While the months that follow December are a bit of an anticlimax, the festive month is without a doubt the Absolutely team’s favourite time of year. To get you feeling as merry as us, this month’s issue is all about the big day: from an array of gift guides (a particular favourite is Jessica Klingelfuss’ interior gift guide on page 83) to a spread of inspiring seasonal recipes taken from the Scandi Kitchen cookbook on page 62. way from the spotlight, 2015 has been a very big year for Teddingtonborn actress Keira Knightley. She recently became a mother to daughter Edie, an experience she has since described as being “f***ing extraordinary”, her film career has gone from strength to strength, and off the back of her Oscar-nominated performance in last year’s The Imitation Game, she is set to make her Broadway debut in a revival of Thérèse Raquin. She is understandably delighted with recent events, but humbly so, in that coy manner for which she is known. The girl who once played Sabé, the decoy queen to Natalie Portman’s Padmé Almidala, in Star Wars Episode I: The Phantom Menace, has grown up.

BECOMING a mother TO EDIE WAS f***ing EXTRAORDINARY It is over a decade since Bend it like Beckham was released, and Knightley is finally being recognised for her excellent acting ability. From her role as Elizabeth Swann in The Pirates of the Caribbean series, which made her name global, to other flicks such as Love Actually in 2003, Pride and Prejudice in 2005, Atonement in 2007 and The Duchess in 2008. Her most recent release is biographical disaster drama Everest, in which she plays a small but key role
as the pregnant wife of one of the guides who died on the tragic expedition. Based on the true story of the 1996 Mount Everest disaster – in which eight people lost their lives after the mountain was engulfed by an unremitting blizzard – the film makes for a nail-biting drama and a heart-breaking finale. In the film, Knightley is Jan Hall, the wife of Rob Hall, a dedicated mountaineer who lost his life when he refused to abandon a fellow climber on the descent. Having met eachother on an Everest climb in 1990, Jan Hall was an equally experienced climber to her husband. Tragically, two months prior to losing Rob, Jan gave birth to their daughter Sarah. One particularly poignant scene shows a distressed Knightley talking over satellite phone to her onscreen husband as he struggles to battle the mountain’s blizzard.

ARTS & CULTURE / PROFILE “I read several books about the climb and its impact on the survivors and it’s one of those terribly tragic stories which also says a great deal about the human spirit,” explains Knightley, while we discussed how she prepared for the role. She also spent time with the real Jan Hall to ensure she told their story as acurately as possible: “Jan has climbed Everest seven times since and she’s such a wonderfully open and strong woman.” Though most of the action in Everest takes place during the climb, the contrast between the men on the mountain and the quiet anxiety of Knightley’s portrayal of Jan Hall is what brings the reality of such a tragedy home. “Rob and Jan lived a very intense relationship and their love story is so beautiful and inspiring,” she says. “Those conversations they had are some of the most fundamental and dramatic scenes in the movie and it was such an important experience for me to be able to do them.” While the story of Everest, and the role Knightley played, is truly sad, in real life she couldn’t be in a happier place. She married Klaxons musician James Righton in 2013, and claims it has settled her and given her unrivaled confidence in who she is and what she wants from life. A change from the deep anxiety she suffered from during her rise to fame in her twenties. “It was overwhelming,” she says. “It was hard for me to understand and make sense of everything that was going on. I lived for some years in between London, where I still live, and Los Angeles. During that time my life changed completely. It became a

JAN [HALL] has CLIMBED Everest seven times SINCE her husband DIED nightmare to even take a walk. People were screaming my name and I was constantly followed my photographers everywhere I went. Now I know how to handle those situations and I feel much more at ease with myself. It’s one of the positive sides of growing older and maturing in life.” Currently living in New York with her husband and daughter while she is rehearsing for her first Broadway show, Thérèse Raquin, she remains adamant that London is her home. She was in fact born in Teddington, in the borough of Richmond upon Thames, to an actorturned-playwright mother and an actor The Imitation Game, 2014
father. The legacy and close connection to the theatre set her on this path from the tender age of six, when she first signed with an agent. After a small role in Star Wars Episode I: The Phantom Menace, it was her part in the 2002 film Bend it Like Beckham that really grabbed the film industry and the public’s attention. Very soon she was lauded as the new ‘It Girl’ of Hollywood, and conseqentually film offers began pouring in Ω from Jane Austen’s heroine Elizabeth Bennet in Pride and Prejudice, a performance which earned her first Academy Award nomination; to machine-gun-toting bounty hunter Domino Harvey in Domino. Despite her burgeoning acting career, Knightley has a reputation for shying away from the glitz and glamour of Hollywood. When she was dating Pride and Prejudice co-star Rupert Friend from 2005 to 2010, the pair were often photographed around London shielding themselves from the flash of the paparazzi camera. Rarely seen on set without a book in her hands, Knightley is an avid reader and has a slew of authors who she follows “with a passion.” She also starts every day by reading a newspaper to make sure she is up to date on current affairs. Knightley has also become a fashion icon. She’s graced the cover of many magazines and is the face of Chanel’s fragrance, Mademoiselle. One of the most recent adverts sees Knightley zoom around Paris on a motorcycle in a Chanel beige jumpsuit. She has jumped from the rigs of pirate ships and hunted dangerous criminals, but Keira Knightley is as human as the best of us. As she prepares to grace Broadway in her inaugural performance she is filled with nerves. “I wanted to experience going on stage, performing live and being part of that world in every sense,” she says. “I was very attracted to the idea of being a part of this play, that is based on the novel by Emile Zola, which is a magnificent work. Also, my father has always been a great lover of theatre and still goes to see as many plays in London as he can. He enjoys watching actors like Benedict Cumberbatch, who takes time away from making movies so he can perform on stage. But I have to admit that I have some fear of taking on this role, particularly as we get closer to the opening. I’m preparing very hard for it!” ◆ Thérèse Raquin, showing for the whole of November and December Studio 54, New York; broadway.com

