Keira’s EVEREST She is one of the most significant actresses of her generation, but Broadway might be Keira Knightley’s biggest challenge yet Wo r d s K A R E N A N N E O V E R T O N

way from the spotlight, 2015 has been a very big year for Teddingtonborn actress Keira Knightley. She recently became a mother to daughter Edie, an experience she has since described as being “f***ing extraordinary”, her film career has gone from strength to strength, and off the back of her Oscar-nominated performance in last year’s The Imitation Game, she is set to make her Broadway debut in a revival of Thérèse Raquin. She is understandably delighted with recent events, but humbly so, in that coy manner for which she is known. The girl who once played Sabé, the decoy queen to Natalie Portman’s Padmé Almidala, in Star Wars Episode I: The Phantom Menace, has grown up.

BECOMING a mother TO EDIE WAS f***ing EXTRAORDINARY It is over a decade since Bend it like Beckham was released, and Knightley is finally being recognised for her excellent acting ability. From her role as Elizabeth Swann in The Pirates of the Caribbean series, which made her name global, to other flicks such as Love Actually in 2003, Pride and Prejudice in 2005, Atonement in 2007 and The Duchess in 2008. Her most recent release is biographical disaster drama Everest, in which she plays a small but key role

as the pregnant wife of one of the guides who died on the tragic expedition. Based on the true story of the 1996 Mount Everest disaster – in which eight people lost their lives after the mountain was engulfed by an unremitting blizzard – the film makes for a nail-biting drama and a heart-breaking finale. In the film, Knightley is Jan Hall, the wife of Rob Hall, a dedicated mountaineer who lost his life when he refused to abandon a fellow climber on the descent. Having met eachother on an Everest climb in 1990, Jan Hall was an equally experienced climber to her husband. Tragically, two months prior to losing Rob, Jan gave birth to their daughter Sarah. One particularly poignant scene shows a distressed Knightley talking over satellite phone to her onscreen husband as he struggles to battle the mountain’s blizzard.

ARTS & CULTURE / PROFILE “I read several books about the climb and its impact on the survivors and it’s one of those terribly tragic stories which also says a great deal about the human spirit,” explains Knightley, while we discussed how she prepared for the role. She also spent time with the real Jan Hall to ensure she told their story as acurately as possible: “Jan has climbed Everest seven times since and she’s such a wonderfully open and strong woman.” Though most of the action in Everest takes place during the climb, the contrast between the men on the mountain and the quiet anxiety of Knightley’s portrayal of Jan Hall is what brings the reality of such a tragedy home. “Rob and Jan lived a very intense relationship and their love story is so beautiful and inspiring,” she says. “Those conversations they had are some of the most fundamental and dramatic scenes in the movie and it was such an important experience for me to be able to do them.” While the story of Everest, and the role Knightley played, is truly sad, in real life she couldn’t be in a happier place. She married Klaxons musician James Righton in 2013, and claims it has settled her and given her unrivaled confidence in who she is and what she wants from life. A change from the deep anxiety she suffered from during her rise to fame in her twenties. “It was overwhelming,” she says. “It was hard for me to understand and make sense of everything that was going on. I lived for some years in between London, where I still live, and Los Angeles. During that time my life changed completely. It became a

People were screaming my name and I was constantly followed my photographers everywhere I went.Now I know how to handle those situations and I feel much more at ease with myself. It’s one of the positive sides of growing older and maturing in life.” Currently living in New York with her husband and daughter while she is rehearsing for her first Broadway show, Thérèse Raquin, she remains adamant that London is her home. She was in fact born in Teddington, in the borough of Richmond upon Thames, to an actorturned-playwright mother and an actor The Imitation Game, 2014

