ABSOLUTELY’S December issue highlights

Iam writing this letter on the day that England started their World Cup campaign in Qatar. It's also probably the first time that I have been very indifferent to the tournament too, which growing up football mad I could never have envisaged.

There are a host of reasons for this indifference. The fact it is in Qatar is a real issue for me, particularly after watching Netflix's excellent Fifa: Uncovered documentary that detailed years and years of corruption at football's highest level. Being a chairman of an amateur football club, the way these men took advantage of their power for their own gain, rather than football's, left a really bad taste in the mouth.

Then there is the questionable human rights issues that all and sundry have been pushing, bar of course Fifa who would rather everyone just swept that under the carpet and concentrated solely on football. No chance.

And the fact it's being held in the run up to Christmas is also a negative, particularly with everything going on in Essex this month. Ditch the football, I say, and concentrate on supporting local businesses and community events. It's all been a reminder to me about what's really important in life.

ESSEX’S STRICTLY EAST-END

Having starred as Tiffany Butcher in EastEnders since the tender age of six, Southend actress Maisie Smith is used to being on the small screen. And, after reaching the final of the 2020 series of Strictly Come Dancing, she’s no stranger to dancing in front of a live audience.

However, her latest role, which sees her stepping out on stage as the female lead in Baz Luhrmann’s Strictly Ballroom The Musical, she admits has been quite a daunting experience.

“I’ve never really done anything like this before where I’m singing, dancing and acting all in one capacity and in front of a live audience, and the first couple of nights I was so terrified,” she tells me during a break in rehearsals. “But as the days have gone on, seeing the audience’s reaction, it really does give you such an adrenaline rush.”

When we speak, Maisie is just two weeks into the UK tour, which sees the show stop at 40 theatres across the country, including the Cliffs Pavilion in Southend next March. “I always like coming back to Essex when I’m doing shows,” says Maisie, who lives in Leighon-Sea. “Partly because most of the audience is taken up by my family. It’s cool to have so many people from your hometown coming to see you. It’s always a completely different atmosphere when I’m back in Southend.”

Directed by Craig Revel Horwood, who also acts as choreographer alongside his Strictly Come Dancing colleague and creative director Jason Gilkison, the musical is based on the Australian award-winning, 90s global film phenomenon, Strictly Ballroom, which spawned the BBC dance show.

For those who haven’t seen the movie, it tells the beguiling story of Scott Hastings, a talented but rebellious young ballroom dancer who finds himself dancing alongside novice, Fran, after his radical dance moves see him fall out of favour with the

Australian Federation. Despite the unlikely pairing, the pair gather the courage to defy both convention and their families.

In what is her musical theatre debut, 21-year-old Maisie takes on the lead role of Fran, alongside Strictly Come Dancing professional Kevin Clifton as Scott Hastings – a casting he has described as a ‘dream’.

“When I got the part, I didn’t know who the other role was going to be so when I found out I was so excited, it was comforting to have a familiar face as I start this new side of performance that I’ve never done before,” says Maisie, who danced alongside Kevin, taking home the glitterball in the Strictly Come Dancing Children in Need Special in 2019.

The following year, she became a contestant on the mainstream show, reaching the finals with dance partner Gorka Márquez and only narrowly missing out to winners Bill Bailey and Oti Mabuse.

While she certainly proved her dance credentials on the show and later joined the Strictly Tour line-up, Maisie is most

“I have never really done anything like this before”

well-known as an actress, having played Ti any, the daughter of Bianca Jackson [Patsy Palmer] and Ricky Butcher [Sid Owen] on EastEnders for 13 years. Her final scenes on the set aired last December, but the door has been left open for a return, although she will not be drawn on if or when that might happen.

“I do miss it, particularly the people,” says Maisie, who won a British Soap and Inside Soap award after being on the soap for less than a year. “I spent such a long time there seeing the same people every day so I miss that and working with those people, but I’m so focused on what I’m doing right now.”

Maisie also has a passion for singing. She released an EP in 2017 and wowed judges when she was unmasked as Baby Dino on the UK tour of The Masked Singer back in April. Despite this she says the singing is the part of Strictly Ballroom, which brings to life iconic songs, including Love is in the Air, Perhaps Perhaps Perhaps and Time After Time, that she gets most nervous about.

The Masked Singer was the first time I’d ever sung [to a live audience] so to then lead in a musical, with lots of numbers to sing, it’s quite nerve-wracking. I was really

quite scared of revealing my voice,” she admits. “But coming out of the stage door and hearing people say they were surprised at my voice and really complimenting it, it’s really helped boost my confidence.”

Maisie’s stint on the latest series of Celebrity SAS Who Dares Wins, which was filmed in October 2021 but only aired this autumn, has also helped build her self-confidence. “It was scary, it was absolutely brutal, every minute of the day was tough, but I felt so strong coming out of it, inside and out,” she explains. “I wanted to see what I would be like pushed to my extreme and it certainly did that.”

Due to the tour, Maisie will be spending Christmas Day with her family in Surrey instead of Leigh-on-Sea, but is looking forward to strolling along the seafront when she does get some time o to go home. “The one thing I really miss about Southend when I’m away is the seaside,” she smiles.

“I don’t go in the sea. I used to, but it’s too cold in December. Saying that I’ve jumped in a pool of ice for Celebrity SAS so I might give it a go at some point this winter!”

When it’s a weekend and I’m not working, there’s nothing better than spending the day in Leigh’s old town, walking along the beach and getting some cockles from The Cockle Shed.

There are a few restaurants and bars in Old Leigh that I like to go to, such as The Peterboat and Ye Olde Smack – that’s a nice pub, it’s my dad’s favourite pub.

My sister used to work in Sara’s Tea Garden, which is little cake shop in Leigh, so most evenings we used to take the dogs down there and have a slice of cake.

Q How has 2022 been for you?