T
he thing about film posters is that they are a dying breed. Cinema billboards are all set to switch to digital, which will put a stop to the printing of promotional posters, a tradition dating back to 1895. Though as far as poster expert Bruce Marchant is concerned, anything produced since the 1980s is of limited interest anyway, dominated by photography rather than illustration. Marchant has been collecting film posters for around 30 years and although supply is diminishing, their popularity is increasing as they remain affordable and fascinating collectors’ pieces, relics of the 20th century. So what makes a poster collectable? There are many factors affecting value, including ones with unusual dimensions (US versus British specs), anything that was withdrawn and later changed and European posters, which were routinely signed by the artist, unlike British and American posters. But for most buyers, the appeal is either nostalgia or pure design. ‘People ask for their favourite film, or something with a personal association,’ says Marchant. The most coveted posters are fairly predictable: ‘anything with Audrey Hepburn is probably the most popular, after horror and sci-fi of course.’ says Marchant. The holy grails are the original Frankenstein and Dracula posters – ‘there are less than five of them left in private collections in the world and I know where they are’ – while Bond is always a big seller, as is Film Noir and Hammer Horror.

Film posters were produced by the studios and their in-house designers; their impact used to be huge. In the first half of the 20th century, posters were the only advertising for a film. An illustration would provide the audience with its only advance information in days before trailers were freely available on your phone. Interestingly, posters used to be leased to cinemas by poster exchanges and cinemas would return them, so the exchanges became sometimes vast archives, where non-current posters would sit unused until a cinema requested them. Decommissioned exchanges are a huge source of posters for dealers like Marchant, though they are all for the most part gone now. Marchant estimates that he’s sold over 15,000 posters in the past 25 years, of which only around one per cent have ever come back into his hands, because these are things that people tend to keep. ‘For a few hundred pounds you can have a real piece of history on your wall,’ he says, and at this pre-Christmas auction, lots will start at just £100, rising to £2,000 for rarer pieces. Film lovers take note. ◆ l Bruce Marchant – 90 Years of Film Posters and Memorabilia (1918-2008) is an online auction at 25 Blythe Road, W14. It will be viewable online from 20 November at 25blytheroad.com. The public exhibition runs from 6 to 9 December; bidding opens on 4 December and closes at midday on 9 December.

BELLA FREUD
The cult of Bella Freud lives on Ω and I suspect it’s never going to leave us. Bella has been quietly lending her talents to her clothing and fragrance line for some years, and now - Kate Moss alone ensured any fashion closet worth its weight housed a Ginsberg is God jumper - and now we can be just that bit more ‘Bella’ by wearing her signature scent, Bella Freud. Amber and patchouli bring a seductive, warm and just a little nonchalant feeling to the scent, just like Bella herself. ◆ l bellafreud.com
JOHANNA ORTIZI
I have to say that I trust pretty much anything that launches on Moda Operandi, but sometimes there’s a certain designer that I cannot resist, Johanna Ortiz is that designer for my festive season dressing. No blacks or heavy embellishment for the party circuit, I’ve chosen to fill my December wardrobe with twisted shirting, ruffles and skirts that tie in all the right places to ensure serious statement looks. ◆ l modaoperandi.com
DONNA IDA CASHMERE
There’s more to Donna Ida than just denim, she also knows a thing or two about cashmere. Having sourced the finest cashmere and designed wear-everyday knits to house under her own label, Ida, the latest collection ensures a much needed pop of colour through the winter months. Not usually one for stripes, I couldn’t pass on the playful three tone Winter In The City jumper nor the irresistible yellow Downtime. ◆ l donnaida.com
PAUL ANDREW
OLIVIA VON HALLE
Upon entering her site, you cannot help but fall hopelessly in love with the world of Olivia von Halle. Yes, anybody can make silk pyjamas, but nobody makes them quite like Olivia. You’re buying into the spirit of what the label represents, you feel immediately more attractive when you unwrap and slip into any of the beautifully cut designs. Pyjamas, slips, robes, bridal and accessories, I defy you not to find something that will make you feel infinitely more special from the OvH collections. ◆ l oliviavonhalle.com