father. The legacy and close connection to the theatre set her on this path from the tender age of six, when she first signed with an agent. After a small role in Star Wars Episode I: The Phantom Menace, it was her part in the 2002 film Bend it Like Beckham that really grabbed the film industry and the public’s attention. Very soon she was lauded as the new ‘It Girl’ of Hollywood, and conseqentually film offers began pouring in Ω from Jane Austen’s heroine Elizabeth Bennet in Pride and Prejudice, a performance which earned her first Academy Award nomination; to machine-gun-toting bounty hunter Domino Harvey in Domino. Despite her burgeoning acting career, Knightley has a reputation for shying away from the glitz and glamour of Hollywood. When she was dating Pride and Prejudice co-star Rupert Friend from 2005 to 2010, the pair were often photographed around London shielding themselves from the flash of the paparazzi camera. Rarely seen on set without a book in her hands, Knightley is an avid reader and has a slew of authors who she follows “with a passion.” She also starts every day by reading a newspaper to make sure she is up to date on current affairs. Knightley has also become a fashion icon. She’s graced the cover of many magazines and is the face of Chanel’s fragrance, Mademoiselle. One of the most recent adverts sees Knightley zoom around Paris on a motorcycle in a Chanel beige jumpsuit. She has jumped from the rigs of pirate ships and hunted dangerous criminals, but Keira Knightley is as human as the best of us. As she prepares to grace Broadway in her inaugural performance she is filled with nerves. “I wanted to experience going on stage, performing live and being part of that world in every sense,” she says. “I was very attracted to the idea of being a part of this play, that is based on the novel by Emile Zola, which is a magnificent work. Also, my father has always been a great lover of theatre and still goes to see as many plays in London as he can. He enjoys watching actors like Benedict Cumberbatch, who takes time away from making movies so he can perform on stage. But I have to admit that I have some fear of taking on this role, particularly as we get closer to the opening. T

he thing about film posters is that they are a dying breed. Cinema billboards are all set to switch to digital, which will put a stop to the printing of promotional posters, a tradition dating back to 1895. Though as far as poster expert Bruce Marchant is concerned, anything produced since the 1980s is of limited interest anyway, dominated by photography rather than illustration. Marchant has been collecting film posters for around 30 years and although supply is diminishing, their popularity is increasing as they remain affordable and fascinating collectors’ pieces, relics of the 20th century. So what makes a poster collectable? There are many factors affecting value, including ones with unusual dimensions (US versus British specs), anything that was withdrawn and later changed and European posters, which were routinely signed by the artist, unlike British and American posters. But for most buyers, the appeal is either nostalgia or pure design. ‘People ask for their favourite film, or something with a personal association,’ says Marchant. The most coveted posters are fairly predictable: ‘anything with Audrey Hepburn is probably the most popular, after horror and sci-fi of course.’ says Marchant. The holy grails are the original Frankenstein and Dracula posters – ‘there are less than five of them left in private collections in the world and I know where they are’ – while Bond is always a big seller, as is Film Noir and Hammer Horror.

Film posters were produced by the studios and their in-house designers; their impact used to be huge. In the first half of the 20th century, posters were the only advertising for a film. An illustration would provide the audience with its only advance information in days before trailers were freely available on your phone. Interestingly, posters used to be leased to cinemas by poster exchanges and cinemas would return them, so the exchanges became sometimes vast archives, where non-current posters would sit unused until a cinema requested them. Decommissioned exchanges are a huge source of posters for dealers like Marchant, though they are all for the most part gone now. Marchant estimates that he’s sold over 15,000 posters in the past 25 years, of which only around one per cent have ever come back into his hands, because these are things that people tend to keep. ‘For a few hundred pounds you can have a real piece of history on your wall,’ he says, and at this pre-Christmas auction, lots will start at just £100, rising to £2,000 for rarer pieces. he party season is all about glitz, a coiffured mane and cocktails. The Parlour in Chiswick offers all of the above. On arrival, I was whisked to chic tea room and treated to some tea and cake. I took a look through the blow-dry menu, which is what they’re known for, and opted for the ‘Bombshell Blowout’. While it sounds extreme, The Parlour only uses natural products. Among these are milk_shake, an Italian haircare brand that only uses natural ingredients that leave your hair looking and feeling great. My dry hair was in need of a feed, so the argan oil and whipped cream product was applied to my limp locks. After a wonderful head massage, this deep conditioning treatment was left to soak into my hair, before it was washed

out and I was given the pièce de résistance, my ‘Bombshell Blowout’. My locks were bouncy, soft and smelt like heaven Ω The Parlour had lived up to its reputation. While this branch is in a quieter neighbourhood than the rest, it still manages to generate a cracking atmosphere. But it’s the food you come here for. Famous, unsurpisingly, for the steak (sourced from The Ginger Pig), one order was already in the bag. Aged for 35-days, the blushing meat came served with sweet caramalised onions and bone marrow. On recommendation we ordered the mac ‘n’ cheese, which had a fiery kick from the poblano chilli buried within. The more virtuous side of me also ordered the brixham hake with romesco and greens. While the fish was delicate and flakey, its subtle flavour relied too heavily on the red pepper pesto and buttered chard. Next time I’ll go with my instincts and order the ribeye. Finishing things up with a Miami dolphin (a short version of the piña colada) and a round of sticky toffee pudding, we left safe in the knowledge that Hawksmoor’s little sister is, in fact, all grown up. ◆