A It has been incredibly busy, but equally a lot of fun! I have set up my own marketing company and this was also the first year, post pandemic, that we delivered the Campioni Soccer Academy abroad – we were resident at a great family resort, Sun Gardens Dubrovnik in Croatia, for the summer. Former Premier League football stars Wes Brown, Emile Heskey, Stan Petrov, Andy Cole and James Collins delivered the football training – I don’t think the kids realise just how special this actually is, but luckily the parents do!

Q What did you introduce at your Campioni Soccer Academy this year?

A We have launched regular weekly development training for all age groups from 5 to 16-year-olds. I am so grateful to all my professional coaches who share my strong positive work ethic, which has enabled me to take Campioni to the next level.

Q What kind of feedback do you get from parents about the Academy?

A The general consensus is that our camps are friendly, professionally run, fun and safe. When I am personally not around to oversee the camps, I carefully select my good friends to manage it who have first aid training and are DBS cleared. I am a mum of three and understand the importance of being 100% certain that your child is safe when you leave them in someone else’s care.

Q What are your plans for it in 2023?

A We are thrilled that Sun Gardens Dubrovnik have asked us to deliver another six weeks of training at the resort next year starting in May

half-term. I am also thrilled that we will be bringing back the Campioni Dance Academy to run alongside the football camp in Croatia.

Q Tell us more about the dance academy…

A Following the concept of the football training, Campioni will be flying out a well-known choreographer to the stars to the resort to deliver professional dance classes for two hours each day whilst the children are on holiday – basically a fun high-end kids club! The resort has a stunning air-conditioned dance studio with an outside performing space with sea views. It doesn’t get much better than that for girls and boys who love to dance.

Q Do you often get much time off over Christmas?

A We have a one-day Christmas football event in Chigwell and Upminster on 22 December where we will enjoy a visit from Santa who will deliver presents to everyone – then I will be feet up until February half-term!

Q Do you have any particular favourite spots in West Essex or beyond that you love at Christmas?

A You just can’t beat central London at Christmas and locally 8 Rocks on Loughton High Road is my favourite place for fresh food and fine wine. Such a cosy venue that attracts a great crowd, we’ve made lots

of new local friends there and the events that they put on are always a lot of fun.

Q What have been your favourite spots in the county this year?

A We love Tandoor at the Chambers – based in Buckhurst Hill, this is the best Indian restaurant around. We recently bought an inflatable kayak and found some great spots to take it. The River Lee doesn’t sound very glamorous, but there is a spot close to Hackney Marshes that was perfect. Further out in Essex the River Chelmer is a little more picturesque!

Q What is your ideal Christmas Day?

A Waking up with the children and realising that ‘he’s been’... Opening gifts then welcoming family to ours for a traditional Christmas Day, carols around the table superbly hosted by my Christmas loving Dad, then more friends joining us in the evening for games and dancing.

Following a complete refit of their store in the heart of the county, Bang & Olufsen of Chelmsford city hosted a champagne and canape reception to celebrate a successful refit of their store of 22 years.

After the initial reception, guests experienced a short product demonstration from store owner Darren Maynard, showcasing a brand new product recently launched, the latest soundbar, the BeoSound Theatre. People were amazed by this powerful new speaker system which is designed to work with any television.

The store has a bright new layout and the displays are far more interactive with more products on display, including the complete range of Bang & Olufsen earphones, headphones and bluetooth speakers in an extensive range of colours. The store has a welcoming feel about it and Darren told us that they have had more visitors to the store since they reopened at the end of August.

After demonstrations of the products were complete, local singer and entertainer Joe Palmer (@joepalmerswing) entertained with his amazing vocal talents, covering a wide selection of swing music from Frank Sinatra to Michael Bublé. The evening concluded with guests dancing and everyone left saying how much they had enjoyed themselves.

Q How has 2022 been for you?

A The Covid pandemic has changed the way that many people work and from 2021 working from home has made things very busy in the garden building sector, a trend that appears to be ongoing. The shortages of raw materials made it difficult at times especially as building quality is always of paramount importance and some of the wood being offered was not up to scratch and therefore not suitable,

which led to longer lead times. Luckily, those issues are behind us now and building design, deliver and assembly time has reverted to 6-10 weeks –not bad for a bespoke building.

Q Where are you based and what do you love about the area?

A Harveys are located on a spacious showsite on the A127 in Rayleigh, Essex, where you can see most of our building designs on display. Rayleigh has many notable attractions – its lovely windmill, quaint round Dutch cottage and National Trust Mount and each Christmas a lit up high street that has to be seen. Rayleigh has all this and probably the best garden building display in Essex!

Q How has 2022 been for you?

A It has overall been a good year for us. Since the pandemic, we have still noticed the trend of people spending more time at home and enjoying their space more than before. We have seen a strong trend in large screen TV solutions and cinema sound setups.

Q Where are you based and what do you love about the area?

A I am based in Chelmsford for the most part. I love the City, it has a great vibe around it and it’s just a nice place to be. Sadly, many town centres have suffered since the pandemic, but Chelmsford still has a great mix of shops, restaurants and entertainment venues.

Q What are your plans for 2023?

A Having just totally refurbished our store in Chelmsford, I am looking forward to what the future brings. We are so pleased with the outcome and we have noticed that more people are starting to come for their first visit, long may that continue so that we can keep spreading the Bang & Olufsen love. bang-olufsen.com

Tell us a little bit about your business…

A I acquired the White Hart Inn following a partial rebuild with it having been closed since 2013. It has had a complete fit out and refurbishment and opened in June 2022. It is the third site for me. I opened The Sun Inn, Dedham in 2003 and Church Street Tavern, Colchester in 2014 and continue to operate them today. The White Hart Inn is somewhere for a casual pint, an easy lunch or special celebratory dinner. And if you can’t bear to leave, there are six guest rooms to stay overnight.

Q What would you say is unique to you?

A Our three businesses are all fantastic, characterful buildings in great locations. Equal focus is put into our food, service and atmosphere and we’re always seeking to improve what we offer.

Q How has 2022 been for you?

A It has been tricky, but broadly rewarding. We opened the White Hart Inn on 15 June and it has been going from strength to strength. The team have been doing a brilliant job and we have had wonderful feedback.