There is nobody better placed to dress your feet than Paul Andrew; the past 15 years have seen this New York based Brit designing shoes for esteemed houses including Donna Karan, Calvin Klein and Alexander McQueen. With a freshness and consideration that we haven’t seen for some time, the collections all have a certain something that makes them unique from any other designer right now; personally knowing Paul’s work ethic, there is no question that he oversees each design from sketch to production. My firm favourites are the flatteringly sexy Mulberry sandal and timeless Passion slingback. ◆ l paulandrew.com

he party season is all about glitz, a coiffured mane and cocktails. The Parlour in Chiswick offers all of the above. On arrival, I was whisked to chic tea room and treated to some tea and cake. I took a look through the blow-dry menu, which is what they’re known for, and opted for the ‘Bombshell Blowout’. While it sounds extreme, The Parlour only uses natural products. Among these are milk_shake, an Italian haircare brand that only uses natural ingredients that leave your hair looking and feeling great. My dry hair was in need of a feed, so the argan oil and whipped cream product was applied to my limp locks. SOFT TOUCH Changing the face of loungewear, Blue Marmalade is the go-to luxury pyjama brand
L
ocal Mum Jenny Tolliday described the outfit she was modelling Ω from loungewear brand, Blue Marmalade’s newest collection Ω as being made from ‘the softest fabrics I’ve ever felt on my skin’. Catering to women of all ages, Blue Marmalade combines luxury and comfort perfectly, so well in fact one can’t help but wish all loungewear could be this nice. Blue Marmalade embodies relaxation, the joy people take in returning home and unwinding. Each design is classic, easy-to-wear,
and expertly manufactured, meaning you can put your feet up in them everyday, as if they’re your second skin. While getting ready for work or a night out requires time and effort, and Blue Marmalade knows this, so with its pyjamas range they aim to cut the noise with simple but chic loungewear. Founder Helen White (the woman behind the transformation of sportswear brand Sweaty Betty into a fashion-forward brand) is now dedicated to
49 ADV_CHIS_DEC15_BLUE MARMALADE.indd 49
the reinvention of loungewear for discerning consumers. Effortlessly chic, Blue Marmalade loungewear is made from the highest quality materials, ones that White (a fabric expert in her own right) has carefully selected, including delicate MicroModals, supremely soft Lyocell and luxurious silk fabrics to create extravagant alternatives that challenge the highstreet norms. Borne in Chiswick, Blue Marmalade has recently released its impossibly stylish AW15 collection. This season you’ll find stylish MicroModal wrap tops, limited edition silk dressing gowns and playful pinstripe designs, all available in a variety of beautiful colours and interesting prints. THE JAMESON RETREAT We find out about Harry Jameson’s, latest elite fitness project
The retreat is...
● the most in-depth health assessment available. With an educated approach to wellbeing, it’s an eight week plan that includes a one week retreat abroad.
I designed the programme...
● with Harley Street’s lifestyle management specialists, Viavi. The thing that sets us apart is the pre and post-retreat care (which includes full body biometric testing) that helps clients make their new lifestyle a reality.
In January 2016..
● we will be at the One and Only Royal Mirrage, Dubai. With fantastic weather guaranteed the timing is perfect; just after the excess of Christmas and New Year.
The biggest transformation... ● was made by a lady in her early 30s whose initial goal was purely weight loss; pounds on the scales were all that mattered to her. But, when we reassessed her six weeks after the retreat, we had changed her physiology far beyond her expectations. She lost 2.5kg of fat, gained 2kg of lean muscle tissue, and lost 4cm round her waist. She also managed to put 3cm on her glutes which she was really happy about.
Fit Girl
The Jameson brand is...
● growing fast. The amount of extra work I am doing is increasing and I love that but I am keen to stay true to what I am passionate about: training clients. I love the 1:1 interaction and seeing people genuinely change their lives. A couple of opportunities to do some TV work have arisen, but let’s see what happens. For now, I am loving watching my team succeed in London and watching the retreats grow internationally. u