L’Escargot

Absolutely rediscovers an old classic Wo r d s T e o va n d e n B r o e k e

I

f you’re in search of some old fashioned Gallic glamour, look no further than Soho stalwart L’Escargot. Founded in 1927 by Georges Gaudin and presided over by tyrannical head chef Marco Pierre White during its Nineties heyday, today the restaurant – situated in a newly restored 280-year-old townhouse on bustling Greek Street – is helmed by head chef Oliver Lesnik, who cut his teeth at The Cadogan and The Connaught, and his new all day menu is second-to-none. We visited the restaurant on a Friday afternoon with a plan to indulge in a long, Burgundy-soaked lunch – which seemed fitting, given the establishment’s hedonistic reputation. We didn’t leave dissatisfied. The food is rich, delicious, and decidedly French. The best thing about the menu is, without a doubt, the selection of pre-dinner snacks. Perfectly cheesy miniature croque monsieur, soft wild mushroom arancini balls, and cocktail sausages all made for stomach filling appetisers (ideal for soaking up the pre-dinner Bollinger). Service was prompt and expertly delivered. It is clear

I n g r e d i e nt s • 550 g plain flour • 1 teaspoon bicarbonate of soda • 1 teaspoon ground ginger • 1 teaspoon ground cloves • 2 teaspoons ground cinnamon • 1 teaspoon ground cardamom • pinch of ground allspice • pinch of salt • 150 g butter, room temperature • 200 g golden syrup • 100 g granulated sugar • 100 g dark brown sugar • 150 ml double cream • 1⁄2 teaspoon orange zest • icing sugar, to dust

M e th o d 1 Mix the flour and bicarbonate of soda with the dry spices and salt. Add the butter and all the other ingredients and mix until you have an even dough. It may still be sticky, but shape into a log and wrap in clingfilm and leave to rest in the fridge overnight before using. Try to resist eating the dough every time you pass by the fridge. Yes, we know it is hard not to do. 2 Preheat the oven to 200°C (400°F) Gas 6. 3 Roll out the dough thinly on a floured surface and use cookie cutters to cut your desired shapes. You want the biscuits to be thin. 4 Bake in the preheated oven on lined baking sheets – each batch will take 5–6 minutes depending on the thickness. You want the biscuits to be a darker shade of brown. 5 Remove from the oven and cool on a cooling rack. Dust with icing sugar and serve or keep in an airtight container. Serve on a pretty patterned plate. ◆

CINNAMON WREATH WITH RYE Ser ves 10-12

sometimes make this when I need a centrepiece for a big fika session or birthday party. Essentially, a big cinnamon bun with a bit of extra oomph.

I

I n g r e d i e nt s Dough: • 25 g fresh yeast or 13 g dried yeast • 80 g butter, melted • 300 ml whole milk, at room temperature • 50 g sugar • 2 teaspoons ground cardamom • 375 g white strong flour • 80 g rye flour • 1/2 teaspoon salt • 1/2 beaten egg

dough hook, or 10 minutes by hand. The dough should only just reach the point of not being sticky. Leave to rise until it’s doubled (around 40 minutes). 3 To make the filling, put the softened butter, cinnamon, cardamom and sugars into a bowl and mix well. 4 Tip the dough out on a floured surface and work it with your hands, adding more flour, until you have a good, mouldable dough that does not stick and can be rolled out. Cut the dough in half and roll

each piece in a rectangular shape (around 50 cm x 40 cm/16 x 20 in.). Spread the butter mixture evenly across the dough. Add three-quarters of the chopped nuts across the surface. Roll the dough up lengthways so you end up with a long, tight roll. Place on a baking sheet and shape into a round circle, attaching the ends. Using scissors, cut slices almost to the base. Spread each roll out to the side and flatten slightly until you have done the whole wreath. Ensure the wreath is quite flat. Let the wreath rest again for 30 minutes under a clean dish towel. 5 Preheat the oven to 200°C (400°F) Gas 6. Brush the wreath gently with the remaining egg/ milk and bake in the preheated oven for 20–25 minutes or until done. 6 Brush at once with a very thin layer of warmed syrup, then sprinkle over the rest of the nuts and keep under a damp dish towel until cooled a bit. Once cooled, make the icing using a little icing sugar and a few drops of warm water and pipe over the wreath. ◆