Q Where are you based and what do you love about the area?

A The pub is in West Mersea, opposite the village church. Mersea Island is a special place with beaches, creeks, boardwalks, sailing, oysters and a great community. Our seafood and oysters are landed within a mile of the pub and some of our fruit and vegetables are also grown on the island. The sun rises and sunsets are spectacular and being beside the sea is invigorating every single day.

Q What are your plans for 2023?

A To continue to grow our business through its first year. We hope to open seven days a week from May. And we hope to add an outdoor kitchen with BBQ, pizza and more.

A This year has been a story of two halves. Two days are never the same and the team have to be primed to move with the latest trends. The latter part of the year has been very different, especially after the two recent budget announcements. However, the market is still busy with serious buyers keen to purchase a property rather than rent.

Q Where are you based and what do you love about the area?

A Caplen Estates is situated in Buckhurst Hill – a beautiful town in Essex with a village feel and a community that is close and caring. There are fantastic schools, restaurants and shops nearby. Access into central London is fantastic, however nothing outweighs the beauty of our forests and green spaces.

A We are excited to announce that we are expanding both our team and branch locations, first of which being a new shop in Gants Hill.

A Orion Heating was founded in 1977, when high efficiency European woodburning stoves became popular in Britain. Since that time we have continued to specialise in the best brands and focused on woodburning as a renewable and responsible heating method. A We opened a warehouse in Maldon this year and we are looking to expand on the warehouse side. We want to have the largest warehouse of carpet and flooring and expand on the ranges we stock, and offer a competitive price and best quality we can offer direct from our warehouse.

Q As a chef, can you sum up your style of cooking?

A It’s very di erent now than it was when I started out. Now I focus on the ingredient, cooking it as best as I can and bringing out the best flavour that I can. I guess it's cleaner, simpler and with more of a focus on flavour.

Q Do you enjoy the busy Christmas period?

A I think the answer to that changes throughout the month, but on the whole I would say yes. It's great to see people out enjoying themselves and in good spirits.

I think after the restrictions of the last couple of years, Christmas 2022 will be a really exciting time for people getting together with family and friends.

Q What will be on the menu at your venue?

A We have kept things pretty classic on our menu and put on things we think people

will enjoy albeit with a slight Christmas twist. Think a scotch egg with piccalilli, beef burger with bacon, brie, cranberry chutney and sage mayonnaise, and mulled fruit crème brulée with spiced palmier biscuits.

Q What dish for you really sums up what Christmas is all about?

A It has to be the roast turkey dinner. Everyone loves a roast and done properly with all the trimmings, it’s the ultimate roast dinner!

Q Do you also do the festive cooking at home?

A No, although not because I don’t want to, but because I will be working and everyone is normally waiting on me to get home so that they can eat. One of these days they will start without me I’m sure!

Q Tell us a little bit about your venue…

A Down Hall has an extraordinary history that can be traced back to the 11th century. The hotel’s luxury interiors, ornate ceilings and abundance of natural daylight make for an experience like no other. Take time to wander the 110 acres of surrounding woodland, parkland and landscaped gardens or sample a traditional English afternoon tea in our historic lounge. We offer a wide range of dining experiences.

Q As a chef, can you sum up your style of cooking?

A I like to change things up as new trends set in. I feel plant based will still be on the up, with many more companies arriving on the scene trying to emulate plant based, with a big impact being on fish produce as there is not much of this around. This is something we will be trying to raise the profile of at Down Hall over the next few months.

Q Do you enjoy the busy Christmas period?

A I really do like it. Everyone is in a good mood both in front and behind the scenes. Christmas dining for me means family, friends and lots of food and drink, so we are a big part of the Christmas period back here in the kitchen!

Q What will be on the menu at your venue?

A We have a range of festive offerings at Down Hall this Christmas. Along with our traditional Christmas dinner, we have a Christmas themed afternoon tea complete with mini cheesecake presents and chocolate baubles. We will also have a festive menu available in our Garden Room restaurant.

Q What dish for you really sums up what Christmas is all about?

A For myself a tradition is normally a full English breakfast in the morning on Christmas Day, as I am normally working. We have our Christmas dinner later in the evening, so the full English keeps everyone going until then, along with a few strong coffees throughout the day! Everyone’s ideals of Christmas are obviously different, but this really sums it up for me.

Q Do you also do the festive cooking at home?

A I do still do the cooking at home, as well as at work. Preparation is key. Start early, get them spuds peeled the day or two before, trim and cross cut the Brussels, if you are making your own gravy why not make it a week before and freeze it? This definitely helps me during one of my busiest seasons of the year.

Q Tell us a little bit about your venue…

A We are set in a 17th century inn / pub (formerly The Flag Inn) and have been open since November 2014. We run very much as a restaurant with the focus on food, wine and service. There are approx 40 covers, a bar area with a log burner, two sofas and bar stools, perfect for pre-dinner drinks. We also have five outdoor dining tables, which are available during better weather.

Q As a chef, can you sum up your style of cooking?

A I started my formal training in the early 90s at The Savoy hotel in London, so I am very much classically trained with a mix of fusion thrown in. I'm not personally into very modern techniques or pretentious dishes.

Q Do you enjoy the busy Christmas period?

A As an owner, yes. As a chef? Not so much. Don't get me wrong, I enjoy being busy, but prepping lots of turkey, potatoes, root vegetables and sprouts aren't the most enjoyable tasks I undertake during the year. But it's all about the customer, not me.

Q What will be on the menu at your venue?

A Turkey and the trimmings will be the main focus, however, it is only available on our Party Menu. At the time of writing, we are still formalising our Lunch & Dinner menu, but it will include popular items like shellfish, beef and “The Creek” banana split, which has been a menu staple since our first day of opening.

Q What dish for you really sums up what Christmas is all about?

A The obvious choice is turkey, sprouts or Christmas pud, but for me it's a heavily laced sherry trifle.

Q Do you also do the festive cooking at home?