THE ‘KEY’ TO SUCCESS
THE KEYS TO
WELLNESS Are you ready to eat well and take regular exercise or do you need a little extra help? by Terry Rodham HOGARTH GROUP WELLNESS MANAGER
T
he mantra of eating well and taking regular exercise sounds so easy, but even with the best of intentions, it’s still hard to keep to this simple mantra, isn’t it? In our modern world we are constantly juggling work, social lives, finances, family and relationships, often resulting in a regular exercise regime and a healthy diet proving a step too far. We recognise these challenges at our clubs and provide members with expert guidance and regular one -to-one contact, combined with the latest in fitness technology, to make
the process of maintaining and improving personal well-being easier to manage, understand, and achieve.
BALANCE IS THE KEY
u At The Park Club, we have adopted the concept of Wellness, defined as ‘a balance of mind, body and spirit that results in an overall feeling of wellbeing.’ The key to that statement is balance. Not only do we consider it our job to guide you inside the gym, we also undertake to guide you outside the gym to help you achieve this balance because, after all, there is more to life than eating chicken salad and pounding the treadmill.
53 CHIS_Dec15_Park_Club_adv.indd 53
u Using the latest in gym technology, members can carry their workout information with them on a special Wellness Key, which can be inserted into any machine, providing the user with information such as the correct weight to use, the number of repetitions, or the resistance level and time on an exercise bike. Not only does this give the user confidence, it also stores all your exercise results, such as calories burned, weight lifted or distance covered, so that a review can be conducted by a trainer and goals/targets adjusted accordingly.
REGULAR CONTACT
u Regular contact between members and trainers is a major focus. Members are entitled to one complimentary personal training session every month in which progress can be discussed, technique and form checked and goals reassessed. This regular contact keeps members engaged in their routine and confident to continue. Using our ‘Coach’ application, trainers are also able to stay in regular contact with members wherever they may be. If you’ve had a period of inactivity on your account, you can expect an email checking that everything is okay!
STAYING CONNECTED
u You can use your smart phone to access your Wellness account wherever you are. You can use your laptop or tablet to register physical activity such as a game of tennis or a cycle around the park from anywhere. And of course, if all this technology is too much, simple face-to-face time is always available from our welcoming and knowledgeable staff. We love to see members enjoying their routine and reaping the benefits of regular exercise, wherever it may be. u

ith the earthiness of chestnuts and the richness of pastry there’s no better a grape match than Chardonnay, preferably one with a hint of oak, but not dominated by it. MOULES MARINIÈRE
classic dish that’s packed with flavour, the creamy garlic sauce plays just as important a role as the fresh juicy mussels. Riesling from Alsace is a winning match because it’s usually dry as a bone but has a real depth with the honey flavour. CLEMENTINE CAKE
henever the tang of orange is in a recipe, savoury or sweet, I always think a wine with a distinct orange flavour makes the best pairing. Tuscany’s celebrated sweet wine Vin Santo – here made with Trebbiano grapes – is the perfect answer because it’s packed with marmalade lusciousness, and this one is so intense and long-lasting it really complements the flavour of the cake. u Vignamaggio Vin Santo del Chianti Classico 2008, £21.50; corneyandbarrow.com

FOXLOW New to Chiswick
Wo r d s e l i z a b e t h h u t t o n
rom the team behind award-winning steakhouse Hawksmoor, Foxlow is stepping out from the shadow of its older sibling, marking it with the opening of a fourth restaurant in Chiswick. While this branch is in a quieter neighbourhood than the rest, it still manages to generate a cracking atmosphere. But it’s the food you come here for. Famous, unsurpisingly, for the steak (sourced from The Ginger Pig), one order was already in the bag. Aged for 35-days, the blushing meat came served with sweet caramalised onions and bone marrow. On recommendation we ordered the mac ‘n’ cheese, which had a fiery kick from the poblano chilli buried within. The more virtuous side of me also ordered the brixham hake with romesco and greens. While the fish was delicate and flakey, its subtle flavour relied too heavily on the red pepper pesto and buttered chard. Next time I’ll go with my instincts and order the ribeye. Finishing things up with a Miami dolphin (a short version of the piña colada) and a round of sticky toffee pudding, we left safe in the knowledge that Hawksmoor’s little sister is, in fact, all grown up. ◆

L’Escargot
Absolutely rediscovers an old classic Wo r d s T e o va n d e n B r o e k e
I
f you’re in search of some old fashioned Gallic glamour, look no further than Soho stalwart L’Escargot. Founded in 1927 by Georges Gaudin and presided over by tyrannical head chef Marco Pierre White during its Nineties heyday, today the restaurant – situated in a newly restored 280-year-old townhouse on bustling Greek Street – is helmed by head chef Oliver Lesnik, who cut his teeth at The Cadogan and The Connaught, and his new all day menu is second-to-none. We visited the restaurant on a Friday afternoon with a plan to indulge in a long, Burgundy-soaked lunch – which seemed fitting, given the establishment’s hedonistic reputation. We didn’t leave dissatisfied. The food is rich, delicious, and decidedly French. The best thing about the menu is, without a doubt, the selection of pre-dinner snacks. Perfectly cheesy miniature croque monsieur, soft wild mushroom arancini balls, and cocktail sausages all made for stomach filling appetisers (ideal for soaking up the pre-dinner Bollinger). Service was prompt and expertly delivered. It is clear
WE SAMPLED the enormous tarte TATIN – WHICH WAS toothruinously CARAMELDRENCHED that L’Escargot is a restaurant with pedigree: the slightest napkin slip was attended to with lightning speed and our glasses were never empty. For main we shared a yielding slab of chateaubriand with a side of garlicsodden escargot (slimey yet satisfying), while for dessert we sampled the enormous tarte tatin – which was tooth-ruinously caramel-drenched – and the equally sweet crème brulee. The Burgundy, we’re pleased to report, did not disappoint. u

