Brendan Fairclough, one of the most naturally talented bike handlers the World Cup has ever seen took time out of training to chat to us about riding for Scott, his signature parts and the differences between MTB and Formula 1! How is your season going so far? Are you where you thought you would be? My season’s been quite dire really, it’s going quite badly. It definitely hasn’t gone as planned, I had mechanical problems at the first race and I had a few races which were off the pace but I haven’t lost hope yet. I’m still always feeling good about the next race to get me back on track. What is your favourite track in the Portes du Soleil? There were a few secret tracks over on the Pleney side but I don’t know what they’re called! I definitely like the newer, loamy tracks over on the Pleney side, they’re now my favourite tracks, for sure.


You visit Morzine a lot what brings you back to the area? I’ve been to Morzine every year with a group of friends for the past eight years. It’s always an amazing two weeks that we have there when we can just relax as well as get some training done. It is always a place that will draw us back in; the sheer amount of riding is just amazing. You have been on some big World Cup teams. Who has been your favourite teammate over the years? I don’t want to upset anyone here but I would have to say Matti Lehikoinen when I was with Honda back in 2007. Me and him were just like two brothers getting in trouble the whole time, they were always funny times!

to ride bikes, I have a Kiwi passport so I feel like I should go and check the place out. I have a lot planned; the Red Bull Rampage in Utah, a Mexico trip, an Indonesia trip and a Malaysia trip. And that’s all before Christmas! It’s not all about training but a good excuse to go and check out Malaysia and Indonesia again really! The places we get to see are absolutely one of the best things about this lifestyle and how we get treated when we go away. It’s just absolutely incredible - we are absolutely spoilt. It makes you think about how some of these Formula 1 drivers must get treated, that must be ridiculously good! What event do you look forward to the most during the season?

At home I train with my friend Ollie Wilkins the most, I have a pretty big group of friends so I train with different people all the time.

It has to be the World Cups, they’re exciting with all the media surrounding it and they’re the pinnacle races. They would be the Formula 1 of our sport! It’s a bit sad to say that there are only 6/7 rounds, which is a bit pathetic when you think of Motocross or Formula 1, they have more like 20 rounds – maybe it makes us look a bit lazy!

You seem to travel a lot during the winter. What are your plans for the next off-season?

signature bar and stem coming out soon. It’s always good to be riding around and to see someone else riding something with your name on it – that’s a pretty good feeling! What is your favourite World Cup track? I love the atmosphere at Fort William because there’s always so many people but I don’t really like the track. I would have to say Mont Sainte Anne is always a good track and a good time – there’s always a massive after party, which is a bonus! Where is your favourite place to ride in the world? I should say Morzine here but I’m probably going to have to say Whistler…very closely followed by Morzine, that’s for sure! Where would you like to see the World Cup travel to? I’d like to go anywhere but as I said before I’d like there to be more rounds; 10 or 15. It would be great to see the rounds travel to America and Asia. Next year we’re going to Australia, which is a great start. I also like the look of Japan and China.

How are you enjoying the Scott team? Absolutely amazing, it’s like a breath of fresh air, they listen to me! I’m riding bikes, which I’d never seen in the UK or anywhere else and now I see them everywhere. That’s a really great feeling and I hope I’ve had something to do with that and that some of my work has gone into that. It’s quite cool.

Grilled Fera, Cauliflower, Pine Nut, Pistachio, Samphire and Vanilla Sourcing top quality fish is an ongoing challenge in the mountains. During the summer we have access to a great supply of freshwater trout and perch. Fresh perch is a fantastic vessel for foaming brown butter and the small brown and rainbow trout found in the rivers and lakes scattered around the Alps are particularly well suited to smoking.

50g butter 100ml cider vinegar 100g sugars 1 star anise 5 black peppercorns Sprig of thyme Pinch of fresh dill 50g samphire; picked, blanched and refreshed in iced water

Look just a little further to Lac Leman though and you’ll find fera, a member of the same family as trout and salmon, but with a texture similar to seabass and an earthy flavour that goes beautifully with cauliflower.