Filling: • 100 g butter (spreadable) • 3 teaspoons ground cinnamon • 1 teaspoon ground cardamom • 125 g dark brown sugar • 25 g caster sugar • 70 g chopped toasted nuts, e.g. almonds and hazelnuts Topping & Brushing: • 1 /2 beaten egg mixed with a dash of milk, for brushing • Syrup (see page 150) • icing sugar and warm water • piping bag fitted with a plain nozzle M e th o d 1 If using fresh yeast, pour the melted butter into the milk. The temperature should be between 36–37°C (97–98°F). Add the yeast and stir until dissolved. Pour into a mixing bowl. 2 If using dried yeast, heat the milk to 36–37°C (97–98°F) and pour it into a bowl. Sprinkle in the yeast granules and whisk together. Cover with clingfilm and leave in a warm place for 15 minutes to activate. Pour the mixture into a mixing bowl. Add the melted butter, sugar and cardamom and stir again. Add 250g strong flour and all the rye flour, salt and egg. Mix until everything is incorporated. Work the dough until it almost stops sticking and has a shiny surface – about 5 minutes with a mixer using a

IT’S ENJOYED THROUGHOUT the COLD MONTHS and especially on SUNDAYS in ADVENT leading up to CHRISTMAS

• 1 teaspoon dried Seville orange peel (or other orange peel if you can’t get Seville) • 7 whole cardamom pods • 15–16 whole cloves • 80 g caster sugar • flaked almonds and raisins, to serve M e th o d 1 Pour the wine into a saucepan, add the rest of the ingredients and heat to around 75–80°C (165–170°F), stirring to dissolve the sugar. Be careful not to heat it above 80°C (170°F) degrees, or the alcohol will start to evaporate. Remove the saucepan from the heat and leave to infuse for at least one hour, longer if possible.

Glögg tends to be traditionally mulled with cinnamon, cardamom, cloves and dried orange peel. This is recipe is borrowed from my sister-in-law Annika, who makes bottles and bottles of this in

t doesn’t get any fresher than the winning combination of grilled seafood and a bracing ocean breeze at beach restaurant La Spiaggia, located under the cliff and charmingly accessed via a funicular railway. The resort’s all-day dining space, The Sankar, has prime position on a cliff edge and window seats overlook the island’s shores, so make sure you arrive early at breakfast. Naturally, given the Bulgari brand heritage, there’s also an Italian restaurant. Open only for dinner, Il Ristorante, with its pretty open air pavilions and ornamental lake, offers a fine dining experience. We were blown away by the elegant degustation dinner. Opt for the wine pairing menu option and request a table at the front, which affords a stunning view of the surrounding seascape. ◆

ou know you’ve entered the realm of the sublime when you check in to an Aman hotel. And Amandari is no exception. Set among verdant fields of green rice terraces close to Bali’s spiritual and cultural heart of Ubud. and teak fixtures made it feel natural and sympathetic to traditional Balinese design. Floor-to-ceiling glass doors open onto a private patio and generous private swimming pool. Televisions aren’t something you’ll find at Amandari, not that you’ll even notice, with the highwalled outdoor sunken marble bath adjoining the bathroom to sink into. Here, it’s not only the sights and sounds, but also the smells that make for a complete sensory takeover – bamboo-framed roofs feature alang-alang grass thatching that gives off a gently rustic, fresh fragrance.

The London branch was the first to open back in 2013 and received rave reviews from the get go. erner’s Tavern, the brainchild of Michelin-starred chef Jason Atherton, is housed in what is quite possibly London’s most beautiful dining room. Oozing style and sex, Berner’s is a place you go to be seen, and to get fed. The food is British with a Franco-American twist, and is served all day, but go late and order the prawn cocktail with lobster jelly followed by the macaroni cheese. Don’t judge a book by its cover, the mac‘n’cheese is a thing of beauty: al dente tubes of pasta drowned in the creamiest cheese sauce and finished with hunks of tender ox cheek and a sweet crust of brioche and bone marrow. W