A Yes. We are a family-run restaurant and are open on Christmas Day, so the wife and our two children will also be working. By the time we finish, our own Christmas festivities will start around 9pm. We usually have duck or goose with creamy sprouts, chorizo, roast garlic and chestnuts, sausage meat and cranberry stuffing, and who can beat a good apple crumble to finish?

Blackened chicken with caramel and clementine dressing

Serves 4

Don’t be afraid to really char your chicken thighs here (making sure to ventilate your kitchen well) – this’ll add an intense flavour alongside the vibrant dressing and make for a very punchy eating experience. That said, you can also grill your chicken thighs in the oven, or swap them out for chicken breasts, if you prefer. Use a pair of kitchen scissors to help you easily remove the bones from the thighs, or ask your butcher to do this for you, making sure to keep the skins intact. Feel free to swap out the clementines for orange segments in the dressing; it’ll work just as well.

INGREDIENTS

• 6 large chicken thighs (1kg), boneless and skin on (850g)

• 1½ tsp ground turmeric

• 1 tsp chilli flakes

• 1 tbsp fish sauce

• 2 tbsp olive oil

• 2 spring onions, trimmed, washed well and dried (180g)

Caramel and clementine dressing

• 85g caster sugar

• 30g fresh ginger, peeled and julienned

• 2 red chillies, deseeded, halved widthways and julienned (20g)

• 3 tbsp rice wine vinegar

• 3–4 limes: 1 halved, to serve, and the rest juiced to get 3 tbsp

• 2 tbsp fish sauce

• 2–3 clementines (200g), peeled (140g)

• 5g fresh coriander, roughly chopped, to serve

METHOD

1 Put the chicken thighs, turmeric, chilli flakes, fish sauce, oil and 1 teaspoon of salt into a large bowl and mix well to combine. Leave to marinate for an hour, or cover and refrigerate for longer (up to overnight). If the latter, remove from the fridge 45 minutes before cooking. 2 Place a large cast-iron sauté pan on a medium-high heat and ventilate your kitchen well. Once hot, add half the chicken thighs, skin side down. Weigh down the thighs with a large saucepan around the same size, so they are well pressed into the pan. Cook for 6–8 minutes, or until the skin is charred and blackened. Remove the top pan and set the chicken thighs aside, then repeat with the remaining thighs. The second batch might blacken faster, so check them at the 5-minute mark.

Remove all the chicken, setting it aside, and let the pan cool for 5–10 minutes. 3 If needed, drain off all but 1½ tablespoons of the fat collected in the pan and return to a medium-high heat. Add the spring onions, using a pair of tongs to coat them in the fat, then put back the chicken thighs, skin side up, and any of their juices, nestling them into the spring onions, along with 90ml of water. Cook for 8 minutes, or until the chicken is tender and cooked through. Transfer the chicken to a cutting board and leave to rest for 5 minutes before slicing each thigh into 2cm-wide strips.

4 While the chicken is cooking, make the caramel and clementine dressing. Heat a medium saucepan on a medium high heat. Once hot, turn the heat down to medium and sprinkle in the sugar to coat the base – it should immediately start to melt and colour around the sides. Swirl the pan, without stirring, so that all the sugar melts and turns deeply golden, about 1½–2 minutes. Add the ginger and chillies, and stir continuously for 45 seconds, just to take off the spicy edge. Quickly add the vinegar, lime juice and fish sauce, stirring to combine. Cook for 30 seconds, then remove from the heat. Leave to cool for 10 minutes.

5 Use a small serrated knife to slice the clementines into 1cm thick rounds, then pull at them gently to halve them (don’t worry if they break apart further). Stir these into the cooled sauce. 6 To serve, transfer the spring onions to a large platter and top with the chicken and any pan juices. Pour the dressing all over, then sprinkle with the coriander. Lastly, squeeze over the lime halves.

Coconut broth prawns with fried aromatics

Serves 4

INGREDIENTS

• 750g large tiger prawns, shells and heads on

• 2½ tbsp olive oil

• 2 tbsp tomato paste

• 6 garlic cloves, peeled and bashed

• 40g fresh ginger, thinly sliced

• 50g lemongrass stalks (about 4), roughly sliced

• 8 large makrut lime leaves

• 3 red chillies, roughly sliced

• 1 tin of full-fat coconut milk (400g)

• 60ml double cream, plus 2 tbsp extra to serve

• 250g datterini or cherry tomatoes

• 1 lime, cut into 4 wedges

Fried aromatics

• 105ml olive oil

• 6 garlic cloves, peeled and thinly sliced

• 2 red chillies, thinly sliced at a slight angle, seeds and all

• 30g fresh ginger, peeled and julienned

• 15g coconut flakes

• 15g picked basil leaves

METHOD

1 Peel the prawns – remove the heads and shells and set aside. Devein them and refrigerate. 2 Heat the oil in a large sauté pan, for which you have a lid, over a medium-high heat. Add the tomato paste and prawn heads and shells and cook, stirring

occasionally, for 3 minutes or until deeply red. Add the garlic, ginger, lemongrass, lime leaves and chillies, and cook for a minute more, until fragrant. Add the coconut milk, cream, 450ml water and 1 teaspoon salt, bring to a simmer, then turn the heat down, cover and leave to cook for 25 minutes. Strain through a sieve set over a large bowl, pressing down on the solids. 3 Meanwhile, make the fried aromatics. Put the oil, garlic, chillies and ginger into a large frying pan over a medium heat. Cook for 8 minutes, stirring occasionally, then add the coconut flakes and a tiny pinch of salt and cook for 4 minutes more. Use a slotted spoon to transfer the solids to a plate lined with kitchen paper. Add the basil leaves to the frying pan and cook for 2–3 minutes more. Drain them in a sieve set over a bowl, reserving the aromatic oil. Transfer the basil to the plate of fried aromatics. 4 Add a tablespoon of the aromatic oil to the large sauté pan and place over a medium-high heat. Once hot, add the tomatoes and cook for 6–7 minutes, or until charred and starting to burst. Add the strained broth and simmer for 3 minutes, then keep on a low heat. 5 Heat the large frying pan on a mediumhigh heat. Toss the prawns with a teaspoon of salt and 2½ tablespoons of the aromatic oil and fry for 60–90 seconds per side. 6 Divide the broth between four bowls and top with the prawns. Squeeze a lime wedge and drizzle each bowl with ½ tablespoon of the extra cream and a teaspoon of aromatic oil. Top with the fried aromatics.