For the cauliflower and vanilla foam: Reserved cauliflower trimmings 100ml milk 100ml cream 100ml white chicken stock 2 vanilla pods 1 sheet gelatin

Ingredients (serves 2)

Method

500g fera; filleted, skinned, pin boned and portioned For the nut crust: 75g pine nuts 75g pistachios 50g salted butter 25mg lemon juice For the cauliflower puree, salad and souse: 1 head of cauliflower 200ml cream 200ml milk 200ml chicken stock

For the nut crust

Place the nuts in a food processor and pulse until they are slightly broken up. Heat the butter in a pan until it turns golden brown and starts to foam. Add the nuts and cook gently for 2/3 mins until they start to release their oils. Add the lemon juice to stop the nuts cooking and adjust the seasoning. Place a piece of parchment paper on a flat tray and using an offset spatula, spread the mixture in an even layer over the paper. Cover with another piece of paper and freeze for at least 4 hours.


For the soused cauliflower

Remove the stem of the cauliflower and remove the skin with a vegetable peeler. Slice thinly on a mandolin and cut discs out of each slice with a pastry cutter. Place the vinegar, sugar, peppercorns, star anise and thyme in a pan and bring to the boil. Remove the pan from the heat, place the circles of cauliflower in the hot pickling liquid and set aside to cool. When the liquid is cool, remove the slices and refrigerate in an airtight container until required.

For the cauliflower salad

Remove 4 cauliflower florets and slice thinly on a mandolin. Refrigerate in an airtight container until required.

Remove the tops of the cauliflower florets, finely chop them and place in a pan with the stock, cream, milk and butter. Bring to a simmer and cook gently for 15 mins or until very soft. Place in a liquidiser and puree until smooth, adding just enough of the cooking liquid to create a firm puree. Adjust the seasoning and keep warm until needed. Reserve the remaining cauliflower trimmings.

Finely grate the cauliflower trimmings and place in a pan. Cover with the milk, stock and cream and bring to 50degreesC. Hold at this temperature for 2 hours or preferably, overnight. Strain the cauliflower solids and reserve the infused liquid. Soak the gelatin in cold water for a few minutes until soft and then whisk into the warm sauce along with the seeds from the vanilla pods. Keep warm until needed.

To serve:

Remove the nut crust from the freezer and cut into pieces the same size as your portions of fera. Season the fish all over with fine sea salt and top with the crust. Place under a hot grill for 2-4 minutes or bake at 200 degrees for 4-8 minutes depending on the thickness of the fish. It is done when the core temperature reaches 48 degrees or when a skewer inserted in the thickest part of the fillet feels hot to the touch. Blend the cauliflower foam with a stick blender until it begins to foam, set aside to settle. Meanwhile, place the raw cauliflower, samphire and dill in a bowl and dress with a little vinaigrette. Season to taste with salt and white pepper. Spread a little cauliflower puree on the plate and top with the fish. Garnish with the soused cauliflower and salad and spoon over some of the foam. Most people love a good mushroom! What better way to create a scrummy dish with an eclectic mix of ‘shrooms than those you have picked for yourself? In this area’s bounteous woodland, you will find mushrooms both in woodland and in open pasture towards the end of the summer. The best fields are those that are used for animals to graze, they keep the grass short and the soil fertilised, both of which are conditions favoured by funghi. Woodland is the favourite area for the majority of mushroom species, which works for us considering the amount of trees out here! You will struggle to find anyone who is willing to share their good mushroom spots with you so this is just a case of getting out there and finding them for yourselves! Do remember that the Code Civil states mushrooms as the property of the landowner so be careful where you choose to go picking. Common types of mushroom you will find in the valley are cèpes, morilles, chantrelles and boletes which all thrive in the damp, cool mountain air. When foraging mushrooms always ensure you take

a small knife with you. It doesn’t have to be particularly sharp but will mean you can cut them from the base without damaging the roots, which allow them to regenerate. Collect your mushrooms in a paper bag or wicker basket rather than plastic as this will make them sweat and decay more rapidly. Individual towns create their own restrictions so if you are concerned, please contact the commune where you are planning on going picking. Please also be careful to triple check what mushrooms you are picking and eating as some can be highly poisonous. Green-fingered Roger Phillips has created a brilliant app for keen mushroom hunters, which lists over 1550 types of mushroom and functions without the internet – perfect for when you’re off hunting in the middle of nowhere! You can find the ‘Wild Mushrooms of North America and Europe’ on iTunes. If you still struggle to identify the type of mushroom you have picked, don’t take the risk - the pharmacy should be able to help you identify what is edible if you have any queries. Bonne Chance!


