success and accomplishment in our lives, and to an extent that is true. But the current reality is that it leads to unnecessary suffering. Too often, we are looking for the finish line to happiness and joy, without realizing it is right in front of us. “It’s out there just beyond my reach,” one may think, “why can’t I ever get there!?” According to Thich Nhat Hanh, a buddhist monk and author , “There is no way to happiness, happiness is the way.” Our joy is built on awareness and appreciation of the present moment. Meditation is a mindful activity that brings awareness to something as simple as your breath, the body, recognition that although thoughts will come and go, you may let them come and let them go. Time and again people say, “I’m no good at meditation...my mind is so busy,” but that is the point. The exercise is to let your thoughts come, but let them go by and focus back on breath. Again, and again, and again. In this process, your brain is reclaiming its ability to care about the present moment. Enjoy mindfully approaching your days and benefit from its healing power!

Summer solstice has arrived! Let the festivities begin! What? The most daylight hours?! You know those people who say there isn’t enough time in the day to get stuff done, well, if that is you, now is your chance! For those of you looking for something fun to do, June is filled with special events and opportunities to do just that! June kicks off with ‘National Milk day’ on the first for all that are NOT lactose intolerant and’ National Doughnut Day’ a few days later. Too bad these two special events weren’t on the same day. Later in the month, for those still hungry there is ‘National Catfish Day’. If you are feeling active and want to try something new and learn to breath, feel free to participate in International Yoga Day on the 21st. If it’s the need for speed you’re looking for than ‘Go Skateboarding Day’ is perfect for you. For all of the animal lovers out there, there is still room to sign up for ‘National Dairy Goat Awareness’ week beginning on the 13th. Rounding out the month with ‘Take your Dog to Work Day’ on the last Saturday of June. If you plan to hang close to town this month, we do have a lot to offer as well. Founders Day and Flag Day. Parades and fireworks. If you like music as much as me, celebrate the solstice and ‘World Music Day’ right here in our own backyard at the Jazz Fest the last weekend of the month. Let us not forget Father’s Day on the 19th. Tell them how great they are and how much you love them. There is a lot to do. Thank goodness we have one of the longest days of the year ahead of us. Remember, it’s truly not what we do but whom we do it with. So grab your flip-flops and that cooler and head out. Enjoy the parades and the music, but mostly enjoy all the smiles that surround you. It’s a fact of life that vision changes occur as you get older. But these changes don’t have to compromise your lifestyle. Knowing what to expect and when to seek professional care are important steps to safeguarding your vision. As you reach your 60s and beyond, you should be attentive to warning signs of age-related eye health problems that could cause vision loss. Many eye diseases have no early symptoms and may develop painlessly so you may not be aware of changes to your vision until the condition is quite advanced. You may not realize that health problems affecting other parts of your body can affect your vision as well. Individuals with diabetes or hypertension (high blood pressure), or taking medications that have eye-related side effects, are at greatest risk for developing vision problems. Therefore, regular eye exams are even more important as you reach your senior years. The American Optometric Association recommends annual eye examinations for everyone over age 60. In the years after you turn 60, a number of eye diseases may develop that can change your vision permanently. The earlier these problems are detected and treated, the more likely you can retain good vision. Age-related macular degeneration (AMD), cataracts, glaucoma, diabetic retinopathy and dry eye are some vision disorders of which you should be aware. Vision changes and eye diseases can compromise driving ability, even before you are aware of symptoms. You may be noticing difficulty judging distances and speed. Bright sunlight or the headlights of oncoming traffic at night may impair your vision. Taking care of your eyes and your health is a first step to preventing vision loss from common eye problems. A healthy diet and wise lifestyle choices, such as not smoking, are your best natural defenses against vision loss at any age. Be sure to discuss with your eye doctor all concerns you have about your eyes and vision. Tell him or her about any history of eye problems in your family, as well as any other health problems you may have. Your eye doctor should know what medications you take (including non-prescription vitamins, herbs and supplements). This will help with appropriate recommendations to keep your eyes healthy and functioning at their optimum level throughout your lifetime. Since Flag Day is upon us and Independence Day is just around the corner, you’ll likely be flying your American Flag. We hope that you do and that you do so with pride! So, I thought I’d share some patriotic flag etiquette tips that I found on various internet sites for you to keep in mind. 1. The U.S. flag should always be displayed above ground. It should never touch the floor, dirt, or water. What’s more, the union side (the stars) should be in the upper corner. A flag displayed with the union side down signals distress. 2. If flown on a staff with other flags, the American flag should fly at the top. 3. A flag that hangs over a street should have the union toward the north or east, depending on the street direction. 4. The American flag should be displayed only during daylight hours and should only be displayed at night if it’s illuminated. 5. The flag should be properly folded and stored when it’s not in use. Looks like Summer Decided to start a little early this year. I have to admit, I actually was really missing all the heat and humidity after a relatively mild winter….NOT. With summer comes lots of home preparation, inside and out, as we get ready for friends and family parties, gardening projects, lawn care, house additions and repairs, etc. Make life easier so you can enjoy the great weather by getting some projects done around the house in the simplest way possible… have someone else do it! The Slugs of Summer Every summer I get questions about the mysterious holes that appear in hosta leaves and strawberries. There’s never a bug in sight so that leaves just one suspect. Slugs are basically snails without shells and enjoy munching on a wide variety of garden plants and they feed at night. They go after lots of ornamental and vegetable plants. In the past slugs were a difficult garden pest to control. There was bait made using metaldehyde. Metaldehyde is nasty stuff and was for use around ornamental crops but never vegetables, fruits or berries. It is also toxic to animals so I’d never use it anywhere in my yard. Metaldehyde is nasty stuff and has now been removed from the market...thank goodness! There are also a variety of “old school” slug control techniques. One option was plucking and drowning the slugs in soapy water. You’d need to wear gloves since slug slime isn’t something that you can wash off easily. It isn’t very effective since you’ll need to do your slug hunting at night when they are out. There was also the dish sunk into the ground and filled with beer. The idea was that the slugs are attracted to the beer (true) and would drop into it and drown. This method never worked well for me and seemed like a terrible waste of beer. Another method was placing grapefruit rinds upside down in the sluggy area. The slugs are attracted