Confit leeks

with puy lentils and leek cream

Serves 4

Cooking the leeks in this way gently softens them without colouring, and releases their allium flavour into the oil. Blending the confit leeks with cream creates a lovely sauce to bring the whole dish together, which could easily stand as a substitute for gravy alongside your choice of protein. If you can’t find puy lentils, then swap them out for other lentils, such as green or beluga. Serve this dish warm or at room temperature, and eat alongside some roasted potatoes, if you like.

INGREDIENTS

• 1kg leeks, trimmed, cut into 2cm-thick rounds (white and light green parts only) (620g)

• 10 garlic cloves, peeled

• 10g thyme sprigs

• 200ml olive oil

• 150g dried puy lentils, washed

• 60ml lemon juice (from 2–3 lemons)

• 5g parsley leaves, roughly chopped

• 5g dill leaves, roughly chopped

• 5g tarragon leaves, roughly chopped

• salt and black pepper

Leek cream

• 100g cooked confit leeks and 5 confit garlic cloves

• 100ml double cream

• ¾ tbsp Dijon mustard

• 1 tbsp lemon juice

METHOD

1 Preheat the oven to 160°C fan.

2 Soak the cut leek rounds in a large bowl of water to get rid of any excess grit. Drain, then pat dry, being sure to keep the rounds intact. 3 Put the leeks, garlic, thyme, 1 teaspoon of salt and a good grind of pepper into a baking dish roughly 30cm x 20cm in size. Mix gently to combine, then pour over the oil. Arrange the leeks so they are cut side up, then cover tightly with foil and bake for 35 minutes. Remove from the oven and gently turn the leeks over. Cover again with foil and return to the oven for 35 minutes more, until completely softened. Remove from the oven and turn the temperature up to 180°C fan. 4 Meanwhile, cook the lentils in plenty of boiling water for 12–15 minutes, or until tender but not at all mushy. Drain well and set aside.

5 When ready, remove the confit leeks from the oven and transfer 100g of the cooked leeks plus five garlic cloves to a bowl. Add the lentils to the remaining leeks in the baking dish along with ¼ teaspoon of salt and a good grind of pepper, and mix gently to combine. Cover again with the foil and return to the oven for 15 minutes. Remove the foil and leave to settle for 10 minutes. Discard the thyme sprigs. 6 While the lentils are in the oven, make the leek cream. Add the measured-out leeks and garlic to a food processor along with the cream, mustard, lemon juice and ⅛ teaspoon of salt, and blitz until smooth. 7 When ready, stir the lemon juice and the chopped herbs into the lentil and leek mixture. Transfer to a rimmed platter and serve with the leek cream in a bowl alongside.

Marisa Arna designs and makes her jewellery at her studio in Thorpe-leSoken, near Frinton-on-Sea, in Essex. She originally set up her ceramic studio in 1997, making fine, thrown porcelain but since 2007 she has been working exclusively as a jeweller and goldsmith. Marisa uses traditional goldsmithing techniques, combined with some modern technology, to make her jewellery by hand and then also set the gemstones. Silver, gold or platinum, her work is long lasting and comfortable enough to enjoy wearing every day. There is a contemporary feel about Marisa’s designs, with different textures and contrasting finishes on the surface but also a timelessness. The Triple-Four Racing Chronograph has made a seriously dazzling impression on the world of horology since its launch this autumn. Limited to just 500 examples, the debut timepiece from new British firm Brooklands Watch Company is a modern classic with heritage at its heart.

Designed by the visionary Sir Terence Conran, the Triple-Four is inspired by the golden age of racing at Brooklands, the birthplace of motor sport and aviation in Britain. Sir Terence’s father often attended the races at Brooklands’ historic track in Surrey and his mother learnt to fly at its Flying Club.

His Triple-Four Chronograph design references the record-holding NapierRailton racing car built at Brooklands in 1933. The watch face perimeter is banked, echoing Brooklands race track’s unique

sloped embankment, while the blue leather strap echoes the distinctive block tread design of early car tyres. Its back reveals a rotor design modelled after the car’s legendary Triple-Four Aero aircraft engine.

The Triple-Four has already received praise from the likes of Tracey Llewellyn, watch editor of The Telegraph. In The Best Watches for Motoring Enthusiasts in WatchPro, Tracey noted that “watches and cars are a match made in mechanical heaven” and named the Triple-Four “a modern classic”.

An ideal Christmas gift, each of the 500 limited-edition watches is individually numbered, signed by Sir Terence and presented in a beautiful blue velvet-lined leather watch box. Displayed neatly inside are the Triple-Four Chronograph, a slim brass warranty card and a members badge. This badge entitles the Triple-Four owners to a drive on Brooklands’ world-famous Test Hill track in a specially commissioned Brooklands Watch Company electric Bugatti Baby II car.

Brooklands Watch Company was founded by aeromechanical engineer Simon Jeffs. “The Triple-Four is a piece of art with a purpose. It has a beating heart and a story of British motor racing to tell,” he explains. “I’ve enjoyed flying for many years and settled mainly on helicopter flying before motorsport took over. I visited Brooklands racetrack to see my uncle’s Brooklands racing car being run after many years in storage. It was incredible. I was astonished that Brooklands built and operated the first Motor Racing Chronograph accurate to 1000th second in 1907. This inspired me to create a luxury British watch brand.”