Words by Phil Smith A ride a little off the beaten track for the last of the summer bike routes. Something for those who have been here for the season and covered most of the ground around the Portes du Soleil. Or, perhaps you need to freshen things up after many visits over previous years. It'll get you further afield whilst still making use of your Portes du Soleil pass. You need a "Carte de Randonnee IGN 3530 ET Samoens Haut-Giffre" map to follow this ride. And it's always a good idea to carry one wherever you ride should you need to pinpoint where you are to emergency services. Negotiate your way to Les Gets and take the Chavannes Express chair lift. Descend to the Nauchets lift via the sign posted bike park blue or red runs. This lift will then carry you to the top of the Col du Ranfolly. Heading away from Morzine/Les Gets towards Samoens, follow the Joux Plane road. A short descent and climb is followed by a traverse by the side of the Lac de Joux Plane. A couple of kilometres on the road is well compensated by stunning views to Mont Blanc. Just after the lake there is a turning to your left onto a four wheel drive track which you climb, leaving the lake and Morzine directly behind you. The road forks right and descends steeply to Samoens. Use the beige and green coloured walking signs for direction following what becomes a single track trail as it climbs steadily up to la Bourgeoise. The place and height markers on the beige signs correlate to the same height and place names marked on your IGN map for location purposes.

You'll know you are at the top when you get to the big cross and the table of orientation describing the peaks now in view. It's exceptional; Mont Blanc, l'Aiguilles and the Grande Massif. Below you in the valley sits Samoens, your destination. You now have around 1000m of brilliant, mostly single track descending ahead of you. Have a rest and watch the paragliders take off before taking off on a superb descent yourself. From the cross, following a bearing to the right along an initially ill-defined footpath, descend the steep grass hillside. Go through the gate and straight on at the signpost in the direction of Sur Les Chables. On the IGN map you are on a red line running perpendicular to the contours, which will give you an idea of the gradient. It's a demanding trail with lots of exposed root sections as you descend into the trees. You will briefly twice touch the hairpin corners of the Joux Plane road climb before pitching off into the trees to the left. At the third hairpin cross the road completely. The trail is relatively easy to follow but you do have to have a good look around for the signs and have a feel for your orientation and direction. Watch out for the "VTT FFC" signs - now you are on the trail properly. They are little white rectangles with two circles and a triangle on it with a trail number. In this case follow number 50 - easy(ish). Again follow the red line on the map and emerge at Cessonex. There is a short road section before turning right into the


Ecomusee and picking up the single track again. Don't miss the turn, some of the best bits are coming up. Descend to Mathonex, crossing the road in the little hamlets on the way. Keep your eyes open for the beige direction signs heading for le Villard, les Noyerets, les Mouilles and la Turche before joining the road for the final short ride into Samoens itself. Samoens is a lovely little village and you'll be right on time for a late lunch in the town square. It's brilliant to sit here in the sun eating and drinking and reliving one of the best descents around. A word of warning though, you may have to go easy on the beers as depending upon how you plan to get home you may be in for a 1000m climb back to the top of the Col de la Golese. You could avoid this by arranging for one of the many uplift/transfer services to pick you up in Samoens and drop you back at the top of the Joux Plane road at the Col du Ranfolly near the Nauchets lift and descend down to Morzine that way. Or, if you are into epic rides and have a trail bike you can pedal, take in the gruelling climb of the Golese. Initially the climb is on a tiny, very scenic tarmac road before you hit the narrow lumpy and bumpy four wheel drive track to the Col itself. Most of the way up you'll be wishing you had arranged a transfer but once you've been at the top for a few minutes, recovered and enjoyed the view you'll be feeling better about the whole thing. Descend home to Morzine through Vigny and then the river trail in the Vallee de la Manche and hit Bar Robinson for the best tasting Mutzig you'll ever have. www.ridemorzine.com