to the grapefruit rind and you’d find them under there in the morning and then drown them. It worked but you’d need dozens of grapefruit rinds if you wanted to catch enough slugs to make a difference. I never had much success with any of these methods. Finally we have a slug control that is safe and actually works. The market pressure for a safe slug control finally led to the production of a natural mineral-based slug control that is not only very effective but is totally safe to use in the berry patch and vegetable garden. It is iron phosphate. At Hewitt’s it is called Slug Magic because it makes slugs disappear. This stuff works great and is harmless to dogs, cats and all the wildlife except slugs. You just sprinkle it around (according to the instructions on the package of course) and the slugs actually prefer it to the plants. It works fast too. Sprinkle it on in the evening (slugs feed at night) and by the next night you won’t see slugs around. It may take them a day or two to die but, once they nibble a little Slug Magic, they stop feeding and crawl away to die. I could almost feel sorry for them...NOT! Of course slugs go after leafy vegetables like lettuce, spinach and lots of others as well as many ornamentals like hostas. No matter where you see them, a few sprinkles of iron phosphate knocks them out quickly. Iron Phosphate slug controls like Slug Magic are just the kind of product I love to see come along...natural and safe to use around food and wildlife...what could be better? Thanks for the read. Roast Chicken Thighs and Carrots with Old Bay Aioli • • • • • • • • • • •

Spring Asparagus and Mushroom Papardelle

2 lb. carrots 6–8 chicken thighs, rinsed and patted dry extra-virgin olive oil kosher salt Freshly ground black pepper 1 c. mayonnaise 2 tsp. Old Bay seasoning 1/4 c. freshly squeezed lemon juice 2 tsp. chopped garlic 1/4 c. chopped parsley Sea salt to taste

1. Place oven racks in top third and bottom third of oven. Preheat the oven to 400 degrees F. Line 2 rimmed half-sheet pans with parchment paper. 2. Scrub and rinse carrots. Place carrots and chicken on sheet pan and drizzle with olive oil. Massage the oil all over and season with salt and pepper. Spread carrots evenly in one layer on one sheet pan and chicken skin side up on second sheet pan. Put carrots on bottom rack and chicken on top rack. Roast for 30 minutes. 3. In the bowl of a mini prep or food processor add mayonnaise, 1/4 cup olive oil, Old Bay seasoning, lemon juice, and garlic. Blend until smooth. (If sauce is too thick, add more lemon juice or olive oil.) Place in a small bowl. 4. After 30 minutes, adjust oven to broiler setting. Broil chicken until skin is crispy and golden brown, 4 minutes. Serve roasted chicken and carrots with drizzle of Old Bay Aioli sauce and garnish with parsley and sprinkle of sea salt. Wiggle Room – Use parsnips instead of carrots for a unique and fantastic flavor!

• kosher salt • 1 lb. pappardelle pasta • 3 tbsp. extra-virgin olive oil • 1 lb. baby bella mushrooms, sliced into 1/4” pieces • 2 garlic cloves, minced • Freshly ground black pepper • 1 c. vegetable stock • 1 lb. asparagus, chopped into 1” pieces • 2 tbsp. butter • 1 c. freshly grated Parmesan, plus more for garnish • 1 c. freshly grated fontina cheese • 1/2 c. parsley leave 1. Bring an 8-quart stock pot of water to a boil and generously season with salt. Cook pasta according to package directions until al dente. Reserve 1 cup pasta water and drain pasta. 2. Meanwhile, in a large skillet heat 3 tablespoons olive oil over medium-high heat. Add mushrooms and spread in an even layer; cook for 3 minutes before stirring to let the mushrooms brown. Add garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper; cook 2 minutes more. Add stock and asparagus; using a wooden spoon, scrape bottom of pan to remove the browned garlic and mushrooms. Bring to a boil and simmer for 5 minutes. Add butter, pasta, and both cheeses; gently mix with tongs. (If the pasta seems dry, slowly add reserved pasta water until desired consistency.) 3. Serve in skillet or transfer pasta to a platter and top with grated Parmesan, drizzle of olive oil, and parsley. Serve immediately.

1 lb. frozen shredded hash browns, defrosted 6 large eggs 2 c. shredded Cheddar kosher salt Freshly ground black pepper Cooking spray, for pan 6 strips bacon Chopped fresh chives, for garnish

1. Preheat oven to 400 degrees F. In a large mixing bowl, combine hash browns, 2 eggs, and 1/2 cup cheddar and season with salt and pepper. 2. Spray a baking sheet or pizza pan with cooking spray and add hash brown mixture. Using your hands, pat mixture into a circular crust. 3. Bake until golden, 20 minutes. 4. Meanwhile, in a large skillet over medium heat, cook bacon until crispy, 6 minutes per side. Transfer to a paper towel-lined plate. Drain, then crumble. 5. Top baked crust with remaining 1 1/2 cups cheese and crack remaining 4 eggs on top. Scatter with crumbled bacon and season all over with salt and pepper. 6. Bake until egg whites are set but yolks are runny, 15 minutes. (If you prefer a less runny yolk, bake 18 to 20 minutes.) 7. Garnish with chives, slice, and serve.