The limited-edition Triple-Four retails at £5,754 and is available on the Brooklands Watch Company website and until the end of the year exclusively at The Conran Shop, Chelsea. Brooklands Museum Trust and London’s Design Museum will both benefit from the sale of each watch.

hen is it too late to learn to ski? Everyone knows that you should start young, but when are you actually too old? Partly it’s just embarrassing. Especially when you’re in St. Moritz, one of the world’s oldest and most luxurious ski resorts. Everyone here can ski, of course. Even if some of them prefer not to crease the luxe skiwear purchased from boutiques that make Bond Street look a bit low rent.

Because nothing about St. Moritz is anything less than uber glamorous. We’re staying at the stylish Carlton Hotel, where people routinely order lobster (lobster in the alps!) and ask the concierge to book them “the most expensive activity, whatever it is” (it’s heli-skiing) and leave former Olympic champion ski instructors waiting for hours while they rethink their outfits. The Carlton offers comfort and discretion at all times,

I’m here to learn to ski, and the Carlton has arranged a private instructor for me, which is the only way to learn if you’re an overgrown beginner unsuited to a group of toddlers. Elisa is a pro – she grew up on skis in the Dolomites and competed at the Olympics before settling into a quieter life teaching, and she’s not only unphased by my never having skiied before, but she affects to be impressed with my skills on day one and claims never to have seen someone start off so well. By lunchtime I’m thinking of myself as a natural talent and regretting all those wasted nonskiing years. The smug feeling lasts all evening and well into the next morning, until my strength fails on the first run, my confidence disappears and I collapse in Elisa’s arms, a failure on skis. Heroically, she carries me over the mountain so as not to miss our lunch booking, where plates of steaming spaetzle and glasses of Prosecco make up for my poor performance.

So it probably is too late. Anyway, there are lots of other things to do here. The hotel has a dedicated Outdoor Butler who’s an expert in the region and will guide guests on nature walks or take them snowshoeing, for example. He takes us on an unforgettable torchlit midnight hike – and by torch he means the fire kind – where we follow him to a frozen lake, blow out the torches and look at the stars in total mountain darkness. The next day, we head to another frozen lake with the aim of immersing ourselves in it, thanks to a small square cut in the ice. It’s all in the breathing, we’re told, though the actual immersion proves a step too far for me. Happily, it’s only a quick drive back to the hotel and to the welcoming arms of the spa, where a relaxing facial and a dip in the pool aren’t cold or exhausting at all.

Meals at the Carlton are predictably impressive, with the hotel’s Da Vittorio restaurant having two Michelin stars and serving an elaborate tasting menu of clever and tiny dishes. At the Romanoff restaurant, a new programme called Moving Mountains is dedicated to healthy

pursuits and healthy eating, and part of this includes a focus on vegan dining, which is done with creativity and great skill. There’s a sunny terrace for lunch (St. Moritz enjoys more than 300 days of sunshine every year, apparently, so even when the temperature says minus 11, you can be eating outside in sunglasses) and – our favourite – a row of decommissioned gondolas outside the hotel entrance that function as cosy fondue booths with blankets provided. Who needs to actually ski?

A CAREER CONSTRUCTING

Iwas very creative as a child, always colouring, painting, drawing. Art was my favourite lesson by far and I was accepted at art college when I left school. My family are also creative –my father was a French polisher by trade and then entered the building trade. Both my brothers are also in the building trade, so I have been involved in construction from a very young age.

After having my second son, I wanted to work part time but fancied a career change. I decided to work for an interior furniture shop, which I loved. I told my employer that I could paint and was painting at home in my spare time,

commission based. This led to me selling my artwork in the shop, which was great. I knew then that interiors and design was where I wanted to work. I then went back to college to study interior design and art. After college I worked in an architects practice where I learnt AutoCad. My employer wanted to start a side business offering interior design to his clients. Before this took off, my employer decided to travel the world and closed his practice down. This gave me a perfect opportunity to start my own interior design business in 2008. I teamed up with another interior designer, Linda, whom I had studied at college with. I wanted to offer

my experience in construction as well as beautiful interiors. I feel that having knowledge of how homes are built, what goes on behind what you see, gives me a huge advantage in designing spaces.

I offer all interior design services from very basic staging of homes, on the spot advice, to full home renovations. This might include conceptual floor plans with basic 3D rendering, product options and advice on current trends, colour advice, floor layout options, mood boards showing colours and fabrications of soft furnishings, cost schedules, work schedules and implementation of the designs on site.

I start with a consultation visit at the client’s home to get a feel for the space, to introduce myself and to get to know the client to see if we are a good fit to work together. At this meeting we discuss their needs, offer some examples of my work, get to know the client’s likes and dislikes, discuss the possibilities of our services and what the client would like to achieve at the end of the process.

I would like to say that I design interiors to suit the client – after all, they have to like the result. However, if I had to summarise my style, it would be contemporary but with an eclectic mix of old and new. I like

to incorporate some unusual pieces of furniture or art into my designs. I used to work with more neutral colours several years ago, however my style and taste has changed with the opulent colours that are current at the moment, so I am loving embracing the darker, stronger colours. What’s to come? Hopefully still working hard, keeping my clients happy, and creating beautiful spaces. I would also like to do some more full home renovations for clients or myself as being on building sites is my favourite place to be!

Q How long have you lived in Essex and what do you love about it?

A I have lived in Essex for approximately 25 years. I live in a beautiful spot surrounded by countryside. I have a lovely local pub and a couple of tea shops where I can take a break from work. I think there are a lot of beautiful places to live in Essex, you are always close to a town, but can still see a lot of the beautiful countryside on your doorstep.

Q Do you have some top tips for decorating the home this Christmas?

1. Make the sitting room where you add most of your favourite Christmas decorations as this will be the place you spend most time over the festive period.

2. Try and match your decorations to your existing interior design, i.e if you have a neutral palette, then mix this with golds, silvers and another pop of colour, like pale pink or grey. Add extra sparkle in cushions on the sofa to change the look slightly.

3. Try to steer clear of tinsel and garish clashes of colour, instead try using more subtle ribbon, lots of fairy lights and maybe just one pop of colour if you want to make an impact.