It may still be sticky, but shape into a log and wrap in clingfilm and leave to rest in the fridge overnight before using. Try to resist eating the dough every time you pass by the fridge. Yes, we know it is hard not to do. 2 Preheat the oven to 200°C (400°F) Gas 6. 3 Roll out the dough thinly on a floured surface and use cookie cutters to cut your desired shapes. You want the biscuits to be thin. 4 Bake in the preheated oven on lined baking sheets – each batch will take 5–6 minutes depending on the thickness. You want the biscuits to be a darker shade of brown. 5 Remove from the oven and cool on a cooling rack. Dust with icing sugar and serve or keep in an airtight container. CINNAMON WREATH WITH RYE Ser ves 10-12
sometimes make this when I need a centrepiece for a big fika session or birthday party. Essentially, a big cinnamon bun with a bit of extra oomph.
I
I n g r e d i e nt s Dough: • 25 g fresh yeast or 13 g dried yeast • 80 g butter, melted • 300 ml whole milk, at room temperature • 50 g sugar • 2 teaspoons ground cardamom • 375 g white strong flour • 80 g rye flour • 1/2 teaspoon salt • 1/2 beaten egg
dough hook, or 10 minutes by hand. The dough should only just reach the point of not being sticky. Leave to rise until it’s doubled (around 40 minutes). 3 To make the filling, put the softened butter, cinnamon, cardamom and sugars into a bowl and mix well. 4 Tip the dough out on a floured surface and work it with your hands, adding more flour, until you have a good, mouldable dough that does not stick and can be rolled out. Cut the dough in half and roll
each piece in a rectangular shape (around 50 cm x 40 cm/16 x 20 in.). Spread the butter mixture evenly across the dough. Add three-quarters of the chopped nuts across the surface. Roll the dough up lengthways so you end up with a long, tight roll. Place on a baking sheet and shape into a round circle, attaching the ends. Using scissors, cut slices almost to the base. Spread each roll out to the side and flatten slightly until you have done the whole wreath. Ensure the wreath is quite flat. Let the wreath rest again for 30 minutes under a clean dish towel. 5 Preheat the oven to 200°C (400°F) Gas 6. Brush the wreath gently with the remaining egg/ milk and bake in the preheated oven for 20–25 minutes or until done. 6 Brush at once with a very thin layer of warmed syrup, then sprinkle over the rest of the nuts and keep under a damp dish towel until cooled a bit. Once cooled, make the icing using a little icing sugar and a few drops of warm water and pipe over the wreath. ◆
Filling: • 100 g butter (spreadable) • 3 teaspoons ground cinnamon • 1 teaspoon ground cardamom • 125 g dark brown sugar • 25 g caster sugar • 70 g chopped toasted nuts, e.g. almonds and hazelnuts Topping & Brushing: • 1 /2 beaten egg mixed with a dash of milk, for brushing • Syrup (see page 150) • icing sugar and warm water • piping bag fitted with a plain nozzle M e th o d 1 If using fresh yeast, pour the melted butter into the milk. The temperature should be between 36–37°C (97–98°F). Add the yeast and stir until dissolved. Pour into a mixing bowl. 2 If using dried yeast, heat the milk to 36–37°C (97–98°F) and pour it into a bowl. Sprinkle in the yeast granules and whisk together. Cover with clingfilm and leave in a warm place for 15 minutes to activate. Pour the mixture into a mixing bowl. Add the melted butter, sugar and cardamom and stir again. Add 250g strong flour and all the rye flour, salt and egg. Mix until everything is incorporated. Designed by famed Italian architect Antonio Citterio, the resort is a beautiful marriage of contemporary Italian and Balinese design. Here, dark exotic woods and hand-cut

volcanic stones intermingle as effortlessly as the resort’s stunning cliff-edge infinity pool does with the ocean’s horizon – which, by the way, is unmissable. From the restaurants to the villas to the pool, ocean views are everywhere. Whether it’s solitude or socialising you’re after, the resort balances both options with aplomb; you could spend an entire stay holed up in your very plush villa. But, if seeing and being seen is your thing, then throw on your finest resort chic attire and head to the pool and adjoining lounge bar to be at the heart of it all.