hat makes a good education? That’s what a lot of women with glossy hair and good heels wanted to know at the first Tatler Schools Live! event in London. Described by the compere, newsreader Mary Nightingale, as “a drinks party, with headmistresses” the Tatler show brought some of the brightest stars from the educational firmament together to discuss, debate and inform. Sir Anthony Seldon, puckish as ever, set out his stall for why former independent school pupils have become dominant across society. This is not because of their academic achievements, he argued, but because their grounding in so-called soft skills prepared them well for 21st century jobs. “If it’s not tested, measured and examined, it’s not education is it?” he poised in typically controversial style. Sir Anthony has often criticised the state education system, saying that its “remorseless drive for exam success” and obsession with league tables means that it’s no longer “fit for purpose”. He said – perhaps unsurprisingly given that his audience had shelled out hundreds of pounds for a ticket – that the state sector has “much to learn from the success of the British independent school model”. But Sir Anthony cautioned parents against getting caught up in the arms race that private education has become. “The best parents choose the school for the child, the worst parents choose the school for themselves,” he said. “There is something terribly wrong about parents who push their child towards a certain school – who tutor, stress and strain. An unhappy childhood will stay with you for the rest of your life,” he warned. He

academic, sporting or creative; it is the job of education to tease them out. Independent schools have embraced positive psychology. Sir Anthony described the rising incidence of mental health issues in senior schools as a “terrible malaise”. He pointed out that when he introduced well-being and positive psychology techniques at Wellington College more than a decade ago he was “blasted by the Mail and Telegraph for indulging in psychobabble”. Now techniques such as mindfulness are becoming the norm in the private sector.

CHOOSE THE SCHOOL FOR THE CHILD, the worst parents CHOOSE THE SCHOOL for THEMSELVES revealed that his own parents had wanted him to go to Winchester, but “I wasn’t bright enough” and didn’t get in. “Mum and Dad were mortified, it took them 20-30 years to recover,” he joked. “Love is about letting people be independent, not creating a mini-me. As a head, I see it again and again.” Sir Anthony set out his (very personal) list of five things about educating people for life that he believes independent schools do well. Independent schools work with the whole child. Citing Howard Gardner of Harvard University’s work on the theories of mulitple intelligences, Sir Anthony explained that every child has extraordinary faculties whether they are

Sir Anthony has gone on record on the need for more creativity in education. He urged the audience to watch educationalist Ken Robinson’s Ted Talk on the subject of creativity and education. Character and grit. A good, modern education must build resilience for the stresses and strains of the modern world. He told the audience to turn to Artistotle because “everything we need to know about what being a good human being is was written by Aristotle (and Buddha and Confuscius)”. And finally, he dwelled upon the famous quote by American poet Henry David Thoreau: “The mass of men lead lives of quiet desperation and go to their graves with their song still inside them.” He said: “Our jobs as educators is to release that song,” he said. “As parents you must release the inner song of your child, not impose your own. Your children are not your children, they are themselves... I’m going to say something pretty shocking,” he said. “Your child will get the same grades whatever senior school they go to, but if you get the right school you’ve got a happy child.” And he left the stage to thunderous applause. u

rowing up in a small Welsh town meant that there wasn’t much to do on a Friday night other than wander down to the local pub for a few drinks. When I returned home from university during the holidays, my dad and I would head to the local for a pint of our shared favourite, London Pride. Our local pub is the only place nearby that sells it, so it fast became a father-son tradition. When I started working at Andrew Nunn & Associates, I discovered that the famous brewery behind ‘our beer’ is Fullers, who are not only based in Chiswick, but had also worked on a project with my boss Andrew, called ‘Wild About Chiswick’. A sure sign that both Chiswick and Andrew Nunn & Associates were the right fit for me. Six months ago I made the move to work in Chiswick, after 14 years living

in the Welsh Valleys. While it has been a strange transition leaving the peaceful countryside to join the busy streets of West London, it’s certainly not been a regretful one. After university, I went travelling all over South East Asia and Australia, spending a year trekking from place to place. The experience of constantly being on the move and exploring new things definitely stood me in good stead for the property world and estate agency is the perfect fit. Since joining Andrew Nunn and his team as Lettings Negotiator earlier this year, I’ve found myself thriving on the

social interaction, the ability to work on my own accord and the excitement of operating in such changeable conditions. The lettings market has been energetic this year, and it’s the excitement of dealing with such high demands in a competitive environment that appeals to me the most. The early autumnal months saw this energy subside a little, but we are now witnessing a new rush of eager applicants keen to get settled before Christmas. I think the art to being a ‘lettings negotiator’, like many things in life, is to become really interested in getting to know people and places. The more I know about an individual, the better chance I have of finding them the perfect property. And my growing knowledge of the local area and involvement in the community makes it an even easier sell, because I truly believe Chiswick is a wonderful place to live. u