Considering this is a modern architectural gem, it’s no surprise that access to Grove Manor is reached via a pair of substantial electric gates. These open on to a long driveway leading to the house, which is set back from the lane in mature, secluded grounds of approximately 6.9 acres.

This is a substantial house, constructed around 23 years ago to an exceptionally high standard and its design echoes the proportions of an Elizabethan manor house. Q What can you tell us about the location?

A The property is set within secluded grounds which offer a high degree of privacy, while Woodham Walter itself is very well positioned with a good primary school and the highly regarded Bell pub. The village provides the best of both worlds; it’s rural so appeals to those wanting an escape to the countryside, yet also sits close to the likes of Danbury, Little Baddow and Maldon which have a range of amenities. Chelmsford and Hatfield Peverel are also a relatively short drive away – providing regular rail services into Stratford and London Liverpool Street.

Q It looks like a property for lovers of leisure facilities. What would we find inside and out?

A I’ve actually sold this property twice before and I can say fi rst hand that the current owners have undertaken a complete programme of remodelling of the highest order. There’s been a total transformation.

Q How would you describe the interior design?

A The interiors have been very elegantly designed. It’s very high end and tastefully done, reminiscent of the style you might fi nd in some of the best London hotels.

Q Are there great entertaining spaces?

A There’s quite a few to choose from, but the reception hall is particularly impressive. There’s also a wonderful kitchen/breakfast room that opens out into a modern orangery and family room that’s perfect for relaxing in.

Q What do the bedrooms o er?

A There are five principal bedroom suites, all of which have been orientated to enjoy views over the gardens and woodland. Q Do you have a favourite room?

Q Are there elements that you would say may surprise people?

Don't let constant buffering ruin your festive film marathon this year

Christmas is often lauded as the time for connecting with loved ones and being social. But let’s be honest – the thing most of us look forward to is curling up on the sofa and watching Christmas classics like Love Actually and A Christmas Carol guilt-free for the 20th time.

So why does Netflix keep buffering? And why, when you hop on your phone, does Instagram take forever to load? The reason might be a little closer than you think.

Christmas time usually sees a far higher usage of the internet bandwidth in your home. You might have friends and family staying over, who are connected to your Wi-Fi. You’re also probably spending most of December either watching Christmas TV or doing some last-minute online shopping. What’s more, the kids have finished school

and are sat at home on their phones, leading to even more activity on your broadband.

All these extra devices and usage can have a noticeable effect on your broadband speed. So, what can you do about it? There are two real options available –one more effective than the other.

One option is to try and stagger your broadband usage. Asking family members to avoid using their phones or computers while you’re watching a film or taking

that all-important Zoom meeting might help improve the connection speed temporarily. Of course, this might not be feasible for most modern homes that have dozens of devices constantly connected to the internet... and it might cause some family arguments.

The second option is far more effective – upgrade to Full Fibre broadband.

Providers such as Swish Fibre offer blisteringly-fast broadband speeds that can deliver a reliable service no matter how many devices are connected at the same time. This is a special time of year for families, but there’s so much more we can all do to create long-lasting memories

Idon’t know many children who don’t like Christmas. Whether you celebrate as a Christian festival or in a more general celebratory sense, it is, without doubt, a special time of the year. However, it is so easy to get caught up in plans and arrangements, in lists, and in food and presents that you miss some of the simpler (and arguably, more wholesome and worthwhile) aspects of the season. It’s also a wonderful time to build in some interesting and enjoyable family activities and perhaps create new family traditions.

I once read a book, many years ago, about building rituals into your children’s life and that of the family. These can run through the year and can be especially poignant at Christmas. One of ours was, and still is, affectionately called “BGS” – Big Girl

Supper – each Friday evening throughout the year. Even though our daughters are all now in their twenties, they still come home and ask if we are having BGS and those Friday nights have become a staple of family life. Family traditions that each family may have at Christmas build memories and family strength throughout each child’s life. It’s never too late to add some more and enrich family history forever. When my children were very young, I had a box of seasonal and Christmas books that came out in December and were packed away again at the beginning of January. This was the source of great fun and the opportunity to be reunited with certain special books lasted for many, many years – a bit like remembering the Christmas tree decorations, as they each come out of the box, like old friends every year.

There are also endless opportunities for creative activities for all ages and tastes – printing wrapping paper, wrapping parcels, making gift tags… the list goes on and I have no doubt that you have plenty of ideas of your own.

Try to make time for some outdoor activities each day of the holidays. It certainly doesn’t need to be commercial or expensive: collect cones, holly and evergreen and make table centres, or put on your wellies and come back for hot chocolate and mince pies.

Your teenagers will probably be out and about, with friends, at parties and celebrating as well as lying in! Apart from their social lives outside the home, give them some opportunities to get involved (and find the real child within – not the sophisticated teenager). Why don’t you give them free rein of the kitchen for a celebration family meal of their choice. Alternatively, offer them the opportunity to host a dinner party for their friends, give them a budget and an opportunity to plan a menu, decorate the table – and clear up! Perhaps even offer to be waiters for the evening.

Whatever you choose to do, however you choose to celebrate, it’s an important time for each member of the family to enjoy time with friends and family, so let’s encourage each other to look for new, creative ways to share time together. It’s so important to relax and restore before the various routines start up again.

Q What is the ethos behind Forest School’s educational approach?

Q How would you sum up the curriculum you follow at the school?

A Fully integrated, centred on pupil holistic development and broad. Learners have unparalleled opportunities to learn inside and outside of the classroom, through our ‘baked-in’ games and activities programme

(which encompasses extra and supercurricular exploits as diverse as hockey, lightsabre fencing, silversmithing and creative writing) and through community action projects. Unlike many schools, these are not ‘add-ons’, they are part of the timetabled schedules of all learners at Forest.

Q If we were to visit a typical classroom, what would we find?

A Bright, sparky, and collaborative learners. Foresters are highly engaged, activist-minded, and always eager to put forward and defend their viewpoints. Q When pupils leave you, what are they prepared for?