here are no rooms at this resort, only villas, all with ocean views and plunge pools. And although villas are built close to each other, we feel a remarkable sense of privacy in ours, thanks to an intelligent design feature that encloses a very spacious outdoor living room and pool area within a high-walled lush garden setting. Inside, we love the dramatically dark bathroom with its black Terrazzo floor, glass walls and inviting sunken bathtub, which takes centre stage. As standard, leisure concierges are on hand to help with activities like market tours and day trips to neighbouring islands. But don’t
pack too much in: the area is known for its stunning sunsets, so you’ll want to be sitting comfortably on the villa patio, aperitif in hand, to witness the magical sight.
THE SPA
A
n imposing antique Joglo house, transported all the way from Central Java, signals your arrival at the spa’s reception. Inside, a breezy courtyard leads with a serene pond and walkway lead to an open-air relaxation lounge, yoga pavilion and swimming pool. With its mesmerising unspoilt ocean views, my semi al fresco clifftop treatment room is an experience in itself. But this spa isn’t just style and no substance. The Bulgari Balinese massage is positively blissful, as is the longer and

t doesn’t get any fresher than the winning combination of grilled seafood and a bracing ocean breeze at beach restaurant La Spiaggia, located under the cliff and charmingly accessed via a funicular railway. The resort’s all-day dining space, The Sankar, has prime position on a cliff edge and window seats overlook the island’s shores, so make sure you arrive early at breakfast. Naturally, given the Bulgari brand heritage, there’s also an Italian restaurant. Open only for dinner, Il Ristorante, with its pretty open air pavilions and ornamental lake, offers a fine dining experience. We were blown away by the elegant degustation dinner. Opt for the wine pairing menu option and request a table at the front, which affords a stunning view of the surrounding seascape. ◆

AMANDARI Ubud, Bali
THE HOTEL
Y
ou know you’ve entered the realm of the sublime when you check in to an Aman hotel. And Amandari is no exception. Set among verdant fields of green rice terraces close to Bali’s spiritual and cultural heart of Ubud. Amandari channels a very different feel to the beach resorts that most people associate with the island: This inland retreat is an enchanted wonderland filled with lush green flora and fauna. Airy communal areas and 30 thatched villas are connected through an artery of pebbled walkways and beautifully landscaped rounds adorned with shrines and ponds. Our experience begins on touchdown at Denpasar airport, where a representative of the hotel meets us off the plane and fast-tracks us through security into a waiting car. After an hour’s drive, we turn off at a discreet entrance, making our way down a long foliage-lined driveway and into a charming walled Balinese village. Following a warm greeting by friendly staff, we are whisked off to our villa. The whole process is seamless from start to finish. Because service is paramount at Amandari; the perks of your stay include a return car service into Ubud whenever the mood strikes, and (parents, take note) four hours of babysitting per day.
THE ROOM
E
ntered through a Balinese-style stone gateway, our spacious duplex Pool Suite is like a village in and of itself. Enshrined in a beautiful landscaped garden, the villa’s coconut wood
and teak fixtures made it feel natural and sympathetic to traditional Balinese design. Floor-to-ceiling glass doors open onto a private patio and generous private swimming pool. Televisions aren’t something you’ll find at Amandari, not that you’ll even notice, with the highwalled outdoor sunken marble bath adjoining the bathroom to sink into. Here, it’s not only the sights and sounds, but also the smells that make for a complete sensory takeover – bamboo-framed roofs feature alang-alang grass thatching that gives off a gently rustic, fresh fragrance.
THE SPA

THIS INLAND RETREAT is AN enchanted WONDERLAND room, sauna and marble steam room. I visit the spa just as the sun is setting, and my pleasant walk is enhanced with the sight of candles lining the path and the sound of haunting Balinese music from one of the resort’s weekly dance performances taking place back at the open-air lobby. Treatments – including my detoxing Zone Facial Massage – make use of local Balinese ingredients and range from holistic facials to traditional Indonesian treatments and a selection of massages and scrubs.

that springs to mind when you think of Singapore, the small but incredibly busy South-East Asian island city, whose imposing tower blocks and eternal hustle and bustle never seem to end. But venture ten minutes beyond the mainland and you’ll find Capella, a spacious and peaceful resort on the island of Sentosa, where roaming peacocks, sweeping views of the South China Sea and beautifully landscaped grounds make for a heady recipe for pure holiday bliss. Set amid 30 acres of tropical rainforest, the Foster + Partners-designed resort is the perfect blend of old and new: two former 19th century British Army barracks are flanked by contemporary curved structures that flow with the hillside. Capella is elegant, chic and eager to please: Before your stay a personal assistant contacts you to to see if they can help personalise your time here, saving your energy for those all-important decisions, such as which one of the resort’s three cascading pools is best to sunbathe by.

pace is definitely not an issue at Capella, and rooms, which start at 77 sq ft, are some of the most generous in the city. We stay in a luxuriously appointed Garden Villa, a one bedroom double-height villa with its own private plunge pool and outdoor shower – perfect, if you can ever drag yourself out of the kingsize bed or stop twirling around in your walk-in wardrobe. Aesop products furnish the bathrooms and in-room facilities include a Nespresso machine, mini bar with free soft drinks, BOSE entertainment system and a futuristic touch-screen control panel for lighting, drapes and temperature.

