Apprenticeships are a great way for aspiring hospitality professionals to gain essential work-based experience, whilst developing their repertoire of employability skills and knowledge of this sector. Apprenticeships offer the opportunity to work directly within the hospitality industry whilst earning a wage and gaining a recognised qualification that can kick-start, or further enhance, a successful career.

WHY B ECOME AN APPRENTIC E? 1. Earn while you learn – apprentices are fully contracted employees in the workplace and earn a weekly wage. 2. Strengthen your CV – apprentices develop their skills and industry knowledge throughout their apprenticeship programme, adding invaluable experience to their employment history.

HOW ARE APPRENTICESHIPS DELIVERED? Apprentices will typically attend York College on day or block release for the duration of the apprenticeship and work with their employer for the remainder of their contracted hours. During their time in College, apprentices will work towards the knowledge, skills and behaviours, and at work, will consolidate their on-programme learning with the support of their employer. An assessor will visit their workplace every 8-10 weeks to discuss and monitor progress on the apprenticeship in conjunction with the employer.

3. Gain a qualification – upon completion of an apprenticeship, apprentices will gain a nationally, and industry recognised qualification between Level 2 and Level 3. 4. No debt – by studying an apprenticeship whilst working, apprentices will avoid tuition fees. 5. Networking opportunities – by working directly in the construction industry, apprentices have the opportunity to create vital industry contacts that may lead to future promotional opportunities.

HO SPI TALIT Y T EA M MEMB ER - LEVEL 2 COURSE LENGTH - 15 MONTHS A Hospitality Team Member can work in a range of establishments, including, bars, restaurants, cafes, conference centres, banqueting venues, hotels or contract caterers. The role is very varied and although Hospitality Team Members tend to specialise in an area, they must be adaptable and ready to support team members across a business, for example during busy periods. Specialist areas in hospitality include food and beverage service, serving alcoholic beverages, barista, food preparation, housekeeping, concierge and guest services, reception, reservations and conference and banqueting.

ENTRY REQUIREMENTS There is a requirement for candidates to have GCSE English and Mathematics at grade 3/D or a Level 1 Functional skill or higher in those areas. Employers may also set their own specific entry criteria.

END POINT ASSESSMENT Apprentices must pass the End Point Assessment to achieve the Apprenticeship Certificate, which comprises of four components: on demand test, practical observation, business project and a professional discussion.

CAREER PROGRESSION On successful completion of the apprenticeship there could be a possibility of moving onto higher-level study in the relevant area, or into a more senior role within the organisation.

PRO D U CT IO N CHE F - LEVEL 2 COURSE LENGTH - 15 MONTHS A Level 2 Production Chef Apprenticeship is for those who are working as part of a team in a variety of different areas, such as the private, public or third sector and in all sizes of organisations. They are likely to work in an environment where they have centrally developed recipes and menus, often produced in high volume. The Specific responsibilities will vary, but the knowledge, skills and behaviours needed will be the same whatever role. Key responsibilities are likely to include working with other team members, knowledge of food safety, assisting in the preparation, cooking and finishing of a range of menu items. Attention to detail, understanding the importance of sustainability and protecting the environment. Assisting in the opening and close down of the kitchen under the direction of a more senior member of the team.

SE N I OR PRO DU CTION C HEF - LEVEL 3 COURSE LENGTH - 15 MONTHS A Senior Production Chef is a first line management role, with operational responsibilities or responsibility for managing a team. They provide direction, instruction, and guidance to ensure the achievement of set goals. Working in the private, public or third sector and in all sizes of an organisation. Specific responsibilities will vary, but the knowledge, skills and behaviours needed will be the same whatever the role. Senior Production Chefs will also have accountability for the day-to-day running of the kitchen service, they may lead a brigade in the kitchen or support a Head Chef in larger establishments.

ENTRY REQUIRMENTS Candidates are required to hold a relevant Level 2 qualification or equivalent industry experience. You will usually have to have GCSE English and Mathematics at grade 4/C or higher or equivalent qualification such as Functional Skills. Employers may also set their own specific entry criteria.

END POINT ASSESSMENT Apprentices must pass the End Point Assessment to achieve the Apprenticeship Certificate which comprises of the following three components; on demand test, practical observation and professional discussion.

CAREER PROGRESSION On successful completion of the apprenticeship there may be an opportunity to study a higher-level qualification or progress into a management role within the organisation.

OU R A PPRENT ICES WOJCIECH SERVES UP WINNING DISHES AT YORK FOOD FESTIVAL Congratulations to York College apprentice Wojciech Sukiennik on winning the Young Chef competition at the York Food Festival in 2017. Wojciech, aged 20, came to the UK two years ago and is an Apprentice Chef at the Star Inn the City in York. After an initial job at Pizza Hut, Wojciech started working at the Star Inn the City as a Kitchen Assistant, progressing to Commis Chef and now Chef De Partie. During this time he completed his Level 2 Professional Cookery Apprenticeship and he is currently studying the Level 3 Professional Cookery Apprenticeship qualification. Matthew Hunter, Director of Operations at the Star Inn the City is delighted for Wojciech saying his success is down to: “his hardworking nature and tenacity - and of course his new found love of teaching himself the Yorkshire dialect!, He adds: “We are incredibly proud of Woj for being announced the winner of York’s Young Chef Competition. He worked very hard practicing his dishes. The dishes he prepared not only represented our style, using local ingredients, but also showed off his skills and his own interpretation of the brief.”

He is such a great student, always so enthusiastic and motivated to learn. He’s like a sponge, soaking up information and using his creative flair to produce really lovely cooking. STEP 3 Apprenticeships are a job with training, be prepared to complete an application and undertake an interview with the employer and College.

STEP 4 If you are successful at interview you will then be given a start date for your apprenticeship.

HOW TO PREPARE FOR AN INTERVIEW Before securing a job you will have to pass the interview stage. Interviews allow employers to verify that you have the right skills and experience for the job and that you will fit in well in their organisation. Interviews can be a stumbling block for a lot of people and a key to success in the job market for others. The best way to ensure that you are successful is preparation!

TOP TIPS • Practice makes perfect. Practice with your family, friends or even in front of a mirror. • Have a good think about your own skills and experience, and how you will relate them to the job itself. • Preparation is key. Make sure you know where the interview is and how to get there. Try and find out who’s going to interview you and if there are any pre-interview tasks. Be on time! • You need to make sure you know and understand the job description and person specification. That way you will know what exactly the employer is looking for. Research the company you are applying for: questions about the organisation you want to join are likely to be part of the interview. You may have declared your passion for a certain subject or industry, so be prepared to demonstrate it. • Know your personal statement or application letter inside-out. Interviewers might ask you to back up any claims from your statement, so make sure you remember what you wrote. • Rehearse your travel route and make sure you get a good night’s sleep. You might be nervous, but don’t skip your meals and stay hydrated. • How to dress? Be smart and look the part, but wear something that also makes you feel comfortable. 11