A Foresters go on to a wide range of degrees, apprenticeships, and careers. In 2022, Foresters gained places on 56 di erent courses – including Medicine, Economics, Law, Aeronautical Engineering, Computer Science, Biochemistry, Liberal Arts and History. The majority go on to Russell Group universities, including Oxford and Cambridge. Increasingly we are seeing Foresters read for degrees at American universities – including the Ivy League, with a student gaining a place at Yale last year, and European universities.

Old Foresters can be found across all sectors – from the professional, political, and business worlds to the sporting and the aesthetic.

Q This interview will be in the Christmas issue – do you do anything di erently around this time?

A Christmas at Forest is always a special time – the community gathers for a Christmas Celebration Event around our beautiful tree in the Chapel Quad, Learners in Year 8 go to Aachen to visit a Christmas Market, the Pre-Prep put on a Nativity Performance and the Music Department host a Winter Concert made up of several ensembles, including Senior Chapel Choir, Chamber Orchestra, Big Band, Forest Brass, and a Contemporary Ensemble. Finally, Forest puts on an evening of traditional music, carols, and mulled wine (for our parent community!) at George Gilbert Scott’s magnificent Christ Church, Wanstead.

Q What are you looking forward to in the new year?

A The Lent Term (New Year and Spring) at Forest is always busy but, for me, this is always marked by Foresters receiving news of their university applications, getting back mock results, and really dedicating themselves to reflection and improvement. It’s not all academic drive though: the term is crowned by our annual Steeplechase – a 5km slog through the mud of Epping Forest and a tradition which goes back a century.

This half term began with a fantastic Oak-Tree Group event, the annual Fireworks Display held at Oaklands School in Loughton. The evening went off with a bang, with around 1,000 people in attendance. The hot mulled wine went down a treat with all the adults, and the hot dogs and hot chocolate were loved by the children. Everyone also enjoyed listening to some live music from the pupils.

Pupils and staff at Breaside School in Buckhurst Hill have a very full festive calendar. Children from Kindergarten to Year 6 have been busy preparing energetic songs and dances for their annual Nativity. Senior pupils have organised a Christmas collection for the Epping Forest Foodbank, in addition to the generous donation provided by Junior pupils at their Harvest collection earlier in the year. Chloe Moon, Headmistress, says: "We are so proud to see our pupils playing an active role in helping the local community."

At Epping’s Coopersale Hall, pupils are preparing for some fantastic Christmas performances. Headmistress Moreen Barnard places particular importance on the extra-curricular programme and comments: "Our children are continually exposed to new experiences and opportunities as we encourage them to develop a variety of interests and try new activities in school and the local community. We particularly enjoyed seeing our Head Boy, Head Girl, and Deputy Heads representing Coopersale Hall School by laying a beautiful poppy wreath at the Epping Remembrance Ceremony."

At Normanhurst School in North Chingford, pupils in the Juniors are rehearsing for their annual Nativity. The event is so popular that it has to be shown across three events! The older pupils will also have their Christmas Carol Service, held in the local church. Headmistress, Jaqueline Job, says: "The pupils have been working so hard with the staff to put together fantastic shows. Performance is a vital part of a child’s development, and we provide a range of extra-curricular activities to develop our pupils’ creativity outside the classroom."

As well as providing a busy half term of activities such as a trip to Millfield Theatre to see the pantomime, a visit from Santa and Christmas parties for each class, pupils at Loughton’s Oaklands School are eager to perform at their annual Christmas Carol Service at St Mary's Church, Loughton. Headmistress, Gretchen Copeman, says: "The children love to reach out into the community."

hen it comes to December there tends to only be one word on everyone’s mind: Christmas. However, getting into the festive spirit doesn’t mean your plans to sell your home have to be paused. With people up and down the country having time off and spending time at home, it appears each year a captive audience of buyers is created. In fact, last year Rightmove recorded its busiest ever Boxing Day and in addition the week between Christmas and New Year

Wsaw buyer demand increase 23% in comparison to the previous year. Here are a few things to consider if selling, or thinking about selling, in December.

Feel free to deck those halls, just ensure they are in keeping with your space so that they inspire a homely feel, but don’t detract from the space itself. It's important not to neglect the outside. Lights can add a touch of Christmas spirit and create a great first impression for viewers.

Whilst it's nice to decorate, plan for your home to be photographed without decorations so that they can be used throughout December and into the new year. If you are particularly proud of your decorations you could mention this to the estate agent as they may want to come

back to photograph a few rooms with decorations for social media marketing.

Be flexible where you can. People tend to get busy with last minute plans during the festive season, so be prepared for buyers to change their plans and rearrange viewings.

Remember, even if you would prefer to wait until the new year to sell there is no harm in getting a no obligation valuation for your property so you have time to consider over Christmas.

Olly Murs has confirmed that he will be returning to Colchester Castle Park on Sunday 27 August 2023 for a summer gig to remember

In what is going to be a ‘bigger, better and louder’ gig for his hometown show, Olly Murs is “back with a fresh mind, fresh enthusiasm and fresh confidence” with his brand-new tour Marry Me

Having been all over our screens recently as host of ITV’s Starstruck, as well as returning as a coach on The Voice, Olly returns to the artist world, having been off the radar for over four years.

In what will be his seventh album of his career, Marry Me, released on 2 December, will be his most consistent, ambitious, punchiest, poppiest – and, in places, proudly soppiest – album yet.

With four number one singles and four number one albums in a near-back-to-back run after bursting onto the scene from X Factor in 2009, Olly can’t wait to be back performing next year stating: “I'm in the best place I've been in my life meaning that I can give my fans the best version of me. And this album is the best version of that.”

Olly will also be joined by very special guests Scouting For Girls. Friends since they were five-years-old, the band members Roy Stride, Pete Ellard, and Greg Churchouse shot to fame with their 2007 self-titled debut album. Having released generation-bridging anthems such as She’s So Lovely, Elvis Ain’t Dead and Heartbeat, fans are going to be in for a real celebration next summer.