antonese fine dining restaurant Cassia, designed by famed interior designer Andre Fu, is an intimate space that sits within the hotel’s colonial building and is well worth a visit for its refined take on haute Cantonese cuisine. We sample its exquisite weekend dim sum brunch and are blown away with its quality. Breakfast is taken at the seafront-facing Knolls restaurant, which transforms into a Mediterranean-inspired dining experience for lunch and dinner. And if you can pry yourself away from the pool, the outdoor daybeds at Cuban-inspired Bob’s Bar are the only place to be in the evening. ◆

here is no stopping Ian Schrager, the prolificate behind the Edition brand (and Studio 54), who plans to open a further nine boutique hotels over the next four years, including one in Shanghai and one in Reykjavik. The London branch was the first to open back in 2013 and received rave reviews from the get go. A place of elegance and originality Ω expect modestly-sized rooms lined with contemporary woodpanelled walls, cloud-like beds draped with lavish fur stoles and delicate Art Deco furnishings. And it’s not style over substance. The hotel is set within five circa-1835 Georgian townhouses that have been meticulously restored (with a few modern twists) to their former glory. u

BAR
RESTAURANT
ou’ve spent the day shopping on Oxford Street, you’ve had a bath in your grand tub, you’re relaxed and dressed for dinner, now head down to the hotel’s impossibly stylish bar, Punch Room. Designed to emulate a 19th century London members club, Punch Room is all about the cocktails. While you can order all of your favourite drinks, Punch Room is known for its punch bowls, which come in several sizes for one person or for a group to share. Our favourite has got to be the house Edition punch Ω a lethal concoction of Tanqueray and oak moss syrup. u
erner’s Tavern, the brainchild of Michelin-starred chef Jason Atherton, is housed in what is quite possibly London’s most beautiful dining room. Oozing style and sex, Berner’s is a place you go to be seen, and to get fed. The food is British with a Franco-American twist, and is served all day, but go late and order the prawn cocktail with lobster jelly followed by the macaroni cheese. Don’t judge a book by its cover, the mac‘n’cheese is a thing of beauty: al dente tubes of pasta drowned in the creamiest cheese sauce and finished with hunks of tender ox cheek and a sweet crust of brioche and bone marrow. lematis cirrhosa – also known as jingle bells – flowers from Christmas time to Valentine’s Day. It has nodding creamy white bells which transform into fluffy seed heads nearer February. It needs sun and a bit of shelter but doesn’t need much pruning. Unless it gets too out of hand, in which case I suggest you prune it straight after flowering. Feed with bonemeal or make a mulch with well-rotted compost for a spectacular bloom. ◆ kategouldgardens.com

SMALL TALK The top products for cold winter days and cosy Christmas nights
hese multi-coloured LED night light comforters from Aloka are the latest baby sleep-aids to hit the market. Rotating through 12 different colours, each one brings a sense of calm to the room, lulling baby into peaceful reveries. As the parent of a baby who really fights nap times, the light and music has been a godsend: the Aloka night light provides a suitable distraction to send her off calmly. Each light comes with a remote control, which is great for older pre-schoolers as they can switch between different colour settings; for older children there’s a white setting so that the light can double up as a reading lamp. There’s even a special rainbow show and a timer, so parents needn’t return to turn out the light after sneaking out. ◆