It’s a dream of so many people to buy up an old barn and convert into a chalet of great beauty but sometimes the fear of the unexpected can be overwhelming. We caught up with Mike D’Arcy who runs Midas Kitchens and has also converted his own property in Le Jourdil to share his wisdom on such projects. “One main question we had to ask ourselves was 'Do we really want to take this amount of work on?' My French isn’t great so we got Figs from SARL Krome to project manage the renovation and he was brilliant. He knows a lot of local artisans and because he’s done so much work out here he really knows the best people to use for everything. Figs gets it all done, I can’t praise him highly enough! We chose the property because we did not want to be in a resort that shut down so it’s great here that it’s the same all year round and we can still get the things we need in town. We wanted to be in a place where we could walk into town and we can get straight into Saint Jean D’Aulps from here. All the neighbours were really nice about us carrying out the renovation, probably because before it was a run down old farmhouse! It’s in a great position in Le Jourdil, almost on the top road so it’s always peaceful. We ski up at Le Grand Turche, it’s just a couple of minutes away. Also, the snow plough comes right up to our chalet religiously – that is one thing that is definitely worth checking before you buy property out here! Buying the property in the first place was no problem, again there are plenty of people out here to help you get through the small print. It can be hard to work out… with our property came about an acre and a half of land but it’s in little patches all over the valley!

To make the space for the top bedroom feature we dug down by about 3 feet and underpinned the chalet, anyone can do the same to their property but it is expensive so make sure you budget. The work took around 18 months altogether but we were in for the first Christmas after a year, sleeping all over this half-finished building! If you’re thinking of doing your own renovation in the area it’s worth thinking about how often you will need to come back and forward. I live close to Gatwick in the UK so I could come out, take some meetings…and have time for a quick wine…before heading back all in the same day. In our chalet, all of the old beams we had to take down have been re-used wherever possible, now there is a mix of the two; both old and new beams meeting at the joints. The only bits I really got people in from the UK for were the kitchens and bathrooms, which my guys fitted. I run a bespoke kitchen company (www.midaskitchens. fr) so it was a given that I would organise that myself! The bedroom furniture is a classic French antique design though ironically we actually brought it back from the UK! Most of our furniture is actually from the UK, we got a van and drove it down bit by bit. Words by Chloe Hardy I remember not too long ago...OK, quite a while ago, when I was thirteen, skateboarding was so cool. All the boys wore baggy jeans and went skating after school; skateparks were being erected everywhere and everyone used lesson time to look through all the artfully designed skate decks in the Route One catalogue. Then, as if overnight, people resigned themselves to ‘cooler’ pastimes like listening to drum and bass and getting drunk in the park, and the skate parks sat empty only to be filled later by pre teens on micro scooters. And that was that. Until I went to the Morzine skate park one night in the spring and found it full of people; people skating, people chilling out and watching. And then it dawned on me. Skating was not dead; it had just had a minor absence from MY life. While I was getting drunk in fields and listening to drum and bass, (no wait, pop punk) skating was still hugely popular all over the world. A friend I met while travelling even ran an American charity called Bridge to Skate, which uses skateboarding to help promote cultural awareness, education and community in underdeveloped areas in the US, Africa, Central and South America. They organise competitions and raise money to build skate parks and schools in economically deprived areas, as well as helping to supply youngsters with boards and safety equipment. And what a great idea. After all, it doesn’t cost much to skate; all you need is a board and a smooth surface. As Morzine dwellers, most of us are drawn to the more expensive

SPICE UP YOUR HOLIDAY! sports like biking, snowboarding and skiing, but I was nowhere near being able to afford a bike this summer. I knew I had to do some kind of exercise while all my friends were out mountain biking so I borrowed a board and gave it a go. Being a skier, I feel incredibly uncomfortable standing sideways and I still can’t really do an ollie but it doesn’t really matter because in skating your tricks aren’t measured by how big or fast you go and your level isn’t defined in feet or metres. There are so many different preferences of what you skate and how you skate (that I haven’t learned the names for yet!) that there’s no room for big egos, plus it’s really hard, so you’ll always get respect for trying. And even if you don’t want to spend loads of time in the skate park, skating is a great way of getting around, especially if you have a long board. But if you do, Morzine skate park is set for a revamp next summer thanks to the effort of some dedicated locals, and there’s a park currently being built in Annemasse. Also, Cluses and Fillinges both have parks and all three are within a forty minute drive of Morzine. And with the inter-season looming what better time to pick up a board than now?

This beautifully smooth cocktail is a special this month and the espresso makes it pure rocket fuel to give you the kick you’re looking for! Ingredients: 40ml Vodka 30ml Kahlua Single Espresso Shot Vanilla Sugar Syrup Coffee Beans to Garnish Fill cocktail shaker halfway with ice cubes. Add vodka, Kahlua, espresso and syrup. Really give this one a good shake as it will create a lovely foam on the top of the glass. Single strain into a chilled martini glass and garnish with a few espresso beans which should sit gently atop the foam.
