TUESDAY PORK JAMBALAYA Serves 4 1 tbsp olive oil 1 onion, diced 1 red pepper, deseeded and finely chopped 1 garlic clove, crushed 2 tsp Cajun seasoning 170g chorizo sausage, thickly sliced 350g pork chops, thickly sliced 450ml chicken stock 1 x 400g tin of chopped tomatoes 400g long-grain rice 1 Heat the oil in a large saucepan over a mediumhigh heat.