KIDS & EDUCATION / SCHOOL TALK
Get it Right What makes a good education? Sir Anthony Seldon set out his stall at the Tatler Schools Live! Event Wo r d s A M a n d a C o n s ta n c e
W
hat makes a good education? That’s what a lot of women with glossy hair and good heels wanted to know at the first Tatler Schools Live! event in London. Described by the compere, newsreader Mary Nightingale, as “a drinks party, with headmistresses” the Tatler show brought some of the brightest stars from the educational firmament together to discuss, debate and inform. Sir Anthony Seldon, puckish as ever, set out his stall for why former independent school pupils have become dominant across society. This is not because of their academic achievements, he argued, but because their grounding in so-called soft skills prepared them well for 21st century jobs. “If it’s not tested, measured and examined, it’s not education is it?” he poised in typically controversial style. Sir Anthony has often criticised the state education system, saying that its “remorseless drive for exam success” and obsession with league tables means that it’s no longer “fit for purpose”. He said – perhaps unsurprisingly given that his audience had shelled out hundreds of pounds for a ticket – that the state sector has “much to learn from the success of the British independent school model”. But Sir Anthony cautioned parents against getting caught up in the arms race that private education has become. “The best parents choose the school for the child, the worst parents choose the school for themselves,” he said. “There is something terribly wrong about parents who push their child towards a certain school – who tutor, stress and strain. An unhappy childhood will stay with you for the rest of your life,” he warned. He
academic, sporting or creative; it is the job of education to tease them out. Independent schools have embraced positive psychology. Sir Anthony described the rising incidence of mental health issues in senior schools as a “terrible malaise”. He pointed out that when he introduced well-being and positive psychology techniques at Wellington College more than a decade ago he was “blasted by the Mail and Telegraph for indulging in psychobabble”. Now techniques such as mindfulness are becoming the norm in the private sector.
The best parents
CHOOSE THE SCHOOL FOR THE CHILD, the worst parents CHOOSE THE SCHOOL for THEMSELVES revealed that his own parents had wanted him to go to Winchester, but “I wasn’t bright enough” and didn’t get in. “Mum and Dad were mortified, it took them 20-30 years to recover,” he joked. “Love is about letting people be independent, not creating a mini-me. As a head, I see it again and again.” Sir Anthony set out his (very personal) list of five things about educating people for life that he believes independent schools do well. Independent schools work with the whole child. Citing Howard Gardner of Harvard University’s work on the theories of mulitple intelligences, Sir Anthony explained that every child has extraordinary faculties whether they are
97 CHIS_Dec15_Education.indd 97
Sir Anthony has gone on record on the need for more creativity in education. He urged the audience to watch educationalist Ken Robinson’s Ted Talk on the subject of creativity and education. Character and grit. A good, modern education must build resilience for the stresses and strains of the modern world. He told the audience to turn to Artistotle because “everything we need to know about what being a good human being is was written by Aristotle (and Buddha and Confuscius)”. And finally, he dwelled upon the famous quote by American poet Henry David Thoreau: “The mass of men lead lives of quiet desperation and go to their graves with their song still inside them.” He said: “Our jobs as educators is to release that song,” he said. “As parents you must release the inner song of your child, not impose your own. Your children are not your children, they are themselves... I’m going to say something pretty shocking,” he said. “Your child will get the same grades whatever senior school they go to, but if you get the right school you’ve got a happy child.” And he left the stage to thunderous applause. u

rowing up in a small Welsh town meant that there wasn’t much to do on a Friday night other than wander down to the local pub for a few drinks. When I returned home from university during the holidays, my dad and I would head to the local for a pint of our shared favourite, London Pride. Our local pub is the only place nearby that sells it, so it fast became a father-son tradition. When I started working at Andrew Nunn & Associates, I discovered that the famous brewery behind ‘our beer’ is Fullers, who are not only based in Chiswick, but had also worked on a project with my boss Andrew, called ‘Wild About Chiswick’. A sure sign that both Chiswick and Andrew Nunn & Associates were the right fit for me. Six months ago I made the move to work in Chiswick, after 14 years living
I THRIVE ON THE SOCIAL INTERACTION, THE ABILITY TO WORK ON MY OWN ACCORD AND THE EXCITEMENT OF SUCH CHANGEABLE CONDITIONS
in the Welsh Valleys. While it has been a strange transition leaving the peaceful countryside to join the busy streets of West London, it’s certainly not been a regretful one. After university, I went travelling all over South East Asia and Australia, spending a year trekking from place to place. The experience of constantly being on the move and exploring new things definitely stood me in good stead for the property world and estate agency is the perfect fit. Since joining Andrew Nunn and his team as Lettings Negotiator earlier this year, I’ve found myself thriving on the
social interaction, the ability to work on my own accord and the excitement of operating in such changeable conditions. The lettings market has been energetic this year, and it’s the excitement of dealing with such high demands in a competitive environment that appeals to me the most. The early autumnal months saw this energy subside a little, but we are now witnessing a new rush of eager applicants keen to get settled before Christmas. I think the art to being a ‘lettings negotiator’, like many things in life, is to become really interested in getting to know people and places. The more I know about an individual, the better chance I have of finding them the perfect property. And my growing knowledge of the local area and involvement in the community makes it an even easier sell, because I truly believe Chiswick is a wonderful place to live. u

THE BUILD: The couple had a track record before attempting this project – they had done up a Victorian semi nearby for a healthy profit of around £500,000 and bought an old dairy working yard to build a very modern house including two studios, three bedrooms and walkway above the main living areas. The poly carbonate sheeting used in its construction prompted both praise but initially raised eyebrows from McCloud. NOW: The couple still live and work there with their three children. ◆

Most satisfying transaction A few years ago, I sold a beautiful Victorian house in Poets Corner, Acton. Following a lot of interest in the property, I received a hand written letter from a lady I had shown around. At first I thought she offered asking price but on rereading the letter I realised she had offered £110,000 more. Needless to say it was accepted, and there were winners on both sides as the market has risen quite sharply since. Most interesting property We were instructed to sell a flat within the prominent St. Stephen’s Church in West Ealing. The church was originally built in 1867 and was converted into apartments in 1987. The apartments retained many of the church’s original charm and character including the beautiful clerestory windows, beams and arches.
